BALSAMIC GLAZED CHICKEN Notes from the Cooker, Traveler, Master Gardener and Serious Sipper of Creative Cocktails

I have chicken at least twice a week... can't get enough of it. So I'm always looking for new recipes. I especially love marinades, because the flavor penetrates the meat, making every bite count.

The balsamic used in this recipe is not the fancy, super-expensive vinegar. I use the basic, $9-buck-a-bottle stuff.

Ingredients 4 lbs. chicken parts or 1 whole chicken cut up 1/2 cup balsamic vinegar 2 tablespoons honey 1 1/2 tablespoon mustard (I use Gulden's) 1 tablespoon chopped fresh rosemary 2 teaspoons garlic salt 1 teaspoon pepper Extra virgin olive oil

If the breast of the chicken is really large, cut it in half so that it cooks as quickly as the other parts. Put all the chicken pieces in a large Ziploc bag.

In a bowl, combine the balsamic vinegar, honey, mustard, rosemary, salt and pepper. Whisk to mix thoroughly.

Pour the contents of the bowl into the Ziploc bag, seal tightly, and squish it around to make sure the marinade reaches all surfaces of the chicken.

Marinate the chicken for about an hour at room temperature.

Preheat the oven to 350.

Using an oven-proof pan, heat some olive oil and then place the chicken pieces in the pan. Sear for 2 minutes on one side, then sear for 2 more minutes on the other. Place the pan in the oven and cook for 30 minutes, making sure the chicken has cooked all the way through.

For Rhode Island’s hospitality industry, summer brings opportunity at a scale no other season can quite match. Dining rooms fill faster, hotels welcome a broader mix of travelers, events pick up, waterfront communities come alive, and expectations rise with the pace of business. For many operators, these months can shape the success of the entire year.

The strongest summer seasons are rarely the result of warm weather and good timing alone.

They reflect the work that happens well before the first packed weekend: hiring early, enhanced training, revisiting service standards, improving communication among teams, and making sure operations can handle increased demand without losing quality. Summer can be a major revenue driver, but it also puts every part of a business under pressure.

The summer of 2026 will be unlike any other. It’s the nation’s 250th anniversary with the tall ships entering Boston Harbor and the FIFA World Cup 2026TM spanning June and July, bringing thousands of tourists in the Greater Boston and Greater Providence areas.

Get an Early Start on Your Beach Body

By Susan Gazerro Most look forward to the warmer weather and longer days in the Ocean State. All these

months, waiting for summer, will pay off once the temperature rises and the days grow longer. However, some people will be nervous about putting on that bathing suit.

It is never too early to start getting beach ready. Do not wait until June 1st. April and May are good months to start, as you have plenty of time to make and see changes. I am not talking about diets or extreme workouts.

I am talking about changes that are doable and long term attainable.

To start off on this venture, you can add protein to every meal. It is no secret that eating enough protein is important for increasing muscle mass, but protein also plays a role in fat loss, too. A study showed that adding protein to all three meals can assist with weight loss. Adding protein, not only assists with fat loss, it also helps preserve more lean mass, which is the goal for the ideal beach body.

Stop snacking. Yes, even healthy snacking.

Healthy snacking can slow weight loss.

People often think if it’s healthy, they won’t gain weight, but that is not true. Quantity is key. A few quick bites of a healthy snack is okay, but most, while snaking, don’t monitor how much they are eating. Overeating any food is not good. A few extra calories, here and there, add up quickly, and can cause you to overeat unintentionally. If you must snack, portion control what you are going to snack on.

Here are some healthy snacks to choose from: Kale chips. Spinach dip made with Greek yogurt. Use celery sticks or veggies instead of chips for dipping. Cauliflower popcorn.

Artichoke dip. Watermelon chunks with feta cheese. Hard boiled eggs. Seaweed sticks. A handful of cashews or almonds. Apple slices, sprinkled with cinnamon, or with a slice of cheese. Chickpeas, roasted in the oven, with olive oil and cucumber or garlic salt.

There are countless other options.

Again, the key is to portion control what you are going to snack on. Too much of anything is too much!

Cut out or cut down on alcohol. Alcohol is usually empty calories. You need to cut calories, so your body burns stored fat. A glass of wine can relax you and does have some health benefits, but most alcoholic beverages have no nutritional value. A study found that men who had a couple of drinks a day, intake an added extra 433 calories. Plus, alcohol tends to lower our inhibitions, which means you may not think twice about eating.

Eat foods that help you fight cellulite. Nine out of every ten women have cellulite. This can make anyone shy away from putting on a bathing suit. It can develop as a result of a breakdown in collagen. Collagen is a type of protein, so eating high quality protein foods can help to strengthen the collagen fibers that reduce cellulite. Flaxseeds and dark berries naturally boost the body’s collagen production.

Tofu and broccoli are also collagen boosters, and remember to drink lots of water!

Find foods that won’t bloat you. Nobody wants a bloated belly at the beach. Avoid high sodium packaged foods that can trigger water retention. Surprisingly, there are healthy foods that can cause bloating too. Clean foods that might cause bloat include apples, beans, and peas. To offset water retention, eat high-potassium fruits like bananas, avocados, kiwis and oranges.

The best veggies for reducing bloat are asparagus and cucumbers.

Lastly, sleep is crucial when it comes to your body. Whether you are trying to lose weight or gain muscle, sleep is crucial. Sleep allows your body to recover from intense exercise, build and repair muscles.

Not getting enough can disrupt your hormonal balance and cause you to experience excessive hunger and cravings. People that don’t get enough sleep, snack more at night, and are more likely to eat high carb snacks. As we know, carbs store fat, they do not burn it. The right amount of sleep is anywhere between seven and nine hours.

Lastly, and most importantly, do not compare yourself with anyone else. Be the best you and love your body. We all know the saying, “it could be worse.” The truth is, it could.

Remind yourself, some people can’t walk.

Some people are obese and are struggling far more than you are. Appreciate your body and remember, confidence is beauty.

Regardless of how you look and feel, when you have confidence, you are beautiful.

by Paul Lonardo John Ferrucci, owner of Greenskeeper Inc. in Glocester, is more than just a landscaper. He was just fifteen when he started cutting grass, and for most kids that age it is a chore that is dreaded. However, for Ferrucci, as he learned more about everything that the work entailed, he developed a real passion for it and it became a job, and then a career, and it is now a successful business.

LA: Congratulations on 30 years for your business.

How and when did the business get started?

TS: Well in September of 1995 we officially opened our doors. My dad was looking for other career opportunities at the time for both him and my mom. I was in my 20s and happened to come home disappointed one day because I wasn’t able to get an appointment at a local tanning salon due to how busy they were . My dad asked me a few questions about tanning and started to see this as a potentially thriving business. He began to research tanning equipment and the industry itself, and soon developed an entrepreneurial vision. After about 6 to 9 months of thorough investigation and research, we headed to Connecticut to look at equipment and manufacturers. My dad was intrigued, and after a couple of months looking for a potential location we found one right in our own neighborhood in Rumford. In June we started renovations in our new location with family and friends, including an entire build out of about 10 rooms, and after about 3-4 months we were able to open our doors. We started with two beds and two booths, and In six months we began adding more equipment due to customer demand. In 2000 I was working as a social worker, so my brother made a decision to take a semester off from college to help my mom run the business because my dad had experienced some health issues. In 2001 dad was back at it, stronger than ever, and the industry was booming, so we began yet another expansion of rooms and equipment . In 2005 I came on board to join the family full-time, as we decided to open two more salons, one in North Providence and one in Cranston. We unfortunately closed the other two salons after a few years to focus on our original location here in Rumford. We have proudly serviced over 27,000 customers. I didn’t just join my family business, I grew up in it. I watched my parents work hard every day and learned what it takes to support family, and care for people and the community.

Where can they go to receive the best care? Who will be the ones making these decisions? Where are suitable openings throughout the state and/ or the region?

Then, there are other things to consider. Are they receiving the right amount of care and attention? Are staffing attending to those needs?

Are protocols in place when negative situations arise?

For those who are given the news from the community that their loved one will be discharged, that sets in motion other issues that are not easily answered – particularly in real time.

That is where Paul Jones, Owner and Lead Concierge of The Care Concierge Senior Living Advisors in North Smithfield, can help.

He recently published a guide to help those who are faced with this awful problem of figuring out what to do with someone who may be forced to leave their community. The Real Hospital Discharge Survival Guide is an on-line, downloadable service that includes strategies, scripts and questions that anyone facing those scenarios should use to either slow down or eliminate the discharge. The Guide offers advice on what to say or do (and not do) when confronted.

He said families who have elderly loved ones currently living in an assisted living community should purchase this book and get themselves acquainted.

“Having a family member in elder care can be stressful, without question,” Paul said. “Then, having it dropped on you that your loved one is being discharged and realizing that you have no time to plan can make matters worse. Nobody should have to go through this alone. With this 34 Shop In RI

The Guide was developed due to numerous complaints Jones and his staff have received from families over the years about being dropped into a decision-making process they aren’t ready for and don’t have the time to really explore. The Survival Guide provides scripts to communicate effectively with doctors and social workers, and offers safety protocols to prepare for a safe transition when going back home is inevitable.

Regarding the reasons why places will let someone go range from financial to medical.

Sometimes, it can be behavioral, although there are other issues that accompany this. Whatever the reasoning, it creates an emergency for the impacted family.

Paul said the news hits most families hard.

“News of this type often comes as a surprise to families. They may see that their loved one is still struggling with either physical or cognitive symptoms and then get the news that they’re being discharged. Sometimes it is an insurance decision, sometimes it’s a medical decision, sometimes there’s no clear reason at all,” he said.

Paul added that, “Families always feel like they need or deserve more time to plan, especially when a loved one winds up in the hospital due to a surprise issue, such as an elopement, stroke, fall, or something else.”

Once a discharge decision is made, it usually requires the family to make a rapid—sometimes immediate—decision. Families are often given 24 hours or less to make a decision for where their loved one will go, or to otherwise arrange for their safe transition back home.

Enforcement is financial: once a discharge decision is made and insurance will no longer cover the hospital stay, the daily hospital rate can quickly saddle families with tens of thousands of dollars of medical debt.

Jones said families are understandably hit with so many emotions and few answers for the numerous issues that just suddenly happened to them.

“Families are at a loss over what they need to do next,” he said. “Though it can be difficult, they need to stay calm. There are resources available to them that The Guide highlights and outlines that can help in this situation. Not every discharge can be handled the same way. The Guide can offer advice on how to best defuse a potential crisis.”

Jones noted that while The Survival Guide is Care Concierge branded, it is NOT designed to be something which pushes Assisted Living

placement. Rather, it is to be used as a guide and advocate, but if families need some breathing room and aren’t ready to consider ALF (Assisted Living Facilities) yet, then that’s okay.

Jones said The Survival Guide will be available in a basic format and a deluxe version, which includes additional information and guidance. This is part of a larger library series coming out, which will include information about Senior Living, home care, and Dementia Care.

The Greatest Providence Friars Basketball Team of All Time by: Shop In RI staff If you’re looking for an interesting book to read this summer, get yourself a copy of Homegrown: The Making of the 1972-73 Providence College Friars. Written by our own contributing writer, Paul Lonardo, the book traces the origins of what is arguably PC’s most beloved basketball team which took the entire state with them on a Cinderella-like ride to the NCAA Final Four over fifty years ago.

Rhode Islanders who were around at that time will recall that the Friars came was within a whisker of making it to the Finals that season, which would have pitted them against legendary coach John Wooden’s UCLA Bruins, led by the mighty Bill Walton, for the national championship. Unfortunately, in a semi-final game against Memphis, in which PC jumped out to an early lead, the Friars’ dominant big man, Marvin Barnes, went down with an injury, short-circuiting Providence’s fast break offense that was jumpstarted by Barnes’ otherworldly rebounding ability.

What made this Friar team even more remarkable was that it was led by two superstar players who were both local, homegrown talent.

PC’s All-American 6’9 center Marvin Barnes was born in Providence and grew up in the shadows of Providence College. He learned to play in the inner city, helping his high school, Central High, win Class A State championships in back to back years, 1968 and 1969, before entering PC. He would go to play pro ball, becoming the ABA Rookie of the Year, and later play in the NBA. 38 Shop In RI

Ernie ‘Ernie D’ DiGregorio was PC’s 6’0 guard from North Providence who could shoot and pass a basketball like no one else. He played basketball as a youth on the playgrounds and in the school gyms just a couple of miles away from the Providence College campus, and as a senior he led North Providence High School to a Class B State Championship in 1968.

After helping put the Friars basketball program on the map, DiGregorio was drafted in the first round of the NBA draft and immediately impacted the league by earning Rookie of the Year honors.

Both Barnes and DiGregorio turned down opportunities to play for larger universities, choosing to stay close to home at Providence College instead.

In the writing of this book, Lonardo, who also grew up in North Providence, spoke extensively with DiGregorio.

“I was fortunate to have met a childhood hero of mine, Ernie D, and talk with him about all the amazing things he did in his career,” Lonardo says. “The amount of time he spent practicing everyday was legendary, dribbling a basketball everywhere he went.”

Lonardo also had an opportunity to interview numerous friends of the late Marvin Barnes.

These individuals had known Barnes his whole life, remaining close friends with him until his untimely death in 2014. They explained how Barnes grew up playing basketball on the streets Providence and was transformed from a tall but underweight and unconfident player into the punishing rebounder he became and

an unstoppable force on both ends of the court.

Not only were these two players Rhode Island natives, but so was their head coach. Although Dave Gavitt grew up in Peterborough, New Hampshire, what even some of the most ardent Friar fans may not know is that Gavitt was born in Westerly, RI. When he was inducted into the Basketball Hall of Fame in 2006, he became the first Rhode Islander to be enshrined.

Homegrown: The Making of the 1972-73 Providence College Friars is a retrospective of that team’s remarkable season as well as a history of the school’s basketball program, which was itself responsible for drawing the local talent that propelled the 1972-73 Friars to their celebrated season.

Cumberland Library Celebrates 50 Years

Even after the pandemic, Dyer said the number of visitors has steadily increased over the last several years. It’s a tribute to the variety of services they now offer.

In its semi-centennial year, it could be a good time to reminisce about where the facility.

Computers were unavailable to patrons until 1997. The initial computers were bulky, hard to move, did not possess the speed, design, and software most devices are accustomed to today.

The library is still a place where groups, organizations and families can meet to either learn about their town, connect through shared appreciation of a book genre or interest, and take advantage of various services at either minimal or no cost. It is not just somewhere to pick up and drop off books. There is more than just a building that houses materials. It is also a meeting place for plans to shape futures begin.

While many cities and towns have their own library, one is celebrating a milestone. The Cumberland Public Library turns 50 years old this year. They are marking the festivities by holding guided tours, a former employee get-together, and plans for more events to come.

Director Celeste Dyer said the library continues evolving as the the needs of the community change. Having worked there for three decades and serving in her current position for 15 years, she has seen plenty come and go.

One thing that has not changed is the people coming in to participate in the fun and adventures they offer.

“We have a children’s room where they will do storytime or have games and other activities happening,” she said.

“We brought in computers for those who may not own one themselves for them to use. We also built a teen room that caters to kids with an after-school place to meet. The library works hard to fulfill the needs of this town and beyond.”

Everything needed to be looked up through a system of using an author’s name, a subject, or book title.

It was eventually switched over to CD-ROM when computers became more mainstream. Those fields were updated twice a year, according to Dyer. Today, all of that is stored in the library’s computer network and could be found quickly through the internet and is updated instantaneously.

They have seven meeting rooms that can hold numerous meetings for various local community groups. The rooms are available by request at the through the library’s website.

Dyer said the rooms are used for library programs and are have become popular with various non-profit groups.

“We host crafts and cooking classes for those adults

who are interested,” she said. “Kids have something to do during school breaks and in the summer. We have several books clubs that cater to Stephen King fans, science fiction enthusiasts, those who can meet in the morning or at night.

There is usually something going on here that will pique the public’s interest.”

For those who need to print documents, Cumberland Library enables people to contact them by email. They can send over the document, pay the amount owed upon arrival, and print up their documents. Cost for each page is $.15 for black and white and $.50 for color.

The library has plenty of materials for patrons to borrow.

The Cumberland Library also offers other services such as obtaining passports, faxing, obtaining a library card, and something relatively new called the “Library of Things.” Dyer said people can try different tools, technology, video games and other things for seven days with a valid library card.

She said they can try it out first before deciding to purchase one elsewhere.

Dyer said the town has backed the library through the years.

“Our Town Council has been supportive of the library. I hope it will continue,” she added.

When people arrive, they can seek the assistance of their 35-member staff, including 12 full-time employees. Dyer noted that some of the students who worked there have gone onto college (such as URI) to major in Library Sciences.

Besides books, for which there are two floors worth with numerous titles and topics, people can check out DVDs, movies, and programs that air on streaming services. For those who want to explore the region, the library through the Friends of the Cumberland Library, has reduced and free passes to area attractions. Families can go to Battleship Cove in Somerset, Mystic Seaport in Connecticut, New England Aquarium, Museum of Science and Museum of Fine Arts, all in Boston. Passes are available on a first-come, first serve basis and are good for one visit.

The Cumberland Public Library is open Monday to Thursday from 9:00 AM to 8:00 PM, Friday and Saturday from 9:00 AM to 5:00 PM, and Sunday from 11:00 AM to 2:00 PM (seasonal).

Benches of Honor

Memorial Day is a day that is meant to honor and mourn our country’s military personnel, who died while serving in the United States armed forces. Observed on the last Monday of May, Memorial Day is also considered the unofficial beginning of summer. It is a day for visiting cemeteries and memorials to mourn our service members who have died in the line of duty. Volunteers place American flags on their graves’ national cemeteries, while family and friends lay flowers and remember those lost.

A Cumberland man found his own unique way to pay tribute to America’s fallen heroes by crafting beautiful benches.

It was several years ago when Alan Vadnais came across an ad on social media. Someone was giving away a park bench. He acquired the bench with the intent of refurbishing it, and making something beautiful and patriotic out of it. It sat in his backyard for a month, before he was inspired to paint an American Flag across it.

Alan & Marguerite Vadnais Vadnais now builds custom, one-of-a-kind American Flag benches, as well as benches for veterans and their families, at a low price.

As a draftsman by trade, Vadnais is a skilled carpenter, with all the tools he needs by his side at his home workshop. It’s something he loves doing.

When he isn’t putting in hours at his full-time job, he’s working on patriotic benches.

He started out by purchasing unwanted, weatherworn benches from all over the state, and storing them in his backyard. Soon people were contacting him and offering their old, broken benches. Sometimes, only the cast iron sides remained. Vadnais restores the benches with new wood, patience, and creativity. He also works with an engraver, who can personalize the bench in memory of someone who served.

Vadnais is not a veteran, though his grandfathers were. Service and sacrifice mean a lot to him, and his benches aren’t limited to those who have served in the armed services. He also makes benches for first responders, police officers, and firefighters.

“These people do stuff for people every day.

Especially police officers, firefighters, the responder stuff; it’s amazing how they do all of this. Like police officers, all the stuff you see on TV, and they still do it every day, and that’s pretty amazing to me. And veterans, the same thing. They all deserve to be noticed. That’s how I look at it.”

Vandais has also made custom rocking chairs for several teachers in his community, and he recently shipped some of his work out of state, so Going With The Grain is off to a great start.

“I’m crazy about detail when I do something,” Vadnais said. “If it’s not right, I’ll take it apart and do it all over again, because it’s got to be precise, especially for veterans. I want them to have something perfect.”

Nothing is finalized until his partner, foreman, and wife, Marguerite, gives the green light.

“She’s stood behind me 100%,” he said. “We’re a great team.”

Vadnais is always looking for donations of old benches that people would like to get rid of, or

have restored for someone special.

“If you’ve got a vision, I’ll build it,” Vadnais said.

Soffit vents are small openings built into the underside of a roof overhang. That underside is called the soffit, and it wraps around the roof edges of most houses. These vents help fresh air move into the attic while pushing warm, moist air out—ideally through a ridge vent at the peak of the roof. Without proper ventilation, heat and moisture can build up over time and cause damage.

Soffit vents may seem simple, but they play a major role in keeping a home healthy, and understanding how they work shows why their design matters.

A soffit is the flat surface you see when you stand under the edge of a roof and look up. It covers the gap between the outer wall and the roofline. This space needs airflow so the attic does not trap heat or damp air. Soffit vents provide the entry point for cooler outside air to flow upward, allowing the entire roof system to breathe.

There are several styles of soffit vents, each working a little differently. Some are round discs spaced every few feet, while others are small rectangular vents installed in rows. However, many contractors—myself included— and homeowners prefer a long, continuous vent. This type runs along the middle of the soffit and stretches nearly the full length. It appears as a narrow, clean line cut through the panel. Instead of multiple separate openings, it creates one steady channel, allowing air to enter evenly across the entire length of the soffit and promoting smooth, consistent airflow.

Although I may be a bit biased, the continuous centerstyle vent is popular for good reason. First, it distributes fresh air evenly along the entire roof edge. Rather than having strong airflow in some areas and weak airflow in others, ventilation remains balanced. This helps prevent hot spots that can warp shingles or dry out wood.

Second, the long strip blends neatly with the home’s appearance. Because it runs straight through the center, it often looks clean and modern. Many homeowners appreciate that it performs its function without drawing attention, becoming part of the overall design rather than a series of noticeable openings.

Third, installation can be simpler, especially when working with long soffit panels. Cutting one continuous opening often requires less measuring than placing multiple individual vents. Maintenance can also be more straightforward, as cleaning a single continuous vent is easier than managing many smaller ones.

To work effectively, these vents still require proper protection. A fine screen or filter on the backside helps block insects, leaves, and debris while allowing air to flow freely. Inside the attic, baffles should be installed where the rafters meet the soffit vents. These baffles create a channel that directs airflow upward while preventing insulation from blocking the incoming air.

Regular inspections—ideally once in the spring and once in the fall—help ensure the vents remain clear and functioning properly. The system performs best when paired with ridge vents or other exhaust openings higher on the roof. Cool air enters through the soffit, warms as it rises, and exits at the top, creating continuous, natural circulation.

Over time, this steady airflow helps protect insulation, framing, and roofing materials. It can also reduce cooling costs by limiting heat buildup in the attic. By controlling moisture, it lowers the risk of mold, rot, and peeling paint.

When you look up at a home and notice a long, clean vent running down the center of the soffit, you are seeing one of the most effective designs for optimizing natural airflow. These continuous center soffit vents quietly do their job every day, helping your roof last longer while keeping your home stronger and healthier.

Leadership Principles: Leading with Faith, Excellence, and Organizational Impact

In business environments, leaders will encounter competing intentions, personalities, and pressures.

However, Effective Leadership Thinking requires alignment with purpose over distraction. This is where Organizational Excellence begins.

Leadership Mindset: The Discipline of Forward Movement Leadership is not sustained by talent alone. It is a sustained mindset.

Across Philippians Chapters 1, 2, and 3:13–16, we see a consistent call to: • Remain focused • Maintain humility • Press forward with intention This mindset is not passive. It is disciplined. It requires leaders to release past failures, resist complacency, and pursue continuous growth.
