Show your significant other that you appreciate them by cooking dinner on Valentine’s Day. Especially for those who do not typically manage the kitchen, a prepared meal for your loved one will go a very long way. The meal doesn’t have to be fancy; it’s the effort that counts!

Balsamic & Ricotta Bruschetta Ingredients • 1 cup finely diced strawberries • 1 tablespoon chopped fresh basil • 2 teaspoons extra-virgin olive oil • Flaky sea salt • 12 toasted baguette slices • 1 cup ricotta cheese • Balsamic vinegar for garnish (use an aged balsamic that is thick and syrupy) Directions In a small bowl, toss the strawberries with the basil, olive oil, and a pinch of sea salt. Spread each slice of baguette with ricotta cheese. Top with a spoonful of strawberries, drizzle with balsamic and sprinkle with more sea salt.

Pasta Pomodoro Ingredients • 1 pound Barilla or your favorite brand dried pasta such as spaghetti or penne • 1 pound medium size fresh tomatoes, such as campari or cocktail tomatoes • 6 tablespoons extra virgin olive oil divided • 6 large fresh garlic cloves of the same size, divided • 12-15 basil leaves • 1 ½ tablespoons kosher salt Instructions 1. Begin cooking the pasta noodles in boiling water seasoned with 1 tablespoon kosher salt for approximately 5 minutes. (Reserve 2 cups of the pasta water to add to the sauce later.) While the pasta is cooking, start the sauce.

2. For the sauce, cut the tomatoes in half, then quarter the halves, and set aside. Heat 3 tablespoons of extra virgin olive oil in a large sauté pan over medium high heat, and add three of the garlic cloves to the oil. Tilt the pan so the garlic is immersed in the oil to flavor it as the garlic cooks. Cook until the garlic becomes fragrant and begins to color, then to avoid splatters, carefully add the tomatoes along with their juice to the flavored oil. Cook for 1-2 minutes, stirring and breaking apart the tomatoes as they cook. Pull out the garlic cloves and discard. Continue cooking the sauce for 6-8 more minutes where it will thicken and become creamy as it cooks. Tear the fresh basil leaves into pieces and add to the sauce when cooking is nearly complete. 3. As the pasta is cooking, heat the remaining olive oil in a large sauté pan over medium high heat with the remaining garlic. Cook until lightly browned and remove the garlic and discard. Carefully ladle 1 to ½ cups of the pasta water ¼ cup at a time into the garlic infused oil. Transfer the noodles to the pan and continue cooking the pasta for 1-2 more minutes or until the water and oil is absorbed. Divide the noodles among four plates, and top with the sauce. Garnish with more fresh basil and finish with a drizzle of extra virgin olive oil before serving. Or, toss the noodles with the sauce and serve family style. Chocolate Covered Strawberries

Everything tastes better dipped in chocolate, and on Valentine’s Day, there’s no other dessert that symbolizes love like chocolate-dipped strawberries. Despite being one of the easiest and cheapest desserts to make, chocolate covered strawberries are one of those fancy, bite-size desserts that everyone loves, and on Valentine’s Day, can be a sweet ending to a perfect dinner. They’re beautiful and impressive looking, and they’re incredibly simple to make. One batch of chocolate covered strawberries only takes about 20 minutes to make. WHAT TYPE OF CHOCOLATE SHOULD YOU USE FOR CHOCOLATE COVERED STRAWBERRIES? Since this is such a simple recipe with just two basic ingredients, the quality of chocolate is really important. The higher quality of chocolate, the better they will taste, and I’ve found that “Baking Chocolate” works best.

A cheap bag of chocolate chips will not taste as good or melt easily. High quality chocolate (or baking chocolate chips) tastes less processed, melts easier, and really helps give the strawberries a nice beautiful coat after dipping. Ghirardelli baking chips or Baker’s Baking Chocolate are good choices for quality chocolate. You can use bittersweet or semi-sweet, or you can use milk chocolate, or white chocolate for dipping strawberries. HOW TO MELT CHOCOLATE FOR DIPPING: The easiest way to melt chocolate is in a double boiler or in the microwave. If you don’t own a double boiler, you can make your own with a simple saucepan and heat-safe glass bowl (see tutorial below). HOW TO MAKE YOUR OWN DOUBLE BOILER:

• Fill a saucepan ¼ full with water and bring the water to a low gentle boil. • Reduce the heat to the lowest setting and set a large (heat-proof) glass bowl on top, making sure the bowl tightly covers the pot. Make sure there are a few inches of space between the bottom of the bowl and the water. • Add chocolate to the bowl and stir constantly, until melted and smooth. • Remove the bowl from heat and add a handful of reserved chocolate to the bowl to temper the chocolate. • Stir until the additional chocolate has melted. MELTING CHOCOLATE CHIPS IN THE MICROWAVE Yes, you can melt chocolate chips in the microwave as long as they are a high quality brand of baking chocolate chips. To microwave them, set your microwave at half power and stir the chocolate every 30 seconds until smooth. HOW TO MAKE CHOCOLATE COVERED STRAWBERRIES: 1. Wash and dry the strawberries. 2. Prepare desired toppings (nuts, toasted coconut, etc.) 3. Prepare your workspace with a parchment lined baking tray to place the dipped strawberries on. 4. Melt the chocolate in a double boiler or in the microwave. 5. Dip the strawberries in melted chocolate. 6. Coat in desired toppings. 7. Lay the strawberries on a prepared baking sheet and allow them to rest until the chocolate has set. 8. Drizzle with melted white chocolate if desired. As the hospitality industry’s hotels, restaurants and other businesses operate during these challenging times, and as retail prices for energy continue to increase, the Rhode Island Hospitality Association (RIHA) encourages its members and nonmembers alike to work with an energy expert to make the best decisions based on their individual financial circumstances. Locking in rates for 2022 provides our industry’s businesses budget certainty and can help them navigate a volatile energy market. According to the U.S. Energy Information Administration (U.S. EIA), retail prices for energy are at or near multiyear highs in the United States this winter. Average consumer prices for natural gas in the Northeast are up 14.4% and electricity is up 7.3% --- nearly half of U.S. households that heat primarily with natural gas are expected to spend 30% more than they spent last winter on average, and the 41% of U.S. households that heat primarily with electricity will spend 6% more, according to the U.S. EIA. These increased prices are the direct, unsurprising

A New England Confectionery Treasure Sweetens Little Rhody

Who can resist a piece of delicious almond butter toffee? By Brian J. Lowney

This New England treasure has been enjoyed by folks of all ages for more than 100 years, and thanks to talented candy makers, Peter and Katie Kelly, the delicious confections are now made in Little Rhody, where the couple produces a variety of toffee treats in their spacious kitchen in the Sims Market at Farm Fresh Rhode Island in Providence. “I learned how to make candy more than 30 years ago,” Peter begins, noting that he studied and worked with the late Madeleine Kamman, a worldrenowned chef, restaurateur, cookbook author, and educator. The New York State native also perfected his culinary and confectionery skills in Arizona and was a professor for 20 years at Johnson & Wales University (J&W), where he taught many different courses throughout his career.

Peter adds, “We were the first people to produce food in the building. On opening day, after the ribbon cutting ceremony concluded, we went right into the kitchen and started making toffee. “We didn’t have to expend a lot of capital and the process wasn’t complicated,” he continues. “We began with Almond Butter Toffee and it’s still our most popular seller.”

Katie, a New Jersey native, who later grew up in Connecticut with her father, who inspired her love for cooking and good food, worked in several areas of the culinary industry, and later earned a degree summa cum laude in culinary arts from J&W.

In addition, the couple has expanded their product line to include naked (meaning no chocolate); straight butter toffee (meaning no nuts); a dairyfree coconut almond toffee; coffee toffee; and two seasonal varieties, pumpkin spice and peppermint toffees.

The couple met at the university and were married in 2012. They have a daughter, Michaela, now age 8.

“Our coconut-almond toffee is very popular,” Katie says. “We replaced the butter with coconut milk.”

“We had been talking about starting a candy business for many years,” Katie shares. “We learned about Hope and Main, in Warren, in the fall of 2014, and it was a ‘no brainer’ for us to get involved.”

The couple began their confectionery journey by selling their Almond Butter Toffee at the Hope and Main Farmers Market and at a few other small markets. In 2017, the couple was invited to open a


small summer shop at Bowen’s Wharf, Newport, and through a few transformations, continues to thrive and survive.

Like most entrepreneurs, the pandemic that began in 2020, affected production and sales.

Last October, Anchor Toffee expanded their confectionery company with the opening of a new production facility in the Sims Market at Farm Fresh Rhode Island in Providence.

“We lost about 30 percent in revenue,” Peter discloses. “During the pandemic, we closed for two months during March and April and started back slowly to re-open the store. “People started to come out,” Katie recalls.” We have a small part-time staff and things came together.” During the dormancy, Peter received a scholarship to participate in the Goldman-Sachs 10,000 Small Business Program, which helps entrepreneurs create jobs and economic opportunity by providing access to education, capital, and support services. The program is administered by Babson College. “It was a super-intense program where you get the knowledge and training,” he emphasizes. “I learned to understand my business. “It was a really tough program,” Peter recalls. “It was one of the hardest things I’ve ever done. It took a lot of studying, writing, and many classes on Zoom. “It was the perfect thing to do at just the right time,”

“It’s been great,” Peter shares. “Our new facility has been very successful and we’ve had the best year in the 7 years since we’ve opened.” According to the couple, the business plan includes developing new products, including a sugar-free toffee, and paying close attention to trends in the food service industry and other vital areas. “News about our candy is really spreading about and we are really thrilled,” Peter notes. “Our products are available in several markets, book stores, hotels, and at the airport.” Anchor Toffee is open, Wednesday-Saturday, 10 a.m.-5 p.m. (The Farmers Market is open Saturdays, 10 a.m.-1 p.m.), 10 Sims Ave., Providence. When it comes to being healthy there is no better time than right now. With less running around, less social gatherings and even maybe not having to go to the office, there is no better time or opportunity to focus on you and the foods that you should be eating to be the best you you can be. A healthy balanced diet will not just make you feel better and most likely have you lose weight, it will help reduce risk of disease and improve the quality of your life. With the Covid outbreak it is now more important than anytime in our lifetime to concentrate on your health. I hope this article entices you to incorporate healthy habits not only during Covid but for the rest of your life. What are some of the benefits of healthy eating? Well for starters, food helps fuel the body and so contributes to brain function. The food choices you make control a healthy diet, are an absolute contribution to your energy level, improve your brain function and ward off diseases. Add to this that eating the right foods provide the vitamins you need, they balance carbohydrates and fats and help keep your body in top condition and feeling it’s best. 24 Shop In RI

These are very difficult times we are living in because of the coronavirus pandemic. The challenges can affect us both physically and emotionally. It’s hard to keep the same routine when you have to physically distance from others, wear a mask if you go out etc,. All these changes plus the added stress can make preparing meals a special challenge. Here are some tips that can support you and hopefully get you through these difficult times both physically and mentally: Do your best to eat nourishing meals. Foods such as fruits and vegetables, lean protein, and whole grains. Those foods can help keep your body and mind healthy during stressful times. Cut down on foods that bring on anxiety, such as sugar, caffeine, and alcohol. It’s important to enjoy small treats, but avoid going overboard. The key word is “small”. Tell yourself “I know what this tastes like I don’t need a lot of it”. Overindulging can lead to increased anxiety and sluggishness.


Feeling the urge to “stress snack”? Acknowledge your cravings, then take two or three deep breaths and ask yourself if you’re really hungry or just passing the time. Most of the time you are just bored. If you can’t find something else to do, chew gum. When you chew gum you have the act of chewing and the taste on your tastebuds so you trick you brain into thinking you are eating. Having daily schedules and routines can ease anxieties and help you stay grounded. This applies to meals, too! Try to eat at regular meal times and avoid snacking in between. If you’re staying at home with other people, try to eat at least one meal together each day. It can help dampen feelings of isolation. People always feel better when around other people. Again, during these difficult times, some things are out of our control. Your nutrition does not have to be one of them. Take this time to focus on you. What changes have you been wanting to make? Think about a few goals you want to reach. Write them down and stick to at least one of them everyday. Everyday set aside a few minutes to track your progress. Here are a few ideas to help you get started. Drink more water. Tell yourself you are going to make it a goal to drink at least eight glasses or 64oz of water a day. Water is a natural detox and it also helps keep your skin smooth and glowing. Cut sugary drinks. If you drink soda, stop. Soda

is poison in a bottle. Go on a daily walk. Make it a goal to walk a mile or more everyday. This is easier and more enjoyable if you can find a walking buddy. If you can’t put some earplugs in and listen to your favorite music. I love walking and running by myself, as long as I have my music. Lastly, if you like to cook, make it a point to learn new recipes. Try using whole, natural ingredients. At first people say “I don’t like whole wheat or I don’t like fish.” The reality is, when you eat healthy and you start losing weight, getting more energy or both, you actually start loving the foods you eat and the world is a whole new place. “One simple rule: If it came from a plant eat it. If it was made in a plant, don’t.”

If you are among the many Americans who own a second home that you occasionally use as a vacation getaway, you may be leaving an important source of income untapped. It’s worth taking the time to understand the value of renting the property. Before you make any decision to become a “vacation landlord,” remember that some decisions are worth careful consideration.

Do-it-yourself or hire a team First, consider how much of the burden you want to take on for yourself. Renting a property may create an income opportunity, but it requires work. If you are going to do it yourself, you’ll need to advertise the property, follow-up with potential renters, collect the rent, establish expectations for your renters and make sure the property is in good shape. You may want to hire someone for housekeeping services, yard care and maintenance work. But that comes at a cost and it still leaves work for you. The alternative is to use a full-service management company that will handle many of the tasks related to booking and managing the property. Taking this route may cost you as much as 20 percent or more of the rental income generated by the property. You have to determine if that investment is worthwhile for you.

Tax considerations to keep in mind Another factor to consider is how much you plan to use your vacation home. There are tax ramifications based on the amount of time you live in the home versus the time you rent it out. When you rent your home for 14 days or less in a year, rental expenses are not deductible, and the rental income is excluded from your gross income. If the property is rented for more than 14 days during the year, rental expenses are generally deductible. However, if you use the home as a personal residence for more than the greater of 14 days or 10 percent of the days it is rented during the year, then deductions are limited to gross rental income. Certain other rules may reduce or eliminate your ability to claim rental deductions. Keep in mind that state and local taxes may apply no matter what decision you make regarding the period your home is rented out. “When my oldest mare died, I allowed the others to see her, sniff her body, and realize that she had died, not just disappeared,” she wrote. Pugh added that the mare’s daughter, Dolly, was brought out of the barn to witness the burial. “She stood over her mother until the heavy equipment came to move the body, dig her burial spot, and bring her down to the site,” Pugh continued. “Dolly followed the backhoe and waited patiently, standing guard until her mother was completely covered and the equipment left. From that day forward, when she was let out of her stall in the morning, the first place Dolly would go was to her mother’s grave and stand over it for a few moments before moving on to graze. She is now buried alongside her mother.” Pugh revealed that cows also grieve. “I saw my neighbor’s cow give birth to a premature calf,” she recalled. “It didn’t live long, less than an hour. As expires 2/28/22 the mother stood over her baby, trying to nudge it back to life, all the other cows gathered around. Then they formed a line and each cow walked by, gently touching the dead calf and then moved on. It was the most amazing thing I had ever seen.” Pugh remembers that the cows also comforted the mother by gently nudging her and remaining with the grieving animal for the rest of the day.

Ask An Expert Why Your Home Has Mice

Most everyone I know has some type of “fear” that totally “skeeves” them out. For some people, it’s spiders, for some, it may be cockroaches, or, it could be any other of a wide variety of creepy crawlies that can scurry around your residence. For me, it is mice. If I see one of these tiny beings, I will totally freak out and run for my life! Throughout various properties that I am responsible for, I use differing methods of control in order to prevent mice from working their way in and setting up shop. Although these methodologies have been proven to be quite effective, the big question is how do the mice get in there in the first place? Valid question. The simplest answer is – any way they can! In general, mice do not need that big of a hole, whatsoever – typically, not bigger than a dime – in order to make their way inside a home or business and start exploring. With the alternative of getting overrun with these tiny creatures, in many properties, some type of mouse control is vital. In addition to control measures, here are some tips in terms of limiting access points: Old bulkheads (basement doors) – make sure these are very well sealed; these tend to lose their tightness over time and can develop into great entry points for mice. The weather stripping at the bottom of entry and garage doors – if these are not solidly tight, mice will very easily work their way in. Holes in the foundation or a gap where your foundation meets the main exterior siding – these entry points are especially tricky to neutralize because mice can (as an example) enter from one area (i.e. - just above one’s sill plate) and begin to work their way in behind your siding, until they gradually find a path into the house. Gaps associated with windows – mice will often work their way around a property until they find a weak link around a window; many times, this ends up being an unknown space large enough to fit the mouse, yet tiny enough to be undetected. A gap around a pipe that enters the home – this could be a water pipe, a gas pipe, or the like – definitely an attractive possible entry point! 58 Shop In RI

To prevent the unsettling feeling of seeing a mouse scurry across the room as you are comfortably watching television on any given evening, proper prevention tactics (as with most things) are critical. I believe the best way to go is to bundle a mouse control plan with an approach of making sure that any potential entry point is as limited as possible. It is good to have a mouse control system in place, if able to be done, it is even better to stop the mice from getting in altogether. The key is to eliminate any semblance of a gap that mice might be able to squeeze their little, yet flexible bodies through. This includes making sure any rotted wood that can easily be gnawed through for access is properly replaced. Unfortunately, prospective areas of ingress can be seemingly everywhere; the more possibilities you are able to eliminate though, the less of a chance that you will have that random startling encounter with this tiny animal, which has been known to cause even the bravest of hearts to jump up on tables in order to avoid them!

Attention all males that want to keep from being “shut off,” or maybe dreadfully nagged for the next 12 months! Soon it will be one of your sweetheart’s most anticipated days of the year so listen up! If you’re the type that has to be reminded that VALENTINE’S DAY is on FEBRUARY 14, you either should take a minute to check your priorities, or, maybe your love interest is not very important to you (in your mind, anyway). Even for the not too serious relationships, on Valentine’s Day, a small token is called for, or so that’s my belief. Maybe a single rose and a box of chocolates, or a night out with dinner at a local casual establishment is appropriate. If you’re at a point where you are unsure as to where your relationship is heading, I suggest you don’t try to avoid her because that will likely be very hurtful to her and if you end up becoming serious, she will NEVER let you forget it, if she doesn’t dump you immediately!

For the more intense, long standing relationships, putting some thought into the day is a must, in addition to picking a special card for her. These are gestures that she will appreciate and expect. Choose a fine dining establishment if that’s what she prefers, or you could make reservations at the first restaurant you went to on your first date and surprise her with some roses sent to her office. Her co-workers will ooh and aah, putting a big smile on her face, and you can’t lose with this type of thoughtfulness. For those who have been married forever, planning something special that is also personal will make her day memorable, and this type of effort is non-negotiable (include a meaningful card, without a doubt). The latter is the category that me and my husband fall into. After several years of dating, followed by 25 years of marriage, we have spent more than half of our lives together. With this in mind, my expectation is that my husband will find a way to

make me feel special, even after all of our shared Valentine’s Days as a couple. Besides, there is always an endless list of things that will make me happy. Being that I am somewhat easy to please, it really doesn’t take much to satisfy me. Only those in a relationship know the expectations of each other so always take this into account when you are choosing your plans or when buying gifts. Be it a dinner at home that he cooks, a night out without the kiddies, a few days away to just about anywhere, or a piece of jewelry that I’ve been hinting about since Christmas (lol), for me, any of these will do. The important part is that he puts the effort into making the plans without my input. I must admit that my husband has not yet failed and that tells me all I need to know about what’s in his heart. The fact that he knows what makes me happy and does what it takes to make it happen, is what will please me the most, and this is the case with most females.


I am not a “flower person,” but cards have always been something that I truly appreciate, especially coming from my husband. This may be surprising to men, but take it from a woman, we read every word on cards from our significant other so be sure that the card you choose makes sense for your particular relationship and is one that expresses what you haven’t said often enough throughout the prior year. Believe me, it may seem like a small gesture, but if there is any question about your feelings, this is the time to set her straight and it will go a very long way in warming her heart. The prior year has been stressful for most people so make an effort on Valentine’s Day to refresh your relationship. Yes, it is still possible to surprise her, even after a lifetime of being together, and it doesn’t have to require deep pockets to get it done. So where is money being spent on Valentine’s Day across the United States? On average, lovesick shoppers shell out more than $21.8 billion in Cupid’s name each year. That makes Valentine’s Day the third-priciest holiday on the calendar for American lovebirds. According to statistics, most men usually purchase the same things each year; mainly candy, cards, and flowers. More than half of Americans spent money on candy and 44% spent money on greeting cards in 2021. Pre-pandemic, most couples ventured out to restaurants to spend time

together over a romantic meal. Since the onset of the pandemic, dining out took a backseat to something different than what has been an annual tradition and ordering out for dining at home took its place during the past two years. In 2022, it is believed that restaurants will once again receive a good amount of profits. In 2021, it is reported that more than 33% of shoppers spent $4.3 billion on dining out and $2.9 billion on flowers. They also spent $2 billion on gift cards and $1.3 billion on greeting cards. An estimated 21% of shoppers spent money on jewelry to dazzle their darlings. Toyota of Smithfield asks fleet and vehicle owners to consider bringing in their older car or truck for more fuel-efficient models. General Manager John Durrani hopes those looking for inventory will bring in their used car to take advantage of several dealer incentives. “Anyone trading in either their used or certified pre-owned cars will receive an additional $1,000 over book value,” Durrani said. “There isn’t a better time for anybody to trade in their cars. Your trade is worth more than it ever has before, and it’s worth more than its ever going to be worth.” The dealership has back orders for weeks, and sometimes months on certain models. “The market has been ‘pretty crazy,’” Durrani shared. With few cars available on their lots, announcing trade-in bonuses has become very critical. Durrani said that people currently have the means to either purchase a new vehicle or one of the very few remaining used cars on their lots. That stems from several rounds of federal and state financial incentives mailed to families. The ask remains because of raised requests, he said. “We are appealing to the public for used vehicles. Simply put, we don’t have the inventory to adequately fulfill orders,” Durrani said. To help facilitate the need for more certified, pre-owned vehicles onto their lot, Toyota of Smithfield also offers 115% of the book value for any used cars. It does not matter whether the customer decides to purchase a car from their lot, Durrani said. “We will buy your trade, even if you don’t purchase a car from us,” he added.
