S tra w b e rry T a rt Ingredients: 8 Pre-baked flat tart shells 4 oz Vanilla Pastry Cream i-i6 oz of Fresh Strawberries 4 oz of Red Apricot Glaze

Ingredients: 12 oz of white chocolate baldng bars V2 cup of whipped cream 8 oz of cream cheese 6 oz of ladyfmgers Va cup of cooled espresso or strong coffee 1 tablespoon of rum nutmeg whipped cream sliced fresh fruit Preparation Melt chocolate bars with V4 of cream; stir until smooth Beat cream cheese in a large mixing bowl until blended and fluffy; gradually add melted chocolate and beat the mixture Whip remaining 1-1/4 cup of cream in a small mixing bowl until stiff peaks from; fold cheese/ chocolate mix into cream; set aside Line bottom of 9x3 inch pan with wax paper; line bottom and side with ladyfinger halves Combine coffee and mm into one bowl; brush V2 of mix onto ladyfingers Spoon 1/2 of cream cheese/chocolate mix in pan; repeat ladyfinger, coffee and cheese layers Garnish with nutmeg whipped cream; cover and refrigerate at least 2 hours Also garnish with sliced fruit before serving 114

Preparation: - With a spatula spread pastty cream onto the bottom of the tart shells. - Wash the strawberries and remove the green and stem. - Place as desired onto the pastry cream. One in the center and the half berries leaned against the center berry works well. - Apply hot apricot glaze with a small pastry brush. - When all the berries are small stand one in the middle and several around the outside of it.

Ingredients: - 1 cup of flour - V2 cup of water - 2 tablespoons of vegetable oil - 2 teaspoons of salt - 4 scallions, chopped fine

Preparation: - Put flour on a board; make a well in the center and add the water; mix into a soft, smooth dough and divide into 2 portions - Roll each portion very thin Brush each with 1 tablespoon of oil; sprinkle with 1 teaspoon of salt - Spread half the scallions evenly on each sheet - Roll each portion up like a jelly; coil it up so itâ€™s lying flat on the board in a spiral - Flatten with a rolling pin until itâ€™s 7 inches in diameter - Heat 1 tablespoon of oil in a small saute pan; add the cakes, one at a time, and fry 2 minutes on each side - Cut each cake into 8 wedges and serve

Ingredients: - 1/4 raw saltfish (codfish) -1/4 flour -1 small clove garlic -1/2 teaspoon paprika -1 large onion - 3 stalks of scallion - 2 large tomatoes -1/4 scotch bonnet pepper Procedure: 1. Wash and dry the saltfish 2. Use your hands and shred the saltfish finely and set aside in a mixing bowl. 3. Cut the onions, garlic, scallion, pepper and tomatoes in to fine pieces. 4. Combine the onions, garlic, scallion, pepper and tomatoes. 5. Cook this seasoning thoroughly in a frying pan (skillet) using a small amount of oil. 6. Add flour and water to the saltfish and make thin batter. Stir 115

Chili powder, clove powder, & cinnamon powder 1 tsp chopped cashew nuts each 1 stick cinnamon, broken into bits 2 cloves & cardamoms each 2 medium sized onions, sliced finely 2 tbsp ghee (clarified butter) A pinch of Saffron (orange coloring) 1-2 tsp milk 1 cup deep fried onion slices for garnish V i cup chopped mint and coriander leaves for garnish (optional)

Method: I. Mix ingredients together from the cup of curd to the i tsp of cinnamon powder « 2 . Add meat to mixture & let it marinate for about 2 hours Heat the ghee in a pan & add cashews, cinnamon, cardamom, & cloves. Fry for 15 sec. & add slicey;^ 3onion When onions are transparent, add marinated meat & without adding water, cook meat on mediuityf^, heat till meat is completely done & set aside. (Masala will reduce & lose all moisture) « i| 5- Wash rice & steam cook so that individual grains can be separated 6 . Dissolve saffron milk, take 1 cup of rice & add saffron to it 7- Mixed colored rice with the rest of the cooked rice, so that there are streaks of orange in the rice 'll utl 8 . In a deep oven-safe bowl, pour rice & spread to cover entire bottom of the vessel 9- Pour meat on top & spread evenly 10. Cover with foil and bake for about 20 minutes at 300 degrees F. Fry onion slices &/or chopped min & coriander leaves for garnish. II. Remove and serve hot, garnished with chopped mint and coriander leaves 11(1

In a saucepan, scolding milk (warm milk and lemon peel unto very hot, but not boiling). Add gelatin to beaten egg mijrture, beat to ensure that they are adequately mixed ^ 3- Add to milk, together with sugar 4- Stir until mixture begins to boil and then immediately remove from stove 5- In another saucepan over low heat, heat 5 tablespoons of sugar until sugar begins to carmelize Pour caramelized sugar into mold, following with flan mixture 7- M o w to cool to room temperature, then refrigerate over8 . To remove, place mold in hot water for a few seconds and then invert mold onto a serving plate
