SHOREVIEW SUPPER CLUB: AN AMERY STAPLE

By Kelly Holm Located just a few miles northwest of downtown Amery, near the narrows where Pike and North Twin Lakes are joined together, lies a nearly century-old establishment with a rich and storied history. The Shoreview Supper Club, owned by Tony Wolter, has gone by several names for just as many purposes over the past ten decades.

One of its first and most well-known iterations was as Bungalow Beach, a lakeside resort and restaurant that was popular during the Great Depression era. Though the original Bungalow Beach building burned down in the early 1960s, the property still remained in use as a Bible camp and a camp for underprivileged youth run by Twin Cities Lutherans, before being converted back into an eating establishment again.

Meanwhile, as fire claimed the Bungalow Beach, the property’s

future owner was just starting out in his career.

Freshly graduated from South Dakota State University and done with the Navy, a young Tony Wolter, alongside his brother, took over the family business, a drug and liquor store on St.

Paul’s University Avenue.

Located in Frogtown six blocks from the Capitol, Wolter Brothers Liquors is still in business today, though it is no longer affiliated with its namesake family— for in 1989, Tony Wolter acquired the property that would

encompass the next 3+ decades of his life’s work.

Shoreview Supper Club, much like Wolter Brothers Liquors, originated as a family affair and is still one today.

“My wife, she passed away about 14 years ago, but both of my sons [still work here],” Wolter said. “My [one] son’s cooking, and my other son works just on Fridays behind the bar.”

Business hours include Sunday breakfast (10 a.m.1 p.m.) and Wednesday through Saturday (4-9 p.m.).

Wolter recommends the

prime rib as a keystone dish that is delectable without being overly hard on the wallet.

“Appetizers, any kind of drink you want, we can make it— a chocolate malt or any of that stuff, we can do all of it,” he said.

“Supper clubs mainly do a lot of martinis and a lot of Manhattans; that’s what they’re known for.”

Club overlooks is a popular location for picnicking, and Wolter has hosted weddings there in the past. Local musicians, such as Mark Sterry and Jim Zachary, can frequently be seen entertaining patrons on the supper club’s deck.

“The last few months, [business] has been great, because people want to get out. They’re tired of staying home. It’s a lot better now, probably, than it’s ever been,” Wolter said. “It brings people from Minnesota and the other side of Wisconsin, they hear about it and say ‘We’ve got to come see Tony, see the whole family.’” ■

MAKE THE MOST OF YOUR SPACE FOR CABIN STORAGE

By Kelly Holm We all want our lake houses to feel quaint and rustic— that’s part of their appeal, in comparison to life in the city, after all. But with a smaller space comes concerns about storage: maybe you don’t have a full basement, or a large enough garage to hold all of your equipment and supplies when they’re not in use. True, you could rent out a storage locker in town, like you maybe do for your boat in the off-season, but you’d prefer to cut down on costs whenever possible. With that in mind, here are some tips for making the most of the space you do have: Take advantage of the land down under.

Don’t worry, we promise there are no monsters under your bed— and once you maximize the use of that space for storage, there’ll be no room for any to hide out! If you want to convert your bed to a trundle, you’ll have a built-in drawer to stash seasonal equipment away under your sleeping space.

The underside of your stairwell may also be an optimal location for storing larger contraptions, such as water skis.

Get furniture that doubles up. In addition to a trundle bed, there are plenty of other furniture configurations that include built-in drawers, from coat racks that double as shoe storage space to kitchen tables with Lazy Susan undersides.

Hang things from the wall and ceiling. You might envision displaying photos of family milestones, or your children’s grade-school artwork, in prominent positions on your living room wall— and don’t worry, there will still be plenty of room for that! But your walls, and ceilings, may also be ideal locations for installing racks from which to hang your

DISCOVER THE SHORES OF SAND LAKE

By Kelly Holm If you’re looking for a quaint but deep body of water in which to take a dip or angle for fish, Polk County’s Sand Lake just might be your best bet. Located just east of the Town of Osceola, this 216acre lake measures nearly 60 feet deep, and is unusually clear to boot. According to a recent Secchi disk reading, Sand Lake’s clarity measures at 10.75 feet, with 8 feet being the average visible depth for lakes in the region. “[Sand Lake] is mesotrophic [containing moderate levels of nutrients]. That’s pretty good, considering a lot of our lakes are eutrophic, which are the more nutrient-rich lakes,” said Katelin Anderson, the Education & Information Coordinator for Polk County Environmental Services. “The water quality is kind of above the average for the reason… unlike most of our lakes that do have water quality concerns, [Sand Lake] has pretty clear water.”

Sand Lake also boasts lower chlorophyll levels than most area lakes. Though the

Port of Call regional average is 15.4 micrograms of chlorophyll per liter, Sand Lake measures in at just 4.3 per liter.

“It’s good if your chlorophyll number’s low, because [chlorophyll] is an indicator of algae,” Anderson said.

Unlike many Polk County lakes, Sand Lake is largely unaffected by invasive species. Though Chinese mystery snails, curly leaf pondweed and narrow leaf cattails have all been detected within Sand Lake’s waters, their numbers are minimal and not making much of a detrimental impact, perhaps due to the lack of inlets or outlets.

“As of right now, they’re not becoming a nuisance for recreation or things like that,” said Polk County Water Quality Specialist Colton Sorensen. “For snails, you can’t really do anything… curly leaf pondweed,

since it’s in such low density… it’s hard for them to really do any control measures. If there were to be an increase in curly leaf or something where they had to start spraying for it, then

The lake was not always unaffected by invasive species, though.

In the early 1960s, large numbers of invasive carp populated Sand Lake, and chemical treatments were implemented to kill off the invasive population. After the

lake was reclaimed, the Wisconsin DNR stocked it with native species such as walleye, yellow perch, fathead minnows, ciscoes and trout. Within 10 years, bass, pike, bluegills and crappies showed up in Sand Lake as well.

“With [Sand Lake] not really having inlets and outlets, that would make a control project easier, because there’s nowhere for them to move,” Anderson said.

Sand Lake possesses one public access boat landing, as well as a beach with public restroom facilities.

TO CATCH A CRAPPIE

… In spite of their name, these panfish are anything but. With their sweet, soft white meat, crappies are a delicacy in Southern cooking, but they can appeal to northern tongues too.

Like their sunfish cousins, these small fish are prevalent throughout Wisconsin’s waters, though it can get tricky to hook one due to their unique mouth anatomy. Here’s what you’ll need to know about crappies if you want to add this catch to your trophy case…

Identification Facts There are two different species of crappie: black and white. But despite their names, identifying them isn’t always so black and white. White crappies are generally lighter in color, and black crappies tend to be darker, but you’ll find a variety of phenotypes within both species, and they can interbreed. It’s entirely possible that you’ll hook a paler black crappie, or a darkly-colored white one.

To tell the difference once and for all, check out the dark markings along your catch’s

side. If you see vertical bars, you’ve got a white crappie. If you see sporadic splotches, congrats, it’s a black crappie. Black crappies typically have seven or eight dorsal spines, while white ones are more likely to have five or six. Additionally, black crappies are usually rounder and shorter than white crappies, though both average around 10 inches long.

Where to find crappies Both black and white crappies can be found all over the continental United States, whether they are native or introduced. Home turf for crappies generally includes the eastern half of the country, with populations having been transplanted west over the years.

Crappies tend to prefer low-current areas, such as lakes and backwaters. Black crappies prefer clear water with thick vegetation, while white crappies are okay with a slightly murkier, less-vegetated habitat. Either way, they seem to like a hideout!

Fishery building and guarding nests in thickly vegetated, shallow waters. During the summer, after spawning is complete, your best bet is fishing by starlight in deeper waters. In winter, crappies like to stick together and go deeper. If you want to become a proficient crappie angler, you’ll have to be nocturnal— chow time for crappies is generally between midnight and 2 AM. Otherwise, the hours bookending dawn and dusk are solid bets in addition.

How to catch crappies As winter approaches, crappies are increasingly hungry to stock up for the cold season ahead, so consider using minnows— crappies’ natural prey— as bait when you go out fishing this fall.

Artificial lures can work as well, especially if they resemble small fish or other delicacies. Crappies are called “papermouths” for the fragility of their mouth tissue, so be gentle and humane when attempting to hook one, or you’ll maim the fish and lose your catch in the process.

(BWCA). Every year, we would go over Labor Day weekend. We chose that

time of year because the bugs were usually gone by then and nights were cool, and the days were sunny and dry.

We would tell everyone how beautiful the BWCA and that they should go.

So, when our French friend’s children came to stay with us for the month of July, we told them about the “wild untouched wilderness.” They wanted to go, too.

We spent days packing our bags and planning meals. The kids were so excited to see the “wild” they didn’t want to stop at any of the typical tourist sites on the way there.

When we finally got in our canoes, we only had 5 hours until we would arrive at our camp site.

Three canoes set off across the lake. The first lake was small and calm.

The second lake, the wind picked up and started gusting forming white caps on the water and blowing our canoes sideways making it impossible to paddle across the lake.

We paddled as hard as we could and slowly made progress along the shoreline. After three hours of hard paddling, I needed a rest. I was in a

canoe with Alice, who was completely worn out and was also happy we were taking a break. The rest of the group kept going.

We pulled up on a small island and laid down on the beach. When I finally had the energy to look around, I discovered the island was covered with ripe, wild blueberries! We ate as many as we could and filled every container we could find in our canoe with berries.

When we finally arrived at our campsite after 10 hours of paddling, everyone couldn’t believe the amount of blue berries we’d found. We ate blue berries with everything. It’s a good thing we’d found them, because it rained, it was hot, and the bugs were horrible. It was the worse BWCA trip we ever took—but what we all remember were the wild blueberries.

Cake: 2 cups flour 2 tsp baking powder 3/4 tsp salt 1 cup sugar 4 tablespoons butter, softened 1 egg 1 1/2 tsp vanilla 1/2 cup whole milk 2 cups fresh blueberries (frozen work well too) Preheat oven to 375°.

Lightly butter and flour an 8” or 9” cake pan and set aside.

In a bowl, combine the sugar, flour, cinnamon, cardamom, salt, and butter. Stir and mix in the butter with a fork until it resembles sand. Set aside.

In bowl, mix the dry ingredients together for the cake; set aside. In another bowl, mix the sugar, butter, and vanilla together until creamy and well blended.

Add the flour and milk alternating ending with the flour. Fold in blueberries.

OUR CABIN-REMODEL OR REBUILD? PART 2 - A CABIN CASE STUDY

In our previous article, "Our Cabin-Remodel or Rebuild?" we discussed what steps to take in determining a cabin's condition and whether a teardown or a new build is the best solution. One may also have a sentimental attachment and how important it is to carry on the traditions for future generations.

In this cabin project example, we worked through these steps with our clients and, after much consideration, decided to maintain the charm and feel of the existing cabin while trying to interweave a new "project program" into the mix.

The existing cabin had a partial basement for boat and incidental lake storage and crawl space.

Furthermore, the main level floor plan had a living area, kitchen, small bath, and a sleeping loft. The foundation, floor structure, and overall condition of the cabin structure were inadequate and needed repair or upgrade. The

building envelope, roof, insulation, and new plumbing, electrical, and heating systems were upgraded to meet or exceed the current building standards.

The new program incorporated a new foundation system with a full basement that included a modern bedroom, bathroom, laundry, great room, and mechanical-storage room. The main level design involved removing all interior walls, which provided an open floor plan with an expanded kitchen, dining, and living room. The existing fourseason porch was converted into additional living space that included a study-bedroom, a new half bath, and expansive stairs leading to the loft space. A new concrete slab was provided to incorporate a future fourseason porch addition on the left side of the cabin directly adjacent to the living and dining room. All new windows and doors were adding with expansive glass on lower and main levels capturing dramatic lake views.

The clients wanted to maintain the original look of the existing vaulted ceiling of cedar timber framing with tongue and groove boards. This was achieved by adding insulation to the top of the existing roof. Also, the existing siding was replaced with a prefinished metal panel system giving a modern look.

The remodel addresses the family's growing needs, creating greater spaces, and improving the cabin's livability. By creating an open floor plan, dramatic views, and maintaining the original charm and feel of the past, they can continue the cabin tradition for generations.

WHEN IT’S TIME TO BID THE LAKE GOODBYE…

By Kelly Holm You might not like to think about it, but the change of seasons will soon be upon us: days will get shorter, temperatures will get colder, the ground will begin to frost and the lake will start to freeze.

With the autumnal equinox comes, for many, a farewell to cabin life until next spring. But before you remove your key from the lock for the last time, what do you need to do to ensure that your lake house will make it smoothly through the winter and be waiting for you in the same condition come spring?

Avoid getting in hot water: Plumbing, pumps and pipes are the root cause for many of the most common pitfalls affecting cabins during the off-season. Make sure nothing is amiss with

your septic tank system, keep your sump pump active to avoid snowmelt and other unwelcome moisture in your home, and turn off your water supply to prevent frozen and bursting pipes. A freeze alarm might be a welcome investment, if you don’t intend to return for periodic checks throughout the winter. If you know your neighbors plan to still be around and are trustworthy, consider hiring them to keep an occasional eye on things.

Keep a roof over your head. A clear and up-todate roof is a necessity to keep your cabin sturdy through the snowy season. Unclog the gutters to curtail leakage, and monitor any nearby deciduous trees that may shed leaves onto your roof. Don’t wait until spring to renew or rejuvenate your roof’s shingles, as

outdated ones enable leaks and collapses.

Evict unwelcome guests. Pesky critters are a constant of lake life, but you don’t want them to live there rent-free while you spend the winter elsewhere. Inspect your

cabin’s exterior for any entrances or gaps that small animals might be able to fit through, and seal them off when you find them. Close up your fireplace. Take all the food out of your cupboards, fridge, and freezer, and

pack up any clothing or paper products— not only do some insects eat them, but they’re a fire hazard, too. You might consider setting traps, but be aware that you might find an unwelcome and smelly surprise in the spring.

Close the curtains and pull the shades. You’ll attract less attention from would-be intruders this way. Additionally, you’ll prevent any furniture in close proximity to windows from becoming bleached by the sunlight.

Take care of outdoor supplies. Clean off and store your boat (and dock, if you have a portable one). Move outdoor furniture to a warm and dry location as well— especially wood furniture.

Remove firewood from the premises, mow the grass and rake the leaves. ■
