Once again, we are very happy to present as part of our monthly “Island Home” feature a preview of the Amelia Island Museum of History’s 2022 Holiday Home Tour. The Holiday Home Tour is one of the museum’s most important fundraisers, and this year the tour returns with five beautiful homes in Fernandina Beach’s Historic District, all dressed up for the holidays. We hope everyone has a chance to enjoy the tour this year.

Travel back in time next month from December 8 to 11 for the eighth annual Dickens on Centre festival in historic downtown Fernandina Beach. The Amelia Island Chamber Music Festival is pleased to announce William Ransom as the festival’s new Artistic Director. Art on Centre is a unique contemporary coastal fine art gallery, located in the historic district of downtown Fernandina Beach, which has been displaying the works of more than twenty-five established artists from all over the United States and Canada for nearly a decade.

Visitors frequently describe the atmosphere inside Art on Centre as professional, peaceful, and provocative. While on their quest for just the right piece, they engage in discussions with owner Susan Siegmund and her interactive staff about psychology, science, relationships, and ultimately, that perfect choice for their wall becomes apparent. The gallery is alternately a classroom, a museum, a yoga studio, and, finally, a great art gallery.

The gallery participates in the downtown Artrageous Art Walk, which occurs on the second Saturday of each month and features one of the gallery’s artists each time. Wine and refreshments are always offered, and the camaraderie is lots of fun.

November’s featured artist is Louisville photographer Chip Dumstorf, an innovative marketing and corporate

communications executive who has integrated his technical abilities into creative brand development projects nationwide. He is also a co-founder of one the nation’s finest digital media agencies, Bisig Impact Group.

Chip has been providing creative direction in advertising for several high-profile industries for more than a decade. His beautiful photographs have been in the gallery for years, and he has developed a new Amelia Island-inspired series of larger land and sea images just for this event.

Open Wednesdays through Sundays at noon, the gallery’s three showrooms are full of an amazing variety of sizes, mediums, and techniques. There are oils on canvas, copper on wood panel, aluminum panels with bold and colorful images, seascapes, and sculptures in metal and wood.

Chris Riley, owner of Harlow’s on Beech, moved to Amelia Island in January this year. “It was during the pandemic while watching travel bloggers that we stumbled upon Amelia Island. I’d never heard of this impossibly perfect place, and I was more than ready for people, beaches, restaurants, boating, fishing, shrimp, and hikes. So, being an artist and my husband a businessman, I felt the best way to meet people and become part of the community was to open a business! I found this little consignment boutique for sale with room for a gallery, and I was hooked. The house came later. In fact, we purchased and took over the business while still living out of a hotel before our house closed. Crazy right? Crazy brilliant!” laughs Chris.

Harlow’s on Beech (named after one of Chris’s Wheaton Terriers) is a fun, fusion space that consists of an upscale fashion consignment boutique and a contemporary fine art gallery. “I love everything about my little consignment shop and studio gallery, but I love the people the most. We get a terrific eclectic mix of new and established locals, the young demographic seeking vintage finds, and the treasure hunter looking for that unique piece,” says Chris.

Chris and her husband have two Wheaton Terriers, Harlow and Tulip, and a charming boss cat named Stanley McLovenstein. Harlow is often in the shop and loves to greet people, so stop by and say hello! Tom Miller, owner of Amelia River Golf Club, was born at the Naval Hospital in Jacksonville and grew up on the “West Side, the best side,” in Normandy Village. He now lives in Atlanta with his wife, Michelle, and their three dogs. Their daughter, Merritt, is a junior at the University of Georgia in Athens and their son, Henry, is a freshman at Florida State University. The Millers love coming to network and relax on Amelia Island while also visiting Tom’s mother, Joann, who lives in Amelia Island Plantation.

“Our team purchased the Amelia River Golf Club in late 2019. My full-time job is as a commercial real estate broker with Newmark in Atlanta. The most satisfying part of my job is solving problems for folks, connecting people, and getting deals done,” says Tom.

“My favorite things about Amelia Island are the people and relationships, most of which have been generated through Waterwheel Cigar. I love this community, and I think that’s what has driven me to try to be involved in as many things as possible on the island. lifting their long delicate legs, they wander the edges of our ponds, waterways, and shorelines. Lithe dancers cloaked in beautiful feathers, these avian creatures move delicately and gracefully. Who are they? Wading birds!

Wading bird is a name used to describe multiple species of birds in different sizes and colors that share similar unique characteristics. Wading birds are found almost everywhere in our ecosystem. They frequent both fresh and salt water and like the areas where land and water meet. We are fortunate to see them here throughout the year; in fact, some may even visit your yard (but not your bird feeders!), where they look for insects, frogs, and snakes.

Their long legs keep most of their body from getting wet, and their strong, agile toes help them to balance and navigate marshy, muddy ground. They also have long necks and long bills (beaks), which act as avian spears or are shaped for foraging. Some use their strong bills to protect themselves and to pierce their prey. Beautiful as they are, do not underestimate their ability to use that spear-like bill found on some species to skewer a fish, frog, or other food.

Audubon notes that “one of a wading bird’s most notable features is its beak. Each bird has a bill specially equipped for its lifestyle. Herons, for instance, spear fish with long, dagger-like beaks. Flamingos filter out water through a special comb-like structure in their bill. And the pink-tinged Roseate Spoonbill uses its namesake appendage to clamp down on prey that swims past.”

The eyesight of wading birds is exceptional. Some of the species can wade through the water to hunt day or night! Species of wading birds can be found on every continent on the Earth except Antarctica.

Some of the waders that you might see here on Amelia Island are Snowy Egrets, Great Egrets, Reddish Egrets, Ibises, Roseate Spoonbills, Great Blue Herons, Little Blue Herons, and more. Roseate Spoonbills are photogenic flyers and one of the most popular, distinctive wading birds we see. Spoonbills are “pretty in pink” and easily recognized even at a distance. They have a large spoon-shaped bill, for which they are named, a wingspan of about 50 inches, and they

weigh about 3.2 pounds, according to Sibley Birds.

The Snowy Egret is a small egret, only a bit larger than the Cattle Egret. Dressed in snow-white feathers, they have black legs and bright yellow feet, often referred to as golden “slippers.” According to Audubon, they “often forage actively, walking or running in shallow water, also standing still and waiting for prey to approach. They may stir bottom sediments with feet to startle prey into motion”.

Fossils of Snowy Egrets have been discovered at the Haile Quarry in Gainesville, Florida. These fossils are from the Pleistocene era, making them well over 13,000 years old; perhaps even much older than that!

With a 69-inch wingspan, one of our largest waders in our area is the Great Blue Heron. This is one species of wader that has the ability to see well enough to fish at night. Cornell Lab of Ornithology’s allaboutbirds.org notes, “Great Blue Herons have specialized feathers on their chest that continually grow and fray. The herons comb this ‘powder down’ with a fringed claw on their middle toes, using the down like a washcloth to remove fish slime and other oils from their feathers as they preen. Applying the powder to their underparts protects their feathers against the slime and oils of swamps”.

to his music and the island he loves, Johnnie

Robinson has made a difference in a great many lives. For 30 years, he taught and inspired students at Fernandina Beach High School.

Robinson created and cultivated numerous programs during his tenure, including the Mighty Marching Pirate Band, jazz ensembles, symphonic bands, madrigal singers, and gospel singers. Many of his students share that their experiences playing an instrument and participating in one of Robinson’s music programs were an important part of their high school experience.

His passion has always been working with children. He remembers fondly those who taught and encouraged him. They include Edwin Pleasant, a favorite middle school teacher, and Sonny Morgan, his high school music director.

It was Morgan who first steered him toward jazz. His first musical experience was in sixth grade, when he got a trombone, his first instrument. He later decided to change instruments because his father loved the sax and encouraged him to play that instrument. He did change, and he has been playing the saxophone ever since.

“To work with young people is great,” says Robinson. “For one thing, it keeps you feeling and looking young. Plus, it means something when you have young people listening and wanting to learn a skillful craft. In a sense, they become your kids because you learn to care for them and love them.”

He is quick to share that being named Teacher of the Year at Fernandina Beach High School was a career highlight. In addition, he was inducted into the Fernandina Beach High School Hall of Fame. He was honored when Building 7 on the high school campus was named in his honor, christened the Robinson Music Hall.

Currently, Robinson is an instructor at Amelia Music Studio. The studio offers music lessons, music therapy, performing opportunities, camps, and more. Through Amelia Music Studio, he is able to continue using his skills and experience to teach the instruments he loves.

Robinson was born and raised in Fernandina Beach. He graduated from Florida A&M University (FAMU), and he was an original member of the famous FAMU Marching Band, known as the “Marching 100.” Since its inception in 1946, the FAMU Marching Band has been credited with 30 innovative techniques that have become standard operating procedure for many high school and college marching bands. Some career highlights include performing on the same stage with Earth Wind and Fire, Billy Paul, and the Chi-Lites.

It is hard to imagine the man without a saxophone in his hands. He remains on the staff of the Fernandina Beach High School marching, jazz, and concert bands. He is happiest when making music. Robinson is known for his magical saxophone music, and he even plays the jazz flute on occasion.

He is active in the Nassau County Community Jazz Band, in which he plays alto sax. The band is a multi-generational ensemble, recognized for its repertoire of classics, pops, marches, audience sing-a-longs, movie medleys, and the unexpected.

He has fond memories of forming the band Instant Groove with Lawrence “Baby Lawrence” Holmes in 2001. The popular group played in many venues around the island, including The Ritz-Carlton, Amelia Island, and they are still active. Robinson and his wife, Rosalyn, have a son, Paul, and daughter, Karyn, and six grandchildren.

As the holidays approach, November is the perfect time to work in the garden and add new color to your landscape with plants like Callicarpa Beautyberry and Trumpet Plant.

is a beautiful time of year on Amelia Island, offering plenty of opportunities to work in the garden. Now is the time to plant cold-weather annuals like Pansies, Dianthus, and Snapdragons, which will offer continuous color while your perennials take a winter nap.

For the DIY new gardeners, we learn a lot by trial and error. Planning and planting your garden is like setting out your clothes for an occasion or furnishing a room. It’s about design, texture, style, and color. When deciding on a garden design, start with your style of home, which will help determine whether your garden is large, small, or confined to a specific area such as a patio, pool deck, or balcony. No matter where it is, be creative, have fun, and enjoy!

Consider textures, for example. Fine-textured plants are plants with small, delicate foliage, like wispy Ferns, wirey-stemmed Whirling Butterfly (Guara), or ornamental grasses like Purple Muhly Grass. Needle-leaf plants such as Junipers, Rosemary, and Japanese Yew have fine textures.

transition from fine to coarse. They don’t have wispy leaves or heavy ones, but are somewhere in the middle. Mediumtextured plants include Gardenia, Camellia, Pittosporum, and Viburnum.

Coarse-textured plants are visual heavyweights, such as Canna Lilies, Bananas Gingers, large leaved Caladiums, and various Elephant Ears. Many of these give a tropical look to a garden, as thick branches, leaves with spines or thorns, and foliage with irregular edges add to a plant’s visual weight or coarseness. Bold colors increase the contrast and make plants seem coarser, where fine textures usually take a back seat.

For winter gardens of color, there are many varieties of colorful leaf plants, trees with flowers, bushes and flowers that can turn a dull winter garden into a spectacular

feast of color. The Callicarpa Beautyberry, with its clusters of bright purple seeds on arching branches, is a sight to behold. It not only adds color during most of the winter, it also feeds the birds. Begonias add a splash of color with their foliage and beautiful flowers in an array of colors.

I love the Trumpet Plant (Brugmansia). Its peach blossoms are most fragrant at night. The spectacular flowers can reach a foot in length. They also come in yellow, pink, and many other colors, but I love the peach “Grand Mariner.” You’ll love it, too. It’s easy to propagate, just take a branch and stick it in the ground!

Bougainvillea can be a great backdrop for winter annuals like petunias and geraniums. And don’t forget the colorful foliage of Crotons and Bromeliads, which can vary from one inch to three feet in height.) The different colors and texture combinations are almost innumerable. I know you will find some that will catch your eye!

2022 Holiday Home Tour

Kick off your holiday season this year with the 16th annual Amelia Island Museum of History Holiday Home Tour. Don’t miss out on Fernandina Beach’s most iconic holiday event! Carefully curated historic homes as well as a newer downtown condominium are decorated by local florists and interior designers. Docents in each home give its history, highlight the architectural elements, and guide visitors through the lavishly decorated homes. Tickets to tour all five houses are $35 until November 28th at 4 p.m., $40 on November 28th, and after. To order tickets, go to www.ameliamuseum.org.

New this year is the Preview Tour & Catered Event on Thursday, December 1. The Guided Tour includes each featured

home and begins at 4:45 p.m., concluding with a catered event at the gorgeous Amelia Island Williams House, complete with cocktails. Tickets for this tour and event are $70 per person. And once again, the Amelia Island Museum of History will offer a variety of raffle items donated by generous community donors. Raffle items include a selection of original art by island artists. All raffle items will be on display at the museum beginning November 1. A list of raffle items will be available on the museum website at www.ameiamuseum.org. Raffle tickets can purchased at the museum or at the McEntyre/Bailey house, 127 South 7th Street, on the days of the tour. Ticket prices are 1 for $5, 2 for $7, 7 for $20.

Sister House

The home is one of the so-called Four Sisters on North 7th Street. The matching houses sit side-by-side with their special detailing including galleried porches and fretwork. They were built in the early 1900s after the demise of one of Amelia Island’s grand hotels, the Egmont. The hotel declined in popularity after tourism moved further south and the devastating hurricane of 1899. The houses were built from salvage from the hotel, which included bathtubs, fretwork, heart of pine floors, and even staircases.

Benjie McEntyre and Al Bailey love their block in the Historic District so much they have lived in two homes on it. McEntryre moved to the island ten years ago to help build the successful interior design firm Julia Hall Interiors, where he is a co-owner. Al works with Spatola Contracting Group.

The two were remodeling their first home when they heard that one of the famed “sisters” was available. They instantly fell in love with the 7th Street house with its large windows and sunny interior. The house had been lovingly preserved by its previous owner. Recent renovations focused on original historic details. The current owners have made changes, including painting, wallpapering, and window treatments. McEntyre used his decorating talents to add distinctive lighting features throughout the house. The only original fixture is the foyer chandelier.

Art throughout the house reflects the couple’s interests, including things collected from trips to Cuba, South America, and Jamaica. They are especially happy with an original commissioned work depicting their wedding at a friend’s home in Jamaica. The house enjoys a convenient location close to Centre Street with its shops and restaurants.

Duryee House

The Duryee house on Broome Street is full of history. It was built by Major Bedloe Crosby Duryee and was the first house built in Fernandina after the Civil War. Duryee was stationed in Fernandina during the war and later was appointed Adjutant General of the Federal Army, bringing him back to Fernandina. It has many details typical of the vernacular architecture of that period. In 1969, the house was nearly torn down, but it was purchased just in time and renovated by the Askins family.

Chuck and Beth Smith moved to Amelia Island 11 years ago, first living on the marsh mid-island, and then opting for the Historic District. Their many renovations to the home include returning the ceiling height in one room from 8 feet to 13 feet and creating a library. They filled bookshelves with books purchased at Fernandina Beach library’s annual book sale and with family bibles, including one in German.

The kitchen renovation included enclosing a small exterior porch that is now a mudroom. It has been customized for the couple’s three Westies, incorporating separate crates, a deep dog-washing sink, and laundry. The dining room and living room feature original plasterwork, a new fireplace, and pieces of local art. Family antiques fit perfectly in the renovated house.

Major second-floor renovation took one of the bedrooms and expanded it into a master bath and closet. A greenhouse is a dream for the owner, who looks forward to landscaping when all the renovations are complete.

The Smiths credit many of the decorative touches to McKenzie Barco of Kristin Biagini Design Studio. The house even features a household ghost, rumored to sit in a bay window watching out for neighborhood pets.

Content Hardee Partin House

The Hardee and Partin are notable names in the history of Fernandina. Many remember the popular shoe store on Centre Street operated by the Partin family. Many homes in the Historic District have ties to the Hardee and Partin families. This house was built in 1883 during the so-called Golden Era of Fernandina Beach. The house has remained in the family and is currently owned by Neil and Martha (Partin) Blalock. The current restoration was started in 2019. Respect for the history of the house has always been a priority. A return to the original colors of the 1924 Partin house is evident in the renovation.

Throughout the house, there are items collected from the current owner’s great, great grandmother’s ancestral home, the historic Merrow House, which now houses the current Port of Fernandina offices. The rooms are filled with artifacts from this amazing multi-generational home. There is even a light fixture from a French chateau in the dining room.

The house has the happy memories of five generations of Partin children, grandchildren, great-grandchildren, great-greatgreat grandchildren, aunts, uncles, cousins, nieces, and nephews. Pride in family tradition is evident throughout the house.

The cottage is built in the folk vernacular Victorian style popular in the late 1880s and early 1900s. The exterior is the original clapboard siding with distinctive fishtail shingle detailing. Owner Judy Gulledge has long loved anything Victorian and she has every copy of Victoria Magazine, thus the name of the cottage – Victoria Bliss. The cottage was featured on the Amelia Island Museum of History’s inaugural Courtyards and Cottages tour in 2018.

Originally from the Bronx, the Gulledges moved to Amelia Island in 2013. When they bought the cottage, they knew they faced a major renovation. They started with a redesign of the porch, taking it back closer to its original design. The contractor, Vernon Long, has been renovating historic homes in Fernandina for 35 years and skilled carpenter Brian McFadden brought the project to life. The original floors

were leveled, bead board ceilings cleaned and repaired, walls painted, and new trim and moldings added. The kitchen was redesigned to fit the period of the house. A pre-existing garage was redesigned adding two dormers to create a pantry/laundry room, family room, office, master bedroom and bath, a walk-in closet, storage spaces, and a garage workshop.

Judy’s vintage retro collections of tablecloths, hankies, china, and décor create a whimsical Christmas wonderland. Each area featured on the tour has it own unique style, from vintage Victorian to 1950s kitsch. The couple’s most treasured piece of furniture is an antique Morin Clock designed by Sven Nilsson circa 1780 that came from the Nordiska Museet in Stockholm. A unique feature not to be missed is the fireplace surround in the family room, which is fashioned from different architectural elements.

The Lofts on Fifth Robbie and Sally Young Decorated by Bridget Lampson, Mine Hill Trading Co.

Robbie and Sally Young first came to Fernandina Beach when Robbie was tasked to open the area’s first Publix in 1987. They raised their two children on the island before moving on. They always loved the island, and upon retirement, they turned to Fernandina. There were so many things about The Lofts on Fifth that called out to the Youngs that they were the first to buy a unit. The luxury condominiums were created by renovating the original First Baptist Church Sunday School building, originally built in 1963. When the building was used at a Sunday School, Robbie Young was the Sunday School Director. The couple finds it amazing that they have returned to a repurposed building they remember from years ago for their retirement getaway.

The exterior of the building has stayed the same, but the interior has been completely redone to create nine luxury

condominiums with rooftop terraces. There is a common shared area on the roof, as well as private terrace areas belonging to some of the condominiums. Each of the condos is unique. The Youngs have the second biggest unit, with three bedrooms and three baths and a private rooftop patio. From the roof, amazing views of the Historic District and the Amelia River can be enjoyed. Pews from the original church were repurposed into stairs that lead to the rooftop patio.

Photos and furnishings reflect the history of Young’s lives from 1987 to the 1990s. It reflects the love their family has for Amelia Island. Their daughter was married in the Fairbanks House 25 years ago. The condo has been decorated to allow for easy casual living to be enjoyed by the Youngs and their children.

Located at Main Beach with decks offering panoramic ocean views, Salt Life Food Shack offers fresh seafood, street tacos, delicious cocktails, and a relaxing island vibe.

Have you seen the car decals and wondered, What is Salt Life? Am I living a Salt Life?

It started with decals promoting interest in or life on the salty seas. A sub-culture of divers, captains, surfers, and ocean lovers formed around the logo, and soon the brand was on clothing in stores nationwide. Foods and beverages were the next big splash. The Jacksonville Beach-based Food Shack opened in 2009, and a second in St. Augustine in 2014.

In November 2018, Salt Life Food Shack opened at Main Beach in Fernandina Beach. Long-time visitors to this island, as is this writer, will remember this spot fondly: the pinball machines and laundromat were here, next door to the go-carts place, which would later become a waterslide. How much fun generations have had in this location!

Fun is back on this spot with Salt Life Food Shack. This two-story, mostly open-air, beachy structure seats 300 people in all manner of booths, tables, and bar seating. At our top deck, high-top table, we had a 180-degree view of Main Beach, N. and S. Fletcher Avenues, and the ocean. Stunning island views stretched in all directions. Downstairs is a 1,600-gallon saltwater fish tank. This must be the Salt Life.

Salt Lifers like drinks that remind them of their adventures: In addition to beer and wine, Salt Life Food Shack offers 18 drinks with rums from Key West to Panama and Trinidad. Island Concoctions include Margaritas, Mai Tais, Mojitos, and a Mule. I chose the Vitamin Sea, a work-of-art that starts as a Strawberry Daiquiri with mango and coconut and swirls in a smooth base of Disarrono Amaretto.

Chowder-makers ourselves, we were glad when our server Ashton, a Callahan City Councilperson earning some extra money, guided us toward the red, spicy Bahamian Fish Chowder, with chunks of whitefish, and the thick, creamy New England Clam Chowder, with a big clam flavor. New to me were the Avocado Fries, lightly breaded sections of avocado fried and served with Shack Sauce, which were a smooth, healthful treat.

My Crab Baked Grouper was ideal, a firm grouper filet topped with lots of creamy flavorful lump crab and spinach.

“Sometimes people substitute rice or fries for the side of grilled vegetables, but I tell them our vegetables are really good,” said Ashton. “Our fries are, too, so whatever makes them happy is what they’ll get.” The grilled vegetables were indeed elevated.

Good health must be important to living the Salt Life, for the menu indicates items with nuts or bacon, a gluten-free menu is available, and manager Marcos Jovel encourages the staff to be flexible in meeting every special request. And each

of the salads, oysters, street tacos, sushi, bowls, burgers, and sandwiches is served with those flavorful grilled vegetables. Next time, I’ll get Caliche’s Poke Bowl, straight out of Caliche’s Wishbone in Playa Jacó, Costa Rica.

With plenty of parking, generous opening hours starting every day at 11 a.m., an elevator to the top, a variety of seating options, and an enticing children’s menu, it’s just so easy to make Salt Life Food Shack a part of life on Amelia Island.

But this year, we’re cooking Cornish game hens and keeping our Thanksgiving menu simple.

Our menu consists of roasted Corning game hens with orange sage butter, wild rice pilaf, raw cranberry relish, and green bean salad. And our sweet finish will be mini pumpkin

cheesecakes, a special recipe given to me by my son, Jacob.

Cornish game hens are known for their tender meat, which is easily able to absorb marinades and spices. Weighing one to two pounds each, they cook quickly in the oven, usually in 30-35 minutes. Additional orange sage butter s a nice sauce for drizzling over the hens right before serving.

Feel free to serve this dinner any time during the holiday season! It’s inexpensive and easy to make, with minimal clean-up.

ROASTED CORNING GAME HENS WITH ORANGE SAGE BUTTER

Ingredients

4 Tbs. butter, softened

2 Tbs. fresh sage

1 Tbs. orange zest Juice from 1 orange

2 Cornish game hens Salt and pepper

Preparation

Mix butter, sage, and orange zest together. Form into a log, wrap in plastic, and store in the fridge until ready to cook the hens. Clean and prep the hens, removing any giblets. Loosen the skin covering the breast meat on each hen by slipping your fingers under the skin and sliding them between the skin and the meat. Using 1 Tbs. butter mixture for each hen, insert it under the skin and smooth it evenly by rubbing the outside of the skin, and season the hens with salt and pepper. Tie each hen’s legs together with kitchen string.

In a small roasting pan, heat the remaining butter until melted and set each hen in the pan. If you have extra oranges, you can slice them up and lay them in the pan with the hens. Roast in a 450-degree oven for 30-35 minutes or until a meat thermometer registers 165 degrees. Remove string, and serve each hen on a plate of rice or wild rice pilaf, then drizzle with the pan juices.

JACOB’S MINI PUMPKIN CHEESECAKES

Ingredients

8 oz. softened cream cheese

1 cup pumpkin puree

1/3 cup white sugar

1 tsp. vanilla extract

2 large eggs

1 tsp. each cinnamon and ginger

1/8 tsp. nutmeg

1 cup graham cracker crumbs

4 Tbs. melted butter

2 Tbs. brown sugar 1/4 tsp. salt

Preparation

Mix first 7 ingredients in a stand mixer until well combined. In a small bowl, mix graham cracker crumbs, butter, brown sugar, and salt. Spoon a heaping tablespoon-and-a-half into standard-size muffin tins lined with paper foil muffin liners. Use a 1/4 cup measuring cup or your fingers to press mixture evenly into bottoms of liners. Bake crusts at 350 degrees just until lightly golden, about 5 minutes. Let cool on wire racks.

Pour cheesecake batter over muffin liners, filling about three-quarters full. Bake at 350 degrees until cheesecake is set, about 12 minutes. Let cool, and store in the fridge until serving time. Extra mini cheesecakes can me frozen for future holiday dinners! Makes 12.
