Everyone understands that at a certain time in our lives – earlier for some, later for others—we inevitably begin adding updates on the state of our health to our conversations. The good habits we develop provide a vital foundation for our full enjoyment of all stages of our lives. Things taken for granted in our youth, like a good night’s sleep, plenty of energy, and physical strength, require more of our attention as the years go by. In addition, our experience with Covid over the last few years has provided a lesson in the importance of maintaining good health.

That’s why each year we offer the October Amelia Islander Magazine as a “Health & Wellness” special issue to highlight important issues in building good health. On Amelia Island and in Nassau County, we are blessed with outstanding medical professionals and essential healthcare services close to home, including Baptist Medical Center Nassau and healthcare providers in Jacksonville. The steady growth in the number of local medical facilities and healthcare professionals means that an increasing number of therapies, treatments, and surgeries can be obtained here, making it easier on us and our families. In this issue, we have asked some of Amelia Island’s local professionals to share their expertise with us, providing simple and effective strategies to help us maintain lifelong good health. Many thanks to the doctors and specialists who took the time to write the articles presented here.

Mammogram Myth Busters

Annual

mammograms lower a woman’s chance of death from breast cancer by 30 to 40 percent, according to the American College of Radiology. Beginning at the age of 40, women should get a mammogram every year, says Dr. Trishna Patel, MD, a radiologist at Baptist Health, earlier if they have a family history of breast cancer. Here are seven myths that could be standing between you and this all-important annual screening.

I don’t need a 3D mammogram. 3D mammograms are more accurate than traditional 2D mammograms, allowing physicians to examine breast tissue layer by layer. “Studies show that 3D mammography exams reduce the need for additional imaging by up to 30 percent,” says Dr. Patel. “Increased accuracy helps expedite care.” In addition, 3D mammograms are better at finding breast cancers than 2D mammograms.

I need a referral from my primary care physician. You do not need a referral from your primary care physician to get a mammogram. You can set up an appointment on your own.

I don’t have a family history of breast cancer, so I don’t need a mammogram every year. Thirty percent of breast cancers are

found in women with a family history of breast cancer, meaning that 70 percent of breast cancers are found in women with no family history. Even if you don’t have a family history of breast cancer, your risk is still high.

Radiation from mammograms can cause cancer. The radiation you get from a mammogram is a very low dose, about the same amount as you would get from the sun over a threemonth period.

Mammograms hurt. Mammograms can cause some discomfort, but there are ways to minimize it, says Dr. Patel. Schedule a mammogram for the middle of your menstrual cycle, when your breasts are not as sensitive. Stay calm and trust that the mammography technologist is there to help you get the best pictures with minimal discomfort.

This allows our patients to experience for themselves what their smile makeover could look and feel like directly on their own teeth before the final veneers are done.

After patient and dentist approval of the smile design, a single 2 to 3 hour appointment for placement of 4 to 10 composite veneers can be performed with minimal, if any, adjustment of the patient’s natural tooth structure. Due to additional advances in dental biomaterials, these veneers can be shaped and polished to give an incredibly natural appearance.

Cosmetic porcelain veneers are an ideal option for cosmetic improvement, and they also benefit from a digital workflow in smile makeover design. Porcelain allows for the best combination of esthetics and strength for long-term use. Evaluation of the existing teeth, bite, and desired smile makeover

does a complete evaluation, which may include a biopsy, there’s no way to know that a lump is harmless. Not all breast cancers hurt. “A patient should never assume it’s benign,” says Dr. Patel.

I can tell whether I have dense breasts by how they feel. Dense breast tissue can hide cancer from X-rays. High breast density also slightly raises your risk for breast cancer. Breasts are dense if they have more fibro-glandular and connective tissue, which doesn’t correlate to how they feel. A radiology/ Xray finding is needed, which is even more reason to make sure you have your yearly mammogram.

Keeping It Simple

In the current climate, it is hard to find the answers about how to be healthy. With all the information that is available online, you can always find competing ideas and opinions on every subject and issue imaginable. If you go to “Dr. Google” to look for a simple and concise answer to a health problem, you are more likely to be overwhelmed by the information you find and leave the site more confused and frustrated.

In addition, there is also the question of authority, and whether any institution has gained and earned our trust. So not only is it difficult to sort through the information available, but it is also harder and harder to trust those who are distributing the information. Moreover, the Covid pandemic has created a greater sense of urgency about our health.

Have you noticed that people are paying closer attention to their physical well-being? I have. This actually might be the silver lining of the pandemic. The reprioritization of our health is an important development. So where does this leave us? I believe there is hope.

Sometimes the simplest answers are the correct ones. In our dizzying information age, it is more important than ever to remember the basic foundation of good health. Eat good foods. Drink water. Exercise daily. Sleep well.

Take care of your body by being proactive. Too often, we get consumed and distracted by disease and what might go wrong. It is more worthwhile to focus on what makes us healthy. Focus on improving your heart rate variability, a measure of your body’s adaptability. Measure your body composition. Track and measure your resting heart rate. Buy yourself a fitness tracker.

It is not very sexy or earth-shattering to say you need to eat a well-rounded diet or to exercise routinely, but it is nevertheless

Dry eye is a condition in which a person doesn’t have enough quality tears to lubricate and nourish the eye. Tears are necessary for maintaining the health of the front surface of the eye and for providing clear vision. Dry eye is a common and often chronic problem, particularly in older adults. People with dry eyes may experience irritated, gritty, scratchy, or burning eyes; a feeling of something in their eyes; excess watering; and blurred vision. Advanced dry eyes may damage the front surface of the eye and impair vision.

smooth and clear. Dry eyes can occur when tear production and drainage is not in balance.

Tears are made up of three layers: oil, water and mucus. Each component protects and nourishes the front surface of the eye. A smooth oil layer helps prevent evaporation of the water layer, while the mucin layer spreads the tears evenly over the surface of the eye. If the tears evaporate too quickly or do not spread evenly over the cornea due to deficiencies with any of the three tear layers, dry eye symptoms can develop.

People with dry eyes either do not produce enough tears or their tears are of a poor quality: Tear production tends to diminish with age, with various medical conditions, or as a side effect of certain medicines. Environmental conditions can also decrease tear volume due to increased tear evaporation. When the normal amount of tear production decreases or tears evaporate too quickly from the eyes, symptoms of dry eye can develop.

The most common form of dry eyes occurs when the water layer of tears is inadequate. This condition, called keratoconjunctivitis sicca (KCS), is also referred to as dry eye syndrome. Some causes of dry eye disease can be genetics, various medical conditions, age, gender, medications, or environmental conditions, including staring at a computer screen.

Dry eyes can be diagnosed through a comprehensive eye examination. Treatment for dry eyes with an eye care professional can restore or maintain the normal amount of tears in the eye to minimize dryness and related discomfort and to maintain eye health.

Managing Your Health As You Get Older

offers many challenges. All of us want to live the highest quality life for as long as we possibly can. To achieve this goal, it is important to recognize the things in our life that we can control, such as maintaining a healthy weight, limiting alcohol intake, getting regular exercise, maintaining social connections, managing stress, and staying mentally active. All of these things are controllable with a little help. Just as important is recognizing those things that you can’t control and getting the help you need.

These are just two examples, but there are many other situations where people face more than they can handle. It is important to take care of the things you can manage, recognize the things you can’t, and turn to proven, professional resources when you need help.

The Friends of the Fernandina Beach Library Fall 2022 Book Sale returns this month, running from October 19 to October 22 at the Peck Center, located at 510 S. 10th Street in Fernandina Beach. Thousands of books in dozens of categories, CD’s, DVD’s, and audio and children’s books will all be available for sale for under $3 each. Proceeds from the book sale help support the purchase of materials for the Nassau County Library System.

Friends of the Library also invites you to their latest art exhibit, “Air and Water. The Art of Mingming.” Presented through the end of October at the Fernandina Beach Branch Library, this exhibit showcases the watercolor and oil painting of local artist Mingming Bowerson. The work is notable for its exquisite photographiclike detail and features pieces with boats, harbors, landscapes, and floral still life. Mingming’s art is available for purchase, with all proceeds from the sales benefitting Friends of the Library programming.

The Northeast Florida Blues Society is proud to partner with the Amelia Community Theatre to present Biscuit Miller in concert on Thursday, October 27 at 7:00 p.m. David “Biscuit” Miller is an American electric blues bassist, singer, and songwriter who performs at blues festivals across the nation. He also played at the second inauguration of President Bill Clinton. He earned his name, “Biscuit,” as a child when he snuck into the kitchen and devoured an entire pan of his grandmother’s biscuits before dinner was served!

Biscuit took an interest in music at age 11 when he stumbled upon a four-string electric bass guitar. From that day to today, Biscuit has had an instrument in his hand. To date, he has released three albums, and his best-known songs include, “Lay It on Down,” “Bottle of Whiskey, Bottle of Wine,” “Going Home,” “One More Mile,” “Monday Morning Blues,” and “Wishbone.”

Cape House was founded by two Fernandina Beach couples, Tiffany and Wes Hinton and Lauren and Lance Jones. Tiffany had long dreamed of owning a retail location to bring the style and selections that her interior design clients love to the Amelia Island market. The Joneses, who returned to the Amelia Island area in 2011, also believed they’d be the owners of a store one day, with a focus they imagined would be on hospitality. As they became closer as friends, the two couples realized they shared this retail vision and began working to make it a reality together.

It was in Cape Town, South Africa, during conversations over glasses of Pinotage, that the four defined the motivation behind opening a home and hospitality store – a passion for meaningful and spiritual relationships and where they begin: in the home. By combining Lance’s love for the gourmet and Tiffany’s love for interiors, their dream took shape!

Pickett is the founder and owner of Pickett Construction, Inc., a local homebuilding company specializing in estate homes in the $1 million to $8 million range. Growing up in Fernandina Beach, Pickett received an introduction to the building industry by working in his father’s construction company. Pickett’s experience inspired a passion that led him to the University of North Florida, where he received a bachelor’s degree in Building Construction Management. Upon graduation, he joined a large commercial contracting firm that specialized in the construction of sports stadiums, and education and healthcare facilities.

After a successful commercial contracting career, Pickett formed Pickett Construction in 2003. In the beginning, the company’s focus was on building amenity centers for large-scale housing developments, complete with waterparks, elevated finishes, and one-of-a-kind custom features. This was the perfect precursor for Pickett’s entry into the custom one-of-akind homebuilding market.

Pickett is currently the leading homebuilder in the Amelia Island area, building 20-plus luxury estate homes each year. Pickett and his wife, Angie, have two children—Carter, 16, and Brooke, 14—who are heavily involved in sports, including volleyball and soccer. PECK PRIDE

With the chance to share the history of Peck High School with an exhibit at the Peck Center, a group of alumni called ALL ABOUT PECK was formed to coordinate the effort.

In February last year, I wrote a story about Peck High School’s amazing history. After meeting with eight former students in the Willie Mae Hardy Ashley auditorium of what is now the Peck Center, I asked them one last question: “Why isn’t there any of the history you all just shared with me displayed here?”

Neil Frink, one of the former Peck students, asked me to come out into the lobby and pointed to a painting of Martin Luther King, Jr. “Reverend Dr. Martin Luther King, Jr. is an important part of Black history, but why is his portrait bigger than the portrait of the man this building is named after?” Frink pointed to the much smaller portrait of Professor William Henderson Peck then back to the large painting hanging in clear view.

“Before anyone heard of Martin Luther King Jr., we had strong, independent, outspoken, role models and mentors inside these walls,” Frink said. Frink graduated from Peck High School in 1959. I did the math; that was four years before the March on Washington, where Dr. King delivered his “I Have a Dream” speech on the steps of the Lincoln Memorial.

Shortly after my article on the history of Peck High School was published, Neil Frink and I met with Dale Martin, City Manager for Fernandina Beach, to see how the former students could have the history of Peck High displayed in the building. He agreed wholeheartedly that Peck High School’s history needed to be recognized and suggested that former Peck students organize a committee to start gathering information that they thought should be displayed. Within days, the ALL ABOUT PECK group was formed and growing, including members of the Peck Alumni Association and former students who now live out of state.

Two months later, they received some exciting news. Thanks to the hard work and dedication of Lorelei Jacobs, Grants Administrator for the city, a grant for $50,000 was received to fund the Amelia Island Museum of History’s creation and installation of a Peck High School historical exhibition to be permanently located at the Peck Center, as well as a separate grant to take care of much-needed repairs.

“The Historic Peck Center, A Rosenwald School Heritage Education Project” and “The Saving Peck High School” exterior repairs project were sponsored in part by the Department of State, Division of Historical Resources, and the State of Florida in collaboration with the City of Fernandina Beach, the Peck Alumni Association, and the Amelia Island Museum of History.

Members of the ALL ABOUT PECK group worked nonstop, using social media, participating in events like the annual Juneteenth Celebration, and making calls to spread the word and collect contact information of family members of former students who would like to get involved.

The group also met at the Amelia Island Museum of History and worked with the staff to add important documents, photos, and information to the Peck High School archives, which were thought to be lost during the renovation. They also updated information on file by identifying and giving names to people and places in photos that were listed as unknown.

On August 13, sixteen months after their first meeting, everyone celebrated with a reception at the Willie Mae Hardy Ashley Auditorium for the unveiling of the New Peck Exhibit. The exhibit is located in the Elmo Myers/Nassau County Development Corporation Reception Room. The two interactive displays, as well as four free-standing displays, are portable so they can be moved when meetings are scheduled in the room. You can visit the exhibit at the Peck Center Monday through Friday from 8 a.m. to 5 p.m.

And there’s more exciting news from the city. Salvatore J. Cumella, Preservation Planner for the City of Fernandina Beach, has reinitiated a nomination to list the Peck Center (Peck High School) in the National Register of Historic Places. In the meantime, members of the ALL ABOUT PECK group have plans for a quarterly Storytelling Series and other events in 2023 to be held at the Peck Center to share their stories and make connections with people in the community who want to learn more about Peck High School’s amazing history.

Empty Bowls Returns

With the goal of reducing food insecurity in Fernandina Beach and Nassau County, Empty Bowls from Barnabas returns as an in-person luncheon at The Ritz-Carlton, Amelia Island.

November is just a few days away, and many of us are already planning for our Thanksgiving and Christmas festivities: turkey, stuffing, and pumpkin pie are on the menu, football fans are following their favorites, Hallmark movie loyalists are scheduling the recordings, and homemakers are dusting off the décor.

Meanwhile, as we abound in our blessings and prepare for the joy of the season ahead, we have neighbors right here in Fernandina Beach who are coping with food insecurity. In fact, more than 7,000 Nassau County residents are rarely confident that they will get enough to eat in the week ahead, and over 2,000 of these residents are children. If these statistics break your heart like they do mine, you’ll be pleased to learn about Barnabas and the hope it brings to our community.

Barnabas Center is Nassau County’s only comprehensive service center devoted to helping those in need to begin to thrive as healthy citizens. Barnabas believes every individual has an opportunity to lead a healthy and productive life, thereby strengthening our entire community.

To deliver on its mission, Barnabas operates a large food pantry, which distributes over 380,000 pounds of food annually, an amount equal to 318,515 meals! It also has a healthcare branch, which offers medical and dental services to those in need. But Barnabas can’t deliver these crucial services alone. It counts on the support of both its sponsors and the broader community, and one of their most important fundraisers of the year returns next month with their ninth annual Empty Bowls event.

An Empty Bowl is a symbol of hunger, and this event aims to raise awareness and funds to combat hunger in our community. The event is simple: one hour, a meal of soup, bread, and dessert, a message of hope, and the hallmark - a hand-painted bowl. “Potters and volunteers throughout the area glaze and paint ceramic bowls each year. Guests may select their favorite bowl as a keepsake and permanent reminder of the many bowls we still need to fill to provide nourishment to our neighbors who are struggling,” says Empty Bowls 2022 Chairperson Pamela Fox.

As the gardening season begins with the month of October, now is the time to refresh your landscape with colorful additions, including butterfly bushes like Flutterby Petite.

October is the beginning of the gardening season, and it’s time to re-arrange old plants, transplant seedlings, and find plants for spaces waiting for something new.

Star Roses “Bloomables” has introduced a new and exciting butterfly bush. For those that don’t have room in the landscape for a large one, this is your answer: Flutterby Petite. Blue Heaven is its given name, and for a good reason. Blue flowers are one of the most difficult colors to find in nature. This eye-catching cutie has a true blue flower.

Butterflies and hummingbirds will be attracted to this lovely mounding, spreading, compact bush, which grows to 2 feet by almost 3 feet. Blue Heaven sports fuzzy silver-green foliage that accents the vibrant blue flowers. The blooms appear from early spring to first frost. This plant will thrive in containers and small gardens. It is ideal for mass plantings, and it loves full sun and regular watering.

It’s time to get ready for the season! Pick out your favorite colors of mums (hopefully in tight bud), pumpkins, and corn stalks for a great start to the fall season.

uniquely with petals up and down each stem, resulting in white lace cap flowers from spring to fall. These stunning petals offer intricate shapes in crisp white hues as classic as a delicate lace.

This Cloud Nine Hydrangea (PP) is known as “Princess Bride” as she shows off her beautiful white lace caps. It grows to 3 to 4 feet in height and width, and it is hardy to 5 to 10 degrees F. Princess Bride attracts birds and butterflies. It is an easy-care bush, blooming from spring to summer. Use it as an accent plant, as a low hedge, in mass plantings, and in containers. Feed this new beauty throughout the growing season.

I always liked to use a few Society Garlic plants to fill in empty spaces. If you don’t like them, take a gander at something new: Tulbaghia “Flamingo.”

Flamingo has bright lime and apple green upright foliage with a neon pink base, which keeps giving throughout the season bringing great color to the landscape. Some shade is preferred for this low-maintenance beauty.

Plant along the house, in containers on the porch or patio, or plant in masses in the garden for an outstanding statement. Dainty pink-violet colored blooms rise above the grass-like foliage in early spring, and then intermittently during the year. Easy, heat-tolerant, and evergreen, its mounding clumps quickly reach up to 3 feet tall and 2 feet wide, giving it year-round interest.

Another new plant appearing in the spring is a beautiful Colocasia called Royal Wedding “Waikiki.” This beauty sports glossy green foliage with flamboyant white-and-flamingo pink veining. It has a clumping habit, growing 3 feet tall and wide. It’s great in containers or in the garden. Waikiki likes partial sun. Remove the dead leaves during the growing season. Some gardeners collect these Colocasias and create a bed with a variety of their

If you could live anywhere in the world, where would you pick? If you ask Suzanne and John Batchelor, they will tell you Amelia Island is the only place to be. “I was born in New Orleans and John in England, I have lived in Holland, we met in Scotland, lived for a few years in Houston, and have children in England and Australia!” Suzanne explains that the world

was theirs for the choosing, and when they visited Fernandina Beach for the very first time, they knew this would be home.

The Batchelors both enjoyed successful careers in the corporate arena, but both knew that this was only a glimpse of life. “When I was young, I would say that I wanted to work hard to retire early, have a beautiful home on an island, and

become a painter!” For any of you who believe in dreaming big and setting goals, Suzanne will tell you to keep it up. Through hard work and a series of “right business decisions,” Suzanne accomplished everything on her roster: today she lives in a beautiful home in Amelia Park, studied art for 14 of her 22 years on Amelia Island, and those of you with her work on your walls can attest that she is an accomplished artist.

“When we decided to move here in the late 1990’s, Amelia Park was a concept,” says Suzanne. “We laugh that we were ‘settlers.’ Almost every available lot was roaming with bobcats, and the early handful of pioneers met on a local porch for happy hour when the dinner bell rang. It took a lot of imagination to see the vision of this community, but we saw it and fell in love.”

The duo designed and built one of the first homes in the community. “We adored that house; it had room for both of our ‘telecommuting’ careers, John’s grandkids treasured their visits, and of course, we did loads of entertaining.” After living in the home for 20 years, the couple realized their lives were evolving and their needs were changing, so they started looking for a new piece of property.

“We found it right at the entrance to Amelia Park,” says Suzanne. “The second it was ours, we picked up our

pencils and hand-designed the floorplan with our own ‘artistic details,’ including: an inviting grand double-door entry into the foyer featuring some of our favorite art, a spacious well-lighted art studio, wide plank, white oak flooring, vaulted ceilings creating walls to accommodate art, multiple secret gardens for the ‘British Gardner’ to employ his art in the outdoors, and a spacious porch to entertain and enjoy sunsets.” The couple agreed this is truly their dream home, made possible through the talents of Johnson Home Builders and Anne

Suzanne was quick to add that the attention to detail in the design was not just for today, but the future. “It’s an ‘aging-in-place’ design, meaning there are features that ready the home for us as we age, like a one-floor design, a curbless shower, wider doorways, higher electrical outlets, pull-out shelving in cabinets, and an oversized walk-in pantry.”

While the Batchelors are ready, they are far from aging! Suzanne’s latest career is headed to new heights with

her 72 in. x 96 in. oil on linen, “Garlic and Tonic,” selected for a November exhibition at the renowned Salmagundi Club in New York City. Meanwhile, she is completing her own 48 in. x 48 in. great room oil painting centerpiece: a copy of Audubon’s “Louisiana Heron.” She was accepted as an Exhibiting Artist at the Island Art Association in June, and you can also see her work at www. ameliaislandartist.com.

Inside Story & Song Bookstore is a cozy bistro serving literary-themed sandwiches, soup, and salads, as well as wine, local craft beer, coffees & teas, art, music, and more.

Bookstores long ago morphed into places where we could eat, drink, or chat while pondering book purchases. What a relief this was for those who want to linger! The hybrid model of books plus something else is thriving nationwide, and we have a prototype of this model smack in the middle of Amelia Island.

Each word in the name is meaningful: Story & Song Neighborhood Bookstore Bistro offers storyteller performances, music jams, neighborhood happy hours, author visits, and the bistro! In early 2018, Story & Song opened, but then six months ago, owner Donna Paz Kaufman asked storyteller

Changing daily, this day’s Little Paris Bookshop Slice of Quiche was complex and deeply satisfying, with apple, fennel, and Swiss. Our sandwich was not the hearty Camino Island Turkey & Cheddar Bagel, but elegant rose preserves with sheep cheese on challah bread. We really could see and taste little bits of rose petals in the preserves!

One day I’ll have breakfast of locally roasted Bookstore Blend coffee with a Year in Provence Croissant Sandwich. For light fare, there’s the Eat, Pray, Love Hummus & Flatbread or Under the Tuscan Sun Fruit & Nuts. Meatier fare includes Prince of Scribes Steak Flatbread. Story & Song does soup, too. When Covid hit, they began a soup subscription service for their strong core of regular customers. Rave reviews turned this into an annual event, with the 2022 season beginning in early October. It’s just one of the many events that are filling up their calendar, and yours, too, they hope.

Local author Mandy Haynes was just the person to lunch with me at Story & Song. Donna and Rachel told their story while Mandy and I tasted. We opened with Hibiscus Iced Tea, a gorgeous red color with tart flavor. On this day, the Seasonal Secret Garden Salad featured peaches, feta, and toasted almonds with house-made champagne vinaigrette. Our Life of Pi Grilled

Story & Song Center for Arts & Culture charitable foundation launches officially in November, adding another layer of meaning. When autumn rolls around, I’m always looking for new dinner party recipes, something that sings of the season. This year, I turned to my friend, Jacob Danner, a Renaissance man with a background in the restaurant business, for advice on a special October menu.

Jacob divides his time between Amelia Island and Jacksonville, and when he’s not walking the beach, swimming laps in the pool, or selling fine art, he’s cooking up some great dinners for friends.

Jacob suggested a recipe for a German-style pork roast that makes my

mouth water just thinking about it. “This is the famous Bavarian pork roast called Schweinebraten,” says Jacob. “It’s juicy and very tender. Traditionally served with potato dumplings (Kartoffelklöße) and sauerkraut or sweet-and-sour red cabbage, it’s the perfect autumn dinner!”

Jacob likes to make gingersnap gravy with the pan drippings, and he serves the roast on a platter with colorful edible flowers and fresh berries. And what to drink with such a fabulous dinner? Jacob suggests a big, bold Cabernet Sauvignon or a smoky Pinot Noir.

SCHWEINEBRATEN

GERMAN-STYLE ROAST PORK

Ingredients

4-6 lbs. pork shoulder

2 Tbsp. caraway seeds

1 Tbsp. salt

2 tsp. ground pepper

2 Tbsp. cooking oil

3 medium onions, roughly chopped

2 carrots, peeled and chopped

1/2 cup water, stock, white wine, or beer

2-3 Tbsp. flour

2-3 Tbsp. butter

Directions

Preheat oven to 350°F. Rub the entire roast all over with the oil and sprinkle with caraway, salt, pepper. Let stand for one hour. Spray your roasting pan with cooking spray. Place the vegetables into roasting pan and pour liquid of choice. Place the roast, fat side down, in the roasting pan on top of the vegetables. Cover tightly and roast for one hour. Remove from oven, uncover, and turn roast fat side up. Cut decorative diamonds into the fat, insert meat thermometer, and replace, uncovered, back into the oven for approximately 2 hours, or until meat thermometer reads 165°F. Remove from oven and take out of roaster. Cover with foil to preserve temperature and let rest for 15 to 20 minutes. Serve with pan gravy (gingersnap gravy recipe below!), potato dumplings, and sauerkraut.

GINGERSNAP GRAVY

Ingredients

1/2 cup finely chopped onions

1/4 cup finely chopped celery

1/4 tsp. minced garlic

2 Tbsp. butter

1/2 tsp. ground ginger

1/4 tsp. salt (or to taste)

1/4 tsp. pepper (or to taste)

1/4 tsp. leaf thyme, crumbled

1/8 tsp. leaf sage, crumbled

1 dash ground cumin

1 (13 3/4 ounce) can beef broth

8 gingersnap cookies

Directions

To prepare gingersnap gravy, pour off pan juices into a 1 cup measure; skim off fat. Add enough water to make 1 cup and pour back into the pan. Set pan on top of the stove over medium-high heat and simmer for 2 minutes, scraping brown bits from the bottom of the pan. Remove from heat. Sauté chopped onion, chopped celery, minced garlic in butter in large skillet for 4-6 minutes. Add ginger, salt, pepper, thyme, sage, and cumin, mixing well; cook 5 minutes. Add pan juices from roasting pan and the can of beef broth. Bring all to boiling, then lower heat and simmer, uncovered, for 3 minutes. Break gingersnaps into pieces and add to skillet. Cook gravy until cookies absorb liquid, then whisk until smooth. Simmer 10 minutes more. Strain gravy and keep warm. To serve, slice pork into medallions, and spoon a little gravy over meat. Serve extra gravy on the table.
