April is here, and spring with it, in all its azalea-blooming glory. Each year this month, the Amelia Islander Magazine presents its “Home & Design” special issue. Since April and spring deliver new life in full blossom, it’s always a great time to think about new starts in our lives and in our homes. ‘Tis the season for some good old-fashioned spring cleaning, and perhaps to change up the routine of our daily lives as well. The Home & Design special issue is always one of our favorites. Building a home, purchasing a home, or turning the home you love into the castle of your dreams is one of life’s most satisfying accomplishments. Creating a peaceful, comfortable environment where one can raise a family or enjoy retirement is a vital part of life. A home should be a place of rest from the hustle and bustle of the world, a place where we relax, recharge, and enjoy the things that matter most to us. If Covid has taught us anything, it has reminded us of the importance of home. When we make a home for ourselves, we make decisions about where we want to live, the style or feel of the house, whether we want an extra bedroom for out-of-town guests or a study, garage space for hobbies, and so forth. Once we are settled, we get comfortable with familiar ways of doing things. But as our lives change from year-toyear, our homes should reflect those changes. Each year, many homeowners set out on ambitious renovations, or decide to redecorate one or two rooms to keep things fresh. Recreating our home environment is a little like creating a work of art, and the process itself, as many have learned, can be a journey of self-discovery. In this issue, we share some interesting ways to update your home with the latest interior trends, recommended by some of our local experts. We also have the opportunity to feature two of the many beautiful homes here on Amelia Island. In the first, Mike and Shannon Straughn inherited a family cottage, which they decided to tear down to build their dream home with gorgeous views of the beach and ocean. In the second, Parker and Drew Scott decided their home on the beach needed a refresh, so they undertook a renovation that opened up their house to bring in more of the beauty of sea and sand. Also this month, we feature the annual Spring Wine Festival at Palmetto Walk, presented by Amelia Island Wine Company and Bar Zin Restaurant; learn about the new Amelia Island Opera Company, which was started by three aspiring opera singers who came to Amelia Island during the Covid lockdowns and were looking for performance opportunities; present some great recipes for homemade pickles and other delicious pickled vegetables to spice up your meals; and much more. W

hile Mike and Shannon Straughn built their dream house, Tarpon Tides, at Main Beach, people would stop and ask them about the unusual design. Rising out of a group of traditional beachside cottages, the house is modern and dramatic. The house sits on a double lot which has been in Shannon’s family for more than sixty 11 AMELIA ISLANDER MAGAZINE •

years. The house was planned to be a luxury rental, and later the Staughns retirement home. The main house is 3,300 square feet, with two full kitchens, two master suites with private bathrooms, and two additional bedrooms, including a bunk room. A rooftop deck tops the house, perfect for sunrise and sunset views. APRIL 2022

Shannon’s family has deep local roots locally. Her grandparents were Ira and Mary Hall, who bought the lots in 1962 for $875. Shannon has fond memories of the island, and she has been visiting all her life. Once married, she and Mike came back and stayed in the beach house that was originally on the lots. When Shannon inherited the lots, the couple decided to tear down the old cottage and build their dream house. Maximizing the location of the house and capturing the incredible views the lot offered were a priority. Mark Akins with Rice Architect met the challenge with his one-of-a-kind design.

The couple lives in Chicago, so it took many Zoom and face-to-face meetings to come up with a design that would incorporate the specific details the Staughns wanted. The unusual orientation of the house is for a good reason. Once in the house, it becomes clear why the house is sited the way it is. The views from each floor capture a large expanse of Main Beach Park and the ocean beyond. It is public land, so there are no worries about future development. The couple wanted the house as tall as possible, so it was built to the 35-foot maximum allowable height.

Steve Pickett of Pickett Construction met the challenge of building the unique home at Main Beach. Pickett is known for his client-focused homes on Amelia Island. Exterior detailing utilizes rich dark boards of Ipe wood (pronounced e-pay), which is similar to teak. It is a very hard wood, very durable, and it withstands the salt air. This is the first home in North Florida to showcase James Hardie “Reveal” siding, which offers a great alternative to stucco and provides a contemporary look. The home is built to be wind-resistant, with structural stainless steel for support.

Larry Johnson of Gordon & Johnson worked with Shannon on the interior of the house. Gordon & Johnson, originally located in Jacksonville, moved to Amelia Island in 2021. They specialize in new construction projects, with many on Crane Island. Larry describes the Tarpon house as very organic, something more than a typical beach house. The interior design is rental-friendly, with performance fabrics and wellbuilt furnishings that will hold up in time. in the home is soft and beachy. Several paint colors were used purposefully because the colors change as the light changes throughout the day. The colors include Sherwin Williams Oyster Bay, Sea Salt, and Wickham Gray. Ceilings are painted subtle colors, sometime hardly noticeable at first glance, but the fifth wall, as Larry calls them, are just as important. The first level of the house has tenfoot ceilings. A well-designed multipurpose room opens to the pool and jacuzzi area. A full kitchen, television,

seating area with a 72-inch television, and a generously sized bathroom convenient to the pool complete the first floor. The second floor has a master bedroom and two additional bedrooms. A bunk bed bedroom offers expanding sleeping options and will be ready for grandchildren. The master bedroom has an incredible view of Main Beach Park, the beach, and the ocean. The next floor up is the main living area, with a sitting area, large screen TV, kitchen, and dining table. Shannon

has incorporated prints and pictures belonging to her parents when they lived on the island. Special treasures are pieces of driftwood her father dug up on the beach. Shannon smiles as she points out the large pieces of driftwood that have traveled with the family in moves from Florida, Tennessee, Illinois, and finally, back to Amelia Island. It has come full circle! Like most new construction, the house is a “smart” home. Mike Straughn handled the technical side, and most things in the house are controlled by

Mike is vice president of sales for a manufacturing company in Chicago, and Shannon is the HR/accounting coordinator for her local park district. They have two daughters, 23 and 20. Although their amazing house is currently a rental unit, the couple can’t wait to retire on Amelia Island and family and friends on the beach they love.

If you and your family are ready to celebrate Easter and enjoy some family time together, you can kick-off Holy Week with the annual Spring Festival and Egg Hunt presented by First Presbyterian Church and Memorial United Methodist. LOCAL AUTHOR ANNETTE MYERS WINS AWARD FOR CHILDREN’S BOOK Delaney’s Adventures with Friends, a 2020 book by Amelia Island’s awardwinning author, Annette McCollough Myers, is a recent winner in the coveted Purple Dragonfly 2021 awards competition. These awards honor accomplished authors in the field of children’s literature and highlight up-and-coming, newly published, and younger writers. Judges are industry experts with specific knowledge about the categories over which they preside. Co-authored with her 10-year-old granddaughter, Delaney Ann Myers, the text is a colorful read for young to middle school-aged children. “Delaney has a desire to learn, explore, ask questions, and to talk openly about her surroundings, daily activities and experiences, and this is what the story is about. As we worked on it together, I stepped back in time and remembered my own childhood experiences,” says Myers. “Reading is the key to learning and understanding, and this book was designed for enjoyment, to encourage the use of vocabulary words, and to awaken young readers to explore their lives and learn about themselves and their ambitions at an early age.” The book has rave reviews from fellow authors for its beautiful illustrations, personal photos, memorable stories, and inclusion of discussion questions to help you create your own adventures. hen you have a chance to be at the beach, why would you ever leave? That is what Parker Scott will ask you while winking at her husband, Drew. Many people know Parker and Drew Scott from Scott & Sons Fine Jewelry, located at the corner of State Road 200/A1A and Amelia Island Parkway near the Shave Bridge. But what you may not know is that Parker and Drew were both raised near Waycross, Georgia, met at Valdosta State University, married, and have made Fernandina Beach their home for nearly 30 years. “We were spending so much time here when it was the family beach house, we finally bought our own place on the west side of Fletcher, almost right across the street,” laughs Drew. “Then when the For Sale sign went up on this house

closets and private bath, while Drew enjoys his space opposite.” At the end of the day, the Scotts couldn’t be happier with their redesigned home. “I tell Drew all the time they will have to carry me out of here in a coffin – cold – to get me to leave,” laughs Parker. “Our kids and their friends have spent summer after summer poolside, on the beach, and in our home, laughing and making memories that we will cherish forever.”

old & new As we emerge finally from Covid, new design trends like bolder colors and curves are mixing with more traditional floorplans that use dedicated spaces and colorful wallpaper. BY JULIE SIMMONS • PHOTOS BY JESSIE PREZA

ver spring break this year, our family toured Washington, D.C. together for the first time. One of our favorite stops on this trip was Mount Vernon, the home of George and Martha Washington. It sits majestically on the Potomac River and behind a green lawn and surrounding rolling hills and farmland. Equally impressive to the grounds is the interior of the home where Washington resided until his final rest in 1799. On the short home tour, one room to remember is the large dining room painted in a vibrant green! The bold color choice was most certainly a symbol of the family’s status; in the late 1700’s colored paint was achieved by importing blocks of pigment which were sparce and expensive. Nevertheless, Washington chose the bold green describing it as, “grateful to the eye.” Today local designers might chuckle that they wholeheartedly support Washington’s taste! “The return to color is still underway, especially when it comes to green,” says Tiffany Hinton, designer and founder of Lola Interiors. “Sage green cabinetry, spring green fabrics, green 41 AMELIA ISLANDER MAGAZINE •

glasses, table linens and even green tile have hit the market over the last year or two, giving lots of options in ways to incorporate green into your home.” As we toured Mount Vernon, I was also surprised to see bold wallpaper throughout the house. It seems our Founding Father’s taste and the trends are just as alive today, and Tiffany agrees. “We are continuing to see a lean toward traditional design and layers of pattern, color and texture. With this trend, wallpaper is making its way out of powder baths only and into main spaces of the home again.” This year, it’s not just the flat spaces getting all the attention. “Curved lines are here,” says Larry Johnson of Gordon and Johnson Design. “I think we have the cookie-cutter ‘modern farmhouse’ movement to thank for the rebirth of curves. That trend came with a lot of sharp edges and hard lines, like shiplap walls. home as well.” When thinking about furniture, patterns, or architecture, add a curve! While you’re contemplating adding curves to the mix, think about your mix of things generally. A blend of old and new is taking shape, says Linda Love of Bling Staging and Redesign. “As clients are refreshing their homes, there is a commitment to beloved pieces. No longer is it out with the old, in with the new; people are blending antiques and family pieces with their new pieces!” Benjie McEntyre of Julia Hall Interiors sees more personalization of home spaces. “Clients are allowing themselves the luxury of self-indulgence more, not asking what other people are doing. People are choosing patterns and textures for their own sheer joy and dayto-day pleasure,” he says. When it comes to home architecture, all designers are seeing a shift from the open floor plans. “We have Covid to thank for the decreased demand for open floor plans,” laughs Larry. “Think of Zoom calls with dogs barking, children appearing, and the occasional spouse photobombing. The more we work from home, the more we realize that dedicated spaces have great purpose, and we are sensing a shift toward traditional floor plans for renovations and new builds.” As we finished our tour of Mount Vernon, I was thinking about how every space in this home had a distinct purpose. Looking at design trends in 2022, we are back to the basics with spaces with a purpose, inspiring with color palates, and using home design to express our personalities. So do like the Washingtons did: pick what you love and go with it!

Returning for its seventh year, this month’s Spring Wine Festival hosted by Amelia Island Wine Company and Bar Zin celebrates good food and wines from around the world. BY KAREN MILLER • PHOTOS BY HOLLY CARLILE

S

pring has sprung on Amelia Island, and what better way to celebrate the season than with good food and wine! On April 23, the Spring Wine Festival hosted by Amelia Island Wine Company and Bar Zin Restaurant returns to Amelia Island’s south end. This year’s event will be the seventh Wine Festival hosted at Palmetto Walk Shopping Village, located at 4924 First Coast Highway. Over 300 people are expected to attend the event, so purchasing tickets in advance is highly recommended. Last year, Bar Zin’s owner, Tim Seyda, reorganized his restaurant and his mission statement. “Our re-opening took us back to my original vision that I had 10-years ago,” says Seyda. “We are going back to the basics, creating an extensive wine list to live up to the name as a wine bar, and bringing back the upscale comfort food in a tapas style menu. We moved Amelia Island Wine Company into our library room when we did our renovations, and together we’re able to host Spring and Fall Wine Festivals that celebrate wines from around the globe, along with some of our tapas and other menu items.” Holly Carlile, manager of Amelia Island Wine Company, is excited for this year’s festival. “This event allows attendees to sample wines they’ve never tried before,” she says. “Whether you’re a new wine drinker or a seasoned oenophile, you’ll find many new and unusual varieties of wines and varietals.” Carlile explains that a varietal wine is made primarily from a single named grape variety. “You may be familiar with varietals like Cabernet Sauvignon, Chardonnay, and Merlot; this is an opportunity to sample lesser-known grape varietals like Gruner Veltliner, Albarino, Cabernet Franc, and Barbera.” Each guest will be provided with a keepsake wine glass to sample the 50 different wines provided by Amelia Island Wine continued on next page

In addition to the tastings, wine experts will provide guests with information about the wines they’re sampling: the region where the grapes are grown, the history of the vineyards, and suggestions on how to pair the wines with various foods. “We want our Spring Wine Festival to be fun for everyone,” says Carlile. “We know that wine can be intimidating to some, so we’re offering lots of wines at different price points. Some of our wines are extremely economical! This year, we’re also offering tastings of sweeter wines since many people prefer those flavors. Some of the wineries are local, too, like Island Grove Wine Company, a winery located in Hawthorn, Florida.” Spring Wine Festival will feature Oregon wines, including Pinot Noir from the Willamette Valley, along with Pinot Blanc, Pinot Gris. and Chardonnay. Also featured will be wine from the Bordeaux region of France, predominately red blends based from Merlot or Cabernet Sauvignon, along with some of Bordeaux’s white wines, like Graves Blanc and Vouvray. The Spring Wine Festival will feature a tempting charcuterie board with cheeses, meats, and nibbles, in addition to a multitude of hors d’oeuvres provided by Bar Zin. Music will be provided by local saxophonist Ernest Gonzalez. The festival will be held on the front porches of Palmetto Walk, along with Bar Zin’s terrace, with lots of room for mingling, if you wish, or social distancing, if you prefer. The Nassau County Humane Society will also be at the festival, providing information on adoptions, along with some furry friends to meet and greet. When Covid restrictions drew them to Amelia Island, three aspiring opera singers started Amelia Island Opera to create performing opportunities for themselves and others. BY DICKIE ANDERSON • PHOTOS BY LILLY SHEETZ

A

melia Island Opera Company is new to the island and joins an extraordinary selection of premium-level live entertainment, which includes the Amelia Island Chamber Music Festival, the Amelia Island Jazz Festival, and two outstanding community theaters, Amelia Community Theatre and the Amelia Musical Playhouse. When three talented opera singers found themselves grounded by the Covid pandemic, they made their way to Amelia Island. Their careers demanded constant travel, but when the pandemic hit, they needed to create a home base. Each ended up on Amelia Island. Little did the trio know that they would soon form an opera company, which is now in its second season. Robyn Marie Lamp, a Florida-based soprano, was in Boston. The day after the final dress rehearsal for her role in Bellini’s Norma with the Boston Lyric Opera, the entire cast received a phone call from the company that the production was canceled. She quickly left for Florida and a home with her mother. Reinventing herself, she performed socially-distanced concerts, live streams, and even sang from her porch in a neighborhood community event during Covid. John Tibbetts was well on his way to realize his dream of singing opera, Broadway, and in choirs across the country. 59 AMELIA ISLANDER MAGAZINE •

He was looking forward to back-to-back contracts with the Sarasota Opera Company and Palm Beach Opera. Meanwhile, his girlfriend, Victoria Isernia, was in New York appearing with local performance companies, teaching voice, and who was preparing to perform in the Utah Festival – Opera and Musical Theatre. John scooped up Victoria and headed for Amelia Island and his mother. The two quickly found jobs on the island. John is a familiar face at Centre Street’s Ciao restaurant and Jimmy John’s. Victoria might be seen at Talbots. The two also teach piano and voice lessons. A true romantic, John proposed to Victoria at Ciao, where he is a singing waiter. All three founders of Amelia Opera sing in the choir of the Amelia Plantation Chapel. The three agree that COVID delivered an unanticipated opportunity. Responding to community interest, they scheduled their first joint performance at Amelia Plantation Chapel in August 2021. They delivered a little bit of Broadway and a little bit of classical opera and thoroughly charmed their audience. More recently, Amelia Island Opera chose to feature John and Victoria in a two-day Valentine’s Day concert series (Story and Song and the Amelia Plantation Chapel). romantic songs from Broadway classics got their audiences in a romantic mood. The founders will coordinate the newly formed Amelia Island Opera company while pursuing their careers. Back on the road, John and Victoria will be performing at the Utah Festival – Opera & Musical Theatre this summer. The two will play challenging roles in operas that include Bizet’s Carmen, Joseph and the Amazing Technicolor Dreamcoat, and Mozart’s The Magic Flute. John will be featured as the baritone soloist for Carl Orff’s famous cantata, Carmina Burana. Robyn’s upcoming performances include singing the title role in Tosca for Gulfshore Opera, Mozart’s Requiem with the Palm Beach Symphony, and soprano solos in Verdi’s Requiem at Carnegie Hall with the Masterwork Chorus in October. Several island events are planned. “Seeing the community so passionately support us during our concert series fuels our desire to continue to offer creative programming,” says John. Amelia Island Opera is dedicated to bringing high-quality music to the greater Amelia Island community. The organization is positioned to begin planning fuller seasons, with talks of community-involved arts programming and even a full opera production. While visiting family in Stuart, I saw the most beautiful, fragrant tree, full of dark pink blooms that stood out against the bright bronzy new growth. It was breathtaking, and finally I realized I was looking at the beautiful Rosalinda Indian Hawthorne. This robust small tree blooms from spring to summer, and it’s really a sight to behold. This is an oldie but goodie, an evergreen, and it can grow 12 to 14 feet in height and about 10 feet in width. It is disease- and pest-resistant and heat- and salt-tolerant. Rosalinda will perform well in sun to part-shade, so you can use it as a hedge, an accent plant, in mass plantings, or as a privacy planting. This is a must-have for those that want a showstopper or just something beautiful to brighten up the landscape and catch the eye. Keeping with this year’s color palette by Panatone, , there is a new Buddleia named High Five Purple. This is a long-blooming, compact bush

TIP OF T HE M O N T H Now is the time to fertilize your acid-loving plants like Azaleas, Camellias, Gardenias, and Hydrangeas. Don’t forget to start fertilizing your roses once a month, too. Most shrubs can be fertilized now along with your lawn.

(3 feet high by 3 feet wide) that attracts the butterflies with its double purple fragrant blooms, which continue from spring through the fall. It is noninvasive and produces little to no seeds. High Five is a great new addition for your garden, and it should be available in garden centers this year. It will grab your attention, it did mine. High Five makes a great accent, border, or container planting, and in mass makes quite a statement. Droughttolerant and easy to care for, it is longerblooming than other Buddleia plants. Cut it back hard in early spring when fertilizing is suggested and enjoy this new plant in full sun to full shade. Butterflies will flock to this one!

Another new Southern Living PP plant is the Heart Throb Hydrangea, a magnificent variety that will grab your attention. The blooms on this beauty are dark red and edged in green. As it ages, it turns to green with hints of red for a memorable look over the 3 seasons. This compact grower is great for small gardening spaces, maturing to a 3-foot by 3-foot rounded, mounding beauty. Heart Throb will bloom on both the old and the new wood, and after a late frost, it will still bloom. It requires no pruning. You can plant in part sun to shade, use it as a foundation planting, border, statement, or just enjoy the foliage and color of the blooms. They make wonderful cut flowers for any arrangement. Easy care, disease- and pest-resistant, I want one of these in my garden. The above plants should be available in stores this spring. H

ere’s a quick guide on enjoying everything Burlingame has to offer. First, make a reservation. Despite all the seating in the meandering rooms of the lovely 1940’s house on South 5th Street in downtown Fernandina, a table at Burlingame Restaurant is much sought-after. Early on a Wednesday evening, we thought we would miss the rush, but my friend, Patti Burch, and I watched as the porch filled up, as did the glass room where we were settled.

Next, chat with your server, who has the good fortune to work at a restaurant where staff is treasured. Creating community is important to Chef Chad Livingston, so he nourishes the staff with a Culinary Institute of America (CIA) tradition of Family Meal, a small, healthy supper to start each evening, where staff learns about ingredients on the night’s menu and nurtures their group bond. Said our server, Calley: “This is the calmest kitchen I’ve ever worked in, and I’ve been in this business for 30 years!” Once you’re settled, prepare to enjoy what the Chef does best. The smaller menu gives him space to spread out in his specialty 64 AMELIA ISLANDER MAGAZINE •

of local, seasonal ingredients in artistic presentations served in a casually elegant atmosphere. The Chef’s preference for smearing the plate rather than saucing the food accomplishes several ends: it keeps foods clean so we can appreciate them, gives us a bold variety of flavors, allows us to enjoy as much or as little as we want, and adds striking beauty, like Van Gogh brushstrokes. Don’t expect a typical citrus-and-rice treatment for fish here, for Chef is at ease with complexity for heartier fishes. He makes familiar ingredients like corn, mushroom, sausage, furikake, potatoes, squash, horseradish, bacon, spinach, beet, carrot, and broccoli extraordinary. Our evening at Burlingame began with Brussels Sprouts and Grilled Octopus. Brussels sprouts are popular on restaurant menus now, but Burlingame makes theirs stand out, with cranberries, pecan, and bacon vinaigrette. Burlingame’s octopus also has a wow factor. Instead of sliced and sauced, this octopus is whole, large, and meaty. Perfectly charred, the tentacle rests on lovely flavor- and colorsmears. My vegetarian meal was an Eggless Cornmeal Souffle with Tomato, Corn, and Spinach with Fried Parsnip Chips. Each flavor stood out, with the smeared sauces enhancing and balancing one another. Finally, dessert. Patti’s Crème Brulee was wellberried and crunchy. Having worked in French restaurants in the 1980’s, I love unusual presentations like that of my Lemon Pie. Traditional lemon meringue pie is deconstructed into its elements and reassembled to accentuate individual flavors: toasty meringue, tart filling, sweet blackberry compote, and salty Ritz crumbles. If it seems that Chef Livingston is doing everything right, it may be because of Burlingame’s origin: how Eric and Deb paired with Chad and Lauren Livingston is a story of its own that you can read on the website, but, in short, they designed and opened in March 2016 with the goal of being together five years, after which Chad and Lauren would take over. Add one year for Covid, and this is what is happening right now! Eric and Deb worked tirelessly on every detail to get Burlingame just right, and now Chad and Lauren have the skills to keep it going. Pickle Party! ver the past few months, my husband and I have been adding more pickles to our daily diet. Having had a rich upbringing in the Pennsylvania Dutch “seven sweets and seven sours” way of eating, we’ve rediscovered the delight and balance of pickles with our meals. My nemesis, however, has always been dill pickles, which I can never seem to get quite right. Recently, I contacted a pickle expert, La Toya Wells, to teach me the art of making perfect pickles. La Toya, who grew up in Old Town Fernandina, has loved pickles since she was a child; in fact, they were her favorite food. But she didn’t start making pickles until she found out her sister was pregnant. “She was craving pickles, and I wanted to make some for her. I began experimenting with different recipes,” says La Toya. “The pickles came out so good, I started making them for other family members and friends.”

La Toya’s love for pickles spurned her to start a cottage industry called Big Toya’s Pickles. “What started out as a home hobby became a side business for me,” says La Toya. “I love experimenting with different herbs and seasonings.” The key to success, according to La Toya, is to shop for only the freshest ingredients; La Toya scours markets all around Fernandina and Jacksonville for the perfect cucumbers. There are lots of other veggies that can be pickled, too. We’ve had success with pickled carrots, dilled green beans, and even pickled jalapenos. Having several jars of pickles in the fridge means we can add color and crunch to all of our meals, along with our cheese trays and charcuterie boards. Good pickles take about two weeks to ferment, so make them ahead before you plan your “pickle party.” The following recipes make great hostess gifts, too!

You can use the 2/3 vinegar to 1/3 water ratio. Add the salt and sugar to your liking. Heat until brine comes to a simmer and the salt and sugar has dissolved. Allow the brine to cool. Add the brine to the Mason jar, making sure everything is covered with the brine. Close the jar, making sure the lid is secure and tight. Refrigerate for two weeks before eating. QUICK PICKLED CARROTS Ingredients

Preparation Grab a quart-size Mason jar, add the pickle spears or slices, yellow mustard seeds, black peppercorns, garlic, cilantro, dill weed, and coriander seeds. Add water and vinegar to a medium pot to begin your pickle brine.

4 cloves garlic 4 tsp. Kosher salt 2 tsp. dill seeds 1/2 tsp. black peppercorns

Preparation Bring a medium pot of water to a boil. Add carrots and cook for about 3 minutes. Remove them and immerse in an ice water bath. Layer dill sprigs, garlic, and carrots in a glass jar. Mix 3 cups water, vinegar, salt, dill seeds, and peppercorns in the saucepan. Bring to a boil to dissolve salt. Cool, then pour brine over carrots in the jar. Refrigerate for 1-2 weeks for best flavor. PERFECT PICKLED JALAPENOS Ingredients 2/3 cup white vinegar 1/2 onion, sliced 1 Tbsp. Kosher salt 1 tsp. black peppercorns 1 tsp. coriander seeds 5 large jalapenos, sliced Preparation Place vinegar, 2/3 cup water, onion, salt, coriander, and peppercorns in a saucepan. Bring to a boil and let cool. Place jalapenos in a pint jar, then pour brine over, cap, and refrigerate for 1-2 weeks. These are great on pizza and in sub sandwiches.
