Editor’s Message As we are allegedly getting through the winter period, activities are starting to come back as we emerge from hibernation! February means that Love is in the air… so have a little peek at the Valentine’s Fair in Derby Market Place. Slimming World Recipe
Beef Wellington No-one wants to miss out on those special occasions but it can be tough to stay on plan whilst enjoying a romantic meal. So, with Valentine’s Day approaching why not gives this sumptuous dish a try? After all, a little bit of what you fancy does you good!
Method:
1. Put the porcini mushrooms in a bowl, cover with boiling water and soak for 20 minutes. Drain, saving the liquid, and finely chop. 2. Preheat your oven to 220°C/Fan 200°C/Gas 7 and line a baking tray with non-stick baking parchment. Place a non-stick frying pan over a medium heat and spray with low calorie cooking spray. Add the shallots, garlic and the porcini and chestnut mushrooms and fry for 3 minutes, stirring. Pour over the reserved mushroom liquid and cook for a further 3 minutes or until all the liquid has evaporated. Stir in the parsley and season, then transfer to a bowl and leave to cool for 20 minutes. 3. Cut a pastry sheet in half and lay one piece across the other to make a cross or star shape (depending on the shape of your sheets). Place one of the beef fillets in the middle and spoon over a quarter of the mushroom mixture. Bring up the sides of the pastry to encase it tightly, scrunch it up at the top and spray with a little more low calorie cooking spray. Repeat to make the other wellingtons and spread them apart on the baking tray. 4. Bake the wellingtons to your liking (10 minutes for rare, 15 minutes for medium-rare or 20 for well done). Leave to rest for 5 minutes before serving with roast potatoes and your favourite vegetables.

Rambles with Rafa Despite the inclement weather we know our readers (and their furry friends) still want their monthly dose of fresh air and exercise. So, our resident rambler (David from JH legal) continues to brave the elements, bringing you a fantastic walk on the edge of the peak district, with views well worthy of the effort. This walk begins in Holymoorside, lovely village where it takes you out past the village pond and then south across country before heading up past Stanedge Golf Course, with some lovely views, before reaching the B5057. From there you will head back north, crossing the small River Hipper, before a short climb and some fantastic views, then heading back to Holymoorside where you can find is a dog friendly pub (The Bulls Head serves a delicious Sunday dinner!)
4 ½ mile circular walk from Holymoorside
A reasonably short walk which should take you and your dog around 2 hours to complete. Although it is mostly on trails and paths there may be some uneven and muddy terrain, depending on the weather so please wear appropriate footwear. As always, follow the countryside code, keeping dogs on leads where appropriate. There are a couple of roads to cross and one short section of road to walk along, so please take plenty of care.

Start: Park on Loads Road opposite Holymoorside Recreation Ground and adjacent to The Bulls Head Pub, Holymoorside Chesterfield S42 7EJ.
1. Standing with your back to the recreation ground turn left and walk along Loads Road. Immediately after passing the United Reformed Church on your right, turn right onto a lane and signposted footpath. 2. After a short distance you will pass a gate on your right-hand side. Continue straight ahead and past the gate, then staying close to a wooden fence on your right continue ahead and slightly to the right to move off the lane and onto a footpath with a hedge on your left and a pond on your right. 3. After a short distance bear slightly to the left, up some steps and through a gap to continue with a steep bank on your left. Continue straight ahead and into some trees. Continue to cross over a stile and then continue with trees and a steep bank on your left. 4. Continue through the trees but staying close to a wall and open views on your right. Ignore any paths off to the left and uphill and you will eventually pass a marker post on your right. Continue downhill for a short distance and then cross over a stream. Now continue straight ahead until reaching some farm buildings and a lane directly in front of you. 5. Turn right along the lane and continue to walk along the lane with a stone wall on your left. When the stone wall ends, continue along the lane for a short distance and then turn left going uphill following the arrow on a marker post. After a short distance pass through a gap in a stone wall and then continue uphill going through some trees. 6. After some distance you will reach a large wooden gate directly in front of you. Follow the arrow on the gate post around to the right to continue uphill keeping a stone wall on your left. Continue uphill for quite some distance until you reach a golf course. Upon reaching the golf course turn left and continue along the edge of the golf course staying close to the trees on your left. 7. Continue along the edge of the golf course until reaching a track and a sign reading ‘Deep Water’ directly in front of you. Turn right to continue along the track and a signposted footpath. After a short distance you will pass a farm on your right. Continue straight ahead until the track turns into a tarmac lane and then you will pass by a car park and clubhouse on your right. 8. Continue straight ahead and after some distance follow the lane sharp around to the left. Then continue along the lane until reaching a busy main road. Turn right, continue along the road for a short distance and then turn right again to continue along a lane and signposted footpath. (CAUTION: there is no footpath along the road.)
9. Continue along the lane going downhill and after a short distance pass a sign for ‘Stone Hay Farm’. Continue all the way down to the farm and then into the farmyard. Be sure to pass by a stone cottage on your left and keep the stone outbuildings on your right. Continue to pass between the buildings and then follow the arrow on a marker post, on your left, to head along a footpath into some trees. 10. After a short distance pass through a metal swing gate. Then continue straight ahead for a short distance to pass through a gap in a fence and then cross a stream. Continue straight ahead going downhill for some distance and then cross a 2nd stream. 11. Continue straight ahead going downhill for some distance and then cross over a footbridge. From this point continue uphill until reaching a road. Turn right along the road for a short distance and then turn left into some trees going uphill and along a signposted bridleway. 12. Continue along the bridleway climbing uphill and eventually levelling out with open views to your right. Continue along the bridleway for a long distance until eventually reaching a road. Turn right along the road and continue downhill for quite some distance until reaching The Lamb Inn on the left-hand side of the road. At this point bear to the right to continue along a road. 13. Continue along this road for a short distance until reaching a cross roads. Go straight across at the cross roads and then continue straight ahead back to the start.

Lizzie Fawkes grows up in an idealistic radical family in Bristol at the turn of the 18th century, a time of revolt and violence across Europe. Her mother writes pamphlets on women’s rights, their social circle is dangerously close to the French revolution. Fear of The Terror, as it became known, is spreading nearer home. But Lizzie marries away from her background, for love, or more accurately for lust, to a property developer who has everything to lose from the social upheaval and war threatening to move across the channel. Birdcage Walk, by Helen Dunmore, starts with a woodland burial and its unsettling menace hangs over the events of the book. Violence lies just below the surface. But this is not a thriller, or a murder mystery. What it does give us is a sense of what it means to be an ordinary person caught up in personal turmoil and tragedy as history drives the human story forward. It’s also a story about women and love. The Birdcage Walk of the title is the upmarket mansion development which Lizzie’s husband is selling his soul for. But it’s also a perfect image for Lizzie’s life – trapped in the cage of his expectations of a wife and his possessiveness. The consequences of the revolution are human scale in this book. There is a lot of period detail, but a warmth and simplicity about the story telling which makes it a good read. It was also Helen Dunmore’s last book. She died last summer and this final novel is a fine and satisfying piece of writing.

Mike’s Musings If you recall Mike’s ‘things that annoy most decent people’ series last year you will know that Mike is always a man with a plan. He sees a problem and he applies his, somewhat unique, mind to the task of solving it. The worrying thing is his ideas seem no worse than any of those of the people in power!
Part 1 of ‘How we can make this a better country’ I’m thinking of forming a new political party. One that speaks for ordinary people and the things they care about. Come and join me to ensure that our populist policies become part of the future fabric of our caring and sharing society. The first part of our manifesto, which deals with some of the more important issues currently facing us, is listed below.
Problem No 1 – Speed bumps are the bane of all sensible motorists. Policy – retain them, but revert to calling them sleeping policemen. The problem will still be there but at least the change of name makes them sound a bit better. Problem No 2 – Inconsiderate use of mobile phones in restaurants and on public transport. Policy – Give waiters, train managers and bus drivers the authorisation to immediately amputate the hand of any offender. NB – both hands for repeat offenders. Problem No 3 – A nationwide issue, but an especially prevalent one in my own village, is the mess left behind by the inconsiderate owners of incontinent dogs. Policy – Reintroduce the dog licence and as part of the registration process, owners be requested to submit a ‘sample’. NB – from the dog, silly! Funded by the fines raised – it would initially be a small fortune in Newton alone – a national task force be set up to have the DNA of all dog poo checked against centrally held records. Problem No 4 – the nation is being littered by irresponsible householders who, each fortnight, insist on putting out their recyclable papers etc. in boxes exposed to the elements, as opposed to within a sealed container.
Policy – For a first offence, and under supervision (NB – the dog poo wardens could combine this with their main duties), the culprit be asked to pick up every item of litter found within a 50 yard radius of their house. For subsequent offences, the ‘deep clean’ area be extended by a further 50 yards. Problem No 5 – Journalists who seem to think they’re ‘with it’ by describing the nation’s national sport as ‘footie’. They clearly know very little of the reality of following football. Policy – Those guilty should be provided with a Chesterfield FC Season Ticket (NB – this to apply in the 2017/18 football season only. It may well be YOUR club next year!). This will remind them that there are many less twee and more active descriptors for the so called ‘beautiful game’.

It may still be freezing some days, but February is a good time to get the garden ready for the sudden burst of spring. Pruning is a good start and lots of plants will benefit if you get moving now. With shrubs such as buddleia, hydrangea and fuchsia – all late flowerers – you can take about a third off the height. Cut, using clean secateurs, above an outward facing bud. Roses other than climbers or ramblers, should be pruned back to just above the second outward facing bud from the base of each stem. The “outward-facing” rule stops the centre of the plant getting congested, and hopefully will help to ward off disease. It also helps shape the plant. Clematis which flowers mid to late summer can be hard pruned back to a strong pair of buds. But early flowerers should just be tidied up. If you chop them too hard you risk taking off flower buds. If you’ve left last year’s perennial growth you can now cut back to ground level before this year’s crown starts to grow. And finally winter pansies may look as if they’ve given up the ghost in the darkest days, but if you clear any dead flowers and the worst of the straggle, they should start coming back as we get more daylight.
Top Tip!
If you want to do your bit for wildlife, you could try bird nesting boxes. The RSPB has plenty of advice online and sells boxes for different bird species. Just remember to fix them somewhere quiet, away from marauding moggies and facing away from the sun.

Cooper’s Corner Follow Barry on Twitter @bazdjcooper Nottingham Forest writer at the Nottingham Post Last month Barry lamented the lack of long-term vision of the owners and chairmen of our local football teams. Since then another manager has been shown the door leaving many wondering about the prospects of the new man in the job seeing out his contract. Here’s our Barry’s take on it.
The New Year saw yet another change in management at Nottingham Forest, though few could say it came as anything but a surprise. Mark Warburton lasted nine months at the City Ground, with his fate sealed after a woeful home display to Sunderland, and the ex-Rangers boss was given his marching orders on New Year’s Eve. More than 55,000 spectators attended their two home games over Christmas against Sheffield Wednesday and the Black Cats, and many left before the end – something that didn’t go unnoticed in the City Ground boardroom – another nail in Warburton’s coffin. Forest wasted little time in appointing Aitor Karanka, a man with a tremendous pedigree as a player and coach at Real Madrid, before more recently guiding Middlesbrough to promotion from the Championship. Karanka does indeed have the pedigree and though I personally would have preferred owner Evangelos Marinakis to have gone with Barnsley’s Paul Heckingbottom, there is no question that the Spaniard represents a sound move. The big question will be how much of his two-and-a-half-year contract he’ll get to see out at the City Ground. It was quite revealing I thought, having been at his first press conference, about the number of

times he made reference to the length of the deal given to him by the Reds hierarchy because he clearly believes it may take a fair chunk of that to get the football club back into the top flight. Believe it or not, it’s almost 20 years since Forest last graced the Premier League and there needs to be plenty of remedial work to a bloated squad if he’s to achieve that aim during his stay on the banks of the Trent. A core of talented youngsters have come through the Nigel Doughty Academy, but it wouldn’t be unreasonable to expect the squad to look vastly different come the start of the new season in August, compared to now. In his spell at Boro, which was largely heralded a huge success given his promotion, Karanka signed over 50 players and while I don’t expect anything like that at Forest, he will be given funds and plenty of wriggle room to make the changes he thinks are needed to get the club out of the hole they’ve been in for a while. It’s not beyond the realms of possibility that if Karanka does see out the majority of his contract, he would have done what no manager has done since Dave Bassett, and returned the Reds back to England’s elite.
