From Oneonta To Hong Kong, Local Chefs Staking Their Careers On Mexican Cuisine

arah Garcia may have worked on “The Hunger Games,” but anyone visiting her new venture – she is the new proprietor of the Fiesta restaurant in Clinton Plaza – will leave satiated. In 2011, she was marketing director at the Paul Mitchell cosmetology school in Sarah Charlotte, N.C., when the movie Garcia’s was being filmed nearby. “I made Fiesta sure my students did all the hair and makeup.” It wasn’t her first time in theater either. She was active with Oneonta Tapworks, Oneonta Dance Center and Orpheus Theater, where she danced in “42nd Street.” “When people heard I was coming back, they asked if I was going to teach dance classes.” Her busy schedule makes that impossible. She moved home, but she “lives” at the Fiesta. Please See GARCIA, B3

e may have started making pizzas with his mother, Susan, but Bill Patterson-Otis is now cooking a long way from his Pierstown home. “I packed all my Bill Otis’ Socialito belongings and was Bill Otis off to Hong Kong with three duffle bags,” he said. “I was ready for an adventure.” The adventure began when Bill, son of Mike and Susan Patterson Otis and a 2004 CCS graduate, heard from a fellow-chef friend that someone was trying to open a taqueria – a taco shop – in Hong Kong. “The front was refined street food, and fine dining Mexican-Latin in the back,” said Bill, who was born in Santiago, Chile. “I knew a lot about the cuisine from trips to Mexico.” Growing up in Cooperstown, Bill worked sumPlease See OTIS, B2
