TEACHER/From A1 and word got out quickly that there was a new kind of brew in town. “We’ve done a pumpkin beer,” he said. “We get pumpkins from Middlefield Orchard, roast them, then add the pumpkin right to the mash. We’re doing an Easter Czech Pilsner too, with yeast like they would have used in the 1800s. It’s going to be really, really good.” He usually has four or five batches going at a time in the 100-gallon tanks. “I make the kind of beer I want to drink,” he said. “My focus is on flavor – I’m not one of those brewers who puts ants or jalapeños in his beer!” The pub food is a big draw too. “People keep coming back for the garlic pesto fries,” he said. “We do a Friday night fish fry that’s really popular too.” But the problem with being as popular as they’re becoming was that Davidson was quickly running out of space for his growing customer base. “We used to cook and brew in the same room,” he said. “It was getting a little cramped in there.”

When the Chocolate Factory next door moved to Pioneer Street in Cooperstown, he expanded, building a dining room and a room especially for brewing. It’s all part of what he calls “The Brewers’ Triangle.” “We’ve got Ommegang, Butternuts and the Cooperstown Brewing Co. too,” he said. “We’ve got some really active home-brew clubs, and there’s a lot of interest in beer here.” Next week, he’ll debut his Friends & Neighbors Pale Ale, inspired by the bounty of what was once the hops capital of the U.S. “A lot of local folks gave us hops, so we used them in this beer,”

he said. The beer has proved so popular that he’d had plans for doing Brewery Ommegang’s Belgian Comes to Cooperstown festival, but was worried that he’d run out of beer. “One of these years we’ll do the festivals,” he said.

But if you ask him, he’s already got all the awards he needs. “Every time I look out and see a customer’s face light up when they drink one of my beers,” he said. “That’s enough of a medal for me.”

‘Crowdfunding’ Helps Roots Broaden Base Of Investors ROOTS/From B1 The Roots’ partnership just sort of happened. Parrish joined Ommegang in 2006, first in quality control and then as the productdevelopment manager. His wife, Adriane, teaching at Oneonta Middle School, met a woman named Amanda Scimeca, who introduced the Parrishes to her husband, Russ. He, in turn introduced them to Ed Spencer. “We would hang out and talk about beer,” said Parrish. “We would say, ‘Why isn’t there a brew pub in Oneonta?’ Then we realized that no one else was going to, so we decided, ‘let’s just do it’!” So Ed Spencer built the bar. Jason built the wall sconces out of slate tile and copper pipe pulled from the building. “All the construction and deconstruction was done by us,” he said. “That’s why it’s taken so long.” It’s also taken a while because of a novel Internet Age way of funding the business, a concept called “crowdfunding.” Invest $25, get a sticker and a pint glass. For $5,000, you can design a seasonal beer. “It allows the community to participate,” said Parrish. “That’s the fun part,” added Spencer. The local focus will also extend to the menu, beyond basic burgers and fries. “I like all that stuff, but we want to do things a little differently,” said Parrish. “We want to do simple foods, focus on pairing them with our beers.” The beers will be Belgian-style, and Parrish plans to switch them out often. “We’ll have three local favorites, then some of the experimental ones,” he said. “We don’t want to have the same five beers every time.”

Right now, they’re working on an oat blonde brewed with French ale yeast. “It gives it some nice fruity notes,” said Parrish. They plan to serve locally sourced foods, including meat from Larry’s Custom Meats and chocolates from Liberty Tree. “It’s going to be as local as we can,” said Spencer. “If you come in on a Saturday afternoon, you’ll be eating what we bought at the Farmers Market that morning.”

SOURCES OF INFORMATION AND ASSISTANCE The State encourages you to become informed about you options in foreclosure. In addition to seeking assistance from an attorney or legal aid office, there are government agencies and non-profit organizations that you may contact for information about possible options, including trying to work with your lender during this process. If you need further information, please call the New York State Department of Financial services’ toll-free helpline at 877-226-5607 or visit the Department’s website at HTTP://WWW. DFS.NY.GOV FORECLOSURE RESCUE SCAMS Be careful of people who approach you with offers to “save” your home. There are individuals who watch for notices of foreclosure actions in order to unfairly profit from a homeowner’s distress. You should be extremely careful about any such promises and any suggestions that you pay them a fee or sign over your deed. State law requires anyone offering such services for profit to enter into a contract which full describes the services they will perform and fees they will charge, and which prohibits them from taking any money from you until they have completed all such promised services.
