Welcome to the 27th celebration of the Merry Merchant Munch and Winter Wonderland Tree Lighting Ceremony. This is an opportunity to meet and mingle with festive businesses, enjoy some delicious treats, listen to local music, and get a jump-start on holiday shopping. Use the map and Munch Punch to plan your weekend. Be sure to drop your completed Munch Punch passport off at Jitters by 3pm Saturday to be entered into a drawing for some amazing prizes!

Merry Merchant Munch participating businesses will be open to munchers Friday and Saturday. Pay careful attention to the map for those select businesses that will only be open Friday or Saturday.

The Winter Wonderland Tree Lighting Ceremony will kick-off Friday evening at 5:30pm in the Eagle River Town Square. Choirs from local schools will entertain us while we await the arrival of Santa and his reindeer at 7:00pm. Stop by our sponsor tables for a chat and refreshments. A warming tent will be available for those with colder fingers, noses, or toeses.

In this generous season, we encourage you to consider sharing as you are able. The Eagle River Sleeping Lady Lions Tree of Giving is always in need of unwrapped donations. The Eagle River Area Rotary will be collecting donations of nonperishable food items.

Please join us to celebrate the season and our community by sharing time, laughter, and good fellowship with our neighbors and friends. Coconut Sour Cream Cake

Preheat oven to 350 Degrees. Spray a 9x13 pan. ¼ Cup Melted Butter 3 Large Eggs 1 TBSP Fresh Lemon Juice 1 White Cake Mix (18.25 ounces) 1 1/4 Cup Sour Cream, divided 1 Cup Canned Cream of Coconut, divided 1 Can Coconut, reserve a couple of tablespoons for top Combine the first four ingredients, then add 1 cup Sour Cream and ¾ Cup Cream of Coconut. When blended, add the Can of Coconut (reserving a bit for garnish). Blend well and pour into prepared pan. Bake for 35 minutes or until toothpick comes out clean.

While the cake bakes, combine the remaining: ¼ Cup Sour Cream ¼ Cup Cream of Coconut Let cake cool for about 15 minutes. Spread the sour cream and cream of coconut over the cake and top with coconut. Return cake to oven for 5 minutes (to toast the coconut).

Parker House Rolls

Preheat the oven to 375 degrees F and line a baking sheet with parchment paper 1 1/4-ounce packet active dry yeast 1/2 cup sugar 7 1/2 to 8 cups all-purpose flour, plus more for dusting 12 tablespoons (1 1/2 sticks) unsalted butter, melted and cooled, plus softened butter for brushing 2 cups whole milk, at room temperature 2 large eggs, at room temperature 1 tablespoon kosher salt, plus more for sprinkling Bloom yeast first by measuring ½ cup warm water (between 110 and 120 F) into a bowl and sprinkle the yeast over, and adding the sugar. Let sit for a minute or two – you should see it begin to bubble and activate. Gently stir in one cup of flour; set near a warm place.

Mix melted butter and milk in a mixer with the hook attachment on low speed. Add eggs and mix, adding the yeast mixture until incorporated. Add 6 ½ cups flour and 1 tablespoon salt, mixing until dough forms a ball, adding up to ½ cup more flour as needed. Brush a large bowl with softened butter and transfer dough, covering it with a towel.

Let rise in a warm place, 2 to 2 ½ hours until doubled in volume.

Dust a clean flat surface with flour and turn the dough out onto it. Flour hands and gently press the dough into a 16-by-8-inch rectangle, about 1/2 to 3/4-inch-thick (don’t use a rolling pin). With short side in front of you, cut the dough in half lengthwise with a floured knife and then crosswise into 12 strips. Fold each strip of dough in half so the top part slightly overlaps the bottom half, then tuck the overhang underneath. Place the rolls seam-side down on the prepared baking sheet in 3 tightly packed rows. Bake until golden brown, 18 to 20 minutes. Remove from the oven and brush with softened butter.
