Harvest and store herbs Julie Cascio, UAF Cooperative Extension Service

Herbs are flourishing in my garden this summer! They are delicious fresh in salads, to add flavor to water, or used in whatever meal is being made. But so much is ready to use that I need to stored them for this winter’s food.

Julie Cascio Herbs may be harvested for leaves, seeds or flowers, or all three! Then decide how to store them.

Harvest Herbs Most herbs harvest best when their flower buds are forming, but before they open.

Ideally this is done in the morning when the dew has dried off the leaves and moisture doesn’t cling to the plant. This gives stronger flavor and aroma. Use good sharp shears or a knife when harvesting.

Harvest up to half of an annual plant at a time. For perennial plants harvest no more than one-third. Plants that grow from a single stem with branches, such as thyme, tarragon, basil, marjoram and savory should be

harvested by cutting sprigs at least 4 inches up from the ground. This lets new branches develop so more of the herb grows.

Sorrel, chives, and parsley grow in a clump. Harvest by cutting whole spears from outside the clump, above the ground level. Harvest healthy green leaves, not yellowed or dead ones.

The flowers of a plant give flavor and color to food.

When growing a plant for leaves, thought, pinch off flower buds to lengthen the herb’s season.

For dill and cilantro seeds are often used for seasoning. Let seeds ripen on the plants for full flavor. One option is to tuck a paper bag around the ripening seeds. Tie the bag to the stem. When the seeds rattle within the bag, cut the stem and shake your harvest into the bag.

Storing Fresh Herbs Store fresh herbs, such as parsley, oregano, rosemary, savory and thyme in a cold, moist part of the refrigerator for several

days. Keep them separate from fresh fruits, which put out ethylene gas that shortens the useful life of the herb.

Keep basil, chervil and coriander at room temperature.

Place with stems in a glass of water and cover loosely with a paper bag.

To keep herbs longer, freeze or dry.

Freeze Strip small-leaved herbs, then freeze in a bag or foil. Roll large leaf herbs such as basil and sage to freeze. Another option is to place the herbs in water or oil. Blend 2 cups herbs with ½ cup water or ½ cup oil; freeze in ice cube trays, then store in small freezer bags.

Dry Tie herbs (catnip, mints, marjoram, oregano, rosemary, sage) with a string or rubber band. Suspend the bunch in place that has air circulation. If dust may gather or leaves will be lost, suspend the bunch inside a paper bag punched with hoes or a pillowcase.

When dry, store in glass or plastic jars or

bags.

Tender leave herbs (Basil, chamomile, chive, dill, oregano, parsley, thyme) may be dried on screens or a clean surface. Pull the leaves from the stalk or stems. Stir daily for even drying.

Herbs can be dried in the dehydrator or oven, at low temperature (100 to 120 degrees Fahrenheit) and with airflow. Check your microwave for instructions on how to use it. Store dry leaves in airtight glass or metal containers or plastic bags.
