½ oz. sliced mushrooms
2 oz. pre-blanched broccoli orets
1 oz. sliced water chestnuts
2 oz. french bean sprouts
2 cups steamed rice
1 oz. onion, julienned
4 Tbsp cornstarch
6 oz. soy sauce
16 oz. water
2 oz. sesame oil
1 Tbsp fresh ginger, chopped
1 cup light brown sugar
1 tsp oyster sauce
1 Tbsp chopped garlic
1 Tbsp hoisin
¼ cup rice wine vinegar
½ oz. lemon juice
¼ tsp. Cracked pepper
Sauce: Warm oil over low heat, add ginger and garlic and cook for about one minute. Add 12 oz. of the water and rest of the ingredients except corn starch, bring to a simmer. Mix the remaining four oz. of water with the cornstarch and slowly whisk into the sauce. Lower heat and hold. ( is mixture could be held in the refrigerator for use whenever you need a quick meal.)
Meal: Have steamed rice ready. Put a little oil in a saute pan at medium high heat. Add beef, peppers and onions cooking for about one minute or until beef is about half done. Add mushrooms, broccoli and water chestnuts and cook for another minute. Add eight oz. of the sauce and the bean sprouts, bring to a simmer. Place one cup of rice in the center of each plate and top with stir fry mixtures. Serves two.
