I have been a Goodyear Blimp fan since my youth and have always wanted to get a ride in the Blimp.

I won a contest in 1985 for a short 30-minute ride off a radio station giveaway and long for another ride in the beautiful airship. I have a great collection of photographs, books and articles about the Goodyear Blimp and have always thought being this is the one and only Akron magazine you will do a story about the great Ambassador of the Sky. Please consider an article about the history of the beautiful Goodyear Blimp.

The Dragon Dream Team, Ohio’s first breast cancer survivor dragon boat team based at Rex Lake in New Franklin, recently traveled to Windsor, Ontario to compete in the International Dragon Boats for a Cure Festival.

The team took along the July issue of Akron Life & Leisure to enjoy on the trip as well as Akron’s “All American City” pins for trading with other teams from all over North America. We had a great time and we were proud to represent our city and state in this competition.

You Are a Business

N

obody is not in business.

That is unless you convert your lifetime savings into cash and live on a desert island or under a bridge. So, when the news headlines read “Business is Down,” they are talking about you. For, you see, by definition, you function just as a business does, whether you know it or not.

You are a small business, a very small business of one in some cases, and you need all of the same components of a small business. First you need capital. In your case, this would mean cash on hand, savings and investments. Secondly, you have bills just as a small business for food, clothing, car payment, rent or mortgage, insurance, entertainment and anything else that you might put on a credit card or assign regular monthly payments. Then you will need cash flow unless you are so rich that all your needs and wants will be met for the rest of your life without fail. Most people get their cash flow from a job, which you probably have or had, which then involves taxes, which as in a business, you might have someone else take care of.

You have to motivate your employees (or, in your case, kids) to do their work (things like getting homework done on time and remembering to take it to school), which provides support for the entire enterprise (family). Mowing the lawn, cleaning bedrooms, washing the dishes and other chores are really no different than the work you do at the office in support of your company. And then there is payroll. In a business, this might eat up half of your overhead alone, while in a family, payroll might translate into allowances or gas money, spousal money to buy dresses or golf clubs.

that I find interesting and I think you will, too. If you look at business as just an extension of your life, you will see that running one is much like running a family, though you usually won’t get tucked into bed at night by your boss. The interesting thing I find in many small businesses is how they got to where they are today. Many begin because someone has a good idea and wants to pursue it, while others start out of necessity to provide a job for the entrepreneur and his or her family. Still others begin by accident, as is the case of Mollard Conducting Batons in Bath, which we feature in this issue.

I must admit that business, especially small business, has been a fascination of mine for many years. I have started several small businesses one of which was a publication entitled Akron Business Magazine, which we published from 1997 through 2002 for small businesses in the Akron area. Small business owners invariably have an interesting story to tell, and I find them to be among the hardest working people I have ever met.

In this edition of Akron Business, we also feature the wisdom of Ron McDaniel, president of Buzzoodle, a Web site maximizing firm he founded in Kent. Ron writes a blog at Buzzoodle.com where he discusses his ideas for thinking about business from a different perspective. He is also a frequent speaker on social media and employee ambassadors. I think you will enjoy this piece, his second for the magazine.

I hope you will find the businesses we profile in our quarterly Akron Business sections as interesting as I do, and I would like your help in seeking out small businesses that have an interesting story to tell. his year’s Akron Arts Expo Wine 5 Tasting and Silent Auction took place Friday, July 24 at Hardesty Park. This upscale event featured more than 150 wines and beers from around the world along with light entertainment and hors d’oeuvres. Guests were encouraged to bid on an array of items including massage packages, original artwork by local artists, gift cards for local restaurants and more. Proceeds benefit the Akron Arts Expo artist awards, children’s area and performing arts.

he Akron Art Museum’s annual black-tie Wine Auction fundraiser took place on Saturday, June 13 at Portage Country Club in Akron.

In addition to the auction, Reserve the Night: The Napa Valley Experience wine tasting sold out to more than 300 guests on Friday, June 12 at the museum. Robin Barnby and Rick Rodger co-chaired the Friday night event, while Jamie Boyd and Rory O’Neil co-chaired Saturday’s auction.

n May 14, a Sip For Sjogren’s Fine Water Tasting event took place at Akron’s Mustard Seed Market and Café. About 50 people sampled fine waters from around the world, bid on silent auction items including Cleveland Cavaliers playoff tickets, and ate sweet treats from the Mustard Seed.

The event raised $8,800 for the Sjogren’s Syndrome Foundation to fund research and education. Sjogren’s Syndrome is an autoimmune disease affecting the moisture producing glands in the body.

Sea Houser Vintage connoisseur and owner of The Hidden Pearl

A

vibrant woman who loves her career, Sea Houser has an upbeat personality that is evident the moment visitors enter her vintage clothing store, The Hidden Pearl. The store is filled top to bottom with anything and everything vintage—jewelry, clothing ranging from fancy dresses to funky casual pieces, multiple styles of hats and scarves in every color—all dating from the 1970s and earlier.

Adding to her unique style, Houser is rarely seen without a hat and accessories from her personal vintage collection.

Houser finds it difficult to believe that it has been 26 years since she first opened the store. “I don’t know where the time went,” she says, recalling the rainy day back in 1984 when she visited Cuyahoga Falls looking for retail space. She jokes that when she walked onto Front Street, the sun shone on the shop that she knew instantly would be the perfect location. And she was right. The Hidden Pearl has been there ever since.

Although Houser’s family has been supportive of her venture since the beginning, she says the shop is all hers. She jokes it’s not a mom and pop shop, it’s just a mom shop. And as much as she loves vintage clothing, Houser says her children have 14

always been her first priority. Her kids were the main reason she wanted her own business. She set the store hours around their schedules, ensuring she had time to take them to the pool in the summer and be there for important events during the school year. And instead of having a babysitter, Houser often brought her children to the shop where she says they usually ended up folding scarves.

Houser’s children are grown now, but the shop’s schedule hasn’t changed much. In response to customer’s requests, however, Houser has expanded the store’s hours to include some evenings and weekends. After all, she credits customer loyalty for her shop’s success. Her customers’ appreciation keeps them coming back years later. She even has had people call from out-of-state to make sure the store is still open so they can shop while they are in town. One of her customers went to work for Teen Vogue and featured The Hidden Pearl in one of the magazine’s issues. With a supportive family and faithful customers, it is no wonder Houser and The Hidden Pearl have done so well.

“Shooting Stars” LeBron James shares his story in a new book; signing scheduled Sept. 19.

L

eBron James has teamed up with Pulitzer Prize-winning author Buzz Bissinger, known for “Friday Night Lights,” to tell his own coming-of-age story. “Shooting Stars” is James’ memoir of times spent and lessons learned with four friends who started playing basketball together in grade school and went on to take Akron’s St. Vincent-St. Mary High School team to a national championship.

James is slated to sign his new book at Barnes & Noble, 4015 Medina Road, on Saturday, Sept. 19. Signing begins at 2 p.m., but if you’re hoping to snag a copy, you’d better get

there early. Wristbands, required for entry, will be given out on a first-come, first-served basis beginning at 7 a.m. that day when the store opens early.

Upper Deck will be on hand to certify the authenticity of all signed copies. St. Vincent-St. Mary cheerleaders will be there, the café will be open and other special activities are planned to make the event exciting and memorable, says Kelly Fogel, customer relations training manager at the Montrose store.

Brand New Look Weatherane Playhouse gets a facelift, just in time for its 75th anniversary season.

I

f you attended a performance at Weathervane Playhouse during the latter part of the last season, you likely noticed several upgrades—a new lobby (with double the space), new gift shop, new box office and new restrooms, as well as a new administrative wing. These changes are all part of a campaign that Executive Director John Hedges says was geared toward improving the theater’s public spaces. The final phases of the campaign—an overhaul of the auditorium that will include new paint, new seats and acoustical panels—will be completed just in time for the theater’s 75th season to kick off Sept. 10 with the production “Putting it Together.”

Weathervane’s current building was constructed in 1970, and while additions were made to the back of the building during the 1999-2000 capital campaign to update production capabilities, this is the first time the public space has been improved. Hedges describes the work as a “complete facelift to all the stuff the public views, to enhance the experience and address patron comfort.” The new lobby is equipped with a flat-screen TV and wireless internet access, which Hedges hopes will encourage the public to view Weathervane as more than just a place to see live theater.

Although Weathervane has a deeprooted history in the Akron area, and is fairing well in current economic times with last year’s attendance up 12 percent from the previous year, Hedges is careful not to fall into the trap of assuming Weathervane will always be around. Instead, he continually asks the question, “Do we matter?”

Hedges hopes to bring back a series of free outdoor concerts on the front patio, attracting a broader cross-section of people from the community to the organization.

Looking forward, Hedges says the 75th season features a theme of bringing people together and setting the stage for the next 75 years. “Fundamentally, theater at its best is a place where people can have a shared sense of September 2009

“We’re not in the theater business as much as the experience business,” he explains. “We’re expanding our view of the business beyond putting on plays.

An unseen portion of that is education. We’re addressing our community’s need to augment exposure to creative art. That’s deeply and fundamentally embedded in our mission.”

Akron Symphony’s exciting new season includes everything from masterpieces to blockbusters, showpieces to novelties.

First up is the Sept. 13 performance Northern Lights, which highlights the romantic, robust works of Scandinavian masters Grieg, Nielsen and Sibelius. Featured pianist that night is Philip Thomson, a faculty member at The University of Akron.

The Canadian-born Thomson studied at the University of Toronto, did his graduate studies at The Julliard School and gained worldwide attention for a recording of Liszt’s “De Profundis” with the Hungarian State Orchestra in 1990. Since then, he has recorded a number of critically acclaimed CDs and has continued to perform internationally.

Oct. 17. Then, on Sunday afternoon, Oct. 25, concert goers are invited to come dressed like their favorite movie character as they hear music from fantasy films like “Harry Potter,” “The Wizard of Oz,” “Star Wars” and “Twilight.”

Ticket prices for the first two concerts range from $20-$40. Tickets for the Sunday afternoon film fantasy event are $10-$15. Best Places to Watch the Race

T

he Road Runner Akron Marathon on Saturday, Sept. 26 is one of the most spectator-friendly races around, so even if you’re not running or working as a volunteer, you can still get in on the action.

Cascade Locks Park Association thinks the Mustill Store at 248 Ferndale St. is the best spot in town to watch the race. In fact, they’re offering coffee, juice and breakfast goodies from 7:45 until 10:30 a.m. for people who want cheer the runners on as they make their way down the Towpath.

If you want to catch the race at the start or finish, head downtown. Parking is free in one of the downtown Akron parking garages or surface lots, and you can watch runners from these spots: • 177 S. Broadway: Start line and mile 10.2 (when the course loops back around to the start)

“Stark Naked Salon”

howcasing the multimedia work of 11 Stark County artists who largely fly under the radar locally, the Massillon Museum’s “Stark Naked Salon” exhibit promises visitors can expect the unexpected.

Co-curators Alexandra Nicholis and Dan Kane say they selected artists who caught their attention over the past few years and “are on the verge of something big.”

Cooking With Wine

Raising A Glass To A High-Flavor Ingredient

W

hile you’re sipping your favorite wine and pondering what to simmer, stir and serve for dinner tonight, remember that cooking with wine can be a pleasure and an enhancement to good food and a fine meal.

The function of wine in cooking is to intensify, enhance and accent the flavor and aroma of food. Wine has three main uses in your kitchen: as a cooking liquid, as a marinade ingredient and as a flavoring in a finished dish.

Don’t go to extremes with wine! Remember to use care in the amount—too little is inconsequential while too much will be overpowering.

So-called “cooking wines,” typically salty with a multitude of additives, are best left on the grocery shelf.

An expensive wine is not always necessary, while a good-quality wine that you enjoy will bring out the best characteristics of your dish.

“If you do not have a good wine to use, it is far better to omit it, for a poor one can spoil a simple dish and utterly debase a noble one.”

When listed as an ingredient, wine is often mentioned in the most generic of terms. When a recipe states “1 cup of dry

white wine” you’re left to wonder “Can I use a $5 wine, or should I go all out for better flavor and use a $25 bottle?”

Here’s what I typically pick when following a recipe or crafting one that calls for wine: • In a recipe calling for dry white wine, I use a high-quality American Sauvignon Blanc.

• If the dish has spicy flavors, I choose something more aromatic such as a Gewürztraminer or Riesling, perfect for counterbalancing dishes with bold flavors.

• In a recipe calling for dry red wine, I think about the heartiness of the dish. If the dish is long-simmering (beef stew), I choose a hearty red such as a Zinfandel or Petite Syrah. If the dish is lighter, a Pinot Noir will do nicely.

Using the Wine U

se wine in cooking only when it has something to contribute to the finished dish. The wine should simmer with the food, or sauce, to enhance the flavor of the dish. As the wine cooks, it will reduce and become an extract, adding flavors.

When adding wine to a sauce, make sure you allow most of the alcohol to cook off or the sauce may exhibit a harsh, slightly boozy taste.

When is enough enough? As a general rule, after adding the wine, cook the sauce until it reduces by about half, keeping the pan uncovered. While the alcohol burns away, the flavor of the sauce will become more concentrated.

In General Terms All wines have acid, so when cooking with wine, be sure to use nonreactive cookware (such as stainless steel, enamel cast iron or glass) to avoid discoloration when the acid from the wine hits the pan.

Playing with the Flavors When you’re ready to begin experimenting with wine and cooking, here are some basics to remember.

2 whole chicken breasts, split, with skin and bone left on Sea salt and freshly ground black pepper Flour for dusting chicken 1/4 cup extra virgin olive oil 1/2 cup chopped yellow onion 1/3 cup peeled, chopped carrot 1/3 cup chopped celery 2 Tablespoons coarsely chopped Italian (flat leaf) parsley 2 garlic cloves, peeled and chopped 12 ounces white button or cremini mushrooms, cleaned and sliced 15 ounce can diced tomatoes 1 cup dry white wine 1/3 cup pitted Kalamata olives, halved, optional Cooked egg noodles

Capitalize on these subtle food flavors that often come through in wine...

1 Sprinkle chicken with salt and pepper, then dust

• White wines have hints of melon, apple, pineapple, pear, citrus, vanilla, caramel, olives and mushrooms

2 Heat oil in a large skillet over medium-high heat.

• Red wines hint of berries, peaches, currants, plums, cherries, oranges, chocolate and coffee Choose the type of wine (dry versus sweet) depending on the flavor you want in the dish you’re making. A very dry wine will have limited natural sugars remaining, while a sweet wine will contain a larger amount of natural sugars from the grapes.

Common cooking sense will determine that a light-flavored wine will do best in a delicate flavored dish, and bold-tasting wines will do well in a, you guessed it, boldly flavored dish.

Also, a dish heavy on spices will need a full bodied wine to stand up to it.

Add the chicken, skin side down, and sauté until golden brown. Turn chicken and sauté 3 additional minutes.

3 Transfer chicken to a large plate.

4 Add the onion, carrot, celery, parsley and garlic to the skillet and sauté mixture for 2 minutes.

5 Add the mushrooms and sauté for 10 additional

minutes until golden, then add the diced tomatoes with juices and the wine. Gently boil mixture (sauce) until reduced by half, then return chicken to skillet.

6 Cover, reduce heat to medium-low and simmer until chicken is cooked through and tender, about 10 to 15 minutes. Gently stir in olives if using.

7 Serve atop egg noodles in individual wide bowls.

Serves 4.

ounded in 1973, Chateau St. Jean is one of the wineries that put Sonoma on the wine map. Margo Van Staaveren was named Winemaker of the Year for 2008 by Wine Enthusiast Magazine. Van Staaveren has been crafting and blending outstanding wines at Chateau St. Jean for more than 27 years.

The 2005 Sonoma Cabernet Sauvignon features 88 percent Cabernet Sauvignon blended with 10 percent Cabernet Franc and 2 percent Petite Verdot. After aging in French and American barrels for 15 months, the wine is assembled and bottled. The result is a beautifully crafted wine that is “rich and juicy with black cherry and plum flavors and has bright berry flavors that linger throughout the long finish.”

This wine pairs well with beef or pork tenderloin, braised ribs and smoked cheddar cheese. It retails for about $27.

The 2007 Sonoma Chardonnay has grapes that are sourced from the Carneros, Russian River Valley, Dry Creek and Sonoma Valley. These are outstanding growing areas that can offer excellent grapes to produce this type of wine. The Chardonnay is barrel fermented and aged in French, American and Hungarian oak barrels for five months. About 60 percent of the Chardonnay underwent malolactic fermentation, a process that reduces much of the harshness of many wines.

This wine pairs well with shrimp, scallops, fish, chicken, pastas with light sauces and Gouda cheeses. It retails for about $16.

New Terrace at Beau’s Grille The Terrace at Beau’s Grille, the latest addition to the Hilton Akron/Fairlawn, opened in May and features fine outdoor dining. “There is nothing else like it in all of Northeast Ohio,” says Chef Beau Schmidt, who has created a new terrace menu. The menu features new entrees for the fall season along with old favorites and the complete dining and liquor selections offered inside the restaurant.

Located at the front of the hotel, the terrace features an elegant combination of rough stone and custom iron work. A rustic stone fireplace adds warmth while banquet seating allows for parties of various sizes. A cozy sunken area is available for guests to relax with a cocktail and enjoy the fire or watch highlights of the big game. A hand-painted ceiling mural, oversized art and rich cherry wood finishes along with a built-in heating system make the terrace a comfortable dining spot location from early spring through late fall.

A

n affinity for the outdoors and a love of canoeing led Michael Slyker to build his first stick-and-canvas boat when he was in high school. A self-described “history nut,” he also began constructing muskets and guns for French and Indian War reenactments. As he became more skilled in woodworking, Slyker tried his hand at furniture making, but quickly discovered the trade didn’t suit him. Then, in the 1990s, he restored an old canoe, and the hobby evolved.

“There’s just something about the wooden canoe, and when you’re out on the river in one of those,” Slyker explains. “It’s all about the aesthetics—much quieter.

It’s almost like sitting in the belly of an animal; you feel more a part of nature.”

Slyker and his wife, Jody Byrne, are the founders of Daybreak Lavender Farm, which they operate in Streetsboro. In 2001, Slyker established his own business, WoodNymph WoodWorks, for his canoe building and restorations. He created his own mold for the WaterSprite, a traditional wood-and-canvas canoe inspired by the lines of an early-1900s model created by Ev Garrish, one of the first commercial builders of wooden canoes. According to Slyker, developing the mold is actually more difficult than making or building the canoe.

When Slyker first began building the form, or mold, for the WaterSprite, he says a number of things—like steambending the wood—scared him away.

But after a little practice, he mastered the process. With the exception of milling out the lumber, which can be noisy, the process is quite tranquil.

Alone with his canoes, listening to music and breathing in the smell of the cedar, Slyker is at peace.

Visit the Workshop Located at 2129 Frost Road in Streetsboro, Michael Slyker’s workshop is open to the public Wednesdays-Saturday, 10 a.m.-4 p.m., though it’s best to call ahead.

The WoodNymph WoodWorks Annual Open House is scheduled for Oct. 2, 3 and 4.

Hours are Friday, 12-6 p.m.; Saturday and Sunday, 12-5 p.m. The event will feature live demonstrations, a workshop tour, historic canoe exhibit, restoration tips and more.

Michael Slyker is a man of many talents and hobbies. In addition to crafting his canoes, he also constructs muskets and guns for historic reenactments, and operates ham radios. Slyker’s workshop is a collection of all these pastimes. There you’ll find a wall of ham radios alongside woodworking tools, canoe parts and other items.

In fact, the space is sometimes referred to as “Michael’s World” or “Michael’s Playpen,” as the ladies who work downstairs making soap for Daybreak Lavender Farm call it. “We did have open houses here for the lavender farm twice a year, and I was always set up doing something in the shop,” Slyker explains. “It gave the men a place to go while the women were shopping.”

Constructing the wooden part of a canoe doesn’t take very long, Slyker explains. It’s the preparation that is the most time-consuming. “You could have a canoe built in three or four days once you have everything milled out, which takes about three days,” he says. “What takes the most time is rubbing filler into the canvas. It takes a month to soak in. Painting and varnish also takes a long time—a couple of weeks.”

Most of Slyker’s experience is actually with restoration rather than new construction. In fact, he learned how new canoes are built by restoring old canoes to see how they’re put together. As a member of the Wooden Canoe Heritage Association, Slyker is listed on the organization Web site’s builder/restorer list. “The canoes kind of find me,” he explains. “As far as I know, there’s only one other person in Ohio who restores canoes.”

For Slyker, the satisfaction comes from giving new life to old boats. “My current canoe is a 1920 Old Town that I restored,” he says. “They can go on forever.”

Performing arts workshop brings out the best.

S

eeing Durrell LeGrair’s students learn new rhythms, add hand motions and head movements to their footwork, you might get the idea you’re watching an exercise class.

Hearing them add inspiring words to their steps, then practice the sequences again and again, you realize that this is a serious rehearsal.

LeGrair’s standards are high. He demands sharp focus and works to motivate the group to move together with a military precision and an artistic passion.

“That’s the beauty and the agony of Sunday,” he reminds his step/cadence class just a few days before their public performance. “On Sunday, you’ve got one shot.”

Stepping is one of 16 different artistic disciplines taught at the weeklong Youth Excellence Performing Arts Workshop, YEPAW for short.

The brainchild of Leslie Parker Barnes, minister of music at Arlington Church of God, YEPAW began 20 years ago as an outreach to about 50 kids in the basement of her East Akron church. This year, more than 420 students participated in the workshop.

YEPAW Turns 20

W

hile YEPAW targets inner city and AfricanAmerican kids, young people from any group or background are welcome. Most come from neighborhoods in and around Akron, but this year there were delegates from as far away as Barbados and Grand Cayman.

Excellence, in arts and in life, is the ever-present goal at YEPAW. The instructors mirror that goal. Elec Simon, a five-year percussionist and tapper in Broadway’s “STOMP,” teaches drum line while he’s at home in Akron during a production break. Retired art professor Joyce Edwards and her daughter Julie Hogarth (whose button design was chosen for First Night 2010) teach fine arts.

The instructors’ list of credentials and accomplishments is long. “I’ve learned if you want to be great, you surround yourself with great people,” Barnes says.

Dance, mime, orchestra, drama, sign language, song writing, creative writing, photography, videography, extemporaneous speaking and newsletter are among the other classes at YEPAW.

The Power of Standing Together

W

hile YEPAW helps young people develop their individual strengths, everybody sings in the mass choir. “It helps them see the power of standing together,” Barnes says.

This year, the choir learned 11 new songs, including one in Japanese. On Wednesday, they recorded a CD together. On Sunday, July 26, they performed live at The University of Akron’s James A. Rhodes Arena.

In addition to choir rehearsals and classes in their artistic major (twice daily) and secondary focus (once a day), YEPAW participants had anger management classes and times of renewal with guest performances by community groups.

On Thursday, students marched to the Haven of Rest, to sing and deliver undergarment donations, and to Children’s Hospital to perform musical selections and dance routines on the lawn.

residential component of YEPAW was added in the late ‘90s to give teenagers the chance to envision themselves in college. It’s also a chance for YEPAW leaders to address other real life issues with the kids.

One year, after a guest performance by the L.I.O.N. Players (a local dance/drama troupe, whose themes deal with sexual choices), one of the participants told her leader that she was pregnant. “It’s real life, and we deal with it,” Barnes says.

“You are purposed (people) and you have to fight for it, every day,” Barnes tells the group during a difficult time at one of their final rehearsals. “So here’s the real deal: Somebody else will have to give up on you, but it won’t be me.”

Respect yourself and others.

Take an honest look at how you treat other people.

Those who truly respect themselves, will treat others with respect.

Excellence should be at the center of your character.

True character is what you do when you think nobody is looking.

Attitude is everything.

You don’t have to be the best or the brightest, but you should approach life with a “teach me, show me” attitude.

The “m” has a double meaning. Become proficient enough at something that you can use your skills to teach or serve others.

A Different Perspective The Yoder family shares a glimpse into the life of the New Order Amish.

N

oah and Mary Yoder are members of the New Order Amish sector in Holmes County, where they live on the family farm with their six children, ages 6 to 22. Much of the couple’s life right now is consumed with planning the upcoming wedding of one of their daughters. Although the wedding isn’t until June 2010, planning an Amish wedding takes time and preparation. “Everything well planned is well done,” Mary says.

The Yoders expect 500-550 guests for the wedding, which will take place at their home. And as is the Amish custom, the family will prepare all of the food in the three days leading up to the wedding. Most Amish families have chicken as their wedding meal, but Mary says her daughter prefers “poor man’s steak,” which they will serve instead.

Thankfully, Mary doesn’t have to handle all the wedding preparations herself. “I have lots of people to help me—a lot of family, friends and neighbors,” she say. “They all come and help me with everything that needs to be done.” In addition, any ministers in the family help the day of the wedding by performing the devotion part of the ceremony.

It’s not uncommon for weddings or religious ceremonies to be held at home. In the Amish culture, multiple families form a district, and each family takes a turn holding church services at their home throughout the year. So

many families come together that each family usually only has to hold service at their home once or twice a year. One week is devoted to church and the next week is devoted to Sunday school, which has separate classes for children and adults. The family who holds church services one week usually holds Sunday school the following week.

Because the Yoders live on a large farm, they have plenty of room to host church services and weddings. The family has multiple buildings, which they use for their family dairy business and Mary’s catering business. Their New Order Amish beliefs allow them technology that other Amish sectors do not embrace. The Yoders have machines to milk their cows, fans in the building where Mary runs her catering business, and generators that run the machines and their battery-operated lighting system.

The Yoders are accustomed to having non-Amish visitors because one of the biggest clients for Mary’s catering business is Amish Heartland Tours, which brings visitors into the home to experience a real Amish meal. Recently the family welcomed extra-special visitors, the Duggar family from TLC’s “18 Kids

and Counting.” The Duggars traveled from Arkansas to visit Amish Country and spent a day with the Yoders. Mary says it was interesting to discover how much the two families have in common. Both families are very religious, and the Duggars explained that they read a chapter of Proverbs every day, something the Yoders have since incorporated into their daily routine.

Everyone had a great time during the visit, though Mary would have been more comfortable without the video cameras. “We clicked right away with Mrs. Duggar,” she says, “but every time we were talking there was a camera guy there trying to get what we were saying.”

Contrary to what most people believe, Mary says the Amish are allowed to have their pictures taken and to be videotaped, most just prefer not to be. She says the discomfort comes more with having images on display rather than the actual taking of the picture, and though she has family photos, she does not hang them in her home.

Other distinctions between New Order Amish and other sectors can be found in their clothing and grooming habits.

The main difference is beard length.

Unlike many Amish sectors, in which men never trim their beards, male members of the New Order Amish may trim their beards. For men, the clothing is the same regardless of age or Amish order, and no colors are off limits.

All Amish women, however, avoid wearing colors that attract attention.

Instead, they opt for pastels, navy blue

or black. Another similarity among the different orders of Amish women are that they all wear bonnets “to symbolize that their husbands are over their heads and Christ is over their hearts,” Mary says. In the New Order Amish, women fasten their dresses with hidden zippers, rather than pins, and they wear capes to indicate modesty. For young girls, their dresses are fastened with buttons down the back, and they do not wear capes until they are 10 years old.

Nutrition on the Run Not all energy bars are created equal.

In Search of the Perfect Energy Bar?

I

t’s one of those days. A late start eats up all the time you might have spent enjoying a healthy breakfast...or you’ll have to grab a quick bite in the car if you want lunch. What do you do?

More and more people are turning to power bars for an energy boost. Like granola bars on steroids, these highcarb and protein bars were once the snack of choice for long-distance athletes who bought them at health food stores.

Now, you can find them everywhere—even at the gas station. They’re typically sold individually—even at the grocery store. And there are dozens of brands and multiple flavors to choose from.

“People think there’s something magic about the protein in a protein bar,” says Dawn Saurer, a registered, licensed and certified nutrition support dietician at Summa Health System. “There’s not.” Some are “closer to glorified candy bars,” she adds.

Depending on your individual lifestyle and nutritional needs, Saurer thinks they do have their place. In fact, she often keeps a bar in her purse or desk at work.

What does she suggest in a power bar? Look for moderate calories (200 to 300) and a minimum of 5 grams of protein—7 to 10 would be even better. (For comparative purposes, consider that one ounce of meat equals 7 grams of protein, so a 3-ounce chicken breast provides you with 21 grams of protein.)

Also, consider the number of calories in the food that come from fat.

Finding the fat calories in a protein bar involves doing a little simple math. Divide the fat calories by the total calories and choose a bar that gets less than 30 percent of its calories from fat. For example, in a 300 calorie bar, the calories from fat should be about 100 or less.

When it comes to fiber, really high-fiber bars (which usually have the word ‘fiber’ in their name or brand) are good for people who want to lose weight, Saurer says. But be careful if your system is not used to consuming lots of fiber.

One piece of whole grain bread has 2 to 4 grams of fiber. So, 2 grams of fiber in an energy bar isn’t bad; 4 grams or more is even better. In a high-fiber bar with 9 grams of fiber, for example, you might want to try eating just half a bar initially to see how your system handles it and work your way up over time.

The source of the fiber is another thing to consider. Some fiber comes from the

food itself, and some comes from fiber additives. Natural fiber in the food is preferable to added fiber.

As for the amount of sugar, look for a bar that gets only about half of its carbohydrates from sugar. So, in a bar with 26 grams of total carbohydrates, choose one with around 13 grams of sugar. If most of the carbohydrates in your bar are coming from sugar, you might want to find another bar, Saurer says.

Remember, one of the reasons you’re eating is to get your blood sugar up.

But some kinds of sugar are better than others. Given the choice, opt for regular sugar or brown rice syrup over highfructose corn syrup.

Overall, power bars with a decent protein content can be a good tool, according to Saurer, but they should not be a substitute for meals all the time, and “anything that’s closer to whole food is better for you,” she adds.

You might try using half a bigger bar as a snack, or opting for a full bar along with yogurt and fruit as a meal replacement. And most power bars are not a good choice if you have diabetes.

Whole foods (like peanut butter on whole wheat bread, a turkey sandwich, cheese and crackers, or apples, carrots and yogurt) are probably your best bet.

But a thoughtfully chosen power bar is better than a candy bar, and it’s better than typical high-fat fast food meals when you’re looking for nutrition on the run.

When it comes to hiking, a good pair of socks will: • Wick away moisture to keep your feet dry. Nothing is worse than walking around all day with soaking wet feet.

• Regulate the temperature of your feet. Warmth is important, but you don’t want to be sweating.

• Promote circulation. Avoid socks that are too tight and can possibly cut off blood flow.

• Provide extra cushioning where needed. For hiking, be sure to choose socks with sufficient padding on the forefoot and heel.

Avoid 100 percent cotton socks, which aren’t as good at wicking away moisture. Cotton tends to absorb sweat, but after while you’ll have problems. Instead, look for socks made of wool or CoolMax(r) polyester, or a similar blend. These fabrics are better at wicking, and they get moisture to the outer part of the shoe quicker so it can evaporate. Because some wool can be itchy, merino wool or a similar blend is best.

One more note about footwear: Wear your boots a few weeks before you’ll be hiking in them. You’ll want to break them in before hitting the trail, so the shoe flexes properly as you walk. Your feet will thank you.—KL

orking in an independent and assisted living facility for nearly seven years has given me a lot of insight on the seniors. I’ve listened to their stories, witnessed their troubles and shared their joys. The residents I work with are not just people to me, they have become family. And for a lot of them, that is exactly what they need.

Older generations cherish their family. For some of them, family is all they have left to enjoy, well, that and Bingo.

They love to brag about their kid’s promotion at work or their grandkid’s fullscholarship to college. They take great pride in seeing their loved ones succeed in life.

They all make the best of it, and most of them look forward to their time to sit down, talk to their friends and enjoy one another’s company. They love to talk and tell stories, and the dining room is where they get a chance to tell them. When they were younger, mealtime discussions focused on the day’s events. Now during their meals, instead of talking about the present, they usually talk about the past. They love to reminisce, and I am lucky enough to work in the dining room where I get to hear their stories.

Most of their stories recall their time growing up and how they would swim in the Monongahela River every summer and ice skate on it every winter.

Some of them talk about how they met their wife in eighth grade or how their husband was the greatest man they ever knew. Some of their stories are about WWII and how they were lucky enough not to have to go or how some of their friends weren’t lucky enough to make it home. Others talk about a major surgery that saved their life or how their cancer has finally (and thankfully) gone into remission. They’re thrilled when someone takes the time to sit down and talk with them, and I am more than happy to be the one to do it.

And it’s fun. You can almost see the residents getting younger as they tell their stories. Their eyes brighten and they get a little twinkle in them. They get a spurt of energy that makes them seem like a kid who is telling a story about their exciting day at school. Their past is what defines them. Seeing that side of them makes me appreciate them and the people they really are. I wish I would have listened to my grandparents’ stories while I was growing up. I like to make up for it by listening to my “adopted” grandparents—all 80-or-so of them.

Unfortunately, a lot of the younger generations don’t think their grandparents are cool, nor do they have the patience to sit down and listen. Most of them would rather run around while their parents are visiting and repeatedly ask if it’s time to go home. It’s not even the

grandkids who don’t have the patience though, sometimes it seems like no one really does. When other family members come to visit they are more worried about the grocery shopping or the laundry they need to do. To a lot of people, it’s like their visits are more of have-to-do than a want-to-do.

That is not to say every family who has a relative in a nursing home is like that. I see some family members once a week, and a few of them once a day. To the family members and friends who take September 2009

You probably don’t know how much it really means to them. More people should take some time, relax and visit their parents or grandparents. If you don’t have an older relative close to where you live, consider volunteering at a nursing home. More people need to listen to the elderly and their stories.

Strong Bones, Healthy Heart One of the most abundant minerals found in the human body, calcium is essential for the human body’s growth, maintenance, and reproduction.

Not only does calcium help form and maintain healthy teeth and bones, it also helps with blood clotting, nerve signaling, muscle contraction and relaxation, and the release of certain hormones.

It is also needed for a normal heartbeat. And, of course, calcium is essential in the prevention of osteoporosis, a condition that results in fragile bones with a tendency to break.

Calcium intake becomes particularly important as we age. In general, adults should get 1,200 mg of calcium each day, but no more than 2,000-2,500 mg a day of calcium from dietary sources and supplements. While calcium supplements are a great way to increase your calcium intake, it’s best to obtain calcium from natural food sources whenever possible.

The most significant source of calcium is dairy products. Milk and dairy products such as yogurt, cheeses, and buttermilk all contain an efficiently absorbed form of calcium. Milk is also a good source of phosphorus and magnesium, which help the body absorb and use the calcium more effectively. To utilize calcium more efficiently, Vitamin D is also essential. That’s why the milk you buy in the grocery store is fortified with Vitamin D. When purchasing calcium supplements, it’s important to choose those that also include Vitamin D. However, dairy isn’t the only source of calcium.

Green leafy vegetables such as broccoli, collards, kale, mustard greens, turnip greens, and bok choy or Chinese cabbage are all calcium-rich.

Other sources include salmon and sardines canned with their soft bones, shellfish, almonds, Brazil nuts and dried beans. It is difficult, however, to eat adequate quantities of these foods to achieve optimal calcium intake. In addition, calcium is added to products such as breads and orange juice to make them a significant source of calcium for those who eat little dairy.

Summa H ealth Syste m Pe rforms N ortheast O hio’s First Robotic Lobectomy

A

new robotic surgery being performed through the Summa Health System Institute for Minimally Invasive Therapeutics is giving renewed hope to patients with lung cancer.

That’s because Summa Health System recently became Northeast Ohio’s first health-care organization and one of only a handful in the nation to offer robotic lobectomy surgery.

Unlike a typical lobectomy, which requires the patient’s chest to be cut open through an incision between the ribs, the robotic procedure, performed at Summa Akron City Hospital, allows for the removal of an entire lobe of the lung through four small incisions in the chest.

Approximately 250,000 patients will be diagnosed with lung cancer this year. A patient’s best chance of cure is when the disease is detected in its earliest stages and can be removed surgically. A lobectomy is generally performed in patients with early stage lung cancer.

“The robotic lobectomy is a significant advance in the treatment of early stage lung cancer,” says Summa Cardiothoracic Surgeon Dr. Eric Espinal. “Lung cancer kills more people each year than breast, colon and prostate cancer combined. It is our hope that a more minimally invasive option could allow a greater number of patients to undergo the procedure while

resulting in less pain, a shorter hospital stay and more rapid healing.”

There are several benefits to the robotic approach. For example, recovery from an open-chest procedure generally takes eight to 12 weeks; however, following a closedchest procedure, recovery is closer to three to four weeks.

Also, while additional research is needed, it is believed that concomitant treatment, such as radiation or chemotherapy, can be implemented sooner with a lower risk of complications or side effects.

“This is an area of intense study at Summa Health System,” Espinal adds. “We are carefully studying the effects of new approaches to lung cancer through participation in the Society of Thoracic Surgeons Registry, which allows us to compare our outcomes with those from lung cancer centers around the country.”

Current research indicates that the factor with the greatest impact on risk of lung cancer is long-term exposure to inhaled carcinogens, which is often achieved via tobacco smoke. Other possible causes of lung cancer include exposure to asbestos, exposure to radon gas and genetics/viruses that make some people more susceptible to lung cancer.

eing No. 1 in the world is not all its cracked up to be. Just ask Bob Mollard, president of Mollard Conducting Batons in Bath Township. According to Mollard, being at the top of the Conducting Baton manufacturing industry, it can be down right quiet. You would think that if you are the world leader in your industry, have your international headquarters in the Akron area, and ship hundreds of thousands of your product worldwide, at least some politician or civic leader would declare Mollard Conducting Baton Day, but no one has. So quiet is Mollard’s company that he doesn’t publicize the business outside of its e-commerce Web site, where thousands of conductors and would-be conductors order their batons daily.

Twenty-seven years ago Bob Mollard did not start out to form the behemoth of conducting baton companies at all. In fact, that was the farthest thing from his mind as he pursued a master’s degree in Music at the University of Cincinnati. The impetus included a homework assignment, a bottle of wine and a wood screw from the junk drawer in the kitchen. “I’ve always been handy,” Mollard admits, “and I built and fixed things around the house.” When Dr. Leahman assigned his students the task of finding a lightweight, balanced conducting baton for his class, Mollard scoured the local music stores for an instrument that met the teacher’s specifications. None could be found.

As he sat pondering where to go next while sipping a small glass of claret, he noticed the wine cork lying in front of him. After a trip to the hardware store to buy some dowels and sandpaper, Mollard fashioned the cork with sand-

paper into a football shape, tapered the dowel and inserted it into a hole drilled into the cork. But it still didn’t feel right. That’s where the wood screw came in, as he screwed it into the end

who couldn’t find satisfactory batons either, asked him to make some for them as well. You can imagine the number of wine bottles that had to be opened for the project. At first Mollard didn’t charge for his creations, but he began to realize that he may have a business on his hands when conductors from all over started to ask where they could buy the lightweight, balanced conducting baton. He engaged the support of his mother in Akron to help set up the business. She took over order taking, shipping and billing, while Mollard and his then-wife, Connie, handled the manufacturing from Cincinnati.

Soon, the distance between manufacturing and the rest of the company became too great so the pair moved north with the understanding that when one landed a job in Akron, the other would run the company. Bob got the job as musical director at First Congregational Church. In subsequent years, he would also be named Senior Pastor at the church, a position he held for two years. He now runs Mollard Conducting Batons full-time, but still plays organ at Faith Lutheran Church in Fairlawn, is a member of the Akron Symphony Orchestra, and conducts and plays all over the area.

A

s the Hartville Elevator Company celebrates its 100th anniversary, the yellow building remains a visible landmark in the village’s downtown district. Though the business has had to change its focus through the years, current owners Ed Ringer and Craig Wellspring say its original purpose is not forgotten.

The Hartville Elevator Company has been an active feed mill since Charlie Kannel and Louis Pontius opened it in 1909. Back then, local farmers brought their corn to the shop where it was dumped into a hammer mill to make the feed. The farmers then took it home for their livestock.

For Ringer and Wellspring, the company is more than just a village icon, it is also a longtime family business. In 1950 Virgil Ringer and Hubert Brumbaugh, Ed Ringer and Wellspring’s father and father-in-law, respectively, bought the mill. Thirty years later, the sons took over the business.

The mill is still in operation, though the type of production has drastically changed within the last two decades.

Farmers hardly ever bring in their own corn to be processed; now the mill makes its own Just-Right bagged feed, which is sold in the store’s front office and is shipped to locations throughout Ohio. The feed is no longer used for just livestock, either. Today the business also makes special bird feed, some of which is created by veterinarians.

After suffering chest pain for months, Susan Magoline had a stress test to determine the cause. Her test results were so abnormal, she was immediately rushed to Summa Akron City Hospital’s emergency department.
