Drivers, start your engines! the downfall of the competition. On the dysfunctional teams, everyone scattered after first practice and plotted the downfall of other teammates who were getting more seat time. Another habit of a highly successful team was that they met every morning for breakfast to plot out the day.

Back-markers (those dysfunctional teams) showed up late at the track and missed half of first practice. I’ve been on both.

Memorial Day Sunday 2016 marks the 100th anniversary of the running of the Indianapolis 500 at Indianapolis Motor Speedway. For many years, however, the race was really run from right here in Akron, Ohio.

I first got involved with IMS in 1966, when, as editor of a motorsports magazine, I covered the race and the full month of May leading up to the Memorial Day Classic. This was at the beginning of the Firestone vs. Goodyear tire wars that lasted well into the ‘70s.

Firestone had been the dominant winning tire for years when Goodyear decided to move in. The last time Goodyear won the Indy 500 was in 1919. After balloon tires were introduced in 1930, Firestone came to dominate the race for over 35 years.

By the 1960s, Firestone was going through financial difficulties and could not withstand the juggernaut Goodyear represented.

Goodyear began to “buy” drivers to switch from Firestone to Goodyear tires for the 1966 race. They had a few takers, but none of the front line drivers. When A.J. Foyt switched to Goodyear for the 1967 race and won it, though, many other top drivers joined him. All, that is, but Mario Andretti, perhaps the best all-around racing driver in history. When Firestone got out of making tires for the Indianapolis 500 in 1972-1973, Andretti drove for Parnelli Jones (remember the first turbine car?) who owned a string of Firestone Tire Stores all over the west.

Parnelli just couldn’t bear to put his archrival—Goodyear—on his race cars. This was the beginning of the age of TV in auto racing, so brand image was important. Parnelli tried to buy the molds and patents from Firestone so he could make his own racing tires, but by that time even Andretti had signed with Goodyear.

The 1960s were one of the most interesting and innovative periods in worldwide motorsports; I saw the last classic Indy Roadster (engine in the front) run in 1966 and the introduction of wings on the front and rear of race cars. Technology spread quickly

throughout motorsports in the U.S. and Europe, making some of the cars look very much alike. I was privileged to cover the period when my normal beat included many Formula One races run at Watkins Glen, New York and Mosport, Canada; IndyCar races at Indianapolis Motor Speedway; Mid-Ohio and Can-Am Sports Car Races at all of the above and Stardust International Speedway in Las Vegas. I got to know some of the drivers and took many, many photographs. I still have 14 rolls of Tri-X that I’ve never developed from the inaugural 1967 Canadian Grand Prix, which was run at Mosport International Speedway.

As I was covering all of these races, I began my own racing career. Journalists then and now don’t make much money. My first race car was a well-used 1960 BMC Cooper Formula Jr. that I bought locally from an ad in Road & Track magazine. From there, I was on the road with my own racing team for many weekends throughout the year. The difference between covering races as a journalist and as a racing team is that as a journalist you go alone, but as a racing team you can take the whole family with you. Cheap labor.

As I progressed in my racing career, I traveled to many races alone. I thoroughly enjoyed the racing and all of the trackside activities, but the hassle of getting to the racetrack, getting my credentials and vying with other drivers for track time sometimes didn’t seem worth it. On good teams, everyone usually went out to dinner after first practice and plotted

I stopped covering racing years ago, but I was involved in the birth of modern racing cars. You see, in 1961, Jack Brabham, then leading the European Formula One Championship, entered his small rearengined Cooper Formula One Car in the Indianapolis 500 where all of the other cars were the standard—for the time—frontengined roadsters in which the driver sat high off the ground. All of the Indy establishment (a conservative bunch if there ever was one) made fun of the little underpowered European green/blue car. The race had been on the Formula One calendar for years, but nobody from Europe had bothered to enter until Jack Brabham. After Brabham, who finished 4th in the race, nothing much changed at the Indy 500 for the next couple of years, until Colin Chapman entered a purpose-built, rear-engined Lotus car for World Champion Jim Clark in the 1964 Indy 500. The car qualified on the pole, but went out with engine troubles. The next year, Clark won the race and ended the roadster era, except for 1966. That’s when I started covering the race.

By that year, only one front-engined roadster qualified for the race. Every other team either bought or built rear-engined cars. Three years later, Formula One cars sprouted wings on the front and back. And that’s the way single-seat racing cars have remained since, with some modifications over the years.

So, you know where I will be this Memorial Day Sunday: sitting at home in front of my big screen TV with friends and family, watching the 100th running of the Indianapolis 500. I’m glad I won’t be at the race. I’ve done too much of that in my lifetime.

Two local groups recently installed a log cabin on Cascade Plaza in downtown Akron. Applications for

a miserly, but ultimately lovable hermit to occupy the cabin are now being accepted.

Within the span of six hours, two Akron children were robbed of their hoverboards. Police have launched

an investigation into whether our bright, shiny future may, in fact, be a dystopia.

A University of Akron player mistakenly shot his teammate after confusing his friend for a burglar. The

victim, who’s expected to make a full recovery, complimented his friend’s vigilant defensive game.

Representatives from the University of Akron recently attacked a Beacon Journal report on the school’s enrollment woes. The

move particularly impacted UA’s journalism department, which now counts its fall enrollment at -4.

Endangered snow leopard cubs born at the Akron Zoo For the first time in its history, a litter of three snow leopard cubs has been born at the Akron Zoo. The three cubs, born March 5, 2016, are currently off exhibit in a private cubbing area with their mother. A naming contest will be announced in a few weeks.

Tradition in a Glass It not only reminds us of the year we went and saw the races, but of all the history of the event. The back of the glass lists each year of the Derby and the year’s winner. Reading through the list with my father, he told me about the year he went. He still has the glass itself. We pulled it out of a tucked-away spot in a cabinet and compared the list on its back with our brand-new glass. He then had me pull two more glasses out. These were his aunt and uncle’s. They had attended the Derby several times decades before. Each of these Mint Julep glasses has survived to help tell a little of the story of that day in the sun. The drink and its container are a part of the narrative and have been for decade after decade.

Clad in a brightly colored spring dress, strappy sandals and a large flouncy hat, I followed the well-dressed mass of people down through the tunnel. Tightly packed, all I could do was keep one hand on my hat and the other clasped in my husband’s. Through the fedoras, feathered fascinators and other floppy headwear, the light peaked in and we emerged. Check it off the list of things to do and places to see: we were at the Kentucky Derby.

The Kentucky Derby can trace its origins back to the 1800s, when the track in Louisville first came to life. Churchill Downs was started by a descendant of William Clark—half of the famed explores, Lewis and Clark. His grandson, Colonel Meriwether Lewis Clark, was inspired by the races he had witnessed in Europe and decided to make them a part of his home’s culture. In 1875, the first race took place on May 17. The winner, a horse named Aristides, ran 1.5 miles before 10,000 spectators.

Ever since, the race has captured the attention of viewers near and far. They flock to the beautiful grounds each May and cheer until they no longer can. Bets are made for horses with names like Dust Commander, Secretariat, Ferdinand, Thunder Gulch and I’ll Have Another (all winners of the Derby throughout the years). The entire atmosphere is charged with energy as traditions come to life.

Though I will admit that it can be a challenge to actually see a horse in the flesh, there are many other derby traditions you can witness.

One such tradition is contained in a sweating commemorative glass, held by nearly every visitor—the Mint Julep.

The Mint Julep is a tangible link to the derby.

It is a vital part of the equation that makes up the event. The bourbon-based drink has been consumed by patrons at Churchill Downs throughout the years and has become just as much a part of the experience as donning an elaborate hat. According to the Kentucky Derby’s official website, approximately 120,000 Mint Juleps are served each year during the two-day period of Kentucky Oaks and Kentucky Derby weekend.

Trays of drinks, each sporting a tall stalk of mint, are carried throughout the stands. The scene is slightly reminiscent of the peanut vendors at baseball games. However, instead of loudly broadcasting their wares to the crowd, these beverages are accompanied by the sound of clinking glass and ice shifting.

Elegance rules the day at this sporting event, where the drinks are not served in plastic disposable cups. Instead, everyone is holding glassware—something I remember worrying about in combination with wearing sandals.

Word of warning: watch where you step because there is a lot of shattered glass mixed into the grassy infield.

If your glass survives the day however, it is a wonderful souvenir of the event. Mint Juleps are served in a glass that is specifically designed each year, creating a keepsake that visitors carefully carry with them all day.

Spectators who visit the grounds each year could have a timeline of their trips, displayed through 12-ounce glasses. Our 2015 glass sits in a place of honor on a bookshelf in our living room. With its cool-toned graphic design, it is an interesting mix of the modern day and the rich past of the Derby. The twin spires at the front of Churchill Downs are the main focus of the design—appropriate since the architecture first greets visitors to the race.

Sharing our stories of the same event, it felt like a bridge had been constructed from similar memories. There are many experiences that you can share with the generations before you—educational milestones, weddings and other timeless moments that we all enjoy throughout our lifetimes. However, how often can you attend the exact same event that your parent went to? Without the luxury of a time machine, this can be difficult. The Derby allowed us to do this though. My father went to the Derby, stood in the infield, strolled the grounds looking for an actual horse and brought home his Mint Julep glass—just like we did decades later. These shared experiences are a beautiful thing to me and help establish the Derby as an event that transcends time.

After the final race concluded and American Pharaoh received the wreath of roses, we shuffled through the tunnel again. The day in the bright Kentucky sun was over and we drove home with smiles on our faces.

This month’s issue is all about the classic cocktails that have been enjoyed for generations. During the research process, our editorial team kept linking the classic drinks with icons in our culture. It almost seems impossible not to. The Kentucky Derby is one of those events that has embedded itself into our culture and remained there. It is a constant point in the whirlwind of our constantly changing world. In a way, the classic cocktail itself allows us to keep a connection to the traditions of the past. Just slow down and sip on something that the generations before us sat and sipped too.

Heather Bullach / Inspiration abounds for museum coordinator /

“Try something new.

Take a class. Carve out some time to play. You never know where it may lead you.”

These inspiring words are the advice Heather Bullach has for anyone with a creative itch. Bullach is the Traveling Exhibits Coordinator for Massillon Museum (a.k.a.

MassMu). Born and raised in Northeast Ohio—as were her parents and grandparents—Bullach also teaches painting at her alma mater, Malone University, and is a painter herself, specializing in portraiture.

Her friends describe Bullach as innovative, driven and gracious, due to her strong competitive streak that is balanced by an easy-going and optimistic nature that looks for the best in everyone and everything.

She also likes to “think outside the box,” as is clearly evident in her artwork. Her paintings combine richly saturated hues, amazing shadow work and unusual snapshot poses to evoke a sense of movement and individuality in her subjects.

When she’s not at the museum, in the classroom, or in her studio, you’re likely to find her bicycling around town in fair weather or cooking up flavorful meals for her extended family. If you can’t seem to find her anywhere, she’s probably at home, curled up with one of the many books she’s bound to be in the middle of at any given moment.

What kind of training did you have for this kind of job?

HB: I have a Bachelor’s in Art from Malone University. I don’t have any training or background in museum work, but I previously spent five years working with Translations Art Gallery in Canton and 12

10-plus years with my own art business, both of which developed in me a lot of the tools I brought to my museum position.

Tell us about MassMu’s traveling exhibits.

HB: MassMu is just beginning to delve into creating traveling exhibits. I was hired to help with the development of one of our very first traveling exhibits, “Imagining A Better World: The Artwork of Nelly Toll.” Nelly Toll was a young Jewish girl in Nazi occupied Poland.

Forced into hiding with her mother, she was unable to go outside for 18 months, and created a series of bright, happy paintings and stories that provided an escape for her from the harsh reality she was experiencing. We have the amazing privilege of working directly with Nelly to create this powerful exhibit and are really excited to see her story shared with the world.

Have you always wanted to work in a museum, or did you have other career dreams and goals?

HB: I honestly never anticipated working in a museum. But when this job opportunity came my way, it was a perfect fit. I really love mixing some left-brained administrative work alongside my creative work as a painter. I love

being involved in the art world in a different capacity. And of course, the staff at MassMu is a dream team that I absolutely love working with.

You’re also an artist. What’s your favorite medium?

HB: My favorite medium is oils, though I also love pulling out my watercolors once or twice a year. Both are such a different process, and I love each for their unique approaches.

What is so compelling for you about painting portraits?

HB: I just love faces. I actually did not paint my first portrait until near the end of my college career at Malone University. But as soon as I painted my first portrait, I knew I was hooked. There is just something about capturing someone’s likeness and trying to capture the soul within that is unlike anything else.

Do you work from live models or photographs? Why? HB: I work almost solely from photographs, which I take myself. An hour-long photoshoot with a model is much more feasible than multiple, hours-long sittings. I love that technology allows me to pull elements from multiple shots [and] better capture fine details from close-up, high-res images. There is also an

emotion of a moment that may be missed in a lengthy sitting. I would not have considered myself a photographer, but I have learned to become one as part of my creative process. I have to be able to connect with my subjects in a way that I can carry into the painting.

As an artist, how does being around all that artwork influence your own artistic expression?

HB: I think that as an artist, anytime you are exposed to someone else’s artwork, or artwork in a larger context, you can’t help but be inspired or made to think about your art in a different way.

Old Man and the Sea Change / The origin story of a newly-tired phrase /

Occasionally a word or phrase will catch my attention and I’ll find myself needing to know more about it.

Any time this happens to me, the object of my curiosity is unfailingly familiar from countless encounters, and yet in that moment I feel like I’m facing it anew. And I’m not talking about two-dollar words either—I’m honestly telling you I have, within very recent history, become mildly obsessed with the word “cracker.”

But the phrase I’m interested in right now doesn’t involve crackers or edibles. The other evening, while watching television, I heard the phrase “sea change.” I wish I could recall the program so I could better provide context, but suffice it to say that the usage was in line with Webster’s succinct definition, “a big and sudden change.”

It seems like I’m hearing and reading “sea change” a lot more these days. A sociologist or cultural theorist may be able to put together some Big Ideas on why this is, but I’m inclined to believe the phrase is creeping close to the buzz word category the way that so many fine phrases have over the years. Like the sad march “low-hanging fruit” made to the 14

garbage bin of linguistics, I suspect “sea change” is fast sliding into the junk yard of jargon.

did not, however, draw a line between those two things at the time—I just thought it was a good album. (It is).

The first time I recall hearing the phrase was upon the release of musician Beck’s album, Sea Change. It was, in fact, a sea change for his career and personal life: The singer’s relationship with a longtime girlfriend had recently dissolved, inspiring him to abandon his trademark experimentalism and record a set of sparse, acoustic melodies with straightforward lyrics. Similarly, when I first heard the album, I was also in a state of flux, having lost my first real job and deciding to start an independent business, a coffee shop that, despite a few relocations and change in ownership, exists to this day. I

This morning, I sat down to do some research on this phrase that, by this point, I’m seeing and hearing everywhere and discovered that its origins are actually well-known: In fact, Google lists its etymology before the very first search result. “Sea change,” like so many phrases you’ve spoken today without realizing it, originates in the work of William Shakespeare.

(Others include “break the ice,” “wild goose chase,” “salad days” and “in a pickle.”) Its first recorded usage was in the bard’s magnum opus, “The Tempest,” where Ariel, singing a song

It’s a lovely phrase from a beautiful passage, far from the clunky, idiomatic usage talking heads drop onto the airwaves these days. Its one-time craftsmanship wasn’t lost on subsequent generations of writers, though, with Henry David Thoreau quoting the line in his book “A Week on the Concord and Merrimack Rivers” to describe the flow of actual water, saying: “So it flows on down by Lowell and Haverhill, at which last place it first suffers a sea change, and a few masts betray the vicinity of the ocean.” Ernest Hemmingway titled a story “The Sea Change,” and poet Ezra Pound wrote in his collection, “Lustra,” Full many a fathomed sea-change in the eyes That sought with him the salt sea victories.

In looking into this term, I also ran across headlines touting political figures as a sea change, educational policies as a sea change and the data market in a sea change. (There were also a few articles discussing changes at Sea World as a sea change, which I’ll admit is kind of clever.

I’m in another time of change in my life as I write this, having accepted a position at a magazine I admire a few hours up the road from the little farm my family and I called home for the past few years. We’re getting a house in the suburbs and sending our kids to strange, new schools. We’ll have Netflix again (you don’t get Netflix in the country). And while we’ll still be able, even expected, to return often to help my parents keep up the land, I won’t deny we’re leaving this home for another.

And while it’s exciting, a sweeping change to everything you know is also intimidating, like a wave crashing over a oncepeopled beach—scrawled with names and doodles, stacked with castles, impressed by frantic footprints—and wiping it all clean.

Yeah, a sea change. / Rodney Wilson is either a pig farmer who writes or a writer who farms pigs. Either way, he’s got a freezer full of bacon and a finished manuscript, and he’s trying to sell both.

Debunking Common Myths of Joint Replacement Surgery

By Jonathan Kase, MD Many people suffer from chronic joint pain yet won’t consider joint replacement surgery because of some common misconceptions. These mistaken beliefs prevent them from having an improved quality of life. It’s time to set the record straight on the myths and realities of joint replacement surgery.

Myth #1: I won’t be able to go up and down stairs after surgery.

We expect you to be able to go up and down stairs after total joint replacement surgery. In fact, one of the criteria for being discharged from the hospital is that physical therapists make sure you can navigate stairs.

Myth #2: I’ll have a lengthy hospital stay because of excruciating pain.

While some pain is to be expected after joint replacement surgery, there are many ways to treat it after the operation. When following a customized care plan, the typical hospital stay is two to three nights after surgery.

Myth #3: I should wait until I can’t walk before considering joint replacement surgery.

Joint replacement surgery is most effective for patients who are still active, but have limitations in activity due to pain or deformity from arthritic joints. To that point, the patient who can still walk, but is having increased difficulty going distances, managing uneven terrain, or standing for extended lengths of time, is an ideal candidate.

Myth #4: I’m too young (or too old) for joint replacement.

The younger a patient is having a joint replacement, the more likely it will need to be redone due to

wear. However, if one’s activities are markedly compromised, then a joint replacement should be considered.

Alternately, older age isn’t necessarily a limiting factor. It is more about the patient’s activity level and any coexisting medical conditions that dictate whether an older patient is a candidate or not.

Myth #5: I’ll have permanent restrictions after joint replacement surgery and will never be able to exercise or play a sport again.

With joint replacement surgery, certain activities are known to increase the wear and revision rate. I encourage patients to refrain from running and jumping; however, activities like golfing, walking, bike riding, and swimming, are all within reason for a joint replacement patient.

Myth #6: Recovery from joint replacement takes a long time.

The most challenging part of recovery is during the first three months. Most people return to independence at that point. There are still subtle improvements made in the months after that all the way up to one year following surgery.

Myth #7: I won’t be able to kneel on my knee replacement.

The knee incision is right in front of the knee where one kneels. Also, kneeling puts pressure on the metal and plastic parts in the knee replacement. This will not harm the knee replacement, so I allow patients to do it, if they please, noting that it will likely feel awkward and different to kneel on the replacement parts.

Yoga in the Galleries Close your eyes. Take a deep, cleansing breath. Focus. Stretch. Now, imagine you are in a quiet, peaceful environment where you are surrounded by works of art by some of the world’s most creative masters. It might seem like you are in a transcendent state of Nirvana, but you are actually sitting on your mat, experiencing Yoga in the Galleries, a monthly installment of the Akron Art Museum’s Live Creative program.

“We began offering yoga in the galleries in late 2014. It was so popular that we decided to offer it every month, usually on the second Thursday, at 6:30 p.m.,” says Dominic Caruso, Design, Marketing and Communications Coordinator of the museum. Yoga in the Galleries is usually held in one of the galleries with less foot traffic.

“We’ve also hosted yoga in the Karl and Bertl Arnstein Galleries, and in the Judith Bear Isroff Gallery, when artist Charles Beneke’s installation, ‘Specter,’ was on view last year,” says Caruso. “In fact, Beneke is a certified

yoga instructor and even led a few classes in the gallery where his artwork was installed.”

The hour-long, Hatha-focused yoga classes are taught by instructors from Nirvana Yoga of Richfield. “All of Nirvana Yoga’s teachers are experienced, 200-hour Yoga Alliance Registered Instructors,” says Caruso. “We have yoga mats available, but people are welcome to bring their own. Water bottles are prohibited in the galleries.”

Caruso says the art in the galleries indirectly enters the conscious mind, adding to the atmosphere of the yoga experience. “Yoga in the Galleries provides a different way to experience art, because you’re not focused on or thinking about the artwork in a traditional way.” He adds that “the meditative atmosphere of the galleries can increase focus and self-awareness during yoga.”

OLD 97 KENMORE Tucked between a transmission shop and a mower supply store on Kenmore Boulevard, Old 97 Café may be The 330’s worst-kept secret. The owner has never paid for formal advertising, but evenings find the cozy bar and expansive outdoor patio filled with what Wendy Casale calls “casual folks who go with the flow.”

Casale has been a customer at Old 97 since its modern rendition opened in 2010, and the Canton native has been tending bar there for two and a half years. “I have a vast resume,” says Casale, who has driven a FedEx truck, professionally installed tile and run a small college. “I always seem to have bartending creep back into my life. I love to cook, so this is an extension of that.”

History is important at Old 97, which was a trolley stop and pub for travelers in the 1940s. “One of the oldest cocktails we have, created in colonial times, the 1690s, [is] called a Flip,” Casale says. Originally, the drink comprised beer with rum, molasses, and cream or an egg that was stirred with a hot poker, making the concoction boil and flip, inspiring the name. “We do an Apricot Flip,” Casale says. “[But] we don’t use a hot poker.”

For her version, Casale uses cognac, apricot liqueur, a little apricot jam, and an egg white. She dry shakes it—meaning without ice—to get the egg blended, then adds ice to it

and shakes it again, really hard to create the frothy whip. The mixture is then strained into a glass without ice and served with grated fresh nutmeg on top. “With just a handful of ingredients, it’s pretty complex,” says Casale. “The way the egg feels in your mouth makes it a silky drink.”

Another classic Casale loves, the Sazerac, was first made in the 1850s in New Orleans by apothecary Antoine Peychaud—whose bitters are still available—using Sazerac French brandy, a company that continues to distill fine spirits in the U.S. “This drink starts with the tiniest bit of absinthe that you pour directly into a chilled glass without ice and sort of roll it around to coat the inside of the glass,” Casale says. She then adds sugar, bourbon and bitters to the glass before the final flourish. “It’s fun to flame the lemon peel before it goes in,” she says. “You squeeze the lemon over the flame and it ignites the oil.”

The Sazerac is something of an acquired taste, Casale warns. “It has complex flavors that are more forward, [but] I believe more people who try it really like it.”

Casale attributes the renaissance of classic cocktails to an appreciation of craft, as seen in boutique distilleries and craft breweries. “I think people are coming around to the idea of a cocktail as something to enjoy, as opposed to just chucking down Jack and Coke,” she says.

TABLE SIX NORTH CANTON

Gabe Voss used to be a bar manager at a country club, where he “learned the ropes on the classics” because of the clientele.

He’s been in the food industry for 17 years, tending bar for 12, and with Table Six for two.

“When you’re a barkeep, it’s always about putting a little dazzle on it,” he says, which is why he always makes up a story to explain the origins of the Moscow Mule. The true origin story sounds something like a joke: a Smirnoff vodka salesmen walked into a NYC bar in the 1950s, met a bartender who made his own ginger beer and a woman trying to sell her handmade copper mugs, and ba-da-boom, a marketing gimmick was launched.

Voss makes up a much more satisfying tale of a Russian copper mining village making the most of its limited resources.

“And then of course I always say I’m just joking,” he admits.

He’s all business when it comes to crafting the classics for his customers, though. “We muddle fresh-pressed ginger with fresh lime juice in the copper mug,” he says. “We add ice and then our Russian standard vodka and top it off with ginger beer.” Building the drink in the copper mug helps keep the ice from melting. Though the main ingredients are vodka and ginger beer, Voss says it’s an easy drink to adapt to the seasons: cranberries, apple jack vodka and a cinnamon stick in the winter; pear puree, lemon juice and pear vodka in the spring.

“I love the old fashioned,” says Voss, a self-proclaimed “bourbon guy” whose favorite drink changes depending on the occasion and his companions. “With my dad or buddies, a good craft brew; dinner with my fiancée, I start with a Manhattan or Old Fashioned. [And] I always enjoy a snifter of Grand Marnier with coffee and dessert.”

The Old Fashioned is making quite a comeback because of higher quality ingredients that were not readily available in the 1940s and 50s. Even a few years ago, at the country club, Voss used a regular maraschino cherry, a pack of sugar, a little water, some bitters and an orange to make the basic whiskey drink. “Here at Table Six, it’s all about the freshness,” he says. “We have Amarena cherries—imported and much more luxurious, richer [than maraschino]—an orange, fresh bitters, and fresh-made simple syrup—basically liquid sugar. Then we muddle it together, strain it, shake it, put a lot of love into it, and it’s a great tasting drink.”

This classic of classics is also easily adapted to the season or a guest’s particular tastes because of one particular ingredient: the bitters. “People are coming out with boutique bitters—pear, orange, plum flavored—that give another level of complexity to the drink.”

Voss believes the resurgence of classic cocktails is connected to the recent food renaissance, focused on fresher ingredients and careful crafting. He also thinks nostalgia plays a part. “[These drinks] remind [people] of a bygone era, and besides, they taste great. Our grandparents really knew what they were doing.”

Cock-tail NlN WăO noun: An alcoholic beverage containing one or more spirit mixed with juice, soda or other ingredients, often accented by additional ingredients, like fruit wedges, olives, or liqueurs.

According to Jared Brown in a detailed and well-researched article for the UK Telegraph in 2012, the drink called “cocktail” may or may not be an American invention. In early 17th century England, and later the nascent United States, the term was used to describe a horse whose tail had been cut short to indicate it was not a thoroughbred. The term’s transition to describing a variety of mixed alcoholic beverages is rather muddled, to borrow another bartending term.

The word referring to a drink and not a horse appeared in a newspaper in London in 1798, then in the United States in a book called “The Farmer’s Cabinet” in 1803. Around 1850, the French-born apothecary Antoine Amédie Peychaud was making bitters and serving it mixed with brandy to his customers in New Orleans. He measured and served these drinks in eggcups—we use jiggers today—the French word for which is coquetier, pronounced NlN Ǝ WL ă . Peychaud’s customers came to refer to his medicinal drinks as “cock-tays,” a slight mispronunciation that most likely morphed over time into “cocktails.”

In 1862, charismatic New York bartender Jerry Thomas published his “Bar-Tender’s Guide,” alternately titled “How to Mix Drinks” or “The Bon-Vivant’s Companion.” This was the first drink book published in the U.S., and it remains a staple for mixologists in today’s cocktail renaissance.

NINETEEN 10 KENT

1910 was a big year for Ohio. The Wright brothers undertook the first-ever air freight shipment, Haley’s Comet was visible in April, and the city of Kent founded its first normal school—which would soon become Kent State University.

With all the fresh ingredients available from the farm-to-table movement, Clark’s guests don’t mind waiting for his well-crafted drinks. “People like to see you putting in that effort to make that delicious drink, like a delicious meal,” he says.

That’s why the bar where Spencer Clark works as a bartender and weekend manager is called Nineteen10. The bar is connected to the KSU Hotel and Conference Center, but it’s open to the public. “All our signature cocktails incorporate a Kent theme,” says the Louisville native and current graduate student in KSU’s hospitality management program.

The Kent Smash is Clark’s version of a Whiskey Smash, a cocktail that dates to the most famous drink recipe book in the U.S.: Jerry Thomas’ “Bar-Tender’s Guide,” published in 1862. Clark muddles four lemon wedges and four mint leaves in a cocktail shaker, then shakes the mixture with simple syrup and two ounces of whiskey before the final flourish.

“Take the mint that you’ll use to garnish, hold it in one hand and give it a nice clap [to] release the essential oils in the mint,” Clark says. “That’s the smash part.”

As for the whiskey, Clark prefers Maker’s 46 because “it is a single malt straight bourbon, more of a premium whiskey, [that] is aged a bit longer [and] gives that smoky flavor.” The result is a drink that “feels like a summer day in a glass—takes me to the beach, something that is refreshing and not overly sweet.”

As locals know, the black squirrel is the unofficial mascot of Kent. Clark found inspiration in this furry fellow for another of Nineteen10’s signature cocktails, The Black Squirrel. It’s a modern twist on the Mojito, a Cuban classic that dates to the 16th century and Francis Drake’s unsuccessful attack on Havana.

Clark’s take on the drink starts with blackberries muddled in lemon juice and a splash of simple syrup. He then adds vodka—rather than the traditional rum—shakes the whole concoction with mint, and strains it into a highball glass over ice. “It’s got a gorgeous color to it,” Clark says. “I garnish with lemon and a mint sprig I clap and smack to get the oils out.

[It’s] the perfect warm weather drink.”

As for why the classic cocktails are making a comeback, Clark believes it’s related to the recent “foodie” movement. “People are leaning toward viewing their drinks as works of art, just as they want their food to be works of art,” he says.

CORKSCREW SALOON MEDINA

The huge red-brick Victorian building at the corner of W. Liberty and S. State Streets has been a Medina landmark for 125 years. Originally built in 1881 by a wealthy Connecticut transplant, it housed a few different businesses in the late 20th century before its current incarnation as the Corkscrew Saloon.

Because aging deepens the color of the liquor, clients often think the taste will be too strong for them, but King says the process actually smooths and balances it, bringing out more of its sweetness. And King will often add sweet vermouth to the bourbon and let the combination age, so all she adds to the final drink is the bitters. The result, she says, is smooth and very drinkable.

“I’ve been with the Corkscrew for six years,” says Jen King, the bar manager who’s been tending bar for 11 years total.

“I fell in love with bartending [because] I love talking with [people] and getting to know their personalities.”

“Sometimes people just want something simple that they know,” King says of the resurgence of the classics. She also thinks the classic cocktails are a bit more refined, as they often employ higher-shelf liquors. Besides, “you know it’s a good cocktail or it wouldn’t still be around.”

Though Absinthe is not technically a cocktail—it’s an aniseflavored spirit—it is considered a classic because of its storied history with artists like Picasso and Van Gogh. Wild tales of Absinthe producing visions of green fairies or other hallucinations are probably myths, but King thinks they’re part of the reason for its popularity. “I think people were curious and ended up liking it.”

Absinthe is a high-proof alcohol, normally 90 to 140 proof, with spicy or botanical notes, and a characteristic sweet fennel flavor. “The one we carry is Lucid,” King says. “That one’s a good mix between the floral and spicy flavors.” Though King doesn’t care for the taste herself, she serves it in the classic way: in a reservoir glass, with a fancy slotted spoon balanced on top holding a sugar cube, and a side of ice water. The water is slowly poured over the sugar, melting it into the liquor below. The result is “strong,” says King, “kind of like sipping on a bourbon but a little stronger.”

The Manhattan may be the most well-known of the classic cocktails and is one of the simplest. Its traditional recipe is rye whiskey, sweet vermouth and bitters. Like other classics, though, mixologists often modify that. “What we started doing a couple years ago is barrel aging cocktails,” King says.

“The Manhattan is the first one I did.”

King attended a bar show in Las Vegas about a year ago where she learned about barrel aging as a way of enhancing flavors in individual liquors that can be added to cocktails. She came back to Ohio, bought some charred oak barrels and began experimenting.

WHAT ' S THE DIFFERENCE?

Many people don’t understand the difference between bourbon, scotch, ‘whisky’ and whiskey. So what’s the story?

Debbie Chapman, owner of Old 97 Café in Kenmore— and herself a Scottish scotch lover—helped parse the subtle nuances among these powerful spirits.

The differences begin with geography and spelling.

“Scotch is whisky made in Scotland,” Chapman says.

“Whiskey is a product of the U.S., mostly Kentucky, but not always so. Bourbon is whiskey made in the U.S.” Note the small variation in spelling there (whisky/whiskey), like the British term ‘colour’ verses the American ‘color.’

After geographic location, the variants turn to ingredients. All of these spirits begin with a ‘mash’ of grains that is distilled and aged. As Chapman specifies: Scotch is usually made from malted barley. Bourbon mash is mostly corn, often with a combination of malted barley, rye or wheat, which is distilled and poured into charred oak barrels for aging. “The barrels can only be used once,” Chapman says, “so after the bourbon is made, the barrels are sold or leased to vineyards or beer breweries for their processing.” A subtle difference here is that the corn mash is carried from batch to batch, much like when you make sour dough bread.

Aging is the next point of difference. In Scotland, Ireland and Canada, whiskey has a minimum maturity of three years, as opposed to the maturation of bourbon in the U.S. of only two years. “Contrary to most beliefs, the age of a scotch really has nothing to do with the inherent quality of drink,” Chapman says. “It’s just a matter of style and taste.”

Whatever your style and taste, knowing the differences can help you figure out what you like and what to order.

“I’m a run-of-the-mill cocktail nerd,” says Scott Sauer of the Crafted Cocktail Company in Wadsworth. Originally from West Akron, Sauer has tended bar for about seven years at places like the Galaxy in Wadsworth and The Main Street in Medina. What he likes about his current job is its openness to craft and experimentation. “We welcome anybody, especially if you’re open to learning and trying new things,” he says.

“These may be twists on classics you’re used to ordering, but they will taste different.”

The Singapore Sling is a very popular Polynesian classic because of its pleasant tartness and nice balance of flavors. The basic recipe dates —once again—to Jerry Thomas’ “Bar-Tender’s Guide.”

The ingredients listed are gin, dry cherry brandy, Benedictine, lemon juice, orange bitters, Angastura bitters and a little soda.

But Sauer likes to put his own spin on it.

“We use Plymouth gin, one of the oldest distilleries out there,” he says. “Also fresh Regan’s Orange bitters No. 6.” Why so specific on the bitters? “It’s a newer recipe,” Sauer says, that combines traditional orange bitters with a recipe found in another old drinks book, Charles H. Baker’s “Gentleman’s Companion” of 1939.

The result? “Instead of just a plain old orange, you’ll have notes of clove, cardamom and a spiciness that really comes through in the drink.”

The Sidecar is another popular cocktail that dates to the Prohibition era with a basic formula of brandy, lemon juice and sugar. Sauer prefers the Brandy Crusta, a version of this that predates the Sidecar by several decades, also taken from Thomas’ “Bar-Tender’s Guide.”

Sauer uses the peel of a full lemon and sugar, but not just any cognac. “Courvoisier VS has a big history behind it,” he says. He then adds a little bit of bitters and orange Curaçao, “and maybe a little less of the lemon juice than might be traditional for the Sidecar.” By tweaking these ingredients, Sauer says the drink becomes “much more complex, as the flavors are completely meshed together. The brandy comes through, and then a little sweetness, but the finish is very citrusy—gets your whole mouth watering and wanting more.”

Sauer believes the classics have become popular again because of people’s newfound passion for learning, fueled largely by the advent of the internet. This has led to a parallel passion for craft.

Dr. Faisal A. Quereshy, whose clinic, Visage Surgical Institute, has been in Medina for over 14 years, says there are many non-superficial reasons people seek cosmetic enhancement.

St. Francis Vineyards were established in 1971 when Joe Martin planted 22 acres of Chardonnay and 60 acres of Merlot in Sonoma Valley. He started as a very successful grower, selling grapes that reflected the best of Sonoma’s valley and mountain fruit. In 1979, Joe and his partner, Lloyd Canton, built the St. Francis Winery close to Kenwood, Calif.

In their early years, their first winemaker, Tom Mackey, was known for elevating the quality and style of ultra-premium Sonoma Merlot. In 1988, St. Francis partnered with Rudy Kopf, who had pioneered the finest wine and spirits store in New York City after prohibition at Macy’s department store. Sixpoint Jammer returns just in time for the spring weather to break.

This month, Brooklyn’s Sixpoint Brewery returns with their take on the recently revived gose style, the much-adored Jammer brewed with Jacobsen Salt. Once a nearly extinct German beer style from Leipzig, a gose is an unfiltered wheat beer made with 50-60 percent malted wheat with the addition of salt and coriander. Thanks to its popularity, the gose style has made a joyous return to the beer world in recent years.

After home-brewing for years, brewer Shane Welch took his plethora of recipes and decided to start a brewery in the most unlikely of places: an 800-square-foot garage in Brooklyn.

The decision paid off in droves, and Sixpoint Brewery was born. Now going 12 years strong and counting, the brewery is housed in a 16,000-square-foot building and brews 25,000 barrels a year.

Few things emblemize Ohio’s history like the Ohio Match Company, or Old Match as the locals call it. Jack Ollom, Executive Director of Main Street Wadsworth and a lifetime Wadsworth resident, can remember seeing hundreds of local workers reporting for their shifts at the huge brick factory that closed operations in the mid-1980s.

“These buildings represent our community’s history back to 1815,” Ollom says. “That instills a lot of roots to the community.”

About 12 years ago, when Wadsworth only had a merchants’ association, Ollom noticed big-box stores moving

into the township. This spurred him and others to build support for joining the Main Street program through Heritage Ohio.

“We decided long ago if we weren’t proactive we would lose our downtown,” Ollom says.

Today, the remaining portions of the Old Match complex that once covered 18 acres have been reborn as a sort of small business incubator, housing mostly small manufacturing and service companies.

Ollom rejects the idea that restoration is less cost-effective than building new. Besides, he sees value in historic buildings that goes beyond the financial.

“A lot of these buildings were built with local materials that just aren’t available anymore, so

it’s impossible to emulate their feel and texture and look.”

The smaller profile of many of the downtown buildings has an added benefit that helps keep the hometown feel of Wadsworth. “The fact that they’re not huge and don’t have a footprint like big-box stores lends them to mom-and-pop shops,” Ollom says.

The Old Match represents a bygone era of Wadsworth that Ollom and others have not forgotten, but it speaks to the area’s future, as well. “We believe continuing to combine our history and our future now will set a hometown tone for generations to come,” Ollom says.

Growing up, Amy Hudson traveled all around Medina County with her World War II veteran grandfather, tearing down old barns. They saved much of the salvaged materials to use as tables, stools or other projects.

This experience came in handy when Hudson recently decided to move her wine-tasting business, Amy’s Arbors, from a 600-square-foot storefront into a Valley City house built in 1800.

“A strip mall doesn’t have that character to it; it’s very cold,” Hudson says of her choice to take on the renovation project.

Besides, “who doesn’t want to drink wine and hang out in an old home?”

Hudson hired a handyman to help her, but does a lot of the work herself. “I’m not a master woodworker; I just know how to follow directions,” she says.

She didn’t know much of the history of the house when she bought it, but people told her it might have been a butcher’s 4

place or an antique store at some point. What she does know is that the house is quirky.

“It’s crazy inside,” she says.

“They built these stairs over a door. We’re not sure what the door ever went to [or] how they got to it. It has a little trap door; [when] you open it and look down, you see the ground. Very odd.”

One of Hudson’s biggest challenges in refurbishing the home has been finding the right materials to keep in line with its vintage feel. “When we built the new bar, we wanted old barn doors to build it,” she says. “We couldn’t just go to Home Depot and buy wood.” She ended up using a combination of barn doors and old bourbon barrels, which fit well with the bourbon tastings she offers.

The Brunswick native feels right at home in Valley City, where residents have been very welcoming. “This is a quaint little city [with] lots of old-school character,” she says. Her grandfather would be proud. may 2016

Steve Madden attributes his need for speed to his father. “Ever since I can remember, we’ve been watching and going to races,” says the co-owner of High Voltage Karting in Medina. Whether it was NASCAR, the Indy 500 or Formula One, fast cars were an integral part of his childhood.

So starting a high-speed go-kart business was a natural fit.

Finding the right venue was a little more challenging, however.

Madden and his business partner considered building new, looking at land in Cleveland and Valley View. Then Madden, who is from Florida originally and moved to Medina when he was 13, heard the old Foundry building was going up for auction. “It’s huge,” he says of the structure originally built in the 1860s. “There’s old hot riveting, so much overbuilt by today’s standards.”

The two entrepreneurs went back and forth, daunted by the potentially costly renovations needed. They finally decided

it was worth the extra effort to bring something truly unique to Medina. “In the end, we looked at it from the perspective of how it would affect the rest of the community,” Madden says. “This was the right thing to do.”

Today, the old foundry buzzes with the electric whine of go-karts on the indoor track Madden installed atop two feet of concrete floor. “When customers walk in, they’re able to experience new and old at the same time,” he says, citing the juxtaposition of original brick walls and steel girders above his Formula One-style, Italianmade karts.

Though he knew the building was old when he bought it, Madden is often surprised by the depth of history it carries in his community. “People have come in and said, ‘you know I used to work here 60 years ago,’” he says.

The county, city and community of Medina have been very

supportive and welcoming to Madden’s business, reinforcing his decision to refurbish rather than start from scratch.

The pointed arches, stately tower and imposing front door epitomize the Gothic style, while the church’s cross-shaped floorplan is typical of most Anglican churches. St. Paul’s was added to the National Register of Historic Places in 1982. The church’s website details many renovations over the past 130 years, including the addition of a basement in the 1950s that the congregation dug by hand.

For much of the early 19th century, the Methodists of York Center met in schoolhouses and private homes. Then, in 1877, they raised enough money to construct their own church, complete with a spired tower and tall, arched windows. Why is it important for Seville to celebrate this milestone?

JW: Today’s society is a lot more separated—people are separated from each other, even though we’re more in touch technology-wise. I think it’s important to come together to get to know our neighbors and maybe do things we otherwise wouldn’t have time to do. Society is very fast, and families don’t always have time to interact with neighbors and the community. It’s important to celebrate not only our community but ourselves.

What is one of the quirkier facts from Seville’s history?

JW: The quirkiest I have found since working on this event is that when they celebrated the 150th in 1966, they had something called Brothers of the Brush, where they challenged the gentlemen of the village not to shave and to grow long beards. They had a funeral, complete with a coffin and a processional to bury the razor in downtown.

They did it on a hearse and a wagon, and they wore mourning garb and buried the razor.

That’s pretty quirky! Are you planning something similar for this year’s event?

JW: We will have no “burying of the razors,” but we are working on some kind of a facial hair contest. Today, men are all about their beards, a lot already have long beards, so we’re putting together parameters for judging the most unusual, or longest, or grayest or whatever it may be. That is still in the works, not a firm thing yet, though we want to do a modern twist on it.

The Crazy Path

/ In which we (attempt to) celebrate the uncertain road /

I've spoken many times, within these pages even, of how I lack a "fixed notion of self." And by "spoken" I mean bemoaned, lamented, mourned.... For once, though, I want to try something new: I want to flip this too-familiar (to me at least) train of thought and celebrate the migratory, champion inconsistency.

Today, I'm here to praise the ever-changing path.

As I type this, change swirls around me like a temporal twister. There's the overall change, still very active in my consciousness, affected when my family and I left the business we'd run for 12 years to live in the literal wilderness. The fallout from this move has been slow, often boring, occasionally tumultuous, but we've now effectively established this weird life shared with two bossy cows, a mess of pigs and countless chickens and the winds of change have started picking up again. I can smell a storm brewing.

My gut reaction involves fear and anxiety, and I won't lie to you, there's a buzz of terror humming inside me 24/7. I feel it now, churning unbidden, and I don't like it. But just the other day I heard a radio program that celebrated oddballs like me and mine, folks like the NYC bus driver who, one morning in 1947, turned right rather than left onto his route and didn't stop until he reached a warm, Florida beach. Yes, he was arrested, but public acclaim for his detour landed him on talk shows rather than behind bars. The general populous loves an active, preferably public redefinition of a self otherwise determined by routine and consistency. The other day an office worker with a state job and a writing habit told me, after learning of my own writing career, that "the rest of us are living through you." Truth is, I silently coveted the steady reliability of her desk job the entire conversation.

But we love the weirdos, don't we? At the risk of equating myself with superior luminaries, I'll call your attention to Apple's iconic "Think different." campaign that championed the "crazy ones," outside-the-box thinkers such as Jim Henson, Amelia Earhart, Pablo Picasso. While my understanding of these figures is that unwavering dedication to their dreams drove them ever-forward into uncertainty, the key word "different" speaks to the change I'm feebly attempting to celebrate, that shift away from normalcy, from office jobs and (sigh) regular paychecks.

This celebration of change, of the constant, headlong bus drive away from familiarity into the shadowy unknown...well, it really is easier to do from inside the box. Most folks remember Frost's metaphorical path, the lesstraveled one, for all the difference it made to the narrator. I've long loved that poem, but it's always been abundantly clear to me that Frost never actually said the difference was a good one. He speaks of a late-in-life "sigh" as he recounts the choice, and the poem's second line states a wish to travel both. I recall footage of Frost reading at JFK's inauguration and wonder where his ambivalence came from.

The poetry path certainly worked out for the man who, previous to national acclaim, worked as a farmer and an English teacher, so why would he even remember the moremanicured trail? Is it because he understood that, for every poet who enjoyed Frost's suc-

cess, thousands more languished in poverty and uncertainty until their final breath?

So it's in this last luminary, the rural and gravelly and didactic Frost, that my hand is forced. I must compare myself. Though a failed farmer, he owned farmland throughout his life; despite a body of published work, he always wondered about that other path.

My farm is wildly unprofitable, and touch the page before you my work is published, and not irregularly. And when I stand at the farmer's market, listening to a gainfullyemployed woman tell me how she envies my career, I'm mentally picturing money silently appearing in her bank account every Friday. I stumble down the long, gravel driveway to my mailbox, drawn along this path by the hope I'll find a check from one of the magazines I write for.

Because, you see, we can't celebrate this change, wherein folks buck the system to forge their own paths, without ambivalence.

I mean, they're called "crazy ones" for a reason, and that reason is the system works.

The system takes care of those inside its box.

Some people step off the trail to find a hidden fortune in the wilderness, but plenty of folks get lost in the forest; taking that first step, you never really know which one you're going to be.

Back to the incomplete Frost comparison for

a minute: Before and after his transformation into what some believe was the finest poet of the 20th century, Robert Frost was an English teacher. I've never been an English teacher but, for many years, I believed my path led in that direction. And now, in the woods on what appears to be a totally different trail, tripping along as way leads on to way, I remember Mr. Pingilley, my high school English teacher, reading Frost's most famous poem (his was the more conventional interpretation of Frost's meaning). I emailed

this teacher the other day, in fact, not to discuss Frost but to share some news: After years of metaphorical burrs and thorns and brambles and, yes, the occasional clearing filled with unspeakable beauty, I've begun the process of earning my teaching certificate.
