Full Swing Heading out to the links brings back fond memories.

As I write this, it marks the threeyear anniversary of the death of my dad, Don Baker, the founding publisher of Akron Life. Originally, I was hesitant to bring it up because it feels like I just wrote about him and his passing a few months ago.

That’s the thing with death and grief — it feels so close, like it just happened. I think about him every day, almost like he is still here.

Once last summer, I was having one of those golf games where I could do no wrong. Every shot was coming off my club pure and straight. Putts were falling that were unbelievable, and I thought my dad was on my shoulder, watching and rooting me on.

The spring brings back golf season, and my dad loved it, constantly working on his swing and striving for improvement. He always wanted me to play and would tease me to get out with him. When I look back, I wish I did spend more time playing golf with him. I never thought my time would be cut short and always thought there would be another day.

For the first year, I was numb to all that happened around his death. I spent a great deal of time trying to wrap up all his affairs, whether it was Akron Life or his other belongings. My dad was not great at planning for after he left this world. You see, he never thought he was going anywhere. He would say, I am going to live to 103. He believed that by saying it, he would somehow manifest it. My brother, Brendan, and I would often tease him that he viewed the world through rose-colored glasses. He was the forever optimist. He did not want to hear you

complain about the problem; he wanted to know what you plan to do about it.

The late Steve Jobs, the founder of the Apple computer, was famous for something people called the reality distortion field. It was his ability to convince anyone around him of anything he wanted them to believe, using his charm, charisma and a twist of marketing. My dad would use all those same tools. It helped him start a lot of businesses, but he also was pretty convinced he was not leaving this earth any time soon.

Today, my grief and disbelief are not as strong. It gets easier as time goes on. Yet I have days, especially with a 1-year-old baby, that I know he would have loved.

Being a grandparent was a great joy for him. It saddens me that my son will never know his grandfather — someone who had such a great influence on my life. As I write this in mid-February, there have been

more than 16,500 Ohioans who have died from COVID-19, according to the Ohio Health Department. I am sure many of our readers have experienced the difficulties of someone passing before their time.

It is the one thing none of us can escape. I try not to fight the grief, instead just letting it happen and take me where it goes.

I am happy for the good times we spent together. Those memories remain strong, and I carry them with me.

As I head out to the links this spring, I’m hoping my dad can sit on my shoulder at least one more time as I break my best golf score.

Around the Table Learning to cook is a recipe for bonding with others.

Getting married and moving into a cramped city apartment with a single oven only led to slight improvement. I relied upon the large casseroles my mom made for our family of six growing up, slow cooker meals (we used recipes from a book overtly called “Dump Meals”) and standbys like tacos and pasta.

But when we bought our home two years ago, the bigger kitchen prompted me to get more interested in cooking, and the current pandemic has given me the time I never had to truly experiment. That’s why this food issue is about cooking at home with local ingredients. Whether you were used to dining out every week or visiting others for meals, many of us have found ourselves in our kitchens more than ever.

Every year, a memory of my cooking misadventures comes up on Facebook and often gets shared. It’s a picture of me holding up a purple plastic plate with a burnt chocolate cookie melted to it. While attending college at Kent State University, I infamously microwaved a cookie too long (I accidentally added an extra zero to the cook time), which resulted in a cloud of thick smoke spewing out and the aforementioned cookie melted to the plate. I narrowly escaped causing a fulldorm evacuation, but the shame lives on. It even prompted my roommates to get me a plaque that reads, “Dinner will be ready when the smoke alarm goes off.”

The change of my culinary heart first came when my sister gifted us some Blue Apron meal kits. While they took a lot of effort and my husband, Tony, and I initially squabbled over some longer recipes, they were doable since the directions are easily spelled out. We still use some of those recipes today, especially a lemony Veracruz shrimp dish.

When lockdown hit last year, we signed up for a diet app. The key to the diet was making everything from scratch. That meant instead of cereal for breakfast, it was eggs or pancakes and instead of sandwiches for lunch, it was salads and homemade soups. It takes lots of time, but we’ve gotten used to prepping food on the weekends. Recently, we got an air fryer, and it’s been a game-changer in helping us eat more veggies, especially broccoli and asparagus — yum!

After hearing about Hartzler Family Dairy’s milk for years, I finally got to try the creamy milk for “Liquid Strength” on pg. 19. Its newest venture is single-serve flavored milk. The black raspberry gave a fruity punch to a smoothie and the chocolate blended with ice cream made a divine milkshake with a smooth flavor reminiscent of a Wendy’s Frosty. Bringing these local products into your kitchen links you to the community. “We’re not about a jar of honey,” says Akron Honey founder Brent Wesley. “It’s about the food experience, which translates into the family experience and the connectingwith-friends-you-haven’t-seen-for-a-longtime experience.”

That’s been the best part about learning to be a better cook. Not only do my husband and I get to work on communication in the kitchen, but we also get to bond over enjoying food and delivering it to friends and family. Perhaps in the not-too-distant future, we will be able to gather around the same table again, and maybe by then, my cooking will redeem me from the melted cookie incident.

LIQUID Strength As kids, our mothers told us to drink our milk. But sometime during adulthood, glasses of milk disappeared from our tables. Passing on milk means skipping its nutrients too.

Make mom proud with wholesome milk from Hartzler Family Dairy, which produces milk from 200 cows raised within 15 miles of its Wooster plant and also sells products like butter. Since 1996, Hartzler Dairy has been overseeing production from field to bottle. Its process for its signature halfgallon milk focuses on keeping milk in its most natural state, so it uses low-temperature vat pasteurization (rather than pipe pasteurization like most) to retain healthy fats, proteins and enzymes while killing bacteria.

To keep large fat particles intact for easier digestion, the milk isn’t homogenized, a process that breaks down milk for a smoother consistency. In place of this, a fatty cream layer rises to the top of the bottles, but that goes away by shaking.

“You’re getting more flavor from your fats, more value of being

able to utilize the minerals and vitamins in your fats,” Hartzler says. He adds that because of those health benefits, some doctors prescribe Hartzler Dairy milk to patients who can’t drink regular milk. “Thousands of people are what they call lactose intolerant but can drink our products.”

• 3/4 cup Hartzler Family Dairy butter • 1 cup Hartzler milk • 1/4 cup oil • 2 cups sugar • 3 eggs • 2 yolks • 1 tablespoon lemon extract • 3 tablespoons lemon zest • 2 1/2 teaspoons baking powder • 1 teaspoon salt • 2 2/3 cups flour • 1/2 cup Hartzler black raspberry milk • 1-3 cups powdered sugar • 1 teaspoon lemon juice • Freeze-dried raspberries, crumbled DIRECTIONS 1. Preheat oven to 350 degrees and generously spray Bundt pan with cooking spray.

2. Using a mixer, cream roomtemperature butter, sugar and oil until light and fluffy, about 5 minutes.

3. Slowly add eggs while mixing on low, scraping sides and beneath paddle until incorporated.

4. Whisk dry ingredients together.

Slowly add to butter mixture while alternating in plain milk.

5. Mix until batter is even and smooth.

6. Using an ice cream scoop to portion equally, distribute batter into Bundt pan, filling a little more than halfway.

7. Bake at 350 degrees for 12 minutes or until center is set and sides appear golden, pulling away from pan.

8. Remove pan from oven, allowing to rest until lightly cooled. Flip over onto rack and cool completely before glazing.

9. In a mixing bowl, using your mixer with whisk attachment, combine raspberry milk and lemon juice, slowly adding powdered sugar 1/2 cup at a time. Do so until it forms a thick paste — it should be thin enough to drizzle and thick enough to adhere to a spoon. Test and adjust as needed.

10. Dip or pour on glaze, and rest on rack. Garnish with sprinkle of freeze-dried raspberry crumble.

Lime Fried Chicken Tacos

BUZZ Worthy Brent Wesley’s first taste of the honey he harvested from his apiary on a vacant lot in West Akron was something brand-new.

To make hot habanero honey, he grinds dried habanero peppers and infuses that coarse powder for four days into raw wildflower honey.

“I realized this honey tastes different than anything I’ve ever tasted. That idea of flavor captured me so much,” says the owner of Akron Honey, known as “Wesley the Keeper.” “One day I was like, What if the flavor of the honey is contingent upon where the bees are going?”

“You get the best flavor when you don’t mix it with other things,” he says. The result has heat that doesn’t overwhelm. “You taste the pepper, and you feel the kick toward the end. People flip over this stuff.”

His hunch was right. While his West Akron honey had a citrusy flavor, when he added a lot in Middlebury, its proximity to the Little Cuyahoga and Japanese knotweed brought out spicy, caramel notes. Whereas other beekeepers mix honey from different apiaries, Wesley highlights these nuances by bottling each in separate jars marked with the location and season it was harvested.

Following a stint on LeBron James’ “Cleveland Hustles” entrepreneur TV competition, Wesley experimented to make new flavors. For a bourbon barrel honey, he combines cut-up wooden Cleveland Whiskey barrels with raw wildflower honey, which he sources from other Ohio farms to scale up production.

“We take those cubes that have the flavor of the bourbon locked in and infuse it into our honey,” Wesley says.

By customer demand, he’s jarring his honey in larger 11-ounce jars, and last month he began selling the hot honey, bourbon barrel honey and raw wildflower honey at Giant Eagle. Plus, find them at local fast-casual restaurants like the bourbon barrel at Eye Opener and the hot honey at Your Pizza.

Wesley is constantly sharing on social media new creative ways to enjoy his honey. The bourbon barrel perks up Earl Grey tea and Greek yogurt with fruit and nuts, while the habanero makes for incredible wings, lemonade or, Wesley’s go-to, lime fried chicken tacos.

“We squeeze lime over and hit it with a strong drizzle of habanero hot honey,” he says.

• 3 tablespoons habanero hot Akron Honey • 2 cups low-fat buttermilk • 4 teaspoons black pepper • 2 tablespoons salt • 2 teaspoons paprika • 1 teaspoon cayenne pepper • 10 large pieces of boneless chicken thighs, wings or strips, chopped and trimmed • 4 cups all-purpose flour • 2 teaspoons black pepper • Canola or peanut oil • 3 soft flour tortillas • 2 cups mixed greens, chopped • 1/2 red onion, chopped • 3 tablespoons feta • 1/4 lime DIRECTIONS 1. Pour low-fat buttermilk into a medium bowl and mix in 2 teaspoons black pepper, 1 tablespoon salt and 1 teaspoon paprika. Submerge chicken pieces into the buttermilk mixture.

2. Cover and marinate in the refrigerator for at least two hours.

3. Mix 4 cups flour, 2 teaspoons black pepper, 1 tablespoon salt, 1 teaspoon paprika and 1 teaspoon cayenne pepper on a large plate.

4. One by one, take chicken pieces out of the marinade, let marinade drip off and coat in the flour mixture. Fill a pan with canola or peanut oil and heat to 375 degrees. Submerge chicken into the oil for about 7 to 8 minutes per side. Don’t overcrowd the pan.

Cook until the thickest part of the chicken registers 165 degrees on a meat thermometer. Drain fried chicken on paper towels.

5. Set out three flour tortillas and top with mixed greens, feta and red onion. Place one piece of chicken in each. Squeeze a quarter lime wedge over tacos and sprinkle on a dash of salt. Finish with a drizzle of 3 tablespoons habanero hot honey.

INGREDIENTS • 1 pound boneless, skinless chicken breasts • 1/2 cup all-purpose flour or almond flour

• 1 cup low-fat buttermilk • 1 egg • 1/2 cup panko breadcrumbs, unseasoned • 2 tablespoons olive oil • 3 teaspoons Julia Belle’s Nashville Hot seasoning DIRECTIONS 1. Preheat the oven to 425 degrees.

2. Prepare three shallow dishes. In the first dish, add the flour. In the second dish, whisk together the egg, buttermilk and 1 teaspoon of Nashville Hot seasoning. In the third dish, mix the panko breadcrumbs and 1 teaspoon of Nashville Hot seasoning.

3. Cover chicken breast completely with flour and shake off any extra. Dip the chicken in the egg mixture.

Then cover completely with the breadcrumbs.

Place the breaded chicken on a nonstick baking sheet. Continue with each piece of chicken.

4. Bake for 25 to 30 minutes or until a meat thermometer reads 165 degrees. Remove chicken from the oven and rest for 10 minutes.

5. In a small skillet, heat olive oil and remaining 1 teaspoon of Nashville Hot seasoning. Drizzle hot oil evenly over chicken before serving.

Tanya Green was contemplating what to do with her late mother’s trunk that was sitting in storage for about a year.

When the Akron native lifted the lid, it was like uncovering a chest filled with treasures — photos and recipes from her mother and grandmother, written on paper covered in cooking stains and fingerprints.

During the Great Migration, Green’s mom, Julia Belle, moved from Georgia. In Akron, she made traditional Southern food for her family, teaching Green how to cook.

Using recipes from the trunk, Green made her mother’s cornbread mix, coffee cake and chicken seasoning and sold them at a farmers market. She listened to customers and eventually expanded into 25 products to create Julia Belle’s Hand Blended Seasonings, Rubs and Mixes.

The lover of hot food was inspired to create her own version of a Nashville hot chicken seasoning after trying the dish in the Music City in 2016.

“I wanted to formulate something around that concept of natural hot,” Green says.

Her Nashville Hot is made with red, black and white pepper, garlic, smoked paprika, a Carolina Reaper pepper and a little sea salt, demerara sugar and yellow mustard, and has a hot, smoky garlic flavor.

“It’s amped up,” she says. “Once the heat dissipates, you really have an excellent taste of flavor.”

Beyond hot chicken, it complements ribs, steak, thick cuts of fish, rice and ramen, and can be applied wet, as a dry rub or sprinkled on a finished dish.

Julia Belle’s extends past southern U.S. influences, with globally inspired seasonings like Peri Peri, or “pepper pepper,” which originated in Africa. It has a mix of peppers, such as the bird’s-eye chile and ancho chile, lemon peel, black pepper and smoked paprika, making the hot seasoning great for salmon and pork. Her Moroccan seasoning isn’t hot and has an earthier flavor, brought to the forefront by cinnamon nutmeg, which is popular in that country.

Despite these diverse influences, Green’s business is still based on her mother and the recipes from the trunk.

“We’ve evolved into something that now, is more than just Julia Belle. But that was the inspiration,” Green says. “This is a continuation of her legacy, her passion for cooking.”

The co-founders looked for a cooking option that was small yet healthy, and microgreens were it.

Vigeo sells several other microgreen varieties including the slightly heartier broccoli and kale blend, which has mild flavors that make a perfect addition to a smoothie or avocado toast. Other popular microgreens include sunflower, which parents have attested gets kids to try new things.

“People are having their younger kids who like sunflower seeds eat the sunflower microgreens. And they love them,” Peterson says.

For those unfamiliar with microgreens, he recommends starting with the Blend.

“They’re tender, tender baby greens,” Peterson says. “Be adventurous and try it. It’s a great way to try flavors that you wouldn’t typically cook and that really complement your food.”

Warning Signs Protect yourself as scams are on the rise.

Carol Cowyer was surprised when two bank cards claiming they were government stimulus money for her and her husband were sent to their Uniontown home. She initially chalked it up to a scam since it didn’t come in the form of a check.

“We talked to our two sons, who said they got checks, so we almost cut them up,” says Cowyer. “But we called the BBB, and they said they were legitimate, and we were able to cash them at a Chase Bank.”

A rise in scams since the coronavirus broke in March 2020 has made navigating scams — and deciphering the legitimacy of information — even more confusing and scary for some older adults. Elaborate schemes, from unemployment scams to fake virus tests designed to trick people into giving away personal info or money, have evolved.

From April to December 2020, Ohio paid out at least $330 million in fraudulent

unemployment claims, according to the Ohio Department of Jobs and Family Services.

Kimberly Hoch, a consultant for the Akron Better Business Bureau, says scammers are “basing everything on COVID fear, [and] attaching it to all the normal scams.” This is leaving older adults extra vulnerable to giving out info. “They’re isolated from their family and having to do everything by phone, and so they’re getting pressured,” she says. Hoch explains what these scams entail and offers tips for protecting yourself and your loved ones.

Fraud Alert It’s tough to tell what is and what isn’t a scam. Cowyer’s story of being so weary that she almost threw out bona fide government money shows how much confusion has set in and how tactics are adapting to the pandemic.

One of the most widespread examples is unemployment scams, in which scammers collect benefits on the behalf of older adults. “Basically, the scammer gains access to your Social Security number and birthdate,” Hoch says. “That sometimes can be acquired through a text message or phone call about something completely unrelated, unbeknownst to the senior, and then they file paperwork under the older adult’s name with that information.” More than 760,000 Ohioans have been subject to fraudulent unemployment claims over the past year and have had their identities compromised, according to the Community Legal Aid nonprofit Akron law firm. Some Ohioans have been receiving tax notices for unemployment claims they haven’t filed.

Other new scams include getting a call or text explaining that you must schedule a COVID-19 test through a third party before receiving unemployment or stimulus money. This may convince older adults to

give out credit card info, Social Security numbers, addresses and other private info.

Hoch says this is a major warning sign and most likely a scam. Another possible method is a call or text asking for bank account info to receive coronavirus aid. You should only trust government websites with .gov endings.

The BBB’s 2019 Scam Tracker Risk Report finds that many scams start on older adults’ computers. Whether it’s in a pop-up ad or an email, there’s usually an enticing link that downloads a virus to their phone or personal computer. The virus gives scammers the ability to control the computer remotely, siphon information and exploit the older adult further by using the information in additional scams.

Not all current scams are new, though.

Even during the pandemic, one that remains popular is the lottery scam. This is “where the senior gets a call or a text message that they have won something, and that they have to pay a fee to get a much larger prize,” Hoch says. Because many older adults play the lottery regularly or

have played in the past, they are much more likely to succumb to this attack, she says. When the payout is potentially in the millions of dollars, paying a processing fee or giving out a little personal information doesn’t seem so bad. Lottery scams targeted at older adults are responsible for over $2.52 million in losses nationwide since 2018, according to the BBB. That makes up more than 80 percent of the total losses from these types of scams.

Another common tactic is government impersonation. Scammers call or text, claiming to be from government organizations like the IRS or state taxation departments to gain personal info. According to the IRS website, it will never call or send text messages to anyone for any reason — the IRS only communicates in federal mail.

More than 37,000 scams were reported in 2019, with the most common being online shopping scams, according to the BBB’s risk report. The riskiest scams for adults 65 and older in 2019 were travel and vacation scams. The most common way scammers contacted people, the report found, was via

a phone call. The report also found that the median loss for adults over 65 was $350.

As older adults become more comfortable with tech, scammers’ methods have evolved.

Amazon, Facebook Messenger and other online shopping scams have increased during the pandemic, and Hoch says they usually involve receiving a text notification that an order was delivered, with a malicious link to a form asking for credit card info.

Another scam is family impersonation via a phone call. “This is a big one where they’re using family member names and photos and saying that they’re in danger,” Hoch says. Then scammers ask to get money wired or to be given bank account info.

On Guard As scams evolve to take advantage of new tech and new fears, older adults must be prepared to avoid them. To keep yourself or your loved ones safe, Hoch recommends watching out for these red flags: •

bers. The government will always communicate via federal mail and will never ask for sensitive info over the phone, Hoch says.

You receive mail stating you’ve won a lottery or prize. This is one of the easiest scams to fall for, Hoch says. Be especially wary if it asks for a processing fee or other similar deposit.

Someone knocks on your door selling products or services that seem too good to be true.

You are asked to wire money or return an overpayment.

You receive emails claiming to be from your bank or credit union, asking you to update your account info.

Confirming with another source is the best way to distinguish a scam from legitimate communication. Hoch advises that you call your local police station. If your financial info has been breached, contact your financial institutions right away. Also call all three large credit bureaus — Experian, TransUnion and Equifax — and put fraud alerts on your credit accounts. This way, if anyone tries to make a

Finally, if you are still unsure, Hoch recommends a golden rule: “When in doubt, throw it out.” If it seems suspicious, it’s likely a scam. Play it safe, and don’t engage.

Account hacked. Receive an automated call claiming to be from the Social Security Administration and that an account has been compromised.

•

Big check. Get a phone call from someone claiming to be with Publishers Clearing House. The caller already knows your full name and wants to talk about scheduling delivery of a significant monetary prize to your home.

•

Processing fee. Receive a phone call from American Cash Awards claiming you’ve won a large prize. To receive the prize, you must send $1,000 via a money order.

S E LEC T I O N PR O CE S S “If you had a patient in need of a dentist, which dentist would you refer them to?”

This is the question we’ve asked thousands of dentists to help us determine who the topDentists should be. Dentists and specialists are asked to take into consideration years of experience, continuing education, manner with patients, use of new techniques and of course physical results.

The nomination pool of dentists consists of dentists listed online with the American Dental Association, as well as dentists listed online with their local dental societies, thus allowing virtually every dentist the opportunity to participate. Dentists are also given the opportunity to nominate other dentists that they feel should be included in our list. Respondents are asked to put aside any personal bias or political motivations and to use only their knowledge of their peer’s work when evaluating the other nominees.

Voters are asked to individually evaluate the practitioners on their ballot whose work they are familiar with. Once the balloting is completed, the scores are compiled and then averaged.

The numerical average required for inclusion varies depending on the average for all the nominees within the specialty and the geographic area. Borderline cases are given a careful consideration by the editors. Voting characteristics and comments are taken into consideration while making decisions. Past awards a dentist has received, status in various dental academies can play a factor in our decisions.

Once the decisions have been finalized, the included dentists are checked against state dental boards for disciplinary actions to make sure they have an active license and are in good standing with the board. Then letters of congratulations are sent to all the listed dentists.

Of course there are many fine dentists who are not included in this representative list. It is intended as a sampling of the great body of talent in the field of dentistry in Ohio. A dentist’s inclusion on our list is based on the subjective judgments of his or her fellow dentists. While it is true that the lists may at times disproportionately reward visibility or popularity, we remain confident that our polling methodology largely corrects for any biases and that these lists continue to represent the most reliable, accurate, and useful list of dentists available anywhere.

Dining in Portage Lakes has a history of being a casual, communal experience. The Bungalow Lunch Room, situated near the Crooks Hotel on Long Lake, drew in families to share a meal, purchase groceries and even get ice cream. Men in button-downs and slacks and women in long skirts pose next to their automobiles on this postcard. While Long Lake is mostly residential and Bungalow is gone, casual lakeside dining lives on in establishments like the Ramp Restaurant, owned by the same family as the former Art’s Place restaurant that dates back to the 1940s. The Ramp has a sprawling patio and honors its heritage by serving Art’s famous bean soup and bacon salad to laid-back diners donning ballcaps and flip-flops.
