Growth Spurt Throughout the years, Akron Life has changed and improved.

At Akron Life, we’ve been celebrating 20 years, and next month during our official anniversary, we will do a lot more.

For me, October is significant because I started my publishing journey in October 1996 — 26 years is a long time to be in a business. My first published magazine was a project called Akron Business Values. I sure hope no one remembers it. I believe the only ones who knew about it were my brother, my dad and me. We sent it to 10,000 businesses, and based on the market silence, I wouldn’t say it caught on in our business community.

We could only afford to print the magazine in two colors, so we chose orange and yellow for Halloween. I think we printed eight pages and had ads on every page. My dad taught me early that you must make ends meet from the beginning.

One of the advertisers was Regal Cinemas, and they didn’t give us money for the ads; they gave us movie tickets. So part of my pay that year was seeing a lot of movies.

What we thought was going to make us different than the competition was that we were going to write articles about the advertisers, like trade magazines. That was my dad’s background. He was in the automotive trade magazine business. He worked for several years at Babcox Media in Akron, which is a business-to-business automotive aftermarket magazine publisher.

My dad’s boss at Babcox was Tom Babcox, and Tom told my dad that

whatever you do with a magazine, just keep publishing, because that market will come around. I never met Tom, but my dad passed that lesson on to me, and that’s what we have done. Akron Business Values turned into Akron Life.

That all came from the simple lesson of “just keep publishing.” Along the way, especially early on, Akron Business Values had some lousy issues. One issue was so bad that someone called me and canceled their meeting about advertising when they got the copy in the mail. But we just kept publishing and making changes.

We learned that something our audience loves is content about local food and entertainment. This month, check out our fall guide to dishes with classic autumn ingredients and fun activities on pg. 22.

Learning about your audience is key. I recently read an article about a YouTuber who goes by “MrBeast” — if you haven’t heard of him, I’m sure your kids have.

I had to look him up, but supposedly when he first started his channel, he was so bad and cringeworthy that he was hard to watch. But he kept working at it, learning how the business worked, changing and creating content. He has grown his audience to over 104 million subscribers, one of the largest audiences on YouTube. It all came down to “just keep publishing.”

Sure, we are many zeros below the MrBeast audience, but we will just keep publishing, trying to figure things out along the way to make a better magazine for you, our readers.

AKRON LIFE CELEBRATES 20 YEARS!

THEN & NOW: FUNKY WINKERBEAN 2003: Several Northeast Ohioans fill the funny pages of newspapers, and Akron Life paid tribute to many including Funky Winkerbean and then-Crankshaft collaborators Chuck Ayers and Tom Batiuk. In 1972, Batiuk, a longtime Medina resident, launched Funky Winkerbean, and in the mid-’80s, he took it from daily gags to explorations of deeper issues such as teen pregnancy. In a rare turn for a comic strip, Batiuk aged his characters in a time jump in the early ’90s, taking them out of high school and into young adult life. “I started writing more about human beings,” he says. “I wanted to challenge my characters. Probably the most prominent was Lisa’s story.” She endured a breast cancer diagnosis, with strips depicting harrowing chemotherapy sessions and a masprovided by Tom Batiuk tectomy while still finding reasons to laugh.

One of the four Black players to break the race barrier in the NFL in 1946 finally got his due in Canton.

This August, a bronze statue went up at Stadium Park memorializing Marion Motley, who started at McKinley High School in Canton and played as a linebacker and fullback for the Cleveland Browns in the ’40s under coach Paul Brown. The statue honors the Hall of Famer with a design by Canton artist Spyro Spondyl that features Motley running over derogatory signs such as “Cursed is the man who integrates.” Motley set records for rushing yards and was a part of five championship teams. With this statue, he will be remembered for generations to come.

The Woman in Black terrifying people on Medina square, a witch in Liverpool Township, a teenage boy’s ghost haunting Plum Creek Park — ghost stories abound in Medina County. Northeast Ohio parapsychologist Brandon Massullo, who has researched ghostly encounters, penned a book, “Haunted Medina County, Ohio” (Arcadia Publishing, $21.99, released in August), examining the paranormal tales of the area. The book features the Spitzer House Bed and Breakfast, where guests have heard spirited voices, footsteps and unexplained music, and have given reports of poltergeist activity and fullbody apparitions. It gets you into the Halloween spirit with tales about several other allegedly haunted locales including Cool Beans Cafe and Corkscrew Saloon. arcadiapublishing.com

Today: Funky Winkerbean celebrates 50 years, and Ayers and Batiuk are still collaborating. Lisa died in a shocking move for a comic, and Batiuk was a Pulitzer Prize finalist for her story in 2008. The strip underwent another time jump, covering challenging issues like chronic traumatic encephalopathy, and now the characters are older adults like Batiuk, who is 75. New syndicated strips continue to run today, showing characters navigating an uncomfortable high school reunion and the woes of aging on the pages of 300 newspapers. Fans can find volumes of Funky Winkerbean in books sold through Kent State University Press. As passionate as always, Batiuk doesn’t plan on stopping anytime soon or easing up on challenging storylines. “Having my characters grow up,” he says, “allowed me to find a different style of humor.” funkywinkerbean.com

In that story, certified feng shui practitioner Kate Troyer explains a guiding principle — your home is a reflection of you.

“Whatever you got going on the inside,” she says, “that’s going to show up in your space.”

At nearly seven months pregnant, I climbed a stepladder, stretched overhead and teetered to fix uneven spots left after we used a paint sprayer to paint our exposed basement ceiling white. When my husband, Tony, saw me in this precarious position, he encouraged me to get down and let the ceiling be.

It felt like I had a ticking clock in my belly, and we were desperately scrambling to ready the house for her and finish a basement renovation that began as a casual pandemic project in February 2021. We started the project with my dad to add a bathroom and finish another portion into a game room.

When we got news of our baby Izzy’s arrival, the game room became something meaningful — a playroom for our first child.

Home projects so often evolve beyond our original scope but are always an adventure.

This month’s Akron Life fall food and fun

Around our house now there is a baby gate, a jumperoo, a playmat and toys scattered about the family room. A baby swing and high chair are overtaking our living room.

Our house looks chaotic, and that’s a reflection of what life with a baby is like.

We’ve struggled with completing home projects in the past, but there’s nothing like having a baby on the way to push you toward the finish line. Although we’ve lived in our house for a few years, the only finished room is Izzy’s nursery. It was a marathon to complete — our Ikea furniture was back-ordered, Tony’s family had to drive far to pick it up and assembling it took a long time, with the dresser alone requiring over 40 steps! But it was fun to pick out pink, green and gray decor, including a pink tulle crib skirt and illustrated Etsy prints of our favorite animals — a hippo and a whale.

This is our first house, so much of what we have is hand-me-downs, and I love her nursery because it’s the first room where we picked everything out. Troyer says making

your space personal to you is what feng shui is all about.

“People get afraid of hanging things up.

There’s just no need for it,” she says. “It should be fun. It’s more about getting in touch with yourself and using your intuition.”

The perfect image of how our home should look feels unattainable. But Troyer says it’s empowering to let go of trends and what it seems you should do in your home and just do what you love. And if you change your mind, you can make changes!

When I look around our house, I’m encouraged by the little marks of ownership we’ve made: calming light blue and green paints on the walls, custom light butter yellow curtains, a roomy gray sectional from Wayside Furniture in Akron. We are new parents busy with babyproofing and an increasingly mobile baby, so we have to accept that projects will get done slower.

Improving our home is an ongoing process.

As for the basement, we finished it shortly after she was born. I am proud that we built her a safe playroom. The payoff came when we took her there at 3 months old, and we saw her sit for the first time with support in her giraffe sit-me-up. She smiled so wide and played with her toys.

Each room is a place where precious life moments happen, so don’t let the pressure of perfection stop you from taking ownership of your home.

Core Meal Tom Tieche and Jack Clampitt noticed something missing in Wooster, so in 1964, they launched TJ’s.

“There was no place in Wooster where you could get a beer and eat a steak,” says Greg Tieche, who is Tom’s oldest son.

He bought it in 1978 and renamed it TJ’s Restaurant.

Today, TJ’s is still filling a gap in Wooster.

“I have 10 daughters, and three of them are vegetarians.

Brisk Breeze Ryan Marino has fond memories of helping his father serve fall clambakes since he was 10 years old. He worked up to making New England-style white clam chowder for a catering company owned by his dad, uncle and grandfather.

“Clambakes are what started my culinary career,” says the now executive chef and owner of Corkscrew Saloon in Medina. “It’s a fun outdoor fall event.”

Now, he serves clambakes at the restaurant and at private parties where he cooks in parks, backyards and more from late September to November. Marino sources clams from Rhode Island and picks them so they’re juicy and not too small and flimsy or big and rubbery.

“I stick with middle sizing,” he says, “to get that nice succulent clam.”

He starts by heavily seasoning a Medina pasture-raised half chicken in his custom fresh herb blend, steaming it and finishing it on a hardwood charcoal grill. Next, he adds corn, which is fresh from Richardson Farms in Medina, and sweet potatoes to the steamer. Then he steams the clams. Each step adds depth.

“When they’re steaming, that starts to give beautiful flavor to the clam broth,” he says.

That rich broth is the secret to his clam chowder, which he makes from a family recipe. It starts with cooking diced bacon, spices, garlic, clams, potatoes and heavy cream. Then he adds clam broth and simmers it together for about three hours.

Choosing how to eat it adds to the experience. “I always start with the clams … while they’re fresh and hot,” he advises. Many dip the clams in melted butter, while others drink the broth and some request to take home broth and chowder in to-go containers.

His retired dad helps at Marino’s private clambakes. It rekindles the ambiance and excitement of fall clambakes that sparked Marino’s love of cooking.

“The brisk air outside,” he says, “we have the fire pit going, the steamer roaring, the smells going. It’s a good time.” KP

Family Dinner Raphael Vaccaro’s mother moved from Italy to the United States when she was 16, and he learned many traditional Italian cooking skills from her, including how to make pasta.

He still does that at Vaccaro’s Trattoria, his family’s Italian restaurant featuring fromscratch food with twists.

“I learned her style, which is traditional to southern Italy,” says the now-owner whose father started the restaurant in 1957.

“It’s the balance of what my mom and dad did at home, family Italian and then some cutting-edge creativity.”

One example of that is the fall butternut squash ravioli ($27), which Vaccaro makes from scratch when possible by creating two sheets of house-made dough in a process that takes days.

“That goes on a machine that marries them together and inserts filling as it goes through,” he says. “It’s a labor of love.”

That filling begins with roasting butternut squash, sourced locally when possible, that’s topped with salt, pepper and a little butter. He then peels off the skin and blends it into a puree. Ricotta, selected for its low sugar content and creamy texture, is mixed into that puree, but he ensures there is more of the sweeter squash so that flavor is dominant.

“I’m very true to flavors. Roasting low and slow brings out natural sugars,” he says.

Diners ordering the ravioli might encounter different variations. The butternut squash ravioli is often topped with a brown butter sauce with sage and a pinch of nutmeg and garnished with parsley for an herby, sweet dish. Toward the end of autumn when butternut squash gets harder to find, Vaccaro supplements it with roasted pumpkin and sometimes adds cinnamon. “It’s never the same,” he says, adding that he enjoys tweaking the sauce and pairing it with different proteins or veggies, such as seafood, crispy kale and blistered tomatoes, to explore fresh flavor profiles. Although he switches things up, the traditional methods he learned from his parents are still the foundation of his cooking.

Palate Pleaser Gina Giampietro creates art. The baking and pastry arts Culinary Institute of America grad uses her expertise to thoughtfully compose desserts for her Akron-based Chef Gina’s Bakeshop as if they are art pieces on display.

“You eat with your eyes first,” she says.

Her artistry is apparent in her fall treat boxes with fall macarons, caramel pecan mini tarts, a spice cupcake, a pumpkin cheesecake slice, a fall hand pie and a brownie ($30, separate cheesecake $5). Giampietro is known for her exquisite macarons, with fall flavors including pumpkin spice, brown butter cinnamon, pecan pie, bourbon chocolate, buckeye and caramel apple. The latter stands out with a green shell drizzled with caramel chocolate and filled with caramel buttercream and apple bits for a crunchy, sweet bite that’s reminiscent of apple pie.

The pumpkin cheesecake is a masterpiece that blends fall flavors with elegance. She starts by baking a chocolate sugar cookie base and mixing pumpkin with cream cheese, heavy cream, sugar and eggs. Together, they form a moist cheesecake with contrast.

“That dark bottom brings out warm tones in that pumpkin,” she says.

She shows off her culinary arts training with refined garnishes. She creates meringue by combining egg whites and sugar, cooking it in a double boiler until the sugar dissolves and whipping it with a mixer until stiff peaks form.

She dollops meringue onto the cheesecake and brulees it with a kitchen blowtorch to brown the outside, keeping the inside soft like a toasted marshmallow.

“That tiny bit of crunch with that meringue goes with the softness of the cheesecake,” Giampietro says.

Like a painter, she uses a brush to create the finishing touches.

She brushes caramel chocolate onto mint leaves, cools them in the fridge and peels them off to reveal veiny textures that mimic autumn leaves. They complete a delectable dessert that’s eye-pleasing down to the last unique flourishes.

“When it gets to fall, there’s so much pumpkin everywhere,” she says. “This is a little different.” KP

Lawyers in closely related specialties were asked to vote across specialties, as were lawyers in smaller jurisdictions. Where specialties are national or international in nature, lawyers were asked to vote nationally as well as locally. Voting lawyers were also given an opportunity to offer more detailed comments on nominees. Each year, half of the voting pool receives fax or email ballots; the other half is polled by phone.

Voting lawyers were provided this general guideline for determining if a nominee should be listed among “the best”: “If you had a close friend or relative who needed a real estate lawyer (for example), and you could not handle the case yourself, to whom would you refer them?” All votes and comments were solicited with a guarantee of confidentiality ― a critical factor in the viability and validity of Best Lawyers’ surveys. To ensure the rigor of the selection process, lawyers were urged to use only their highest standards when voting and to evaluate each nominee based only on his or her individual merits. The additional comments were used to make more accurate comparisons between voting patterns and weight votes accordingly. Best Lawyers uses various methodological tools to identify and correct for anomalies in both the nomination and voting process.

SUPPORT SYSTEM American Cancer Society programs help patients through their cancer journeys.

M

ore than 73,000 people will be diagnosed with cancer this year in Ohio. For many of these individuals, there are obstacles to overcome before they can even begin their cancer fights.

For instance, reliable transportation is a critical part of successful cancer treatment, yet it’s one of the most common challenges for patients.

In fact, transportation is the second most cited need of cancer patients after financial assistance, and it can be one of the biggest roadblocks to cancer care.

That’s why the American Cancer Society offers transportation support in two ways.

The first is through Road to Recovery, a program that matches people needing cancer treatment with volunteer drivers. The other is through transportation grants provided to health systems to meet the unique needs of people in their communities.

Here in Ohio, American Cancer Society transportation grants have provided more than 18,000 rides for 1,400 cancer patients since 2021.

Another frequent barrier patients face is the cost of traveling for treatment when their best hope for effective treatment may be far from home. Not having to worry about where to stay or how to pay for lodging allows them to focus on getting better. So far in 2022, the Cleveland Hope Lodge has provided more than 3,200 nights of lodging for cancer patients and their caregivers.

Justin is a recent guest of the Cleveland Hope Lodge. “We live over two hours away from the treatment center, and I became

too sick to travel that far,” he shares.

“Hope Lodge is making it possible for me to complete my treatments successfully.”

In addition to lodging and rides to treatment, the American Cancer Society also provides support for the emotional aspects of dealing with a cancer diagnosis. A free 24/7 helpline provides answers and support, while Reach To Recovery connects people facing breast cancer — from diagnosis through survivorship — with trained volunteers who are breast cancer survivors themselves.

Each of these services and programs, free to patients, is made possible through events like Making Strides Against Breast Cancer of Northeast Ohio.

ink is more than a color. It symbolizes our commitment as a community to combating breast cancer and alleviating the burdens of a breast cancer diagnosis.

Head Space The Brain Health Research Institute spans disciplines to make discoveries.

Kent State University’s Brain Health Research Institute is nestled within the Integrated Sciences Building, but it reaches across campus. Staff and students from 27 departments are researchers within the institute, working on interdisciplinary studies about brain health and diseases.

“It’s not just life sciences, such as biology, chemistry, physics, not just the physical sciences. It’s social sciences, like psychology, sociology, arts, humanities,” says Michael Lehman, the institute’s director and professor of biological sciences. “All those are disciplines where faculty are fundamentally interested in how the brain works.”

The institute launched in 2019, but its physical space opened to researchers, both students and staff members,

last fall. It includes a common space, conference room, individual labs and “collaboratories,” which are open-concept spaces where researchers can communicate across disciplines while sharing lab space and resources, encouraging collaboration.

“To have that sort of diversity of research is really a cauldron for creativity,” he says.

Lehman explains the institute and some of the research done there.

PROCESSING CENTER Students now have a relaxed space to hang out — a common area with tables, cushy chairs and a wavy 3D ceiling design meant to mimic brain waves.

“Nothing substitutes for actually having the space where you can have social events or lunches, or just gatherings to talk about ongoing research or sharing information, study groups, whatever it is,”

“You’re close enough so you can ask questions and see what’s going on,” Lehman says. “You gain from that exposure.”

The other collaboratory is the neuroimaging collaboratory that has advanced light microscopes, including multifluorescent microscopes with image analysis software.

Lehman says. “That’s where it’s really made the difference.”

One of the most important additions to the institute is the collaboratories.

“We decided that we would try to create these shared core facilities where investigators from multiple disciplines came together,” he says, “and give them the technology they would need to really make groundbreaking discoveries.”

The first collaboratory is the neurocognitive collaboratory for human subject research. It features behavioral testing rooms where students, community members and patients can come to participate in studies that staff or students are performing focused on higher funtions of the human brain like human cognition, sensory function and movement. There is also an open lab without walls so researchers can work together.

Then there’s the light sheet microscope. It’s currently the only one in Northeast Ohio, and it allows for a 3D visualization of a specimen rather than the typical thin 2D sections.

“This is a microscope that allows us, instead of taking individual sections, we’re going to take whole brains — whole rat brains, mouse brains and actually whole chunks of human brain,” he says.

“This captures the whole brain for us in a matter of hours.”

And since Kent State is the only area institution to have one, members of the institute’s partners, such as Northeast Ohio Medical University, Akron Children’s Hospital and Cleveland Clinic, have come to use it.

“We also extend beyond Kent State,” Lehman says. “It’s multi-institutional, as well as multidepartmental.”

CORE KNOWLEDGE Each of the two collaboratories houses its own vein of research.

The neurocognitive collaboratory is designed for human subject research about “how we think, learn, experience emotions,” Lehman says.

In that collaboratory, there is a neurocognitive testing room.

Angela Ridgel, the associate director of the institute and professor of health sciences, has used it for her research related to Parkinson’s disease. She has brought in bicycles, created in collaboration with engineers, to study the effect of controlled movement on function in Parkinson’s patients.

The neuroimaging collaboratory, which features multifluorescent microscopes, has been used by one student who is mapping out different neurons in healthy animals versus animal models of disease. And the light sheet microscope has been used for research ranging from spinal cord injuries to reproductive issues.

Lique Coolen, the director of the neuroimaging collaboratory and professor of biological sciences, has used the light sheet microscope to study

how to improve function in spinal cord injury patients, and Lehman and Aleisha Moore, an assistant professor of biological sciences and institute faculty member, used it to study the location of neurons in the hypothalamus that’s involved in reproduction and see if there were functional differences.

“In addition to serving faculty, bringing them together, we also want to train students,” Lehman says. “We want to get students that kind of interdisciplinary perspective.”

Staff members have trained some students to use the light sheet microscope, including Lehman’s daughter, a high schooler in a College Credit Plus program who is now a sophomore at Kent State and was trained by Moore while conducting research.

TOP OF MIND

Students are involved in professors’ research in the collaboratories, and other examples of student research done by the institute’s undergraduate fellows are projects focused on topics like auditory perception, learning methods, neurodegenerative diseases and more.

Here’s what some of this year’s summer institute undergraduate fellows researched.

• Alaya Kiser, a neuroscience major, studied the effects of spinal cord injuries on sexual and bladder functions.

• Speech pathology and audiology major Gabrielle Williams researched adolescent auditory perception.

“This is really assembling a world-class group of scientists, studying different aspects of normal brain function and relationships with disease,” Lehman says. “Kent State has this great tradition, essentially, of training students who’ve gone on to really contribute a lot in terms of our understanding of brain health and neuroscience.”

• Samantha Zaborowski, a psychology and neuroscience major, studied how elementary school kids learn about fractions larger than whole numbers and how procedural and conceptual learning methods affect understanding.

• Medical technology major Zoha Shaikh researched mechanisms involved in mitochondrial impairment in neurodegenerative disease and worked to identify potential therapies.

Check Up Students learn through practice in on-campus clinics.

For some students at Stark State College, a typical day of learning includes going to clinics on campus and treating real patients. Stark State has a massage therapy clinic and a dental hygiene clinic — both of which serve community members. The clinic staff is a combination of students and medical professionals who are instructors.

“It helps them understand better what they are going to be required to do when they go out into the real world,” says Kelly Reinsel, dean of health and public services. “We’ve set the tone right here with how you talk to your patients, how you address them, how you present yourself.”

What Is Offered: Under the supervision of licensed dentists, hygienists and assistants, dental students perform affordable preventive and therapeutic services including dental exams, teeth cleanings, X-rays and fluoride treatments.

What Is Offered: Get a 50-minute, low-cost, high-quality massage from a massage therapy student who has been learning how to relieve pain and restore function through massage. The massages go toward the massage hours students need for graduation.

What It’s Like: Referred to as deep root planing and scaling (cleaning below and above the gum line), these cleanings may be longer and more thorough than you are used to. Every step is checked by a registered dental hygienist or dentist. “We try to instill professionalism in them,” Reinsel says. “They understand they are working with a patient in this capacity as a student who is learning that material.” Since it’s an educational facility, it takes multiple appointments to complete a full cleaning.

What It’s Like: There’s always at least one certified licensed massage therapist present, so the experience mimics the professionalism and cultivation of relaxation you are used to. “It’s very calming,” Reinsel says. “There’s soothing music.”

To all the diehard Ohio State University football fans who hate Michigan during the football season, do not hold the following against me: One of my favorite wineries to visit during fall is Leelanau Cellars in Michigan.

Founded in 1974 on the Upper Peninsula, it is one of the top regional wine producers in the Midwest, producing over 200,000 cases annually, while remaining family owned.

Every year when we get into fall, I immediately go to the Witches Brew collection, which was first introduced in 1997. The exciting thing this year is that not only is Witches Brew spiced red still available, but Leelanau expanded its offerings to further enrich your fall experience by adding Witches Brew spiced apple and pumpkin spice.

This is a mulled spiced wine made from natural grape wine perfect for autumn nights. Try serving it warm with a cinnamon stick and a shake of nutmeg or drink it hot on especially chilly nights.

The spiced apple is made from an apple wine base of fermented apple juice. It may seem similar to cider, but cider is fermented apple juice that is 8.5 percent alcohol by volume or lower, while apple wine is higher than 8.5 percent alcohol by volume.

It tastes bright and crisp, like apples in a bottle, with notes of cinnamon and brown sugar on the nose. It’s refreshing after a day of raking leaves and can be served chilled or warm.

Also made from fermented apple juice, seasonal spices are added to bring fuller flavor. With autumn spices and notes of clove and ginger, this wine is a fun way to make pumpkin carving that much more enjoyable, whether you drink it cold or hot.

Meats, produce and appliances — all were sold at Kollman’s Supermarket, one of the first grocery stores in Twinsburg Township.

B.W. Kollman, a captain of the volunteer fire department, bought it in 1953 and ran the store pictured above on the town square across from the library and old Ravenna Road fire station.

Around 1957, Kollman tore down the first building, built a brick building in its spot and ran a location of the Akron-Youngstown grocery chain, Sparkle Market. Kollman sold the building to

the Bissell family, and his sons later ran a larger Sparkle Market store elsewhere until about 1988.

While the Kollman family left the supermarket business, B.W.’s son, Scott, graduated from Ohio State University with a horticulture degree and opened Kollman’s Greenhouse on Ravenna Road in 1972. Now, the property has expanded to an acre under glass and has several greenhouses including a historic 1928 greenhouse from the Rockefeller estate. Scott’s daughter, Betsy, runs it, marking a third generation of Kollman family businesses in Twinsburg.
