Godspeed Sarah / Farewell to a feline friend /

One of my heroes died today. She wasn’t anyone you would know. Her name was Sarah, and she was my cat for 18 years.

One day in the busy parking lot of the Saalfield Building in lower Akron, a tiny grey and white kitten emerged from under the bed of a pickup truck. She opened her mouth wide and gave me the loudest cat yowl I had ever heard from such a small kitten. I looked down and saw that there was another tiny kitten with faint tiger stripes quietly sitting behind her. I couldn’t leave them in the busy parking lot to meet almost certain death, so I picked both up and put them on a small grassy knoll that sat behind the lot, hoping their mother was nearby.

But as I walked toward the building, in which I had a small office on the fourth floor, a man holding the door for me as I entered said, “Looks like you’ve got a posse.” I looked behind me, and there was my posse consisting of two confidently walking grey and white kittens. I did the only thing I could do: I held the door open for them as they struggled to climb over the 4-inch door sill. Then, I held the elevator door, and they gamboled in for a ride with me up to the fourth floor. They lived there for the next week as I wrestled with what to do with my new charges.

I realized that I’ve never sought to own any animal, great or small; they’ve somehow come to me, needing a home or some help. I reflected on the bravery of this little kitten to approach me — of all the people who had walked by her that day — to yowl for help for her and her sister. I took them home and bathed them in flea soap; they were infested. Although I had several offers of adoption of one or the other, within six weeks I realized these animals were my new wards.

At the time, our household consisted of two human adults, an adult black female cat named Shadow, and two 2-year-old Keeshond mix puppies, Indy and Keesha. Sarah and Alice, as I named the new additions, fit right in. They took orders from Shadow, played with the puppies and slept on their soft fur at night.

As they got older, they began to sleep with me. I regretted teasing Sarah by wiggling my toes under the covers so she would pounce and bite. It was a fun game to play until one night during a period of Restless Leg Syndrome, I unconsciously wiggled my toes outside of the duvet. She attacked my toes with such ferocity that I limped for days afterward.

After Shadow died and Sarah became queen of the household, she started hissing and batting at Alice who, being so shy, backed away and hid. Alice was always the sickly one in the family, like Beth in “Little Women.” Sarah then took up with the dogs, and when they passed away, she took up with the new pup, Juneau, and eventually the big dog, Buster, whom we adopted last spring.

Over the winter, Alice succumbed to her many ailments. Sarah seemed like she may go on for many more years. However, this spring she began to lose weight. I altered her diet and gave her all the foods she loved – the stinkier the better. Finally she stopped eating altogether.

On her final night, she climbed weakly onto the bed and laid on me, as she had done hundreds of times, but this time she was too weak to climb down. I helped her into her favorite chair and left her, knowing that cats prefer to die alone. When I came back to check on her, she had climbed down from the chair and was stretched out on the living room rug. The dogs checked on her from time to time, but there she lay until her death.

I buried her under the walnut tree in the backyard and placed a small white picket fence around the grave. She has always been one of my heroes, and the memory of her bravery will live with me for the rest of my days. Godspeed Sarah.

Getting My Grill On moment and get instant results. You have to plan ahead and leave time to sip a gluten-free cider while you’re waiting.

For as long as I can remember, my parents have owned the same grill: A red Weber kettle that my grandfather won at a Father’s Day Indians game in the early ‘60s.

It takes resourcefulness; when a hot dog slips between the grates, you have to be ready to replace it with some farmers’ market pattypan squash or a meaty slice of Portobello mushroom.

When I was growing up, my dad would sit in our backyard, reading a book and waiting for the coals to turn grey. My mom would prepare whatever was being grilled and send me out with the tray, and I would watch my dad carefully place the chicken breasts or burgers on the hot grates and cook them to perfection.

So when my husband and I were talking about buying a grill for our own home, there was no doubt in my mind: It would be a Weber charcoal grill. I know many guys love the thrill of the grill but my husband, the Eagle Scout, had told me one too many stories of campfires that had turned into raging infernos — on purpose — and because I prefer my food grilled, not blackened, I decided to take the helm.

But grilling, I soon learned, is not for the faint of heart. First of all, it takes patience. It’s not something you can do at the spur of the

If you want a professional opinion on your home-brewed beer, just ask Mike Slawienski.

Several years ago, Slawienski received a home-brewing beer kit as a gift from his brother-in-law. It didn’t take long for him to become hooked on the art and science of beer-making.

After winning brewing competitions and gaining the respect of internationally known beer experts and judges, Slawienski decided to become a judge himself. It took several years of tests, training and apprenticing, but he finally received his certification through the Beer Judge Certification Program.

Although he doesn’t compete anymore, Slawienski continues to hone his home-brewing skills by creating a beer for his family using heirloom hops. The hops are grown from cuttings of the same plant used by his wife’s greatgreat-grandfather as a brewer and agricultural expert in Germany. This unique beer is only served at special family events.

Today, Slawienski’s one tough critic when it comes to crafting the perfect draft. Known for his educated taste buds and extensive knowledge of barley and hops, his expertise is often sought to help judge the best brews in the world, and he’s got the passport to prove it.

What do beer judges do? What do you look for when judging beer?

MS: We’re able to use our knowledge and give these people feedback on what they can do to make their beer better. ... There are people who pour samples ahead of time and present it to us. We’ll look at the beer bottle itself and see if there are any sediments. Is the beer cloudy? Then, we’ll open it up and pour it. We want to look at the quality of the head and how long it lingers there. We’ll judge colors; there are scales from light yellow to black, reds and in-betweens.

Which competitions have you judged?

MS: I’ve judged the Helsinki Beer Festival a couple of times and the Ohio State Fair. I’ve judged competitions for the Winking Lizard locally, and I’ve judged a lot of homebrew competitions in different states, from Buffalo to St. Louis.

Do beer judges get any special perks?

MS: Sometimes we’ll get housing. People feed us very well when we judge beer. Sometimes we get to try beers that are absolutely awesome that the general public cannot get.

Sometimes there are beers made at home that are better than the commercial beers.

What’s your favorite style of beer?

MS: My favorite commercial beer is Duchesse de Bourgogne. It’s a Flanders Red beer, and It’s complex with sweet and sour notes.

For home-brewing beer or beers I’d want to drink in mass quantities, it would be a Dunkel or a German Black Lager. They’re more common in Bavaria. They’re malty and sweet and have notes of chocolate in them.

You home-brew draft beer. How long did it take you to find a recipe?

MS: Sometimes you get better as time goes on. The thing about home-brewing beer, as opposed to commercial beer, is it’s hard to reproduce the same beer over and over again.

Beer is a lot like cooking as far as consistency.

There’s certainly a science.

Are you as tough on your own brews as you are on others during competitions?

MS: I’m very critical of my own beer at home. When my friends drink it, they say, ‘This is really good,’ and I’m like, ‘Yeah, it’s drinkable but I didn’t get the alcohol content that I wanted’ or ‘There’s a certain flavor that is missing.’

Can you tell me about your day job?

MS: I’m the owner of Cleveland Associated Veterinary Specialists, and I am a board certified veterinary surgeon. I’m a surgical specialist and diplomat of the American College of Veterinary Surgeons.

Right now, I have a mobile business that goes into a vet’s office to do more difficult surgeries, like orthopedic and soft tissue surgery.

How does your family feel about your role as a beer judge?

MS: If it wasn’t for the support of my wife, Liesl Bigge, and my kids: Corinne, Adam and August, I wouldn’t be able to do it. Not everyone would be allowed to go to Europe with their buddies to judge beer in a foreign country. A Bird in the Hand / Celebrating an unsung hero: the idiom /

This morning I almost cried over spilled milk. Lord knows I wanted to.

Milk is a precious commodity around this house. Our family cow, a diminutive Dexter named Amalea, is ornery as the day is long and, while she doesn’t mind being milked per se, Amalea doesn’t prefer the confines of the hand-built milking parlor once her feed has run out — and it does run out fast. Many are the mornings when my wife, the expert milker on our little homestead farm, enters the house cursing our heifer’s very name over a laundry list of bad behaviors and deplorable habits.

So this morning, when I accidentally spilled a splash — just a tiny splash — of that hardwon milk, I wanted to shed a tear for that lost tablespoon of high butterfat, liquid gold.

Don’t cry over spilt milk. You know what that phrase is, right? It’s an idiom, a well-known phrase that carries a broader meaning than the specific image it describes. I love idioms.

I understand that creative writing teachers across the globe, my college mentor included, would tsk me for this admission — an idiom is on par with the dreaded cliché when it comes to original phrasing and descriptive language — but I find that, especially in spoken conversation, a well-placed idiom can add a splash of color to almost any dialogue.

Our farm houses many chickens, including a few broody ones who try to hide back a “nest egg” from us, and it’s not uncommon to discover one of our five hogs struggling to free him- or herself from a tight space — a “pig in a poke.” A cow on pasture really will stay away from home for a long time, and my wife is convinced that “kicking the bucket” is a phrase derived from what a dairy farmer wants to do to a cow that knocks over the milk bucket with her back hoof.

My favorite idiom is “Lord willing and the creek don’t rise.” I’ve been known to hold court for hours on the theological/sociological/philosophical implications of this phrase, and I’ve even threatened to write a lengthy essay (or, when I’m feeling my oats, even a book) about the ocean of meanings I interpret in both its existence and the place it holds in modern vernacular. But there’s also a dry, rocky creek bed by my house that fills up fast during rainfall, and a chance of precipitation means some of my neighbors aren’t getting to work the next day — and, recently, it seems like when it rains, it pours.

Idioms are especially interesting to me now that I’ve left behind the safety of suburbia for the great, wide, tick-infested open of country life. While etymology and phraseology have always been special, if nerdy, interests of mine, I’m surprised how many idioms shed their symbolic meaning when one’s tromping around an agricultural landscape.

With so many idioms rooted in pastoral realities largely lost to the past (my homesteading life excluded), I fear the Golden Age of the idiom is also fading in memory. Equine ownership is still pretty big in my homeland of Kentucky, but the general population member will likely never have to hold his or her horses or fight the temptation to check the chompers on a generously gifted stallion.

Not only do I now stifle fat, salty tears over a wasted splash of milk, but I also have two baskets for the eggs we collect daily. (Also, we split our chickens up between various coops, but “put all your eggs in one basket” rings truer than “house all your poultry in a single coop.”) My pair of farm dogs tussle every minute they’re not asleep, and everyone in the family has learned to enjoy the quiet moments when they’re curled up, exhausted

If we aim to preserve this unique and special breed of phrase — and I feel strongly we should — it’s imperative that, in addition to keeping the idioms of old alive and well in our daily speech, we start thinking about the future generations of idioms, phrases that seem mundane to us now but will carry a special weight of outdated obfuscation to our children and grandchildren. I’ll get the ball rolling with a few I’ve been working on of

late …

Broadband after dialup. The elation one feels after overcoming a time of great hardship. “It was broadband after dialup when the contractors finally said our bathroom renovation was done.”

Weekend Walmart. An event so chaotic and stressful it induces a near-death experience.

“The dogs got out, and it was a weekend Walmart getting them back inside.”

Gym member on a fresh sidewalk. A person who doesn’t see the value of what’s right in front of him or her. “She drives 20 miles to the grocery store to get vegetables, and the farmer’s market is half a block away from her house. Total gym-member-on-a-fresh-sidewalk move.”

Phone conversation. Something old-timey and antiquated; a waste of time. “He keeps trying to change the oil in the hovercar instead of just inserting the EZ-Change capsule. It’s such a phone conversation.”

I hope you agree with me that the idiom is a rare linguistic joy, one to be treasured and protected at whatever cost, and my challenge to you is twofold. First, use as many idioms today as you can; if possible, speak only in idioms (you’ll know you’re succeeding when coworkers and family members back away frustrated and confused). Second, try to come up with at least one new idiom you can add to the common language to freshen things up.

I believe both of these actions will help preserve idiomatic dialogue, though I understand I can’t make you do either — you can lead a horse to water, but you can’t make him drink. / Rodney Wilson is a freelance writer who can still be found slumped over his laptop, rewriting a young adult novel and, as always, listening to Taylor Swift.

with bulldog-like tenacity. If at first you don’t succeed, try, try, try again and again.”

David Glasgow was in high school when he first saw a performance by the Bluecoats Drum and Bugle Corps. The minute he heard them, he was hooked.

The band director had taken Glasgow and his band mates to Ypsilanti, Mich., in 1993 to attend a competition of 25 drum and bugle corps.

“The Bluecoats were the first corps to perform that made me say ‘Wow!’” he says. “I knew from then on that I needed to be in the Bluecoats, and I ended up marching in the corps from 1998 to 2001.”

Since 2004, Glasgow has served as the group’s executive director. He was also assistant director in 2003, tour coordinator in 2002, and served his last two years in the corps as drum major.

Founded as an outreach program of the Canton, Ohio Police Boys’ Club and with a name that honors Canton’s retired police officers, the Bluecoats organization began in 1972. Since 2001, the corps has finished in eighth place or better, winning its first medal in 2010 with a third-place finish at the Drum Corps International (DCI) World Championship Finals.

The Bluecoats are a 501(c)(3) nonprofit made up of 150 young men and women between the ages of 15 and 22. The corps travels more than 10,000 miles each season and competes in about 30 performances as part of DCI’s annual tour. The members rehearse up to 14 hours each day to perfect their 11-minute competitive program.

Glasgow says the Bluecoats’ typical season last about three months. They spend a month in spring training at Denison University in Granville, Ohio, learning the show and preparing to perform. Then, they hit the road for two months. The season ends at the DCI World Championships in Indianapolis in early August.

What makes the Bluecoats different from the average high school or college marching band?

While most bands can use any instrument they choose, drum corps only use brass and percussion instruments. Glasgow describes drum corps shows as “more visceral and physically demanding than most as we have the luxury of many more hours of rehearsal to perfect our program.”

The Bluecoats also have the opportunity to select from a large pool of members from not only Northeast Ohio, but the entire world.

Every year, around 700 people audition to fill 150 positions in the corps.

“In the marching arts, we consider ourselves the best of the best,” he says.

On a typical competition day, the Bluecoats will have traveled from another state the night before, so after they arrive at their housing site — usually a high school — the members will typically sleep four to five hours on the gym floor.

“They wake up, eat breakfast, unload the equipment truck and then go rehearse for two to three hours. They then eat lunch, rehearse for another three to four hours, eat dinner, clean up the school, pack-up and drive to the show,” Glasgow says. “After a 30- to 90-minute bus trip, the band members will arrive at the show site, warm-up for two hours, do the show, have a snack, load the equipment truck and get on the bus for another trip.”

Being a member of the corps changed Glasgow’s life in many ways.

“It taught me how to live and work with others as a team in the challenging circumstances of traveling around the country sleeping on buses and gym floors. It taught the meaning of hard work,” he says.

“My experience as drum major taught me important leadership and managerial skills as I was the student leader in charge of the 135 students in the corps, at that time. Most important, it taught me how to pursue success

Now in an administrative and managerial role with the corps, Glasgow’s challenge is to produce a top-notch educational program for young people and constantly improve on that experience, while making sure the Bluecoats have the necessary resources.

“With the costs of travel, four meals a day, facilities and more, we’re an expensive activity,” he says. “Attending our show on June 21 in Akron is a great way to not only enjoy an amazing show, but also help support the Bluecoats.”

Glasgow says attendees who have never been to a Bluecoats show can expect to be blown away by this performance.

“The pure volume of sound and excitement of each corps is unmatched by any marching band you’ve ever seen. The color and the precision will also really impress you,” he says.

“Seven of the very best marching ensembles in the world will be there on display to create an evening of entertainment you’ll never forget.

Catholic Charities Annual Monte Carlo Night 1

J.W. Didado Electric presented the 8th annual Monte Carlo Night, March 15, to benefit Catholic Charities of Summit County. The St. George Family Center in Akron was the venue for the St. Patrick’sthemed event.

About 600 guests enjoyed the open bar and heavy hors d’oeuvres, received $300 in funny money, and won prizes in Vegas-style games, a mini reverse raffle, and silent and oral auctions. Live entertainment was provided by The Fret Daddies and bagpiper Ray Givens.

More than $60,000 in proceeds from the event will support the Emergency Assistance Programs (Rent/ Utility Assistance, Food Pantry and Hot Meals Program) of Catholic Charities of Summit County.

hen Ivan Lefkowitz started cooking at the age of 9, it was due to necessity. His mom, he says, wasn’t a good cook so he began preparing food for his family’s meals. After 30 years in the restaurant business, he still enjoys feeding people and making them happy with his recipes.

“Cooking has got to be a passion with the hours and the craziness of it all,” he says.

“Gas doesn’t give barbecue the flavor it deserves.”

Lefkowitz, owner of Ivan’s Diner in Fairlawn, also specializes in catering, and he especially enjoys preparing smoked and barbecued meats. Most recently, his culinary gadget of choice is a smoker/grill combination made from the back end of a 1958 Ford Edsel. It was custom-made in Section, Ala., the heart of the Southern barbecue belt, and Lefkowitz drove it back to Fairlawn on a flatbed truck.

Painted black with red-orange flames, tailpipes that burp smoke, and headlights that are illuminated with battery power, Lefkowitz’s Edsel has become a conversation piece.

He transports it to catering sites with a trailer and uses it to grill burgers, fish and kabobs, smoke pork butts for pulled pork, and roast cornon-the-cob. “Pretty much anything works,” he says, although he personally likes St. Louis-style two-anddown lean pork ribs with a side of scalloped potatoes.

Lefkowitz uses charcoal and cherry wood in the Edsel because “it brings out the flavor in the meats,” he says, adding that “Gas doesn’t give barbecue the flavor it deserves.”

he second you walk into Lager Heads, at the intersection of Abbeyville and Hamilton roads in Medina, your senses awaken. A song by Tom Petty plays on the radio, and a sign behind the bar states, “Beware Pickpockets and Loose Women.” But mostly, you smell hickory, infusing its strong, sweet flavor into brisket, chicken and pork in the smokehouse out back.

Brothers Matt and Jon Kiene opened Lager Heads a decade ago in the 1860s-era post office that sits just down the road from where they grew up. Matt, who was in outside sales, and Jon, who worked in the drywall business, had grown tired of the everyday grind and decided to open a restaurant specializing in smoked and barbecued entrees.

Matt never took formal culinary classes but he learned to cook while in college.

“If I had a break between classes, I

would go back to the apartment, and there was nothing on the TV but cooking shows in the afternoon,” he says.

“Before too long, I was hooked.”

Four years ago, the Kiene brothers opened an on-site microbrewery, and today, they produce seven beers which are distributed throughout Ohio. They also plan to move the brewery to the Square in Medina and open a tasting room. A small brewery will remain at the restaurant for experimental brews.

For new guests, Matt suggests pairing the brewery’s “Bed Head” Red ale with the restaurant’s signature wings which are dry rubbed, smoked, grilled and then slathered with one of 13 sauces.

hether it’s a steamy summer day or the mercury has fallen to 20 below, you’re likely to see “Mr. Jeff,” cook and manager of Pammie’s Restaurant, slinging spare ribs on the Copley Road eatery’s huge charcoal grill out front.

The restaurant, formerly known as Sammie’s Steak and Lobster, was founded in 1998 by Jeff’s late brother, Sam. Today, Sam’s daughter, Pam Ford, is the owner and namesake of Pammie’s. She and her uncle have opened a second location on East Cuyahoga Falls Avenue. They also have plans to open sit-down locations in Cleveland and Canton, as well as a food truck.

“I think my dad would be so proud,” Ford says, fondly remembering time spent as a 12-year-old in the kitchen with her father, as well as the early days when Sammie’s was just a grill on wheels. “We still use my dad’s sauce recipe.”

Jeff says he’s able to keep consistency in Sam’s sauce by having it made in Chicago and, he adds, “We hope to have it on grocery shelves soon.”

Pammie’s also caters festivals and parties and is a favorite Akron stop for rapper Too Short (who, Jeff says, is a fan of Pammie’s mac ‘n’ cheese), R&B artists Full Force and Beyoncé’s gal pal DJ Diamond.

In addition to daily specials, Pammie’s Soul Food Sundays feature Southern-style entrees like smothered pork chops, oxtails and fried chicken, and sides like spicy succotash, black-eyed peas and corn bread.

n the Old West, the chuckwagon chef usually bore the nickname “Cookie.” For Dante D’Avello, his title is three-fold: chef, founder and “Grand PoohBah” of Totally Cooked Catering in Cuyahoga Falls, Totally Cooked To Go in downtown Akron, Totally Cooked BBQ Company and the new Totally Cooked Lunch Dock in Akron.

With a bandana on his head and a set of tongs holstered in his apron, D’Avello is a natural in front of the grill on his 18-foot chuckwagon. Nestled in an industrial parkway on Tallmadge Avenue, the Lunch Dock provides a casual lunchtime eatery for local workers.

“Being Italian, I fell in love with cooking because of the family dynamic. Everyone draws together around a good meal, breaks bread and shares stories of the adventures in life. Those of us that enjoy cooking are enriched with a sense of love and passion because our hearts are filled with sheer joy to make people happy,” he says.

You could also hurt yourself doing pushups, if not done correctly. Although those types of DVD programs are considered extreme, some of the incorporated workouts, such as yoga and stretching, are beneficial especially when modified. There are many activities that don’t require vigorous movement such as walking, swimming and Tai Chi, a form of low-impact martial art that helps to improve balance, circulation and concentration.

O

ne way for many people to invest in the stock and bond markets is through mutual funds. These are pools of money from several investors who have a similar goal, such as capital appreciation or high current income.

The money is invested by a professional manager into a group of securities, known as a portfolio.

Although they have risk and aren’t for everyone, mutual funds are the choice of many people who have long-term investment goals.

One key reason is that mutual funds use professional management. Many people lack the time or expertise to keep up with changes in the market. The portfolio manager has the knowledge to figure out what to buy and what to sell.

Mutual funds are also diversified. The combined assets of hundreds or thousands of investors allow the portfolio manager to buy a range of different securities that fit the investment objective of the fund. This can spread out the risk of the portfolio because different securities will perform better at different times.

Diversification won’t eliminate all risk, of course, but it may help.

To help you keep track of your investments, mutual fund companies provide regular reports on your investments. These will help you track your performance and make life a little easier at income-tax time, rather than having numerous separate securities to monitor.

There’s another reason that mutual funds are popular with many investors: Many funds have low minimum investment requirements. That makes them affordable to many different types of investors and allows you to make regular investments rather than a large lump-sum payment.

Investing involves risk, including potential for loss.

Diversification and asset allocation do not assure a profit or protect against loss. Foreign investments involve greater risks than U.S. investments, including political and economic risks and the risk of currency fluctuations.

Bonds are subject to interest rate risk and may decline in value due to an increase in interest rates. The S&P 500® Index tracks the common stock performance of 500 large U.S. companies.

Thinking About Retirement? ... Have a Plan

ccording to Thomas M. Presper, Certified Financial Planner with Millennial Group, an Akron-based wealth management and investment firm, the road to retirement boils down to three simple words: Have a plan.

“That’s the first step,” he says. “It’s not like it was when our parents used the three-legged stool: Social Security, the pension and their savings. The Boomers are missing the savings leg of the stool. It’s important to know how to spend when you retire.”

Presper recommends future retirees to take a hard look at their debt. Having none is an advantage, he says, but if there’s some to pay off, make sure that it fits within a budget and the interest rates are competitively low.

With less debt, it becomes easier to build a savings.

Another factor to take into consideration, Presper says, is health care, especially if you plan to retire before 65.

“It’s a big struggle for Boomers. Employees aren’t offering health care for

retirees. They either have to go to the (Affordable Health Care Act) exchange or work until 65 and get on Medicare,” he says.

Presper notes that even with Medicare support, new retirees can see their savings dwindle without an employer-based plan if faced with mounting health care costs.

“Those four things are very important to have in place as Boomers are retiring,” Presper says. “Changes in health happen, and you need to be prepared.”

St. Francis Vineyards and Winery is located in Kenwood, directly across the wine road from Chateau St. Jean in the heart of Sonoma County.

Carneros and Alexander Valley juice. This wine pairs very well with chicken, salmon, pasta with white sauce, and it’s great as a sipping wine with friends. It retails for $14.99.

St. Francis was founded by Joe Martin and partner Lloyd Canton in 1979. Before that, the vineyards started in 1971 with the growing and selling of grapes — 22 acres of Chardonnay and the first plantings of 70 acres of Merlot in Sonoma Valley. In 1983 the business hired Tom Mackey as its first winemaker, and the focus turned to making quality Merlot. As St. Francis Winery grew and achieved awards and critical acclaim for its robust flavorful wines, the winery became known as the “House of Red Reds.”

Today with 400 acres of Estate Vineyards in Sonoma Valley and the Russian River Valley, their new generation of winemakers, Katie Madigan and Chris Louton, continues the long tradition of elegant, fruit-driven wines from Sonoma County grapes. St. Francis is a Certified Sustainable family-owned winery that has been recognized for its work to conserve nearby creeks and waterways. When the winery was built in 1999, it included a solar energy system, and the business continues its mission to go green and preserve Sonoma County for future generations.

2012 St. Francis Chardonnay is an outstanding wine from an excellent harvest that had ideal weather and an abundance of exceptional fruit. With warm moderate temperatures that produced no rain, cold weather or heat that spiked up and then back down, the wine developed the perfect state of ripeness. The Chardonnay was picked at night to preserve the wine’s flavors, aromas and acidity. After press, the wine is aged six months in French oak barrels. The wine will go though partial malolastic fermentation that will give the juice a rich distinctive finish. Grapes that produce this Sonoma County Chardonnay come from the winery’s Lagomarino Estate vineyards in the Russian River Valley, with select

Sauvignon, 28 percent Merlot, 14 percent Syrah and 28 percent Petite Sirah, and the remainder includes a splash of Cabernet Franc, Petit Verdot and Malbec. Red Splash is an excellent red wine that’s full-bodied and full of flavors. Though the blend may change from year to year, St. Francis winemakers hand-pick and harvest this wine with Sonoma County fruit. The blend starts with a 14-day fermentation and is then barrel-aged for 15 months to develop its flavors and complexity. If you’re grilling, this is an excellent choice, and it also pairs well with salmon, cheeseburgers, lasagna and pepperoni pizza. It retails for $9.99.

World Beer Festival is June 14 Head to Jacobs Pavilion at Nautica, 2014 Sycamore St. in Cleveland

After a successful premiere in 2013, the World Beer Festival returns to Cleveland this month to wreak havoc on your taste buds. Festivities will be Sat., June 14, under the Jacobs Pavilion at Nautica.

Brought to you by All About Beer magazine, this event offers attendees the luxury of sampling over 200 craft and international beers.

General admission and VIP tickets are available, and each ticket holder receives a souvenir glass, 40 beer tickets and access to the Art of Beer Experience, which includes beer ingredient samplings, pairings and educational seminars.

VIP pass holders will also be treated to early entrance, access to a bonus selection of beers not available to general admission ticket holders, a private entrance, hospitality area and bathrooms, a festival commemorative gift and a food buffet.

This year, organizers have added The Taste of Belgium beer section. Presented by Duvel Moortgat USA, this section will solely feature Belgianstyle beers. A representative will be on hand to educate attendees and discuss Belgian styles as part of the Art of Beer presentations.

Food is available for purchase, and live music will entertain guests throughout the festival.

General admission tickets are $40, while the VIP treatment is available for $75. The fest runs from 1 to 5 p.m., and VIP tickets allow entrance an hour early.

Off the Beaten Path Unexpected food finds in Canton Canton may be the home of all things professional football, but when it comes to food (and if you look deep enough), there are a few hidden treasures that will satisfy your palate.

Beyond downtown Canton and its First Friday allure, these longtime eateries have been staples of the city for locals and other Northeast Ohioans.

Tim’s Tavern

In the 1960s, this restaurant was a magnet for visitors of the nearby Meyers Lake Amusement Park and served as the go-to lunch spot for industry workers. Although Meyers Lake closed in the mid-’70s and the ’80s brought corporate downsizing, Tim’s continues to be a popular destination. The shadow of the amusement park has been replaced with newer residential homes and condos, and the neighborhood bar remains a busy gathering place, Triner says.

“Although everything around the lake has been built up, and the companies like Timken and Ford aren’t hiring like they were before, we still keep busy,” he says. “Being involved with the community, the Chamber of Commerce and the Rotary Club helps.”

Since 1957, Tim’s Tavern in Northwest Canton has been known as the place for beer-battered fish. The restaurant’s original owner, Tim Triner, was a professional baseball player with the Hartford Braves, Boston Braves and Milwaukee Brewers, and he was the one who crafted the original fish recipe.

Back then, 20 cents could afford you a piece of fish with a draft beer.

Triner was also a pitcher for Canton McKinley High School during its state championship run in 1939. Greg Triner, who became the owner of Tim’s after his father retired, says his father’s local fame helped the business grow.

“His popularity brought people into his ‘beer joint,’” he says. “When he developed the fish recipe, he kept going with it for a long time.”

The entrance to the restaurant is an unlikely combination of history and décor: nautical-inspired artwork and a large mural of the amusement park. In addition to its popular beer-battered fish entrees, Tim’s menu features fresh burgers, fried chicken and homemade soups.

“We always have good quality fish and service at a cheap price. We have a lot of out-of-towners, especially during Lent, which is our busiest time,” Triner says. “We get people from Dover-New Philadelphia to Cuyahoga Falls. A lot of them say they haven’t had fish until they ate Tim’s fish. It’s mild-tasting, light and flaky, plus they don’t mind traveling that far for it.”

Baker’s Cafe '33

Owner Jeff Hendershot says “the lovely Southwest end of Canton” serves as home to Baker’s Cafe ’33, a small restaurant across from Ohio 800 and The Timken Co. Although it looks like the last place you’d see a café, don’t let the outside fool you; it’s one of Canton’s best-kept secrets.

Originally called First Chance, Last Chance, Hendershot says Baker’s Cafe ’33 was ”the first place to get a beer if you were coming to Canton, and the last place to get one if you were leaving.”

Hendershot first worked for thenowners Jack Averez and Manuel Martinez, whose father was the founder. Today, Hendershot and his wife, Midge, run the restaurant.

Known as a beer and burger joint, Baker’s has enjoyed plenty of success for its no-nonsense ’70s-style ambience and impressive food and service.

Technically, there’s no menu; the list of dinners are posted and updated on a chalkboard.

“The quality of our food keeps us well-known. We use top-quality beef, and we do it on an old-school flame broiler,” Hendershot says. “All of (Continued on page 12)

“Manuel Martinez was a member of Firestone Country Club around 1986. He was from the same Spanish province as golfer Severiano ‘Seve’ Ballesteros,” Hendershot recalls.

“When Seve came here for the first time, he and Manuel connected.”

From then on, Ballesteros dined at Baker’s and recommended the restaurant to other professional golfers when the PGA Tour stopped in Akron.

“It turned into a great big animal,” Hendershot says of the influx of golfing talent who visited Baker’s.

“Next thing you know, here comes Lee Trevino, then Greg Norman.

They still continue to come here, like Sergio Garcia and Steve Stricker.”

The walls of the restaurant are covered with framed and autographed photos of pro golfers past and present, like Payne Stewart and Vijay Singh, who enjoyed the eatery’s fine-cooked steaks and fresh desserts.

Hendershot is grateful for all the success the restaurant has provided with its unique niche.

“It’s an old concept, and we try to continue that. We’ll have people come in who once lived here and then relocated, and they’ll say, ‘After 30 years, I had to come back here to eat,’” he says. “It’s mind-boggling how and why we are so successful.”

Change is good in Stark County.

While living in Canton for most my adult life, I’ve made many the commute to Cleveland for work, and I’ve constantly suffered through this conversation with my Northeastern co-workers.

Clevelander: “(Event/Store/Person) is in/from Akron-Canton.”

Me: “Actually, it’s Canton.”

Clevelander: “Same thing!”

From my experience, some of these Cleveland folks think we all look alike.

Well … maybe that’s true.

Us 330ers do live in a vibrant area.

Like our cousins in the Rubber City, we have a beautiful city. Its art, music and food make it a go-to destination for any Buckeye. Living in Canton for nearly four decades, I can attest to the everchanging landscape of my city. And I’m proud to share it with you.

During my younger days, I was here for Mother Goose Land, the annual Stark County Fair and of course, the Hall of Fame Parade. I cruised Monument Park with high school friends on spring days and donned my red and black for the McKinley-Massillon game in the fall.

As the years have gone by, I’ve seen firsthand how Canton has and is currently undergoing a cultural rebirth. As a child, downtown Market Avenue was the gathering hub for the local buses during the day yet quiet and uninhabited at dusk. Now, it’s a thriving lunchtime destination and vibrant center of nightlife entertainment including the monthly First Friday. The Arts District pumps new blood into the heart of downtown, making it the popular summer hangout for any Cantonite.
