A LETTER FROM THE AUTHOR Welcome to my mini recipe collection. I spent so much time curating the perfect group of recipes for every meal and every mood that are sure to please anyone of any size, age, or appetite! Hello reader! My name is Alyssa. I have been interested in the kitchen since I was old enough to see the top of the counter. I grew up around many different food experiences with traveling and having family with the same passion to support my peaking interest. From the young age of 6, I used to pretend to run my aunt's cafe, taking orders and helping when I was allowed to prepare orders on the weekends. I was the youngest food boss out there. As I got older, my interest continued to grow and my skills improved immensely. This was something I loved with and saw myself having so much potential to get better at. While some consider it a task, cooking is my whind down from the day. My happy space. I have gained confidence in my skills and recipes, leading me to create this mini collection of my best and favorite recipes to share with whoever comes across it. Even if cooking/baking isn't your favorite part of the day or you might feel that you aren't the best at it, stick with it! This book is here to encourage you to give being in the kitchen a new meaning or new approach to your meals. I can't wait for you to try them and hope they bring smiles to you and those lucky enough to enjoy it with you.

With lots of sugar and spice,

Alyssa

AVOCADO TOAST READY IN 20 MIN

If I’m being completely honest here, I would be content eating toast for breakfast every day. There is so much potential to unleash your inner artist, playing around with different breads and toppings. Don't be afraid to play!

INGREDIENTS

DIRECTIONS

Base: 1-2 slices of your favorite toasted bread

Toast bread to your desired toastiness.

1 Avocado, smashed(1/2 per slice)

Smash avocado in a small bowl and add in salt and pepper to your liking. Once the mix has been mashed to a smooth, spreadable texture, apply half of mixture to each slice.

Dash of salt & pepper Get creative! The toppings are up to you! Topping suggestions: 2 soft boiled eggs Handful of sliced cherry tomatoes Feta crumbles 2 slices of bacon, crumbled Sliced salmon(lox) Crushed red pepper

TIPS If you’d like to mix things up a bit, make each slice with a different combo. Make a Greek slice with cherry tomatoes and feta. APPLE WAFFLES

SERVES 4

This sweet and warm breakfast is an amazing way to start the day! It offers a beautifully fluffy waffles, cozy cinnamon flavor, and a fresh crisp apple to finish off. In my version, I created a handmade batter but a premade mix would work just fine. Do what works for you!

DIRECTIONS Start by preheating your waffle iron. In a pan, melt butter over low heat. Add brown sugar and chopped apples then cook until apples are soft. Wisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon. In a separate bowl combine milk, butter, eggs, and vanilla. Slowly incorporate dry and wet ingredients. Stir until just combined. Do not over mix, (some lumps are okay, doesn’t need to be smooth.) Spray waffle iron with non-stick spray, and add approximately 1/2 cup of batter (amount will vary based on the size of your waffle maker) into hot waffle iron and cook until golden and crispy. Top waffles with the spiced apple topping, syrup, or whatever extras your heart desires!

INGREDIENTS 2 cups all purpose flour 2 teaspoons baking powder 3/4 cup granulated sugar 1/2 teaspoon salt 2 teaspoons ground cinnamon 3/4 cup milk(dairy or nondairy will work) 1/4 cup butter for waffles(melted) + 3 tablespoons for apples 2 large eggs 1 teaspoon vanilla extract 2 cups skinned & chopped apples 3-4 tablespoons brown sugar

SPINACH AND RED PEPPER EGG BITES READY IN 35 MIN

INGREDIENTS 12 eggs 1 red bell pepper, diced 1 cup spinach, chopped 1/4 cups cheddar, grated or 1/3 cup feta, crumbled 1/4 teaspoon sea salt 1/8 teaspoon black pepper Butter or olive oil, for greasing

SERVES 12

These little egg bites are a great make ahead option to fuel you through the week! Keep them in the fridge and pop one(or two) in the microwave for a warm, filling breakfast.

DIRECTIONS Preheat oven to 350°F and grease a 12-cup muffin tin. (If you have a silicone muffin tin or liners I would suggest using it as it is easier to remove the muffins.) In a large bowl, whisk together eggs and season with salt and pepper. Add chopped bell pepper and spinach, and whisk to combine. Divide egg mixture evenly across the muffin tins, filling them halfway, and sprinkle with cheese. Depending on the size of your eggs you may have a little extra of the mixture, so you can make a few more. Transfer the muffin tin to the oven and bake for 17-20 minutes until the center of each muffin is set. Once cooked, serve immediately or store in an airtight container in the fridge for up to 5 days. Top with a dash of hot sauce or sriracha for a little kick!

CARBONARA PASTA

When you're feeling down and looking for a great pick me up, what better way to cheer yourself up than pasta night!

READY IN 45 MIN

SERVES 4-5

DIRECTIONS Bring about 6 quarts of salted water to a boil. Add the spaghetti and cook for 8 to 10 minutes or until al dente. When the pasta is done, reserve 1/2 cup of the water, then drain. While the pasta is cooking, heat a large skillet over medium heat. Add the guanciale and sauté for about 3 minutes, or until the meat is crispy and golden and has rendered its fat. Turn off the heat. In a small bowl whisk the eggs and the cheeses until well-combined. Return the guanciale pan to medium heat, and add half of the reserved pasta water to the pan. Toss in the spaghetti and agitate the pan over the heat for a few seconds until the bubbling subsides. Remove the pan from the heat and add the egg mixture and stirring quickly until the eggs thicken. The residual heat will cook the eggs but work quickly to prevent the eggs from scrambling. Season with black pepper.

INGREDIENTS 350 g (12 oz) of spaghetti 200 g (7 oz) of guanciale 4 eggs 100 g (3.5 oz) of grated Pecorino Romano cheese ground black pepper

This Easy Baked Pesto Chicken is a tasty dinner that you can make with purchased pesto if you don’t want to make your own or short on time like I did. And this is a dish the whole family is going to like!

Easy Bake

PESTO CHICKEN READY IN 20 MIN

SERVES 4-5

INGREDIENTS

DIRECTIONS

4 skinless and boneless chicken breast fillets (about 2 pounds)

Smother chicken fillets in the pesto on all sides (about 2 tablespoons of pesto for each chicken breast, depending on your taste). Season with salt and pepper, if desired.

1/2 cup Basil Pesto , plus 1/4 cup extra for serving (you can use store bought like I did or a recipe for homemade) Salt and Pepper to season 17 ounces cherry tomatoes

Preheat the oven to 350°F. Line a baking dish with aluminum foil. Arrange the coated chicken breasts in the baking dish and bake in a preheated oven for 30 minutes. While the chicken bakes, chop or slice tomatoes to preference. At 30 minutes, remove the chicken from the oven and arrange the tomatoes around each fillet. Place the chicken back in the oven and cook a further 20 minutes, or until the chicken is cooked through and no longer pink. Serve alone or with your favorite veggie! I prefer asparagus or broccoli.

INGREDIENTS 1 tablespoon extravirgin olive oil 1 small onion, finely chopped 3 cloves garlic, minced 1/4 cup dry white wine 1 can (28 ounces) whole plum tomatoes with juice, crushed by hand 1 can (14 1/2 ounces) tomato sauce 2 sprigs basil1/4 teaspoon crushed red pepper, flakes Coarse salt and freshly ground pepper Basic Potato Gnocchi Thinly shaved parmesan cheese, for serving

Pillow-soft

TOMATO GNOCCHI READY IN 20 MIN

SERVES 4-6

This simple tomato sauce gets tons of flavor from herbs steeped in olive oil that lusciously coats potato pillows of gnocchi, topped with fresh balls of mozzarella.

DIRECTIONS Heat oil in a large saucepan over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until onion is translucent, 5 to 7 minutes. Add wine; cook until most liquid has evaporated. Add tomatoes and juice, tomato sauce, basil, and red pepper flakes. Reduce heat to medium-low; simmer until slightly thick, about 30 minutes. Season with salt and pepper. Remove from heat; cover to keep warm. Bring a large pot water to a boil; add 1 tablespoon salt. Add half of the gnocchi; when they rise to the top (after about 2 minutes), continue to cook until tender, about 15 seconds more. Transfer gnocchi with a slotted spoon to pan with sauce. Repeat process with remaining gnocchi. Reheat gnocchi over low heat; gently toss. Serve with cheese shavings.

TIPS To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

LAVA CAKE READY IN 20 MIN

SERVES 6

Inside chocolate lava cake is the batter which has warmed during baking but hasn’t fully set. The key is to bake just until the sides are set but the inside is still molten. A very small amount of flour is used in these cakes giving a rich creamy texture.

DIRECTIONS Preheat the oven 350F. Grease a 8-10in baking dish with a little butter. For the cake, melt the butter in a saucepan. Remove from the heat and gently stir through half the chocolate until melted. In a mixing bowl, whisk the eggs and sugar until they become pale and thick. Pour in the chocolate mixture, then sift in the flour. Add the remaining chocolate and using a spatula, fold the mixture together until it is evenly combined. Pour into the prepared dish. Bake for 20 minutes. When cooked, the pudding should be slightly firm around the sides but the centre should still be wobbly. Serve the lava pudding immediately with the ice cream.

Colorful

MACARONS

READY IN 20 MIN

SERVES 4-6

DIRECTIONS

INGREDIENTS

In a mixing bowl, add in the egg whites. And beat it rigorously until foamy. You can opt for electric mixer. Then slowly add in caster sugar while whipping. Continue to incorporate the air into the egg whites until soft peaks form. This is called, French meringue.

60 g egg white

Add a drop of red coloring in the meringue. Don’t add too much unless you want really vivid red. Whisk until combined. In another bowl, sift ground almonds, confectioners’ sugar, and salt. And whisk together.

30 g caster sugar 50 g ground almonds (1.7 oz; ½ cup) 90 g confectioners’ sugar Pinch salt 40 g Strawberry jam

Pour the confectioners’ sugar mixture into the meringue and fold with a spatula (and/or a scraper). Stop folding when the surface of the batter starts to be shiny. Fill a pastry bag fitted with 1 cm (3/5 inch) pastry tip with the batter. Then line the parchment paper on the baking sheet. Then pipe 2.5 cm (1 inch) disks on a parchment paper. Macarons should be 5 cm (2 inches) apart from each other. After finishing piping, bang the trays hard a few times to remove air bubbles out of macaron. Preheat the oven to 300 F. Let stand macarons at room-temperture until the surface is dried. It takes somewhere between 30 minutes to one hour. Touch with a finger on a macaron to see if it’s dried enough. Bake for 13 minutes. Out of oven, let cool on a wire rack. Once cooled, remove macarons carefully off the parchment paper. Well-cooked macarons should not have problems sticking too much to the parchment paper. On the bottom side of a macaron, put a teaspoonful of strawberry jam and make a sandwich with another macaron.

1 or 2 drops of red food coloring

TIPS If you can’t find ground almonds, make your own. Pulse blenched and chopped almonds in a food processor until finely grounded.

PAIRING HERB & SPICES These are my go-to herb and spice pairings transform your meat, vegetable and seafood dishes instantly with no fuss!

Basil and chicken

Sweet, aromatic basil is not just meant for pesto sauce. It pairs beautifully with the naturally sweet and juicy chicken for an easy stir fry weekday dish.

Turmeric and stews Turmeric has grown in popularity in western cuisine but did you know that it has been around for over 4000 years?! Besides the classic turmeric latte we all love, sprinkle some into your pumpkin or chicken soups for a dash of goodness.

Dill and seafood From scallops to shrimps and salmon, dill is a failsafe herb that goes well with all kinds of seafood and garlic butter! Sprinkle it towards the end so it doesn't get burnt from sitting in the pan too long.

WINES & MEALS

On a special occasion, birthday, or looking to relax from a long day, no one wants to spend time figuring out what wine to pick. These wine pairings are sure to enhance your meal and your mood. Here are some tips to start: The wine should be more acidic than the food. The wine should be sweeter than the food. The wine should have the same flavor intensity as the food. Red wines pair best with bold flavored meats (e.g. red meat). White wines pair best with lightintensity meats (e.g. fish or chicken). Bitter wines (e.g. red wines) are best balanced with fat. It is better to match the wine with the sauce than with the meat. More often than not, White, Sparkling and Rosé wines create contrasting pairings. More often than not, Red wines will create congruent pairings.

PAIRING Turmeric is really amazing

WINES & MEALS CONT> With those tips in mind, take a try of one of these signature combos! Always remember at the end of the day you are the chef and can do as you please.

Chardonnay and seafood Silky whites—like Chardonnays from California, Chile, or Australia—are delicious with fish like salmon or any kind of seafood in a rich sauce.

Cabernet and red meat California Cabernet, Bordeaux, and Bordeaux-style blends are terrific with steaks and dishes like lamb chops with frizzled herbs. The firm tannins in these wines refresh the palate after each bite.

Moscato D'Asti and fruits Moderately sweet sparkling wines such as Moscato d'Asti, demi-sec Champagne and Asti Spumante, help emphasize the fruit in the dessert, rather than the sugar.
