FOUNDERS/OWNERS Priscilla & Bruce Kincaid MANAGING EDITOR Priscilla Kincaid, RN, BSN, MBA DIRECTOR OF ADVERTISING Priscilla Kincaid, RN, BSN, MBA

As we enter the month of May, change is upon us, can you feel it? We certainly do! Whether it is the change of the smell in the air from our crisp winter breezes to new spring blooms, the smell of flower gardens, for us Jasmine vines blooming or maybe those April showers that we hope are bringing us May flowers! In general, it’s safe to say we not only feel the change of seasons but we are experiencing it. The ability to reunite with family, spend time together, and enjoy the presence of one another is something that we are all reacclimating to. The joys of laughter, maybe weekly routines, and hustle and bustle are returning! With that comes the ability to cherish our time together. After being apart for so long holidays such as Mother’s Day become even more value than we could have ever imagined it to be. Knowing what to get mom may be the question on your mind! This month Adrienne takes us on an adventure to know how do we find the right type of gift to show our love, appreciation and still maybe meet the needs of mom. For this we are thankful. Mother’s Day as you heard last year has always been a cherished holiday for us. However, this Mother’s Day will hold a special place in my heart as we honor our mothers that are here with us and those we hold in our hearts. For our family we are celebrating the blessing of having our mother here with us. Cherishing our time, and knowing that this time is not promised but a gift. In the past year we witnessed my mother’s true heroism in strength, power, and drive to never give up for her family while she pushed through the hardest time of our lives and for these things, we are thankful to not only her but also our blessings. She will forever be our hero and an example of strength and iconic devotional love. I hope that you have time to spend with your mother whether spiritually or in person this holiday. Cherish this time and enjoy each other. In addition, this month we hope you enjoy time with your loved ones honoring our heroes who have served, are serving and have gone to serve from above. Memorial Day has always marked the start of summer for our family but not just for the amazing BBQ’s that correlate with the holiday but as a time to honor our heroes who have served and are serving. We honor you and thank you for your service! We hope that this spring has been one of joy, take the time to stop and smell the flowers, soak in the sun and enjoy the life around us! From Our Family to Yours;

SOCIAL SECURITY

SOCIAL SECURITY

HONORS OUR MILITARY HEROES

On Memorial Day, our nation honors military service members who have given their lives to preserve our freedoms. Families, friends, and communities come together to remember the great sacrifices of military members and ensure their legacies live on. The benefits we provide can help the families of deceased military service members. For example, widows, widowers, and dependent children may be eligible for Social Security survivors benefits. You can learn more about those benefits at www.ssa.gov/survivors. We also offer support to wounded warriors. Social Security benefits protect veterans when injuries prevent them from returning to active duty or performing other work. Both the Department of Veteran Affairs and Social Security have disability programs. You may qualify for disability benefits through one or both programs. Read our new fact sheet, “Social Security Disability and Veterans Affairs Disability — How Do They Compare?” at www.ssa.gov/pubs/EN64-125.pdf. Depending on your situation, some members of your family, including your dependent children or spouse, may be eligible to receive Social Security benefits. Wounded military service members can receive quicker processing of their Social Security disability claims. If you are a veteran with a 100% Permanent & Total compensation rating from the Department of Veterans Affairs, we’ll expedite your disability claim. Want more information about how we can help? asked questions or to find information about the application process. Thinking about retirement or know a veteran who is? Military service members can receive Social Security benefits in addition to their military retirement benefits. For details, visit our webpage for veterans, available at www.ssa.gov/people/veterans. LEGAL MATTERS

MEDICAID EXPANSION TO INCLUDE HOME CARE Do you know that the government might give you immediate financial assistance when you need a nursing home, but make you wait for financial assistance if you need care at home? I have had clients wait for years before the government will help them financially for home care. It makes no sense. Care at home is much less expensive than at a nursing home and receiving care at home might help an individual avoid the nursing home completely. And that would save the government a lot of cash. Some in our government may have finally figured out what elder law attorneys have known for years: Providing financial support for home care is better for the individual and the government. Much better than requiring nursing home care that requires immediate financial assistance.

paying for care, only to end up in a nursing home when they run out of money. Sometimes, the ailing person and/or caregiver suffers an injury at home because the level of care needed is beyond the caregiver’s capabilities. But help is on the way! The American Jobs Plan, more commonly known as the Infrastructure Stimulus Bill, allocates $400B over eight years to expand the Home Care Medicaid Program. If passed, more needy people will get the care they need without having to move out of their homes. And who doesn’t prefer living at home to living in a nursing home?

While waiting, a spouse or adult child usually takes care of their ailing loved one. Some adult children leave their jobs to do so. Others go through their life’s savings

VETERANS BENEFITS

VA OFFERS RESOURCES TO FORMERLY INCARCERATED VETERANS

The U.S. Department of Veterans Affairs has introduced new efforts to better help veterans reenter society after incarceration. In partnership with the Social Security Administration and Bureau of Prisons, the Veterans Benefits Administration (VBA) is streamlining information sharing processes to ensure VBA receives prison release dates for veterans within 30 days after release to improve timeliness in reinstating benefits. Assistance available to impacted veterans includes: • Expansion of the VA’s existing outreach campaign to state prison systems and jails to increase the number of veterans to whom it can offer individualized reentry services and connect more veterans to post-release services while they are still incarcerated. • Assistance through the VA’s Veterans Reentry Search Service, a free web-based tool criminal justice partners and prison and jail staff can use to identify incarcerated veterans and connect them to needed services post release. • Help through Veterans Justice Programs, which identifies justice-involved veterans and engages them

through outreach to facilitate access to VA services at the earliest possible point. • Outreach by Veterans Justice Programs specialists to link veterans to needed Veterans Health Administration services and other community resources. The Bureau of Justice Statistics reports there are approximately 107,400 veterans in state or federal prison. Following release, these veterans are at increased risk of homelessness, suicide and death by drug overdose. Do you need help filing a claim for the VA? Volusia County’s Veterans Services Office can help. Counselors assist all former and current members of the U.S. Armed Forces and their dependents in preparing claims for compensation, pension, vocational training, and other benefits and privileges to which they are entitled. Be Safety Conscious and

DME SPOTLIGHT

INSTALL, DON’T FALL! Ever have the thought of what if I am unable to safely shower? Although very few people do, the assumption is probably not. In reality we don’t think of safety features when we build a home, purchase a home, or renovate our outdated bathrooms. After all we purchased, renovated, or built our homes during different seasons of our lives. A season that may not have required such safety features. But these features are not just features they can be critical components to allowing us to shower, bathe, or even toilet safety in the home. It can be a determining factor to being able to age in place and remain in our homes. The CDC published that approximately one out of every five falls causes a major injury such as broken bones or head injury each year. In addition, approximately “Three million older people are treated in the ER” annually for fall injuries! That is quite the statistic. Adding grab bars inside or outside the shower or tub can assist in preventing the risk of falls, the key is ensuring they are installed properly. Whether you opt for a suction cup grab bar or permanent fixture installed in the home ensuring you are installed appropriately is the key to success when working with grab bars. How do you know if you have the right equipment for your needs to prevent a fall to the best of our human abilities? Well, If you are installing grab bars on your own or having a family member install them ensuring that grab bars are level, at the correct height, angle and also are the right type of grab bar is critical as well as being installed appropriately into studs are key components to installation. All of these intricates can pose quite a bit of worry in these instances, as a community we are fortunate that we also have resources that can ensure that our grab bars are installed appropriately. Companies such as Install Don’t Fall can ensure that with their licensing grab bars are installed appropriately, at the right height, right angle and right type! Understanding the types of grab bars and handles is key, why not unlock the key to success whether working with your preferred specialist or by having our local specialists come out to your home for an evaluation understanding individual needs and knowing the business is a knowledge base that not everyone possesses. We are thankful to our community experts for their experiences and knowledge! Disclaimer – Aging Times Magazine does not install grab bars, we can only provide information for educational community resources. MENTAL HEALTH MOMENT

Express Yourself

Art is a great way to simply express how you see the world.

“The arts are a critical component of healthcare. Expressive art is a tool to explore, develop and practice creativity as a means to wellness.” — Wellarts Association

We all know that art can be fun for kids. Actually, art is also great for seniors and “kids” of all ages, for a host of reasons. The benefits of Art and Art Therapy are probably much more than what you may have imagined, however. Focus groups and scientific research shows that both physical and mental health can be dramatically improved by regularly engaging in creative arts and art therapy classes.

Did You Know?

Studies have proven that art can reduce feelings of depression, stress and anxiety. Also, because aging often leads to hearing and vision loss, engaging in Art Therapy can help seniors to better cope with these issues and provide a positive means for self-expression. Cognitive function is stimulated and makes it easier to make neural connections that may have declined due to aging. Art can help individuals tap into a part of their skills that they didn’t know they had. This can be very rewarding for Seniors and help them find a new passion later in life. “Art can hold a special significance for older adults suffering from neurocognitive decline. Diagnoses such as Alzheimer’s or Parkinson’s disease, can create feelings of hopelessness, stress, sadness, and isolation. Producing artwork stimulates the brain to produce dopamine, a hormone involved in the brain’s reward system. The completion of artwork allows for improved mood and increased confidence. Pair this with the supportive socialization an art group provides, and the benefits are astounding,” says Macey Walker, Adult Day Services Manager at the Caregiving Place in Sarasota, Florida. Art Offers a World of Benefits…for Seniors As Well As People of All Ages “During my 30 years at Americans for the Arts, I have had the great privilege to visit and learn about a different 10

Aging Times Magazine | May 2022

community nearly every week. While they differ vastly from one another, there is one common strength I have observed: the arts have made a profound impact on the health of each community.” - Robert L. Lynch, President, Americans for the Arts Art can produce improvements in: • Cognitive Function • Motor Skills • Increased Social Interaction • Elevated Mood • Greater Self Expression

Talk About It

Often times, when art is created, it also provides a forum for discussion and serves as a conversation starter, in addition to providing a means for expressing thoughts and feelings through a chosen medium. So, get out your paints and canvas, or your clay and colored papers. Create something fantastically yours! Express yourself and just have fun – then share it with a friend! Beth Douglas is a marketing communications professional and an advocate for seniors – especially those who are living with dementia-related illness.

Protect Yourself From

FRAUD & IDENTITY THEFT How can I protect myself from identity theft? Identity theft happens when someone uses your personal information without your consent to commit fraud or other crimes. Personal information includes things like your name and your Social Security, Medicare, credit card, or bank account numbers, and your online Medicare account user name and password. Guard your cards and protect your Medicare and Social Security numbers. Keep this information safe. Only give personal information, like your Medicare Number, to doctors, insurance companies (and their licensed agents or brokers), or plans acting on your behalf, or trusted people in the community who work with Medicare like your State Health Insurance Assistance Program (SHIP). Don’t share your Medicare Number or other personal information with any unsolicited person who contacts you by phone, email, or in person. Medicare, or your Medicare plan representative, will only call you in limited situations: • A Medicare plan can call you if you’re already a member of the plan. The agent who helped you join can also call you. • A customer service representative from 1-800-MEDICARE (1-800-6334227) can call you if you’ve left a message, or a representative said that someone would call you back. TTY users can call 1-877-486-2048. If you suspect identity theft, or feel like you gave your personal information to someone you shouldn’t have, visit oig.hhs.gov to submit a complaint or call the fraud hotline of the Department of Health and Human Services Office of the Inspector General at 1 800 HHS TIPS (1800-447-8477). TTY users can call 1-800-377-4950.

How can I protect myself from fraud and medical identity theft? Medical identity theft is when someone steals or uses your personal information (like your name, Social Security Number, or Medicare Number) to submit fraudulent claims to Medicare and other health insurance companies without your permission. When you get health care services, record the dates on a calendar and save the receipts and statements you get from providers 12

Aging Times Magazine | May 2022

to check for mistakes. If you think you see an error or a provider bills you for services you didn’t get, take these steps to find out what was billed: • Check your “Medicare Summary Notice” (MSN) if you have Original Medicare to see if the service was billed to Medicare. If you’re in a Medicare health plan, check the statements you get from your plan. • If you know the health care provider or supplier, call and ask for an itemized statement. They should give this to you within 30 days. • Log into (or create) your secure Medicare account at Medicare.gov to view your Medicare claims if you have Original Medicare. Your claims are generally available online within 24 hours after processing. You can also use Medicare’s Blue Button to download your claims information. Call 1-800-MEDICARE. If you’ve contacted the provider and you suspect that Medicare is being charged for a service or supply that you didn’t get, or you don’t know the provider on the claim, call 1-800-MEDICARE. For more information about Medicare fraud, visit Medicare. gov or contact your local Senior Medicare Patrol Program. For more information about the Senior Medicare Patrol or to find help in your state, visit smpresource.org or call 1-877808-2468. You can also call your local police department and the Federal Trade Commission’s ID Theft Hotline at 1-877-438-4338. TTY users can call 1-866-653-4261. Visit ftc.gov/idtheft to learn more about identity theft.

Plans must follow rules Medicare plans and agents must follow certain rules when marketing their plans and getting your enrollment information. They can’t ask you for credit card or banking information over the phone or via email, unless you’re already a member of that plan. Plans don’t need your personal information to provide a quote. HEALTHY LIVING FOR THE SOUL

MAMA & MEMORIAL DAY

On Memorial Day my mother and I visited the family cemetery where the handsome uniformed soldier’s black and white photo on the gravestone greeted us. Mama removed the faded artificial flowers and replaced them with bright colored ones from the Five-and-Dime store. “Mama, why are you crying? Do you miss him?” My insensitive, curious child’s mind could not comprehend her tears. “It saddens me that he died so young and didn’t get to see his boys grow up. But if he had lived, I would not have married your daddy and where would you be? Life goes on and we must move on with it.” The date on his headstone read, June 14, 1945. A month earlier my mother celebrated her last mother’s day before becoming a war widow with three little boys ages four, a year and a half and the baby only seven months old. Once Mama told me the story of walking with her three boys in downtown Port Arthur, Texas; the oldest 14

Aging Times Magazine | May 2022

would call out to tall, handsome soldiers with dark hair wearing uniforms, “Daddy, Daddy!” She laughed and said, “That was so embarrassing and did not make me look like a nice lady. Poor thing, he missed his daddy the most. The other two were too young to even remember they had a daddy.” Fortunately, Mama had family support to help raise her boys. Maybe you know a single parent who could use some help. Why not send that mother a card this month? And possibly include an offer to watch her children while she gets some much needed self-care or include a gift card. Opening our hearts to others is a beautiful way to show support and encouragement. Mother’s Day and Memorial Day bring an opportunity to celebrate. But for some, it’s a reminder of loss. I was born on Saturday night, the day before Mother’s Day. My Mama always said I was her best Mother’s Day gift. She died when I was 38; too young to really appreciate all she had given me. As my own children grew and moved on, I understood and appreciated my mother more. We don’t all have the good fortune to celebrate with our mothers, but hopefully, we find the time to reach back and pull forth some good memories to celebrate and honor mothers and those in the military this month.

What does it mean to mother another? One definition I found was: to bring up with care and affection. Can we turn that definition toward ourselves for a moment? How can we best give ourselves care and affection? We must care for ourselves and find ways to nurture our own sense of wellness. How do you show self- appreciation? Do you gift yourself a spa day or a day of rest and rehabilitation? Do you pick up that bouquet of flowers or order them to be delivered? Why not? Find joy; give yourself the gift of love and know that when you give to others the gift comes back to you one hundredfold. Cheryl Floyd, Speaker/Storyteller and Heal your Life® Coach. Celebrating Mothers HOW TO GIVE CHOOSE THE IDEAL MOTHER’S DAY GIFT There are many paths to motherhood, yet it is a universal phenomenon. Some of us grow babies in our bodies and birth them into the world. But that's just the tip of the motherhood iceberg. Hundreds of thousands of women in the United States and worldwide become mothers through adoption. Others enter motherhood through fostering or by helping to raise the children of friends and relatives. While the paths to motherhood are varied, the result is nearly always a woman, changed for the better. This month as we celebrate Mothers Day, many partners and children will scratch their heads, wondering what to give to or do for the moms in their lives. You can never go wrong with the traditional Mothers Day gifts like breakfast in bed, chocolates, and floral arrangements. But this year, I'd like to propose something a little different. As you rack your brains for the perfect Mother's Day gift, why not ask her what she'd like?

For the Mom Who Wants to Be Alone

"What do you want for Mother's Day?" isn't the most thoughtful way to phrase the question. But how about something like, "this Mother's Day, would you like to be alone, be romanced, or be with your family?" Who knows, maybe she'll say yes to all three. Parents make a lot of sacrifices of time, energy, and resources for their families. So what would be better than the choice to spend Mother's Day precisely as you please?

A Visit to the Spa

Don't worry. I won't leave you hanging here. Once you've asked the big question, you still have to figure out what to do for mom, so I've come up with a couple of suggestions for each category.

Aging Times Magazine | May 2022

If the mother in your life responds that she'd like to be alone, promise me you won't take it personally. Whether she's the mom of young children or has already watched her children fly to the nest, motherhood is a path that occupies our minds and hearts for a lifetime. Sometimes mom just needs a little bit of alone time. Here are some excellent ways to treat her to some time to herself Does mom need a little relaxation? Send her to the spa for the day. Many spas allow a client to stay and relax for hours with the purchase of a single service. So, whether you have the budget for a complete relaxation package or just a couple of small services, she'll still benefit from a day away by herself. Want to make the day even more special? Order her a special bottle of champagne or the drink of her choice. This will be a day she won't soon forget.

An Overnight Hotel Stay

Does mom need even more time away from home? Reserve her a hotel room or Airbnb for the night or the weekend. Bonus points for

renting a space with a beautiful view. Whether she spends her time playing on the beach, visiting a new town, or lying in bed is up to her! The point of this gift is to give her the freedom to choose for herself.

Get Dressed Up For a Fancy Night Out

Depending on your phase of life, a fancy night out might be commonplace or a rare and exciting occurrence. If you spend most of your energy and resources wrangling a gaggle of children, a night out on the town may feel like you from the lottery. Remember that a romantic evening out doesn't require reservations at the hottest five-star restaurant. Any restaurant with a great atmosphere and delicious food and drinks can be the perfect environment to light a spark for your love.

A Day Near The Water

Is there anything more romantic than a day by the water with someone you love? Perhaps you and the mom you love are avid outdoors people. If so, pack a yummy picnic and your drink of choice and head out for a trip exploring the great outdoors and kayak or canoe. Or take your picnic, a large umbrella, and a comfy chair and relax at the beach for the day. If you're not

Tickets To Something She'd Enjoy

Do you love a mom who is also a movie fanatic, theatergoer, or concert queen? How about buying her tickets to experience a live event? If you're leaning toward this idea but aren't sure what to get, ask her. There might be a museum opening or cooking class she's had her eye on lately. Combine the tickets with a gift certificate to her favorite bar or restaurant for a full, fun day.

For the Mom Who Would Love Some Romance

If the mom in your life has requested some romance this Mother's Day, you can easily and romantically turn any of the suggestions above into a date for two. The most important factor when creating a romantic moment for your partner is the intention behind it. A night on the couch can be just as romantic as an evening out if you let it. Here are some simple ideas for an amorous Mother's Day gift for the lady in your life.

outdoors people, charter a sailboat and watch the sunset over the water. That's about as romantic as it gets.

night), keep your romantic evening in where things can get as steamy as you want! Buy all the ingredients for a fun dinner, prepare it together, and then snuggle in for a cozy evening with your favorite record or movie you've wanted to watch. Sometimes there's nothing more romantic than being pampered within the walls of your own home.

When Mom Wants to Celebrate With Family

Mother's Day is all about celebrating the mothers you love in the way that feels best to them. For many moms, especially those whose kids are grown, quality time with them is the best gift she could receive.

Mothers Day Lunch

You cannot go wrong with a family meal that mom doesn't have to cook! Gather all of your family, take her out to lunch, or treat her to a home-cooked meal. If you want to stay home but you're not skilled in the kitchen, consider getting take-out from her favorite restaurant. The thing mom wants most of all is to feel loved and spend time with her family.

A Family Beach Day

Living in Florida, you're never very far from the beach. If your mom loves relaxing in the sunshine, pack up a big tent, plenty of comfortable seating, and a delicious picnic to enjoy right there in the sand. Mom can relax in the shade, enjoy a cold beverage, and watch her loved ones enjoy the day.

Take a Family Day Trip

Does the mom you love enjoy poking around some of our charming, local small towns? Perhaps she's an avid antiquer. Load your family into a vehicle, set off for one of the many charming cities or towns in your surrounding area, and see where the day takes you. Maybe mom wants to stop at every roadside attraction or visit every flower garden she sees. Enjoying those things with the people she loves most will fill her heart. Top the day off with a nice meal at a local establishment, and she'll be in heaven.

VFW AND VFW AUXILIARY

THE HONOR IS ALL MINE I was recently asked what it was like being a member of the VFW Post 8093 Honor Guard. First and foremost, it is an honor being a member of a group of veterans so dedicated to presenting final honors to any veteran’s family who ask. When I say “Honors” I am talking about prayers offered by our Chaplin, folding the American Flag, a military gun salute, playing Taps on the bugle and presentation of the American Flag to the family. Military Honors are offered at funeral homes, gravesides and celebration of life events. While most members of the Guard can perform any function of the ceremony, I can tell you from experience the hardest for me was kneeling in front of a friend’s spouse, thanking her for her husband’s service to our country and presenting her with the American Flag. While COVID made presenting Honors more difficult, the Honor Guard did what they could including a couple drive-by Honor presentations and socially distanced military gun salutes. The most exciting event for me as an Honor Guard member was in 2018 when we were honored with laying the wreath at the Tomb of the Unknown Soldier at Arlington Cemetery. After the ceremony all members of our Honor Guard were invited to meet with the soldiers guarding the tomb to discuss their life as one of the chosen guards. The Honor Guard does a lot more than just provide final honors for fallen veterans. We have a Color Guard that presents the American Flag at official city meetings,

opening day of little league season and various festivals and civic events. The Honor Guard is also responsible for maintaining service Flags at a local veteran park and at the Post. Members of the Honor Guard demonstrate proper Flag etiquette to local school children and area civic groups. Throughout the year we also provide full military honors on holidays such as Memorial Day, Veteran’s Day and on special military days such as Pearl Harbor Day, Vietnam War Veterans Day and others. We have even driven by to wish Happy 100th Birthday to several veterans during COVID. Nothing is too small when honoring our brothers and sisters in arms. Finally, a couple times a year the Honor Guard will provide Final Honors to retired American Flags with a proper Flag disposal ceremony held at our Post or other Posts in the area. These ceremonies allow us to teach others such as the Boy Scouts about proper disposal of the most sacred symbol of our country. Anyone can drop off their retired Flags at their local Post for proper disposal. Bill O’Connor is retired Chief Machinist Mate who served in the U.S. Navy Submarine Service. He has served as a Trustee, Quartermaster and Senior Vice Commander of VFW Post 8093 DeBary and currently serves as a Councilman for the City of Orange City. Bill comes from a military family with his dad being a retire Command Master Chief, brother a retired 1st Class Petty Officer, sister a retired Senior Chief Petty Officer and another brother who served in the US Air Force.

WE MUSTACHE YOU A QUESTION ??

IS GLUTEN BAD FOR EVERYONE? Over the last decade, gluten-free has been many people's health food trend of choice. But we wonder how much the average person actually knows about gluten and why they should be avoiding it. Gluten is a protein found in grains like wheat, rye, and barley. It works as a binding agent and is the element in flour that makes bread dough sticky. For this reason, companies also use it as a binder in processed foods. These days, you can find gluten in a host of products, from salad dressings to candies, making it difficult to discern when and where you might encounter it. The enzymes that digest our food can't completely break down gluten. For many people, this isn't a problem. However, for gluten intolerant people or those with Celiac Disease, consuming gluten can cause a range of symptoms from uncomfortable gas to a harmful autoimmune response. Common Celiac disease symptoms are bloating, constipation or diarrhea, fatigue, gas, and stomach pain. If you have ongoing digestive issues and think it may be related to Celiac Disease or gluten intolerance, your doctor can help you come to a diagnosis. In people who don't have Celiac Disease, ingesting gluten can cause surprising symptoms. Skin problems, brain fog, and joint pain are common, non-digestive symptoms of gluten intolerance. It was difficult to avoid gluten in processed foods for a long time, but now most gluten-free products are labeled as such. When purchasing anything from bread to spaghetti sauce or even vodka, be sure to do your research.

Many people experience health benefits from avoiding gluten. Not because of the effects of gluten on their digestion, but because avoiding gluten causes them to cut high carbohydrate foods like bread and pasta and processed foods. Such foods often contain higher than necessary sugar, salt, and unhealthy fats. Going glutenfree is a matter of health for some. But for others, it's a lifestyle choice that makes them feel better, healthier, and stronger. In honor of Celiac Disease Awareness Month, talk to your doctor about your relationship with gluten. No matter where you fall on the gluten intolerance spectrum, it may be a good time to part ways with the protein. VACATION SPOTLIGHT

A CINCO DE MAYO GETAWAY There’s a popular misconception that Cinco de Mayo (May 5th) is Mexico’s Independence Day. It’s not. Instead, it’s the commemoration of one battle: The Battle of Puebla on May 5, 1862. This relatively small victory over France during the Franco-Mexican War represented a major symbolic victory for the Mexican government in helping to bolster Mexico’s resistance. Cinco de Mayo is a generally small holiday in Mexico and is known as Battle of Puebla Day there. In the United States, however, the holiday has grown into a celebration and commemoration of Mexican culture and heritage. And what better way to celebrate Mexican culture and heritage but to go visit and experience it firsthand? One of our favorite ways to visit Mexico is by heading to an all-inclusive resort. You get the best of everything: delicious food and drinks, beautiful accommodations, access to local tours and adventures. Whether you’re traveling with your significant other or the whole family, there will be something for everyone. The Atelier Playa Mujeres resort is possibly one of the nicest resorts near Cancun. Located about 19 miles north of Cancun, the property is located on an absolutely stunning stretch of beach. They even have an 18-hole golf course, which is prided as one of the best golf courses in Mexico. This resort is for mainly adults (guests must be over 16 to stay), and they have so many activities and areas to enjoy, including: 26 restaurants and bars, a contemporary Artwalk, wellness activities, and so much more. On the other hand, if you want to get away with the whole family, we’d recommend the Grand Fiesta

Americana Coral Beach Cancun All-Inclusive Spa Resort. They have the Coral KidZ Club for 3-12 year old children, and the resort is located closer to Cancun, making it easier to head out to local site and stops should you want to. And the accommodations are simply gorgeous. A massive pool is located just steps from the beach, so you can take your pick on where you want to relax and drink your margaritas. Absolute perfection! All-inclusive resorts are such a great way to travel in current times. Though Mexico doesn’t require any testing or vaccinations prior to arrival into the country, the resorts have made it top priority to ensure the health and safety of their guests. And most resorts make it easy to request and take the required COVID tests prior to your return to the United States. The process is about as painless as it gets and makes more room for you to relax and enjoy your vacation. If enjoying everything a Mexican all-inclusive resort has to offer sounds like a great vacation to you, give our advisors at Roseborough Travel Agency a call. They’ll be happy to help. This month people and organizations across the nation will celebrate their historic places. DeLand has three districts on the National Register of Historic Places including the Downtown Historic District, the Northwest Residential Historic District, and the Stetson University Historic District. There are also local landmarks. Preserving historical assets is one of the ways a community demonstrates pride. It helps create a sense of place and shows that a community is willing to invest in itself. HOW TO PLAY SUDOKU The goal of Sudoku is to fill in a 9x9 grid with digits so that each column, row, and 3x3 section contain the numbers between 1 to 9. At the beginning of the game, the 9x9 grid will have some of the squares filled in. Your job is to use logic to fill in the missing digits and complete the grid. Don’t forget, a move is incorrect if: • Any row contains more than one of the same number from 1 to 9 • Any column contains more than one of the same number from 1 to 9 • Any 3x3 grid contains more than one of the same number from 1 to 9

FAVORITE RECIPES GLUTEN-FREE RECIPE

GLUTEN-FREE PIZZA CRUST YIELDS: 1 (12") SERVINGS | PREP TIME: 15 MINS | COOK TEAM: 20 MINS

This go-to Gluten-Free Pizza Crust recipe is a simple staple for your gluten-free kitchen. Perfectly thick and chewy, and no kneading required.

NOTES:

Working with or measuring gluten-free flour: spoon the flour into the measuring cup and level. Do not scoop your measuring cup into the gluten-free flour. The best method really is to weight it but I don't have the ingredient weights for all my recipes yet. Yeast: This recipe works with active yeast and instant yeast. Oil: If you don't have olive oil you can use your oil of choice. Gluten-Free Flours: This recipe works with several types of gluten-free flour blends but we find that our homemade gluten-free flour blend and Bob's Red Mill 1-to-1 Gluten-Free Baking flour work best in this recipe. Mix your own flour: If you want to mix your own blend for this pizza combine 1 cup white rice flour, ¾ cup brown rice flour, ¼ cup tapioca starch. Rising: You don't have to let the dough rise, it will rise in the oven, but you can let it rise for up to 30 minutes for a fluffier pizza crust.

Ingredients ¾

cup warm water (between 110-120°)

1

tablespoon sugar

1

packet yeast

2

cups gluten-free flour blend (Bob's Red Mill Gluten-Free 1-to-1)

1 1 1 1

teaspoon salt large egg tablespoon olive oil teaspoon cider vinegar

Directions

1. Set pizza stone or heavy baking sheet on lowest rack of oven, and preheat to 450°. 2. Mix water, sugar, and yeast and let sit for 5 minutes, or until it looks foamy. 3. In electric mixer bowl, mix flour blend and salt. Add in egg, olive oil, vinegar, and yeast mixture. 4. Mix on low speed for 1 minute. 5. Using an oiled spatula, transfer the gluten-free pizza dough onto a piece of parchment paper. Using oiled hands, spread dough into a 10-12-inch round. 6. Bake for 8-10 minutes. 7. Add toppings and bake for an additional 8-10 minutes.
