Get Your Skin Summer Ready at Autria Esthetiques & Wax Studio By Mary Michaels | Photos by Chang Photography

ummer time means shorts and sundresses, backyard barbeques and the beach. According to Tara Donahue, it’s also a good time to think about your skin care. And caring for the skin is the primary focus of her business, Autria Esthetiques and Wax Studio, which opened in March at King’s Crossing on South Minnesota Avenue. While this business location is still new, Donahue has been an aesthetician for nearly 14 years and is licensed in Texas, Arizona and South Dakota. She was licensed in aesthetics in other locations prior to licensing even being available in South Dakota,

so she says she is pleased to be able to now bring her services here, along with products that aren’t available elsewhere. Donahue received extensive training in ancient Japanese skin methods and was invited to an international congress in Hong Kong for her advanced education in aesthetics. “I have worked in many different avenues of this industry,” she says, “including salon, spa, dermatology and plastic surgery. I am also a nurse, so I have been caring for individuals on a custom basis for a long time. Not only do I want my guests to relax in each session we share, but I also feel it is important

Allergy & Asthma Care For Adults & Children

You are incomparable to others as an individual — different and distinct. Your allergy and asthma care should be no different. We customize your treatment to meet your specific needs so you can move toward an even better life.

We celebrate you. We listen. We learn from you. that each person leaves understanding the benefit to the health and wellbeing of their skin.” Donahue adds that her services go beyond just a “spa day” for pampering, although she says that can certainly be a part of the experience. Instead, she encourages her clients to make this a lifestyle. “Individuals take pride in their appearance when they receive a haircut, so why wouldn’t they make their skin a priority, too? It is natural that we want to look our best and have confidence. It needs to just be part of your routine,” she says.

“Not only do I want my guests to relax in each session we share, but I also feel it is important that each person leaves understanding the benefit to the health and well-being of their skin.” Donahue adds that she focuses her business – and her pricing – on helping both men and women make skin care a part of their lives. Autria, which is a combination of the names of Donahue’s two daughters, Autumn and Bria, offers a wide array of products and services. Different facials are available to cleanse, exfoliate, or hydrate skin, as well as improve texture, boost collagen and address issues like hyperpigmentation or oily skin. As an added bonus, Donahue automatically includes an eye treatment at no cost for all facials that are 60 minutes or longer. You can also get a “back facial” to exfoliate and hydrate the skin on your back, the “eye candy” treatment to reduce dark circles, crows’ feet and puffiness, or the “satin lips” treatment that uses a lip scrub and plumper to give your lips the texture and fullness they deserve. Autria serves all clients and offers a mini-facial designed for teens and a special facial just for men. While the majority of her clients right now are women, there is growing interest among men. “They may be hesitant at first, but I provide one-on-one services, so it’s not like they are coming into a big salon which can be intimidating. Once men get a foot in the door, they find the benefits of regular skin care, too.” (Hint: Gift idea for Father’s Day!) “The focus is providing high quality skin care,” Donahue says. “The goal is to transform your health from the inside out – rejuvenating skin and renewing your wellbeing.” Donahue chooses product lines that she knows will deliver results, seeking out those that are natural and eco-friendly, yet backed by science.

Some of Autria’s exclusive popular products include: • Phytoceane – from St. Malo, France. This skin care line represents the heart of the sea. • Farmhouse Fresh – straight from Frisco, Texas, each product is paraben and sulfate free, with many Vegan & Gluten free options as well. These are rated in the top five favorite lines by spa professionals and has been one of Oprah’s picks. • Antipodes – this skin care line comes from New Zealand and includes Walwera Artesian water in many of the products. The studio also offers a menu of waxing services. While that may conjure up feelings of anxiety and pain, Donahue says you won’t have that worry when you come to Autria. “I have found that working with hard wax is far more user friendly,” says Donahue. “It is far more gentle, less painful and gives a long lasting, soft result. I have also developed a technique that brings guests back time and time again.” Waxing services include eyebrows (with shaping), upper lip, full face, underarms, stomach, leg, back, bikini and Brazilian. “It is so rewarding to be doing something that I love that I know also benefits the wellbeing of others,” says Donahue. “I invite everyone to call and let me pamper you and your skin.” Donahue makes herself available for daytime, evening or even weekend appointments so that people can fit this important part of personal care into their busy lives. Call (605) 929-9149 for more information on appointments, custom services and specials.

Day Out on the Farm Tours 2013 by Ag United

E

ver wondered how the gallon of milk on your refrigerator shelf gets there? Curious about what happens to all the corn and soybeans harvested in South Dakota each year? Have questions about how farm animals are raised? For the fourth year, South Dakota farm families are giving people the opportunity to go straight to the source with their questions about how food is produced. Agriculture United for South Dakota and CommonGround are again hosting “Day Out on the Farm” tours that take groups from Sioux Falls and other South Dakota cities to nearby beef, pork, dairy, egg, and crop farms. Farmers and agriculture professionals like veterinarians and livestock nutritionists also ride along on the tour bus so participants can ask follow-up questions or get additional details after the farm tour stop. “We’ve had a great response to all of our Days Out on the Farm tours,” said Kelly Nelson, outreach director for Ag United for South Dakota. “Some tours are targeted to a specific group like moms, food or fitness industry professionals, and others are open to anyone interested in learning more about today’s

et cetera

agriculture and food production.” Past tour participants have appreciated the willingness of farmers to open their doors to share information about how animals are cared for, what they eat, and where they are housed. In past tours, participants have been able to walk through livestock barns, meet newborn calves and piglets, watch dairy cows in a milking parlor, and see the ingredients that go into a cow’s daily ration. “All of the information provided about how our food gets from farm to table was interesting,” said one participant. “Seeing and being in the everyday life of the farmers that supply the food we eat was a great experience.” Farmers who’ve hosted tours and ridden on the bus have also enjoyed the experience. “The tours are great because they provide a little taste of what farmers and ranchers do every day,” said Humboldt farmer, Ange Kapperman. “It is exciting for me to spend the day talking to people who are interested in learning about agriculture. Cows are my ‘thing’ and I love being able to answer questions and talk to people who want to learn more.”

Kapperman said the most common questions are about the choices that consumers have to make when purchasing food. “There are a lot of questions about how animals are raised, and the differences between grass-fed beef, organic beef, and other ‘labels’ that people see at a grocery store,” she said. Several tours are planned for 2013, including the first tour based out of the Sioux City and the southeastern South Dakota area. All tours include a complimentary meal, snacks and drinks throughout the tour, and transportation on an air-conditioned tour bus. • June 20 – Moms’ Day Out on the Farm – A great day for Sioux Falls area moms to spend a day learning about the food they purchase for their families and connect with farmers and other moms. The tour will include stops at area beef, dairy and hog farms. • July 11 – Farms After Five – This shortened version of a “Day Out” tour is perfect for working adults. The tour kicks off after business hours and includes stops at Sioux Falls area hog and dairy farms. • July 15 – Food & Fitness Professional Day Out on the Farm – Food and fitness professionals play an important role in helping consumers make educated choices about their diets and nutrition. This special tour is the perfect way for professionals to learn more about how today’s food is produced by South Dakota farm families. The tour will include stops at Sioux Falls area beef, dairy, hog and egg farms.

• July 18 – Know Your Milk Tour – This tour will be based out of the Dakota Dunes/Sioux City area and feature tours of dairy farms in Iowa and South Dakota, as well as information from dairy processing professionals about how milk from the farm is turned into the wide range of dairy products we all enjoy. The tour is hosted in partnership with Western Iowa Dairy Alliance and will include lunch and a stop at the Blue Bunny ice cream parlor in Le Mars. Tour participants also receive $50 grocery gift cards and goodie bags of information and recipes, as well as the chance to win door prize drawings on the tour. Before each tour, participants complete a survey including the questions they have about food and livestock production so that tour hosts are prepared to address important issues. Online registration is available now for all tours – tours fill up quickly, so please visit www.agunited.org/moms-day-out/ today for more details on each tour and to register. CommonGround is a group of volunteer farm women who are working together to start conversations between the women who grow food, and the women who buy it. In South Dakota, women have reached out through social media, blogs and events at grocery stores. Learn more and find lots of answers to common food and agriculture questions at www. findourcommonground.com. Ag United for South Dakota is a coalition of farm families and farm organizations focused on keeping the state’s farms, ranches and rural communities growing and successful. y alarm is set and I should be in bed but today was a busy day. We played outside for most of the afternoon. You chased your big brother around helping him with his paper route, and then wrestled with your oldest brother while I made supper. After your bath you jumped on your sister’s bed when you should have been tucked into yours, then stalled a little longer picking out your favorite books. At the end of such a busy day, everyone is tired but I’m afraid to go to bed. I am afraid of sleeping too hard. I am afraid of sleeping through that alarm that tells me it’s time to check your blood sugar. It’s time to make sure you haven’t dropped too low in the middle of the night, or spiked too high from the bedtime snack you ate hours ago — to keep the lows from happening. You had a busy day being a little boy... a little boy with diabetes.

During your busy day, you stopped playing to have your fingers poked and blood sugar checked. Snacks and injections of insulin are a part of every day. There is a collection of stuffed animals on your bed from different hospital stays and one from the EMTs that came our first Mother’s Day after diagnosis, when you went limp in your Daddy’s arms from hypoglycemia. Your backpack is full of test strips and a meter, syringes, insulin, alcohol swabs, glucagon, snacks, and a juice box — all of the things you need just so you can be a little boy at play. I never want to see my children in pain, and to be the one inflicting it during countless injections breaks my heart. There are days when you ask “are you going to poke me again?” and I have to answer “yes”. I have seen you lie in the emergency room bed not making a sound while IVs are started. The staff always

I stand strong beside you during these visits because there isn’t time to break down and I follow your lead trying to be just as brave as you. Tonight I tucked my son into bed and listened to him talk about his busy day until he fell asleep. It is now three o’clock in the morning and I am sitting with my little warrior as he drinks more juice and eats another snack just to keep his blood sugar above 50. There is usually a long night that follows a busy day. South Dakota - It’s time to fight the good fight. Thank you for all you are doing to help Stop Diabetes.

Peds Patch Open Source Vegetable Garden

W

elcome to the Peds Patch, an open-source vegetable garden in Sioux Falls. This little plot of land has big ambitions. It will be developed and maintained by community members and the harvest will be available to anyone who would like to partake. Why is this such a big deal? It just might be the kind of thing you have to experience to sufficiently appreciate. I’m not a gardener myself, so I was surprised at how exciting it was when the first seedlings popped their little green heads out of the dirt. And that hasn’t worn off as I watch them grow every week. There is something about this process that reminds one about hope and goodness. There are a lot of people who have never had this opportunity. This is their chance. It’s also an opportunity for kids to learn where their food is coming from. An extra bonus is that they are much more excited about trying and eating veggies after they’ve grown them. The garden will promote a healthy lifestyle and we will be providing resources and support in this endeavor. It’s also part of the “urban agriculture” movement, which is all about growing food in cities. The garden will provide exposure to this concept and demonstrate how to get involved. A common

Join the Fun! barrier to produce consumption is access due to cost and the cheapness of less nutritious alternatives. The produce from this garden will be available to anyone, as long as it lasts, which will be one step toward alleviating this barrier. Further, as people become more comfortable with growing their own food, they may be willing to try it at home themselves, which will improve access on another level. Interested yet? Then come join the initiative. It’s okay if you don’t garden, or don’t have experience. If you want to get your hands dirty, we will be happy to show you how. And if you don’t, then let us know what you like to do and chances are, there’s a way we could use those talents too. Feel free to bring the kids, we’d love for them to be a part of the project. Whether you only have time to help out once or on a regular basis, your support will be appreciated.

Komen® has been searching for the cure while also helping low-income, uninsured and under-served women gain access to life-saving breast cancer screening and treatment services. Locally, Komen South Dakota has raised and invested over $1.2 million to help fight breast cancer in our state. However, our fight isn’t finished. Thousands of women across the state are still in need of breast health services. Each year, 75 percent of the net proceeds from the Race are used for breast cancer screenings, treatment support and education programs for medically underserved women and men across South Dakota. The remaining 25 percent of funds support breast cancer research grants at a national level to help find the cure. N

ext to the red front door of the Doeden home sits an old wagon. In the old wagon is a weathered, wooden tool box. And, in the weathered, wooden tool box is a pile of mini terra cotta pots. You know that someone creative lives here. Joel and Donna Doeden moved into their southeast Sioux Falls home two years ago, as another step in the down-sizing process, which first took them from the home where they raised their children to a downtown loft in the Harvester building.

While they liked the loft and being downtown, Donna says they missed having a yard…and a dog. Now, they have both. Joel is a plumber by trade and handy at fixing and building. Donna has a creative eye and loves to “sew anything,” and they both love searching for good “finds” to add to the eclectic furniture and accessories throughout the house. In the dining room, for example, Donna says, “There isn’t anything in this room that hasn’t been redone.” The long farmhouse-style table, which Joel made, has a top

made from a big piece of scrap walnut that they found. The legs are old organ pipes. And, there isn’t a matching chair around the table. A big window to the backyard and the collection of plants on the table and under the window seem to bring the outdoors in. Hanging over the table is a unique light fixture which has two more traditional-shaped shades on each end and between them are three different colored bottles with lighting filaments inside. The big black hutch that stands against one wall came from friends who, Donna says, were “going to dump it.” She and Joel

figured they could find a place for it. On the opposite wall from the hutch hangs a large framed window as an art piece, with lettering that Donna added which says, “Count Your Blessings – Make Your Blessings Count.” The kitchen also has the country farm feel with cream colored cabinets with black counters and a coordinating cream-colored tile backsplash. A drop-leaf table sits in the corner next to a little side table that serves as the coffee station. Above the little table is a weathered shelf the Doedens made with stoneware

crocks and ceramic roosters on the shelf, and their coffee mugs hanging from hooks. High along one wall hang a row of small, copper Jell-O molds. “Those are my sister’s finds,” Donna says. “She’s the real thrift queen!”

There are a few major pieces that catch the eye in the living room – the big weathered door with 12 small panes of glass that leans against one wall, the wall hanging made from what looks like wooden fencing that was once used for hanging tobacco leaves to dry, and the long, colorful painting of a cow. There

is no real story behind the cow, according to Donna, except for that she was seeing it around in various places as a trendy accessory. “I was just seeing paintings like that everywhere,” says Donna. “They were in magazines and online…and we found this

one at Zing! downtown.” The room also has some softer features like the collection of square frames holding pressed flowers and descriptions written in a pretty handwritten script, and the colorful flowered drapes that pull all of the room’s colors together. The front windows

have traditional blinds, but there’s always one that is drawn halfway up. This is the one in front of the big cushioned bench that Joel built for Phog – their adopted Schnoodle. Just off the living room, a door opens into a large walk-in closet that houses the Doeden’s main floor laundry room. The light-colored cupboards each sport a different variety of red knobs, and the light fixture is an old metal birdcage. “That’s really my pride and joy in here,” Donna says. While the couple has done some painting and “re-doing” throughout the house, the one room they kept true to the home’s 1960’s heritage is what they refer to as “the turquoise bathroom.” They did add new faces to the vanity cupboards and updated the mirror with a wood frame, but they left the turquoise tile on the wall, counter and backsplash. “It’s funny that this color is back in again now,” Donna says, “so I was actually able to find a shower curtain to go with it.” That shower curtain – with a funky geometric print in turquoise, brown and green – along with the brushed silver accessories in the room – are a nice modern complement to the colored tile. If you are a guest in the home, even if you’re not spending the night, you still have to go into the guestroom just to look at the bed. At first, you see the lovely country-style quilt on the bed, but as you turn the corner, you get the full view of the headboard – a large wooden door, complete with knob. As they

worked on refinishing the door, Donna says, it kind of distressed itself because the new paint naturally crackled over the old layer of lacquer on the door. When they took off old shutters from the front of the house and hung new ones, Joel gave the old ones a coat of dark paint

that coordinated with the dark wood of their master bedroom set, and Donna hung them on the wall. One is currently being used as a magazine rack. Near the window that looks out to the backyard hangs a decorative shelf that looks like it would have once hung in a

kitchen, complete with small wooden dowels that would hold coffee cups and a skinny dowel that likely was the towel bar. Donna says that it has been black and creme. Now it’s painted green and holds necklaces on the little dowels and scarves on the “towel bar.” The master bath used to be pink. While they were okay with keeping the turquoise bathroom, they didn’t have the same attachment to the pink. Now, the décor is warm earth tones, a good-sized walk-in shower with the showerhead hung from the

ceiling over the middle of the shower, and a full-of-character shelf they made by framing an old window with a pallet. “Joel loves making things out of pallets,” Donna says with a smile. There isn’t really a word that Donna has for their style. Actually she has several words…such as Goodwill, auctions, Craig’s List and Hunt and Gather (their favorite shopping haunt in the Twin Cities). For the Doedens, it’s all about creativity…and comfort.

Combine these ingredients and mix on medium speed until soft and easy to handle. Press into a jelly roll pan and bake at 350˚ for 12-13 minutes. Don’t over bake. Allow crust to cool for 2-3 hours. Cream together the following ingredients and spread on top the cooled crust: 8 oz. package softened cream cheese 1/2 cup powdered sugar 1 cup whipped topping 1 tsp vanilla 1 tsp almond flavoring Top with sliced fruits of your choice. Nick likes bananas, (be sure to soak the sliced bananas in lemon juice before placing on the pizza, so they won’t brown), but you can also use mandarin oranges, green grapes, red or black grapes, kiwi and strawberries. Chill for a couple hours before serving.

Allow cookie dough to reach room temperature for 10 minutes to soften. Press the dough onto a 12 inch round pizza pan and bake at 350˚ for 16-18 minutes...don’t over bake. Cool for 2-3 hours. Beat the cream cheese, powdered sugar and lemon juice in a small bowl. Spread this mixture onto the cooled crust and top with the cherry pie filling. Arrange the sliced fruit over the pie filling. Chill for 2-3 hours and enjoy!

Vegetables for the By Jim Mathis

I

am a carnivore. There is no denying it. I like chicken and duck and seafood. I crave beef and pork and lamb. I will gladly consume bison or elk or goat. I simply like meat. I like it grilled, seared, braised and fried. In some cases I’ll eat it raw. Needless to say, we don’t celebrate a lot of “meatless Mondays” at our house. That doesn’t mean I don’t like veggies, I do, but I’m a long way from becoming a vegetarian. The question is how do you get

a person with the bumper sticker that says “Salad is what my steak used to eat” to eat their greens? That’s the challenge I will explore and offer a few suggestions. Better with Bacon Last fall we were visiting some friends and I offered to help make dinner. This was a very meat-centric household, so the menu was steak and fish. I offered to make risotto as a starch.

Hendrick’s Cucumber Gimlet This recipe is adapted from a cocktail they make at Parker’s Bistro on Main Ave. It is the perfect drink for a warm summer night on the patio. Cucumber Syrup 1 cup water 1 cup turbinado raw sugar (or light brown sugar) 10 basil leaves 10 mint leaves 1 medium cucumber Start by grating the cucumber into a fine sieve paced over a bowl. Let the grated pulp sit for a half an hour to let the juice drain into the bowl, occasionally pressing with the back of a spoon to release the liquid. Bring the water and sugar to a boil in a small saucepan to dissolve the sugar. Take off the heat and add the cucumber juice, mint and basil leaves. Allow to cool then strain into a bottle or jar and chill. Hendrick’s Cucumber Gimlet Cocktail 2 ounces Hendrick’s Gin 1 1/2 ounces cucumber syrup 1/2 ounce lime juice Combine above in a cocktail shaker filled with ice. Shake to chill, then strain into a chilled martini glass or old fashioned glass filled with ice. Garnish with a slice of cucumber and a mint sprig.

The man of the house had bought some nice looking Brussels sprouts which received turned-up noses from the lady of the house and their boy. I said I could make the sprouts so they would like them, a claim that was met with much disbelief. Here’s what did. I cut up a couple of strips of bacon and fried it up in a skillet; once it was crispy, I set the bacon aside. I cut the sprouts in half and cooked them cut side down in the bacon grease until they browned. Then I added about a half

cup of honey and quarter cup of balsamic vinegar and cooked it for a few minutes more, stirring it all together creating a nice sweet and sour glaze on the tiny cabbages. I poured them into a serving bowl and topped with the crumbled bacon, and headed to the table to take on the challenge. Everyone took a little to start, just to be polite, then they came back for more. Soon the bowl was empty. Success and confirmation that everything is better with bacon. Treat Veggies like Meat Sometimes you have to fight fire with fire. When you’ve got cauliflower but they want steak, grill up some cauliflower steaks. You won’t fool anyone into thinking the cruciferous vegetable is meat, but you can treat it like it is. Start with a whole head of cauliflower and slice it into inch thick slabs from top to bottom, the center part of the head works best. Drizzle with chili oil if you have it (or olive oil if you don’t) and season with salt and pepper. Throw the slabs on the grill right next to the steaks or hamburgers and cook over medium-high heat for six to eight minutes per side. The cauliflower will soften and take on the smoky flavor of the grill. Drizzle with a little melted butter and serve. You can grill just about any vegetable that is big enough not to fall through the grates, from corn on the cob to romaine lettuce.

40 nest | Man in the kitchen

Heck, I could write an entire article on grilled vegetables, so watch this space for that subject in the near future. Drink your Veggies Are you one of those people who try to count the olives in your martini as a serving of fruit? Yeah, me too. While I doubt any dietician would condone it, you can find a nice variety of fruits and veggies at the bar, and I don’t mean the salad bar. Look at the staples of the brunch crowd; the Bloody Mary and the Mimosa. The Bloody Mary starts with vegetable or tomato juice, and then you can add a veritable garden of pickles, celery, olives and peppers. The only thing that pushes it out of the health food category is the vodka. And Mimosas start with pure Florida orange juice and California sparkling wine, what could be more American than that? I recently discovered a cucumber gimlet that surely counts toward my five servings of vegetables a day. If I have two I might be able to skip the salad with dinner. Do yourself a favor, eat something good today.

Jim really likes veggies, but he’s still a carnivore at heart. When he’s not grilling or eating, he runs ADwërks, an ad agency in downtown Sioux Falls.

Happy Father’s Day, Wine by Riccardo Tarabelsi

I

don’t know much about the bond that exists between a father and a daughter since I only have boys, but I do know that my father-in-law was a man who treated his daughter like a princess; protected her when she needed protecting, and let go when she needed her independence. It’s truly a remarkable bond. With my boys, they are always trying to emulate me. There’s nothing else like it in the world. Jaxon, my 9-year-old, keeps asking me when he “gets to shave.” Berent, my 10-year-old, thinks I am the “best driver in the world!” Dante, my 12-year-old, is always borrowing my ties for his band concerts and “formal” occasions at school. Here’s the point: the best Father’s Day present I receive every

year is becoming my sons’ idol more and more as they grow. To be their role model, mentor, coach, friend, Dad, is the greatest gift I could ever receive. Now it’s my turn to give a gift to all of the Fathers out there. If you are a Mom reading this, please pass this on to your spouse as he’s taking a drink of his ice cold beer this summer. Maybe a glass wine is just what the doctor ordered. Dutch researchers followed 1,373 men for more than four decades, noting their eating and drinking habits. Men who had about 20 grams of alcohol daily — equivalent to a half a glass of wine — had 2 1/2 years added to their life expectancy at

age 50, compared with men who didn’t drink at all, according to research published in the Journal of Epidemiology and Community Health. Men who consumed only wine had twice as much added longevity. “In this study, 70 percent of all wine consumed was red wine,” the researchers, led by Marinette Streppel of the University of Wageningen in the Netherlands, said. “This suggests that the cardioprotective effect of wine could be due to a protective effect of polyphenol compounds in red wine, but other explanations cannot be ruled out.” Polyphenols are chemical substances found in plants such

as tannins and flavonoids. Deep red wines like Cabernet and Zinfandel have a lot of tannins, which is a natural preservative found in the skins of red grapes. The research, dubbed the Zutphen Study after the Dutch town from which the participants were recruited, followed men born between 1900 and 1920 and examined them several times between 1960 and 2000. So what does all of this mean? Well, according to this study (and please keep in mind that I’m not a doctor or a researcher, and this is just a study which only proves a theory based on a small select group of observed individuals) you might be able to add years to your longevity by drinking red wine! I like this study! If you haven’t heard, red wine is beneficial for you on lots of different levels: 1. Reduced risk of death from nearly all causes: According to studies from France, UK, Finland, and Denmark, moderate consumption of wine is more beneficial than that of beer or spirits. 2. Heart disease: One of the well-known and most-studied benefits of red wine is its heart protective effect. Moderate consumption of red wine on a regular basis may be preventative against coronary heart disease. Scientists believe the red wine reduces the risk of coronary heart disease by reducing production of low density lipoprotein (LDL) cholesterol and boosting high density lipoprotein (HDL) cholesterol. 3. Blood clots: Red wine produces anticlotting, or antithrombotic, action. Light to moderate consumers of wine have lower levels of protein fibrinogen which promotes blood clot formation.

4. Atherosclerosis: Red wine may prevent the initiation and progression of atherosclerosis (hardening or “furring” of the arteries). Atherosclerosis starts when blood vessels begin to lose their ability to relax. Both the alcohol and polyphenols in the red wine appear to favorably maintain healthy blood vessels by promoting the formation of nitric oxide (NO), the key chemical relaxing factor that plays an important role in the regulation of vascular tone. 5. Hypertension: Excessive alcohol consumption is generally considered a risk factor for hypertension. However, there is some evidence of favorable effects of red wine on blood pressure. Two glasses of red wine (250 ml), taken together with the meal, lower post-meal blood pressure in hypertensive persons. 6. Kidney stones: Red wine intake reduces the risk of kidney stone formation. 7. Alzheimer’s disease: Moderate wine drinking correlates with a lower risk for Alzheimer’s disease. Researchers found that resveratrol, a red wine polyphenol, produces neuroprotective effects. Happy Father’s Day to all of you wine drinkers out there. As my Dad would always say, “Life is like a sled dog team: If you’re not the lead dog, the scenery never changes.” Carpe Vino!

It was also the first building that had a metal frame, and not made of bricks and mortar. This made the building weigh one third less. It was torn down in 1931. Architects have made quite the impression on the city of Chicago, with one of the more influential ones being Frank Lloyd Wright. There are 17 structures linked to Wright that still exist in Chicago today. One of the best cities to enjoy a casual bike ride, Chicago

omen experiencing vague symptoms like low energy, weight gain and fatigue might blame a small butterflyshaped gland at the base of their neck – the thyroid gland. Low thyroid function can be to blame for symptoms like these, as well as brittle hair and nails, bloating, swelling in the legs or around the eyes, and constipation, said Dr. Margaux Añel-Tiangco, endocrinologist with Avera Medical Group Endocrinology. It’s called hypothyroidism, and it’s marked by underproduction of the hormone thyroxine, which affects your metabolism. Because symptoms are vague, it’s not unusual for low thyroid levels to go untreated. Yet continued low thyroid function can raise cholesterol levels, placing you at greater risk for heart attack or stroke. Also, during pregnancy, untreated hypothyroidism can be harmful to the baby. Low thyroid function is more common than overactive thyroid. The incidence of hypothyroidism is about 5 percent of the population, and it’s five to eight times more common in women than in men. The incidence of overactive thyroid – hyperthyroidism – is about 1-2 percent of the population.

Thyroid problems can’t be diagnosed on symptoms alone, however. “It’s not unusual for people to come in to their physician’s office and say they’re feeling tired and gaining weight and want a thyroid test – and it comes back normal,” Dr. Añel-Tiangco said. “There are many other conditions that fatigue, low energy and weight gain can be attributed to,” she added. Thyroid function can be checked with a simple blood test. Because thyroid problems – especially low thyroid – can be easily treated with medication, it’s a good diagnosis to rule out if vague symptoms persist, Dr. Añel-Tiangco said. Low thyroid function is usually caused by an autoimmune disorder, known as Hashimoto’s disease, in which the body produces antibodies to the thyroid, causing it to lose all or some of its function. Other causes could include damage to the thyroid gland, a history of thyroid cancer, past radioactive iodine treatment for overactive thyroid, or thyroid surgery for nodules or cancer. The standard treatment is levothyroxine, the synthetic replacement of the natural thyroid hormone, thyroxine.

etc. for her | June 2013 63

The opposite of low thyroid function – overactivity of this gland, is hyperthyroidism. “This makes the body go into overdrive,” Dr. Añel-Tiangco said. Symptoms include heavy sweating like you’ve been exercising, fast heartbeat, unexplained weight loss, anxiety for no particular reason, hand tremors, or diarrhea. It can also be marked by unusual eye symptoms, in which your eyes feel like they are bulging. And the thyroid gland at the base of the neck might feel sore and tender. The most common treatments of hyperthyroidism are radioactive iodine and antithyroid medication. In some cases, surgery is also an option. Hyperthyroidism is often caused by nodules, or lumps in the thyroid. Another cause is Graves’ disease, in which the body’s immune system attacks the thyroid gland, causing it to overproduce thyroid hormones. It may also be caused by an infection that destroys the thyroid and causes it to release preformed thyroid hormones.

64 mind – body – spirit |

HEalth & Well-being

Thyroid nodules are more common as people age. Often, they don’t cause any symptoms, and go undetected unless they are spotted on a CT scan of the neck area that’s being done for another reason, or a vascular ultrasound screening of arteries in the neck. “Most – up to 90 to 95 percent – are benign. About 5 to 10 percent do turn out to be cancerous,” Dr. Añel-Tiangco said. “Odds are, a lump or nodule in the thyroid is benign, but if it turns out to be cancer, it is usually curable.” While thyroid problems should not go untreated, people might also mistakenly blame the thyroid for vague symptoms, when it really isn’t the cause. The best advice is to get regular checkups, and tell your doctor about any persistent or unusual symptoms. “Thyroid conditions can be easily diagnosed and treated – or ruled out,” Dr. Añel-Tiangco said. Bennett Peterson’s Room By Mary Michaels | Photos by Chang Photography

t’s hard to describe the anticipation you have as a soon-tobe-parent awaiting the birth of your child. You can’t help but imagine what your baby will be like, and you begin all the preparations to get ready for the big day. For many parents who choose to find out the baby’s gender in advance, those preparations include decorating the nursery. For Chris and Alicia Peterson, who were already parents to son, Will,

that meant looking for pink when they were told the baby they were expecting was a girl. Crafty mom Alicia went right to work adding die-cut circles to a pink wall, covering a side table in frilly pink tulle and decorating pink paper lantern lights with hundreds of little fabric circles. June finally arrived...the day had come. And then, those three magic words from the doctor: “It’s a...BOY!”

etc. for her | June 2013 67

Oops. Of course, the Petersons were thrilled to have a healthy baby boy. But, they didn’t have a boy’s name on the list. And, the room was pink. The quick transformation began to create a room for Bennett James. They still had bedding from when Will was a baby, so the blues and browns and the dots, stripes and plaids in the bedding became the foundation for the new design. The walls were painted blue, and new brown circles were added to the wall - painted this time. “My mother-in-law painted all those circles,” says Alicia. Three large canvas color prints of Bennett as a baby hang over the crib, and a creative paper maché “B” with Bennett’s name in cut-out letters hangs on the wall. That was one of Alicia’s many creations. “I’m kind of a do-it-yourselfer,” says Alicia. “I see things in stores or get ideas from other places, and then figure out how we can just make it ourselves.” While the hand-decorated pink lanterns are now in the basement, the Petersons were able to keep one of them - a white one - and then add two new blue hanging lanterns in the corner of the room. Although the change from pink to blue happened very quickly, several personal touches have been added since Bennett joined the family. Alicia’s mom cross-stitched a little boy laying on

The Petersons also framed the birth announcement that included all of the important details about Bennett along with his little footprint in blue. wicker basket of books is ready for reading time - or middle of the night dates, adds Alicia. While Bennett’s arrival was a big surprise, and it took a little time for Will to adjust to the thought of having a baby brother instead of a baby sister, Alicia says their family couldn’t be happier. And when you hear the infectious laugh of handsome one-year-old Bennett, it seems he agrees.

atie Jongejeugd was standing in a doctor’s clinic with a child who had a worrisome cough. She and her family were on vacation out of state and she was in an unfamiliar setting, trying to answer a question about her six-year-old son’s vaccination history. Normally, that question would have simply added to the stress of the situation. But this time, the anxious Sioux Falls mom pulled out her smart phone and had the answer at hand – even before her son’s next round of coughs. “Within seconds, I had it right there,” says Jongejeugd. “I didn’t have to estimate. I didn’t have to guess. I had it.”

“She can request prescription renewals or medical appointments online, not having to interrupt her workday with phone calls to the doctor’s office. And nearly everything she used to take care of with a phone call is now handled with a quick, secure e-mail directly to her doctor through My Sanford Chart.”

My Sanford Chart For the past two years, Jongejeugd has used My Sanford Chart for all of her family’s medical needs. The system, which allows her to access medical records, make appointments and communicate with her medical care providers, has changed the way she handles her family’s health care. Jongejeugd, who works in computer technology, first signed up for My Sanford Chart out of curiosity. Once she got logged in and set up access to medical records for herself and her two children, she discovered that the secure program saved time and made her a better-informed patient.

“I thought I would just log on and see what they were talking about,” says Jongejeugd. “Now I can’t imagine what I did without it.”

A Convenient Tool Life is busy for her family. Jongejeugd and her husband juggle work schedules and after-school activities with six-year-old Jacob and 10-year-old Bailey. Questions for the doctor generally come at inconvenient times, after kids are picked up from their afterschool program or they are on the way to soccer or t-ball practice, she says.

“I can e-mail a question when I think about it or make a request for an appointment,” she says. “It doesn’t shut down at 5 p.m. or open at 8.” Jongejeugd has anytime access to many of her electronic health records, including health summaries, prescriptions and test results. She’s been able to use her health records to clear up an inaccuracy with her insurance company and print out her children’s vaccination records from her home computer. When lab tests are ordered, Jongejeugd said she usually gets a notice on My Sanford Chart that the results are in before her doctor’s office has a chance to call her. And it’s nice to know what has come back to be able to ask better questions when she’s on the phone to the doctor, she says. “I can see what they see,” Jongejeugd said. “It makes me a better patient.”

First Phrases

by Kristen Peterson

Educational Lite (free) Full version $9.99 As a mother of a toddler who is becoming more verbal each day, I absolutely love this app. First Phrases was an app created by a speech-language therapist and does a wonderful job creating fun, engaging and interactive approaches to helping toddlers, and young children, put together two and three-word phrases. First Phrases not only allows the user to see and to hear an expression, such as “turn off the light” (verb+noun combination), but a kidfriendly character will act out the phrase, thus helping children make the association between words and their meaning. One of the many reasons I’m so impressed with this app is the variety of customizable choices to make it the right fit for your child. One of the many advanced opportunities on this app for older children is the record-your-own-voice option. Your child will be able to say the phrase that they saw and heard on the iPad and record their own voice. After they record their own voice, they hit the play button and the character will “act out” what they are saying. If your child records the phrase, “open the door,” the character will say, “ok, I will open the door.” You will then see the character, dog, cat, or mouse (your choice) open a door at the same time you hear your child’s voice say, “open the door.” First Phrases has close to 20 simple verbs such as drink, eat, cut, wash, play, etc., paired with over 200 noun combinations. This app is very large given the many animations, pictures and opportunity for voice recordings. First Phrases will take a fair amount of space on your device, and does not work well on iPhones, but does great on iPads.

Rhyming Words

Rush Hour

Educational $0.99 Gorgeous pictures, no distractions or pop up ads and the ability for parents to record their own voice to help older toddlers and young school-aged children to be introduced to rhyming words are just a few of the many things that impressed me about this spectacular app. Rhyming Words has over 200 absolutely beautiful pictures where children can tap on the picture and hear the sound. Children then look for a matching picture with the same rhyming sound and drag and drop it in place. The Rhyming Words app gives encouraging feedback when a child matches the rhyming words correctly. Parents and teachers can customize this app by picking which sounds they would like their child to work on, such as the “an” or “am” sounds. There are no games or distractions after a child gets so many answers correct, which may make some children bored after a short time, however the questions increase in difficulty and children are asked to match more pairs. For example, the first few questions on the app only ask children to match two sets of rhyming words, and after they get those correct, the app asks them to now match three sets of words, and so on. Rhyming Words is a perfect app for short periods practice to help reinforce or teach rhyming words to kids.

Games Lite (free) $2.99 full version Rush Hour is a board game of which I have bought many copies over the years. It has been a favorite for my students in my classroom, but has also been a frequent purchase for birthday parties and Christmas gifts for children and adults of all ages. So, I was not surprised when doing some research about great apps for kids, that the Rush Hour app won the 2010 Parents’ Choice Gold Award. In order to understand the object of the game, Rush Hour, think about a crowded parking lot where you need to move the cars and trucks around you in order to exit the parking lot. Users are challenged to solve the puzzles in as few moves as possible and one of the many reasons I love this app for children and adults because the app allows users to set the difficulty level from beginner to high expert, making sure you find success with solving the challenges. The app also helps decrease frustration with the opportunity for “hints” and also allows users to hit the solve button and skip to the next puzzle. The lite version comes with 25 puzzles to solve and upgrading to the full version gives users 2500 challenges. Rush Hour is an app that everyone in your family will find addicting, challenging, and fun.

Photo Collage Materials Needed: chalkboard quote bubbles or poster board cut-outs, camera, and computer software that is capable of creating a collage.

Directions: Ta k e y o u r c h i l d r e n somewhere with your camera and have them write messages to their dad about why they love him. Take pictures of each child holding their message, or if there is only one child, you can take multiple pictures of the same child holding different messages to Dad. If you don’t have chalkboard material, you can write your messages on poster board or get creative with how they display their message in the photo. When at your computer, use computer software such as Picasa, which is available for free through Google, to create a collage using the photos you just took and some words such as “Daddy, we love you because…”. Choose your size according to the frame you would like to use, then print it out and frame it for Dad!

Daddy and Me Artwork Materials Needed: White paper, construction paper, glue, 2 colors of paint, and paint brushes.

Directions: Paint Daddy’s hand and press it onto white paper. Allow it to dry. Next, paint the child’s hand a different color and press in the middle of the palm of Daddy’s hand, or right next to Daddy’s hand print. You could also paint the child’s footprint and mix up the artwork with both. Once completely dry, glue the white paper onto a piece of colored construction paper for a frame. Write the child’s name and date, or “Daddy and Me” as a title. A variation of this would be to add a poem to the artwork by writing it out or printing it. Here are two poems that would work perfectly with hands and feet artwork for Dad.

Books

These are just some of the wonderful books for children we have come across this month. We hope to share with you some you have not seen before and also introduce others being released in the near future. Enjoy.

Timmy Failure: Mistakes Were Made by Stephan Pastis Take Timmy Failure - the clueless, comically self-confident CEO of the best detective agency in town, perhaps even the nation. Add his impressively lazy business partner, a very large polar bear named Total. Throw in the Failuremobile -- Timmy’s mom’s Segway -- and what you have is Total Failure, Inc., a global enterprise destined to make Timmy so rich his mother won’t have to stress out about the bills anymore. Of course, Timmy’s plan does not include the four-foot-tall female whose name shall not be uttered. And it doesn’t include Rollo Tookus, who is so obsessed with getting into “Stanfurd” that he can’t carry out a nobrainer spy mission. From the offbeat creator of Pearls Before Swine comes an endearingly bumbling hero in a caper whose peerless hilarity is accompanied by a whodunit twist. Ages 8 yrs - 12 yrs Candlewick Press

The Skeleton Pirate by David Lucas The Skeleton Pirate is the Terror of the Seas, and he’ll never be beaten! That is, until he gets beaten by an unruly bunch of pirates and is thrown overboard. Down in the depths of the sea, he is rescued by a beautiful mermaid, only to be swallowed by a whale. But the whale has a tummy ache from all the other things he has swallowed -- like a golden ship full of treasure. With echoes of Pinocchio and Treasure Island, this picture book is full of humor and irrepressible energy, a perfect adventure for little would-be pirates. Shiver me timbers and swash me buckles -- it’s time for an adventure with the Skeleton Pirate! Ages 3 yrs - 6 yrs Candlewick Press

Hedgehog’s Magic Tricks by Ruth Paul Like many amateur magicians, Hedgehog finds that his tricks don’t always proceed as planned. Mouse doesn’t quite disappear, Rabbit (being larger than Hedgehog) is difficult to pull from the hat, and Duckling is not quite brave enough to endure a turn as magician’s helper. But when Hedgehog’s friends see how sad he is, they provide a surprise that results in everyone agreeing that Hedgehog is very good at magic after all. Preschoolers will delight in the sweet illustrations and in seeing what Hedgehog doesn’t -- his friends helping to make his day magical. Ages 3 yrs - 5 yrs Candlewick Press

Transplanting Hope for a Healthier Life By Adrienne McKeown

n the Bible, Jesus tells us, “Greater love has no one than this: to lay down one’s life for one’s friends.” Perhaps this is exactly what is happening every day at the Avera Transplant Institute where, since 1993, more than 1,000 kidney, pancreas, and bone marrow transplants have taken place. Through the miracle of modern science and technology, people desperately in need of life-saving transplants have been given the gift of extended life through the generosity of “friends” who are literally giving a piece of themselves in order to make life better for others.

Andi Marquardt serves as a transplant social worker at the Avera Transplant Institute. Each day, she has the privilege of working with kidney and pancreas transplant patients both before and after the transplant procedure. We sat down with Andi to learn more about her role on the multi-disciplinary transplant team.

Please tell us a little bit about what a transplant social worker does, and how long have you been serving in this role. Spark_EFHAd_June2013F.pdf

I’ve been working with the Avera Transplant Institute for almost two years. My role on the assessment team is to work with the patients and the families that are interested in transplant. I help the patients overcome obstacles in order to be ready for transplant, and I also complete a psychosocial assessment to help identify some of the barriers to transplant, whether those barriers are transportation to the hospital, financial barriers, or a lack of support. I also work with the patients after their transplants to make sure they have continued medication

“Your mind just gets opened up to how many people this affects and how all of it so intricately connects. Maybe it was a high fever or maybe some prior medication — even regular use of some over-the-counter medication — has deteriorated their kidneys. There are so many things that can affect your kidneys. It is so important to have a balanced diet, good health care, and exercise.”

coverage and that there aren’t any financial barriers or any psychosocial issues that come up. Additionally, I help identify if patients have mental health issues or substance use issues that need to be addressed prior to transplant. I also do a lot of programmatic things such as assisting with planning patient events, developing the newsletters for the program, and serving as the liaison for the National Kidney Foundation.

So when you talk about the assessment team, who does that include? It’s a multi-disciplinary team including the transplant surgeon, the nephrologist (the kidney doctor), the nurse coordinator who coordinates the evaluation as well as the transplant process, the financial coordinator, a dietician, and a social worker. The assessment process involves a full-day evaluation for transplant, and some people who live in remote areas will come in for several days at once to complete all of the necessary evaluations and tests.

What does the psychosocial assessment involve? Psychosocial assessment is a social history. Tell me about your life; tell me where you came from, your job experience, your school experience, any psychological or substance use history. Basically, what’s your history? We are making sure they are as stable and ready as possible and making sure they have that needed family support. We’ll try to figure out if the kidney disease is a family disease. And sometimes, the patients ask me questions. I’ll ask them a question, and they’ll say, “Oh, I didn’t think about that. What about my daughter? Is she at risk for something like this?” Then we can really break down some of those barriers and try to educate the patient more. We also assess some of those barriers we talked about. Are they in a good financial position, because the medications for transplant can run as high as $5,000 a month? We want to make sure they’re equipped to handle that expense. We also assess for adherence to treatment plans they’ve had in the past because adherence to the post-transplant plans is so much more important after transplant so that they don’t reject the organ. So we need to make sure they will adhere to the new treatment plan.

In my understanding, kidney donation is somewhat unique in that you can have a donor who is still alive. Do you work with donors, too? No, ethically and politically, we need to keep it very separate. I know nothing about the donors until I see it on the calendar that one is scheduled. We have a donor coordinator and a donor

social worker and an advocate who works with the donors to make sure that they are doing this of their own free will and are not being pressured. I am responsible for the recipients and encouraging them and educating them on how to ask people to donate. It’s a really difficult question for a lot of people to ask, so I’m in the process of developing a donor toolkit to help patients understand what they can say or how to bring up the topic. We are also looking to have classes where recipients can help each other think of ways to ask potential donors.

Is that common for people to go out and find their own kidneys? We encourage everyone to do that. Living donors not only lead to a longer success rate with the organ after transplant, but it is also faster to find a living donor because you can schedule it based on the donor’s availability. Right now, the waiting list for a kidney in South Dakota is about three years. But if you have a living donor, you could potentially be scheduled in the next few months. So we do really encourage people to find their own donors. We always need more donors!

What have you learned since beginning your work in this field? Everything! (laughs) What really sticks out is how many things can go wrong that can affect your kidneys. Your mind just gets opened up to how many people this affects and how all of it so intricately connects. Maybe it was a high fever or maybe some prior medication—even regular use of some over-the-counter medication—has deteriorated their kidneys. There are so many things that can affect your kidneys. It is so important to have a balanced diet, good health care, and exercise.

How can we learn more about kidney health? The National Kidney Foundation hosts a Kidney Walk each year. This year, it will be held June 22nd at 10 a.m. at Sertoma Park. There will be lots of activities for patients, families, and providers. It’s open to the public and is a great chance to learn more about kidney disease. Bring your dogs and kids. It’s a lot of fun!

For more information about general kidney health or kidney transplants, visit the National Kidney Foundation website at www.kidney.org. If you are interested in registering as a potential kidney donor, contact the Avera Transplant Institute at (605) 322-7350.

Tail Talk by Dick Rogen, DVM

n the animal world, pets communicate with more than barking, whining and purring. It often amazes me how expressive pets can be with their tails. Maybe there are times when I might not want to know what they are saying about me. We all enjoy the hectic, rapid, almost-vibrating wag of dog’s tail when we come home. It seems sometimes that they are so happy and excited that the tail is going to fall right off! It is easy to tell that they are excited. I often wonder if short tailed dogs have to wag faster to show their excitement than dogs with the

long bushy tails. Pheasant hunters know well, that if their companion starts a slow side to side movement, they are getting close. Other dogs will do the same movement when they are deeply thinking about things. The slower it moves, the more intense they are thinking. Focus and reasoning are very important for them to learn. It also gives us insight into what amuses or entertains our friends. Dogs that hold their tails straight out and perhaps have the hair standing up are on guard and we should be cautious. They are telling us to back off. It is their warning as they decide whether to attack, defend or hold their ground. Never look a dog in the eye or stare at them if you see the straight tail or the hair standing up on their back and tail. They view this as a challenge. It may ignite a fight that we do not want to have. While tails that are up are happy, tails that are down are not. When they hold their tail down and do not wag, they most likely do not feel well. It takes energy to hold up their tail. I compare it to people when they are not well. It is tough to put on make up, dress up or get our hair in place. I strongly recommend that

you keep an eye on them for other signs of illness or distress. Tucked tails are an entirely different story. That is the tail position of submission. They are putting it down like a white flag being raised. Submission puts them in a position to not defend themselves and telling the others that they will not fight. I always think you should give them some space when they submit and allow them to come to us. Cats are the most proud of the tail owning pet population. It is well groomed, moves with grace and can be expertly placed in many locations. They are also more expressive with their tail. A soft flowing motion is used when they are happy with life. It often moves in waves and is slow in speed. Now, if a feline is unhappy, they have a particular flip that is filled with disgust. The sharp quick flip of the very end of the tail is not a compliment. It often hits me with a light pop and continues until I leave them alone. The faster the flip, the quicker I need to be finished picking on them. Tails come in all sizes, lengths and hair colors. They tell a story and are to be admired. It makes me wonder if they were playing cards, would they be able to bluff?

Volcanic Ashfall by Bruce Blake

Cherry Rock Bridge Marker location: Rural Hartford

A

bout 610,000 years ago, volcanic activity in the Yellowstone National Park area produced a cataclysmic eruption 1000 times larger than the Mount St. Helens eruption in 1980. At the blast site a huge depression (caldera) was created covering about 1500 square miles. Ground-hugging flows of hot volcanic ash, pumice, and gases swept across the western United States. The eruption shot a towering column of volcanic ash and gases into the air. Downwind from the volcano, fine ashfall blanketed a large part of North America. More than three feet of ashfall accumulated across Minnehaha County. The eruption occurred during an interglacial stage, and subsequent ice flows buried or removed the ash. Over time, erosion revealed an outcrop of ash near here in a cutbank on the east side of Skunk Creek. Locally called Hartford Ash, the site is used as a marker to distinguish three distinct stages of glaciation. The drift from two older glaciers has been identified below the Hartford Ash bed, while the drift from a third and more recent glacier is above it. DEDICATED IN 2006 BY THE MINNEHAHA COUNTY HISTORICAL SOCIETY IN HONOR OF DENNIS W. TOMHAVE.

Violent Volcano Eruption Volcanic ash consists of rock, mineral, and volcanic glass fragments. It is hard, does not dissolve in water, and is created by the shattering of solid rocks and the violent separation of magma (molten rock) into tiny pieces. The hot ash and gases rise quickly to form a large eruption column above the volcano.
