Last year, Lake Highlands resident Shannon Carlton started making and gifting diaper cakes for her friends who were expecting. The requests and referrals started rolling in, and in a matter of a few short months, The Zero Calorie Bakery was born. For those of you aren’t familiar with “diaper cakes” and started salivating at the mention of bakery, Carlton’s cakes don’t involve sugar, flour, baking powder, or any standard ingredients. Instead, think diapers, burp cloths, onesies and the like (thus, they’re zero calories).
