Spring is the perfect time to start fresh in your garden and bring it back to life. With nature waking up from its winter slumber, it’s an ideal opportunity to introduce sustainable gardening practices that not only benefit your garden but also the environment. From water conservation to biodiversity, here are some ways to create an eco-friendly and sustainable garden this spring.

Strawberries, or as the Germans call them, “Erdbeeren!”
This delectable fruit is not only chock full of vitamins, but also very healthy; 100 grams of strawberries only contains 37 calories — much less than most other common fruits.
Strawberries are also easy to find, inexpensive and, best of all, you usually don’t have to force your child to eat them!
There are so many desserts and other recipes you can make with strawberries (from cakes to jams), but nothing beats eating them straight from the field!

“Eating strawberries right from the panicle is a great experience,” said Katharina Heckel-Funck, owner of Erdbeerland Funck
Her company maintains many fields in the vicinity of Kaiserslautern “On the fields you can see and learn where and how these fruits are grown They are like vitamin bombs and a culinary experience ”
To enjoy them properly, just keep a few things in mind Ripe berries need to be consumed quickly They should be stored in small portions Avoid bags but keep them cool and side by side on a flat plate to avoid bruising The flavor enfolds best at room temperature�
Also, strawberries can be deep frozen, but after defrosting they become squishy and are best used for making jams�
“You can do so many things with strawberries, but honestly, my favorite is straight strawberries — right from the field,” HeckelFunck said “Least work, greatest taste!”

Spring is here. There is not a more perfect time to start enjoying the history, culture and natural beauty Germany has to offer. With its quaint historic towns, exciting cities, peaceful forests and breathtaking mountains, visitors may experience a hard time choosing where to visit. To help make the choice a little easier, I have outlined the top five destinations you do not want to overlook!
The fairytale castle: Neuschwanstein Neuschwanstein Castle, built from 1869 to 1886 by King Ludwig II of Bavaria, was the inspiration for Walt Disney’s famous theme park castle� Located between the Ammergau and Allgaeu Alps near the town of Fuessen, this area is a spectacular place to enjoy the great outdoors and one of the world’s most famous castles Visitors can take a variety of tours, including a viewing of the Throne Room and Singers’ Hall�
Zugspitze massif
Zugspitze is Germany’s highest peak, with the Zugspitze massif straddling the area between Germany and Austria The eastern summit can be reached by the “Bayerische Zugspitzbahn,” the “Bavarian Zugspitze Railway,” or cable car� Visitors can also ride the Tiroler Zugspitzbahn, a railway that runs to Zugspitzkamm station From here, visitors can continue on via cable car to Zugspitz-Westgipfel station, complete with a restaurant and impressive views Visitors can take in the gorgeous scenery from the viewing platforms�
The historic Port of Hamburg boasts the world’s largest model railway This model has more than 12,000 meters of train tracks, 300,000 lights, 890 trains and 200,000 human figures Spend time exploring this exceptionally detailed model, complete with airports, planes that actually take off, crowded cities, the countryside and busy harbor towns While in Hamburg, be sure to check out the habor-side promenade as well as the port, also known as the “Gateway to the World ”
The island of Ruegen
Ruegen is the biggest of the German Baltic islands and is linked to the mainland town of Stralsund by a causeway The island draws visitors for its diversity, including farms, forests, beaches, lagoons and peninsulas Make sure to visit the forested Jasmund peninsula, where you will find the highest cliffs on the island, Koenigsstuhl and Piekberg, plunging 117 and 161 meters to the sea
Koenigssee and Berchtesgaden
While out running errands this week, I struck up conversation with a local German man� He asked me if I had ever been to Koenigssee, which translates to “King’s Lake ” I have not He told me it is a beautiful place I must see Located on the German border near Salzburg, Austria, it is an outdoor enthusiast’s paradise� Enjoy the trail to the “Malerwinkel,” meaning “painter’s corner ” Take a boat ride to the 17th century pilgrimage chapel of Saint Bartholomew Located by Koenigssee at the end of Deutsche Alpenstrasse, Berchtesgaden is also an extremely popular destination Nestled into this mountain range, Berchtesgaden is home to Hitler’s Eagle’s Nest, a lodge built for Hitler and now a major tourist destination Here, you can sleep in a Bavarian hut, take a boat ride, or visit the local salt mine

Longer days, warmer temperatures and signs of new life in nature remind us to take care of our physical health. Research has demonstrated that eating more whole foods (think strawberries) and less processed foods (think strawberry Pop-Tarts) can lead to better behavior, happier moods and more productivity.
We all know that we should be getting more fruits and vegetables, but with busy schedules, stressful work loads and picky eaters, our eating habits easily fall short of our green intentions� Take for example how we all tend to get sluggish in the afternoons
Dieticians encourage people to understand their bodies’ natural cravings for fuel and plan accordingly
Many people reach for chips or candy, or think they’re making a good choice by going for 100 calorie Snack Packs — all of which are simply refined carbohydrates and likely to lead to a sugar crash
Sweet and subtle, you’ll hardly notice the spinach! This also makes a great breakfast.
• Thaw 1 cup frozen spinach, add to blender with 1.5 cups of skim milk, 1/2 teaspoon vanilla, a sprinkle of cinnamon and two packets of Splenda (a no-calorie sweetener). Once mixed, add to 1 cup of quick oats or 2 packages of instant lower sugar oatmeal. Add water to preferred consistency. Prepare in Tupperware overnight and heat in the morning with a dollop of peanut butter on top.
Oatmeal contains a lot of soluble fiber. This will lower blood sugar levels, which will reduce irritability, and keep them down. It also helps reduce hunger. Spinach has high levels of folic acid and magnesium, and both of these nutrients are linked to mood. A deficiency of either of these nutrients can help cause depression and anxiety.
Stocking yogurt, fruit and nuts to enjoy as an afternoon snack is a great alternative Fiber, good fats and protein will take longer to digest, give you lasting energy, and keep you more alert and satisfied until dinner�
Spring is the perfect time to get your “veggies on ” Food has been shown to impact our moods, from turkey feasts that often make us feel sleepy, to chocolate that enhances our sense of positivity Eating more vegetables, loaded with vitamins, antioxidants and water, can help fill you up (reducing your tendency to munch on tempting treats) as well as boost moods
A balanced snack (or breakfast, if a sweet start is desired)
• Blend 1 cup frozen mango, a jar of baby carrot food, 1 whole fresh orange, a container of greek yogurt, 1 tablespoon shredded coconut and a sprinkle of cinnamon
• Prepare the recipe the evening before and enjoy mid afternoon the next day.
Mangos are a good source of dietary fiber and vitamin B6, which help you feel alert. Carrots are high in vitamin A and oranges are high in vitamin C. Culturing of yogurt increases the absorption of calcium and B-vitamins. The lactic acid in the yogurt aids in the digestion of the milk calcium, making it easier to absorb. Coconut is a healthy fat in moderation and may lower heart disease risk factors. More than 50 percent of its saturated-fat content is lauric acid. A recent analysis of 60 studies published in the “American Journal of Clinical Nutrition” reports that even though lauric acid raises LDL (bad) cholesterol, it boosts HDL (good) cholesterol even more. Overall, this means it decreases your risk of cardiovascular disease. Cinnamon reduces LDL cholesterol levels and regulates blood sugar.
A sweet and salty lunch
• Find a salad bar and mix together a 1/2 cup of black beans, 6 cherry tomatoes, a heaping of mixed peppers and corn. Toss with salt, pepper and a drizzle of olive oil and a splash of hot sauce for a satisfying lunch.
Black beans are rich in anthocyanins, powerful antioxidants that provide neuro-protective benefits like bolstering short-term memory and reducing moodkilling inflammation. Their skins are also loaded with iodine, an essential nutrient that helps regulate your thyroid. Tomatoes (technically a fruit) are high in lycopene (which, combined with an oil, has been shown to reduce various types of cancer). Peppers are high in vitamin C. Corn is a sweet vegetable higher in carbohydrates, as well as protein (a large ear of corn has almost 4 grams of protein).

Vegetables can be easy to hate Some people, particularly children, detest their bitter flavor Researchers have shown that up to 25 percent of the population are “super tasters,” who naturally may despise vegetables If you follow a few tips, however, getting your veggies down may not be such an ordeal You can add them to foods you already enjoy, choose naturally sweeter ones or dip them in fun sauces� Here is a whole day’s menu to get your veggie on
ASPARAGUS SPREAD
Servings: 6
A great dinner companion (to serve with tacos or burritos)
• If you like guacamole, you’ll love this! Trim the ends of 25 asparagus spears and chop. Place in 1/2 cup of boiling water until tender, about 5 minutes. Drain under cool water.
• Blend the veggies with 1/2 cup salsa, 3 garlic cloves or 1 tablespoon chopped garlic, a few tablespoons of fresh cilantro, and 2 chopped green onions. Process a few times on pulse mode until incorporated.
Widely available in the KMC during springtime, asparagus is an excellent source of tryptophan, which serves as a basis for the creation of serotonin — one of the brain’s primary mood-regulating neurotransmitters. Asparagus also boasts high levels of folate, a nutrient that may fight depression.
AVOCADO CHOCOLATE PUDDING

A tasty dessert
• Blend 8 tablespoons cocoa powder with 1 1/2 cups skim milk, 1 chopped banana, 3 chopped avocados, 2 teaspoons vanilla and 4 tablespoons honey. Freeze for 20 minutes.
Avocados are healthy in antioxidants, vitamin c and healthy fats. Chocolate contains serotonin and improves endorphins, that feel good chemical. Banana is naturally sweet and also high in potassium and vitamin B6, which improve your nervous system.

Though Germany offers plenty of its own Easter markets, it’s always fun to take a trip and experience another country’s traditions.
Luckily, one of the best Easter markets in Europe is located in nearby Prague, Czech Republic
The Prague Easter markets are open every day in the Old Town Square, Wenceslas Square and Republic Square through April 27
These Easter markets originate from a time before the country’s communist era and have deep religious ties� But under communist rule, the religious aspects were banned As a result, the markets were not as widely celebrated and could not include many Czech traditions
Since the fall of communism in 1989, the markets have been reborn� Now, Czechs and tourists alike come in the thousands to celebrate the Easter season and beginning of spring�
The Old Town Square market is the largest of all the markets with more than 90 stands offering traditional Czech products such as beautifully decorated Easter eggs, laces, wooden toys and various other Easter decorations Visitors can enjoy different cultural pro-
grams such as performances, dance groups and folk singers, in addition to shopping or they can try some Czech specialties Young visitors can visit children’s workshops where they can try some of the crafts themselves
Wenceslas Square, located about five minutes away from Old Town, is slightly smaller It has shopping stalls and a group of food stands�
The Republic Square market is a farmer’s market that turns into an Easter market for this season It is a great place to find fresh food
The most prominent sight at the markets are the intricately decorated Easter eggs
The Czechs consider the greatest symbol of Easter to be the egg It embodies spring and new life
The eggs are hand-painted, brightly colored, and can even be decorated with beeswax, straw and feathers At some stands, Czech ladies dressed in traditional costume will personalize the eggs for you by painting on your name or a special message
Another popular symbol of Czech Easter found throughout the markets are Easter “pomlazkas,” braided pussy willow (Salix discolor) twigs, that are thought to bring health and youth to anyone who is whipped with them On Easter, which is celebrated on a Monday in the Czech Republic, boys go caroling throughout town and symbolically whip girls on the legs, according to custom

Duisburg represents a side of Germany that most people rarely see — and one that is worth seeing. As a current industrial powerhouse (and former coal town), Duisburg isn’t known for cute cobblestone plazas or perfectly manicured streets (though it has them). But this city of a half-million people is one of the country’s most entertaining, authentic, and visually striking. And it is definitely worth a trip!
It comes by this industrial status honestly� Duisburg was also once part of Germany’s thriving Ruhr coal region, which stopped thriving about six decades ago� And while few people would ever claim that the former coal country is straightup beautiful, there can be something almost magical about seeing old industrial areas that have been reimagined as parks, museums, and cultural bastions that remind us of humanity’s collective capacity to create and then change course And Duisburg does that just as well as any city anywhere�
Turning Grit to Gold:
Landscape Park Duisburg-Nord
There is something amazing — hopeful, almost — about gritty post-industrial places that are still functional but don’t produce heavy, polluting stuff anymore Duisburg’s Landschaftspark falls firmly into that category As a bonus, it is an absolute blast to visit
What was once an iron works (basically, an ol’ big factory where thousands of workers labored to produce iron, complete with a smoke-belching furnace and giant tower) is now an explorer’s paradise� Visitors can climb the 200+ foot blast furnace tower and wander through the site – which is actually pretty incredible, and makes you appreciate the engineering that goes into building any kind of factory� You’re also free to cycle, climb (there are climbing walls inside the old ore bunkers), and even dive (the park has the largest indoor diving pool — more than 40 feet deep — in Europe)
The park also hosts a fun array of summer festivals� Duisburg’s three-day Traumzeitfestival (Dreamtime Festival) attracts major rock, pop, and jazz artists from around the world, and takes place this year from June 20-22 The park also has an open-air cin-
ema that offers movies basically every evening during the summer

Getting to Duisburg
By car, Duisburg is approximately 3 hours from Kaiserslautern, 2�5 from Wiesbaden and 4 hours from Stuttgart Check with Deutsche Bahn for train options
Ingredients:
• 500g all purpose flour
• 80g sugar
• 1 tsp grated lemon zest
• 250ml milk
• 14g active dry yeast
• 2 eggs (size M)
• 75g butter (room temperature)
• pinch of salt
Preparation
• For the dough, sieve the flour into a bowl Add the sugar and lemon zest Mix everything briefly and make a well in the middle
• Heat the milk in a small pot (about 98 degrees) and dissolve the dry yeast in it
• Pour the warm yeast milk into the hollow and mix the milk and flour with a fork to form a pre-dough Cover the dough and leave to rise for 15 minutes
• Add the two eggs, butter and salt and mix well Knead the dough for a further 5 minutes until a smooth dough has formed that doesn’t stick to the side of the bowl anymore Cover and leave to rise in a warm place for 60 minutes
• Knead the yeast dough again on a floured work surface and divide into 3 equal parts� Shape each third of the yeast dough into long strands and weave them together Knead the ends into each other to form a wreath�
• Preheat the oven to 355 degrees top and bottom heat (fan oven 320 degrees) Spread 5 raw eggs on the wreath and press in lightly, cover the wreath again and leave to rise for a further 30 minutes
• Whisk the egg with the milk and brush the wreath with it� Sprinkle with a little caster sugar and place a narrow, ovenproof glass in the middle of the wreath (so that the hole remains intact during baking) Bake the wreath for 35-40 minutes After baking, replace the eggs with colorful Easter eggs�

Like road trips? Fortunately, one of the world’s most beautiful drives is just an hour from Kaiserslautern, along the curving roads of Mosel River Valley. Here’s an itinerary guaranteed to slow you down, recharge your batteries, and brighten your outlook.
Before we go, here are a few ground rules for our awesome road trip:
From Kaiserslautern, take the A6/A62/A1 to Exit 127 (Salmtal)� Then we leave the fast lane behind for a while
While this trip could be done in either direction, we’re going from Piesport to Koblenz
Our goal is to stick as close to the river as possible I’ll offer some road recommendations, but you and your GPS can sort things out, too
Speed is NOT of the essence Frequent stops are encouraged The goal is to slow down and appreciate the fact that we live so close to such an amazing area
This is wine country� If you’re driving and tasting, make sure to spit the wine out If you’re drinking, pick a spot to stay for the night and/ or a designated driver
All right. Let’s buckle up. It’s go time.
One of my favorite stretches of road ever is the L50 that descends from the high hills above Piesport down to the Mosel River There is something iconic about the way that bit of highway snakes back and forth This is the perfect spot to start the journey
Piesport is a sleepy, lovely village that produces excellent white wines Compared to the other towns along this route, there isn’t a lot to do there In fact, pretty
Metz, France
much the best thing to do in Piesport is to eat (and drink) Which is okay! You’ll be ready for food by the time you arrive Enjoy a hearty, delicious meal, then stroll along the river bank afterward Maybe take a catnap on a bench� And then get ready to roll!
Plug in ‘Burg Landshut’ as your destination, then take the B53 out of town It’s a gorgeous drive, but keep your eyes on the road You’ll have time to admire the views in a bit
Phase 3: TrabenTrarbach to Cochem
Traben-Trarbach is the best spot on this route to take a Mosel river ride Located on one hairpin bend of the river and not far from a couple of other hairpin bends, Traben-Trarbach provides perhaps the best sense of the majesty of the Mosel Valley� Fully appreciating it,
however, requires leaving the road and traveling by water
So book a river trip here By the time you return to shore, it will be time to eat again TrabenTrarbach doesn’t disappoint when it comes to restaurants, either� It is, of course, a wine-producing village, so the food is really good almost everywhere�
Afterward, we hit the road Follow the B53 out of town toward Zell Your GPS will be impatient It will want you to leave the river’s edge and get to Cochem quickly Tell it to chill Cross the river south of Zell, and hook up with the 421 until it becomes the B49 And then cruise ever so slowly toward one of the coolest river towns in Germany�
Whatever you do, remember to slow down. To enjoy the journey. To remember that life has been here long before us, and will be here long after us. That’s the awesome power of the Mosel Valley!
Soon enough, you’ll be standing in Burg Landshut, the ruined castle that overlooks BernkastelKues� The views are staggering: storybook village, gravity-defying vineyards, the knowledge that people have called this place home for millennia It’s incredible Whenever you’re ready, head toward town�
If you’re making this a weekend trip, Bernkastel-Kues is a fantastic place to spend the night It has loads of half-timbered gast-
hauses, hotels, restaurants, and shops There are constantly festivals in the spring and summer And, of course, there is very good wine But even if wine isn’t your jam, Bernkastel-Kues is still a marvelous place in which to sit and watch the day slowly turn to evening�
When it’s time to go, get ready for a curvy road As the crow flies, Traben-Trarbach isn’t far from Bernkastel-Kues - maybe just a few kilometers But we’re taking the long way Keep following the B53
Phase 4: Cochem to Koblenz
Cochem is awesome The restored Reichsburg castle is one of Germany’s best and most picturesque If you have kids who aren’t huge fans of wine towns, Cochem also has a fantastic pool and a super-cool, tourable, and mysterious Cold War bunker�
If you’re taking a long weekend, then Cochem is also an excellent place to have dinner and spend the night You’ll be refreshed and ready to go for the final leg of the Mosel road, which is the hour or so drive into Koblenz
Koblenz is one of Germany’s most overlooked gems, which is kind of funny for a city that’s 2,000 years old� At Koblenz, stretch your legs by visiting the Deutsches Eck, which is a triangular platform that juts like a giant stone arrowhead into the dark water where the Rhine and Mosel rivers meet� This is where you’ll officially say auf wiedersehen to the Mosel before you drive the 90 minutes back to Kaiserslautern

3. Maximize vertical space and use storage solutions
Use shelves, wall hooks, and vertical storage options to keep items off the floor and tables Invest in storage containers, bins, and baskets that suit your needs Label them so you know where everything belongs, whether it’s for seasonal items, books, or craft supplies

4. Keep flat surfaces clear

Reduce paper clutter by going digital where possible Use apps for bills, notes, and receipts Keep digital files organized with folders and backup systems
6. Implement a daily clean-up routine and declutter regularly
Set aside 10-15 minutes every day to tidy up, put things away, and organize any areas that have gotten cluttered� Regularly assess your possessions — about once every season — to see if there’s anything that no longer serves you
This will ensure that your space stays organized over time�
Decluttering is a process, and it’s okay to take your time with it. Celebrate your progress along the way, and keep in mind that maintaining an organized space is about creating lasting habits, not perfection!
