ike something out of a romantic fantasy novel, Sunnybrae Estate is a dazzling garden estate, perfect for weddings and big celebrations. Just 10 minutes from our CBD, it’s one of Adelaide’s best kept secrets. Back in the 1880s, the estate was privately owned and used as farmland.

Now, the buildings have been respectfully and beautifully renovated and the grounds maintained impeccably by the Liapis family.

Who would have thought that the industrial suburb of Regency Park was home to a spectacular wedding venue? Owners Kate and Garry created their luxury accommodation from a real passion for their land. “Our children had left home and we were sitting on our deck drinking a bottle of Barossa Shiraz, and I said to Garry, ‘It’s just us now, maybe we should share our amazing property with others?’” And that’s how Glamping at Boongarrie began.

The accommodation has all the bells and whistles of a fancy African safari tent: kitchen facilities, a bespoke ensuite bathroom with a bathtub overlooking unforgettable views, barbeque, air conditioning, heating, TV, fairy lights, freshly-baked bread by Garry... you even get to enjoy a complementary bottle of fine Poonawatta red. Just a short walk across the road, around the sheep and past native trees, you’ll find yourself at Poonawatta Wines, where you can enjoy a wine tasting experience.

Kate and Garry are all about supporting the region and local businesses.

“The idea is to go out and explore during the day, visit the nearby conservation park, taste some of the region’s best wines, do

some shopping in nearby towns and then, late arvo, come back, kick back with a barbeque or platter, enjoy the sunset and switch off at Boongarrie,” Kate says.

And because it’s close to the towns, you have complete freedom to move around without driving — grab a taxi or get picked up by one of the many Barossa tour operators.

“People love that they’re not in the middle of the town or surrounded by other campers; they have the farm to themselves, including a fire pit (in winter), creek bed and dam. And though we live on the property, we don't cross paths with guests — unless of course they would like a chat, which many do.”

New to the region, this is the place to go if you want to sample more than 20 Riverland wines in one sweet spot. Add a dash of history behind these iconic brands and you’ll be up to speed with some of the greatest local success stories while filling your tummy, too.

2. Renmark Club

Recently renovated, this expansive club, set on the riverbank, has won several awards for top service, relaxed meals and plenty of great wine, all set against a backdrop of live entertainment and water views.

The Riverland’s one and only brewery, Wilkadene is a must-see. The 100-year-old woolshed has been spruced up to include a tasting deck and has luscious lawns on the banks of the river, making it the perfect place to sample their delicious brews — including their award-winning Hard Lemonade and ciders. Put together a cheese platter of the best local produce, use their barbies to cook up some snags, or on weekends, grab a great feed from food trucks.

Instead, it’s just a hop, skip and a jump away from Port Elliot — and it’s superb!

he magnificent bluestone house, Waverley Estate, is set on four acres and decorated in a distinctive French provincial style. The estate can sleep 22 people, making it a big hit for weddings, hen’s weekends, family reunions, work conferences, cooking classes, and art and meditation retreats.

The main house boasts two bedrooms, a fully-equipped kitchen with an industrialsized oven (ideal for catering), and a lounge and dining room with open fireplace, and looks out onto five semi-self-contained bedrooms with ensuites.

Outside, the traditional lawn tennis court can be converted into the perfect pitch for backyard cricket and sunrise yoga. Or if you’re getting married, it easily slips into a magical setting with a large marquee, lavish long tables and fairy lights, overlooking the solar-heated swimming pool.

The proud-as-punch owner Campbell has thought of everything. “Every bride wants to capture their special day and Waverley has photo opportunities everywhere you look,” he says.

“From the petanque lawns, the beautiful central courtyard space with fire pit, the 100-year-old Moreton Bay fig trees, the vines and, of course, the 162-year-old house, you’re spoilt for choice.”

efore the recent bushfires, Kangaroo Island had fast become a bucket-list destination for local and international travellers, full of gorgeous wildlife, mouth-watering restaurants, cellar doors and next-level luxury accommodation — like this beauty, Stowaway KI. The idyllic retreat was saved when Mother Nature decided to rain, leaving the property untouched. The panoramic views of the property have changed slightly but are still beautiful and, as the land begins to regenerate, it’ll become even more spectacular. I spoke to co-owner Carly about this blissful couple’s retreat.

You and your husband Adam have created an exceptional travel experience. What made you want to start Stowaway?

In all honesty, it was the need to create a flexible job after I had my second child.

I was a full-time farmer and it became apparent that I needed to make some changes to accommodate the little people in my life. I’d seen an exclusive couple’s retreat concept on a global farming tour in the Scottish Highlands and it stuck with me as something that would work on our farm. I also knew there was demand for a true luxury offering. I was always fielding recommendation requests on where to stay to celebrate a special milestone and always felt frustrated that I didn’t have any.

Five years later, here we are.

How do you want people to feel when they stay at Stowaway?

In one word: spoiled. We know how hard it can be to find the time to get away as a

couple. From the moment our guests open the door, we want them to feel like they are really treating themselves — from the smell of fresh bread when they walk in to the decadence of a glass of Champagne in the hot tub at sunset.

Tell us about the buildings and why they’re designed the way they are.

The Stowaway retreats have been built with privacy in mind and are designed to be a destination in themselves. You literally feel like the only people in the world, there. You can take time out of a crazy, busy world, truly relax and have an actual conversation with your partner. You could easily spend two days there and not feel the need to leave.

Each retreat has a glass-fronted sauna, double-sided fireplace, big hot tub, alfresco deck area and a sleek and modern style, while still feeling like you are going back to nature. We chose a lot of natural stone and timber, made the bathrooms really big, and put in cosy reading window nooks so even when the weather is less than ideal, you still feel connected to the environment around you.

We have two luxury options — The Nest and Sleepy Hollow. Both are luxe with their own charm and come with all the fabulous frills and views. We even have a massage service, which gets used a lot.

You and Adam are proud KI-ers. For people who are yet to experience Kangaroo Island, what are they missing out on?

Even though KI is not that far away, I liken it to stepping back in time 20 years — to

a time where things were slower and simpler. If you want a trip where you don’t have to see anyone, then that can be easily achieved, or if you feel like winery/ distillery hopping, then that’s on offer, too. became a self-appointed train expert after I whet my whistle travelling on the Indian Pacific from Adelaide to Perth a few years ago, and then fell deeper in love with train travel on board the iconic Ghan from Adelaide to Darwin. The Grampians

Grampians National Park is nature at its finest — sandstone mountains, wildflowers and plenty of wildlife. We were escorted off the train by the super-friendly staff (again, I felt like the Queen). Our guide took us on an easy walk to Venus Baths in Halls Gap, where we took in the enormity of the giant rock formations and learnt about the rich history of the national park.

Venus Baths is where locals cooled down and bathed 100 years ago and, depending on the time of year you visit, you might be able to put on your bathers and take a dip, too.

After our tour, dinner was served in a spectacular field that was decked out with a marquee, festoon lights and fun garden games. As the sun went down across the peaks of the Grampians, we kicked back with a local sparkling red and freshly-distilled ginger beer, wondering why we hadn’t visited this part of the world sooner.

Canberra

Essentially we all own a piece of Parliament House, so why wouldn’t you visit at least once in your lifetime? Our guided tour included a delicious lunch in the Great Hall and a visit to the 30thanniversary spectacular, Lego Parliament House, made by Ryan ‘The BrickMan’ McNaught from more than 150,000 bricks. We had a field day finding all the political titbits he’d included — Lego Larissa Waters breastfeeding in Parliament, a couple of Lego people making out in the photocopier room, a Lego journalist interviewing a tree. Who would have thought that Parliament House could make you lol?

Next stop, the National Gallery. With a revolving display of masterpieces from all over the world, as well as permanent pieces that you can enjoy all year round, this is an art lover’s dream. We spent the afternoon immersing ourselves in the works of Picasso and Japanese contemporary artist Yayo Ikusama.

Coffs Harbour

After a winding bus trip up the mountains, we ended up at Sealy Lookout. The thrillseekers of the group took on the Skywalk overlooking Coffs Harbour, with its lush banana plantations, blueberry fields, stunning coastline and enormous mansions.

We were then whisked away to Coffs beachfront for morning tea. Give the rainbow pasta or bright blue spider burger a whirl for the full Kawaii experience.

Asakusa, Old Tokyo Traditional dress, temples and tea — what more could a gal want? You can get fully decked out in a Japanese kimono, your hair will be wrangled into a traditional style and you’ll feel like the prettiest lady in Tokyo. Tell us about out-of-school opportunities that Walford offers to its girls.

Through the co-curricular program, the students have vast opportunities, like Generations in Jazz in Mount Gambier, overseas exchanges to France, China and Spain, and a biennial trip to NASA space camp. Popular sports include rowing, sailing, Pedal Prix and soccer. Last year, students were mentors to children on holiday camps through Kickstart for Kids and served meals at the Mary Magdalene Centre. I recently went plogging (litter collecting while jogging) with two of our Year Nines and I am learning to play golf to keep up with some of our golfers.

What sets Walford apart from other all-girl schools?

We have unique opportunities for students — our Year Nine girls participate in the Duke of Edinburgh Award Scheme. Plus we’re the only girls’ school in the nation to offer the continuum of the International Baccalaureate program. 1. Start small. Correct lighting can have a huge impact on your overall health and wellbeing. Swapping your light bulbs to LED is an uber smart move. Here’s why: • Although a higher upfront cost, LED bulbs are safer (won’t get as hot as halogen globes), more energy efficient (using around 75 percent less energy than halogen) and have a longer lifespan.

• Most LED bulbs don’t contain any hazardous materials and can be recycled more easily than CFL and halogen globes, which is great for Planet Earth.

• Lighting has a direct relationship to the production of the stress hormone (cortisol) and the sleep hormone (melatonin). Getting this right can make a big difference to your mood and your sleep patterns.

• You get more flexibility with dimming LEDs compared to traditional lights, which is particularly important at night to assist your body with hormone production.

2. Get conditioned. Not only important to bring down the sweat levels in summer and warm cold bones in winter, good air con can make a world of difference in your home or office. Things to keep top of mind:

• Do it right the first time. A good air con can last up to 20 years if installed and looked after — cheaper options may only give you five years, meaning waste and money bleeding out your pockets.

• Quality ductwork also means better insulation properties, so the air pumping into your house will be hotter or colder, making it more efficient.

• Keep it clean. Dirty filters reduce the air quality you and your loved ones are breathing in. You can even get special filters that protect the unit while filtering out dust mites, pollen and all the teeny bits of fur, feathers and skin floating through the air from your beloved pets... eek!

• Tend to your patch. An annual service plus filter clean or change will increase system performance and lifespan. Green Efficient Living’s golden rule is to check, clean or change your filters with every seasonal change.

• Work smarter, not harder. Running your air con properly will make a big difference to the dreaded power bill. The lower your heating is set in winter and the higher your cooling setting in summer, the less power you’ll use and the less money you’ll spend. Ideally, set it on 20–22˚C on heating with a low fan speed in winter, and 22–26˚C on cooling with a high fan speed during the summer (give or take how the weather is travelling).

3. Invest wisely. Getting solar panels is a big step in the right direction and our environment and your wallet will thank you for it. Did you know that quality panels will offset their CO2 emissions in approximately three to five years, actually making them CO2 positive? You can breathe easy, knowing you’re relying less on fossil fuels, plus you’ll see a difference in the dollar figure on your bills. Here’s what to consider: • Size matters. Getting the wrong-sized system for your needs will cause all sorts of headaches and may actually end up costing you.

• Get the right touch. Correct installation is a big-ticket safety item for the Green Efficient Living crew (to avoid risks such as electrocution and fire hazards).

Having it done right the first time will also boost the performance of the system.

• Water your investment. A little maintenance can go a long way and guaranteed, if you leave a problem until it’s dire, it will cost. Regular cleaning of your solar panels means spotting issues before they arise — simple things like removing debris and fixing weather damage and general wear and tear will avoid a mountain instead of a molehill.

emember the picture book Where Did I Come From? It covered all the fun facts from love-making, orgasms, conception and the baby growing inside the womb through to the actual birth day. But for thousands of Adeladies, it’s not relatable at all — because baby making isn’t that easy, and sometimes it takes three to tango.

Located in the Ashford Specialist Centre, with plenty of parking close by, Family Fertility is an SA-owned-and-operated state-of-the-art centre that offers a personalised service helping couples and singles start a family.

So, how can they help you? One in six couples have fertility issues, so if you’ve begun your baby-making journey and nothing is happening, you’re not alone.

Before you start to stress, ask your GP for an AMH blood test. This test will point you in the direction of approximately how many eggs you have to play with. If the results come back with a low egg count, take a deep breath and give Family Fertility Centre a call.

or Louise, losing her eyesight when she was just 26 was the first sign she had multiple sclerosis (MS). Thankfully, her eyesight has now returned, although ongoing attacks mean it goes again sometimes. The disease has affected her upper spinal cord and she has constant cramping and spasms in her hands, fatigue and headaches.

There is no known cause or cure for this condition, which affects the central nervous system and interferes with nerve impulses within the brain, spinal cord and optic nerves.

As the most common degenerative neurological condition in young adults, over 75 percent of people diagnosed are under the age of 40, when many people are juggling careers and family.

“I was working in a high-pressure job and building a life with my husband. Suddenly, I was unable to even sign my own name.

The support and guidance in those first few months of my diagnosis from an MS nurse proved critical to my mental health and understanding which path of treatment would be best for me,” Louise says.

Firm in the belief that knowledge is power, the MS Society continues to empower people like Louise and her family to understand the disease and her symptoms, access treatments and navigate the intense emotions that can come with a diagnosis.

“The nurses at the MS Society not only guided me through my treatment process but they also provided daily support, whether it was face to face or over the phone, to ensure I was coping with my condition.”

While it has not been an easy road, in the past 14 years, Louise (now 40) has faced the challenges and continued to fulfil her dreams with the ongoing support of many, including the MS Society.

s a school dedicated to agriculture, Scotch is leading the way with a progressive approach to learning, designed to ensure students can excel by exploring topics and innovative ways of learning. Just one of their many handson agricultural courses, winemaking is capturing the minds of future generations and inspiring them to take a leap into this exciting industry.

Head of Agriculture Ilka Klepper says the course is offered to students in Year 11 when vintage is occurring, using their onsite vineyard to take a holistic approach to the industry.

“The program encourages students to look at how berries are maturing, their ripeness, and making decisions on when to pick, based on the chemistry behind it

all. They have to follow through with their decisions based on sugar levels and work to create the wine from there,” Ilka says.

“A big focus is making them capable of critical decisions throughout the process.

As we do with all our agricultural courses, we also look at the marketing and sales side of the industry and get a big picture of the whole business as an enterprise model.”

Following two years of white varieties, students made a Shiraz for the first time in 2019. Steven and Danielle Read from Rathmine Vines also supplied Sauvignon Blanc grapes, so the students were able to focus on different stages of the process and the nuances of each variety.

For Year 11 student Mia Osborn, the decision to do winemaking was an easy one — as the youngest daughter of

d’Arenberg’s Chester Osborn, she’s been raised among vineyards. The drawcard for Mia to go to Scotch has always been the progressive approach and the extensive facilities to study practical subjects like agriculture.

“I’ve always been surrounded by the wine industry and find Dad’s passion for the industry as a whole so interesting.

Being able to formally learn through school has been fascinating — from what happens in the vineyard and making the wine to marketing, sales and stocks.”

But the big feather in the cap for Mia’s oenology class was when Scotch entered a Sauvignon Blanc in the Royal Adelaide Wine Show. It won the TAFE SA Trophy for Best Wine Made by a School. This was followed by Mia herself taking out the CCL Label Solutions Award for Best Wine Label at the show, which the judges described as, “flavoursome, celebratory and very appropriate for the purpose”.

The best part about the whole course for Mia? “Now when Dad talks about wine, I get the complexities behind it. No matter which part of the industry you want to explore, understanding the actual process behind making the wine is the perfect foundation and makes me even more

passionate about pursuing a career in the industry, plus it will be easier to go into uni having that background.”

And for Chester, aside from being a proud Dad, he sees the course as a great introduction to a wider industry that’s significant for Australian tourism.

“There are not many schools that provide courses like this and not many kids who would necessarily consider it as a career, but this sparks their interest and gives them an opportunity to think about it,” he says.

“South Australia is the food and wine mecca, with 80 percent of Australia’s premium wine originating from here. It’s big business for national and international tourism, and letting our next generation sink their teeth into it from a young age is going to breed a new generation that’s hungry for this vibrant industry.” @scotchcollege scotch.sa.edu.au

I don’t remember a time when I wasn’t addicted to reading, so spending a couple of hours perusing the quiet aisles at my local library has always been an indulgence.

Yet, as the years went by, I lost touch with my library love and, sadly, their embracing of ebooks passed me by. When disaster struck and my beloved Kindle

died, I found myself in a library again and realised just how far South Australia’s public libraries have come. Everything you need is right at your fingertips, and I was itching to dive back into this wonderful world of books, information and so much more. If it’s been a while since your last visit, let me refresh you on everything that’s waiting for you behind those welcoming library doors…

Forget the stress of those pesky forms that must be signed by a Justice of the Peace — you’ll find a JP at many libraries, and they provide a range of services. Just make sure to check their availability and office hours before dropping in.

From bubs through to seniors, there’s something for everyone at the library.

Studies show the most active period of brain development is from birth to three years of age, with exposure to stories and language making a big difference. So pop into one of the Storytime or Babytime programs with your brood to start stimulating their little brains, then grab a coffee with the other parents afterwards.

Many libraries have regular programs and activities for all ages, such as author talks, special events, educational programs and craft sessions. Check with your local library to see what’s on the agenda.

2. Access over 50,000 ebooks and audiobooks

Now that’s a lot of books! Reading or listening to books on a device has become one of the most popular ways to access books, and now you can borrow any time and enjoy automatic returns with no late fees. The collection keeps growing and they’re always adding new titles, so you’ll never run out of a good read. Find them at libraries.sa.gov.au/ebooks

Why not borrow some toys from the public libraries toy collection? You’ll save money, it’s less wasteful for the environment, plus your kids won’t get sick of the same old toys. The Lego range is on a whole new level… check with your library to see if it has a toy collection.

6. Read all your favourite magazines in your own time

No more quickly flicking through a mag at the hairdressers or gingerly touching a dog-eared copy in a doctor's waiting room — now, you can get all your favourite magazines for free on your smartphone or tablet. We’re talking everything from Australian Women’s Weekly and Vogue Australia to Better Homes & Gardens, The Guardian, Men’s Health and more.

I

didn’t know what hit me when I first moved to Queensland 15 years ago. Three times a year, the entire state would be buzzing with energy, roaring with excitement and bursting with cheer. At first I was bewildered by it all. Why is everyone so obsessed with a rugby league game? I mean, it’s just a game. But after I experienced my first State of Origin win for Queensland, I was on board — I got the thrill of it all.

Moving back to SA years later, I wondered why the East Coast should have all the fun and excitement of the State of Origin. Adeladies are missing out!

This is all changing in 2020 when the battle between the Blues and the Maroons kicks off its season in our hometown for the first time ever — and Adelaide, you don’t know what you’re in for.

On 3 June, our city will be painted blue and maroon and people will flock here from all over Australia to witness the bestof-three between two rival states, with a rivalry going back 40 years.

Mango FruChocs and coconut teacake Celebrating the release of Menz Mango FruChocs, this sweet treat will have you dreaming of the tropics. You can replace the whipped cream with your favourite icing.

Time 1 hour + resting time Serves 8 Coconut oil spray 3 cups (375g) flour, sifted 1 ½ cups (185g) caster sugar 1 tsp baking powder 1 cup (90g) shredded coconut 5 eggs, lightly beaten 1 tsp vanilla paste 1 ½ cups (375ml) good quality olive oil 1 fresh mango or ½ cup frozen mango, thinly sliced ½ cup (100g) Menz Mango FruChocs, halved Sweetened whipped cream, to serve Fresh mango, sliced, to serve ¼ cup (50g) Menz Mango FruChocs • Preheat oven to 180°C. • Spray 21cm (12 inch) cake tin with coconut oil and line with non-stick baking paper, allowing the edges to overhang.

• Place flour, sugar, baking powder and shredded coconut into a mixing bowl. Add the eggs, vanilla paste, oil and mango, and mix well. Stir in Menz Mango FruChocs.

• Pour mixture into the cake tin and smooth the surface with a palette knife. Bake for 45–60 minutes or until skewer comes out clean when inserted into the centre.

• Leave to cool in tin for 30 minutes before transferring to a wire rack.

• When completely cooled, garnish with sweetened cream, fresh mango slices and remaining Mango FruChocs.

FruChocs apricot tart You’ll have guests flocking to the kitchen when they smell this fruity tart.

Time 1 hour 45 mins + cooling time Serves 8 1 ½ cups (350ml) cream ½ cup (100ml) full cream milk 8 large egg yolks, room temperature Pinch of ground cinnamon Pinch of ground cardamom ½ cup (100g) caster sugar 1 tbsp vanilla paste 800g canned apricot halves, drained, to serve 100g Menz Milk Chocolate FruChocs, roughly chopped, to serve Pastry 100g Menz FruChocs 1 ¾ cup (230g) plain flour 2 tbsp (20g) cocoa powder 130g unsalted butter, chilled and cubed ½ cup (85g) icing sugar 2 egg yolks, room temperature 1 tbsp iced water 1 extra egg yolk, whisked, for brushing • To make the pastry, blitz the FruChocs until they resemble breadcrumbs. Remove and set aside.

• Place flour, cocoa powder, butter and icing sugar in food processor and process until mixture resembles fine breadcrumbs.

Add blitzed FruChocs and pulse until well combined. Add egg yolks and combine. If the dough is too dry, add ice-cold water.

• Turn mixture out onto a lightly floured surface and gently bring together to form a ball. Flatten into a disc, wrap in plastic wrap and refrigerate for 30 minutes.

• Preheat oven to 180°C. • Roll pastry out between 2 sheets of nonstick baking paper to line a 21cm (12 inch) tart pan. Trim edges and prick the base with a fork. Refrigerate for 15 minutes.

• Place non-stick baking paper over the pastry and fill with baking weights (or raw rice). Bake for 15 minutes, remove paper and weights (or rice) and bake for a further 10 minutes. Remove from oven and use a pastry brush to coat the inside of the base with the egg wash. Bake for 5 minutes to seal, then set aside.

• Reduce oven temperature to 130°C. • To make the custard, place cream and milk in a medium saucepan and heat over medium heat.

• Meanwhile, in a large bowl, place the egg yolks, cinnamon and cardamom and whisk in the sugar and vanilla paste.

• Just as the cream mixture comes to the boil, remove from heat and pour half into the egg yolk mixture, whisking vigorously to combine. Repeat with remaining half.

• Carefully pour into the tart base.

Tip: do this while the tart is sitting in the oven to avoid spills.

• Bake for 35–45 minutes or until just set.

The tart should still have a slight wobble in the centre when ready.

• Remove from oven and allow to cool completely, then garnish with drained apricots and FruChocs pieces.

Time 40 mins + refrigeration time Serves 8 200g good-quality dark chocolate 500g cream cheese, at room temperature ¾ cup (155g) caster sugar 1 tsp vanilla paste 2 tbsp plain flour 5 eggs, at room temperature ½ cup (125ml) pouring cream 150g Menz Violet Crumble Nuggets Cocoa, for dusting 2 x 50g Menz Violet Crumble bars, roughly chopped, for decoration Seasonal fruit, for decoration Base 250g chocolate rippled biscuits 125g unsalted butter, melted • Preheat oven to 150°C. Line or grease an 18cm springform pan.

• To make base, add chocolate rippled biscuits to a food processor and process until crumbs form. Add melted butter and process until combined. Pour biscuit mixture into a pan, and press over the base and up the sides.

Refrigerate for 30 minutes.

• To make filling, melt chocolate in a heatproof bowl in the microwave, stirring every 15 seconds. When fully melted, set aside.

• In a large bowl, beat cream cheese, sugar and vanilla paste with an electric beater until smooth. Beating well between each addition, add flour, then add eggs one at a time, then cream, then melted chocolate. Stir through the Violet Crumble Nuggets.

• Pour filling onto the biscuit base and place pan onto a baking tray. Bake in oven for 1 ½ hours or until just set in the centre. Turn off the oven, leaving cheesecake inside with the door slightly ajar for 2 hours or until cooled completely (this prevents the cake from cracking). Place in fridge overnight, to set.

• To serve, dust with cocoa and decorate with chopped Violet Crumble Bars and fresh seasonal fruit.

Mrs Romeo’s chicken and mushroom risotto We’re spilling the secrets with this classic Italian family recipe from Mary Romeo.

Time 1 hr Serves 4 to 6 2L chicken stock 4 chicken tenderloins 2 tbsp extra virgin olive oil + 1 tsp extra 2 leeks, finely chopped 2 tsp salt 3 cups (265g) button mushrooms, ½ chopped, ½ halved 1 tsp white pepper 1 ½ (338g) cups carnaroli rice 100g butter Splash of olive oil 100g mixed mushrooms (Swiss brown, enoki, oyster mushrooms) 2–3 cubes marinated Persian feta Chives, finely chopped for garnish • Heat the chicken stock in a saucepan over low heat, until it is just simmering. Add chicken tenderloins and cook for 5 minutes or until cooked through, then remove and chop into small pieces. Set aside, keeping chicken stock on a very low simmer.

• Place oil and leeks in a deep pan and heat over medium heat. Season with salt and cook until soft and translucent (about 7 minutes). Add mushrooms and pepper, continue cooking until soft (about 5 minutes).

• Add rice to leek and mushroom mixture, stirring continuously until rice is coated and slightly translucent.

• Reduce heat to low. Add warm chicken stock, one ladle at a time, stirring until the rice has absorbed all the liquid before adding the next. Cook, stirring until the rice is al dente.

• Meanwhile, add remaining butter and oil to a pan over medium heat. Add mushrooms and cook, stirring, until lightly browned (about 5 minutes). Remove from heat and set aside.

• Crumble the feta into the risotto mixture, add half the butter and chopped chicken, and stir through. Place sautéed mushrooms on top and sprinkle with chives. Serve immediately.

Tomato and thyme quiche If you’re looking to entertain with ease, this quiche is perfect for sharing.

Time 1 hr 20 mins + refrigeration time Serves 8 to 10 4 eggs 300g sour cream ¼ cup (35g) Mil Lel Shredded Parmesan 30g pack (½ cup) chives, finely chopped 400g cherry tomatoes, halved 2 tbsp fresh thyme Cracked pepper Base 1 ½ cups (185g) plain flour 125g butter, chilled and cubed 1 egg yolk 2–3 tablespoons iced water, as needed 1 extra egg yolk, whisked for brushing

We used: Mil Lel Shredded Parmesan Elevate the flavour factor of your savoury dishes with a nutty burst of parmesan. Mil Lel makes it easy to add with their shredded parmesan (and you can find it shaved and as a block, if you prefer). Find them at Romeo’s.

• Preheat oven to 180°C. • To make the base, add the flour and butter to a food processor and process until it resembles fine breadcrumbs. With the processor running, add egg yolk and combine. If the dough seems too dry, add ice-cold water.

• Turn the mixture out onto a lightly floured surface and gently bring together to form a ball. Flatten into a disc, wrap in plastic wrap and refrigerate for 30 minutes.

• Roll pastry out between 2 sheets of nonstick baking paper until it is large enough to line a 21cm (12 inch) tart pan. Trim the edges and prick the base with a fork.

Refrigerate for 15 minutes.

• Place non-stick baking paper over the pastry and fill with baking weights (or raw rice).

• Bake for 15 minutes, uncover and bake for a further 5 minutes. Remove from oven and use a pastry brush to coat the inside of the base with the egg wash. Bake for another 5 minutes to seal the tart, then set aside.

• Beat together the eggs and sour cream, and stir in the parmesan and chives.

• Pour the egg mixture into the pastry shell.

Arrange the tomatoes, cut side down, over the filling. Sprinkle with fresh thyme and cracked pepper.

• Reduce oven to 160°C and bake for 30 minutes, or until the filling is set and golden.

• Serve immediately or refrigerate and serve cold.

Refrigerate for 30–45 minutes.

• When cool, cover the caramel with sliced banana, then whipped cream and finish with chocolate flakes.

Time 30 mins + chill time Serves 12 10 Kytons Bakery Lamingtons, halved 250g white chocolate ⅔ cup (150ml) thickened cream 2 tsp gelatin powder 3 tsp water 125g cream cheese 250g mascarpone ½ cup (100g) caster sugar 1 tsp vanilla paste 250g dark chocolate ½ cup (100ml) thickened cream ½ cup (90g) shredded coconut, to decorate

• Grease and line a 17cm x 27cm slice pan with baking paper.

• Lay the lamington halves side by side in the pan, until the base is covered.

• In a heatproof bowl, place the white chocolate and cream and microwave for 30 seconds at a time, stirring between, until chocolate is melted and mixture is completely combined.

• In a small bowl, mix gelatin and water.

Heat in microwave for 20 seconds or until gelatin is dissolved. Stir into chocolate mixture. Set aside.

• Using an electric beater, beat the cream cheese, mascarpone, sugar and vanilla until soft and creamy, then add in the white chocolate mixture and beat until combined.

• Pour cream cheese mixture over lamington base and set in fridge overnight.

• Melt dark chocolate and extra thickened cream together in microwave as above, then refrigerate for 20 minutes until slightly set to form a ganache. Spread ganache over the cream cheese layer and sprinkle with shredded coconut.

• Refrigerate until topping sets.

• To serve, cut into squares.

Time 1 hr 20 mins Serves 8 350g désirée potatoes, thinly sliced 500g orange sweet potatoes, thinly sliced 10g pack sage leaves, roughly torn 2 x 30g pack chives, finely chopped 4 tbsp garlic granules 2 x 150g blocks Beston’s Edwards Crossing Vintage Cheddar, grated to make 2 cups 100g goat cheese, crumbled 1 ½ cups (250ml) light thickened cream Salt and pepper, to season 1 tbsp chopped walnuts

• Preheat oven to 180°C fan-forced.

• Grease a 6-cup-capacity oval baking dish and layer with half the potato and half the sweet potato, slightly overlapping them.

• Sprinkle with half of each of the sage, chives, garlic granules and cheddar and goat cheese. Drizzle evenly with half of the cream and season with salt and pepper.

• Repeat with remaining potatoes and finish with the remaining cream, then the herbs, cheeses and seasoning.

• Cover tightly with foil. Bake for 30 minutes.

Sprinkle with walnuts and remaining sage leaves, then bake for a further 5 minutes or until the sage is crisp.

• Stand for 10 minutes. Serve immediately.

Cucina 837 is a celebration of the family’s passion for delicious home-cooked Italian meals, with the extensive menu changing regularly to optimise local produce.

“The Riverland is bursting with produce that tastes the best and cooks the best, so we entwine our heritage with the local region in dishes like our Italian calamari with orange and fennel salad,” namesake of the brand Salena says.

In the spirit of shared experiences, dishes are designed to enjoy with loved ones but are just as delicious eaten solo.

With a variety of traditional house-made pasta dishes in rich sauces and Europeanstyle wines on offer, you’ll be forgiven for thinking you are on the Italian coast.

“The menu is full of dishes we also cook at home, as we want to pass on a bit of our family to our guests through wine or food. It’s Italian food and wine made with love — the ultimate way to open your heart to someone.

“Our most popular dishes are Bob’s Ragu (which is my grandparent’s recipe for 10hour slow-cooked beef ragu, named after my dad) and traditional potato pizza, just like you’d get on any street corner in Italy.

In true Franchitto-family style, Cucina 837 is a collaboration of ideas hashed out over a family dinner or two — owner Bob wanted a traditional design, whereas his wife, Sylvia, loves a modern feel, so they combined the two.

With high ceilings and huge windows overlooking the grassed outdoor area, the restaurant makes the most of its surroundings. Carefully designed for all seasons, the outdoor dining area can be completely enclosed with blinds, and has fans and heaters to combat the elements.

On weekends, the lawns are dotted with tables and umbrellas, and guests can enjoy a casual game of Finska or bocce, or even try their hand at giant Jenga.

In the restaurant and bar, there is a combination of stunning wooden tables (handmade in-house) with retro chairs, a rustic wall made from Kathmandu stones and a striking copper bar that is well stocked for a cheeky cocktail or two — along with Salena Estate wines, of course.

But it’s the little details that really catch your eye, like the specks of blue and green glass scattered through the polished concrete floor. The glass is from wine bottles — an idea from Bob — and it’s touches like this that bring the character to this thoughtfully-designed space.

Roar of an inspiring mama The holy grail of mixing family fun and enjoying the finer things is not a myth.

here’s a little haven of happiness nestled in Woodside, where you can indulge in exceptional wines and tasty treats and relax, knowing the kiddos are welcome, too. Barristers Block is a breath of fresh air — sitting under trees that overlook rows of vineyards, glass of wine (or bubbles) in hand, with maybe some dips or a stone-baked pizza. The vibe’s always buzzing at this laid-back, boutique Adelaide Hills cellar door, with live entertainment most weekends.

Best of all, the kids are warmly welcomed to hit up the giant sandpit, say hello to the alpacas, deer, chickens or geese or play leisurely games on the lush lawns.

In December 2019, Barristers Block celebrated 10 years of this beautiful cellar door, so I had a cheeky vino with Jan Siemelink-Allen, the one-woman band behind the popular venue and wine label, and left feeling inspired by the power of the roar of a single mama.

A rocky start

At 63, Jan has faced some enormous hurdles in her time but has kept her family at the heart of every move.

Originally from the Adelaide Hills and with farming genes running through her blood, Jan moved to the South East with her parents in her final year of school,

In the weeks after interviewing Jan, Barristers Block was greatly impacted by the Cudlee Creek bushfires in December 2019. Jan lost 100 percent of her Adelaide Hills vineyard and although flames came within 20 metres of the cellar door, it was fortunately saved.

While the experience has been traumatic, Jan’s outlook has been true to form, saying, “We lost every vine on the property and it will take years to recover but we’re so conscious of those out there who are hurting and have lost even more. We will rally and help our neighbours. The best way to support Barristers Block and the fire-affected regions is to buy our wine, visit the regions and support South Australia.”

where she eventually met her husband. It wasn’t unusual for her two young sons to see her on a tractor or tending to animals on their farm, but the family was hit hard by the recession in the late 1980s and 1990s and her marriage broke down. She returned to Adelaide with James and Lachlan, then aged nine and 11.

The cards were stacked against her, with banks not viewing a single mum as a good candidate for a loan. During this stressful time, Lachlan became seriously unwell and Jan feared losing him. “I was already set to work hard but the thought of losing Lachlan put everything in perspective and I knew I’d do anything to make sure my two

boys had every opportunity. I think there’s a power in Australian women — we’re resilient and refuse to give up,” she says.

She shifted into wine sales for one of the top wine companies and invested in a joint venture that sadly, went sour, resulting in a lengthy, stressful and costly court case. Not one to take it lying down, Jan challenged the other parties and won.

A new adventure

When Jan’s mother was diagnosed with cancer, she knew she needed to be selfemployed to care for her. She began to position the property that she held in trust for her sons at Wrattonbully, on which she

Her Wrattonbully vineyard produces award-winning Shiraz and Cabernet varieties, and the cool-climate Adelaide Hills vineyard is perfect for their Tempranillo, Sauvignon Blanc, Fiano, Chardonnay and Pinot Noir.

Jan’s down-to-earth manner flows through to their wine tastings. “There’s nothing pretentious. If you’re interested, we’ll chat in layman’s terms.”

A GREAT VIBE

You won’t be disappointed by a visit at any time, but Barristers springs to life with numerous events throughout the year. Keep your eye on the calendar during Winter Reds, Crush Festival and public holidays, plus their Bubs and Bubbles events, which are a hit with big and little kids alike.

A LOVE STORY

The stunning property has two separate spaces that can cater for an intimate gathering of 50 guests or up to 150 (licensed) people.

The garden and hay shed see some jaw-dropping weddings, but you won’t see a line-up of brides — one wedding per weekend is Jan’s rule of thumb. “We’ve got no interest in becoming a wedding factory — I want them to be relaxed and personal, perfectly tailored to you,” she says.

and her then-husband had planted Shiraz and Cabernet vines, and affectionately named the vineyard Barristers Block — a little cheeky nod to the legal battle.

When her mother passed away from cancer in September 2006, Jan laid all her assets on the table and bought the Woodside property. She was determined to create a place that welcomed families, including single mums like herself.

“It’s family service, nothing glitzy or glamorous… it’s casual, happy, fun! I’m so proud of our agricultural heritage, which will always be the heart of the cellar door.

I love that I’ve brought my sons up here and now have grandchildren running around the property too.”

A lot of elbow grease

It’s truly a labour of love, with Jan regularly making the eight-hour roundtrip between

the Wrattonbully vineyard and the cellar door in Woodside. Plus, overseeing domestic sales, export, wholesale, retail... and you’ll see her on weekends at the cellar door, doing wine tastings or handing out pizzas. Her sons have her back, with James (a partner in his own accounting firm) doing Jan’s accounts and Lachlan joining the company after the recent bushfires.

“It’s taken courage and hasn’t been easy. In fact, it’s been shit hard at times, but everyone has their ups and downs and I’ve had a lot of fun along the way. I’m so proud of what we’ve created.

“We started out making pizza in a tiny oven and I’d hand deliver it to the table.

Now, we have 22 staff and are booked out every weekend. I never expected the popularity, so have copped a bit of criticism here and there. At the end of the day, I’m a farmer turned vigneron and now I’m fronting up hospitality, so I’m always learning but I love that people embrace what we’re offering.”

The heart of it all

Although very much a story of one woman’s success, Jan openly credits her achievements to those around her.

“What you can do as an individual is one thing but what you can do as a family is wonderful — that’s everything.”

Although she barely has an hour to herself each week, Jan prioritises time with her boys, her grandchildren and extended family. She is an incredible example of one woman achieving against the odds and is a powerful advocate of supporting others to carve out their own success.

“The best thing about womanhood is being surrounded by other women — sisters, aunties, friends — who can back you. We learn from having a go and making mistakes, we get through by doing it together.

“We could take a leaf out of the book of the French — they celebrate age, experience and wisdom as things of beauty. There’s so much beauty in a life of challenges and triumphs, a life well lived.” @barristersblockwines barristersblock.com.au

amily owned and operated, the team at Pure Vision has nailed sustainable ways to make 100 percent certified organic, vegan-friendly wines with minimal sulphur.

The secret of their success is keeping it in the family, with owner Ken Carypidis steering the ship with his three daughters, Jackie, Teresa and Natalie, by his side.

DEEP ROOTS FROM THE BEGINNING The Pure Vision story was cast in Greece, with the sisters’ great-grandfather planting vines that flourished, and showing his son, Terry, the ropes. Terry and his family survived enormous hardship before moving to Melbourne after WWII. Despite tough times, each generation has cherished having wine and a meal together as one of life’s simple rituals.

“My grandparents would never have thought that a patch of land in Virginia, on

the Adelaide Plains, would one day begin our love affair with the wine industry. My dad and his brother, Chris, still grow grapes on the same soil to this day,” Jackie says.

Pure Vision was born when, in 2005, Ken noticed a gap in the market for organic wine and branched out from viticulture to create the label. By 2009, he was growing only certified organic grapes on 140 acres of vines with Chris.

WHY ORGANIC?

When they started out, organic wine was relatively sparse. “We stood back to understand how many chemicals were being sprayed by growers and how much we inevitably consume. We get one life and celebrate it by what we put into our bodies, so we wanted to grow healthy organic fruit to make exceptional wine, and create a cleaner environment for future generations,” Jackie says.

“Our organic farming practices have really made a difference to the quality of our wine — you can taste the organic difference.”

The soil at Pure Vision is free of synthetic chemicals, pesticides and fertilisers, and each varietal is grown in its purest form.

The properties are certified organic by ACO and are regularly audited. The team also noticed emerging vegan wines and felt it made sense to join in.

“So many ingredients traditionally are used as fining agents in the final preparation of wine — from gelatin made from boiling animal parts and egg white to isinglass, which is collagen derived from dried fish bladder... even non-vegans don’t want to drink that! Now, we use a veggie-based product that’s cleaner and the recipe tastes great.”

“We grew up surrounded by the industry but have all been off on adventures to develop our own skills and networks.

We’ve come back together to work on this family legacy. It’s hard work, but we wouldn’t have it any other way.”

And that Virginia property, where her parents still reside (and grandparents lived until recently), now has a fourth generation running around.

“We’re lucky to raise our kids on the same land, especially now that it’s so much safer, being organic. The Serafino story began in 1964 when Steve (birth name, Serafino) Maglieri arrived in Australia from Italy as a teenager, planting his first vines four years later with his father, Giovanni. He founded Maglieri Wines, home of Lambrusco and worldwide-acclaimed Shiraz in McLaren Flat before moving to the current location in McLaren Vale, which was formerly the iconic McLarens On The Lake. Steve’s daughter Maria is now at the helm as CEO of this impressive destination, with another daughter, Diana, working in the business. The industry is in their blood.

“My earliest memories are putting caps on bottles, packing wine cartons and planting vines with Grandpa, and learning to drive on the farm,” Maria says. “It’s always been a heartfelt experience that’s part of our family’s history and we love sharing that with our guests and customers.”

Why get your skin in check?

I see brides for all sorts of reasons, but they all want to look and feel their best.

Looking at the overall picture of health (particularly the gut) is the key to ensuring your body functions at its peak, and this really shows up in your skin.

So you don’t just concentrate on the face?

No, I look at any skin you want to treat.

A lot of girls want to ensure there are no blackheads or breakouts on their back, neck or chest. I’ve treated women who felt self-conscious about scars on their

What other tips can you give to our brides?

1. Sleep Getting at least eight hours is vital so you don’t look tired, you avoid dark circles and your whole body functions more effectively and can repair itself.

2. Exercise Getting fit and feeling healthy is important but too much of a good thing can be detrimental — exercise is no exception. I see girls on a mission to lose weight, but overexercising can be as bad as not doing any, so it’s important to give your body the rest it needs.

3. Eat well It’s vital to eat food that’s high in fibre and to eat regularly. Concentrate on a balanced diet to get the right nutrients, good-quality carbohydrates, lots of vegetables and good-quality fats and avoid processed food. Too much sugar or alcohol close to the day can bring on changes in the skin.

I suggest staying away from inflammatory foods and, if you suffer from acne, it’s a good idea to stay away from dairy. Overall, the cleaner you eat, the better your skin will look.

4. Be conscious of change Some women want to start or come off contraception or other medication before their wedding.

Be aware this can affect how your skin functions and cause breakouts or increase sensitivity.

Of course, this is where I can work my magic and level it all out.

Does it improve how your makeup looks?

How many treatments do brides typically need?

I tailor programs specifically to every person’s issues and budget, so it’s different for everyone. Generally, I’ll see her roughly fortnightly while we repair and get the skin working in optimum condition. Orthodontists and dentists seem to have a lot in common. How do I know which one to see?

It’s true — they both have a bachelor degree in dentistry, can advise about overall dental and gum health and can fit orthodontic appliances, such as braces and Invisalign aligners. However, an orthodontist is a specialist in orthodontics, meaning they can provide expert help in this area.

So, what are the differences between them?

Generally, a dentist coordinates your overall dental health — diagnosing and treating diseases of teeth and oral tissues, advising on general dental care and referring you to specialists, where required. An orthodontist specialises in diagnosing and treating teeth and jaw alignment issues, managing orthodontic and orthopaedic facial growth and providing orthodontic treatment options for adults and kids.

If some dentists provide orthodontic services, like fitting braces, why go the extra step of seeing an orthodontist?

Something I tell my patients is that braces are the appliance and the appliance is only as good as the person fitting it. Have you heard the theory it takes a person 10,000 hours to master a certain skill? Well, orthodontists not only study for an extra three years to become qualified, they then perform the same orthodontic treatments day in, day out. It’s the skills, understanding and experience of that person that will make the difference and achieve the outcome you’re after for your child.

For best results, orthodontists and dentists work together, with each focusing on what they do best.

Ultimately, though, I believe there’s only one reason to choose an orthodontist — to create a smile that leads to confidence and feeling good about life.

efore Hayley and I consider tackling a reno — and end up killing each other over opposing colour palettes — I need some professional advice. So, I sat down with our mate, Dave Menner from Residence Building Group, to ask how he minimises his clients’ stress levels while creating their dream homes.

“Whether it’s a new-build or renovation, it’s a massive investment. Not just in terms of money, but time too,” Dave says. And that’s why every project is personal for him.

“The longer you’re out of your home, the more stressful things can become for you and your family. But, it’s a necessary evil. I’d hate to be out of my home any longer than I had to.” It’s not just a matter of delivering exactly what his clients want, it’s the entire building process that will either make them look back fondly or make them fall into a quivering mess.

Dave tries to get his clients involved to the point where it’s exciting, educational and an expression of their own creativity.

“If something’s important to my clients, I try to find a way to make it happen. If my clients are butting heads, I talk them through the costs and practicalities. And if I can see a better way to do it, I hope they’re open to my ideas, too,” Dave says.

“There’s no easy way to build, so together, we set realistic expectations for the project ahead, including timelines.

“At handover, I take time to assess the interpersonal lessons in that project. Then, I apply these learnings to the next one.”

Dave knows that you have saved hard for this day and living out of suitcases or bunking in with friends or relatives isn’t always easy. Once you’ve gone through the wringer organising loans, your world could potentially get turned inside out for nine to 12 months and a good builder should play a big part in managing that stress. A builder should almost become part of the family. They get to know you, your kids and even your pets. He knows how important it is to minimise the disruption in their little lives, too.

He takes a holistic approach to his work, where the journey is just as important as the destination. “I haven’t mastered it yet, but it’s something I’m working on,” he says.

His day starts around 4am at the office, with meditation and clean eating. Then, before any of his staff arrive, he visualises the day ahead. “There are high levels of emotion tied into every project, so without this time to recharge and prepare for my day, I wouldn’t

be able to give each client the attention and energy they deserve,” he says.

“Although my days are very rewarding, at night, I love to make time for my own family.” For a lot of people, walking into a noisy house full of boys might seem like an unlikely place to recharge. ith super-stylish kids’ clothing, high-quality toys and newborn gifts flying off the shelves at their Tanunda and Glenelg stores, it was a no-brainer to expand into other corners of SA. In an exciting start to 2020, Gina and her team made the bold move to open Daisy & Hen in Stirling, and create a brand new head office and warehouse space on Jetty Road, Glenelg. It’s hard to believe this small South Australian business has only been around for a hot minute.

“Four years ago, I was searching for flexibility and found myself with one choice — to start my own business,” Gina says.

Living in Tanunda, Gina picked the missing puzzle piece — in a region filled with adult goodies, the Barossa needed something for the littlies. With the help of Instagram, Gina was able to discover a range of niche kids’ brands, supporting Australian labels balanced with some of the most soughtafter international brands for kids.

“We designed Daisy & Hen’s first store to be a beautiful and relaxed place to visit, and it took off. After three months,

we realised we were onto something and launched our online store, followed by the Glenelg store two years later. It’s crazy to think how far we’ve come since then — we’ve become a destination for more than 60 of the best brands in the industry.”
