arch 2024 marks the 30th anniversary of Sandwich Express in McMinnville! Interestingly enough, prior to being a restaurateur Matt Primbs was a high school teacher. Then in 1995, he opted for a career change. He bought a restaurant in McMinnville, launching his new life as owner and operator of Sandwich Express. It was a good decision, as the place is so popular that you can pretty much count on long lines at the drive-thru during the lunch hour. Chances are good that all those people ahead of you in line are returning customers who know a good lunch when they taste it. If you’ve never eaten at Sandwich Express, you need to get in there ASAP — your tastebuds will thank you! Plan on spending some time with the menu, as there are a lot of options. With the addition of breakfast to the menu a few years ago, Sandwich Express now offers nearly thirty different sandwiches on a variety of breads that are all baked in-house. There are plentiful choices from both a cold deli lineup and a hot sandwich menu. Most people will agree that the key to a great sandwich is the bread, and at Sandwich Express that is a point of pride.

“We make all of our bread from scratch every night,” Matt says. “No mixes or artificial dough conditioners. We started off with just white and wheat but have added sourdough, dark rye, and cheddar jalapeno through the years.” The cheddar jalapeno is their most recent addition, but it’s gaining popularity quickly. “It’s a lot of work to make the bread, but it is well worth it,” says Matt. Sandwich Express also offers gluten-free bread, which is the only kind not made on-site. The sandwiches aren’t the only things worthy of acclaim here though. One of customers’ favorite discoveries at Sandwich Express is that the fries rank among the best in the area, and you get the choice between beer-battered fries, tater tots and Cajun tater tots. “Our [beer-battered] fry is a steak-cut fry which has become very popular,” Matt says. “You can’t get steak-cut fries at other drive-thrus in town because they take longer to fry. The quality is worth the extra minute-and-half wait.” You’re not going to want to forget the other sides either — salads are a huge part of Sandwich Express. “I truly believe there are none other in town that are better for all that you get on them at an affordable price,” Matt says proudly. “We offer ten different salads and we don’t skimp on portion size.” Their chili and rotating selection of daily soups are also a draw when the weather turns cold. You know a place is good when you see a long line, but as popular as the drive-thru can be at the McMinnville store, it’s worth venturing inside to enjoy your meal. Both locations have interior dining available that features a popular attraction for kids. Circling the perimeter of the restaurant just below the ceiling, and occasionally vanishing into tunnels, is an electric model train. It makes for a nice distraction while waiting for your order, and young and old alike enjoy watching it. According to Matt, when running all day, it travels over ten miles! Matt and his team have earned a reputation over the years for being team players and good citizens when others are in need. They’re often participating in fundraisers for youth clubs, graduation night and other nonprofits, and help when people fall into harm’s way, Matt looks for a way to help, both locally and beyond. “We have done several very large fundraisers for big disasters like Hurricane Katrina and Haiti, and local volunteer firefighters,” he says. “These bring in thousands of dollars for people in need.” Matt and his wife Amber can usually be found running the McMinnville location. For them, this business is a passion project and they absolutely love their work serving the local communities in Yamhill County. “Even after 25 years, I still look forward to going to work,” Matt says. “I love my crew, and they are like my second family.” Sandwich Express is located in McMinnville at 711 NE Highway 99W, 503-472-3500. Do you have any idea of the wealth of opportunities that await qualified OT professionals? Western Oregon University invites students to apply today for the fall 2024 Occupational Therapy Doctorate program, conveniently located at WOU Salem. “We’re really excited that we’re the first Occupational Therapy program at a public university in the state of Oregon,” says founding program director, Sean Roush. “Salem is a great location for a health professions program. We’re a very short walk to Salem Health or to the state legislature for advocacy events, and we’re also close to the Oregon State Hospital as well as many other healthcare facilities. These are all areas in which OTs work, so it’s a great opportunity for our students to have all of these organizations easily accessible,” he explains. Occupational Therapy is a very broad profession which

offers a great deal of diversity. “We are a holistic healthcare profession and address everything from physical health to mental health, from birth through geriatrics,” relates Director Sean Roush. Practices may include working in a neonatal unit, in schools, in community mental health, in a hospital or physical disabilities clinic or helping individuals to age in place. Director Roush further explains, “The goal of Occupational Therapy is to help people do the things they want to do, the things they need to do or things they’re expected to do, and to have the most successful engagement in life that they can.” Students are encouraged to keep an open mind as they enter the OTD program. Many times, they come in on their first day “knowing” the area of practice they want to pursue; however, they often discover an area or opportunity they didn’t know existed. Additionally, in a field with so much variety, OT professionals have the advantage of changing practices without having to change professions! Why choose Western Oregon University? Directions Preheat oven to 375ºF. Line sheet pan with parchment paper or silicone mat. Have your fortune strips ready to go. Using stand mixer, whip egg whites and sugar on high speed for about 2 minutes, until frothy. Whip in melted butter, vanilla, almond extract and water until incorporated. Add flour and mix until flour just disappears. With tablespoon measure, spoon batter onto parchment paper and spread out into even 3-inch circles. Only do 2 to 3 at a time as they set quickly and you won’t be able to fold more than that. Bake cookies 7 to 8 minutes, until edges brown slightly (see note). When each batch finishes baking, remove from oven and quickly flip circle over. Place note in center and fold cookie in half (a semicircle). Place semicircle onto edge of a cup, and quickly fold ends down to crimp into a fortune cookie shape. Place cookie in muffin tin to cool and hold its shape. Repeat with remaining batter and enjoy. Note: If you let them brown too much, they’ll snap when you shape them. If they don’t brown enough, they will tear. ALSO: Experiment with food coloring, using red for Valentine’s Day.

The History of Chocolate Ancient, delicious and divine

W
hen we hear the word “chocolate,” most of us picture a bar, ice cream, baked goods, or a confection of some type. Typically eating chocolate, not drinking it, and a sweet taste is usually associated with chocolate rather than a savory one. However, for approximately 90% of chocolate’s extensive history, it was primarily a beverage, and sugar didn’t figure into the equation at all. While the terminology can be a bit puzzling, most contemporary experts refer to “cacao” as the plant or its beans prior to processing, while the term “chocolate” refers to a product made from the beans. “Cocoa” is the term for chocolate in powdered form, though across the Atlantic, the British frequently use the word “cacao.” “Chocolate” has been traced by etymologists back to the Aztec word “xocoatl,” which described a bitter beverage brewed from cacao beans. The Latin name for the cacao tree,

Theobroma cacao, translates to “food of the gods.” Historians today estimate that chocolate has been around for at least 2000 years, but recent research suggests it may be even older. Although it’s difficult to establish an exact date for the origin of chocolate, it’s evident that it was valued from the very beginning. For many centuries in premodern Latin America, cacao beans were actually used as currency. A single bean could buy one tamale, while 100 beans could be traded for a good turkey hen, as noted in a 16th-century Aztec document. Both the Mayans and Aztecs considered the cacao bean magical and sometimes divine. It was commonly a part of sacred rituals of birth, death, and marriage. It wasn’t until Europeans discovered the Americas and became familiar with the native cuisine that chocolate made its entrance on the world stage. According to legend, the Aztec king Montezuma welcomed the Spanish explorer Hernando Cortes with a feast that included drinking chocolate. Although chocolate didn’t initially agree with the European palate, once it was mixed with honey or sugar, it rapidly grew in popularity throughout Spain. By the 17th century, Europeans had embraced chocolate as a glamorous drink, reputed to possess medicinal, nutritious, and even aphrodisiac properties — rumors suggest that Casanova was a
big fan of chocolate. But it remained primarily a drink of the upper class until the invention of the steam engine revolutionized chocolate production, resulting in chocolate becoming available in mass quantities to society at large. It was in 1828 when a Dutch chemist devised a method to create powdered chocolate by filtering out approximately half the natural fat (cacao butter) from chocolate liquor, pulverizing what remained and introducing a mixture of alkaline salts to negate the bitter taste. This product, known as “Dutch cocoa,” eventually led to the development of solid chocolate.
Joseph Fry, in 1847, is credited with the creation of the world’s first chocolate bar. Fry discovered that by adding melted cacao butter back into Dutch cocoa, the result was a moldable chocolate paste. Within 20 years of Fry’s discovery, the now famous company Cadbury was selling boxes of chocolate
candy in Britain. Soon thereafter, another recognizable name, Nestle, pioneered the creation of milk chocolate in Switzerland. During the Revolutionary War in America, chocolate was so valued that it was included in soldiers’ rations in lieu of wages. Most of us today wouldn’t likely settle for payment in chocolate over dollars, but that doesn’t mean the humble cacao bean isn’t a potent force in the economy. In the U.S. alone, chocolate is a four billion dollar industry, and the average American consumes at least half a pound per month. In recent times, a chocolate revolution has swept across the globe, marked by a burgeoning interest in high-quality, artisanal chocolates and sustainable, efficient cacao farming and harvesting techniques. Due to this shift in consumer tastes, large corporations like Hershey’s have developed artisanal chocolate lines by acquiring smaller premium chocolate producers, and independent chocolatiers have proliferated as well. Here in the Pacific Northwest, artisanal chocolate has exploded in recent years. One of the first chocolatiers on the Portland scene was Moonstruck; though recently sold to a larger company, Moonstruck helped establish a market for gourmet chocolate in the city. Currently, there are a plethora of
artisanal chocolatiers in the local area.
