McMinnville’s options for tasty Mexican food just got a little bigger!

Mi Lindo Nayarit Mariscos is located in the Baker Street Square shopping center location that’s been home to several restaurants over the years. At Mi Lindo, seafood is what they do best and in great quantities and varieties. The menu is available at the restaurant’s website and Facebook page and is loaded full of seafood dishes, from various versions of fish to crab legs, crawfish, scallops, mussels, and octopus.

The restaurant was started by Sandy Rodriguez Arellano and her husband Irvin Amaral, the chef behind the scenes, whose authentic Mexican cooking fills plates inside their lovely restaurant and take-out boxes for those who prefer to eat at home.

“I’m from Mexico, from the state of Nayarit,” Sandy said. The couple moved here a few years ago and this is their first restaurant. “Where we come from, seafood is the traditional food from my state. We grew up in an environment eating seafood every day. My mom taught me to cook as well as my brother.”

Nayarit, which is along the Pacific Coast, is famous in the culinary world for imaginatively incorporating marine ingredients into typical Mexican platters you’re likely familiar with: enchiladas, tacos, burritos, chimichangas and tamales. Mi Lindo Nayarit translates to “My beautiful Nayarit” and mariscos translates to seafood.

It’s worth spending some time reviewing the huge menu before ordering, but Sandy might be able to sell you right here on the restaurant’s signature dish: Pescado Zarandeado.

“We do a traditional Pescado Zarandeado, which is a whole fish,” she said. “We open with a robalo fish, also known as a sergeant fish, cut in half and then marinate in chili and spices. Then we put it on the grill and it’s slowly smokedgrilled in mesquite. You have to wait 40 minutes for the fish to be ready. That’s a traditional plate from there. If you travel to Nayarit, you’ll find that everywhere.” The dish is served with fresh greens, rice, and warm tortillas.

Aguachiles de Camarón are a tasty way to dip into Nayarit cuisine: fresh shrimp cooked in lime juice with your choice of green, red, or spicy black sauce. Oysters on the shell are among the starters that will look familiar, but some invite an adventurous spirit, like Langostinos, which is the meat from the tail of a crawfish that resembles shrimp but has a sweeter taste.

Here’s a few more of Sandy’s favorite dishes: CHICHARRÓN DE PESCADO “This is a delicious fried fish dish which gets its name for resembling little pieces of fried pork skin. It’s white fish cut in small pieces, marinated in a flavorful blend of salt and spices. Then the fish is coated in flour before being fried to crunchy perfection.”

CEVICHE DE PESCADO “A simple, healthy ceviche made with fresh tilapia filets, cooked in lime juice and mixed with fresh tomatoes, cilantro, and red onions. The best way to eat is with tortilla chips.”

CAMARONES CORA “Definitely try if you love spicy shrimp. It’s fried to the point where the peel is extra crispy, then stewed in a house-made spicy chili sauce. Served on a bed of red onions and cucumbers. To be able to taste the flavor you must eat them with the peel.”

Other delicious specialities include: Charola Mi Lindo Nayarit, a savory mix of devil shrimp, garlic shrimp, fried shrimp, bacon-wrapped shrimp, breaded shrimp, fried fish and crawfish served with rice, fries, salad, and thick, chewy bread; Charola Huichol, which includes head-on shrimp, peeled shrimp, octopus, mussels, crab meat, snow crab meat, and fresh prawns with an option of mild devil sauce, house

sauce, dried chili sauce, or garlic sauce, all served with fries, salad and garlic bread; and Torre Ixtlan, a tower of fish ceviche, raw shrimp, steamed shrimp, octopus and scallops with red onions and cucumbers on a special sauce.

Inspiring Youth – Encouraging Families

he See Ya Later Foundation is a McMinnville-based nonprofit inspired by Scott Banke, who died of cancer when he was 12 years old. The example of his courage and relentless optimism has burned so bright over the years as to bring hope and encouragement both to other families facing a life-threatening diagnosis as well as thousands of children.

“We are not a need-based foundation, but a joy-giving, hope-bringing group of people who just love to bless others, with no strings attached,” said SYL Foundation Executive Director Carmen Banke, Scott’s mother.

The name of the group itself, “See Ya Later!,” was also inspired by Scott. In one of the last video clips of him, shot during a Make-A-Wish cruise, he wrapped up a summation of the day’s events by looking into the camera and saying, “See ya later!”

The group launched in 2007, the year Scott would have graduated from high school, and since then the SYL Foundation has done tremendous good for local youth.

Currently, it awards ten local high school seniors a $2,000 scholarship, and to date has awarded more than $180,000 to 95 students in Yamhill County.

The SYL Foundation also organizes local youth camps in basketball, football, soccer, music, and even fishing derbies. Camps are offered at little-to-no cost, and in 15 years more than 5,000 children have participated.

Finally, through the Seeds of Hope program, SYL provides encouragement and support to families in Yamhill, Polk and Marion Counties, where a life-threatening medical

illness is faced by a family with one or more children in the household.

“Encouragement will look different to each family,” Banke said. “It may come by way of groceries, gas cards, clothes, new tires, bunk beds, a utility payment, a few nights get-away at the beach or Sunriver or Great Wolf Lodge, or somewhere close for mom and dad like the Oregon Gardens.”

Fundraisers held throughout the year, from the popular Scott Banke Memorial Golf Tournament in August at Michelbook Country Club, to Trivia Night (the next is April 30 at The Bindery) and fun runs in September, provide financial support to the SYL Foundation.

Banke calls the work at SYL amazing and rewarding, and never lacking in inspiring stories.

For example, take Kennedy Amundson. She was diagnosed with cancer in 2008 when she was ten, and Seeds of Hope helped her and her family through the struggle. The Amity youth was awarded a Scott Banke scholarship and would later volunteer with the group.

Today, she’s come full circle: She is the SYL Foundation’s new executive assistant. “She claims that this is her dream job,” Banke said proudly. “And we believe her!”

From elephants to mice, the metropolis of Zootopia is a melting pot where various animals live and thrive. When Judy Hopps (Ginnifer Goodwin) becomes the first bunny on the Zootopia Police, she realizes how hard it is to bring order to a city of such chaos, especially when you feel so small. Determined to prove herself, Judy leaps at the chance to solve a mysterious case. She’s forced to work with a wily and sneaky fox, Nick Wilde (Jason Bateman), who makes her job impossible. But eventually the two discover, as a small bunny who was once bullied, and a fox who was treated as a thief before he even knew the word, they have more in common than they think!

After his first dance partner leaves, Don (Astaire) chooses a young and naive chorus girl, Hannah (Garland) as his protege. But it turns out she’s incredibly klutzy and confuses her left from her right. Funny, cute, and magically musical, Easter Parade holds up at 74 years old!

Probably Gene Wilder’s best movie, and not an Easter movie, but the definitive movie about candy! Willy Wonka, after years of seclusion, hides a handful of golden tickets in random chocolate bars around the world, and if found, children will be given a tour of the famed chocolate factory. Of course, Charlie Bucket and Grandpa Joe are the only good people in a crowd of selfish brats and classless parents, as the group gets smaller by one after each tour stop and its ensuing lesson and misadventure. Easter is about rebirth, renewal, and fertility. This is evident in symbols like the Easter bunny and Easter eggs, which eventually led to chocolate eggs, marshmallow Peeps, and the second best-selling candy holiday in America! Let’s take a quick look at how Easter has changed over the years.

Easter Bunny

According to legend, the Easter bunny first came to 1700s America with German immigrants who settled in Pennsylvania and brought along their tradition of an egg-laying rabbit called “Osterhase” or “Oschter Haws.” Children made outdoor nests so this curious creature could lay its colored eggs. Eventually, the tradition spread across the country, and the fabled hare’s Easter morning goodies would eventually include chocolate, candy, and gifts, while colorful baskets would replace the nests. Much like milk and cookies left out for Santa, children would often leave out carrots in case the Easter bunny got hungry from all his hopping!

Fast forward to the 19th century, when European chocolatiers began making chocolate eggs to celebrate Easter.

Nowadays, Easter is the second best-selling candy holiday in America after Halloween. The largest Easter egg ever made was over 25 feet high and weighed over 8,000 pounds, made from chocolate and marshmallow, and supported by an internal steel frame. Another egg-shaped candy is the jelly bean, first popular for Easter back in the 1930s. Over 16 billion jelly beans are made in the U.S. each year for Easter. Over the last decade, the marshmallow Peep has been the best-selling non-chocolate Easter candy. Created in the 1950s, the original Peeps were handmade, yellow marshmallow chicks, and other flavors and shapes were introduced later, including chocolate mousse bunnies! info from history.com

Easter Eggs

From a Christian perspective, eggs were handed out during Easter service in early Orthodox churches, with the hard shell representing the sealed tomb and the cracking of the egg representing the resurrection. One explanation is that eggs used to be forbidden during Lent, so Christians would paint and decorate them to mark the end of the period of penance and fasting, then eat them on Easter as a celebration. The origin of dyeing Easter eggs is less clear, beginning anywhere from 13th century Europe or all the way back to ancient Mesopotamia. It’s rumored the early Christians of Mesopotamia dyed eggs using red to represent the blood shed on the cross. Later, missionaries may have painted biblical scenes on eggs and used them to explain the story of Easter to children.
