pring is just around the corner, which means we should hopefully be able to sit outside and eat at our favorite restaurants again! While some people will vehemently go down fighting for their standard barbecued steaks and burgers, there are just as many of us out there who prefer somewhat lighter fare. Especially during the warmer months, nothing sits heavier than red meat, fries, and beer! Now nobody’s saying that a good burger isn’t welcome now and then, but it’s always good to consider a variety of options. When it comes to great options here in Wilsonville, there is nothing better for a delicious, healthy, lighter meal than Mediterranean. More specifically, there is no place better than Mr. Gyros!

back to the hustle and bustle of the restaurant world. As it turns out, a very close friend of Fayad’s also happens to be the owner of several Gyro House locations around town. Serendipitously, he was interested in selling one of those locations and discussed it with Fayad just when he was looking to get back into the industry. The timing was perfect! He bought the location in Wilsonville, transformed it, and on April 20th, 2021 he opened the doors of the very first Mr. Gyros restaurant here in Wilsonville! Opening a new business, especially a new restaurant during the unpredictability of COVID, is a huge challenge. However, Fayad has done well and remains optimistic, and if the initial response he has gotten from the community is any indication, he’s more than up for the task! Beyond that, however, trying out a newer restaurant is all about the food, so let’s talk about the menu!

Fayad Zinab, owner and founder of Mr. Gyros, has been in the restaurant business for over 20 years. For those of you who’ve been in the greater Portland area for some time, you may remember the late great Greek Cusina—yes, the place with the purple octopus over the entryway. Fayad started his culinary journey there at the height of their popularity; it was a favorite dining spot in the downtown area for years and a very sad day when they closed. After his time there, Fayad went on to Daphne’s (another Greek/Mediterranean eatery) and then some fast food restaurants. It was in fast food where he gained a lot of his managerial experience, working his way up to the district manager level where he was overseeing 14 locations! He left the food industry for a short time and tried his hand at something different, but he’s always been drawn 6 • WILSONVILLE LIVING MAGAZINE • MARCH 2022

First and foremost, as you may have guessed, are the gyros. These are his best selling & most popular items. Given the name of the restaurant, it doesn’t take a huge leap of faith to believe that, but even if you’re no stranger to Mediterranean cuisine, these gyros may surprise you. Everything Fayad makes is authentic. These are his recipes, made with his own proprietary blend of spices. It’s all fresh and it’s all made from scratch—even his hummus, Baba Ganoush, and Tabbouleh. When I say that this is “lighter” food, I’m referring to the fact that they use lots of vegetables and the freshest ingredients, not the size of the meals. Order a gyro and you’ll understand what I mean. The portions are exceedingly generous, and you’ll be glad of that fact once you taste it! If a deliciously jam-packed gyro sounds like a bit too much for you, there are plenty of other options to choose from too. Fayad said that he’s been getting terrific responses on his Falafel (made completely from scratch, not a mix!), his Lamb Shank entree, his Kabobs, and his various bowls. One bowl in particular that’s been getting rave reviews

is the Mr. Gyros Goddess Bulgur Bowl. This has become one of his signature dishes, and is a composition of bulgur, salad, hummus, feta cheese, Tzatziki, and chickpeas. This dish, along with many others on the menu, is vegetarian, so for those who have dietary restrictions this is a terrific place to find a variety of alternatives that fit your specific needs. Fayad is always fine tuning and adding new items all the time. And of course, he makes all of his own desserts from

scratch, including Baklava (Walnut and Pistachio), Nut Roll, Maamoul Dates, and other pastries like Kunafeh and Kataif, as well as savory pies, including a Cheese Pie, Zaater Pie, and Spanakopita. Everything is authentic, fresh, and handmade. You can’t lose, no matter what you order on the menu, though it could be argued that these are the best gyros in Oregon! Fayad is grateful to be a part of the Wilsonville community. He wants to

aybe you’re a seasoned waxer or never done it before in your life. In this article, I’ll give you an overview of what waxing is and why you might love adding it to your routine.

How often should you get waxed? It depends on the area. Brow waxing is about every 3-6 weeks and body waxing is about 4-6 weeks depending on how fast your hair growth cycle is. But imagine silky smooth skin for up to a month! Will you have to keep waxing once you start? Nope, if you stop waxing your hair will go right back to what it was before you started waxing.

Waxing is the removal of the hair from the base of the root. This is different than shaving. When you shave, you’re slicing the hair off at the base of the skin but still leaving half of the hair hidden beneath the skin which can lead to bumps, itchiness, and ingrown hairs. Waxing can be done on any part of the body, and it can completely transform your look and attitude. Take eyebrow waxing for example. Getting your brows properly shaped by a professional can lift and open your eyes and properly frame your face. Talk about an instant face lift! Have you not tried waxing before because you’ve heard it will make your hair grow back thicker and darker? This is completely false. When you remove the hair from the base at its root, it comes back feeling finer compared to shaving because the new hair is naturally tapered at the top vs being bluntly cut off from shaving. Another perk of waxing that debunks this myth over time waxing will reduce the number of hairs that will grow back. Hair growing back darker? Nope that won’t happen either. Only hormones and internal triggers can cause change to the natural color of your hair.

What’s used to remove the hair? Not all waxing products used for hair removal are created equal. Some can be quite dangerous when not used correctly and can lead to irritated skin. There are honey waxes, sugar waxes, hard and soft waxes, and many more. At Divine Complexions, I’ve chosen to use NuFree which is a product made out of soybeans. It only adheres to the hairs and not to the skin like some waxes, making it a more gentle experience. It’s also one of the only waxing products on the market that is antimicrobial, which for you means a safer service. Technique is important, and can make just as big of a difference in your experience as the products they use. Choose a licensed and trained professional called an Esthetician who specializes in this type of service. It’s a great idea to look online and read reviews or ask a friend for a referral. On February 16th more than 140 business professionals attended the Hilton Garden Inn, Wilsonville (and virtual via Zoom) for our MultiChamber Business Town Hall regarding the I-205 Tolling Update. (An I-205 toll is proposed to go into effect late 2023 or early in 2024 on all lanes, all times of the day and every day of the year between Abernathy Bridge and the Tualatin River bridge. Guest speakers Senator Kennemer and Clackamas Commissioner Savas provided insightful updates about the serious issues regarding major traffic diversion onto local roads and equity concerns. The business community voiced many concerns about the major increased costs to commuters and businesses without any real evidence that traffic congestion will improve. BUTTERCREAM: 8 T Butter Softened 1 C Confectioners’ Sugar ¼ t Pure Vanilla Extract ½ T Cream or Milk TOPPING & GARNISH: ½ C Marshmallows From Lucky Charms Cereal 2 T Rainbow Jimmies

1. Line a 13×9-inch baking dish with foil. Spray the foil with nonstick cooking spray. 2. In a large pot, melt butter over low heat. Add marshmallows, stir until they are melted. 3. Remove the pot from heat and stir in the marshmallow fluff and vanilla. Then stir in the Lucky Charms and jimmies until the cereal is evenly coated. 4. Pour the mixture into the prepared pan. Let the treats cool for at least one hour before frosting. 5. Meanwhile, make the buttercream using a stand mixer. Then spread the frosting evenly over the treats. 6. Finally, top with Lucky Charms marshmallows and rainbow jimmies. Cut into 24 bars and serve.
