Grilled Chicken Marinade Winner, Winner, Chicken Dinner INGREDIENTS 2 lbs. Chicken Breasts, Tenders, or Thighs 1/3 - 1/2 cup Extra Virgin Olive Oil (depending on preference) 3 Tablespoons Fresh Lemon Juice 3 Tablespoons Soy Sauce 2 Tablespoons Balsamic Vinegar 1/4 cup Brown Sugar

1 Tablespoon Worcestershire Sauce 3 Garlic Cloves minced (or 1/2 teaspoon Garlic Powder) 1 1/2 teaspoon Salt 1 teaspoon Pepper Garnish: Fresh Parsley

INSTRUCTIONS In a bowl, stir together oil, lemon juice, soy sauce, balsamic vinegar, brown sugar, Worcestershire sauce, garlic, salt, and pepper.

Pierce chicken breasts with a fork all over. Place in a large Ziploc bag. Pour marinade over chicken.

Let marinate for at least 30 minutes. Four to five hours is ideal.

FOR GRILLING Preheat grill to medium heat. Brush grill with oil to prevent sticking.

Place chicken on the grill. Cook for approximately 5 - 6 minutes per side, depending on the thickness of chicken. The internal temperature of the chicken should reach 165 degrees. Remove chicken from grill and let rest for five minutes.

FOR BAKING To bake, preheat the oven to 400°, and bake for 18 to 20 minutes.

ynsey has been an artist for her whole life. Both of her parents are printmakers and as a family they have always done art projects and gone to events and museums together. In short, art has always been a huge factor in Lynsey’s life and family.

Currently they own a little printmaking shop in Nevada. Lynsey has her Bachelor of Art in photography and moved to Oregon in 2014 to get her Masters of Fine Art in Printmaking from Pacific Northwest College of Art. Oregon has been so welcoming to Lynsey as an artist and she is so happy to be a part of the artistic community here. There are a huge number of events for artists to be involved in themselves, or just to go to and enjoy the work of others. Galleries that open their doors to an artist always want them to be involved and make sure their vision is created. Even the Portland Art Museum went above and beyond when they hosted a Steam Roller event "Keeper of Secrets" for Relief Printmakers where they printed Relief Print large work, gave copies to the artists who participated and asked for nothing except to pay it forward to fellow artists when they need it.

Printmaking is a complicated process with many steps involved. For the Relief portion of Lynsey’s printmaking, which is usually printed in black, she carves linoleum blocks then prints this on very thin Japanese paper called Gampi. For the Screenprint portions of printmaking, she uses light blocking opaque pens to draw a negative, then exposes this negative onto 12 • WILSONVILLE LIVING MAGAZINE • MAY 2020

a screen (a fine mesh square frame) and then prints from this screen onto paper. Once these are printed Lynsey hand cuts and hand colors all of them.They are usually small plant images and it takes a day or two to cut all of them out.

Once Lynsey has the lino print and all of the screenprint flowers, she begins to merge them together into one whole image; placing all of the plants on the back of the Gampi paper and seams them together (using an old Japanese wheat pasting technique) to create an image. Depending on her plan for the piece she then will sometimes add prints to the front to give it a bit of dimension.

Lynsey’s inspiration has come from many different places. Her current work primarily has been focusing a lot on the forgotten goddess within different cultures or religions. Lynsey takes these myths of legends and recreated them into a modern interpretation of style and looks. This is just the surface level. Within all of Lynsey’s work, she transforms the ancient into new to seek a better understanding of what beauty, strength and identity truly means. In her own words, “There is a misconception that people place on women when it comes to strength, inner beauty and being mentally strong. We can take whatever comes our way. Within this work I seek to redefine the terms of strength, what femininity means to me and what beauty is beyond the surface.”

Lynsey is passionate about art and she volunteers at a printmaking department/studio on the weekends where she helps students and faculty with equipment, technique and instruction. She also has been participating in local art walks in the community since she graduated.

THINGS TO DO FOR

W

ith the official advice to avoid all non-essential contact to prevent the spread of the novel coronavirus, many people won’t be able to be with their moms in person this Mother’s Day. However, this doesn’t mean you shouldn’t mark the occasion. If you get creative, you can still develop a sense of emotional closeness during this time of physical isolation.

Here are a few suggestions: 1) MOVIE DAY

Pick a movie or a show that both you and your mom will love and start watching it in your separate homes simultaneously, messaging each other your thoughts in real time.

Netflix offers something called a ‘Netflix Party’ - a Chrome extension which enables multiple people to watch the same thing at the same time from different locations. It’s a great way to ensure you’re watching at the same pace so one person doesn’t give away any spoilers! You could even video call one another to chat while you watch.

2) HOME SPA

Create a home-spa experience by deciding on some pampering DIY treatments, and doing them at the same time, while keeping in contact throughout each ‘treatment.’ These could include enjoying a warm bubble bath, a facemask or treating yourself to a manicure or pedicure.

3) COFFEE SPREAD

Arrange your own little tea/coffee date by making your favorite hot drink at home and calling each other for a good catch up on the phone or video chat. Reminisce about your favorite memories, or make some plans for the first thing you’ll do together once you can connect in person again.

4) DINNER FROM AFAR

If you can’t get to your favorite restaurant to have a meal together, pick a meal you both love, or two separate meals that you both would have chosen if you were eating out, and prepare it.

Try video calling while cooking up a storm in the kitchen, or when you’re eating your starter, main and dessert, having the same conversations you would have over the table when eating out. If you’d prefer to bake, get out the mixing bowl and compare your creations.

5) LEARN A NEW SKILL

Choose a hobby or skill you both want to get better at and spend a few hours of the day practicing your newly honed skills. You can converse throughout the day on how you’re doing, share images of your creations and then share the completed work with each other in person when it is safe to do so.

6) STAR GAZE

Wait for nighttime, assuming there’s a clear sky, sit outside and star gaze. Take a night-time picnic out in the garden with you.

Whether you’re in the same area or miles apart, you’ll likely be able to see the same stars. You don’t have to be in the same room to enjoy quality time together – and the stars are a great way for making people feel in tune with their loved ones and closer to home.

7) PLAY GAMES TOGETHER

There are plenty of games you can play together from a distance, and not just on video game consoles. Popular board games, like Scrabble and Monopoly, have app versions that you can play from your separate devices. You can also do a zoom or google hangout game day.

8) DRIVE OUT

Take a trip out to a picturesque spot or viewpoint in your separate vehicles and take an in-car picnic. Call each other or sit in the back of your cars once you park and have a chat while enjoying your goodies. You’re still practicing social distancing if you’re staying in the car, but you’ll get to see them in person and feel a sense of togetherness. 

It’s a seller’s market right now and here’s why...

seller’s market occurs when demand exceeds supply, or there are more buyers seeking to purchase homes than there are available homes on the market. This often leads to multiple buyers being interested in a single property, resulting in bidding wars.

seller has the advantage. If other buyers are interested in the same property you’re making an offer on, trying to get a lower sale price probably won’t work to your advantage. In fact, you could lose the opportunity to purchase the property altogether if a competing buyer makes a higher offer.

The Regional Multiple Listing Service (RMLS) shows that in the first 21 days of April 2019, 1253 homes in Portland went pending and eventually sold. For the same time period this year, at least 1009 homes have gone pending. Seller’s markets are sometimes called “renter’s markets” for this reason; sometimes potential buyers need to keep renting until they can save up a higher down payment and compete with other buyers in the market.

A seller’s market is a fantastic time to sell your home as you could secure a sale price that’s higher than your listing price, or at least more than your bottom line (the lowest price you’d be willing to accept for your home).

If you’re buying a home in a seller’s market, be aware that the 26 • WILSONVILLE LIVING MAGAZINE • MAY 2020

The real estate market goes up and down depending on the season, and with the global pandemic situation everyone was expecting the housing market to crash just like it did in 2008.

Thankfully it’s doing the opposite. The difference between a buyer’s market or a seller’s market also depends on the area.

Cities with a lot of available jobs and growing industries will often be a seller’s market, while those with struggling economies will be a buyer’s market. Currently, Oregon is the least expensive state on the West Coast to live in.

One way to determine if it’s a buyer’s market or a seller’s market is to look at inventory, or the number of homes for sale. This should be left to your Real Estate Agent so they can help direct you. Trends are changing from previous years, lenders are tightening the regulations of what they approve, and it’s important that you seek guidance from professionals that know the market and what could be best for you, either as the buyer or seller. Showings are up about 19% based on lockbox openings reported by RMLS. Given the current situation that is facing all of us right now, Beltran Properties Group is taking extra precautions to help keep everyone safe. Sales are not stopping, and Real Estate is an essential business that has not shut down. New pendings have been trending up

since the beginning of April. The 7 day rolling average moved from 316 pendings on April 5th to 474 on April 21st.

BUILDING BUSINESS - BUILDING COMMUNITY Dear Wilsonville Community: As I write you this letter, it’s April 22nd and we all continue to operate our businesses under and honor Governor Brown’s Stay Home Save Lives Executive Order.

The COVID-19 pandemic has seriously impacted all our Wilsonville businesses. Every day when I speak with our small, medium and large businesses I hear inspirational stories. These business owners and managers are working very hard and creatively to keep their doors virtually open to serve their customers. They are working diligently to ensure the safety of their employees with new protocols for both real world and remote work.

I’d like to make a big shout out and thank you to our Wilsonville City Council for the very important and positive action they took at the April 20th council meeting to fund a $400,000 grant program to provide immediate assistance to small local businesses negatively impacted by the COVID-19 pandemic. This was the final step in a process that began on March 17th when the Wilsonville Chamber of Commerce contacted City leadership and expressed serious concerns that the coronavirus was having dire negative impacts on our business community. We dialogued with the City for several weeks and then at the April 6th City Council we formally requested that the City create a small business relief fund. The City Council agreed and created a Charter task force in which they invited the Chamber to participate.

In just a week via a very collegial and collaborative effort we all worked together to create a draft relief plan. This is an excellent example of how business and government working together can

make a huge positive difference in Wilsonville.

These Small Business Relief grant checks are planned to go out in the first part of May and will be a critically important lifeline to help enable our local Wilsonville businesses to survive this coronavirus economic disaster.

More positive news: Our City of Wilsonville has been proactive to aid community members experiencing dire financial need. The Council agreed to provide $50,000 in additional funding to Wilsonville Community Sharing, a local non-profit that operates social-assistance programs and the City’s food bank. The funds allow WCS to assist clients with rent payments, prescription medications, and utility payments.

A final huge shout out to all our City of Wilsonville employees. They are working long hours in difficult circumstances to make sure that our City’s essential services can still function properly. When you see a City employee please say a big Thank You for their exceptional dedication during this pandemic.

his month marks 26 years of chiropractic practice for Dr. Laura LaJoie, and she has been in Wilsonville for 25 of those 26 years. Shortly after setting up her practice here, she and her husband followed and they have raised 3 girls in Wilsonville for their entire lives. She began volunteering to work with Wilsonville High School athletes in September of 1995 and has truly enjoyed helping with the recovery, as well as, performance enhancement of

so many local young people.

Dr. LaJoie wanted to be a doctor from the time she was in middle school. Her passion for chiropractic care comes from understanding that we live our lives through our nervous system and, while pain is a significant indicator, it is not the only indicator that we can use to improve our overall health performance.

Understanding when a person should see a Chiropractor varies from person to person.

Her youngest patient has been 4 days old. Dr. LaJoie does lots of newborn checkups to ensure the children are pain free and to confirm that the spine and musculature are in the best possible position for optimal function, growth and development. Her oldest patient is currently 98 years young.

She declares that chiropractic “keeps her walking” and that she sleeps better when she gets adjusted every couple of weeks as part of her general well-being.

Chiropractic is commonly used for the treatment of headaches, neck and low back pain, but it goes far beyond that.

Commonly, Dr. LaJoie sees people with physical symptoms of stress and inflammation. By adjusting the spine and reducing the stress of the symptoms, people are frequently able to move and function better overall.

Because Dr. LaJoie has been in town for over 25 years, she has many patients that use her as their primary care provider. Often, they want to know what can be done without drugs and/or surgery and Dr. LaJoie works cooperatively with their MDs when necessary, so that people are getting the best possible healthcare experience with her as part of their team.

community on many levels. They have sponsored most of the high school athletic teams in their programs and/or posters. Dr. LaJoie has spoken to primary, middle and high school students regarding chiropractic as a career. For several years, she got to share nutrition, hydration and training tips with the Wood Middle School track teams, in addition to volunteering as a middle school track coach.

A highlight has been being on the sidelines for varsity football games for the past 25 years as part of the sports medicine team. Due to her involvement in Wilsonville Rotary, she has also been able to connect with friends and patients at the Rotary summer concerts, fundraising omelet breakfasts, leadership with the high school Interact club, and via student recognition. One of her favorite events to participate in every year is Fun in the Park because she gets to interact with community members of all ages.

Dr. LaJoie’s favorite part about being a chiropractor is working with people. The human body is fascinating to her and every body is different. She especially enjoys working with families and athletes. From children to great-grandparents, weekend warriors to elite athlete, Dr. LaJoie ultimate goal is to help all of her patients continue to live healthy lifestyles for as long as they can.
