talian food is one of those cuisines that you can never get enough of, so Executive Chef and General Manager of Abella Italian Kitchen Ryan Tull shares some of his most decadent menu options with us. The Antipasto Platter is a great way to begin your Italian feast. It comes with seasonal selections of artisanal cheeses, local charcuterie, fresh fruit, dried fruit, mixed olives, crostini, a seasonal dipping sauce, and various pickled peppers. Chef Tull suggests pairing this with a red wine from their extensive wine list, particularly the Rocca Delle Macie Red Blend from Tuscany. This mediumbold, smooth and dry blend has notes of red fruit, black fruit, brown sugar, citrus and earth notes. If you are searching for the perfect entrée look no further. One of Wilsonville’s favorites is the Kurobuta Pork Shank. This pork shank comes from Snake River Farms located in Idaho, and is the best of the best when it comes to the

texture and taste of pork. The Kurobuta Pork Shank is simmered in Italian red wine, herbs, chicken stock, mirepoix, and garlic until it falls off the bone, then served over seasonal wild mushroom risotto and finished with imported Italian Parmigiano-Reggiano. Chef Tull suggests that this be paired with the Cecche Barbera d’Alba wine. The wine is bolder, smooth, and dry with wonderful notes of chocolate, red fruit, dark fruit and violet, and a beautiful spice to finish. Inspired by traditional Italian recipes, Pasta Pomodoro with Grilled Chicken Breast is not only beautifully plated but also a dish that will make your taste buds dance with delight. With the combination of fresh and slow cooked tomatoes, aged Pecorino Romano, chopped garlic
and basil, this dish brings out a fresh bold taste. The chicken breast is marinated with extra virgin olive oil, lemon zest, and fresh chopped oregano giving it massive flavor. Chef Tull recommends the house favorite when it comes to wines, called the J. Lohr Riverstone Chardonnay, which is a bold, semi-dry and soft Chardonnay, flavored with bold oak, butter, pear and nutty notes. It has a wonderful citrus and floral finish to make every sip delectable. End your meal on a sweet note by enjoying the mouthwatering and freshly made Marionberry Cheesecake. This cheesecake has a gelatin glaze, inspired from the traditional Italian cheesecakes created with mascarpone and cream cheese. It is light and fluffy in texture with traditional graham cracker crust, fresh mint, and a marionberry reduction that will leave you wanting more. Chef Tull suggests that you pair this with a Kings Ridge Riesling, a luscious dessert wine that comes from right here in the Willamette Valley. This light, dry and acidic Riesling has wonderful notes of pear, minerals, citrus, dragon fruit and vanilla leaving you with a beautiful smooth finish. These are just a few out of the many fabulous dishes you can enjoy at Abella Italian Kitchen. They know that there are many different dietary needs so they make sure to include options that can be enjoyed by all, including those who are gluten-free,
vegetarian, vegan, and pescatarian. Chef Tull suggests calling ahead if you have specific needs so he can make sure your experience is the very best. Her years of experience as a makeup artist and esthetician, and her knowledge as an esthetics Instructor make her one of the most credentialed beauty experts in the area. Esthetics have always been Christine’s passion; she was that little girl that was always begging everyone to let her do their makeup. After completing her Bachelor’s Degree from Oregon State University, Christine listened to her heart and decided to follow her dreams, go to school to be an esthetician, and pursue a career as a professional makeup artist. The History of Valentine’s Day ...and Why it’s Celebrated

hough the first thing that you typically think about when it comes to Valentine’s Day is flowers and chocolate and romance, the origin of the holiday actually isn’t so romantic. While modern Valentine’s Day celebrations are marked with passion, expensive gifts, and hardto-get dinner reservations, the origins of the holiday are not nearly so glamorous. Here’s the history of Valentine’s Day you may not know.
The supposed origins of Valentine’s Day date back centuries to the latter days of the Roman Empire. When Emperor Claudius II decided that single men made better soldiers than those with wives and families, he outlawed marriage for young men. A priest named Valentine realized the injustice of the decree, so

he defied the emperor and performed marriages in secret. When his rebellion was discovered, he was put to death and was later recognized as a saint and martyr. Through the years, Valentine’s Day traditions melded with various customs from pagan festivals. It is celebrated on a fixed day on the calendar, February 14th, and the ancient Roman calendar included a mid-February holiday even before St. Valentine’s time. That holiday, called Lupercalia, celebrated fertility, and may have included a ritual in which men and women were paired off by choosing names from a jar. In Ancient Greece, people observed a mid-winter celebration for the marriage of the god Zeus and the goddess Hera. Some historians wonder if these traditions may have influenced the way we now celebrate Valentine’s Day. By the end of the 15th century, the word “Valentine” was being used to describe a lover in poems and songs of the day. In the 1840’s Esther A. Howland, known as the “Mother of the Valentine,” began selling the first mass-produced valentines in America, making elaborate creations
with real lace, ribbons and colorful pictures. Her creations started the now commercialized tradition of sending fancy cards to loved ones on Valentine’s Day. Today, according to the Greeting Card Association, an estimated 145 million Valentine’s Day cards are sent each year, making Valentine’s Day the second largest cardsending holiday of the year. Over the years (and centuries), Valentine’s Day has been a religious celebration, an ancient ritual day, and a commercial holiday. All that change means the meaning of Valentine’s Day is truly whatever you want it to be: You can skip the celebrations completely, buy yourself some chocolate, wine, or flowers, or express your love and appreciation for the people in your life, whether they’re co-workers, romantic partners,
friends, or family members. Some people love Valentine’s Day, and some people just love to hate it. “Galentine’s Day” is a relatively new way to celebrate, as women stock up on Valentine’s Day ideas and celebrate their love for their closest friends. If you’re trying to figure out what to do on Valentine’s Day, just know that there are no rules: It’s a new era, and you can celebrate the day of love however you want, even if it’s just through self-love. A nice dinner out, going to the movies, cooking a fancy meal at home, or hosting a Valentine’s Day party are also great ways to celebrate. Whatever you do, be happy and love.

A
delicious cup of freshly brewed local coffee and a bagel that was made from scratch has always been the way Nancy Faubel has started off her day, and the owner of Corner Coffee Shoppe and Sourdough Bakery wants to share that simple pleasure with all of Wilsonville! Having spent 20 years of her life in aviation, Nancy made a career change after she met a European restaurant owner who rented planes from her and coincidentally helped her discover her passion for food. Nancy was taken “under his wing,” so to speak and started learning the best techniques to creating all sorts of delicious cuisine. Nancy enjoyed it so much she decided to leave the aviation world and commit to working in the food industry. After gaining experience working in 4-star restaurants, Nancy decided it was time for her to branch out and she opened her first coffee shop in Nevada. Shortly after that, Nancy moved to Winchester Bay, Oregon and opened another coffee shop, knowing her heart was tied to the ocean. Living on the Oregon Coast was great in many ways, but when it came to winter and the slowing of tourism, the business was essentially located in a ghost town. Nancy knew it was time for a change again so she started searching for a new location to call home. Searching for a place that had more culture, food diversity, and things to do led Nancy to Wilsonville, her new home and the place where she would open her next coffee shop and bakery. Talking with the City of Wilsonville, Nancy found out that there weren’t any mom and pop coffee shops in the area, and the city was searching for less chains and more personalized individual locations. Nancy knew she could bring character to the area and that she would be a great attribute to the Wilsonville community. In 2018 the Corner Coffee Shoppe opened in the space formerly occupied by Starbucks in Wilsonville’s Town Center. Then the
company next door went out of business, giving Nancy the opportunity to expand and open her specialized Sourdough Bakery in September of 2019. Nancy’s signature specialty sourdough was created in the 1980’s from red grapes on the east coast and has led to all sorts of tasty treats that are ready to be shared with her new community! Through opening a local business, Nancy has discovered just how nice Wilsonville is and she has grown to love being involved with the community as a whole. Her coffee shop and bakery are always open for community events and she has already held a couple of fund raisers to help local non-profits. Nancy also allows local artists to come in and display their masterpieces on her walls to increase their exposure, and she works with Wilsonville High School to give students internships and help them gain work experience. Nancy loves the creative nature of her businesses and how it allows her to play around with different flavors and products. The bakery has just come out with an amazing line of gluten-free treats, in addition to their vegan-friendly selections. These tasty morsels can be purchased at either the bakery or coffee shop. Helping ALL kids succeed!
T
he Total Development Center started as a nonprofit in 2000. The purpose was to help serve student athletes that Executive Director Donna Crace and her team were working with in the West Linn-Wilsonville School District. At the time, George Crace, TDC President, was also a full-time teacher at Wilsonville High School and the head football coach. Donna Crace has always been active in the Wilsonville community, including her position on the Executive Board of Directors for the Wilsonville Chamber of Commerce, and she enjoys meeting the community business members and their families at many fun, local events throughout Wilsonville. Her biggest passion right now is launching “TDC-Fields for Champions” and bringing Knockerball N.W. to many events throughout Oregon and Washington. These events are designed to bring fundraising resources to many nonprofits throughout the area and to keep students physically, mentally, and emotionally guided as they face today’s challenges. Donna and George’s daughter was an all-state dancer and cheerleader, and their 2 sons played baseball. Through being involved in so many activities, they discovered that many of the students needed assistance planning for their futures. Creating The Total Development Center allowed the Craces to reach out and provide resources for local youth that needed guidance through the college application process, as well as helping them be “college ready” with their grades starting in their freshman year. They’ve held many “college prep seminars” for students, starting as early as the 8th grade to get kids on the right track as they prepare for high school. They also have supplemental programs for children as young as 6 and young adults up to age 25. There are so many different programs offered through TDC, but Donna says that one of the most popular programs is called “Homework, My Dog Ate It.” This is a four week program designed to help students get organized and stay on top of their homework and school programs, as well as be accountable to their teachers, coaches, and parents. The center also offers detailed guidance to student athletes who want to apply for athletic scholarships. “It was very important to work with these students and their parents starting in their freshman year in high school, as the NCAA eligibility rules were very detailed and changed over time. If they waited to start at the end of their Junior year, it might have been too late to be eligible for the scholarships they were hoping for because of a low GPA or being late on taking SAT/ACT tests” said Donna. Their programs expanded into Leadership/Community Service Guidance, summer youth development camps with multiple sports, financial aid seminars for parents on FAFSA applications, and more.
Life with kids is never “typical” according to Donna, and when it comes to knowing if your children should be a part of this program or not it starts with a simple interview. The student needs to be open to engaging with TDC’s staff of professionals and trust that they can help build bridges to future success. Some students want encouragement to attend their local community college for 2 years and The Total Development Center guides them through that process, as well as helping students desiring a 4 year college degree to find their “right fit” with colleges that are affordable. Not all students need a 4 year degree, but TDC believes in encouraging all students to seek education and training beyond high school. Through The Total Development Center’s assessment programs and career exploration programs the students learn many things about themselves. They can start their research on careers and the skill requirements necessary for academic and workforce success. Becoming college and career ready can be gratifying and fun for students. Learning how to apply what they learn is the goal for each student served by TDC. The Total Development Center encourages anyone who has a heart for kids and loves teaching, tutoring, mentoring or coaching in any capacity to contact Donna directly. Volunteers working with students will need to be vetted and undergo a background checks. There is also a need for volunteers in general who want to help out administratively and build bridges to successful partnerships with other youth oriented programs. The Total Development Center’s mission is to help kids succeed by developing a positive “Can Do” attitude, and through receiving academic, athletic, and artistic education while working with teachers, coaches, and mentors who are altruistically motivated. The six A’s (Attitude, Academics, Athletics, Arts, and Altruistic Activities) are the guiding framework for The Total Development Center. “Through these six educational portals, we connect with any child who needs support and encouragement to grow and develop a champion’s heart – a heart of character!” For more information on the programs at TDC you can visit their website at thetotaldevelopmentcenter.com or give them a call at 503-816-4220. BROWN SUGAR GARLIC FLANK STEAK B
rown Sugar Garlic Flank Steak is made with the most amazing brown sugar garlic soy marinade. The steak is grilled to perfection and melts in your mouth!
INGREDIENTS
INSTRUCTIONS In a small bowl mix together garlic, brown sugar, olive oil, Worcestershire, soy sauce, Dijon Mustard, green onions and salt.

• On a clean surface lay out two large pieces of Reynolds Kitchens Quick Cut plastic wrap slide by side, with 2 inches overlapping. This
creates an extra-large rectangle. • Pat steak dry using a paper towel and set in center of prepared plastic wrap surface. Pour marinade mixture over the steak and pull the sides of the plastic together until steak and marinade are tightly sealed. If

On January 8th our Wilsonville Chamber Morning Spark networking event was hosted by the Meridian Creek Middle School (see opposite page for pictures) It was truly an inspirational meeting as we got to see first hand the fantastic job the educators and staff are doing at Meridian Creek School. Our Chamber were so impressed that we thought it would be valuable to use this opportunity to invite Annikke to share about this important first time 2/13/20 Community night event.
All of Wilsonville is Invited to the Inaugural Meridian Creek Middle School Community Night It’s been less than three years since Meridian Creek Middle School first opened its doors to students, yet the growing school has already become an integral part of the Wilsonville community. Meridian Creek Middle School is excited to add to its increasing list of school traditions when it hosts the first Meridian Creek Middle School Community Night on Feb. 13. In addition to building Meridian Creek Middle School’s (MCMS) budding relationship with the Wilsonville community, the public event will aim to raise proceeds for the Meridian Creek Middle School Scholarship Fund. The MCMS Scholarship Fund was created to provide all MCMS students with equitable access to enrichment opportunities, school supplies, yearbooks, and other incurred costs that are associated with school. The MCMS Community Night is open to all members of the Wilsonville community. It promises to offer excitement for everyone, including activities, games, raffles, and even student music and drama performances. The Wilsonville Rotary will also be selling “breakfast for dinner” to all interested event-goers. 20 • WILSONVILLE LIVING MAGAZINE - FEBRUARY 2020
To make the first MCMS Community Night a success, and to raise resources for MCMS students through the Scholarship Fund, community members are invited to make donations for the ground-breaking night. The first Spark held in 2020 was with Meridian Creek Middle School as our gracious hosts. If you haven’t had the chance to meet Middle School Principal, Annikke Olson, make the time to do just that. She is full of energy, inspiration and so much heart for the students in her school.
