WELCOME TO OUR FIRST ISSUE OF THE 2020 WILSONVILLE LIVING MAGAZINE Happy new year! Welcome to our January 2020 Issue. In this issue our feature story is all about Wilsonville’s own Edge Family Fitness. They have some great fitness programs available for all of you who have made that annual New Year Resolution to include fitness in your lifestyle. Also for those of you who love the painting style of Bob Ross, we would like to introduce you to Judy Stubb. She is a local artist who has lived in Wilsonville since 1970, and she teaches art classes in his style, “happy trees” and all. Also in this issue we feature the pampering services of L’ Attrait Salon.

Since it is the New Year, we thought that we would feature two recipes in this issue; one for chicken and one for paleo cookies. We wrap our issue with a note from the Wilsonville Chamber of Commerce encouraging you to shop local with details on how doing so can benefit everyone in town. Thank you all for continuing to make our publication one of Wilsonville’s favorites. We look forward to showing you our next issue in February.

Class offerings include: Ballet Sculpt: This low impact class is inspired by a traditional ballet class and will work to increase your range of motion, strength, and flexibility. Appropriate for both beginners and experienced dancers.

Body Sculpt: A strength training class using free weights and body weight exercises to tone your entire body and promote heart health at the same time.

Buti Fire: A workout that honors yoga poses to increase flexibility, along with intense muscle isolation and blasts of cardio in one seamless flow, all set to motivating music.

Step: This aerobic workout incorporates the use of a step to maximize calorie burn.

Strong by Zumba: A fun and energizing High Intensity Tempo Training (HITT) class that works your entire body. It matches body weight exercises, muscle conditioning, cardio, and plyometric training moves to music that will keep you moving and appropriately challenge every level of participant.

Cardio Kickboxing Sculpt: The majority of this class is cardio-focused like the cardio kickboxing class. However, it finishes with a quick strength training segment to give you the best of both worlds.

Cycle: The classic spin class on stationary bikes; it’s easy on the joints. The energy in this class will keep you pushing to the end! This can be a great entry-level class or challenge the toughest athlete.

Gentle Yoga: Yoga at a slower pace, emphasizing stretching and easily accessible poses. Gentle yoga is designed to be comfortable for every body.

Metafit: The original high intensity interval training (HIIT) class.

This class is only 30 minutes, but will give you a calorie burn that will last all day. In this class, there are options to challenge every level of participant.

MixxedTape: This dance fitness class features a mix of dance styles and music for a super fun exercise experience! Explore hip hop, Zumba, and other choreographies in this cardio workout.

Pilates: This classic mat Pilates format focuses on safely strengthening your core. It is a foundational class that serves to strike a balance of strength and flexibility in the body. We also offer a Pilates Sculpt class, which adds in a component of strength training.

PiYo: An athletic fusion of Pilates and Yoga, driven by motivating music and designed to bring you strength, stretching, and cardio.

POUND (coming soon!): This dynamic class is completely driven by the beat. Make some noise and work your whole body as you rock out with drumsticks (provided).

Rev+Flow: Targeted, music-based movements and resistance training work to strengthen and sculpt in this low-impact class. Easy-to-follow movements offer an intense workout for every fitness level.

Senior Fitness: This class safely blends cardio exercise, balance training, strength training, and flexibility exercises. It’s all of the basics rolled into one enjoyable class.

Total Body Conditioning: This bootcamp-style class incorporates body weight exercises and cardio training intervals for total body conditioning.

Vinyasa Yoga: A flowing class set to your own internal tempo.

Vinyasa yoga is a dynamic style of yoga that flows in and out of yoga poses to sharpen your focus, flexibility, and strength.

Yoga: This mindful combination of physical postures and breathing technique is intended to strengthen and increase mobility. Combat our modern day lifestyle with the balance and relaxation yoga offers.

Zumba: Improve your cardio fitness while dancing to a blend of Latin and International music. Dance the hour away for the fun of it!

503 Cardio Groove: A dance fitness workout that borrows music and moves from the club with the intention of giving you fitness results. High and low impact options make this class easy to follow from the beginning. *Classes are subject to change based on availability and popularity.

JUDY STUBB

J

udy Stubb was born and raised in Portland, Oregon and has been a resident of Wilsonville, Oregon since 1970. Most of her working years have been spent being “creative” with food, managing Hickory Stick Catering for 10 years, then forming her own business, Baroness Catering, Inc. for 21 years.

When her husband passed away in 1989, she vowed not to stay home and feel sorry for herself. Having watched Bob Ross and The Joy of Painting on PBS for years, she decided to look for a class and see if it was as easy as it looked.

She found a class at a nearby Michaels store, signed up and was immediately hooked. Not only was it easy, it was fun! It was also great therapy, allowing her to be absorbed in the painting and losing the rest of the world for the 3-4 hour class. It was so much fun, she followed her instructor around to the different locations he taught in and took all the classes she could fit into her schedule.

Then, the instructor moved across country!

Left without her therapist, and not finding another instructor who was close enough or who fit into her busy schedule, Judy contacted the BOB ROSS COMPANY and found that there were certification classes in Portland. Judy then immediately signed up, got certified, and now gets so much therapeutic joy as a painting instructor herself.

Judy has been spreading The Joy of Painting since 2003 and plans to continue to do so for many years to come. She teaches classes at Parks and Recreation in Wilsonville, Newberg, Lake 14 • WILSONVILLE LIVING MAGAZINE - JANUARY 2020

Oswego, West Linn, and Troutdale. Soon, there will be even more locations added to the list because The Joy of Painting is just too much fun to keep to herself.

Her students range in age from 12 to 90+ and in skill level from those who have never held a brush to seasoned painters. Her favorite students are those who arrive saying “I have no talent. I can’t do this!” They invariably leave with their painting saying “Wow! I did this myself!” Then they return for a great time learning and creating, usually bringing along a doubting friend, another convert to be!

Judy’s passion goes much further than her paintbrush and canvas, especially when it comes to giving back to our community.

She teaches free classes to Veterans that are suffering from PTSD, and it allows them to release their emotions through the canvas just like Judy did when she first started painting for therapy. Judy also donates her paintings to a local church to help with their building maintenance fees, and to Habitat For Humanity.

Judy’s talent is ultimately a gift that keeps giving.

Painting isn’t a one size fits all kind of gig, it’s individualistic creativity expressed from every mood and emotion you may have. Anyone can do it! After all,“Perfection is boring,” said Judy.

Participants will learn or review how to maintain a starter, and how to bake this delicious loaf of sourdough bread using tools you probably already have in your kitchen. All materials will be provided and you will leave with your own jar of sourdough starter and a sample of bread we will bake together. Class size is limited to six. Please bring your own jar with a lid for your starter if needed.

BALSAMIC CHICKEN

Chicken & vegetables with italian seasoning and parsley with balsamic vinegar is a delicious all-in-one meal that is sure to please the whole family.

INGREDIENTS 1/3 cup balsamic vinegar 1/3 cup olive oil 1 teaspoon garlic powder 1 zesty Italian dressing dry packet 1.5 pounds chicken tenders 1 head broccoli 1 head cauliflower 6 to 8 baby potatoes sliced in half 1 cup baby carrots 1/2 pint cherry tomatoes 1 teaspoon Italian seasoning 3 tablespoons olive oil salt and pepper to taste INSTRUCTIONS Preheat the oven to 400 degrees F

1. Spray a large tray with nonstick spray and set aside.

2. Whisk together the balsamic vinegar, garlic powder, and zesty Italian dressing dry packet.

3. Place 1/3 cup of the balsamic + Italian mixture in a large bag and add the chicken tenders. Coat and place in the fridge to marinate for at least 30 minutes and up to 6 hours.

4. Chop the broccoli and cauliflower into small pieces.In a bowl, toss broccoli, cauliflower, potatoes and carrots with Italian seasoning, olive oil, garlic powder, and add some seasoned salt and pepper to taste. Then place veggies on the prepared pan. Roast the veggies for 10-15 minutes.

5. Remove from the oven and flip around.

to each side of the tray and place the chicken tenders in the center. Discard marinade that was used for the chicken.

Brush the remaining 1/3 cup of the balsamic + Italian mixture over the chicken. Add the tomatoes.

6. Return to the oven and cook for another 7-15 minutes depending on the size of your chicken.

Be careful to monitor

the chicken so you don’t overcook it.

Remember, the cooking time will largely vary based on the size of your chicken.

7. Serve the chicken and veggies with freshly chopped parsley, if desired

Does your new years resolution involve eating healthier? Are you dreading going without those little indulgences that satisfy your sweet-tooth? Well you’re in luck, because believe it or not, healthy eating CAN taste good!

Try out these gluten-free, paleo-friendly healthier chocolate chunk cookies made with banana, avocado, and other wholesome ingredients. They are so easy to make and turn out rich and soft, just a tad gooey, similar to a brownie. You’ll want to eat the whole plate, but remember to control those portions!

INGREDIENTS:

1 cup ripe avocado 1 banana 1 egg ½ cup cacao powder ½ tsp. baking soda 2 tbsp. raw honey or pure maple syrup Dark chocolate chunks

Preheat your oven to 350 F. Combine the banana, avocado, and honey or syrup. Mix everything until smooth using a hand mixer or a food processor.

Add in the egg, baking soda, and cocoa powder, and continue mixing until everything is well blended.

Stir in the dark chocolate chunks.

Drop spoonfuls of cookie dough on a baking sheet lined with parchment paper. The dough will be very soft.

Bake for 8 to 10 minutes or until the cookies are warm and firm.

Success with your 2020 Resolutions

S

etting a New Year’s resolution can be difficult at times, but it can also lead to inspiration, goal setting, and happiness. As we welcome in the year 2020, the goal shouldn’t be to simply make your resolution, instead it should be about how to keep your New Year’s resolution. It’s a well-known joke that the gym crowds surge in January, only to thin back out by mid-February.

Sometimes it almost seems like resolutions are just meant to be broken. But trust us, resolutions are good, productive ways to set goals and intentions for the new year. Deciding to make positive changes, like ditching a bad habit and adopting a healthier one, is always a good idea—one you should see through to the end.

Often, what we don’t realize is that the problem isn’t that we aren’t capable of sticking to our resolutions—it’s that we need to do a better job making resolutions that are practical, actionable and achievable. Otherwise, it’s almost like setting yourself up to fall short.

If you want to set yourself up for the best chance of success, start with these smart tips for making better resolutions that you can actually stick to.

1. Make resolutions you will keep up with.

On average, it takes more than two months before a new behavior becomes automatic — 66 days to be exact. How long it takes a new habit to form can vary widely depending on the behavior, the person, and the circumstances. The range of time was anywhere from 18 days to 254 days for people to form a new habit according to jamesclear.com, so make sure your resolution is something you will stick with for an extended time until it becomes a part of your lifestyle.

2. Get specific with your goals then write them down.

Accomplishing your goals is hard, however, you need to know how to set them clearly. You can’t simply say, “I want” and expect it to happen. Goal setting is a process that starts with careful consideration of what you want to achieve and ends with a lot of hard work to actually do it.

Post your goals on your fridge, write them in dry-erase marker on the bathroom mirror, or write them down in a journal. Remind yourself of them regularly to muster the determination to meet them

3. Make your resolutions public.

Making your resolutions public makes your more accountable. While sharing with your journal and bathroom mirror help too, they don’t count as “other people.” Tell your best friend or a close family member about your New Year’s resolution and ask them to check in with you on how you’re doing.

4. Celebrate small successes.

When focus is just on the endgame, it’s easy to feel discouraged when progress plateaus around the onemonth mark. Make sure you can recognize each step and reward the smaller successes along the way.

5. Believe in yourself.

If you know you’re capable of making your desired change, then believe it wholeheartedly. When you reach your goal, it’s time to celebrate, but it’s also time to plan out how you’ll stick with it moving forward and not slide back into old habits.

Everyone is different, and goals are acheived differently for each individual. The best thing to remember is that you alone have the power to make and be the change you want to see. May your 2020 be filled with satisfaction, success, happiness, drive, and everything that leads you to keep your resolution!
