Spice up your Spring! The Tim Vanderburg Team’s Famous Guacamole 2 strips of bacon 4 ripe avocados ¾ teaspoon of salt 3-4 Tbsp. of fresh lime juice ½ teaspoon ground cumin 2-3 cloves of minced garlic ¾ cup of minced red onion
¼ teaspoon black pepper 1-2 serrano chiles, stems and seeds removed, minced 4 Roma tomatoes, seeds and pulp removed, chopped ¼ cup (loosely packed) fresh cilantro, coarsely chopped
Place the bacon in a large skillet and cook, until crispy, 8 to 10 minutes. Transfer to a paper-towel-lined-plate to drain. Meanwhile, halve and pit the avocados. Scoop the avocado into a medium bowl and add the lime juice, cumin, garlic, salt and pepper. Mash with a fork until combined but still a bit chunky. Add the red onions, serrano chiles, cilantro, and tomatoes. Crumble the bacon into the bowl and stir together to combine. Serve with tortilla chips.
