eet SuDan Farm, “the rock stars of lamb!” A local direct marketing farm for grass-fed lamb for over 22 years, SuDan Farm cut meats can be found at the farmstead, the local farmers markets or on the menu at some of your favorite local restaurants. They sell wool products, breed sheep and also have eggs available. If you love lamb or haven’t tried it yet, but would like to, get in touch with SuDan Farm and they’ll fix you right up! Located just south of Canby in the Yoder area, the land for SuDan Farm was purchased in 1996 by Susie and Dan Wilson who immediately began pasturing sheep on the property. “We started the farm with a few sheep and the idea to do some direct marketing,” Susie explains. Beginning January 2000, they took some of their locally butchered lambs, a bag of wool and a spinning wheel to the year-round Farmers Market in Salem. Not long after, Lake Oswego
started their own Farmers Market and Susie landed a spot at the market with the help of a coworker. “Everything just took off from there,” she recalls. At one point, SuDan Farm was participating in five markets a week. They sold lamb by the piece under their newly acquired USDA label, as well as wool products and chicken and duck eggs. In addition to selling retail, they also began wholesaling lamb to restaurants. For a time, pastured poultry was included in the farm’s repertoire, but the Wilsons have since backed off that endeavor. Focusing on their flock of sheep (Border Leicester and Coopworth), Susie and Dan are set up to direct market everything the sheep produce. Grass-fed and raised without the use of hormones, growth enhancers or antibiotics, SuDan Farm proudly offers some of the best-quality lamb to be found. They also sell breed stock all across the U.S. and Canada. Susie grew up in eastern Iowa and remembers that she always wanted to have a farm from the time she was very young. She shares, “I’ve been a knitter since I was five and learned how to spin in 1980 and was very interested in some day having my own flock of sheep.” Around 1990, when she was in her 40s, 4 | Oregon Lifestyle Magazine
Susie went to sheep shearing school at Oregon State. “I had no animals; I was single at the time and my flock of sheep was basically fleeces in black plastic bags in my spare bedroom,” she says. Susie had become a nurse in 1978 and in 1986 she went to an advanced nurse practitioner school to become neonatal qualified. During the week she worked at Emanuel Randall Children’s Hospital in Portland and on the weekends, she was out shearing sheep. “I always won the contest for the most unusual hobby,” she declares. Dan grew up on a big ranch in northern California where they raised every kind of livestock and had many hundreds of sheep. “They had beef and dairy and pigs and hundreds and hundreds of ewes,” Susie relates. Dan hunted as well; he learned how to dress game and was very interested in that process. Wanting to learn more, he took butchering classes while attending college at Oregon State. He joined the Marines during the Vietnam War and flew F-4s for four years.

Susie confides, “He was at heart a farmer.” Today, SuDan Farm butchers lamb year-round, providing about 30 different cuts. Dan helps with the cutting every Monday at Century Oak Packing, filling orders and getting ready for Tuesday deliveries of fresh product to chefs, caterers and the like, such as OHSU and the Portland Greek Festival. Every Saturday throughout the year, the couple can be found at the Portland Farmers Market at PSU, “the biggest, baddest farmers market in Oregon!” Susie says. GORGEOUS VIEWS WORTHY OF THE DRIVE
H
iking is a favorite pastime for many of us here in the Northwest. Not only is it a chance to enjoy this beautiful region of the country we live in, to commune with nature, but it’s also a fantastic way to sneak in some exercise without feeling like it’s a chore. And because trails come in all shapes and sizes, it’s something most of us can do. Certainly, there are considerations to be made. Mood, availability, and level of fitness/ability all come into play, but relatively speaking, hiking is one of the easiest and cheapest ways to get the blood flowing. For those looking for the perfect day hike (late spring through early fall), one that requires a decent chunk of time and at least a moderate skill level, there are few trails in the area that are more enjoyable, diverse and rewarding than Ramona Falls. Tucked into the west side of Mount Hood along the Upper Sandy River near Rhododendron, Ramona Falls Trail is a 7.1 mile loop that cuts through the forest, wanders past the titular falls, and at one point, even connects to the famed Pacific Crest Trail. For the average hiker, it takes a little over three hours to complete the loop, so make sure to wear appropriate footwear and take some water and snacks. In fact, like any hike, it never hurts to go prepared with emergency essentials. At the outset, you will be crossing the

Sandy River over a “footbridge” made of logs. Depending on how high and fast the river is flowing, this crossing can be dangerous. Be smart, use caution, and don’t cross after a heavy rain. But once you get past that, the rest of the trail is only moderately difficult (more due to the length than the terrain), and the diversity of the terrain alone is worth the trip. The parking area and trailhead are located in The Old Maid Sand Pit, an eerily barren, rocky, alien landscape. It’s an odd start, to be sure, but as you progress you will find other areas of the hike that are so lush and green, carpeted with moss and toadstools in such a whimsical manner, that you’ll think you wandered into the Hobbit’s shire. The crowning jewel, the falls themselves, are also a sight to behold: 120 feet tall, and almost as wide, rivulets of water spreading out and cascading over multiple crags and shelves of rock like marbles in a giant Pachinko machine. This is a popular hike with a lot of foot traffic. It’s highly unlikely that you will be alone on the trail but it’s well worth the trip regardless. There is plenty of room under the canopy of trees for everyone to sit and enjoy the falls, but as always, be respectful of others and don’t forget to pack out everything you pack in. At the end of this one, you will likely feel it in your muscles, but you will also feel refreshed and revitalized, ready to take on the world. Bring your dogs too, provided they are on a leash!

I
n the vast and diverse tapestry of what we refer to as the human experience, the almost singular language which transcends boundaries of race, ethnicity, and cultural background is music. In profound and inexplicable ways, it acts as a unifying force – a catalyst for emotional expression and connection that evokes harmony among even the most dissonant of forces. The bands who find their audiences, and especially those who endure over time, are the ones who possess artistic integrity, who refuse to follow trends, but instead follow their muse, wherever it might take them. Portland based Fruition is just such a band. They are the real deal. With genuine authenticity, Fruition has steadily grown and expanded their sound since their debut album in 2008. Subverting genres, they have explored a variety of textures and musical soundscapes, releasing a slew of consistently strong albums which, while running the gamut of styles, still manage to maintain the sound of Fruition. The History of Chocolate By Robert Matsumura, Contributing Writer
W
hen we hear the word chocolate, most of us picture a bar, ice cream, baked goods, or a confection of some type. Typically, we think of eating chocolate, not drinking it, and a sweet taste is usually associated with it rather than a savory one. However, for approximately ninety percent of chocolate’s extensive history, it was primarily a beverage, and sugar didn’t figure into the equation at all. While the terminology can be a bit puzzling, most contemporary experts refer to “cacao” as the plant or its beans prior to processing, while the term “chocolate” refers to a product made from the beans. “Cocoa” is the term for chocolate in powdered form, though across the Atlantic, the British frequently use the word “cacao.” “Chocolate” has been traced by etymologists back to the Aztec word “xocoatl,” which described a bitter beverage brewed from cacao beans. The Latin name for the cacao tree,

Theobroma cacao, translates to “food of the gods.” Historians today estimate that chocolate has been around for at least 2000 years, but recent research suggests it may be even older. Although it’s difficult to establish an exact date for the origin of chocolate, it’s evident that it was valued from the very beginning. For many centuries in pre-modern Latin America, cacao beans were actually used as currency. A single bean could buy one tamale, while 100 beans could be traded for a good turkey hen, as noted in a 16th-century Aztec document. Both the Mayans and Aztecs considered the cacao bean magical and sometimes divine. It was commonly a part of sacred rituals of birth, death, and marriage. It wasn’t until Europeans discovered the Americas and became familiar with the native cuisine that chocolate made its entrance on the
world stage. According to legend, the Aztec king Montezuma welcomed the Spanish explorer Hernando Cortes with a feast that included drinking chocolate. Although chocolate didn’t initially agree with the European palate, once it was mixed with honey or sugar, it rapidly grew in popularity throughout Spain. By the 17th century, Europeans had embraced chocolate as a glamorous drink, reputed to possess medicinal, nutritious, and even aphrodisiac properties (rumors suggest that Casanova was a big fan of chocolate). But it remained primarily a drink of the upper class until the invention of the steam engine revolutionized chocolate production, resulting in chocolate becoming available in mass quantities to society at large. It was in 1828 that a Dutch chemist devised a method to create powdered chocolate by filtering out approximately half the natural fat (cacao butter) from chocolate liquor, pulverizing what
remained and introducing a mixture of alkaline salts to negate the bitter taste. This product, known as “Dutch cocoa,” eventually led to the development of solid chocolate. Joseph Fry, in 1847, is credited with the creation of the world’s first chocolate bar. Fry discovered that by adding melted cacao butter back into Dutch cocoa, the result was a moldable chocolate paste. Within twenty years of Fry’s discovery, the now famous company Cadbury was selling boxes of chocolate candy in Britain. Soon thereafter, another recognizable name, Nestle, pioneered the creation of milk chocolate in Switzerland. During the Revolutionary War in America, chocolate was so valued that it was included in soldiers’ rations in lieu of wages. Most of us today wouldn’t likely settle for payment in chocolate over dollars, but that doesn’t mean the humble cacao bean isn’t a potent force in the economy. In the U.S. alone, chocolate is a four billion dollar industry, and the average American consumes at least half a pound per month. In recent times, a chocolate revolution has swept across the globe, marked by a burgeoning interest in highquality, artisanal chocolates and sustainable, efficient cacao farming and harvesting techniques. Due to this shift in consumer tastes, large corporations like Hershey’s have developed artisanal chocolate lines by acquiring smaller premium chocolate producers, and independent chocolatiers have proliferated as well. This is an Oregonian classic. Based on the Oregon Coast, the story follows a group of young misfits as they embark on the adventure of a lifetime. Following an old treasure map made by the legendary “One-Eyed Willy, ‘’ the kids stumble upon more hidden mysteries than they anticipated. Follow the traps and treasures featured in this movie. The fun adventure comedy is filmed and based in Astoria, Oregon, and other scenic locations, including the Goonie House and Haystack Rock, that are popular today. The film has a run time of 114 minutes, and is rated PG.
One Flew Over the Cuckoo’s Nest (1975)
Based on the book by Eugene local Ken Kasey, this movie follows Randle McMurphy as he’s sent to an Oregon work farm. In a purposeful attempt, McMurphy proceeds to get himself sent to a mental institute. Quickly befriending the other patients, there is only one true rival in his experience. In a battle of wills against Nurse Ratched, he continues to find himself in and out of trouble. This thriller/drama is shot all across Oregon, including Salem, the Oregon State Hospital and the North Oregon Coast. If you enjoy this film, check out the prequel series from 2020 created by Evan Romansky. The film has a run time of 133 minutes, and is rated R.

Star of the show, Number 5, is a Cold War military robot shocked to life during a demonstration of his abilities. The newly living machine finds himself escaping the NOVA facility and entering the outside world, where he soon meets Stephanie Speck, making a friend to teach and explore the new world with him. Together they try to evade the NOVA agents looking to recover and dismantle him. Check out this great film for any lover of history or unlikely friendships. The film is 98 minutes and is rated PG.
