SCHMIZZA PUBLIC HOUSE

MORE THAN A PIZZA PARLOR

C

laude DaCorsi has been managing restaurants and bars for over 25 years. He was running things at the Double Aught Ranch in Canby when he was inadvertently introduced to the CEO of Pizza Schmizza. Claude took an immediate interest in the Schmizza model, and after wrapping things up in Canby, he and his wife Hannah (an Oregon City native) decided to buy into the franchise. They built and opened their first location in Gresham, their second in Wilsonville last year, and their 3rd location opened in Oregon City this summer, and what a welcome addition it is! Schmizza Public House in Oregon City has been doing great since opening this past summer. It’s difficult enough to open a new restaurant, but during a worldwide pandemic, it seems nigh on impossible. Claude is confident in the power of the brand though. He’d never owned a franchise prior to Schmizza, but he truly believes in their product, and the support he’s received from the surrounding communities has been incredible. The Schmizza brand has a significant presence in the Portland Metropolitan area. Most of us have enjoyed the Schmizza experience at one point or another, and

if you’ve visited them in multiple cities you’ll know that there can be some significant differences between one location and the next. According to Claude, they actually have 3 different restaurant styles: the standard Pizza Schmizza, the Pub & Grub, and the Public House. The standard location is focused on the pizza-by-the-slice concept, while the Pub & Grub has an expanded menu which includes sandwiches, pastas, and alcohol. The Public House, however, is the bad boy on the block, including a full menu, 30+ beers available (on tap, bottles and cans), and seated dining for a more inviting atmosphere and dining experience. Oregon City’s location is a Public House, so you get the deluxe treatment here. For those wanting the classic pies the brand is known for, you should understand that this is not any old run-of-the-mill pizza. The New York style, thin-crust dough is hand-tossed every day, not frozen, with Parmesan added for additional flair! They use proprietary blends in the dough, the sauce, the cheese, and the marinades used on all of their meats. Much of the food you order here you literally cannot get anywhere else, and because they source locally whenever possible they support local businesses while keeping their flavor profiles unique to the region. Schmizza is known for their unique combinations of pizza toppings as well. While they don’t have it available right now (due to COVID-19), you’ll have to remember to order the Alligator Pie once it’s available again - it’s made with real alligator sausage! They’ve also been known to throw on figs, potatoes, broccoli, and any number of unusual toppings to keep things interesting. Many of the

combinations have been inspired by customers in the past, and Claude is trying to bring that back around. Feeling thirsty? They maintain at least 30+ beers (on tap, bottles and cans). They’ve collaborated with Fearless Brewing Company in Estacada to bring you their four “house beers,” which will always be available on tap. Those are: Thor’s Hammer IPA, Loki Red Ale, Clackamas Pale Ale, and either the Fearless Scottish Ale or Fearless Porter. At any given time, 90% of the beers on tap are local. Pizza and beer might be expected at a Public House, but here’s a surprise for those with more refined tastes: They will also be serving martini flights! According to Claude, who is quite the expert on bartending, the trick is knowing how to use bitters. We are currently in the midst of a bitters movement! Bitters have incredibly powerful and complex flavors, and with only a few drops can completely alter the taste of any drink. Craft beer is all the rage in Portland, but with bitters Claude and his team are making craft martinis. Liquor flights are all about introducing people to unique flavors they may have never tried before, and they’re very excited to introduce you to their new concoctions! Food specialties at this location include Frikin’ Chicken Pasta, Dipsticks, Chicken Parmigiana Sandwich, Brussel Sprouts, Seared Green Beans, and Street Tacos. Exclusive to the Oregon City location, you’ll find the Nashville Chicken Sandwich (crispy buttermilk-breaded chicken, house-made Nashville sauce,

remoulade sauce, garlic and dill pickles) and delicious Cauliflower Bites! So hurry over today and get your fix! Grinch Cookies Despite their name, these cookies are about as festive and holiday-friendly as can be! These soft and chewy cookies are colored Grinch-green and decorated with milk chocolate candy pieces. INGREDIENTS

1 C unsalted butter softened 1 2/3 C sugar 2 large eggs 2 teaspoons vanilla extract 3-5 drops green food coloring 3 1/3 cups all-purpose flour

2 teaspoons cornstarch 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1 ½ cup red and green M&Ms plus additional ½ cup

DIRECTIONS

1. Combine butter and sugar in a large bowl and use an electric mixer to beat until well-combined and light and fluffy (about 1 minute). 2. Add eggs, one at a time, beating well after each addition. 3. Stir in vanilla extract and food coloring, until well-combined. 4. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. 5. Set mixer to low speed and gradually stir dry ingredients into butter mixture. Add ingredients and stir until well-incorporated. 6. Fold in M&M candies and cover bowl with plastic wrap. Chill in refrigerator for at least 30 minutes. 7. Once dough has finished chilling, preheat oven to 350°F and line a cookie sheet with parchment paper 8. Drop cookie dough by heaping 1 ½ Tbsp-sized scoops onto

prepared cookie sheets, for perfectly round cookies, roll dough in your hands into a smooth ball. 9. Bake on 350°F for 11-13 minutes. If desired, gently press additional M&Ms into the tops of each cookie for decoration while they are still warm. 10. I

t’s beginning to look a lot like Christmas at the Clackamas County Fairgrounds and Event Center as the Winter Fair returns for its sophomore campaign — though the event itself will look rather different from last year’s iteration. While the inaugural Winter Fair was a drivethru event made necessary because of statewide COVID-19 restrictions, this year’s edition will be a full walk-about experience. “Last year, we went with a drive-thru rendition for COVID protocols, and this year we’re excited to make it a walk-around event,” Fairgrounds Marketing and Event Coordinator Tyler Nizer says. “We’ve made an experience that can still be safe in the current environment, while bringing something that families can really enjoy.”

“We’ve been working on this project for years actually. And last year, with the community needing more drivethru options, we were able to make it happen. It probably wouldn’t have happened last year otherwise.” The layout will be different this year as well, with many additions and new features aimed at better facilitating a laid-back pedestrian experience. Entry will be by the Red Gate, which will kick off with a 12-foot-tall ornament and one of the highlights of last year’s Winter Fair: a 166-footlong tunnel of cascading, multi-colored twinkles. Beyond that will be a huge light curtain across one side of the Ely Arena, which can be customized to display almost anything — including custom messages. Lauren says that one package the fairgrounds offers is aimed at popping the big question. “Can you imagine ‘Will you marry me?’ in huge letters on the side of Ely?” Lauren asks. “That’s one thing we were really passionate about adding this year.” The fairgrounds worked with a local light vendor to craft the rest of the Winter Fair experience, which boasts more than 200,000 lights. The event concludes with a Santa’s village designed by local resident Stephanie Anderson, whose home on Northwest 14th Avenue is particularly noted for its elaborate Halloween and Christmas displays. The Jolly Old Elf himself will visit the village to talk and take photos with children every night the fair is open (bring your camera!).

Though the Winter Fair debuted last year during the pandemic, Lauren Humphreys, member of the Clackamas County Fair Board and one of the lead organizers of the event, said it had actually been in the works long before. “I think this was just an awesome thing that we could offer,” Lauren says. 14  To Advertise With Us, Call 503.825.2111

The Clackamas County Winter Fair kicks off November 26th — the day after Thanksgiving — and runs every Friday and Saturday through Christmas Eve, as well as December 16th, 19th, 22nd and 23rd. Hours are 5-10 p.m. The festival is being especially geared toward families this year, with free parking and no charge for children 10 and under. Tickets are $15 for adults and children 11 and older. The winter solstice is the shortest day and longest night of the year in the Northern Hemisphere. It's marked by the point at which the North Pole is at its farthest from the sun during its yearly orbit around the sun. ave you ever stood in the wine aisle of your local grocers during the holidays, baffled as to the appropriate wine for meals featuring poultry, beef, pork, or seafood—not to mention the array of appetizers and side dishes? Our guide below will help simplify this process with six wines flexible enough to compliment your holiday cuisines from autumn through winter.

Sauvignon Blanc

Also referred to as “Sancerre” in France, this medium-light bodied white wine is a winner. It features a crisp, herbal profile perfect for turkey, goose, chicken, or seafood.

Pinot Noir

With its bright acidity and versatile nature, Pinot Noir is one of the best choices for the holidays. It excels across the board with poultry, pork, and hearty beef dishes. The Pacific Northwest and California offer many solid choices with fruit-forward characteristics sure to please even the most discriminating palates.

Zinfandel

A more full-bodied white, Chardonnay is an excellent partner to fish or roast poultry. Likewise, Chardonnay pairs beautifully with beef, should you have guests who prefer to drink only white. In this case, opt for an oak-forward Chardonnay, as it will enhance the robust flavors of the beef.

Red Zinfandel has long been considered a great Thanksgiving wine for its ability to compliment turkey while also blending well with cranberry sauce and other sides. Zinfandel also performs admirably with beef and pork, should your holiday dinner include a roast or baked ham.

Chardonnay

Not as well-known as other whites, Viognier is a fantastic partner to roast turkey and other poultry dishes. Rounded in body with undertones of honey and spice, some of the best Viognier comes from the Rhone region of France, as well as Australia and South Africa. Like Chardonnay, Viognier can also play well with beef.

Cabernet Sauvignon, the “King of Reds,” is the ultimate pairing for beef. Cabernet’s dark, full-bodied character, often reminiscent of currants and black cherry, enhances the hearty flavors of such entrees as prime rib or crown roast.

Syrah/Shiraz

Another fabulous red wine to pair with beef is Syrah (known as Shiraz in Australia). This luscious red bursts with complex flavors from pepper to cherry, smoky to floral. Syrah, made in France’s Rhone Valley, is generally known more for its elegance and complexity, while Shiraz is bolder and more fruit-driven. If beef is on the menu, you can’t go wrong with Syrah.

A

s the holidays roll around, entertaining family and friends takes center stage. For many of us the holiday cheese board is a star player in the food festivities, yet with the plethora of choices available at local markets, assembling it can prove a bit daunting.

Basic Strategy

For presentation purposes, select cheeses of different colors, shapes, and sizes. When calculating the amount of cheese to purchase, three ounces per guest is a solid guideline. Thus, if you’re serving three types of cheese and entertaining 12 guests, you should buy at least 12 ounces of each type. If other appetizers will be served, the amount of cheese can be reduced to two ounces. In general, three varieties of cheese—a hard, a semi-hard, and a soft—will provide ample variety for most events.

Hard Cheeses Aged Gouda

This Dutch cheese is always a strong player on any cheese board. If you prefer a sharper, nuttier flavor with those delicious salty bits, opt for a Gouda aged at least 10 months. Many of the premier Goudas will be aged up to 18 months or more. Top brands include Beemster, Parrano, and Rembrandt.

Manchego

A full-bodied cheese made from sheep’s milk, this Spanish cheese from the La Mancha region is creamy yet nutty with toasty nuances. Aged Manchego has a wonderful granular texture much like aged Gouda, and will be a superb compliment to fruit or meats such as prosciutto, salami, and capicola.

Cheddar

A good aged cheddar is always a welcome member of any cheese board. American, English, and Irish cheddars are all fantastic choices, providing slightly different characteristics. In general, the longer a cheddar is aged the sharper the flavor. Tillamook, Kerrygold, and Cabot are all fine choices.

Semi-hard Cheeses Fontina

Originally from Italy, this versatile cheese features a sweet and pungent character nuanced with tones of butter and roasted nuts. It is rich and creamy with an intensity of flavor that increases with age. Sartori, Stella, and Boar’s Head are all excellent brands.

Comté

One of the most popular French cheeses, this creamy, mild cheese is a pleasing addition to any cheese board as it blends well with bolder flavored meats and preserves while adding a luxurious undertone. Jura Flore, Fort Rousses, and St. Antoine are all quality brands.

Soft Cheeses Brie

Soft and creamy, with a musky complexion, this French cheese is spreadable and delicious slathered on bread or crackers. Try it warmed and melted. Excellent brands are President, La Bonne Vie, or Dietz and Watson. Marin French is a quality domestic brand.

Camembert

Another soft spreadable cheese that hails from the Normandy region of France is Camembert. Not quite as creamy as Brie, it is less pungent, and pale yellow in color. Often celebrated as the most popular cheese of France. For festive additions consider cranberry cheeses such as Wensleydale or Celebrity. Crave truffles? Education Pioneers

History of Oregon City School District By Tyler Francke, Active Media Contributing Writer

T

he history of Oregon City is rife with firsts. The community was the first city west of the Rocky Mountains to be incorporated in 1844. One year earlier, its first school had been established on the top floor of The Main Street House, a hotel owned by Sidney Moss. Although it was in operation for less than a year — and a school operating on the top floor of a hotel sounds more like a premise of a made-for-TV movie than something that really happened — it does have the distinction of being the first known school in Oregon City, and one of the first schools west of the Mississippi. Education was important in those early days, as settlers recognized the need for the next generation of business owners, trades people, politicians, workers, and other professionals to be as educated as those living in the eastern and central United States. But a nationwide, or even a statewide, system of funding and standards for formal education was still decades away from existence. In the small, rural towns and trading stops that were popping up all over the Oregon Territory, it often fell to the community members themselves to establish their own schools — usually a settler’s home, general store, or the town church — until a schoolhouse could be built. Residents would build their own schoolhouse, pay for a school teacher themselves, and provide their own school supplies. The earliest schoolhouses were little more than a one-room log cabin with a wood stove, rough-hewn desks and benches. The floors were dirt, the windows were usually covered with greased paper, and the students worked by candlelight during the dark days of winter. Joseph Lane, a general in the Mexican-American War, who became the first Governor of the Oregon Territory appointed by President James K. Polk,

sent a message to the early legislators in 1849 recommending a system of “free and public schools.” Shortly after in 1850, Reverend Dr. George Atkinson recommended building an all-female school in Oregon City, on land donated by Oregon Founding Father John McLoughlin. Money was gathered for construction by many families in the area, including then Gov. George Abernathy, who loaned $6,000 to the project. By 1851, construction had reached more than $10,000, although a section of the interior was left unfinished due to economic shortfalls. Due to ongoing financial problems, the school eventually became the property of Governor Abernathy by virtue of the still-unpaid loan. The Methodist Episcopal Conference bought the building and land in 1856, reopening it five years later as the Oregon City Seminary, a newly co-ed school headed by Rev. Dr. George Atkinson. As some of the few stable and well-funded institutions in the Pioneer West, churches and religious leaders were often instrumental in establishing, maintaining, and expanding schools in those days. Atkinson himself was a tireless force in the education of Clackamas County children and families, opening a total of 88 schools in the area in his lifetime. In 1853, Sidney Moss came back onto the scene of education in Oregon City, and he was a colorful and instrumental figure in his own right. Born in Bourbon County, Kentucky in March 1810, Sidney Walter Moss was a stonecutter by trade who arrived in the budding town of Oregon City in 1842. He surveyed the town for Dr. McLoughlin, filed its first plats, and was the state’s first recognized novelist. Moss established the Main Street House on the grounds
