rior to being a restaurateur, Matt Primbs was a high school teacher. Then in 1995, he opted for a career change. He bought a restaurant in McMinnville, launching his new life as owner and operator of Sandwich Express. It was a good decision, as the place is so popular that you can pretty much count on long lines at the drive-thru during the lunch hour.

all baked in-house. There are plentiful choices from both a cold deli lineup and a hot sandwich menu.

Chances are good that all those people ahead of you in line are returning customers who know a good lunch when they taste it. Matt enjoyed such great success with his McMinnville location that he decided to replicate it, and twenty years ago he opened a second location in Newberg. Both of those locations have done so well that in 2008 he was able to expand to Salem as well.

Most people will agree that the key to a great sandwich is the bread, and at Sandwich Express that is a point of pride. “We make all of our bread from scratch every night,” Matt says. “No mixes or artificial dough conditioners. We started off with just white and wheat but have added sourdough, dark rye, and cheddar jalapeno through the years.” The cheddar jalapeno is their most recent addition, but it’s gaining popularity quickly.

If you’ve never eaten at Sandwich Express, you need to get in there asap - your tastebuds will thank you! Plan on spending some time with the menu, as there are a lot of options. With the addition of breakfast to the menu a few years ago, Sandwich Express now offers nearly thirty different sandwiches on a variety of breads that are

The sandwiches aren’t the only things worthy of acclaim here though. One of customers’ favorite discoveries at Sandwich Express is that the fries rank among the best in the area, and you get the choice between beer-battered or garlic fries. “Our new garlic fry is a steak-cut fry which has become very popular,” Matt says. “You can’t get steak-cut

“It’s a lot of work to make the bread, but it is well worth it.” says Matt. Sandwich Express also recently started offering gluten-free bread, which is the only kind not made on site.

interior dining available that features a popular attraction for kids. Circling the perimeter of the restaurant just below the ceiling, and occasionally vanishing into tunnels, is an electric model train. It makes for a nice distraction while waiting for your order, and young and old alike enjoy watching it. According to Matt, when running all day it travels over ten miles! Matt and his team have earned a reputation over the years for being team players and good citizens when others are in need. They’re often participating in fundraisers for youth clubs, graduation night and other non-profits, and when people fall into harm’s way, Matt looks for a way to help, both locally and beyond.

fries at other drive-thrus in town because they take longer to fry. The quality is worth the extra minute-and-half wait.” You’re not going to want to forget the other sides either; salads are a huge part of the Sandwich Express experience. “I truly believe there are none other in town that are better for all that you get on them at an affordable price,” Matt says proudly. We offer ten different salads and we don’t skimp on portion size.” Their chili and rotating selection of daily soups are also a draw when the weather turns cold.

“We have done several very large fundraisers for big disasters like Hurricane Katrina and Haiti, and local volunteer firefighters,” he says. “These bring in thousands of dollars for people in need.” Most recently, another big fundraiser was held to raise money for people who lost houses and were displaced due to the Oregon wildfires. Matt can usually be found running the McMinnville location, and his wife Amber manages the one in Newberg. For them, this business is a passion project and they absolutely love their work serving the local communities in Yamhill County. “Even after 25 years, I still look forward to going to work,” Matt says. “I love my crew, and they are like my second family.” Sandwich Express is located in McMinnville at 711 NE Highway 99W; Phone: 503-472-3500. The Newberg Downtown Coalition By David Bates

Active Media Contributing Writer and are now largely the purview of an advocacy group, the Main Street Center. Newberg has started working with them, along with partnerships in state government, and it has already paid off. There’s visible evidence of the partnership in a grant that paid for the restoration of the building occupied by Chapters Books and Coffee. “That was a cool renovation, because it wasn’t just an updating of the building,” Britta says. “It was bringing it back to it’s historic roots, making it look like it did before. It’s the oldest building downtown, I believe 1890s or early 1900s.”

N

ewberg was a little late to the Main Street revitalization game, but better late than never. In only ten years a largely volunteer-run organization called the Newberg Downtown Coalition has emerged as an active and important player in promoting and (literally) rebuilding Newberg’s retail core. “The Chamber of Commerce does great work in our community for all of Newberg and the greater Chehalem Valley area, but I think people realized that the downtown needed some help,” says Britta Stewart, the associate director who has been working with the group for a year and will take over as director this January. Downtown revitalization projects ramped up in the 1970’s thanks to work by the National Trust for Historic Preservation,

Another grant from the National Parks Service that was announced this summer will, starting early in 2021, help pay for some interior renovation of a beloved downtown landmark: the historic Cameo Theater. The building will be getting new seats, new drapes, and possibly some facade work. One of the key messages the coalition tries to get out is the variety and accessibility to be found while patronizing downtown businesses with events like First Friday, when residents can enjoy wine tastings, tap takeovers, and live music. “It’s a great place to shop,” Britta says. “That sounds gimmicky, but it really is.”

Britta also explains how the First Friday events (which are not happening right now because of the ongoing health concerns) help showcase the vibrancy of downtown Newberg and build a sense of community. “One of my goals for the organization is to foster that throughout the rest of the week and the rest of the month, so people know these shops are there and that they’re just as welcoming on a Wednesday as they are on a Friday.” Of course, that was pre-pandemic life. When COVID-19 hit, the group had to pivot. “We changed our whole model of operation,” she says. “All of a sudden we couldn’t do events. And the events that we can do now look very different from the events we could do before.” From March through midApril, Britta and Executive Director Molly Olson worked to be an information center for downtown businesses by following the news, reading the Oregon Health Authority updates and new regulations, and then helping business owners sift through it all so they could continue to operate. “We did some online marketing and really pushed the take out food option for people, how people could support businesses in the face of closures.”

The coalition also plunged ahead with COVID-adapted plans for the Farmers Market, which runs May through September on Wednesdays. “This year, we totally revamped that entire event and rebranded as the Newberg Wednesday Market and that has pretty much consumed most of our working hours since we opened in May,” Britta said. “That was a huge shift, and we were very fortunate to be able to keep that open.” The market drew as many as 50 vendors and 600 to 1,000 customers each week. Using that same model, the group also has a holiday market planned for October 17th, from 10am to 4pm. They’re currently looking for local vendors interested in selling handmade goods, food and art. Success doesn’t come overnight; it takes lots of work, determination, and usually some help. Britta credits Molly Olson, the nonprofit group’s board of directors, and all the volunteers and businesses that have actively supported the coalition’s work for making their achievements possible. “They all deserve a shout-out,” she said. You can find the Newberg Downtown Coalition at 210 N Blaine Street in Newberg. Call them at 503537-1010 for more information on what they’re doing, or visit their website at www.newbergdowntown.org.

ART & CULTURE

MEET THE ARTIST

WES CROPPER W BY DAVID BATES, ACTIVE MEDIA CONTRIBUTING WRITER

es Cropper remembers being a kid, hunkered down with crayons and coloring books, in which the unstated assumption is that the colorist will stay inside the lines. “I didn’t do that so much,” he recalls. Today, Wes has control of the color and the lines, and he doesn’t necessarily use paper or canvas as his starting point; Wes is a professional digital artist and teacher.

After graduating from West Linn High School in 1975, Wes started selling his work in college. He earned a Bachelor of Arts degree from Portland State University in graphic design and went on to build a successful commercial design practice, doing work for software manuals, magazine ads, and other jobs for small businesses. Not yet thirty and working out of a studio in the McLean House at the dawn of the era of desktop publishing, Wes remembers discovering Adobe Photoshop and later, Adobe Illustrator. “It was amazing to me,” he recalls. “I thought, this is a game changer. It’s not messy, and I can do it anywhere.” Eventually he earned a Master of Fine Arts/New Media from the Academy of Art University in San Francisco, and started working with moving images, 3D animation, video production and web design. He also started teaching, which got him to realize “it would be a shame not to get back to my own work.” Earlier this fall, his personal work was featured at the Chehalem Cultural Center in Newberg as part of the 18  To Advertise With Us, Call 503.825.2111

Art Harvest Studio Tour show. Previously, his dazzling, colorful abstractions have appeared in galleries around Oregon, including The Art Center in Corvallis. Created on a computer screen, they defy description, and yet there is usually something familiar to be found in them. “I really like some basic themes,” he says. “I’d say representations of journeys, being on the road and looking for answers. I tell my students, if you’re going to do abstraction, you need to make your viewer curious, but give them some familiarity at the same time.” Though some artists insist on the primacy of learning to draw on paper, Wes disagrees with that. And he’s found that young people take easily to creating digitally. “Kids have an amazing thirst for anything digital because they’re just inundated with it.” Of course, the final product is ultimately printed on paper. The large, high-resolution images are produced on digital printers using archival ink, so they won’t fade over time. Wes has no plans to abandon prints, but lately he’s been exploring new forms. He lives on an acreage that has several fallen black walnut trees, and he’s looking at them artistically. “Wood-working, fibers… I love texture,” he says. “That’s where my mind is right now. This wood is gorgeous.” Chances are good that if that inspiration materializes, you’ll find pictures at Wes’s Tumblr site: http:// provenmedia.tumblr.com. You can also read more about Wes and his work at www.theartcenter.net/wes-cropper.

SPOTLIGHT

Chehalem Insurance Associates By David Bates Photo By Teresa Tingley

O

m Sukheenai is the founder of Chehalem Insurance Associates, which has strived since 2001 to provide local insurance and financial planning services with the highest integrity. A native of Thailand, Om and her husband dated across the ocean for years before marrying in 1995 and moving to live in the United States. Though her first field was medical technology, where she worked in upper management, she gravitated to insurance in the late 1990s. “I decided to start my own agency and work from home while taking care of my baby daughter,” Om said. “In 1999 we moved from SW Portland to Chehalem Mountain in Newberg, as we prefer the suburban country lifestyle. Newberg is a beautiful place to grow, raise family, and run a business. The community supports each other in a friendly manner.”

rewarded by seeing smiles on the faces of new clients who walked in looking uncertain and frustrated.

Chehalem Insurance is a small operation, but Om takes pride in ensuring that it is able to provide “powerhouse” personalized service that can compete with and even outperform larger agencies. “We focus on follow-up, follow-through and superior service,” she said. “We have 90 percent client retention rate. We are a positive-attitude team, and we’re fun to work with.”

On top of running a successful small business, Om has been busy in both industry and local civic groups, including the Rotary Club of Newberg (where she’s served as President), Women of Willamette, the Chehalem Valley Chamber of Commerce, the Asian Pacific American Chamber of Commerce, and the National Association of Financial & Insurance Advisors.

They are also far more than just a health insurance agency. Om sees her mission as being a resource for people who need information, and Chehalem Insurance can consult with clients on Life Insurance, Annuities, Retirement Planning, Employee Benefits, Health, Medicare, Disability Income Protection, Ancillary Benefits, Social Security Benefits, IRAs, Roth IRAs, and Roth IRA alternatives.

Currently, Om is promoting Medicare annual enrollment period, which runs from Oct. 15 through Dec. 7th, and also the enrollment period for individual and family health OEPs from Nov. 1 through Dec. 15. Working along with Om are her three assistants: Chloe Wilkinson, Natsuda Weber and Gabi Quinteros, who speaks Spanish. Call them to inquire about no-cost consultations.

“The mission is being an educational resource,” she said. “Being an advisor who will guide and walk along with the clients and make complex, daunting insurance issues simple and easy to understand so they can make the right decisions.” By spending time with clients in a casual, no-pressure environment, Om and her staff are

MEET THE DOCTOR

Dr. Zoey Stoumbos of Oregon Eye Specialists by David Bates

D

r. Zoey Stoumbos practices comprehensive ophthalmology for Oregon Eye Specialists in Newberg, and patients might be intrigued to know that she started her career quite young. “My mom was an ophthalmologist, so I was exposed to ophthalmology and medicine in general,” she recalls. “I was able to go on some medical mission trips with her to Mexico and Honduras, starting around age ten. So that was definitely an influential experience in my decision, to be able to see first-hand the influence.” When she was ten, it was basically a matter of tagging along, and maybe helping lead patients when it was time for their cataract surgery. But as a teenager, she was in charge of applying the dilating drops before they went in. She’s since practiced ophthalmology in Guatemala with Hospital de la Familia. It’s rewarding work, and she expects to continue making trips throughout her career. Born and raised in Portland, Dr. Stoumbos received her M.D. from Georgetown University, where she also did her residency. Following in her mother’s footsteps was an easy choice for her. “It’s a great fit between clinics and surgery and being able to take care of patients of all ages, to have long-lasting relationships with your patients,” she says. “It’s a great field for making a positive impact on people.” Her speciality is glaucoma, an eye condition that results when the nerve that connects the eye to the brain is damaged. Among older patients, it is a leading cause of blindness. That’s definitely on many patients’ minds when they come in. Dr. Stoumbos says many patients diagnosed with glaucoma fear they will go blind, but the news is no longer so bleak. “Just in the last few years, we’ve had medications that have been approved for treating glaucoma. It’s been called the Renaissance of glaucoma surgery because we have a lot of new technologies coming out. So we do have a lot of options for preserving vision.”

28  To Advertise With Us, Call 503.825.2111

While there’s no guaranteed way to prevent glaucoma, early screening is essential. “The big thing is catching it early, especially in people whose family has a history of glaucoma,” she says. “Having screening exams is very important, because if they do have it, we can catch it.” Dr. Stoumbos splits her time between the clinic at St. Vincent’s Hospital and the one in Newberg, where she’s available on Tuesdays. “It’s been great, I really like Newberg. I’ve spent time here before just visiting, but I really enjoy the patient population there. It’s a very tight-knit community, and of course the vineyards and the food scene around Newberg are very fun to explore as well.” When she is not working, Dr. Stoumbos enjoys spending time with her husband and their two children. A Portland native, she loves the outdoor recreation offered by the Pacific Northwest, like hiking, gardening, and camping. She also participates in church activities, and the family shares their home with tropical fish and two cats.

TIPS TO CARVE THE PERFECT PUMPKIN By Courtney Smith elieve it or not, everyone can be an artist when it comes to pumpkin carving, but it is harder than it looks. These 11 tips will have your gourds looking and smelling good the entire trick-or-treating season.

B

4. Scoop out all the pulp (and then some).

1. Start with the right pumpkin.

5. Sketch out your design on paper first.

Choose one that’s fresh, with a sturdy stem, no bruises, and a flat bottom so it won’t roll while you carve.

You can buy a special “claw” for pumpkin gutting, but an ice cream scoop will do just fine. Thin the inner wall of the “face” area to 1¼-inch thick, so it will be easier to pierce the shell.

2. Cut from the bottom, not the top.

Draw your art to size then tape it to the front of your pumpkin and use a fork or pencil to poke holes along the lines you want to carve.

3. If you do carve from the top, cut out the lid on an angle.

It’s easier to create features when the face is gazing up at you. It is suggested to use a serrated kitchen knife or an X-Acto knife for carving.

Cutting your “lid” from the bottom of the pumpkin helps prevent the sides from caving in later.

This way it won’t drop inside the pumpkin when you replace it, like it would with a straight upand-down cut. A boning knife should work well for this.

6. Try holding the pumpkin in your lap.

7. Start by making simple rough cuts.

If you get the big pieces of pumpkin out of the way first, you can go back and clean up the edges of your design later.

8. Use your scraps creatively.

Make a tongue, pipe, or hair accessories out of a discarded piece of pumpkin shell, for example.

9. Keep your pumpkin fresh.

Spread petroleum jelly on the cut edges to seal in moisture. If your pumpkin still shrivels a few days later, you can revive it with a facedown soak in cold water for up to eight hours.

10. Create a chimney.

First, leave the lid on for a few minutes while the candle burns. Then make a small hole where the lid has blackened. Or, save yourself the stress and go with battery-operated votive instead.

11. Sprinkle cinnamon inside the lid. That way, when you light the candle, your jacko’-lantern will smell like a pumpkin pie. Yum.

The History of

George Fox University

Pacific College. Students at the time had the option of a day’s buggy ride to reach other colleges in the state, but they would have had to travel back to Iowa in order to attend another Quaker college. That first year, 15 students attended the school. One term’s tuition was $8 to $12, which would be about $230 to $345 in today’s currency. The college’s first catalog described the mission this way: “The object of this college shall be to give a thorough training in the Arts, and Sciences, and to teach those subjects ordinarily coming in a course of college training. It shall strive in every possible manner to spread Christian culture.”

ven before the City of Newberg was platted in 1883, the seeds that eventually grew into George Fox University were planted. Those seeds flourished, and today the Christian university nestled in the heart of Newberg has more than 4,000 students and around 200 full-time faculty, and is a major educational, economic and cultural force in the community.

The evidence of those seeds can be found in a journal entry written by William Hobson, a native Iowan who sought a place in the Pacific Northwest where he and his fellow Quakers could settle. On May 26, 1876, he made a notation about “the grubby end of the Chehalem Valley.” He wrote: “I have been impressed… that some settlements of Friends ought to [be] formed in these parts… and make it a garden of the Lord.”

From the beginning, courses were described as both classical and scientific, with students (both men and women) choosing between a bachelor of arts or sciences. Along with scripture courses every year, freshmen enrolled in geometry, higher algebra, Latin, general history, English history, English and botany. As juniors and seniors, they would also take zoology, psychology, chemistry, logic, economics, physics, Greek and German.

It began with a tiny group called Friends Pacific Academy only two years after Hobson wrote those words, and in 1891 it became

The college was originally built on “a beautiful lot of 4 acres” that was bought for $200 from a local farmer between Third and Fourth Streets in south Newberg, but the transformation into a full college required more space. They settled on an 18-acre site (the current location) and the move necessitated literally moving two entire buildings (those that would later be named Hoover and Minthorn Hall) and building basement walls. The job was accomplished by rolling the structures ten blocks on logs. The Hoover building was razed and rebuilt years later, but the threestory Minthorn is today the oldest building on campus.

They also had after-school activities, including football, basketball, track, and soccer, along with Christian associations (men and women each had their own), a drama club and several literary societies. The college also “distinguished itself with the best Oratorical record of all the state’s colleges,” according to a history compiled by Ralph K. Bebee. In the first 15 years of the State Oratorical Association, Pacific College won first place four times, and second-place three times. The school was off to a strong start, and over the years enrollment climbed. In 1925, 75 students signed up for classes. College leaders looked beyond the state’s population of roughly 2,500 Quakers to help bear the costs by creating an endowment. Levi Pennington served as Pacific’s president from 1911 to 1941, and he set his first budget for the college at $11,602, an amount he would cut by $3,000 the following year.

acknowledged in independent rankings to be among the nation’s top Christian colleges. Forbes magazine has ranked George Fox among the top ten “Best Religiously Affiliated Colleges” in the United States, and in the 2019-2020 schoolyear, Money magazine listed them among the “Best Colleges for Your Money.” Along with President Hoover, the university is proud to claim some other famous alumni and faculty. Miles Lowell Edwards, co-inventor of the artificial heart valve, studied there for two years. Alum Ken Carter, who played backcourt for the Bruins in the 1980s, won fame as a high school basketball coach who locked his players out of the gym one day with instructions to meet him at the library so they could get their grades up; he was played by Samuel Jackson in the 2005 film Coach Carter. And the late U.S. Senator Mark O. Hatfield was among several Oregon politicians who taught there.

Like most private schools, Pacific College was no stranger to financial difficulties as it continued to grow through the early part of the 20th century, but they grew nevertheless. The school also happened to achieve many milestones along the way, including producing a future U.S. President; Herbert Hoover was an early alumnus whose uncle, H.J. Minthorn, had served as the school’s first president. The postwar period was a transitional time for the university. In 1949, the school’s name was changed to George Fox College, after the Quaker founder. The school also faced rapidly climbing enrollment, necessitating more facilities. The growth enabled George Fox to win accreditation from the Northwest Association of Secondary and Higher Schools in 1959. In 1986, George Fox became the first college in the Pacific Northwest to offer degree-completion programs to working adults. A decade later, the university merged with another school, Western Evangelical Seminary, and officially changed its name to George Fox University. Naturally, the merger resulted in more students. For the first time, enrollment hit 1,000 students. Today, George Fox University is the second-largest private university in Oregon, hosting students from 35 states. It is regularly

As GFU nears the 130 year mark, it is worth looking back at the vision of its founders to provide a challenging educational experience and a community where students could deepen their faith. This focus on the whole person continues today in their “Be Known” promise, remaining as vibrant and relevant now as it was all those years ago. George Fox University is located at 414 N Meridian Street in Newberg. Visit www.georgefox.edu for more information. This article was written with information provided by George Fox, and found in the book “A Heritage to Honor, a Future to Fulfill: George Fox College, 1891-1991,” by Ralph K. Bebee.

DE N TA L FACTS HOW TO HAVE A TOOTH-FRIENDLY

HALLOWEEN I

CONFIDENT SMILE!

s thinking about Halloween candy and its effect on your children’s teeth enough to give you the chills?

Don’t despair - you can be mindful of your child’s health and still let them enjoy the special occasion, dentists say. The decay process in teeth works like this: The majority about 90 percent - of all foods contain sugars or starches that enable bacteria in dental plaque to produce acids. This attack by bacterial acid, lasting 20 minutes or more, can lead to a loss of tooth mineral and, eventually, to cavities. A child who licks a piece of hard candy every few minutes or sips a sugary drink is more susceptible to tooth decay because long-lasting snacks create an acid attack on teeth the entire time they are in the mouth. Thus, one approach would be to allow your ghosts and goblins to indulge in Halloween candy at mealtime instead of as a snack. Or choose the right kind of snack. Research from the Forsyth Dental Center shows that some sticky foods clear from the mouth faster than less sticky foods - posing a shorter acid attack on the teeth. Caramels, for example, dissolve more quickly than crackers, breakfast cereals, potato chips, dried fruit and bread. You can also try sugar free gum, or mints. Another option with Halloween candy is to allow snacking immediately after trick-or-treating, then throw out the remainder. But remember that depriving your child of Halloween treats will only make him or her want them more. Good dental health depends on more than just diet, if you are having trouble getting your children to brush their teeth check out the children’s toothbrush section. Snacks should not be served more than three or four times a day and should contribute to the overall nutrition and health of the child. Healthy snack choices include cheese, yogurt, vegetables, peanut butter and chocolate milk. Most of all, practice good oral hygiene by making sure your child brushes and flosses every day, uses fluoride toothpaste and visits the dentist regularly. HALLOWQine HALLOWEEN AMIDST QUAR ANTINE

A

T W E N T Y-T W E N T Y

by Jenna Preston, Active Media Contributing Writer

lthough walking around outside with masks on is par for the course these days, Halloween will probably need to be celebrated differently this year. Restrictions on social gatherings are likely to remain in place for several more months, and with many people reluctant to venture out or greet others at their front door, it’s time to get creative with your plans for this spooky holiday. Here are some ideas for unique and interesting ways to make this Halloween one of the best ones ever, while still observing all recommended guidelines and keeping your family safe. PUMPKINS ARE A MUST

If your local pumpkin patch is open, go pick out your pumpkins for this year, or get them from the grocery store. Carve your pumpkins into jack-o-lanterns or paint them with some scary designs. Don’t forget to roast those yummy pumpkin seeds when you’re done!

DECORATE YOUR HOUSE & YARD Find as many orange and black decorations as you can, or make some yourself and go to town like it’s creepy Christmas! For extra points, create some ambiance with scary music or sound effects.

DRESS UP

You may not be going out, but that doesn’t mean you can’t still wear a costume. If you’re the competitive type, set up a Zoom party with your friends and take a vote or have a judge decide which costume is the best.

MAKE SOME SPOOKY SNACKS

There are tons of recipes online for all sorts of crazy Halloween-themed goodies, from cute spider cookies and icky eyeball hors d’oeuvres to all kinds of witches’ brew cocktails. Pick out a few things to try and have some in theWith kitchen. 38  Tofun Advertise Us, Call 503.825.2111

HAVE A CANDY-EGG HUNT ... HALLOWEEN-STYLE

Just because trick-or-treating may not happen this year, that doesn’t mean you have to skip the candy! Pull out those plastic easter eggs and fill them with candy, then hide them around the house. To make it even more interesting, and scary, keep the house dark and use flashlights while hunting. (You can always skip the eggs and hide the candy itself if the pieces are individually wrapped.)

HAVE A MOVIE MARATHON

Pop some popcorn (maybe throw in some candy corn), and kick back for some Halloween entertainment! Whether it’s a lineup of terrifying horror flicks, seasonal classics like Hocus Pocus, or family friendly options like Scooby Doo and It’s The Great Pumpkin, Charlie Brown, you’re sure to have a great night.

“BOO” YOUR FRIENDS & NEIGHBORS

Who says Halloween can’t be a time for random acts of kindness? Drop off a Halloween goodie bag or a decorated pumpkin on the doorsteps of your loved ones, with a tag that lets them know they’ve been “boo’d.” This could be done anonymously, or even “secret-Santa” style. ◾
