Easter History: Hares, Eggs, & Candy By Donovan Darling, Staff Writer
Easter is about rebirth, renewal, and fertility. This is evident in symbols like the Easter bunny and Easter eggs, which eventually led to chocolate eggs, marshmallow Peeps, and the second best-selling candy holiday in America! Let’s take a quick look at how Easter has changed over the years.
Easter Bunny
According to legend, the Easter bunny first came to 1700s America with German immigrants who settled in Pennsylvania and brought along their tradition of an egg-laying rabbit called “Osterhase” or “Oschter Haws.” Children made outdoor nests so this curious creature could lay its colored eggs. Eventually, the tradition spread across the country, and the fabled hare’s Easter morning goodies would eventually include chocolate, candy, and gifts, while colorful baskets would replace the nests. Much like milk and cookies left out for Santa, children would often leave out carrots in case the Easter bunny got hungry from all his hopping!
Easter Candy
Fast forward to the 19th century, when European chocolatiers began making chocolate eggs to celebrate Easter. Nowadays, Easter is the second best-selling candy holiday in America after Halloween. The largest Easter egg ever made was over 25 feet high and weighed over 8,000 pounds, made from chocolate and marshmallow, and supported by an internal steel frame. Another egg-shaped candy is the jelly bean, first popular for Easter back in the 1930s. Over 16 billion jelly beans are made in the U.S. each year for Easter. Over the last decade, the marshmallow Peep has been the best-selling non-chocolate Easter candy. Created in the 1950s, the original Peeps were handmade, yellow marshmallow chicks, and other flavors and shapes were introduced later, including chocolate mousse bunnies! info from history.com
Easter Eggs
From a Christian perspective, eggs were handed out during Easter service in early Orthodox churches, with the hard shell representing the sealed tomb and the cracking of the egg representing the resurrection. One explanation is that eggs used to be forbidden during Lent, so Christians would paint and decorate them to mark the end of the period of penance and fasting, then eat them on Easter as a celebration. The origin of dyeing Easter eggs is less clear, beginning anywhere from 13th century Europe or all the way back to ancient Mesopotamia. It’s rumored the early Christians of Mesopotamia dyed eggs using red to represent the blood shed on the cross. Later, missionaries may have painted biblical scenes on eggs and used them to explain the story of Easter to children. Newberg Community Advantage Magazine 5
RECIPE
Lemon Blueberry Cake This moist blueberry lemon cake contains three lemon cake layers with blueberries and is frosted with a refreshing whipping cream and cream cheese frosting, which again has blueberries and lemons. INGREDIENTS
CAKE 1 (16.25 ounce) package white cake mix 1 ¼ cups water 3 egg whites 1/3 cup vegetable oil 2 teaspoons lemon extract DIRECTIONS
FROSTING 1 cup heavy whipping cream 1 (8 ounce) package cream cheese, softened ¾ cup white sugar 1 teaspoon vanilla extract FILLING 1/3 cup blueberry pie filling
1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8-inch pans. 2. Beat cake mix, water, egg whites, vegetable oil, and lemon extract together in a bowl using an electric mixer on medium speed until batter is well combined, about 2 minutes. Pour batter into prepared pans. 3. Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, 25 to 30 minutes. Cool in pans for 10 minutes before transferring it to a wire rack to cool completely. 4. Beat cream in a chilled bowl using an electric mixer until soft peaks are almost forming into stiff peaks; place bowl in refrigerator. 5. Beat cream cheese, sugar, and vanilla extract together in a separate bowl using an electric mixer until smooth and creamy. Fold whipped cream into cream cheese mixture. 6. Place 1 cake on a plate; top with blueberry pie filling. Place second cake atop blueberry filling. Generously frost cake with whipped cream cheese frosting.

Zootopia (2016) - PG
Not an Easter movie, but it’s about a rabbit, so close enough. From elephants to mice, the metropolis of Zootopia is a melting pot where various animals live and thrive. When Judy Hopps (Ginnifer Goodwin) becomes the first bunny on the Zootopia Police, she realizes how hard it is to bring order to a city of such chaos, especially when you feel so small. Determined to prove herself, Judy leaps at the chance to solve a mysterious case. She’s forced to work with a wily and sneaky fox, Nick Wilde (Jason Bateman), who makes her job impossible. But eventually the two discover, as a small bunny who was once bullied, and a fox who was treated as a thief before he even knew the word, they have more in common than they think!
Here Comes Peter Cottontail
(1971) - TV-G
This 1971 stop motion animated TV special was produced by Rankin/Bass Productions and was based on the 1957 novel The Easter Bunny That Overslept. In this fun and lighthearted flick, Peter Cottontail is a young Easter Bunny who lives in April Valley where all the other Easter bunnies live and work, making Easter candy, sewing bonnets, and decorating and delivering Easter eggs. Colonel Wellington B. Bunny is retiring as Chief Easter Bunny, and Peter and an evil bunny named January Q. Irontail are both vying for the job. But Irontail, voiced by Vincent Price!, of course wants to ruin Easter! 10 To Advertise With Us, Call 503.825.2111
Easter Parade (1948) - G
An Oscarwinning smash musical from the Golden Age of Hollywood, Easter Parade stars Judy Garland and Fred Astaire in this perfect film of nostalgia and escapism. When released it grossed six million dollars, and although six million sounds petty these days, the average movie ticket was 37 cents in 1948! When a Broadway star and a chorus girl fall in love, it culminates with a proposal that happens during the Easter Parade. After his first dance partner leaves, Don (Astaire) chooses a young and naive chorus girl, Hannah (Garland) as his protege. But it turns out she’s incredibly klutzy and confuses her left from her right. Funny, cute, and magically musical, Easter Parade holds up at 74 years old!
Willy Wonka (1971) - G
Probably Gene Wilder’s best movie, and not an Easter movie, but the definitive movie about candy! Willy Wonka, after years of seclusion, hides a handful of golden tickets in random chocolate bars around the world, and if found, children will be given a tour of the famed chocolate factory. Of course, Charlie Bucket and Grandpa Joe are the only good people in a crowd of selfish brats and classless parents, as the group gets smaller by one after each tour stop and its ensuing lesson and misadventure. Weird, fun, and pure classic cinema.

GRANITE TRANSFORMATIONS Written By Dennis McNabb, Contributing Writer
T
ransform that embarrassing, worn out, and outdated kitchen or bathroom into the beautiful, new, luxurious space you’ve always wanted, and with minimal demolition! Home renovations are never enjoyable. As a rule, they tend to be messy, costly, and incredibly disruptive, often spanning weeks if not months. That’s not the case, however, when you hire Granite Transformations! Their unique concept addresses these issues by preserving and utilizing the majority of your existing functional assets, and in essence, performing more of a “facelift” than a complete remodel. That equates to less mess, lower costs (40% less on average than a full remodel), and far less of a disruption to your daily life. And the results are astounding! Granite Transformations is a worldwide franchiser with some 240 franchises around the globe. They have been perfecting their methods of operation for over 20 years. Local franchisee owner Dan Lappin purchased his location, which services Oregon and southwest Washington, 6 years ago. With an entrepreneurial spirit and a vision to invest and expand, he has relocated to a brand new and highly impressive showroom in Lake Oswego which will be celebrating its Grand Opening this Spring! It was Granite Transformations’ unique process that attracted Dan to the business. Most kitchens and bathrooms are functionally sound, but over the years have just become outdated. As a result,

simply “transforming” them versus demolishing and starting from scratch makes perfect sense. Granite Transformations’ proprietary makeover methods are highly efficient, and by using recycled materials whenever possible they’re also environmentally friendly. Countertops, cabinets, sinks, backsplashes; they do it all, and everything is engineered in the US and fabricated locally. They do these “makeovers” provided there are no structural changes needed to the building itself. They refresh, customize, and reconfigure cabinetry, countertops, and entire kitchens and bathrooms within your existing walls without extensive demolition. Dan explained, they are make-up artists, not plastic surgeons! If you are interested in remodeling your kitchen or bath, call Granite Transformations first! Let them schedule a free design session to show you the amazing transformations they can provide. Their products are top-notch, require little-to-no maintenance, and come with a lifetime, transferable warranty. Why would you even need to consider anyone else? Granite Transformations is located at 9 Centerpointe Dr. Suite B in Lake Oswego. Give them a call at 503-498-9389.

Sports Drinks Linked To Tooth Damage Sipping on sports drinks can damage your teeth because of the high levels of acid in them, dentists have warned. Dental experts placed teeth in sports drinks and in water to compare the effects and found the citric acid in the sports drinks caused corrosion and could result in severe tooth damage if left untreated.
The results of the experiment were presented at the annual meeting of the International Association for Dental Research in Miami. Researchers at the New York University College of Dentistry cut calves’ teeth in half and immersed each half in either a sports drink or water and compared the results after 75 to 90 minutes. “This is the first time that the citric acid in sports drinks has been linked to erosive tooth wear,” said Dr Mark Wolff, Professor and Chairman of the Department of Cariology and Comprehensive Care at the college, who led the study. The erosion on the half placed in the sports drink was clearly visible because dozens of tiny holes had appeared while there was no damage on the half which was immersed in water. Brushing teeth immediately after the drinks would compound the problem, Dr Wolff said, because the acid in the drink softens tooth enamel leaving it vulnerable to the the abrasive brushing with toothpaste. In another study in the American Journal of Clinical Nutrition, scientists found cutting out one serving of sugared soft drink led to weight loss of just over one pound after six months and 1lb 4oz after 18 months. Cutting out other drinks did not have the same effect, the researchers said. A spokesman for the British Soft Drinks Association said: “This study does not replicate real life as the teeth were studied outside of the mouth. A real-life study conducted by Ohio State University, which is the most comprehensive study to date, found that there is no relationship between the consumption of sports drinks and dental erosion. Anyone concerned about this issue should consult their dentist for advice on how to minimise the effects of dietary acids from all sources in the diet.” By Rebecca Smith, as posted on www.dentist.net

PREPAREATHON!
NATIONAL
Prepareathon! DAY
APRIL 30TH
Prepareathon! Day reminds us that crises happen suddenly. Being prepared needs to happen now, not later. Natural disasters such as earthquakes, floods or wildfires require us to make decisions with little or no warning. Do you have an emergency plan in place with your family in the even of an emergency situation? PrepareAthon! Day offers tools and resources for communities and citizens that help them to prepare in the event of a disaster. Large or small, it takes members of the community getting involved to help keep a crisis from turning into a tragedy. While our emergency resources supply one arm of the response team, many others step forward. Some help with a supply chain while others coordinate medical personnel. Communication is also vital to a successful plan. When everyone has a blueprint, our plans run more smoothly. Take part in your community’s preparedness plans. Find out where to start by visiting community.fema.gov.

YOUR LOCAL SHERWOOD REAL ESTATE AGENT Chase Willcuts Chase Willcuts, a native of Newberg, descends from a long and proud family heritage of farmers, educators, and… realtors! Having worked in a funeral home, as well as having obtained both his B.A. (George Fox University) as well as his M.A. (Gonzaga University), it is of little wonder that Chase desires to bring his rich life experiences to the community that he loves and cherishes. Chase firmly believes in the importance, depth, significance, and reality of the home – where dreams are fulfilled, where relationships are created and sustained, and where legacies are made. Chase’s number one goal is to bring that sense of home into the lives of all of the clients that he looks forward to journeying with.

SERVICE ABOVE SELF NEWBERG ROTARIANS: SERVING THE COMMUNITY
T
he Newberg Noon Rotary Club participates in and funds many programs in our Newberg and Dundee communities, often centered around providing services, resources, and opportunities to kids and young students. However, our club doesn’t just serve local youth. For decades, members of our club have volunteered monthly to help prepare and package food, clean dishes, and deliver meals for our Newberg and Dundee area senior population through what is commonly referred to as the Senior Meals Program. The Senior Meals Program is organized and operated by NorthWest Senior and Disability Services (NWSDS), an intergovernmental agency created in 1982, which serves five Oregon Counties including Yamhill County. Every two years they contract with the state of Oregon to deliver services to seniors and adults with physical disabilities. Most of their funding comes from the federal and state government, however, they also receive donations from generous individuals and community groups. “I have volunteered with Senior Meals for over 8 years. It helped me understand a community need for nutrition, and social support. I love the fellowship, and working with teams of great volunteers. It really is fun!” - Stan Kern
The five-county effort is organized through 15 different mealsites. The food is purchased and cooked in bulk quantities in a commercial kitchen located in Salem and then transported to each mealsite. The mealsite serving Newberg and Dundee communities is operated out of the Chehalem Senior Center in Newberg and is managed by Chehalem Parks and Recreation “I love volunteering for this District. Upon delivery program and have been doing to the Chehalem Senior this for over 4 years. I love it. It’s Center, volunteers fun, and it’s a community need.” from the community - Michelle Colvin portion meals into to-go containers which can be picked up directly by program beneficiaries or delivered by volunteer drivers. Prior to the COVID-19 pandemic, meals were also served on site at the Senior Center, however that option remains unavailable with plans for it to return in 2023. This service occurs daily, Monday through Friday, with 2 additional frozen meals provided on Fridays for the weekend. They serve an average of about 90 meals a day, which over the past three decades has amounted to hundreds of thousands of meals served in our community alone. INTERESTED OR KNOW SOMEONE WHO MAY BE ELIGIBLE FOR THIS PROGRAM: Adults with disabilities and seniors over the age of 60 in need are able to apply for this service at any time. Ordering needs to occur at least 3 days in advance and diners can select from a choice of two daily entrees. For more information on how to sign up for Home Delivered meals or more general information about the program, they can call the Aging and Disability Resource Connection at (866) 206-4799 or information.nwsds@nwsds.org or call the Chehalem Park and Rec Senior Meals Program at (503) 538-1490. INTERESTED IN DONATING OR VOLUNTEERING? This program is always looking for volunteers to serve Monday through Friday from 9am to 11am. To learn more or to sign up to volunteer, contact CPRD’s Senior Programming Specialist, Sarah Larison at (503) 537-9404 or by email at slarison@cprdnewberg.org.

HISTORY
The History of Linfield Football: A Streak of Greatness By Robert Matsumura, Contributing Writer
If
you’re a fan of college football, doubtless names like the “Crimson Tide,” “Fighting Irish,” and “Buckeyes” require no explanation. They speak for themselves. However, if you don’t follow NCAA Division III football, you might not realize that one of the nation’s most successful football programs resides right down the street in McMinnville, Oregon. None of the haloed Division I teams cited above can match the accomplishments of the Linfield University Wildcats. It started on an autumn day, October 6, 1956. Great things often have humble beginnings, and for Linfield football this was certainly the case. While it would have been more dramatic if the Wildcats’ win that day had been defined by a scintillating highlight moment—a miraculous last minute catch in the endzone, or a gutty goal line stand—such was not the case.
experience it and build up over the years.” For a team composed of small town kids and Korean War veterans attending college on the GI Bill, they had no idea that their victory over the Ramblers that fateful October day would be the start of the “Streak.” The “Streak,” which has now extended to 65 consecutive winning seasons as of 2021, is the longest active winning streak in NCAA history at any level. No other team is even close to this record, with the next in line coming in at 42. In retrospect, Ward admits no one at the time had any idea of what was to come. “I guarantee you that in 1956, nobody had any idea there would be any kind of streak,” he said. “We were just happy that we could get through the season with a win.”It was coach Paul Durham’s team that started the “Streak,” but it is a testament to the pride, tradition, and dedication to excellence, fostered by successive coaches over the last six decades, that is

Linfield had just suffered back-to-back losing seasons, and the 1956 campaign looked like more of the same. The opponent that Saturday was the Seattle Ramblers, a semi-pro team on a tear, who had defeated the Wildcats the previous year, and dominated the conference titles over the last 14 seasons. Against the odds, Linfield managed to defeat the Ramblers 13-7. From that game on, the Wildcats wouldn’t lose another game that season. This win over the Ramblers marked the beginning of what has become known as the “Streak.” Paul Ward, who played guard on the ’56 team, recalled: “Once we had a winning season, we knew we could win. We had to

responsible for Linfield’s relentless march through the NCAA history books. Looming at the forefront of the Mount Rushmore of Linfield football coaches is Ad Rutschman. Hired as head football coach in 1968, Rutschman continued the winning tradition until his retirement in 1991. Rutschman not only coached football, but baseball as well. Rutschman is still the only coach at any level to win national titles in both football and baseball. In his 24 seasons as Linfield ’s head football coach, Rutschman won three NAIA national championships (1982, 1984, 1986), and 15 Northwest Conference titles. Perhaps Rutschman’s most epic victory occurred in the 1984 national
championship game, where Linfield trailed Northwestern 22-0 with just over three minutes left in the third quarter. Against all odds, the Wildcats roared back to win the game 33-22. In addition to coaching football and baseball, Rutschman also served as Athletic Director for 25 years, during which time the school’s athletic facilities were greatly improved. Among these improvements were two new gymnasiums, a baseball stadium, and the 26,600 square foot field house named in honor of Rutschman and his wife Joan, for their dedication and service over 27 years to Linfield University. From 1992 to 2005, Linfield’s football program was led by Ed Langsdorf (1992-95) and Jay Locey (1996 -2005). Both coaches kept up the winning tradition. Langsdorf ’s brief tenure resulted in a record of 32-9-1 and three championships. Locey’s tally at the end of his Linfield career was a stellar 84-18 and six championships, including one NCAA Division III title. During one stretch of his impressive career, Locey coached the team to a 41-game win streak.

one another. This intense trust that grows from respect and brotherhood is interwoven with a blue-collar work ethic of toughness
and we are the hammer.” So next fa ll, as Linf ield continues on its historic ma rch through the NCAA record books, take a moment to appreciate what six decades of commitment to family, grit, and excellence can achieve. As Coach Smith ref lected, “From Coach Durha m to Coach Rutschman, to now, the secret to this place has been that we have really good people coming and being part of a really good program. When you focus on excellence and put the team first and you’re a man of your word, great things happen.” The “Streak ” lives on!
“It couldn’t be someone from the outside to come in and run the program,” Smith explained. ‘We had to maintain who we are. If we lost that, we’re just another school’.”
In 2006, the future of Linfield football was turned over to Joseph Smith, and he has not only continued the “Streak” but pushed the school into the NCAA record books. Under Smith’s leadership Linfield has amassed an incredible record of 13827, with a .836 win percentage, the highest percentage of any coach in Linfield history.
When Smith, a former defensive back for Linfield in the 90s, took over in 2006, he was well aware of the legacy he was responsible for and described his role as that of a “caretaker.” With Locey’s departure, Smith understood that the decision to hire him had been carefully considered. “It couldn’t be someone from the outside to come in and run the program,” Smith explained. “We had to maintain who we are. If we lost that, we’re just another school.” The Smith era at Linfield has been nothing short of remarkable. For a school that offers no football scholarships, a modest budget for athletics, and typically doesn’t attract big time recruits with NFL aspirations and talent, the question remains: “How does Linfield do it?” How do the Wildcats continue to churn out victories, winning seasons, and championships? Ultimately, how do they keep the “Streak ” alive? Smith credits a number of factors, foremost of which is the sense of family that permeates the entire Wildcat program. Caring for

and a thirst for excellence. Ryan Carlson, a defensive star on the 90s era teams, sums it up beautifully: “Once you’re in our Linfield family, you’re connected to 60 years of people who have had those core principles shape their young lives. Those life experiences continue to breed an incredible amount of love and loyalty towards the program.” As inspiration to his players, Smith periodically invites guest speakers to address the team. One of the speakers, Bretton Brown, an Army Ranger and a friend of Smith’s, imparted words from the Rangers’ credo that resonated with the team: “We are Men of Action. We do the heavy lifting. We are the walls,
