Taste Of The Town LA SIERRA MEXICAN GRILL & LOUNGE

a Sierra Mexican Grill & Lounge has a long history of serving and bonding with the local community. Victor Lopez said “this is a great neighborhood and a great community, which makes all the difference. We love our community and I think they love us too.” The Dundee location La Sierra just celebrated its 20th anniversary in business. The savory scents of hot food greet you at the door, followed by fast and friendly service from the attentive staff. “We are committed to treating people well,” said Victor. Once inside the 8,000 square feet, it’s impressive: a large, jubilant dining room and lounge equipped with a full bar and video poker games. There is also a newly expanded large outdoor covered patio. At La Sierra customers are treated right, and the fiesta of food is another special treat. For example, according to Victor the La Sierra Burrito Carne Asada is their bestseller. Loaded with fresh charbroiled beef, rice, beans, and pico de gallo, it’s wrapped in a warm flour tortilla made in-house. If that’s not mouth watering already, the La Sierra Burrito Carne Asada is

topped with cheese, burrito sauce, lettuce, sour cream, and guacamole. Victor Lopez became a proficient cook when he immigrated to the United States in 1993. As a dishwasher, on his breaks he’d watch his brother cook. Discovering the passion for cooking soon thereafter, Victor said “I knew I wanted to have my own restaurant. I did not want to work my whole life for someone else. I only wanted to work for me.” Victor’s dream came true after many years of hard work and his customers are so lucky to be able to enjoy his creations. The options are amazing and nearly impossible to choose from the menu at La Sierra: sizzling Fajitas, savory Carnitas, and exquisite Carne Asada, Victor considers his Signature Meal. “It’s the flavor and the way we cook,” he said. “The meat is so tender.” Victor uses a closely guarded secret blend of spices, which of course makes you want to try it even more. The seared top sirloin steak is still sizzling when served, accompanied by aromatic fried onions and peppers, guacamole, pico de gallo, and warm flour tortillas. First inspired by the Food Network, Chef Rachel got her start in bartending school as a “way to get behind the scenes in the kitchen,” and it worked. She attended culinary school and studied under a classically French-trained chef. She’s worked in catering, high end restaurants, Beverly Hills, country clubs, weddings and banquets, and these experiences taught her to cook both small intimate plates and on a large scale. Instead of the hustle and bustle of a typical restaurant job, Chef Rachel has more time for daily life and her family, cooking 2 days and doing admin work throughout the week. She splits her time into prepping, cooking, and cooling on day one; and portioning, labelling, and delivering on day two. While based in Beaverton, she serves the Portland Metro area, including Hillsboro and Cornelius. When asked why she started Ray2ZCooking, Chef Rachel said “it was hard to find convenient healthy food as a mom working full-time, having to think about ingredients” and meal plan, and she wanted to provide simple “guilty pleasure meals without the guilt” to help people who are too busy, stressed, and have misconceptions about eating right. Using local produce and with a love of international cuisine, her minimal meals utilize “spices, flavor, and variety, with a rotating menu every week.” Chef Rachel loves her work and so do her customers. D

r. Coleen Palileo is the newest doctor to join the team at Oregon Eye Specialists in Newberg, which offers a full range of ophthalmology and optometry services and where “We Deliver Clarity” is the clinic’s mission and passion. During her medical training, Dr. Palileo found that she became interested not only in how her patients see the world around them, but also in how the world sees her patients. “I found that maintaining excellent eye health is important, however I also learned that medical and cosmetic issues of the eyelids, eyebrows, tear ducts, and face can be extremely devastating to my patients’ quality of life and self-confidence,” she said. “I care deeply about treating both the medical problem and also the person.” This led her to specialize in Oculofacial Plastic and Reconstructive Surgery, a unique field that combines the principles of ophthalmology and plastic surgery into one dynamic specialty. “It is a very specialized field,” she said. How specialized is it? Only about forty ophthalmology students a year go on to master it. And Dr. Palileo is the only ophthalmologist at Oregon Eye Specialists who offers these unique services. “There are a few misconceptions about this field mainly surrounding the false idea that all plastic surgery is cosmetic and elective,” Dr. Palileo explains. “For example, aging and droopy eyelids may require treatment when the field of vision becomes obstructed.” In addition to cosmetic services, Dr. Palileo addresses many functional eye problems such as this. “Surgical and non-surgical eyelid treatments can help correct droopy eyelids as well as saggy eyelid skin.” Because these issues are medical in nature, your insurance may cover these procedures. Dr. Palileo received her bachelor’s degree at the University of California, Los Angeles (UCLA) and her M.D. degree at the University of Cincinnati College of Medicine. She completed her ophthalmology residency at the Kresge Eye Institute in Detroit, Michigan. She then went on to complete her fellowship training in oculoplastic and reconstructive surgery at Consultants in Ophthalmic & Facial Plastic Surgery in Southfield, Michigan. On the clinic’s website, you’ll find her compelling and inspiring account of what it was like to do that as COVID hit. Dr. Palileo and her fiancé moved to Oregon this summer. They’re “outdoorsy” people and are looking forward to exploring the region’s hiking trails and parks, and they are also “foodies” who have started exploring the area’s restaurant scene. risp air and turning leaves always means family fun at French Prairie Gardens during the fall season. There are plenty of activities for all ages, and the activity they’re most famous for is the Pigtucky Derby Pig Races. The Pigtucky Derby Race is really something special. The pigs are lined up, not unlike

horses at the Kentucky Derby, except dressed in mud and bandanas around their necks. Once they’re off, the auburn pigs race through a winding grassy muddy track to their hearts’ content, and right beside the track is seating for the whole family. Once you’ve seen the pigs come a’running, the classic Pumpkin Patch is open and running from October 2 through 31 for the perfect jack-o-lantern or seasonal decor with 20 varieties of pumpkins. There’s also the incredibly impressive mazes, of which there are four! The Corn Maze, Sunflower Maze, Rope Maze, and Kid’s Hay Maze. The slides are great for all ages too, including the Tube Slide and brand new Super Mega Ride ‘n’ Slide. The kids can enjoy countless

activities like the Pig Barrel Train Ride, Pedal Karts, Tire Swings, Jump Pad, Hamster Rollers, Obstacle Course, and Farm Ninja Course. Each client is a different experience.” “I always want clients to enjoy their time during a photo shoot,” she adds. “I often find that the best way to get to know someone is by finding small things you have in common with them. ARTIST PROFILES

SHANE ANDERSON  ▶ Shane Anderson is a Minnesota based Fine Artist and Public Artist. His art is colorful, vibrant, lively, and filled with interesting details. He takes bright colors and bold forms to create works of art that invite exploration and spark conversation. Shane’s murals can be found throughout the Midwest, as well as exotic locations like Kenya, Thailand, and the Virgin Islands. Shane’s introduction into the world of professional art started with St. Paul’s huge public art installation of the Peanuts statues. From 2001-2006 he designed and created 8 large statues which gave him the confidence and experience to take the leap to becoming a muralist. In 2007, Shane started displaying and selling his personal work, and since then has become a household name in the art scene. Shane’s art has been sold to national and international collectors, as well as being commissioned worldwide for murals by large corporations, small businesses, non-profits and private collectors. ◾

HEATHER ANDREWS  ▶ I have always been fascinated by the natural world, from the soil and stones on which we walk, to the creepy crawly critters that roam the earth, on up to birds which soar through invisible currents of air. Ever since I was a child I would seek out these places, finding peace in the solitude and quiet which nature has to offer. Inspired by this love for the planet, I pursued an undergraduate degree in biology and chemistry, which was shortly followed by a masters in entomology, earned from Virginia Tech. In addition to my interest in science, I’m also in love with various forms of artistic expression through visual art, as well as music. During my spare time I enjoy drawing fantastical creatures, which tend to emerge from the paper as though through their own power. Creating jewelry is yet another of my interests, and many of these items also reflect the natural world, being decorated with various flora and fauna. I have a line of jewelry made from beetle elytra, and also make jewelry from wire and beads. Playing the harp has allowed me to share my passion for music with people, and I’m incredibly grateful for the opportunity to play for others, whether at local cafes in the Portland area, or for a party or wedding. to contact me about playing the harp for any occasion, if you are interested in certain items on my website, or if you have any pressing insect-related questions. Finally, I enjoy time spent outdoors experiencing the sights and smells of the mountains and oceans. There is something incredibly satisfying about being able to hike to the top of a mountain and gaze out at the surrounding peaks and valleys, or kayaking on a lake that’s as smooth and placid as a mirror. I find inspiration in such settings, both for my music and art, and also find these experiences to be rejuvenating, allowing me to feel whole and complete. I strongly encourage you to do the same, go out and find a beautiful, pristine place, and focus on deeply inhaling the clear air, listening to the birds and insects (or perhaps complete silence), and filling your eyes with the incredible sights. ◾

et’s face it, folks, 2021 has been a scary year! In the wake of 2020, I think perhaps we were all lulled into a false sense of security, assuming 2021 could only be better. And while it hasn’t necessarily been much worse (we have seen a slowdown in COVID-related death rates, after all!), it also hasn’t been much better. So how can we combat those gloomy clouds hovering above, threatening to rain all over what remains of 2021? Well one way is to embrace a little scariness just in time for the Halloween season, and head on over to Scare Fair: Harbinger of Souls, going on at the Clackamas County Fairgrounds this October! Partnering for the second year in a row with Portland’s own Creatures of the Night, Marketing Coordinator of the Clackamas County Fairgrounds, Tyler Nizer, is proud to announce that this year you can fight COVID or seasonalrelated ennui by attending their fully immersive walk-through haunt! Last year these two organizations united to bring us the first drive-through haunt, and it was so successful that they are returning and revitalizing the event this year; and it will be bigger, badder, and better than ever! Plus now you get to walk through instead of drive for more up-close and personal scares! Creatures of the Night is an allvolunteer local organization of haunted entertainment consultants which has been in existence since 2013. They partner with local community organizations to raise funds and make entertainment to support local businesses and bring communities together. Artistic Director, David D. Jones, is incredibly enthusiastic about his work and, in particular, about bringing people together in a time when we have been so isolated. He is grateful for the partnership they’ve developed with the Clackamas County Fairgrounds, and he’s especially excited to bring the scares! According to their website: “Creatures of the Night connects

communities and families through a feeling of wonder and trepidation. Creatures’ highest priority is safety – of the physical surroundings and internal process – for the actors and our guests. In our method of storytelling, we believe it is the inner child that is on a journey of challenging and overcoming fears, both physical and internal. Every participant is always in control of the experience and their level of comfort.” This is where Creatures of the Night has separated themselves from the pack. Not only are they the first company to use 360 degree photography and Augmented Reality in their haunts, but they are also the first and only company in Oregon to provide customers with a customizable experience! They have incorporated an extra feature that is referred to as the Creature Candle. The candle can be adjusted by each group to align with their level of comfort, so if you like it really scary, you can turn the candle down low. If you prefer it less scary, you can turn it up brighter; the idea is that you are in control. In order to ensure that every visitor has the perfect experience for them, the candle will be available for purchase before you start your tour. This year, the theme of the tour is “Harbinger of Souls” and you will encounter several souls at the event, including: Mary (a young woman in a white dress who haunts the rivers and forests), Ole Clem (a riverboat captain), the Cultists (mysterious figures in robes), Mark Forth (a WWII deep sea diver who went missing somewhere along the Willamette and still haunts it to this day), the Pacific Northwest Lake Monster, and the Caretaker (your guide). The Willamette Valley has a long and dark history. Older fisherman have spoken of the strange and the bizarre; of robed


figures skulking about the land adjacent to the river; of large monstrosities with elongated necks piercing the water’s surface in search of food; of retrieved fishing nets full of repulsive and horrible treasures. Only a girl in a white dress holding a candle offers hope and possible sanctuary. Although it’s never been confirmed, this girl seems to guide those who are in danger or who are lost to safety. Trust her at your own peril! This event is one of remarkable, family-friendly fun and entertainment! Being customizable, the experience can be as scary or as light-hearted as you’d like for it to be, but what they will not sacrifice is anyone’s safety. That is the number one priority for both Clackamas County Fairgrounds and Creatures of the Night. That means masks are required, social distancing will be practiced, and hours will be limited, but you

can still expect tons of fun and an incredibly immersive experience! Groups will be limited to 4 (as David states, that’s not only the safest but also the best way to experience the tour) so plan accordingly. Hours of operation are FridaySaturday, 7-10pm starting October 1st and running through the end of the month. For the little ones, Haunts Junior is a more kid-friendly, Scooby-Doo type experience that will be open from 6-7pm on Saturdays. Scarecrow Cookies Enjoy these Halloween-style cookies that are creatively shaped to look like scarecrows.

INGREDIENTS

1/4 C Betty Crocker™ Ready-To-Spread Vanilla Frosting 10 Creme-Filled Vanilla Sandwich Cookies 5 Baked Whole-Grain Wheat Crackers, Cut In Half 1 Tablespoon Sugar 10 Large Gumdrops 10 Pieces Candy Corn Black Decorating Gel

DIRECTIONS

1. Spread 1 slightly rounded teaspoon frosting on each cookie. For each scarecrow cookie, cut half cracker into shreds with sharp knife; place shreds on 2 sides of each frosted cookie to resemble hair. 2. Sprinkle work surface with sugar. Place 1 gumdrop on its side on sugar; flatten with rolling pin into 1/8-inch-thick triangle. Fold up one edge to form hat brim; place on cookie, trimming to fit if necessary. 3. This annual auction has been a community event since the 1970s. Originally held during a club meeting and attended only by Club members, it expanded and was held during the Old Fashioned Festival from 1982 to 1987 until they shifted to a winter event held at the Armory. In the early 2000s it evolved into an even grander event and was held at the Alison Inn & Spa. It moved to the Chehalem Cultural Center in 2019.

In spite of new challenges brought about by the ongoing pandemic, we are determined and the show must go on! Don’t despair - you can be mindful of your child’s health and still let them enjoy the special occasion, dentists say. The decay process in teeth works like this: The majority about 90 percent - of all foods contain sugars or starches that enable bacteria in dental plaque to produce acids. This attack by bacterial acid, lasting 20 minutes or more, can lead to a loss of tooth mineral and, eventually, to cavities.

A child who licks a piece of hard candy every few minutes or sips a sugary drink is more susceptible to tooth decay because long-lasting snacks create an acid attack on teeth the entire time they are in the mouth. Thus, one approach would be to allow your ghosts and goblins to indulge in Halloween candy at mealtime instead of as a snack. Or choose the right kind of snack. Research from the Forsyth Dental Center shows that some sticky foods clear from the mouth faster than less sticky foods - posing a shorter acid attack on the teeth. Caramels, for example, dissolve more quickly than crackers, breakfast cereals, potato chips, dried fruit and bread. You can also try sugar free gum, or mints. Another option with Halloween candy is to allow snacking immediately after trick-or-treating, then throw out the remainder. But remember that depriving your child of Halloween treats will only make him or her want them more. Good dental health depends on more than just diet, if you are having trouble getting your children to brush their teeth check out the children’s toothbrush section. Snacks should not be served more than three or four times a day and should contribute to the overall nutrition and health of the child. Healthy snack choices include cheese, yogurt, vegetables, peanut butter and chocolate milk. Most of all, practice good oral hygiene by making sure your child brushes and flosses every day, uses fluoride toothpaste and visits the dentist regularly.
