Chocolate Strawberry Shortcake

INGREDIENTS

2 cups all-purpose flour

1/3 cup white sugar

¼ cup cocoa powder

1 tablespoon baking powder

1 teaspoon baking soda

½ teaspoon salt

½ cup butter

1 cup milk

2 pints strawberries, sliced

¼ cup white sugar

1 (12 ounce) container frozen whipped topping, thawed

2 tablespoons chocolate syrup

DIRECTIONS

1. Preheat the oven to 400 degrees F (200 degrees C). Grease two 9-inch layer pans.

2. In a large mixing bowl, combine flour, 1/3 cup sugar, cocoa, baking powder, baking soda, and salt. Cut in butter until mixture resembles coarse crumbs. Add milk, mixing until just moistened. Spread batter evenly into the prepared layer pans.

3. Bake in the preheated oven for 15 minutes, or until a toothpick inserted in the center comes out clean. Cool.

4. Meanwhile, in a medium mixing bowl, combine strawberries and remaining 1/4 cup sugar. Let mixture stand for 10 minutes.

5. Remove shortcake layers from the pans. Place one layer on a serving plate; cover with 1/2 of the of strawberry mixture and 1/2 of the whipped topping. Place remaining shortcake layer on top, then remaining strawberry mixture and remaining whipped topping. Drizzle chocolate syrup over top.

Mattress stores seem to be a dime a dozen, with locations on virtually every street corner and dozens of online options as well. And you’d think the buying experience would be the same as the next, right? Wrong. For starters, there’s the personability. Sean has been in the business for over 25 years. He started the parent company Furniture Showcase, Inc. in 1995, and has been serving the community as Mattress World Northwest (MWNW) since 2004. He and his team are dedicated to making your mattress buying experience one of a kind. In talking to Sean, it’s obvious he cares deeply about his employees and his customers.

FRED ASTAIRE DANCE STUDIOS

Upon the death of Fred Astaire in 1987, famed dancer & actor Mikhail Baryshnikov noted, “No dancer can watch Fred Astaire and not know that we all should have been in another business.” To this day, Astaire is still recognized as one of the all-time greats. He danced as if he’d somehow learned to defy gravity, floating across the floor. In 1947, Astaire cofounded his own dance studio to help preserve his technique and pass it along to the public. With a brand-new location in Beaverton opening this February, we are fortunate here in the Portland-Metro area to claim as our own the only two Fred Astaire Dance Studios in the Pacific Northwest!

The first, which was opened in Portland in 2010 and later relocated to Lake Oswego in 2015, may already be familiar to you. The owners of that location, Jessi and Alex Aillon, along with their wonderful and talented staff, have earned themselves the reputation for being one of the best studios in the region. Kacey Bicking, owner of the new Beaverton location, has been a part of that team, working for Jessi and Alex as an Instructor and a Front-end Supervisor for over 10 years now. Opening this new location and expanding the Fred Astaire Dance Studio family is something Kacey couldn’t be more excited about.

Kacey started dancing in college and discovered that it was a fantastic way to get in shape, build confidence, and have a lot of fun. He grew up in sports, did a lot of coaching (basketball and lacrosse), and has been a youth leader in his church for many years. His patience and calm demeanor, combined with his immutable enthusiasm and athletic skill, put him in the ideal position to become an instructor.

“Dance is a wonderful way to disengage from your everyday problems and focus on something positive,” he said. It’s a low impact sport, great for balance and core strength, and it can be amazingly therapeutic, especially for those recovering from an injury.

Kacey and his staff are tremendously passionate about what they do. Taking lessons from them is so much more than just memorizing steps and technique. It’s also about learning to trust your body, gain confidence, improve posture and poise, and attain a general sense of overall health and well-being.

The environment Kacey and his team have created, like that of their sister studio in Lake Oswego, is nothing short of astounding. Catering more to an “everyman” clientele, the studios feel much more comfortable and relaxed than a standard studio. Without question, they provide the highest quality instruction from the most qualified and rigorously-tested instructors in the business, but the atmosphere has been fashioned

to welcome a broader audience. Men should feel just as welcome as women, young alongside the old, and beginners alongside the pros. The sky is truly the limit at Fred Astaire Dance Studios.
