Mazatlan

Mexican Restaurant By David Bates | Photos By Stephanie Baker

I

f you’ve ever dined at Mazatlan Mexican Restaurant in McMinnville, you probably were never aware of the secret behind your delicious meal. What you may not know is that when you come in and order, you’re actually getting a real authentic mexican treat: a taste of the owner’s homecooking!

Jesse Galvan learned to cook as a kid growing up in Cuautla, in the western Mexico state of Jalisco. He was the middle child in a family of nearly a dozen siblings, and his situation was a bit unusual in that it was ordinarily the girls in a family who would be expected to learn to cook. Jesse was fascinated with cooking, however, and his culinary training began there in his family’s kitchen, watching and helping his mother with everything from preparing the dishes themselves, to blending the sauces and spices that packed them with flavor. After coming to the United States, he went on to cook for some of Seattle’s best restaurants before opening a restaurant with his brother in Tigard in the late 1980s. They noticed many customers were driving over from Yamhill County, so they started looking for a space in the local area and ultimately settled on an empty building at the intersection of Highway 99W and McDaniel Lane. In 1999 they moved to their current location, also on Highway 99W. Today Jesse operates the family-style restaurant with his wife, Nelva, and anywhere from one to two dozen employees; their numbers have varied with the circumstances of this year. He starts his day before dawn, rising early to tend to his family farm’s chickens, cows and heifers before coming into the kitchen to get a jump-start on the meal prep for the day. That involves a lot of cutting meats, slicing vegetables, and making sure that the spices and salsas (which are all made on site with fresh ingredients)

are prepared the same way, every day. The kitchen at Mazatlan offers a full menu of classic Mexican dishes: tacos, burritos, tamales, and the list goes on! They also serve some amazing seafood dishes, a variety of soups and salads, and even some American options like ribs and burgers for those with a less adventurous palate. You really shouldn’t miss out on Jesse’s specialty, though. The sizzling fajita plate is made with a sauce he learned all the way back in his mother’s kitchen! One of the restaurant’s most popular dishes is actually from the soup portion of the menu. Pozole is a hominy dish, with the customer’s choice of chicken or pork. Never tried hominy? It’s essentially corn, but processed in a way that makes it puffier and meaty-tender. Add to that the meat and spices, and you’ve got a steaming bowl of deliciousness that’s sure to satisfy on a cold winter’s day. The beef they use for various dishes starts with a large chuck roast, boiled until it’s easily shreddable and then cooked with the same spices Jesse grew up with. He’s spent years refining the amounts of each ingredient to develop the perfect flavor, responding to customer suggestions and even getting advice from his mother when she visits. As he’s learned the trick is to mix the spices carefully so that no single flavor overpowers the others. Still, Jesse knows that one size does not fit all when it comes to food, so he’s also made sure to have options that accommodate customers who might have a taste for something especially mild or hotter than the norm.

The hot stuff, which most customers prefer, is made with habanero, jalapeno and arbol chiles. For customers who want the flavor without the heat, he prepares a mild salsa made with bell peppers. “Our sauces are made from scratch,” he says. “On the heat, we can do different levels, mild, hot, both red and green. We make those available to customers.” New to Mazatlan? Here’s the best way to get acquainted with as many dishes as possible: try the Mexicana Fiesta from the House Specialties menu. You’ll get a delicious chile relleno, a chicken flauta, a homemade tamale and a chicken and cheese enchilada with a big side of rice and refried beans and fresh tortillas. And if none of those becomes an immediate favorite, you’ll just have to come back and try more! Mazatlan Mexican Restaurant is located at 2714 NE Highway 99W in McMinnville. They are open for both dine-in and take-out. The restaurant’s full menu is available on their Facebook page or at mazatlanmcminnville.com, or call 503-472-9771 for more information.

SPOTLIGHT

Home Based Cat And Kitten Rescue In Yamhill County Written By David Bates, Active Media Contributing Writer

A

bout four years ago, a family asked Brittney Hazel and her wife Kendall if they could help find a home for a stray litter of kittens that had been found in a barn. That was the beginning of Hazel’s House, a cat-and-kitten rescue operation that continues to this day. It is a mission that has put hundreds of stray and abandoned cats in homes where they’re safe, healthy and loved. The name “Hazel’s House” might be a bit misleading for some, conjuring an image of some cramped, smelly facility full of frightened cats. That is certainly not the case in reality. “We don’t have a site,” Brittney explains. “We do all this out of our own house. The majority of the rescue work is all in foster care.” That means a lot of networking with volunteers, screening families that want to help, and matching them up with cats before they go to a permanent home. Due to the ongoing COVID-19 pandemic, they’re not doing in-home visits at this time, and communication is done through the non-profit’s Facebook page, where messages are returned quickly. Hazel’s House can help with semi-feral kittens, mothers with litters, abandoned litters and orphaned kittens, and

BOOST YOUR BUSINESS!

bottle babies. They can set traps to contain the cats if necessary, and are able to work within a 25-mile range of Newberg. They also have helpful information about low cost spay/neuter clinics and vet care. Hazel’s House started out handling around 50 animals a year, but it’s been growing rapidly. In their second and third year, they started a partnership with the Newberg Animal Shelter, and the 2 organizations have a wonderful working relationship which has helped support that growth. This year, Hazel’s House has taken care of about 200 cats. How does the adoption process work? It all happens on Facebook. “When a cat or kitten is ready for adoption, we will post their picture and information and how long we are accepting applications on them for,” Brittney says. It’s not a first-come, first-serve basis, so customers should not expect to be able to “reserve” or “pre-adopt” an animal. “At Hazel’s House we strive to place cats and kittens in their ‘purrfect’ forever home.” Adoption fees are $150 for kittens and $50 for adult cats. Kittens will be started on vaccines, flea treated, dewormed, microchipped, and with a spay/neuter contract. Cats will be current on vaccines, fixed, dewormed, flea treated and microchipped. If you’re interested in fostering or adopting, contact Hazel’s House on Facebook at facebook.com/hazelshousepdx, call 971-264-0760, or email hazelshousepdx@gmail.com for more information.

ODD MOE’S

GOURMET PIZZAS & CRAFT BEER By David Bates, Active Media Contributing Writer | Photos By Teresa Tingley And Stephanie Baker

A

ris Widiatnoko has been in the restaurant business since 2001, so by the time he took over Odd Moe’s Pizza in McMinnville in 2008, he’d already developed some ideas about how to make great pizza. “People will say, ‘Pizza is a fast food,’ but it’s not,” he says. “We make these to order, just like the customer wants it. We make them from scratch, we make the dough fresh every day, we cut the produce every day, washed by hand, cut by hand.” Odd Moe’s has been a go-to pizzeria in the Willamette Valley for over two decades now. The McMinnville restaurant was actually the very first one, founded by Michael Sublett and Samuel Wibowo and it opened in May of 1999. Their pizza proved to be popular enough that the company grew and later expanded to Salem, Canby, Keizer, Hillsboro and Newberg. Since Aris and his wife Liz took the reins, that success and popularity has only continued to grow. The menu at Odd Moe’s provides an astonishing variety of toppings, crusts, sauces and sides to choose from. You can build your own pizza, which means the options are endless, or go with any of a dozen signature pizza selections. One local favorite is the “Lineman,” which isn’t for the faint of heart or palate. It comes loaded with meat and veggies, including zesty Italian sausage, salami, pepperoni, ground beef, mushrooms, black olives, green peppers and red onions. To call it satisfying doesn’t even come close! Not in the mood for tons of red meat? The “Green Monster” is another tasty option, which offers artichoke hearts, spinach, tomatoes, chopped garlic and feta with pesto sauce. Or “The Bull Rider,” which is their version of a BBQ Chicken pizza, but with a surprising twist of added bacon, pineapple, and a chipotle lime barbecue sauce. There’s not a boring or typical pizza in the place; even “The Sweet Spot” takes Hawaiian pizza to the next level by adding breakfast bacon in with the usual Canadian style.

Those with dietary restrictions may take heart as well! Odd Moe’s has vegan and gluten-free diners covered. “We were one of the first pizza places to do a gluten-free crust,” Aris says. “Those have been a hit, and some people don’t realize it’s gluten free. It looks and tastes like a ‘real’ crust.” The beverage menu, meanwhile, offers more than twenty varieties of beer and craft cider, from familiar mainstream brands to local microbrews. They’ve been keeping busy since COVID-19 shut many restaurants down earlier this year. In fact, since delivery became the only recourse for several months, pizza places in general and Odd Moe’s in particular actually got busier, especially since they can deliver beer and cider along with their amazing pizzas! In every town where Odd Moes has established itself, the restaurant gets involved in the community. Here in McMinnville they’ve been proud sponsors of Linfield University, McMinnville Public Schools and youth sports, the American Cancer Society’s Relay for Life, the McMinnville Police and Fire Departments, and more. Odd Moe’s Pizza is located at 1350 N Baker Street in McMinnville. To place an order, please call 503-434-6666, or order online at oddmoes.com/mcminnville.

Understanding The “True Value of Dentistry” “An ounce of prevention is worth a pound of cure” and that is true with preventative dentistry. It’s easier and cheaper to stop dental problems from happening than it is to fix the damage. Preservation instead of repair or replacement keeps your money in your pocket. Getting a cavity is an unpleasant experience as well as a painful reminder that teeth, unlike bones, can’t heal themselves once damaged. Cavities are the result of a tug-of-war happening every day in your mouth. Our teeth, gums and jawbone are under constant attack from bacteria, acidic foods and drinks, trauma and normal wear and tear.

Does NOT include Periodontal Treatment Some restrictions apply. Not valid with any other offers. No cash value. Must present ad. Expires 2/15/21

At some point (myself included) we are guilty of taking our teeth for granted. After all, they have always been so reliable, so solid and it’s hard to imagine they will change any time soon, right? Teeth are no exception to the inevitability of change. Usually changes are so gradual they are hard to detect until something catches our attention like a toothache or even worse, a broken tooth. Dental disease in early stages is painless and relatively slow in progressing, but without intervention it will continue and become costly on a variety of levels. By the time pain, bleeding or breaking teeth occur, there is usually significant and possibly irreversible damage to teeth, gum tissue or bone.

Regular dental visits provide an opportunity to identify potential issues or problems when damage is minimal and solutions are less extensive and less expensive. Our team would be honored to be of assistance with your dental care.

History of the First Baptist Church By David Bates, Active Media Contributing Writer

B

y one recent count, McMinnville has more than 50 churches representing nearly 40 denominations. So it should come as no surprise that First Baptist Church, believed to be the oldest of them all, should have a story that’s bound up with the history of both the city itself and another of its oldest institutions. The church, located on the southwest corner of downtown McMinnville, recently celebrated its 150th anniversary. It pegs its official beginnings back to May 11th, 1867, but the roots of the story go back a little further, entwining with those of Linfield University. The church has what one could call a “chicken-egg” relationship with Linfield. Dr. J. Hybert Pollard in Linfield’s Hundred Years described it: “The church was born of the college. In the nation at large, it is true the church brought colleges into existence, but in the particular case of McMinnville, the college brought the church into existence. Thus it was that as two pioneer brothers, McMinnville College and the First Baptist Church, began their careers together.” He continued, “The pastor of the church and the professors of the college formed the spiritual leadership of the church. The same structure was church edifice on Sunday and college building on weekdays. The sanctuary of the church was the chapel room of the college. The Sunday school classes were taught by college professors and students. The music of the church was directed by teachers from the college.”

So it was that in 1858, a year before Oregon officially became a state, the first President of what was then McMinnville College (now Linfield), the Reverend George C. Chandler, organized the city’s first Sunday School. By the mid 1860s, services at McMinnville Church were being held twice per month until finally, in the spring of 1867, a congregation of eleven men, nine women and two children (“a flock without a shepherd or fold,” according to an official church history) founded the First Baptist Church of McMinnville. Reverend Cleveland C. Riley served as the first pastor of the church, in a city that, by that time, had around 300 residents. There was only one other church in town, along with five stores, three blacksmith shops, two wagon ships, a shoe store and a flour mill. For nearly two decades, the congregation used the McMinnville College building on the corner of 1st Street and Cowls. Then in 1883, the college opened shop on new land about a mile to the southwest,

leaving the congregation to build its own home. The building, which opened on December 2nd of that year, cost $2,100 and measured 34 by 54 feet, with a 65-foot tower. Only five years later, a second church building was built and dedicated. By the turn of the century, First Baptist Church had about 221 members, 140 of whom were women. As the town grew up around it, the church continued to grow as well, needing to expand once again. To finance their third building, the church tried something new. To help pay the $80,000 in construction costs, the church issued bonds, which were available for $500 to both members of the congregation and nonmembers. It paid 6 percent, and was paid back in 1946, around which time more than 300 people were regularly attending Sunday services. Throughout the 20th century, the church grew continuously. In 1964, a $100,000 education annex was dedicated, and 20 years later the church marked the occasion of Dee White becoming the first woman to serve as moderator of the church board.

parishoners, but it was under Harrop that a uniquely visible advance was made: he presided over a marriage ceremony for two women. Today, the church’s statement of affirmation reads, in part: “We rejoice in our diversity and seek to understand our differences as ways of more fully encountering the beauty and complexity of the image of God. We commit to creating a community where people of all ages, abilities, genders, gender expressions, sexual orientations, races, ethnicities, nationalities, experiences, backgrounds, and situations are celebrated as full participants, as together we strive to be faithful followers and proclaimers of Good News.”

“A Story That’s Bound Up with the History of the City Itself ”

In 1994, Kent Harrop began a tenure as senior pastor at First Baptist Church that lasted until 2014. During that time, he oversaw the most recent of infrastructure expansions: the building of the Gathering Room in March of 2001. The church has a long history of commitment to social justice causes. Harrop credited his predecessor, Bernie Turner, for making the church a welcoming place for gay and lesbian

In September 2015, Reverend Erika Marksbury became the senior pastor at First Baptist. The following year, on the eve of the church’s sesquicentennial event, Marksbury observed in an interview with the local newspaper that history isn’t just the past; it’s ongoing. In an effort to keep adding to the church’s story, she regularly poses a question to the congregation. Members are then invited to have their responses recorded, to capture what she calls “the continuing saga of our lives.” First Baptist Church is located at 125 SE Cowls Street in McMinnville. The church staff can be contacted by phone at 503-472-7941, or by email at office@fbcmac.org. Beaded Snowflake Ornaments

OF SEASONAL INTEREST

HOW TO MAKE

P

erhaps more than any other year, this holiday season is a great time to get crafty and creative! With everyone stuck inside even more than usual, it can be easy to go stir crazy, but a fun project will really help to ease the boredom and restlessness. This project is especially great because at the end you’ll have beautiful ornaments to hang on your tree or around the house for years to come!

W H AT YO U ’ L L N E E D : • Wire snowflake forms (these can be purchased online or find a tutorial to make your own) • Assorted beads (make sure the holes are large enough for the wire) • Needle nose pliers • Ribbon for hanging (or an ornament hook)

S T E P S: • Bead one prong of the wire form, leaving about ½ inch at the end. • Use pliers to bend the end of the wire back and close it to make a loop. • Repeat steps 1 & 2 for all of the remaining prongs. • Insert ribbon through one of the end loops and tie the ends together, or simply use an ornament hook. *Instructions from happinessishomemade.net 30  To Advertise With Us, Call 503.825.2111
