TASTE OF THE TOWN

AUTHENTIC MEXICAN SEAFOOD

AT MI LINDO NAYARIT MARISCOS Written By David Bates, Contributing Writer Photos By Kara Langley Photography

McMinnville’s options for tasty Mexican food just got a little bigger! Mi Lindo Nayarit Mariscos is located in the Baker Street Square shopping center location that’s been home to several restaurants over the years. At Mi Lindo, seafood is what they do best and in great quantities and varieties. The menu is available at the restaurant’s website and Facebook page and is loaded full of seafood dishes, from various versions of fish to crab legs, crawfish, scallops, mussels, and octopus. The restaurant was started by Sandy Rodriguez Arellano and her husband Irvin Amaral, the chef behind the scenes, whose authentic Mexican cooking fills plates inside their lovely restaurant and take-out boxes for those who prefer to eat at home. “I’m from Mexico, from the state of Nayarit,” Sandy said. The couple moved here a few years ago and this is their first restaurant. “Where we come from, seafood is the traditional food from my state. We grew up in an environment eating seafood every day. My mom taught me to cook as well as my brother.”

Nayarit, which is along the Pacific Coast, is famous in the culinary world for imaginatively incorporating marine ingredients into typical Mexican platters you’re likely familiar with: enchiladas, tacos, burritos, chimichangas and tamales. Mi Lindo Nayarit translates to “My beautiful Nayarit” and mariscos translates to seafood. It’s worth spending some time reviewing the huge menu before ordering, but Sandy might be able to sell you right here on the restaurant’s signature dish: Pescado Zarandeado. “We do a traditional Pescado Zarandeado, which is a whole fish,” she said. “We open with a robalo fish, also known as a sergeant fish, cut in half and then marinate in chili and spices. Then we put it on the grill and it’s slowly smokedgrilled in mesquite. You have to wait 40 minutes for the fish to be ready. That’s a traditional plate from there. If you travel to Nayarit, you’ll find that everywhere.” The dish is served with fresh greens, rice, and warm tortillas. While you’re waiting for the Pescado Zarandeado, check out the appetizers! Aguachiles de Camarón are a tasty way to dip into Nayarit cuisine: fresh shrimp cooked in lime juice with your choice of green, red, or spicy black sauce. Oysters on the shell are among the starters that will look familiar, but some invite an adventurous spirit, like Langostinos, which is the meat from the tail of a crawfish that resembles shrimp but has a sweeter taste.

Here’s a few more of Sandy’s favorite dishes: CHICHARRÓN DE PESCADO “This is a delicious fried fish dish which gets its name for resembling little pieces of fried pork skin. It’s white fish cut in small pieces, marinated in a flavorful blend of salt and spices. Then the fish is coated in flour before being fried to crunchy perfection.” CEVICHE DE PESCADO “A simple, healthy ceviche made with fresh tilapia filets, cooked in lime juice and mixed with fresh tomatoes, cilantro, and red onions. The best way to eat is with tortilla chips.” CAMARONES CORA “Definitely try if you love spicy shrimp. It’s fried to the point where the peel is extra crispy, then stewed in a house-made spicy chili sauce. Served on a bed of red onions and cucumbers. To be able to taste the flavor you must eat them with the peel.” Other delicious specialities include: Charola Mi Lindo Nayarit, a savory mix of devil shrimp, garlic shrimp, fried shrimp, bacon-wrapped shrimp, breaded shrimp, fried fish and crawfish served with rice, fries, salad, and thick, chewy bread; Charola Huichol, which includes head-on shrimp, peeled shrimp, octopus, mussels, crab meat, snow crab meat, and fresh prawns with an option of mild devil sauce, house

sauce, dried chili sauce, or garlic sauce, all served with fries, salad and garlic bread; and Torre Ixtlan, a tower of fish ceviche, raw shrimp, steamed shrimp, octopus and scallops with red onions and cucumbers on a special sauce. Mi Lindo Nayarit Mariscos is also available for catering, so if you’ve got a large gathering planned, check out the party platters (and call well in advance). Mi Lindo Nayarit Mariscos is located at 1310 NE Baker Street in Baker Street Square. They’re open 7 days a week. Give them a call at 971-706-5152, or check out their menu at ilindonayarit. business.site and on Facebook. Take-out is available.

SEE YA LATER FOUNDATION

Inspiring Youth – Encouraging Families

T

By David Bates, Contributing Writer

he See Ya Later Foundation is a McMinnville-based nonprofit inspired by Scott Banke, who died of cancer when he was 12 years old. The example of his courage and relentless optimism has burned so bright over the years as to bring hope and encouragement both to other families facing a life-threatening diagnosis as well as thousands of children. “We are not a need-based foundation, but a joy-giving, hope-bringing group of people who just love to bless others, with no strings attached,” said SYL Foundation Executive Director Carmen Banke, Scott’s mother. The name of the group itself, “See Ya Later!,” was also inspired by Scott. In one of the last video clips of him, shot during a Make-A-Wish cruise, he wrapped up a summation of the day’s events by looking into the camera and saying, “See ya later!” The group launched in 2007, the year Scott would have graduated from high school, and since then the SYL Foundation has done tremendous good for local youth. Currently, it awards ten local high school seniors a $2,000 scholarship, and to date has awarded more than $180,000 to 95 students in Yamhill County. The SYL Foundation also organizes local youth camps in basketball, football, soccer, music, and even fishing derbies. Camps are offered at little-to-no cost, and in 15 years more than 5,000 children have participated. Finally, through the Seeds of Hope program, SYL provides encouragement and support to families in Yamhill, Polk and Marion Counties, where a life-threatening medical

illness is faced by a family with one or more children in the household. “Encouragement will look different to each family,” Banke said. “It may come by way of groceries, gas cards, clothes, new tires, bunk beds, a utility payment, a few nights get-away at the beach or Sunriver or Great Wolf Lodge, or somewhere close for mom and dad like the Oregon Gardens.” Fundraisers held throughout the year, from the popular Scott Banke Memorial Golf Tournament in August at Michelbook Country Club, to Trivia Night (the next is April 30 at The Bindery) and fun runs in September, provide financial support to the SYL Foundation. Banke calls the work at SYL amazing and rewarding, and never lacking in inspiring stories. For example, take Kennedy Amundson. She was diagnosed with cancer in 2008 when she was ten, and Seeds of Hope helped her and her family through the struggle. The Amity youth was awarded a Scott Banke scholarship and would later volunteer with the group. Today, she’s come full circle: She is the SYL Foundation’s new executive assistant. “She claims that this is her dream job,” Banke said proudly. “And we believe her!” “See Ya Later” Foundation is located at 1016 NW Adams Street in McMinnville. For more information, call 503-434-1730 or visit them on Facebook or at www.SeeYaLater.org.

HISTORY

The History of Linfield Football: A Streak of Greatness By Robert Matsumura, Contributing Writer

If

you’re a fan of college football, doubtless names like the “Crimson Tide,” “Fighting Irish,” and “Buckeyes” require no explanation. They speak for themselves. However, if you don’t follow NCAA Division III football, you might not realize that one of the nation’s most successful football programs resides right down the street in McMinnville, Oregon. None of the haloed Division I teams cited above can match the accomplishments of the Linfield University Wildcats. It started on an autumn day, October 6, 1956. Great things often have humble beginnings, and for Linfield football this was certainly the case. While it would have been more dramatic if the Wildcats’ win that day had been defined by a scintillating highlight moment—a miraculous last minute catch in the endzone, or a gutty goal line stand—such was not the case.

experience it and build up over the years.” For a team composed of small town kids and Korean War veterans attending college on the GI Bill, they had no idea that their victory over the Ramblers that fateful October day would be the start of the “Streak.” The “Streak,” which has now extended to 65 consecutive winning seasons as of 2021, is the longest active winning streak in NCAA history at any level. No other team is even close to this record, with the next in line coming in at 42. In retrospect, Ward admits no one at the time had any idea of what was to come. “I guarantee you that in 1956, nobody had any idea there would be any kind of streak,” he said. “We were just happy that we could get through the season with a win.”It was coach Paul Durham’s team that started the “Streak,” but it is a testament to the pride, tradition, and dedication to excellence, fostered by successive coaches over the last six decades, that is

1956 Linfield champs

Linfield had just suffered back-to-back losing seasons, and the 1956 campaign looked like more of the same. The opponent that Saturday was the Seattle Ramblers, a semi-pro team on a tear, who had defeated the Wildcats the previous year, and dominated the conference titles over the last 14 seasons. Against the odds, Linfield managed to defeat the Ramblers 13-7. From that game on, the Wildcats wouldn’t lose another game that season. This win over the Ramblers marked the beginning of what has become known as the “Streak.” Paul Ward, who played guard on the ’56 team, recalled: “Once we had a winning season, we knew we could win. We had to

responsible for Linfield’s relentless march through the NCAA history books. Looming at the forefront of the Mount Rushmore of Linfield football coaches is Ad Rutschman. Hired as head football coach in 1968, Rutschman continued the winning tradition until his retirement in 1991. Rutschman not only coached football, but baseball as well. Rutschman is still the only coach at any level to win national titles in both football and baseball. In his 24 seasons as Linfield ’s head football coach, Rutschman won three NAIA national championships (1982, 1984, 1986), and 15 Northwest Conference titles. Perhaps Rutschman’s most epic victory occurred in the 1984 national

championship game, where Linfield trailed Northwestern 22-0 with just over three minutes left in the third quarter. Against all odds, the Wildcats roared back to win the game 33-22. In addition to coaching football and baseball, Rutschman also served as Athletic Director for 25 years, during which time the school’s athletic facilities were greatly improved. Among these improvements were two new gymnasiums, a baseball stadium, and the 26,600 square foot field house named in honor of Rutschman and his wife Joan, for their dedication and service over 27 years to Linfield University. From 1992 to 2005, Linfield’s football program was led by Ed Langsdorf (1992-95) and Jay Locey (1996 -2005). Both coaches kept up the winning tradition. Langsdorf ’s brief tenure resulted in a record of 32-9-1 and three championships. Locey’s tally at the end of his Linfield career was a stellar 84-18 and six championships, including one NCAA Division III title. During one stretch of his impressive career, Locey coached the team to a 41-game win streak.

one another. This intense trust that grows from respect and brotherhood is interwoven with a blue-collar work ethic of toughness

and we are the hammer.” So next fa ll, as Linf ield continues on its historic ma rch through the NCAA record books, take a moment to appreciate what six decades of commitment to family, grit, and excellence can achieve. As Coach Smith ref lected, “From Coach Durha m to Coach Rutschman, to now, the secret to this place has been that we have really good people coming and being part of a really good program. When you focus on excellence and put the team first and you’re a man of your word, great things happen.” The “Streak ” lives on!

“It couldn’t be someone from the outside to come in and run the program,” Smith explained. ‘We had to maintain who we are. If we lost that, we’re just another school’.”

In 2006, the future of Linfield football was turned over to Joseph Smith, and he has not only continued the “Streak” but pushed the school into the NCAA record books. Under Smith’s leadership Linfield has amassed an incredible record of 13827, with a .836 win percentage, the highest percentage of any coach in Linfield history.

When Smith, a former defensive back for Linfield in the 90s, took over in 2006, he was well aware of the legacy he was responsible for and described his role as that of a “caretaker.” With Locey’s departure, Smith understood that the decision to hire him had been carefully considered. “It couldn’t be someone from the outside to come in and run the program,” Smith explained. “We had to maintain who we are. If we lost that, we’re just another school.” The Smith era at Linfield has been nothing short of remarkable. For a school that offers no football scholarships, a modest budget for athletics, and typically doesn’t attract big time recruits with NFL aspirations and talent, the question remains: “How does Linfield do it?” How do the Wildcats continue to churn out victories, winning seasons, and championships? Ultimately, how do they keep the “Streak ” alive? Smith credits a number of factors, foremost of which is the sense of family that permeates the entire Wildcat program. Caring for

Coach Joseph Smith

and a thirst for excellence. Ryan Carlson, a defensive star on the 90s era teams, sums it up beautifully: “Once you’re in our Linfield family, you’re connected to 60 years of people who have had those core principles shape their young lives. Those life experiences continue to breed an incredible amount of love and loyalty towards the program.” As inspiration to his players, Smith periodically invites guest speakers to address the team. One of the speakers, Bretton Brown, an Army Ranger and a friend of Smith’s, imparted words from the Rangers’ credo that resonated with the team: “We are Men of Action. We do the heavy lifting. We are the walls,
