FAT CUPCAKE
IN GOOD TASTE
SHARE THE JOY OF A CUPCAKE By Dennis McNabb, Active Media Contributuing Writer • Photos By Craig Brubaker Photography Anjelica Otness Owner of Fat Cupcake
“Life is unpredictable. Eat dessert first!”
Owner/operator of Fat Cupcake, Anjelica Otness, heard those indelible words often in her younger years. Coming from her mother, they weren’t just words either. They represented a way of life; a “carpe diem” attitude that for Anjelica, inevitably inspired her entrepreneurial spirit and led to the launching of her own business. Anjelica’s love and passion for dessert began at an early age. She started baking in her childhood and quickly became quite adept at it. Her 3 siblings were her taste testers and together, as you can imagine, they came up with some fairly radical flavor profiles. As she grew older, her stellar reputation as the family baker spread, and she started getting requests for parties and weddings. In school, she studied business with a focus on entrepreneurship. That education along with her baking expertise prepared her to take on the world! At age 24, Anjelica founded Fat Cupcake and opened her first location in Oregon City in 2014. With just one additional employee, and a lot of help from her folks (one particularly busy day her father came straight after work, still in suit and tie, put on an apron and got behind the counter!), her world of delicious treats has exploded. Her focus on quality control, combined with her insistence on using only the finest ingredients, not to mention her innate love of fun and fanciful flavors, has proven key to her success. It’s only 7 years later and she now is the proud owner of 3 locations, one of which we are lucky to have here in Happy Valley! What is it that makes her desserts so fantastic? Well, for starters, she uses only real butter (which is surprisingly uncommon in the industry), but mainly, it’s about her flavor profiles. She and her employees have a blast
coming up with new and exciting combinations and they’re always trying something new. They have their regular classic flavors in stock all the time, but they also feature monthly & seasonal flavors, as well as weekly pop-up flavors that are always changing. They typically have upwards of 17 varieties at any given time! Favorites include: “Pretty in Pink” (pink champagne cake, white chocolate mousse, vanilla buttercream), the “Suit & Tie” (marble cake, caramel buttercream, sea salt, caramel drizzle), “The Professional” (chocolate cream-filled cookie baked inside white cake, cookies n cream buttercream, chocolate drizzle), and their special dipped cupcakes (various flavored cakes with mousse frosting dipped in chocolate or white chocolate ganache). “What a Peach” (vanilla cake, peach mousse, peach buttercream) will be a delicious new seasonal flavor to savor in June, and in July “The Beach Bum” (vanilla cake, coconut mousse, coconut buttercream) will be making an appearance. No matter the flavor, these treats are decadent and deliriously delicious! Locally owned and operated, and inspired by a lifelong passion for making the very best in desserts, Fat Cupcake is certainly going to be your new favorite spot to sate your sweet tooth! Anjelica sincerely thanks her community for their support, especially during COVID! They were donating 1000 cupcakes per year to various local charities before COVID, and they appreciate the support they’ve received during the difficulties of the past year. Please continue to help support amazing local businesses like Fat Cupcake!
Fat Cupcake is located at 13203 SE 172nd Ave, Suite 170, at the intersection of 172nd and Sunnyside Road in Happy Valley. For more information call 971-2244286 or visit fatcupcake.com.
