ce cream is one of life’s greatest indulgences. When it comes to dessert, who doesn’t consider it to be a favorite? And let’s be honest, there are places nowadays which offer premium gourmet ice cream that is a far cry from the stuff we grew up on; places which have elevated it to a true art form. Locally, we are incredibly fortunate to have that very thing in the Great Northwest Ice Cream Co. Located in Cornelius, the Great Northwest Ice Cream Co. is the last place you will ever go for ice cream again. Ivan and Ana Godfrey purchased the business from the founder, Patricia Hansen, back in 2014. Initially, they planned to keep it as a side business, maintaining a presence at the Saturday Market and selling to wholesalers the way Patricia had been doing. A few years later, fate intervened. Ivan had quit his regular day job and found out he needed open
heart surgery. Then the surgery was scheduled to take place one week before Ana was planning to give birth to their first child! It was a tumultuous time to say the least, and it was only through the support of family and friends that they managed to keep the business afloat. As it happened, though, this experience also helped them put things into perspective. That’s when they decided to expand the business to include a retail storefront. Their current spot in Cornelius came available, and in 2018 the Great Northwest Ice Cream Co. opened its doors to the public. Initially, the plan was to keep it simple. They had a winning formula and didn’t care to fix what wasn’t broken. However, a retail outlet offers opportunity, and since opening (in particular since COVID-19), they have expanded to include other tasty treats as well. Although they are always experimenting with new things, you can now regularly get milkshakes, sundaes, chamoy
sundaes, banana splits, affogatos, shaved ice, and hand-packed pints, quarts, and half gallons. And everything is made fresh in-house! There are fairly strict rules when it comes to ice cream and its various distinctions. In order to be called ice cream (versus “frozen dessert”), it has to contain between 10% and 20% fat content. The closer to 20%, the denser, richer, and creamier the texture. Generally speaking, those who make it with less fat content add more sugar, which gives it a more sickly-sweet flavor and icier texture. Great NW Ice Cream Co. keeps theirs relatively high at about 16% fat, so it’s always rich, delicious and creamy! And because Ivan and Ana make it themselves, they are able to maintain their strict standards. Favorite flavors include Salted Caramel, Mud Pie, Cookies N’ Cream, Anna Banana, and 2319 (which is caramel with

Oreos!). For those with dietary restrictions, they have fantastic dairy-free and vegan sorbets. And while the flavors do rotate fairly regularly, you can generally count on the most popular ones being available any time. Seasonal flavors are very popular of course, and include favorites like: Peppermint Crunch, Eggnog, Gingersnap, and Cranberry-Orange Sorbet. A timeless and musical retelling of Charles Dickens’ novel “A Christmas Carol.” The classic tale features a grouchy miser Ebenezer Scrooge, who is visited by several mysterious Christmas ghosts and proceeds on a journey of self-redemption and humility. Starring the prolific and classically trained actor Albert Finney as Scrooge, co-stars include Alec Guiness (Obi-Wan!) as Jacob Marley’s Ghost. Heartwarming and innocent, Scrooge is a great movie to watch by the fire with the whole family. Rated G.
The Nightmare Before Christmas (1993)
A cult classic musical and uncanny take on what we consider a Christmas movie, Tim Burton’s The Nightmare Before Christmas features a fantastical stopmotion universe full of whimsy, humor, and heart. After Jack Skellington discovers the cute delights of Christmas Town, he decides to host his own macabre version of Christmas much to the confusion of Halloween Town’s spooky inhabitants. Accompanied by a beautiful score, the vocal performances are stellar, featuring Catherine O’Hara as Sally and Danny Elfman as Jack. Rated PG for scary images and animated violence.

Home Alone (1990)
By far my favorite Christmas movie, Chris Columbus’ and John Hughes’ Home Alone is a hilarious and heartfelt movie about family and redemption. Kevin McCallister (Macaulay Culkin), the youngest child and troublemaker in a large family, always feels forgotten and resented, and that’s even more apparent when he’s left home alone while his family flies to Paris for Christmas. Instead of panicking, Kevin relishes his time alone and becomes more independent, doing his own grocery shopping, laundry, and decorating for Christmas. Eventually he runs into the local cat burglars, Harry and Marv (Joe Pesci and Daniel Stern), who are planning to rob his house. And that’s when the fun and chaos go into high gear. Rated PG for violence and coarse language.
National Lampoon’s Christmas Vacation (1989)
Chevy Chase stars and steals the show in John Hughes’ hilarious Christmas romp. This is the go-to “what could go wrong at a family holiday?” movie. While Clark (Chevy Chase) is anxiously awaiting his holiday bonus, the Griswalds are hosting the quirky grandparents when the long-lost country cousins show up broke in their old RV. Trying to make the perfect Griswald Family Christmas under incredible stress, Clark becomes hilariously angry and nostalgic, eventually blowing up when he can’t take it any longer. In the end, Clark concludes that the holidays are less about money and decor than spending time with family, especially those willing to commit felonies for your happiness. “Yule Crack Up!” Rated a strong PG-13 for vulgarity, profanity, and sexual references.

ave you ever stood in the wine aisle of your local grocers during the holidays, baffled as to the appropriate wine for meals featuring poultry, beef, pork, or seafood—not to mention the array of appetizers and side dishes? Our guide below will help simplify this process with six wines flexible enough to compliment your holiday cuisines from autumn through winter.
Sauvignon Blanc
Also referred to as “Sancerre” in France, this medium-light bodied white wine is a winner. It features a crisp, herbal profile perfect for turkey, goose, chicken, or seafood.
Pinot Noir
With its bright acidity and versatile nature, Pinot Noir is one of the best choices for the holidays. It excels across the board with poultry, pork, and hearty beef dishes. The Pacific Northwest and California offer many solid choices with fruit-forward characteristics sure to please even the most discriminating palates.
Zinfandel
A more full-bodied white, Chardonnay is an excellent partner to fish or roast poultry. Likewise, Chardonnay pairs beautifully with beef, should you have guests who prefer to drink only white. In this case, opt for an oak-forward Chardonnay, as it will enhance the robust flavors of the beef.
Red Zinfandel has long been considered a great Thanksgiving wine for its ability to compliment turkey while also blending well with cranberry sauce and other sides. Its fruit-forward profile, along with notes of cinnamon, clove, and vanilla evoke the holiday season. Zinfandel also performs admirably with beef and pork, should your holiday dinner include a roast or baked ham.

Cabernet Sauvignon
Chardonnay
Not as well-known as other whites, Viognier is a fantastic partner to roast turkey and other poultry dishes. Rounded in body with undertones of honey and spice, some of the best Viognier comes from the Rhone region of France, as well as Australia and South Africa. Like Chardonnay, Viognier can also play well with beef.
Cabernet Sauvignon, the “King of Reds,” is the ultimate pairing for beef. Cabernet’s dark, full-bodied character, often reminiscent of currants and black cherry, enhances the hearty flavors of such entrees as prime rib or crown roast.
Syrah/Shiraz
Another fabulous red wine to pair with beef is Syrah (known as Shiraz in Australia). This luscious red bursts with complex flavors from pepper to cherry, smoky to floral. Syrah, made in France’s Rhone Valley, is generally known more for its elegance and complexity, while Shiraz is bolder and more fruit-driven. If beef is on the menu, you can’t go wrong with Syrah.

Let’s say you’ve been invited to a holiday event and wish to bring a bottle of wine, but you’re uncertain of the menu. The safest choices might be Pinot Noir or Chardonnay. Both wines have versatility across a broad spectrum of entrees, and will be welcome additions to the holiday table. Cheese For The Holidays A Quick & Easy Guide To A Savory Cheese Board By Robert Matsumura, Active Media Contributing Writer
A
s the holidays roll around, entertaining family and friends takes center stage. For many of us the holiday cheese board is a star player in the food festivities, yet with the plethora of choices available at local markets, assembling it can prove a bit daunting.
Basic Strategy
For presentation purposes, select cheeses of different colors, shapes, and sizes. When calculating the amount of cheese to purchase, three ounces per guest is a solid guideline. Thus, if you’re serving three types of cheese and entertaining 12 guests, you should buy at least 12 ounces of each type. If other appetizers will be served, the amount of cheese can be reduced to two ounces. In general, three varieties of cheese—a hard, a semi-hard, and a soft—will provide ample variety for most events.
Hard Cheeses Aged Gouda
This Dutch cheese is always a strong player on any cheese board. If you prefer a sharper, nuttier flavor with those delicious salty bits, opt for a Gouda aged at least 10 months. Many of the premier Goudas will be aged up to 18 months or more. Top brands include Beemster, Parrano, and Rembrandt.
Manchego
A full-bodied cheese made from sheep’s milk, this Spanish cheese from the La Mancha region is creamy yet nutty with toasty nuances. Aged Manchego has a wonderful granular texture much like aged Gouda, and will be a superb compliment to fruit or meats such as prosciutto, salami, and capicola.
Cheddar
A good aged cheddar is always a welcome member of any cheese board. American, English, and Irish cheddars are all fantastic choices, providing slightly different characteristics. In general, the longer a cheddar is aged the sharper the flavor. Tillamook, Kerrygold, and Cabot are all fine choices.
Semi-hard Cheeses Fontina
Originally from Italy, this versatile cheese features a sweet and pungent character nuanced with tones of butter and roasted nuts. It is rich and creamy with an intensity of flavor that increases with age. Sartori, Stella, and Boar’s Head are all excellent brands.
Comté
One of the most popular French cheeses, this creamy, mild cheese is a pleasing addition to any cheese board as it blends well with bolder flavored meats and preserves while adding a luxurious undertone. Jura Flore, Fort Rousses, and St. Antoine are all quality brands.
Soft Cheeses Brie

f you’ve been following our monthly insurance articles with local State Farm agent Sandy Monterroza, you’ll remember what an emphasis she places both on educating her clients and on community service. Focusing on these elements is not a requirement of the position, but it’s exactly what puts her head and shoulders above the competition.
First: Education. I think we can all agree that the average person doesn’t necessarily understand all of the different types of insurance coverage that are available. More importantly, they don’t understand what they really need, or even sometimes what they currently carry. In order to help empower her clients, Sandy and her team have focused on making education a part of the process. This way, clients can have a greater understanding and make well-informed decisions on their own. Second: Community service. Philanthropic activity is a cornerstone of Sandy’s business. She comes from humble beginnings and takes nothing for granted. As much as the community has supported her in her endeavors, and as grateful as she is for that support, she refuses to rest on her laurels. The winter solstice is the shortest day and longest night of the year in the Northern Hemisphere. It's marked by the point at which the North Pole is at its farthest from the sun during its yearly orbit around the sun. Despite the temperature outside, the winter solstice is considered the astronomical beginning of winter. Meteorological winter begins December 1st and lasts until the end of February. Depending on how far north a person is in the Northern Hemisphere during the winter, their day can range from 9.5 hours to absolutely no sunrise at all. On the bright side, the days will gradually become longer in the Northern Hemisphere until the summer solstice in June. JEANIE CLARKE By Dennis McNabb, Active Media Contributing Writer
off when she got hired almost immediately as a graphic artist for MacMillan McGraw-Hill, a company which produced textbooks. She did that for almost a decade before moving back to Portland (where she had lived previously). Upon Jeanie’s return, her sister introduced her to a relatively new but burgeoning company by the name of Jackson Pacific, where she still works today (although she technically retired in 2017). Jackson Pacific is known around the world for producing beautiful customized brass ornaments, the kind you might find at many vacation destination spots! Pittock Mansion, Camp 18, and the OHSU Tram are just a few of the local attractions boasting such ornaments, many of which were designed by Jeanie. lthough there are always exceptions to the rule, it’s safe to assume that most of us have done a little traveling at some point in our lives, even if only around the state of Oregon. Often our travels likely included an interesting destination, like the picturesque Oregon coast or majestic Crater Lake, or perhaps just a pit stop at a random fantastical site claiming to be the “World’s Only This” or the “Country’s Biggest That.” Inevitably, with eyes full of wonder, many of us simply refused to leave without a souvenir to commemorate our experience; but did you ever wonder where those souvenirs might have come from? Let me introduce you to Jeanie Clarke. Born in South America and raised in New York, Jeanie came from an artistic family. Her father was a painter and several other relatives on her father’s side designed Hallmark cards, so Jeanie was exposed to the arts from an early age and was encouraged to develop her own style of creative outlet. In grade school, art classes were her favorite field of study, but she’d always had a practical side as well. The plight of the tortured starving artist did not appeal to her, and so she earned a much more marketable degree in Graphic Arts from Monterey Peninsula College in California. Her decision paid

Little did she know how successful the business would become or how much she would grow to love it. Bricks & Minifigs is a fantastic place for so many reasons! Grinch Cookies Despite their name, these cookies are about as festive and holiday-friendly as can be! These soft and chewy cookies are colored Grinch-green and decorated with milk chocolate candy pieces. INGREDIENTS
1 C unsalted butter softened 1 2/3 C sugar 2 large eggs 2 teaspoons vanilla extract 3-5 drops green food coloring 3 1/3 cups all-purpose flour
2 teaspoons cornstarch 1 teaspoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1 ½ cup red and green M&Ms plus additional ½ cup
DIRECTIONS
1. Combine butter and sugar in a large bowl and use an electric mixer to beat until well-combined and light and fluffy (about 1 minute). 2. Add eggs, one at a time, beating well after each addition. 3. Stir in vanilla extract and food coloring, until well-combined. 4. In a separate bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt. 5. Set mixer to low speed and gradually stir dry ingredients into butter mixture. Add ingredients and stir until well-incorporated. 6. Fold in M&M candies and cover bowl with plastic wrap. Chill in refrigerator for at least 30 minutes. 7. Once dough has finished chilling, preheat oven to 350°F and line a cookie sheet with parchment paper 8. Drop cookie dough by heaping 1 ½ Tbsp-sized scoops onto

HISTORY
HARVEY L. CLARKE OREGON PIONEER By Donovan Darling, Active Media Staff Writer
H
arvey L. Clarke was a settler, missionary, educator, and one of the founders of what would become Pacific University. He also helped found the towns which would later become Glencoe and Forest Grove, Oregon. As a missionary and leader, Clarke was instrumental in early education and working with local Indigenous tribes in the Willamette Valley.

A New England native, Clarke was born in Chester, Vermont in 1807. In Vermont he married Emeline Cadwell, with whom he later had five children, and in September 1840 they moved to Oregon Country. In Oregon, Clarke worked as a Congregational Minister, and he and Emeline worked as independent missionaries.
Clarke taught at the Methodist Mission on the French Prairie in the Willamette Valley. By 1842, Harvey and Emeline had moved to the North Tualatin Plains, where they built a small log cabin in Glencoe. They taught Indigenous Métis children from Red River, and a few Atfalati children, in their log cabin. Harvey and Emeline were the first teachers in what would become the district of Tuality and later Washington County, Oregon. They moved to West Tuality on the Tualatin Plains and continued to teach there. This area would later become the town of Forest Grove, where Clarke would later take a land claim. In 1843, he was one of several participants
from the Tualatin Valley that participated in the Champoeg Meetings, which were held between 1841-1843 to discuss governance of the Champoeg settlement between European-Americans and French Canadians. At the May 2, 1843 meeting, Clarke voted for the creation of the Provisional
Government of Oregon, which passed by a 52 to 50 margin. Later in 1844, Clarke established a Congregational Church (a log cabin) in Forest Grove and another in Oregon City. In 1845, he served as one of several chaplains to the Provisional Legislature of Oregon. In 1846 in West Tuality, later known as Forest Grove, Clarke made his land claim for nearly 480 acres. This land claim was vital to the founding of Pacific University. In 1842, Harvey and Emeline Clarke founded a school for Indigenous at Glencoe, which would later be called Hillsboro, just east of Forest Grove. A few years later, Tabitha Moffatt Brown arrived in Forest Grove and joined the Clarkes in operating a home
for orphans. In 1848, George H. Atkinson arrived in Oregon and began working with Clarke to create a college, which was chartered by the Oregon Territorial Legislature in 1849 as Tualatin Academy. Clarke donated 20 acres to the school and deeded another 200 acres. Tualatin Academy would expand with the founding of another college in 1854, Pacific University, while the academy would be closed in 1915. Marsh Hall, at Pacific University, is built where the three original land claims of the town’s founders met, including Clarke’s. In 1849, Clarke taught for a while at the Clackamas County Female Seminary. Clarke would sell an additional 150 acres of his land claim and donate the proceeds to Pacific University. The Reverend Harvey L. Clarke died on March 25, 1858 at the age of 50 in Forest Grove. He’ll be forever remembered as an incredible pioneer in Western Oregon history.

Strengthening Inside and Out
It was a devastating blow but she survived, and one of the key factors, according to her doctors, was her excellent fitness. That encouraged her more than ever to keep at it! But that wasn’t the end of the story. One year later, she discovered she had a brain tumor and had to go through the entire process (surgery, radiation therapy, etc.) all over again. And again, her fitness, along with a little luck, great doctors, and support from her husband and friends, were credited for her amazing recovery.

And where did she receive the majority of that support? Curves! She had already been a member for several years and was a huge proponent of the program. But it was the chance meeting of another member, Jessica, a woman who has since become one of the best friends she’s ever had, that gave her the extra drive she needed. In fact, the whole community of women at Curves came together to support her during her darkest hours, and it was an experience she’ll never forget. In a lot of ways, she attributes their support, along with that of her husband, to her making it through.
