FUJIYA RAMEN
SHARING A PIECE OF JAPAN’S RICH HISTORY & CULTURE By Dennis McNabb, Contributing Writer Photos by Shonda Feather
Authentic Japanese dishes found locally in Camas! Instant (ramen) noodles were invented by Momofuku Ando in 1958, and in a Japanese poll were named the greatest Japanese invention of the 20th Century. Ramen’s popularity exploded in the 1980s to become a Japanese cultural icon, and to this day it’s still one of the country’s most beloved foods. Astoundingly, there are more than 24,000 ramen shops located across Japan—which, for the sake of perspective, is more than McDonald’s and Burger King have combined across all of America. Sharing a piece of that rich history and culture with us here locally is Fujiya Ramen. Locally owned and operated, Fujiya Ramen opened in 2019, one month prior to the pandemic spreading across the globe. Established businesses everywhere began closing down, never to reopen. Even without the pandemic, 60% of all new restaurants fail within the first year, so for Fujiya Ramen, survival seemed to be an almost insurmountable challenge. But survive, they did! Thanks to hard work, dedication, a superior product, and the support of their community, they have even thrived. Owner, Summer ShuHui Xu, could not be more thrilled or more grateful for the support. He has worked tirelessly to provide the best dishes possible, even listening to customers’ input regarding flavor profiles, levels of spiciness, etc.
These are authentic Japanese dishes that he serves, but with slight modifications to appeal more to an American palette. It’s difficult sometimes to find that perfect balance, but it would seem he’s found his mark. The key to the whole dish, according to Summer, is the broth, and it took months of study and trial-and-error for him to perfect it. The process involved, as he describes it, is quite intricate and extensive. Requiring over 8 hours of cook-time, and utilizing upwards of 40 lbs of very specific pork bones to produce just one pot of broth, this is the “magic ingredient” that sets them above the competition. That same level of care is given to every aspect of their menu though. Only the freshest and highest-quality ingredients are used! Favorite local dishes include: Spicy Miso Ramen (a pork and miso combination with

homemade spice sauce, topped with pork belly, corn, green onion, egg, and fish cake), Garlic Tonkotsu (garlic-flavored pork broth with pork belly, topped with egg, bean sprouts, green onion, and nori), and Chashu Don Rice Bowl (pork Chashu, with unagi sauces, and spicy mayo sauce, prepared fresh and served to order!). Tan Tan Ramen is a specialty dish that cannot be found anywhere else! It is served nontraditionally as dry noodles (with no broth, just sesame oil, and topped with ground pork, egg, fishcake, and onion). All of their appetizers are extremely popular, as are their Japanese Ramune Sodas! Ramune Sodas are a fun and unique treat which come in a bottle that is corked with a marble. The marble drops into the soda after it’s opened and bounces around while consumed. It’s a terrific little gimmick that makes it fun to drink, especially for the kids! Ramen is a historically significant Japanese dish prepared with the utmost care at Fujiya Ramen. If you are looking for something delicious and perhaps a little different than your average fare, look no further! Come down to 19215 SE 34th St. Suite 100 in Camas and enjoy Fujiya Ramen today! Give them a ring at (360) 597-3098 or check out their menu at fujiyaramencamaswa.com

CAMAS BREWING CO.
Beer Talk By Patti Jo Brooks, Contributing Writer
J
acob Speer a nd M ich iel Crey f share the story of how they became brewmasters for Camas Brewing Co. The brewery, which is located on the basement level inside Camas Slices pizza restaurant, crafts unique beers that are especially known to the upstairs restaurant crowd for pairing perfectly with the menu selections. The story culminates with Jacob’s parents enjoying dinner at Camas Slices while overlooking the brand-new, fullyequipped brewery below. Talking with restaurant co-owner John Strocko, the Speers were told that Camas Brewing Co. was looking for master brewers to bring it online. As fate would have it, the Speers’ son, Jacob, and his best friend, Michiel, had recently graduated from Oregon State University’s Fermentation Science program. In August 2021, Jacob and Michiel were hired as a team, and by December 2021 they brought the Camas Brewing Co. into production. Jacob grew up in Aloha and spent a lot of time at the coast fishing with his family. Michiel was born in Belgium, a nd l ived bet ween t here a nd t he Netherlands until he was eight, then his family moved to Beaverton for his dad’s work. Jacob and Michiel met in high school and became best friends. Jacob went on to OSU, while Michiel opted to attend PCC for the next two years. Both pursued Computer Science majors on recommendation for job

opportunities. Michiel then transferred to OSU where Jacob was attending, and the best friends were reunited. As far as Computer Science went, however, neither undergrad was “loving it,” and Michiel soon realized that he wanted to change his major. Jacob’s friends were in OSU’s Fermentation Science program and he tossed the idea to Michiel. After surveying the program, Michiel exclaimed, “It was so cool!” and encouraged Jacob to switch his major to the Fermentation program as well. Jacob, an extrover t, engages w it h customers when given the opportunity. “Sometimes a customer will come in wearing another brewery’s gear,” Jacob relates. “I’ll go introduce myself and answer any questions.” As Jacob puts it, he likes to “schmooze.” Michiel enjoys being part of the Camas community. You’re likely to make his acquaintance during promotiona l events and festivals. “I take great pride in our brewery,” Michiel acknowledges, “and I take suggestions seriously.” Combining friendship and talent, Jacob and Michiel are proud of their role in Camas Brewing Co. And, I think it’s safe to say, they are so “loving it!” Camas Brewing Co. is located at 339 NE Cedar St in downtown Camas. SEASONAL
By Donovan Darling, Staff Writer
Zootopia (2016) - PG
Not an Easter movie, but it’s about a rabbit, so close enough. From elephants to mice, the metropolis of Zootopia is a melting pot where various animals live and thrive. When Judy Hopps (Ginnifer Goodwin) becomes the first bunny on the Zootopia Police, she realizes how hard it is to bring order to a city of such chaos, especially when you feel so small. Determined to prove herself, Judy leaps at the chance to solve a mysterious case. She’s forced to work with a wily and sneaky fox, Nick Wilde (Jason Bateman), who makes her job impossible. But eventually the two discover, as a small bunny who was once bullied, and a fox who was treated as a thief before he even knew the word, they have more in common than they think!
Here Comes Peter Cottontail
(1971) - TV-G
This 1971 stop motion animated TV special was produced by Rankin/Bass Productions and was based on the 1957 novel The Easter Bunny That Overslept. In this fun and lighthearted flick, Peter Cottontail is a young Easter Bunny who lives in April Valley where all the other Easter bunnies live and work, making Easter candy, sewing bonnets, and decorating and delivering Easter eggs. Colonel Wellington B. Bunny is retiring as Chief Easter Bunny, and Peter and an evil bunny named January Q. Irontail are both vying for the job. But Irontail, voiced by Vincent Price!, of course wants to ruin Easter! 10 To Advertise With Us, Call Brad 360.606.3412
Easter Parade (1948) - G
An Oscarwinning smash musical from the Golden Age of Hollywood, Easter Parade stars Judy Garland and Fred Astaire in this perfect film of nostalgia and escapism. When released it grossed six million dollars, and although six million sounds petty these days, the average movie ticket was 37 cents in 1948! When a Broadway star and a chorus girl fall in love, it culminates with a proposal that happens during the Easter Parade. After his first dance partner leaves, Don (Astaire) chooses a young and naive chorus girl, Hannah (Garland) as his protege. But it turns out she’s incredibly klutzy and confuses her left from her right. Funny, cute, and magically musical, Easter Parade holds up at 74 years old!
Willy Wonka (1971) - G
Probably Gene Wilder’s best movie, and not an Easter movie, but the definitive movie about candy! Willy Wonka, after years of seclusion, hides a handful of golden tickets in random chocolate bars around the world, and if found, children will be given a tour of the famed chocolate factory. Of course, Charlie Bucket and Grandpa Joe are the only good people in a crowd of selfish brats and classless parents, as the group gets smaller by one after each tour stop and its ensuing lesson and misadventure. Weird, fun, and pure classic cinema.

HISTORY
The History of Timberline Lodge: A Legacy of Vision and Hope By Robert Matsumura, Contributing Writer
W
hat trip to Mount Hood is complete without a visit to Timberline Lodge? As an Oregonian you are likely familiar with this iconic landmark nestled at the base of the state’s most prominent mountain, but are you aware that this historic alpine retreat was developed as a symbol of hope during one of the bleakest periods in American history? Under President Franklin D. Roosevelt, the Works Progress Administration (WPA) was established in 1935 as a program to boost the economy by funding state and city projects. These
for the project. Underwood had already successfully designed lodges at many national parks, including Yosemite and Bryce Canyon. Similar to the other lodges Underwood had completed, Timberline was planned as a rustic, asymmetrical structure with a rough-hewn style reminiscent of the region’s early pioneers. Underwood also suggested the lodge incorporate native materials, and that decorative elements be implemented honoring both the area’s Indigenous peoples and the pioneer settlers who had arrived on the Oregon Trail. Constructed between 1936 and 1938, the total cost of Timberline Lodge was $695,730, of which 80 percent of the cost went to labor. Skilled trade workers made ninety cents an hour, and unskilled laborers received fifty-five cents an hour. A number of the stonemasons were Italian immigrants and had been brought over from their homeland to work on the Historic Columbia River Highway. Workers were housed in a nearby tent city at Camp Zig Zag and Summit Meadow. Two key goals of the WPA were to foster independence through training and to encourage private enterprise. Ray Neufer, who was in charge of the Oregon WPA woodworking shop, explained that many of the men who crafted the newel posts (support pillars for stairwells) were inexperienced as carvers. Neufer recalled: “Most of the men came in from construction projects and they didn’t know they could do some of the things they did. Most of them had been out of work a long time, then on construction jobs, and they had lost their self-confidence.”

public works projects generated jobs for millions of unemployed Americans victimized by the catastrophic economic downturn triggered by the stock market crash of 1929—known today as the Great Depression. Timberline Lodge was conceptualized by a number of individuals including Jack Meier of the Mount Hood Development Association, Francis E. (Scotty) Williamson Jr. of the United States Forestry Service, and Emerson J. Griffith, the WPA Director for Oregon. Timberline Lodge was envisioned as a triumphant symbol of the WPA, and a shining example of what it could achieve. After funding approval from the WPA in December of 1935, Gilbert Stanley Underwood was selected as the lead architect R10

Material costs for the lodge were kept to a minimum by utilizing recycled materials. Fema le seamstresses wove upholster y, drapery, and bedspreads. Hooked rugs were fashioned from old Civilian Conservation Corps camp blankets. Discarded cedar utility poles became lodge posts, their crowns hand-carved in the shape of seals, birds, and bears. Tire chains were welded into fireplace screens. And the signature iron work, as well as andirons, were crafted from railroad tracks.
January 1938, and opened to the public on February 4th of the same year. The Magic Mile chairlift was completed by the Riblet Tramway Company, and the WPA built the Silcox Warming Hut at the top of the lift. Timberline Lodge was closed during World War II, but reopened again in 1945. However,
discovering that the lodge and ski facilities had not been maintained properly, the U.S. Forest Service revoked the operating permit. Months later, Richard L. Kohnstamm was awarded an operating permit. He successfully restored the lodge, re-established ski education programs, and oversaw the construction of an outdoor swimming pool. In 1975, convention facilities were also added, and in 1981 the Wy’East was built across the parking lot to serve the recreational skiers. Although Kohnstamm passed away in 2006, his family continues to operate the lodge through R.L.K. and Company.
“President Franklin D. Roosevelt dedicated Timberline Lodge on September 28, 1937, five months before its opening to the public.”
The decorative and stylistic elements of Timberline Lodge were directed by Margery Hoffman Smith, the Oregon Arts Project Administrator for the Federal Arts Project. Smith created many of the beautiful patterns for the textiles and rugs, and she designed the iconic “Snow Goose,” the 750-pound bronze weathervane perched atop the lodge. Smith’s inspiration for the forms and motifs resplendent throughout the lodge are derived from the art of the Tenino, an Indigenous people of the area. Smith, too, recalled how many of the workers on the project successfully transitioned their skills into new areas: “Carpenters became cabinet makers, blacksmiths became art metal workers, and sewing women became expert drapery makers.” For her work on Timberline Lodge, Smith earned the title of “Grand Dame” of the Arts and Crafts style, and in 1979 Governor Vic Atiyeh awarded her the Governor’s Award for the Arts.
While on tour of government projects in the Western United States, President Franklin D. Roosevelt dedicated Timberline Lodge on September 28, 1937, five months before its opening to the public. He and his First Lady, Eleanor Roosevelt, arrived at the lodge via an open touring car, escorted by a motorcade of forty vehicles. As they wound their way up the Mount Hood Loop Road, horse-mounted Forest Service personnel lined the roadway to salute and wave. From the terrace overlooking the main entrance, Roosevelt addressed a gathering of 1200 community members. “This venture was made possible by WPA emergency relief work,” he said, “in order that we may test the workability of recreational facilities installed by the government itself.” To this day, Roosevelt’s dedication on a bronze tablet is set in stone on the lodge terrace.
N o t s u r p r i s i n g l y, Holly wood also found Timberline Lodge appealing. The exterior views of Timberline Lodge were used in the movie “The Shining.” Stanley Kubrick’s adaptation of the bestselling Stephen King novel depicted Timberline Lodge as the fictitious Overlook Hotel. In 1975, the Friends of Timberline organization was formed to celebrate and preserve the heritage of Oregon’s signature mountain retreat. Two years later, on December 22, 1977, Timberline Lodge was designated as a National Historic Landmark, and the f inest example of WPA mountain architecture. The next time you find yourself bound for Mount Hood, be sure to stop by Timberline Lodge. Stand atop the terrace where FDR stood, and appreciate the vision, commitment, and labor of the many men and women who made this grand concept into a reality, which generations of Oregonians have held so close to their hearts.

Easter History: Hares, Eggs, & Candy By Donovan Darling, Staff Writer
Easter is about rebirth, renewal, and fertility. This is evident in symbols like the Easter bunny and Easter eggs, which eventually led to chocolate eggs, marshmallow Peeps, and the second best-selling candy holiday in America! Let’s take a quick look at how Easter has changed over the years.
Easter Bunny
According to legend, the Easter bunny first came to 1700s America with German immigrants who settled in Pennsylvania and brought along their tradition of an egg-laying rabbit called “Osterhase” or “Oschter Haws.” Children made outdoor nests so this curious creature could lay its colored eggs. Eventually, the tradition spread across the country, and the fabled hare’s Easter morning goodies would eventually include chocolate, candy, and gifts, while colorful baskets would replace the nests. Much like milk and cookies left out for Santa, children would often leave out carrots in case the Easter bunny got hungry from all his hopping!
Easter Eggs
From a Christian perspective, eggs were handed out during Easter service in early Orthodox churches, with the hard shell representing the sealed tomb and the cracking of the egg representing the resurrection. One explanation is that eggs used to be forbidden during Lent, so Christians would paint and decorate them to mark the end of the period of penance and fasting, then eat them on Easter as a celebration. The origin of dyeing Easter eggs is less clear, beginning anywhere from 13th century Europe or all the way back to ancient Mesopotamia. It’s rumored the early Christians of Mesopotamia dyed eggs using red to represent the blood shed on the cross. Later, missionaries may have painted biblical scenes on eggs and used them to explain the story of Easter to children. 18 To Advertise With Us, Call Brad 360.606.3412
Easter Candy
Fast forward to the 19th century, when European chocolatiers began making chocolate eggs to celebrate Easter. Nowadays, Easter is the second best-selling candy holiday in America after Halloween. The largest Easter egg ever made was over 25 feet high and weighed over 8,000 pounds, made from chocolate and marshmallow, and supported by an internal steel frame. Another egg-shaped candy is the jelly bean, first popular for Easter back in the 1930s. Over 16 billion jelly beans are made in the U.S. each year for Easter. Over the last decade, the marshmallow Peep has been the best-selling non-chocolate Easter candy. Created in the 1950s, the original Peeps were handmade, yellow marshmallow chicks, and other flavors and shapes were introduced later, including chocolate mousse bunnies! info from history.com

Everybody fights. Nobody quits.

ot everyone is aware of this, but fencing is actually the most accessible indoor combat sport that exists. There are so few restrictions that just about anyone can do it! At Orion Fencing in Vancouver, members range in age from 4 to 93, they come from all walks of life, and they don’t let physical challenges such as blindness or being tied to a wheelchair slow them down. Everybody has an opportunity to train, and everyone has an opportunity to fight! Locally owned and operated by Justin Meehan, Orion Fencing has been in existence since 2015. His passion for the sport and dedication to training led him to develop this program, and he’s never looked back. The Northwest is one of the most popular and successful regions for Fencing schools in the country, and he’s just proud to be a part of that. He doesn’t consider his business to be in competition with other schools in the area because the success of one brings success to them all. Competition is saved for the tournaments! According to Justin, there are unfortunately three prevailing misconceptions about fencing: that it’s expensive, that it’s dangerous, and that it’s difficult, but those assumptions are all false! Fencing is no more expensive than martial arts lessons or belonging to a gym. It’s no more dangerous than other comparable contact sports. In fact, an Olympic study of the games found that fencing had one of the lowest rates of injury of any
sport. And regarding difficulty, well, we’ve all been “sword fighting” with sticks since we were kids! Practice, of course, improves your skills, but there are members at every level so you should never feel self-conscious. If you have any interest whatsoever in checking out this fun and exciting sport, Orion has eliminated every imaginable barrier. If you’re afraid to try because you’re not sure you’ll stay with it, don’t worry! You don’t have to purchase equipment for lessons—Orion provides the equipment for you. Also, your introductory lesson is free, so the risk is minimal! All that’s left for you to do is quit making excuses and show up! Call Orion Fencing today and schedule your free introductory lesson at (360) 254-5999. They’re located at 13504 NE 84th St. Suite 109 in Vancouver.

TOP PERFORMANCE AUTOMOTIVE
The Prices Bring You In But The Service Brings You Back! By Dennis McNabb, Contributing Writer | Photos By Shonda Feather
I
n the automotive service industry, it’s really all about integrity. There are dozens of service shops all over town. Some offer more services than others or have “special” pricing or “special” tools (alignment racks, etc.), but for most of us, the key deciding factor in choosing a service shop is trust. We need to trust the people doing the work. We need to know that we are getting exactly what we pay for, and that we are only paying for those services which are absolutely necessary. In short, we need a shop which is built on integrity, and that is exactly what has made Top Performance Automotive a local favorite for 17 years! Owner & operator Tony Martin has been in the industry for 35 years, and there’s very little that he hasn’t seen or done during that time. When he struck out on his own and founded Top Performance back in 2004, he had a clear vision for the kind of business he wanted to run; one built upon a foundation of integrity, honesty, and full transparency. In such a competitive industry, he understood that was the most basic and essential component, and, not surprisingly, the customers responded! Business was so good that in 2013 he outgrew his original location and built a brand new facility on 192nd Avenue, where he resides to this day. What began as a one-man operation out of his garage has now expanded to a facility which boasts 12 service bays and as many as 18 employees (slightly less right now due to COVID-19). They offer oil changes, brake services, complete transmission services, basic tuneups, diagnostics, and all general services. According to Tony, they basically cover everything bumper to bumper with the exception of tires and body work! And their prices are more than reasonable! They don’t guarantee to always be the cheapest place in town, but they are always competitive, fair, and honest. Really, you
24 To Advertise With Us, Call Brad 360.606.3412
don’t want to go to the cheapest place anyway; you want to go to the place that is the most reasonable based on the job. At Top Performance, they always tell you (and show you!) exactly what’s wrong, what it will take to fix it, and how much it will cost, period. No games, no hidden charges or fees. This is a major priority for Tony. He lives here in town and sees customers everywhere he goes. He has to be able to look them in the eye and know that he took care of them; that he did right by them. So that’s what he does. He treats his customers’ vehicles as if they were his own. Plain and simple. That kind of integrity is reflected by the crew he has working for him as well, most of whom have been with him for years—some since the very beginning. So next time you’re looking to get some work done on your vehicle, don’t overpay at the dealership. There is a shop right here in town that will take care of your vehicle exactly the way you want it handled: with fairness, kindness, transparency, and absolute integrity. That place is Top Performance Automotive! Top Performance Automotive is located at 2119 SE 192nd Avenue, in Camas. Call them at 360-833-2281 or visit topperformanceauto.com for more information.

IRVING DUFFY By Dennis McNabb, Contributing Writer Photos by Shonda Feather
It’s astonishing to learn, when we get to know our friends and neighbors, what some of these people have accomplished and endured over their lifetimes. Irving Duffy, owner and operator of A Better Shine Auto Detailing Service in Battleground, is the perfect example. On the surface, he’s an “ordinary” guy just like you or me; a businessman, a family man, an upstanding citizen of the community. Dig a little deeper though, and you’ll discover he is also a decorated war veteran; a man to be venerated; a hero. He is anything but ordinary. As far back as he can remember, Irving always wanted to follow in his father’s footsteps. His father was a Marine who fought in the Vietnam War, and Irving grew up in the military milieu. Honor, courage, and discipline were as indispensable to him as air, water, and food. So dedicated was he that when he became of age in 1980, he turned down track-and-field scholarships to multiple colleges and instead enlisted in the Marine Corps. After completing boot camp at Parris Island, he reported for duty June 18, 1980 at Camp Lejeune as part of the 2nd Reconnaissance Battalion. From there he rose through the ranks, facing every challenge and accepting every opportunity the Corps proffered, wishing only to maximize his potential and serve in whatever capacity most benefited the cause. That meant a lot of movement, of course, and during his first decade in the Corps he spent time in Beirut, Panama, and Okinawa Prefecture, as well as Camp Lejeune. It was a difficult time for him, with a wife and two young children at home. His most difficult tour of duty, however, came in 19901991 when he was deployed to Saudi Arabia to fight in the 28 To Advertise With Us, Call Brad 360.606.3412
Gulf War. As a member of the 1st Battalion, 6th Marine Regiment, he was part of the brief but intense ground campaign which liberated Kuwait and advanced all the way into Iraq before the cease fire took effect. Irving recounted the chaos and horror of watching as thousands of men traveled across massive mine fields; mortar fire and mines exploding all around while the oil fields burned in the background. It was during that time that his vehicle was blown up by a nearby tank and he was severely injured with a traumatic brain injury. He pressed on and completed the mission, completed his tour, but ultimately it was this injury which would end his career after 20 years in the Marines. That was a lifetime ago now, but while the wounds heal, the scars remain. He is a decorated war veteran with medals for bravery and heroism, but he is also 100% disabled, and has had a much longer, ongoing battle of recovery since his return. Irving is a fighter though, a warrior, and a survivor. He has zero regrets, and he credits the Corps for making him the man he is today. Support local businesses, and support our local veterans. Gunnery Sergeant Duffy, thank you for your service!

So what is Patio Cover People all about? Patio Cover People installs high-quality daylight patio covers with the option to add railings, outdoor room enclosures, decks, and concrete work to the patio cover order. One prominent advantage of a Patio Cover People construction is the Acrylic material used for their patio roof covers which allows more daylight to penetrate under the patio cover as well as filter into the home. This can be especially nice for the Northwest with its numerous cloudy days. In addition, these Acrylic covers reflect approximately three-fourths of the heat away from the living space which, in turn, creates a more comfortable environment year-round. And when winter sets in, be assured that these patio covers are designed and engineered to withstand the snow-load and high winds here in the Northwest.
Tom stands behind Patio Cover People in the face of any competitor. Given his commitment to quality and service, he offers the whole package: quality installation, quality product, quality service, and a quality experience with a focus on customer experience. He welcomes feedback from clients, and will do everything in his power to ensure they have a positive experience and come away satisfied.
