A BEER AT A TIME
Enjoy Beer Hall Atmosphere
By Dennis McNabb, Active Media Contributing Writer Photos by Jules Helm Within the Portland Metro area, there are a gazillion bars and tap houses. Some are fantastic and offer a terrific variety of food and drink all wrapped up in a warm atmosphere. Others may offer one but not the other. Certainly, as you move further out from the downtown area, the quality and quantity of these types of places wanes significantly. You might have a favorite drinking hole in your particular corner of the world but maybe the food isn’t so great or the atmosphere is lacking. It’s extremely difficult to find places which offer the “whole package.” Which is why I’m so excited to tell you about A Beer At A Time, our local beer hall here in Camas! Owner/operator Shelby Piersol modeled the place after her favorite German Beer Halls and both the level of care and attention to detail are astounding. Shelby is fantastic, a firecracker of energy and intelligence, with eighteen different things all going on at once and she deftly balances them all! Warm, friendly, and incredibly enthusiastic, it’s clear how much passion and love she has for this place. The fact that it represents all of the best in tap room drinking and dining is no accident! And this place truly has it all! The atmosphere is exactly what you want out of a taproom. It’s open, bright, cheery, and clean, and yet also warm and inviting. There is beautiful natural wood on display in every corner: from the enormous wooden slab that is the bar top, to the table tops, to the wall panels, to the exposed beams and posts, to the backdrop of the bar itself which was constructed by one of their customers out of rough hewn cedar. It’s a showstopper! For those preferring outdoor seating, they also have a cozy little timber-framed 8 X 8 patio which is heated during the winter.

Of course, this is a taproom so we can’t neglect to discuss the beer, right? Here’s the bottom line: they have 51 taps! Seven of those are reserved for various delicious ciders, but that leaves a whopping 44 taps open for all your favorite types of craft beer. They rotate these out frequently, but that means they always have something new and exciting to try every time you come in. Owner/operator Shelby Piersol picks these out herself! And she loves to maintain a good variety of beers from all over the world. It’s not all about the beers, though. They have a full bar, too, and they have no room for a cheap bottom shelf. They carry strictly medium-to-high-end liquor here! Especially for Scotch and Tequila drinkers—it’s all top shelf! They also have an amazing and diverse selection of Whiskey. So if you are a connoisseur of fine liquors, this is going to be your new favorite place! They also have some fantastic signature drinks, the most popular being their handshaken Serrano Cilantro Margarita, a delicately-balanced mix of fresh-cut serrano peppers, cilantro, and margarita mix. Delicious, fresh, and with just the right amount of kick! Shelby stated that serranos are similar to jalapeno peppers but more flavorful!
Where many taprooms fall flat is in the food department. Not the case here! Shelby has worked tirelessly to make sure they offer a great variety of exceptional food choices. This is not just typical pub food. This is restaurant-quality fare and she stated that’s what surprises people more than anything else. Favorites are their hand-tossed pizzas, hand-crafted sandwiches, and salads. The sandwiches are especially delicious, with choices such as their Cubano, the Philly Cheese Steak, the BBQ Brisket Burnt End, and their Turkey Avocado. Shelby said they can hardly keep up on the orders for these— they are so fantastic! Everything is made fresh to order and even the bread they use comes fresh from a local bakery! Great drinks, great food, and great atmosphere is so hard to find in combination even in the most popular areas of downtown Portland, and yet, we have just that right here in Camas! This is a family-friendly restaurant! The staff here love what they do and that attitude bleeds through to their customers. Shelby said she likes to think of her place like “Cheers”—the local favorite hang-out where everyone feels welcome and they all know your name. So if that sounds appealing, come on down! Support local businesses! They have terrific entertainment as well, including
$5 comedy nights, open mic nights, and nocover live music on Fridays and Saturdays. They are also trying something new with some upcoming cover bands: AC/DC, Cheap Trick, etc. and provided those go well, they will continue to bring in more. Apollo Drain & Rooter — A Story of Family Story & Photos Provided By Apollo Drain & Rooter Service
W
ith nothing more than an old used van, a dream and a desire to do great work, a young and eager Scott Bird and his bride Jody, began a journey.
If someone were to ask Scott if he was raised on a farm, he could emphatically reply, “Yes!” He grew up in Mattawa, Washington where he worked with his dad, three brothers and three sisters. When he was 21, he went to his cousin’s wedding reception. There, catching his eye from the reception line was his future wife, Jody. Their world grew closer since it was Jody’s sister marrying one of Scott’s cousins. Scott attended Utah Technical College for two years and graduated with a degree in Heating & Air Conditioning. The trade which he would then work in back home in Mattawa. Being back home gave Scott the opportunity to reconnect with Jody and they married in June of 1983. After about a year of working in the Heating and Air Industry, Scott and Jody decided to return to his family farm. Scott worked with his dad on the farm during the day and drove a semi-truck at
night hauling hay cubes to Seattle. Jody went to work for an insurance company in Othello, Washington. Jody’s sister and a couple of Scott’s cousins had started a drain cleaning company in Tri-Cities, Spokane and Salem, Oregon. It was going so well that they talked Scott and Jody into leaving the farm and to start their own drain cleaning business in Portland, Oregon. The Apollo journey: Scott was told by the bank that they didn’t think it was a “good investment.” They were so wrong. After procuring a bank loan, they were able to start a business of their own. Apollo Drain & Rooter was on its way! Their tagline, “Big enough to do the job, but small enough to care” would carry them through many years of hard and difficult work. Using their own apartment as their headquarters and Jody navigating with the large and cumbersome Thomas Guide Map Book, they offered a flat rate of only $26.50, no matter how long it took or how challenging the job was. Over the years of juggling work, marriage and parenthood the Birds eventually grew to become a family of 5 with 3 energetic boys! In 1985 Scott and Jody were blessed with their first baby boy, Brandon. Brandon was continuously by Jody’s side as she answered phones, scheduled jobs and handled the paperwork. In 1988 he was followed by little brother Ryan, and in 1990 their son Derek completed their family and the nest was full. With discipline, hard work and a good sense of humor, the young family survived many ups and downs. Tough economic times challenged their survival in the industry, but they kept going. No matter what challenges they faced, they did so with strength and integrity, always willing to help out their fellow members of the community.

How to Carve the Perfect Pumpkin

Everyone can be an artist at pumpkin carving because it’s actually easier than it looks. These 10 terrifying tips will have your gory gourds looking great for the entire spooky season. 1. START WITH THE PERFECT PUMPKIN Choose one that’s fresh, with a sturdy stem, no bruises, and a flat bottom so it won’t roll while you carve. Wash it with warm soapy water to prevent mold and dry it off with a paper towel. 2. CUT THE BOTTOM, NOT THE TOP For the lid, instead of cutting the top, cut the bottom. Cutting your lid from the bottom helps prevent the sides from caving in later. This also keeps moisture inside the pumpkin longer. 3. SCOOP OUT ALL THE PULP (strings and seeds) in a spiral motion until the pumpkin is clean inside, not one scoop at a time, and everything will come out in one drop. You can use the special “claw” that comes with a pumpkin carving kit, an ice cream scoop, or a large wooden spoon. 4. YOU CAN USE PREMADE DESIGNS from a pumpkin carving kit, from the internet, or design one yourself. For your own design, sketch it out on paper first and trace the sketch with a thick marker. Whichever design you choose, use masking tape to tape the design to the front of your pumpkin. Poke holes along the lines of your design with the poker from a pumpkin carving kit, or a pencil will also work.
5. WHEN YOU’RE READY TO CARVE, put the pumpkin in your lap with a towel (or wear pants you don’t mind getting dirty). Carving is easier when the pumpkin “face” is close to you, and this can reduce neck or back strain instead of leaning over the dining table. A sharp medium serrated knife is best for cutting medium to large features, and an X-Acto knife or small knife from a pumpkin carving kit is best for carving the small details. 6. WITH YOUR SMALL KNIFE, start by cutting the small details first so the pumpkin is more intact; if you cut the large features first you can accidentally break it. After the small details are cut, cut out the large features with your medium serrated knife. When everything is roughly cut out, you can use the small knife to clean up the edges of your design. You can also use the discarded pieces creatively! The pulp can make a great tongue, vomit, or messy hair. Smaller pieces can be used for spikes, eyebrows, or teeth. Be creative!
8. CREATE A CHIMNEY You can use a real candle such as a votive, or you can skip this step and use an electric candle. For a real flame, light the candle on the bottom lid and place the pumpkin over it. After a few minutes the “ceiling” will have blackened. Cut around this blackened spot to make a small hole to vent the candle heat. 9. SPRINKLE CINNAMON INSIDE Cinnamon will prevent fungus, and when you light the candle your jack-o’-lantern will smell like a pumpkin pie. 10. ROAST THE PUMPKIN SEEDS! After removing the pulp, wash the seeds in a colander and dry between a towel. In a large bowl, toss the seeds with olive oil, salt, garlic powder, paprika, and black pepper, or season to your liking. Spread the seeds evenly on a lightly greased cookie sheet and bake at 350 for 12-15 minutes, tossing the seeds every 5 minutes for even browning. When the seeds are golden brown and radiate a cozy nut aroma, they’re done! Pumpkin seeds are a great source of fiber, zinc, phosphorus, potassium, magnesium, and iron.

M
otion Pictures. What is it about the experience of watching a great film that is so magical for all of us? Is it the cinematography that transports us to places we’ve never seen? Is it the score that worms its way into our brains, sometimes without our conscious awareness, and carries us in moments from the highest of highs to the lowest of lows? Is it the writing? Is it the acting? There are so many aspects that it’s almost impossible to credit any one of them. Not to mention, every person experiences film from their own unique perspective. What I think we can all agree on though, without hesitation, is that film is art and we are all moved by it on some level. That said, the way we consume film has changed dramatically over the years. The moviegoing experience

is not what it once was. Gone are the days when a new film was an “event.” In the 1930s and 40s, film was the 11th largest industry in the country, and two-thirds of our population attended at least once a week! That’s no longer the case. Although we consume more than ever, the “theater experience” is no longer an essential part of the process. Advancements in technology have created home theater systems to rival anything on the “big screen.” It’s no longer an imperative to see big blockbuster special-effects-laden movies at the theater. Still, an argument can be made that while it’s certainly convenient to watch from home, it’s not as much fun! Some experiences are just better with an audience. Who takes a date to a movie... in their own living room? That’s why it’s so fantastic, and we are so fortunate, to have places like the Liberty Theatre in downtown Camas to remind us what it’s all about! This amazing and iconic artdeco structure was originally constructed in 1927, back when seeing movies was

still a cultural event! It was initially dubbed The Granada, and it housed a single screen with 800 seats. According to Wikipedia, tickets cost 30 cents for Adults and 10 cents for Children and they also had a stage and presented live performances. The name was later changed to The Liberty in 1938 under new management. In true dramatic fashion—much like the movies that are shown here!—The Liberty has had a storied history. According to Wikipedia, in 1989, serial killer Westley Allan Dodd attempted to abduct a 6-year-old boy from the restroom. He was thankfully captured and arrested. In 1994, a large fire destroyed large parts of the structure and damaged others. They had to close for almost 2 full years for renovations. In 2009, they closed entirely due to financial woes. In 2011, a deal was struck with a new management company to reopen but with a new approach. They switched from being a first-run theater to a second-run arthouse theater and they made new renovations which included adding a second smaller screen (dubbed The Granada in honor of the theater’s original name). This place has seen things! You can feel all that history in its atmosphere. There is a certain warmth, a charm, a nostalgic feeling one gets from the minute you approach the classic facade and marquee, and it follows you all the way through the lobby and into your seats. The exposed lighting on the ceilings, the original sconces on the walls, the drapes around the screens; it all evokes another time. Like walking through a time warp. Interestingly, it seems somehow less garish and yet simultaneously more ornate than most modern theaters. Simply put, it’s unique, and it provides an experience. Admittedly, not everyone shares my interest in having that kind of experience. That’s why The Liberty owners, in collaboration with the building’s owners, have worked tirelessly
over the past several years to make improvements which they hope will bring interest back to this historic place. First, they converted to digital which is strictly an imperative these days in order to run current films. Second, they’ve decided to offer discount ticket prices ($4.50 for most showings and $3 on Tuesdays). And their concessions are more affordable as well! Since they switched to being a secondrun theater, that has opened things up for them immensely. They now show a huge variety of movies, from obscure foreign and arthouse films to older Hollywood classics to current films. By embracing more eclectic and culturally diverse films, they have aligned themselves more closely with the downtown area’s expanding scene. The owners have focused a lot of attention on essentially bringing back “event screenings.” You can watch a film at home any time. You can go anytime to a chain theater and spend $18 on a ticket, $12 on a bucket of popcorn, and sit and watch some old tired remake or sequel. What those experiences cannot provide for you is a sense of gravitas; a sense of history; a sense of community. Generally speaking, you’re not going to get much cultural enrichment sitting in your living room in
