Seafood is high in healthy nutrients and has a very low fat content; a key reason why it must always be part of a healthy diet. Octopus, squid, mussels and shrimp add a special flavour to pasta dishes and salads. They are also fantastic main ingredients, while they also make for exquisite hors d’oeuvres and meze dishes.

Citrus fruits add great flavour to any meal and are widely used to make even the simplest dish quite special. Whether you use their juice, zest or enjoy them finely sliced, they add great freshness to a meal. In marinades, when the citric acid content of these fruits heats up, they release aromas into fish and shellfish dishes. Citrus fruit zest and juices are a great accompaniment to all meat casseroles or roasts. They also add great flavour when combined with potatoes and salads.

Είναι κυρίως, αλλά όχι μόνο, αγροτικά προϊόντα που η παραγωγή τους στηρίχθηκε αποκλειστικά σε φυσικές διεργασίες. Αυτό σημαίνει πως χρησιμοποιήθηκαν μόνο εναλλακτικές μέθοδοι αντιμετώπισης των «εισβολέων» και καθόλου χημικά ή συνθετικά φυτοφάρμακα, λιπάσματα και ζιζανιοκτόνα. Επίσης όσον αφορά στην κτηνοτροφία βασικός κανόνας είναι η ελεύθερη και ελεγμένη βόσκηση. Με βάση όλα τα παραπάνω είναι προφανές ότι τα βιολογικά προϊόντα κρίνονται ως πιο υγιεινά, καθώς δεν αναπτύχθηκαν με παρεμβάσεις που είναι «έξω από τη φύση τους», όπως ορμόνες, συνθετικά λιπάσματα, βιταμίνες ή αντιβιοτικά. Είναι ασφαλή για την υγεία μας, μιας και δεν έχουν υπολείμματα λιπασμάτων. Σύμφωνα με μελέτες, τα βιολογικά φρούτα και λαχανικά περιέχουν 40% περισσότερα αντιοξειδωτικά με αποτέλεσμα να «προστατεύουν» σε κάποιο βαθμό τον οργανισμό από την εκδήλωση ασθενειών. Αξίζει να σημειωθεί ότι οι τοξικές ουσίες που συγκεντρώνονται στα συμβατικά τρόφιμα φτάνουν στον οργανισμό μας μέσα από το φαγητό. Organic Products A foodie trend

on the rise

With the popularity of organic products on the rise, more and more people are keen on incorporating them into their daily diet. Most organic products are primarily grown via natural processes. This means that the fertilizers and other means used for tackling ‘foreign invaders’ in organic cultivations are alternative and natural. To put it simply, biological methods of pest control are implemented as opposed to chemical methods, ensuring an all-natural growth environment. When it comes to stock raising, free and monitored grazing is a basic requirement.

Organic produce is considered much healthier and beneficial for human consumption, primarily due to the fact that its cultivation is natural with no chemical interventions like hormones, synthetic fertilizers, vitamins or antibiotics. As such, organic produce is safe because it does not contain any fertilizer residue.

Many studies indicate that organic fruit and vegetables have a 40% higher antioxidant content than other produce, which contributes largely to the protection of the human body against disease. While conventional foodstuffs may contain toxic

Για να χαρακτηριστεί ένα προϊόν βιολογικό, πρέπει να είναι το αποτέλεσμα βιολογικής καλλιέργειας τουλάχιστον για τρία χρόνια και να φέρει την κατάλληλη σήμανση στη συσκευασία, δηλαδή το όνομα του οργανισμού και τον κωδικό πιστοποίησής του. Έτσι, όταν αγοράζουμε βιολογικά προϊόντα, πρέπει να είμαστε σίγουροι όχι μόνο για την ποιότητά τους αλλά και για τον τρόπο και τον τόπο που καλλιεργήθηκαν. Τα τελευταία χρόνια, πολλά εστιατόρια έχουν επιλέξει τα βιολογικά προϊόντα ως συστατικά των πιάτων που σερβίρουν, θέλοντας να προβάλουν τη σωστή και υγιεινή διατροφή, αλλά και τη γνησιότητα των γεύσεων που προσφέρουν. Εξάλλου, αρκετοί διάσημοι σεφ δείχνουν την προτίμησή τους στη χρήση βιολογικών προϊόντων στις συνταγές τους.

WHY CHOOSE ORGANIC • Organic foodstuffs do not contain fertilizer residue • They have a higher nutritional value • They have a full, rich taste; harvested when they are ripe and mature • They are certified and tested by registered organisations which only give their stamp of approval to genuine organic products • They are always fresh, harvested and sold only when ‘in season’ and contain no preservatives substances that reach our bodies through consumption, organic products do not contain any preservatives, flavour enhancers, synthetic colours or aromas. For some, organic produce even has a better taste and aroma than its conventional counterparts.

Organic produce isn’t just limited to vegetables, fruit and meat. Many foodstuffs consumed on a daily basis are available in organic varieties including bread and other bakery items, dairy products and juices, pasta, rice, baby food, cosmetics, paper goods and many more.

An organic product must be grown with organic methods for at least three years and must bear the relevant stamp of approval, marked by the brand and certification code.

As such, consumers are ensured not only of the quality of organic produce, but also, the methods and place of cultivation.

In recent years, organic products now feature on the menus of many restaurants which aim for a cuisine which promotes a balanced and healthy diet, with attention to real tastes and flavours. Many top chefs also now opt for organic produce in their recipes.

ΣΑΛΑΤΑ ΜΕ ΦΑΚΕΣ ΚΑΙ ΣΑΛΤΣΑ ΒΑΤΟΜΟΥΡΟΥ

Lentil Salad with Raspberry sauce 4 φλ. ανάμεικτα πράσινα χόρτα 2 φλ. βραστές φακές 1 φλ. αποξηραμένα βατόμουρα ΓΙΑ ΤΗ ΣΑΛΤΣΑ 1 φλ. ελαιόλαδο Αλφαμέγα ½ φλ. ξύδι βατόμουρου ½ φλ. μέλι Αλφαμέγα ½ φλ. κατεψυγμένα βατόμουρα 2 κ.γ. μουστάρδα ντιζόν Μαύρο αλεσμένο πιπέρι Αλάτι

Βάζουμε όλα τα υλικά για τη σαλάτα σε ένα μεγάλο μπολ και ανακατεύουμε. Χωρίζουμε τη σαλάτα σε 4 πιάτα για σαλάτα. Χτυπάμε στο μπλέντερ το ξύδι, τη μουστάρδα, τα βατόμουρα και το μέλι. Προσθέτουμε το ελαιόλαδο και συνεχίζουμε να χτυπάμε μέχρι να γίνουν ένα ομοιογενές μείγμα. Στο τέλος προσθέτουμε αλάτι και πιπέρι. Ραντίζουμε τη σαλάτα με τη σάλτσα και σερβίρουμε. ΓΙΑ 4 ΑΤΟΜΑ

4 cups mixed greens 2 cups boiled lentils 1 cup dried raspberries FOR THE DRESSING 1 cup Alphamega olive oil ½ cup raspberry vinegar ½ cup Alphamega honey ½ cup frozen raspberries 2 tsp Dijon mustard Ground black pepper Salt

Place all ingredients in a large bowl and mix. Divide into 4 salad plates. Blend the vinegar, mustard, raspberries and honey. Add olive oil and whisk until the mix is unifo rm. Season with salt and pepper. Drizzle the salad with dressing and serve.

ΓΚΑΖΠΑΤΣΟ ΑΓΓΟΥΡΙΟΥ ΜΕ ΚΑΡΠΟΥΖΙ ΚΑΙ ΦΙΣΤΙΚΙΑ

Cucumber Gazpacho with Watermelon & pistachios 8 μεγάλα αγγούρια 1/2 φλ. παγωμένο νερό 1 μικρό κρεμμύδι 3 κ.σ. χυμό λεμονιού 1 ματσάκι φρέσκο δυόσμο 1 κ.γ. φρέσκοτριμμένο τζίντζερ 2 κ.σ. φρέσκο κόλιανδρο ψιλοκομμένο 2 φλ. καρπούζι κομμένο σε κυβάκια χωρίς κουκούτσια 1/4 φλ. φιστίκια 1 κ.γ. αποξηραμένες νιφάδες καρύδας φύλλα δυόσμου Ελαιόλαδο ΑΛΦΑΜΕΓΑ Aλάτι, πιπέρι

Αναμειγνύουμε καλά τα πρώτα 7 υλικά σε ένα μεγάλο μπολ. Τα χτυπούμε σε μπλέντερ μέχρι να γίνει μαλακό μείγμα. Μεταφέρουμε το γκαζπάτσο σε μια μεγάλη κανάτα, την σκεπάζουμε και τη βάζουμε στο ψυγείο για τουλάχιστον 2 ώρες ή μέχρι 8 ώρες το πολύ. Πριν να σερβίρουμε, δοκιμάζουμε τη σούπα και αναπροσαρμόζουμε τα καρυκεύματα κατά βούληση. Μοιράζουμε τη σούπα σε παγωμένα μπολ και γαρνίρουμε με το καρπούζι, τα φιστίκια, τις αποξηραμένες νιφάδες καρύδας, μικρά φύλλα δυόσμου και τέλος, ραντίζουμε με ελαιόλαδο.

12 ΜΕΡΙΔΕΣ 8 large cucumbers 1/2 cup ice-cold water 1 small onion 3 tbsp lemon juice 1 bunch fresh mint 1 tsp grated fresh ginger 2 tbsp chopped fresh cilantro 2 cups seeded and diced watermelon 1/4 cup pistachios 1 tsp dried coconut flakes Αlphamega olive oil Salt, pepper

Combine the first 7 ingredients in a large bowl and stir.

Working in batches, purée all ingredients in a blender or food processor until smooth. Transfer gazpacho to a large pitcher, cover, and refrigerate for at least 2 hours or up to 8 hours max. Before serving, taste soup and adjust seasoning as needed. Pour into chilled bowls and top evenly with watermelon, pistachios, dried coconut flakes, some mint leaves and a drizzle of olive oil.

Quince with Zambouka 2 κιλά κυδώνια 1 δέσμη κρεμμύδι φρέσκο ψιλοκομμένο 5 κ.σ. ελαιόλαδο Αλφαμέγα 1/2 φλ. ζαμπούκα 1/2 φλ. λευκό κρασί 2 σκελίδες σκόρδο ψιλοκομμένο 10 ντοματίνια κομμένα στη μέση 20 γρ. ψιλοκομμένο σχινόπρασο (chives) Αλάτι, πιπέρι

Σε μια βαθιά κατσαρόλα βάζουμε το ελαιόλαδο να ζεσταθεί και ρίχνουμε το κρεμμύδι και το σκόρδο να ροδοκοκκινίσουν. Αφού πλύνουμε 2-3 φορές πολύ καλά τα κυδώνια, τα προσθέτουμε στην κατσαρόλα. Ρίχνουμε τη ζαμπούκα, την ανάβουμε και αφήνουμε μερικά δευτερόλεπτα να καεί το αλκοόλ. Σβήνουμε με κρασί, σκεπάζουμε την κατσαρόλα και χαμηλώνουμε τη φωτιά. Τα αφήνουμε να σιγοβράζουν μέχρι να ανοίξουν από μόνα τους και να μας αφήσουν τους χυμούς τους. Αν κάποιο δεν ανοίξει, το αφαιρούμε. Προσθέτουμε τα ντοματίνια και ψήνουμε για ακόμα 1 λεπτό. Heat the olive oil in a deep pan and toss in the onion and garlic until golden brown. Wash the quinces thoroughly 2-3 times and place in the pan. Light the Zambouka and allow the alcohol to burn out. Sizzle with wine, cover the pan and lower the heat.

Allow to cook slowly until the quinces open up and the juices evaporate. If any one doesn’t open, remove it from the pan as it’s probably not good for consumption. Add the cherry tomatoes and cook for another minute. Finish off with salt, pepper and the finely chopped chives.

Crispy Peking Duck 1 πάπια (ολόκληρη) 1/4 φλ. ζάχαρη Αλφαμέγα 1/4 φλ. αλάτι Αλφαμέγα 1 κ.γ. σκόνη 5 spice 1/4 φλ. μέλι Αλφαμέγα 2 φλ. ζεστό ελαιόλαδο Αλφαμέγα 2 καρότα κομμένα ζουλιέν (σε μακρόστενες λωρίδες) 2 αγγουράκια κομμένα ζουλιέν 1 ματσάκι φρέσκο κρεμμύδι κομμένα ζουλιέν 2 πακέτα προπαρασκευασμένες τηγανίτες Σάλτσα πάπιας Πεκίνου

Τοποθετούμε ολόκληρη την πάπια σε μια μεγάλη κατσαρόλα με βραστό νερό. Την βγάζουμε μόλις η πέτσα της αλλάξει χρώμα. Ραντίζουμε το εσωτερικό της πάπιας με τη ζάχαρη, το αλάτι και τη σκόνη 5 spice. Τρίβουμε την πέτσα της πάπιας με μέλι. Δένουμε την πάπια με σχοινάκι και την κρεμάμε σε ανοιχτό χώρο για να αεριστεί ή την τοποθετούμε στο ψυγείο χωρίς κάλυμμα όλο το βράδυ. Αυτό γίνεται για να αφυδατωθεί η πέτσα και να γίνει τραγανή. Προθερμαίνουμε το φούρνο στους 200°C και ψήνουμε την πάπια για 45 λεπτά ή μέχρι να ροδοκοκκινίσει ή πέτσα. Πριν από το σερβίρισμα, την περιχύνουμε με καυτό λάδι για να γίνει πιο τραγανή. Soak the whole duck in a large pot of boiling water.

Remove it as soon as the skin changes colour. Sprinkle the inside of the duck with sugar, salt, and five-spice powder. Rub the skin of the duck with honey. Truss the duck with string and hang to air for 2 hours, or put the duck in the refrigerator overnight without a cover. This will dry the skin so it becomes crispy. Preheat oven to 200°C and bake for 45 minutes or until the skin is redish brown. Before serving, pour hot oil over the skin to increase crispiness. Carve the skin and meat from the duck, and serve with pancakes, cucumber, onions, carrots and Peking duck sauce.

Hake Steaks with Garlic 4 φιλέτα μπακαλιάρο 2 σκελίδες σκόρδο 1/2 φλ. ξηρό λευκό κρασί Ελαιόλαδο Αλφαμέγα Μια χούφτα φρέσκο, ψιλοκομμένο μαϊντανό Θαλασσινό αλάτι Αλφαμέγα Μαύρο φρεσκοαλεσμένο πιπέρι Πάπρικα

Ζεσταίνουμε το λάδι σε ένα τηγάνι. Αλατοπιπερώνουμε τα φιλέτα και τα τηγανίζουμε για 1-2 λεπτά. Στη συνέχεια προσθέτουμε το σκόρδο και συνεχίζουμε το τηγάνισμα μέχρι να ροδίσει και να αποκτήσει γλυκιά γεύση. Μετά από 3-4 λεπτά γυρίζουμε το ψάρι από την άλλη πλευρά και συνεχίζουμε το τηγάνισμα για 3 λεπτά, προσεκτικά, ώστε να μην καεί το σκόρδο. Μεταφέρουμε το ψάρι από το τηγάνι σε πιάτο σερβιρίσματος και απομακρύνουμε το τηγάνι από τη φωτιά. Στο τηγάνι με το σκόρδο και τα υγρά, ρίχνουμε λίγο ελαιόλαδο και μια πρέζα θαλασσινό αλάτι. Προσθέτουμε το κρασί και στη συνέχεια το μαϊντανό και ανακατεύουμε καλά. Σερβίρουμε το ψάρι με τη σάλτσα, βραστές πατάτες και ραντίζουμε με πάπρικα. ΓΙΑ 2 ΑΤΟΜΑ

4 hake steaks 2 garlic cloves 1⁄2 cup dry white wine Alphamega olive oil A handful of fresh parsley, finely chopped Alphamega sea salt Freshly ground black pepper Paprika

Pour olive oil into a frying pan and let it heat. Season the steaks with a light sprinkling of sea salt and freshly ground black pepper.

Lay the fish in the pan and fry for a minute or two, then add the garlic. Keep frying until the garlic is golden brown with a sweet flavour. Turn the fish over after 3-4 minutes and cook for another 3 minutes, making sure the garlic doesn’t burn. Remove the fish from the pan and place into a serving dish. With the pan off the heat, add a good splash of your finest extra virgin olive oil and a pinch of sea salt to the garlic and juices left in the pan. Add the wine, then the parsley, and give it all a good stir. Serve fish with the sauce, boiled potatoes and sprinkle with paprika.

Pork Chops with Mushroom Mustard Sauce 4 χοιρινές μπριζόλες χωρίς κόκκαλο 400 γρ μανιτάρια 1 1/2 κ.γ. μουστάρδα ντιζόν 1/2 φλ. λευκό κρασί 1/2 φλ. κρέμα γάλακτος 2 σκελίδες σκόρδο, λιωμένο 3 κ.σ. ελαιόλαδο Αλφαμέγα Μαύρο φρεσκοαλεσμένο πιπέρι Αλάτι

Ζεσταίνουμε το λάδι σε μέτρια-δυνατή φωτιά. Όταν το λάδι ζεσταθεί, ψήνουμε τις μπριζόλες, την κάθε μια ξεχωριστά, 2-3 λεπτά στη μια πλευρά. Γυρίζουμε και ψήνουμε την άλλη πλευρά για 1-2 λεπτά (σιγουρευόμαστε ότι δεν υπάρχουν ροζ υγρά). Μεταφέρουμε τις μπριζόλες σε πιάτο. Στο ίδιο τηγάνι λιώνουμε βούτυρο. Προσθέτουμε το σκόρδο και τσιγαρίζουμε μέχρι να γίνει διαφανές. Προσθέτουμε τα μανιτάρια και μαγειρεύομε για περίπου 3 λεπτά. Προσθέτουμε το κρασί και ψήνουμε σε ψηλή φωτιά μέχρι να εξατμιστούν τα υγρά (περίπου 2 λεπτά). Προσθέτουμε την κρέμα γάλακτος και βράζουμε για περίπου 1 λεπτό και στη συνέχεια τη μουστάρδα και ανακατεύουμε. Σερβίρουμε με φρέσκα πράσινα λαχανικά. ΓΙΑ 4 ΑΤΟΜΑ

4 boneless pork chops 400gr mushrooms 1 1/2 tsp Dijon mustard 1/2 cup white wine 1/2 cup double cream 2 garlic cloves, crushed 3 tbsp Alphamega olive oil Freshly ground black pepper Salt

Heat the oil over medium-high heat. When the oil is hot, cook pork chops one at a time, 2 to 3 minutes on one side. Flip and cook until the chops are golden brown on the other side, for 1 to 2 minutes (make sure no pink juices remain). Transfer to plate. Melt butter in same pan.

Add garlic and fry until transparent. Add mushrooms and cook for about 3 minutes. Add wine. Cook over high heat until almost all liquid evaporates (about 2 minutes).

Add cream and boil for about a minute. Stir in mustard.

Serve with the pork chops and fresh green leaves.

Chicken Fillets & Carrot puree with Cumin 8 μικρά φιλέτα κοτόπουλου Ελαιόλαδο Άλφαμεγα 10 καρότα, κομμένα σε φέτες 1 λιωμένη σκελίδα σκόρδο 1 κ.σ. βούτυρο 1 1/2 κ.γ. σπόροι κύμινου, καβουρδισμένοι και αλεσμένοι 1/4 κ.γ. φρεσκοαλεσμένο μοσχοκάρυδο Αλάτι, πιπέρι

Αλατοπιπερώνουμε τα φιλέτα κοτόπουλου και από τις δύο μεριές. Προθερμαίνουμε ένα τηγάνι σε μέτρια-δυνατή φωτιά. Αλείφουμε ελαφρά το τηγάνι με ελαιόλαδο και τοποθετούμε μέσα το κοτόπουλο. Χαμηλώνουμε σε μέτρια φωτιά και μαγειρεύουμε για 8-12 λεπτά. Γυρίζουμε το κοτόπουλο συχνά για να έχουμε ομοιόμορφο ψήσιμο. Τοποθετούμε τα καρότα σε μια κατσαρόλα και τα καλύπτουμε με νερό. Προσθέτουμε μπόλικο αλάτι και ρίχνουμε μέσα και το σκόρδο. Αφήνουμε να βράσουν μέχρι τα καρότα γίνουν πολύ μαλακά και στη συνέχεια τα στραγγίζουμε. Ζεσταίνουμε το βούτυρο σε ένα μικρό κατσαρολάκι μέχρι να λιώσει και να ροδίσει. Το κατεβάζουμε από τη φωτιά και προσθέτουμε το κύμινο, το μοσχοκάρυδο και το αλάτι. Πολτοποιούμε τα καρότα και προσθέτουμε το βούτυρο με τα μπαχαρικά και ανακατεύουμε. Εάν επιθυμούμε προσθέτουμε επιπλέον αλάτι και πιπέρι. Σερβίρουμε αμέσως. ΓΙΑ 4 ΑΤΟΜΑ

8 small chicken fillets Alphamega olive oil 10 carrots, cut into slices 1 garlic clove, crushed 4 tbsp butter 1 1/2 tsp cumin seeds, toasted and ground 1/4 tsp freshly grated nutmeg Salt, pepper

Season both sides of the chicken fillet with salt and pepper.

Preheat a frying pan over medium-high heat. Lightly coat the bottom of the pan with olive oil. Place the chicken in the pan.

Reduce to medium heat and cook for about 8 to 12 minutes, or until the juices run clear. Turn the chicken occasionally to achieve even browning. Place the carrots in a saucepan and cover with water. Season the water generously with salt, and toss in the garlic. Bring the water to the boil and continue until the carrots are fork tender. Remove from the water. Place the butter in a small sauté pan and cook until the butter melts and turns brown.

Remove from the heat and stir in the ground cumin, nutmeg and salt. Pass the carrots through a food mill. Stir in the spiced butter.

Re-season if needed. Serve hot.

ΜΠΙΣΚΟΤΑ PALMIERS

Palmiers 2 φύλλα σφολιάτα, ξεπαγωμένα 2 φλ. ζάχαρη 1 κ.γ. κανέλλα

Προθερμαίνουμε το φούρνο στους 200°C. Αναμιγνύουμε τη ζάχαρη και την κανέλλα. Απλώνουμε το ένα φλιτζάνι με το μείγμα ζάχαρης-κανέλλας σε επίπεδη επιφάνεια. Ξεδιπλώνουμε το κάθε φύλλο σφολιάτας πάνω στο μείγμα ζάχαρης και προσθέτουμε από πάνω ½ φλιτζάνι από το ίδιο μείγμα, απλώνοντας το ομοιόμορφα πάνω στο φύλλο. Ξεκινώντας από τη στενή μεριά του ορθογωνίου, αρχίζουμε να τυλίγουμε τη ζύμη από την κάθε μεριά, μέχρι να συναντηθούν στο μέσο. Τοποθετούμε το ένα ρολό πάνω από το άλλο και πιέζουμε ελαφριά για να μείνουν κλειστά. Τυλίγουμε τη ζύμη σε πλαστική μεμβράνη και την τοποθετούμε στο ψυγείο για τουλάχιστον 30 λεπτά. Κόβουμε τη ζύμη σε φέτες πάχους περίπου 1/4 ίντσας. Τοποθετούμε τις φέτες σε ταψί στο οποίο έχουμε βάλει ήδη αντικολλητικό χαρτί και ψήνουμε στο φούρνο για 12 λεπτά. Γυρίζουμε τα μπισκότα και ψήνουμε για ακόμα 6 - 7 λεπτά, μέχρι να ροδίσουν. ΓΙΑ 36 ΚΟΜΜΑΤΙΑ

2 sheets puff pastry, defrosted 2 cups sugar 1 tsp cinnamon

Preheat the oven to 200°C. Mix the sugar and cinnamon. Pour 1 cup of the sugar-cinnamon mixture on a flat surface. Unfold each sheet of puff pastry onto the sugar mix and pour 1/2 cup of the same mix over the top, spreading it evenly on the puff pastry. Working from the short ends of the rectangle, roll up each end of the dough to meet in the middle. Lay the rolls on top of each other and gently press to secure. Wrap the dough in plastic and let sit in the refrigerator for at least 30 minutes.

Cut the dough into slices that are 1/4-inch thick. Lay the slices on baking trays covered with grease proof paper and bake in a preheated oven for 12 minutes. Turn the slices over and bake for another 6 to 7 minutes. When done, the cookies should be golden brown.

Chocolate Truffles 115 γρ. κουβερτούρα-60% κακάο 1/2 φλ. κρέμα γάλακτος-35% λιπαρά 1 κ.γ. βούτυρο κομμένο σε μικρά κομμάτια 2 κ.γ. μπράντι (ή άλλο λικέρ ή ποτό κατά προτίμηση) 4 κ.σ. σκόνη κακάο χωρίς ζάχαρη

Κόβουμε την κουβερτούρα σε κομματάκια και τα βάζουμε σε ένα μεγάλο μπολ. Βάζουμε την κρέμα σε κατσαρόλα και την αφήνουμε να βράσει. Στη συνέχεια, ρίχνουμε μέσα την κουβερτούρα και την αφήνουμε για 3 λεπτά μέχρι να λιώσει. Χτυπούμε καλά με σύρμα μέχρι να γίνει κρέμα και προσθέτουμε το βούτυρο και το μπράντι και συνεχίζουμε το χτύπημα μέχρι να γίνει ένα ομοιόμορφο μείγμα. Σκεπάζουμε το μπολ και το αφήνουμε να κρυώσει μέχρι να σταθεροποιηθεί η σοκολάτα. 115gr dark chocolate, 60% cocoa 1/2 cup whipping cream, 35% fat 2 tsp butter, cut into small pieces 2 tsp brandy (or another spirit or liqueur) 4 tbsp unsweetened cocoa powder

Chop the chocolate into small pieces and place in a large bowl.

Pour the cream into a saucepan and bring to the boil. Pour the hot cream over the chocolate and leave for 3 minutes for the chocolate to melt, and stir well with a balloon whisk until smooth and creamy. Whisk in the butter then pour in the brandy and stir until smooth. Cover with cling film to prevent a skin forming, and set aside to cool. This can be refrigerated until later. Once firm, use two teaspoons to shape the mixture into walnut sized pieces. Drop the truffles into the cocoa powder and roll them until fully coated.
