Sheeptail Fat and Dark Wine

Last week a friend sent me a pic of her glowing wood stove that she had ﬁnally got to work in her Karoo coage.

With nighme temperatures around zero she said: “It's just the cket! I cook while it warms the whole place.”

It brought back memories of the big wood stove in my grandparents' Victorian house in Knysna.

I remember my grandmother scking her hand into the oven and saying: “No, I need a quick oven.”

“Quick” meant “hot “. More wood was added, the damper opened, and in went her scones or cakes. Despite no temperature gauge, they always turned out perfect.

My grandparents also had a wood stove at their Noetzie coage. There is no electricity at Noetzie so everything was done on the wood stove, including making toast.

During Christmas holidays we kids were not too keen on this toast that tasted smoky, but my mother told us not to be “full of ﬁemies”.

Aer a while we got to like it.

What was really nice was that there was a constant supply of hot water from a copper urn aached to the stove. It had a lile tap and I remember my father and uncle ﬁlling jugs of hot water for shaving.

As a teenager I copied some of my grandmother's recipes into an exercise book. One of them was for zoet koekies – spicy biscuits we loved. The recipe actually came from my Free State great-grandmother Sharp. Anyway, my grandmother used to make a huge batch of these for the Christmas holidays, and aer she had died I decided to do the same. Now I didn't know much about baking, but even to me the ingredients sounded huge: 4 pounds ﬂour, 3 pounds brown sugar for starters.

My mother suggested I use quarter of the ingredients.

“And where do I get half a pound of sheep tail fat?”

Apparently I could use Holsum.

“And a cup of dark wine? What is dark wine?”

Tassies would do.

So I set to. Lots of spices – cloves, cinnamon and mixed spice.

Then came rolling out the mixture. Now zoet koekies are thin biscuits, rather like speculaas, so you have to roll the dough really thin.

That means a bowl of mixture goes a very long way

It was the December 16 public holiday and I was sweang: rolling, cung, baking, more rolling, more baking. The mixture just never ended.

Eventually I was nearly in tears so my mother sent my reluctant sisters to help. My father even pitched in.

In the end we had nearly 5 dozen zoet koekies

I decided never again.

That made me admire my grandmother even more. Her recipe would have made about 16 dozen – all in a wood stove.

I can see the delight of a wood stove in an icy Karoo coage, but I'm glad I never had to use one.

As for baking: I'm not quite as bad as New Zealand author Ellio Rose, but I do feel a slight aﬃnity with her when she says: “Baking is a dark art, the kind of sorceress-given gi I do not possess a single ounce of.”

Knysna Municipality Ofﬁce Move

The KIG is privileged to have been able to assist Knysna Municipality in the moving of ofﬁces, again a positive move to ensure KM correct the wrongs of the past and moving forward in a positive way

Support was requested and KIG was glad to be able to assist in fixing KM Flats and preparing them for occupation as offices by the 31 July 2025. Although very short notice and only six days to complete, KIG is always up for a challenge. The initial response on our request for support was disappointing, especially in this case, where the project yields are so significant. (Reminding residents, KIG agreed to fund it as a project and that no Infrastructure Funds were used.) Notwithstanding, we received sufficient support to complete the project on time and KM staff was able to move on the 31 July as planned.

We need to thank all those that supported the project as without you this would not have been possible:

1. Raj – VTC for always being a partner we can rely on. Knysna can never thank you and your team enough!

2. Christo Deetlefts – Knysna Holding, for his team immediately helping to address the leaking roofs.

3. Peter and his guys from Peter Painting Services and Maintenance – for starting on short notice that Saturday and on the weekend, with preparation work and painting.

4. Phillip and Dora – our gardener and house keeper, that gave up their weekend and days off to assist.
