A WEE DRAM OF WHISKY - OR WHISKEY? I did something this weekend I have not done before: whisky tas ng.

What fascina ng stuff I learned - like “awakening the serpent” by adding a splash of water to the whisky that “releases” the oils.

You can see it happening.

Our whisky guide gave us pipe es to drop water into the whisky and we could see the coils of oils unwinding, just like snakes.

If you try it, have a sip before and a er, and see the difference in taste and smell.

We also learned that about 60% of the flavour of whisky comes from the oak casks in which it is matured. In Scotland whisky cannot legally be called Scotch whisky unless it has been matured in the cask for a minimum of three years.

In the US, the law says dis llers may use a whisky barrel only once (something to do with suppor ng the oak industry but sounds like a waste to me) so the resultant flavour is lighter and vanilla tas ng.

The Scots do the sensible thing and buy huge numbers of these otherwise wasted US casks and use them again several mes.

“Now look at the colour of this whisky,” our guide said. “It is much darker and has an almost pinky nge. Why do you think?”

Turns out the whisky had been matured in a cask that had been used to age sherry, which gave it that specific flavour and colour.

Some dis llers in Scotland will only use casks that have been used for sherry beforehand, while some use casks that have been used to make port. Both give the whisky a dis nc ve taste and colour.

Then there is the charring that is done to the inside of the casks when they are being made, and the charred wood also gives colour and flavour.

All whisky is of course made from grain: barley, rye, wheat or mielies – or a mixture. Malt whisky is made from barley only, and the rest are called grain whiskies.

I always wondered what “malt” meant.

Well, it refers to a process that turns the starch in the barley into sugar. The barley is soaked in water, the seeds begin to germinate and the starch is converted into sugar.

The barley is then heated and dried to halt germina on and keep the sugars.

Some mes this is done by heat from peat fires, which gives some whisky a peaty flavour.

The barley is ground, mixed with water and yeast, and fermented in a s ll. Later it is put into casks to mature.

A single malt whisky means the whisky comes from a single dis llery.

Over 90% of Scotch whiskies are blends.

Here’s something I didn’t know: unlike wine, whisky cannot mature in the bo le. If it was a five-year-old whisky when you bought it in 2015, it is s ll a five-year-old in 2021.

And the difference between a Scotch whisky and Irish whiskey?

Our guide says there really is none – apart from the spelling.

There are so many good quotes about whisky, but I rather liked this one by US comedian WC Fields: “Always carry a flagon of whisky in case of snakebite, and furthermore, always carry a small snake.”
