TRUE BREW At the southern end of the Appalachian Mountain Range– and the Beginning of the Appalachian Trail– Craft Breweries are Growing our Local Communities

Clay tablets found dating back to the 5th millennium BC in Mesopotamia indicate that brewing beer was a respected craft/job and that most of the brewers were women. In fact, the brewer’s craft was the only profession in Mesopotamia which derived social sanction and divine protection from female deities/goddesses, specifically: Ninkasi, who covered the production of beer, Siris, who was used in a metonymic way to refer to beer, and Siduri, who covered the enjoyment of beer.1 Fast-forward to the 19th century and you’ll find that north Georgia mountains already had a long history of secretive moon shining and home brewed beer. The 20th century and Prohibition forced even more home brewers and distillers further underground, thus fostering fast cars, rum runners and the birth of NASCAR. In the meantime, copper mining and the production of sulfuric acid in Copperhill, TN chugged on employing many residents, but totally stripping the area of its lush vegetation and abundant wildlife. The copper mine closed in 1987, although sulfuric acid production continued well into the 1990s. Levi’s, one of largest employers in the region, opened its Blue Ridge doors in 1959. While a boon to the

local economy, the factory was also another source of extreme pollution and ecological devastation. When Levi’s closed its doors in 2002 the local economy went bust. Reforestation, ecological cleanup and diligent management of the Toccoa/ Ocoee River has brought back much of the original beauty and clean mountain waters that you see today. With this eco-revitalization came weekend cabin owners/renters from Atlanta, retirees from Florida and the growth of tourism. As the out-of-town populations grew so did the demand for more restaurants and shops. Call it what you will– Agritourism, Alcohol Tourism or whatever– our local wineries, and now craft breweries are bringing much needed revenue to the small north Georgia towns. They are providing jobs, creating sustainable products, and building our community. The most awesome thing about this? There are no harmful by-products to ruin the majestic beauty of our Appalachian Countryside. Angry Hops Brewing is one of

the newest breweries in Blue Ridge, opening in October 2021 they’ll soon celebrate their one year anniversary. After working at other local breweries, Alan Reis and Joe Bugg decided it was time to give their own craft brewery a shot, and they’ve not looked back since that day. Finding the perfect location was key, and an old car mechanic’s shop just off the shopping street turned out to be exactly what they were looking for. Additions, renovations, and a lot of hard work made their dream begin to take shape. With Alan’s previous brewing experience as the head brewer at two other local breweries, and Joe’s experience in construction coupled with his customer service skills as a river raft guide– everything just clicked. Their love of traditional beer styles provided a good base for attracting a loyal clientele, but they also push the envelope with other popular styles like IPAs, stouts, sours and seltzers. 10

Buck Bald Brewing owners Patrick

and Sylvie Keenan first rolled up the garage doors in 2018, transforming a Mid-Century Esso gas station into one of the most visited breweries in the area. What started out as a handful of home brewing friends has become a thriving Copperhill brew business loved by locals and visitors alike. The Murphy, NC location, opened just this year, affords the much needed room for more brewing, a larger taproom, an event space, and more parking. The original brew team, Patrick Keenan, Mike Crosier and Tony Hoyt remain on deck producing some of the most excellent craft brews in these here parts. So who is Buck Bald? Maybe a better question is “What is Buck Bald?” Buck Bald is a mountain peak in Polk County, TN. After multiple failed attempts to find a name that accurately reflects the beauty and history of North GA and South Central TN, they finally AUGUST/SEPTEMBER 2022

Copperhill Brewery opened its

first location in August 2018, and then a second location In Ducktown for brewing in 2019. A change of ownership in 2020 brought a new attitude and a fresh approach, becoming the first women-run craft brewery in the area. Colleen Fults and Sarah Berry make a formidable team bringing their passion for local business and collaboration to the community. With two locations, the Taproom in Copperhill and the Brewery in Ducktown, there’s always something going on, trivia, singo, karaoke or live music. The Taproom Stradling the border line of Georgia and Tenneessee, the Copperhill Taproom is one of the few places where you can have one foot in each state at the same time. Open seven days a week, the Taproom is a casual space where it’s super easy to hangout. Customers are welcome to bring in their own food, or order from one of the local restaurants, some of whom will even deliver to the Taproom. 12

Grumpy Old Men Brewing,

as the legend goes, two retired beer enthusiasts were learning how to brew in an outdoor shower. One day, an argument started about what to throw in the mix. During the argument, one of their wives told them that they sounded like a couple of Grumpy Old Men. The name stuck. Grumpy Old Men Brewing (GOM) was officially established on July 4th, 2013 when those same grumpy old men shipped their first legal brew. Their beers quickly became a staple of the north Georgia beer scene. When they decided they were ready to retire again, the two Grumpy Old Men handed over the taps to a new Grumpy Old Man and his Crabby Old Lady. The two original grumpy old men still enjoy the beer, just from the other side of the bar. There’s always something happening at Grumpy! Karaoke Thursdays are a fun local favorite and draw quite the crowd of characters, many are regulars who can belt it out with the best. Corn hole, live music, charity fund raisers, AUGUST/SEPTEMBER 2022

Salty Dawgs or Mountain Tapas, regular vendors at GOM, are often on site serving up great food to pair with your beer. Since their founding in 2013, GOM has strived to bring people together over delicious beer and unique community. Pendley Creek Brewing Company opened its doors in January 2021 and is proud to be the first craft brewery in Jasper. Daniel and Pam Briordy spent four years planning and nearly 10 months on the build out. Sparked by a true passion for the art of brewing, the Briordys are stoked to be part of the community in Jasper, GA. “This is our town, and we want to help build something new, and grow in a way that benefits everyone. If we work together we’ll all share the rewards.” Like many others, Pendley Creek Brewing is a family affair. Building and running a small hold brewery isn’t for the faint of heart, it takes long days, hard work and all hands on deck. Pam worked side-by-side with her husband Dan to bring Pendley Creek Brewing from vision to reality. They don’t just brew beer, they are dedicated to the process, using the finest ingredients, employing old and new techniques. Dan and Pam are committed to keeping the brews fresh, simple, and unique. S avoring S ummer There is something about August that feels bittersweet. Each sunrise comes a little later. Some nights are cooler. You realize this time of the year is ending, and you wish for just a little more time to savor the days of early morning light and the evenings of lingering dusk. Don’t get the end-of-summer blues, take advantage of the lingering warm weather and gorgeous seasonal produce and invite your friends over.

Tomato Cobbler with Cornmeal-Cheddar Biscuits Cobbbler Ingredients 1 medium size onion Vidalia if possible 1 Tbsp olive oil 2 large tomatoes 3 garlic cloves minced 2 pints cherry or grape tomatoes 1 Tbsp white wine vinegar 1 Tbsp brown sugar 1 Tbsp cornstarch or flour 1 tsp kosher salt 1/2 tsp ground black pepper 1 tsp fresh thyme leaves & sprigs for garnish Biscuits Ingredients 1-3/4 cups all-purpose flour 2/3 cup cornmeal 2 Tbsp granulated sugar 1 Tbsp baking powder 1/2 tsp kosher salt 1/2 cup cold unsalted butter 1-1/2 cups buttermilk 1 cup shredded cheddar cheese Cobbler Directions Preheat the oven to 375 degrees F. Sauté onion in a large skillet over medium heat for 5-6 minutes or until tender. While the onion is sautéing, chop the large tomatoes and discard the core. 18

Add the tomatoes to the skillet along with the minced garlic and 1 pint of the cherry tomatoes. Cook for 10 minutes. Remove from the heat and add the vinegar, brown sugar, flour or cornstarch, salt, pepper and thyme leaves. Mix well. Add the remaining pint of cherry tomatoes and pour everything into an oven-safe casserole dish which has been sprayed with non-stick cooking spray. Set aside. Biscuits Directions To make the cornmeal-cheddar biscuits, place the flour, cornmeal, sugar, baking powder and salt in a food processor*. Pulse a few times to combine the dry ingredients. Cut the butter into cubes and add to the food processor. Pulse until the butter is in small pieces, about the size of a small pea. Add the buttermilk and shredded cheese and process just until the mixture comes together. Do not over mix the dough. Use an ice-cream scoop to scoop out the biscuit dough and place on top of the tomato mixture. Place the biscuits about 1/2 inch apart; they will spread just a bit. Bake for about 35 minutes at 375 degrees or until the biscuits are golden brown and the tomato mixture is bubbling. Let sit for 10-15 minutes and serve warm. Spicy, Corn and Avocado Soup Ingredients ¼ cup olive oil 1 yellow onion, roughly chopped Kernels from 2 ears of corn 4 cups Organic Chicken Broth 1 large avocado, peeled and pitted 1 fresh jalapeno, roughly chopped Kosher salt Garnish: avocado, corn, chives and olive oil Instructions In a medium-large pot over medium-low heat add the olive oil and the yellow onion. Cook while stirring often for 7 minutes, and if you need too lower the heat to keep the onions from browning, do so. The onions should be soft and translucent when you add the corn kernels. Stir them into the onions and then add the chicken broth. Bring to a simmer and cook for 10 minutes. Remove the soup from the stove and transfer it to the jar of a blender. Add the jalapeno and the avocado and puree on high until the soup is smooth and creamy. Gently reheat in the same pot and season to taste with kosher salt. Ladle into bowls and garnished with slices of avocado and some raw corn kernels and chives plus a drizzle of olive oil. https://heatherchristo.com

Pesto Tortellini with Roasted Vegetables Ingredients 1 medium zucchini, halved lengthwise and sliced into half moons 1 small red onion, cut into 1-inch chunks 1 pint cherry or grape tomatoes (about 2 cups) 2 tablespoons olive oil Kosher salt & Freshly ground black pepper 2 (9-ounce) packages fresh cheese tortellini 1/3 cup store-bought or homemade basil pesto Instructions Preheat oven to 425°F. Meanwhile, halve 1 medium zucchini, then cut into thin half-moons. Cut 1 small red onion into small chunks. Place the zucchini, red onion, and 1 pint cherry tomatoes on a rimmed baking sheet. Drizzle 2 tablespoons olive oil, salt and pepper. Toss well to coat and spread in an even layer. Roast until tender and caramelized, 20 to 25 minutes. Meanwhile, bring a large pot of salted water to a boil. When the vegeables are ready, add the tortellini to the boiling water and cook according to package instructions until al dente. Watermelon With Yogurt, Poppy Seeds, and Fried Rosemary

Ingredients 2 tablespoons olive oil 1 6-inch rosemary sprig ½ cup plain whole-milk Greek yogurt 1 tablespoon honey Kosher salt 1 3-pound seedless watermelon, rind removed, cut into 2-inch pieces 3 tablespoons fresh grapefruit juice Flaky sea salt 1 teaspoon crushed red pepper flakes 1 teaspoon poppy seeds

Ingredients for the “smash” 1/2 cup brown sugar 1/2 cup water sprigs of rosemary 4 figs, sliced in half, plus 1 more for garnishing the drinks

Instructions Heat oil in a small skillet over medium. Fry rosemary until crisp, about 20 seconds. Transfer to a paper towel to drain; set rosemary oil aside. Mix yogurt and honey in a small bowl; season with kosher salt. Toss watermelon and grapefruit juice in a large bowl; season with flaky sea salt. Spread yogurt on a large platter. Top with watermelon and crumble fried rosemary over. Drizzle 1 Tbsp. reserved rosemary oil over (save remaining oil for another use) and sprinkle with red pepper flakes and poppy seeds. https://www.bonappetit.com

Ingredients for the Cocktails 6 ounces booze of your choice (rum, bourbon, gin, tequila all work, so pick your fave!) juice of 1 lemon 2 - 4 ounces of the “smash”, depending on your tastebuds Instructions Make the “not-so-simple” syrup by heating the sugar, water and rosemary until the sugar has dissolved and the rosemary is fragrant. Strain, and add to the blender with the figs. Blend with a few pulses. Use a Boston shaker to add the cocktail ingredients, taste, and adjust as necessary. A Sincere Friend to the Siminoles

What does botany and ornithology have to do with the history of the “Indians” of these Southern United States? William Bartram 1739-1823 was born in Pennsylvania and like his father John, had a keen interest in discovering the new realms of the southern lands from the tropical forest of Florida through Georgia Territory which included what later became Alabama. His travels are well documented and by the mere magnificence of his verbiage and language could capture the reader’s interest with just one paragraph. His original documentation of his “Travels” are written in precise English which is difficult for the common reader to decipher with the letter “s” being written as “f ”. His works were so well thought of not just for his writings about plants and animals but for his description of the Indians being the first “naturalist” to venture into the lands of the south. More modern versions of his works are more easily read. It is surely his fearlessness that endeared him to the American Indians he encountered. He had been invited by the Superintendent of Indian Affairs, John Stuart, to accompany his survey party into new land sessions of the south. Stuart was one of the few white men that the Indians found trustworthy. He had emigrated from Scotland to South Carolina, which at the time was still a British Colony. Bartram’s description of the Indians he met were used often by other writers concerned with the traits and aspects of the Indians of the South. It was said that he had encountered a “Siminole” who was bent on killing every white man he came upon. But when the “Siminole” met Bartram, he was disarmed by this charming man’s friendli30

ness. So it was, that Bartram, accompanied the surveyors to the area of Augusta when the Creeks and Cherokees had given up 674k acres of land. He collected seeds from new plants and trees that were thereafter documented and certified. In doing so, he also documented landmarks, tribes, animals, and birds while telling his tales of escaping bears, wolves, snakes, alligators and more. His journeys and tales inspired many of the romantic 18th century writers of the day from Samuel Taylor Coleridge to William Wordsworth. The Bartram Gardens in Philadelphia are a tribute to this family. In addition to writing about the natural history of plants and his travelogue, he wrote in depth accounts of his encounters with the Indians speaking on his observations of their manners in such terms as to disallow that he wrote these works at all since they romanticize his encounters. He spoke of not only what plants these people grew but their dress, physical characteristics, government, social organization and the love they had for the land. Aside from the books involved with his travels, he wrote many articles and journals that have been complied into “Observations on the Creek and Cherokee Indians” in a book edited by Waselkove and Braund. It is based on a series of questions asked of Bartram by a Philadelphia physician Benjamin Smith Barton. The doctor was most interested in whether the Indian’s skin color was the same at birth as it was when they became adults? Were any of them were born spotted, having had a mix of parentage? Was their skin color due to painting themselves with the pigments of plants? Bartram must have thought these questions quite insane. He tells what he surmised of the “Chactaw, Crick, Chicasaw, and Siminole”. Then he separates the description of the “Cherokes” by saying “They are the largest race of men I ever saw, and equally comely (attractive)” with skin that has an olive cast. Perhaps thought to be because

they are mostly mixed bloods. “The women are tall, slim, of graceful figure” with a complexion that is fair. He compared them to their “Crick” tribe as being much taller and lighter skinned. He continued by saying he never heard of any spotted, speckled, or piebald people among the Indians. When asked if the women were the picture of misery and oppression, Bartram was quick to tell the good doctor, it was quite the opposite, since the “Cricks and Cherokes” are both matrilineal tribes. Other questions included games, religion, and governmental practices.
