Say goodbye to Fall and hello to Winter– already? Dang! Fall passed us by as Maxine and I spent most of our time indoors nursing my pesky broken ankle. I’ll tell you right now, Maxine is far from being a service dog, or even a nurse dog. Her main job seemed to be placing bones and toys right in the path of my scooter, jumping on my head trying to get me to play and turning putting on my pants into a game of tug, she’s such a rascal. And geez, we have both never been so bored, stuck in the cabin. The vivid fall view from our cabin’s picture windows was spectacular. However, not being able to walk made me realize how much I take for granted living here. A simple sunrise walk in Maxine and her minefield of toys, the woods, an afternoon hike along bones and balls under my scooter. the river path or even night-time star We’re both bored out of our skulls gazing from the deck– things I might being stuck inside for going on two normally do daily– were (and are still) months now. Below: my permanent not happening. I’ve made a promise hardware, yippee! to myself to get up off my butt and away from the computer– I can be a workaholic. blue ridge mountain bike mecca Outdoor Adventure Editor Greg Dunn Gets the Scoop on Two Young Rising Stars in the Local MTB Scene

T

There is no doubt that one of the main reasons my wife and I moved to Blue Ridge six years ago was for the mountain biking. Opportunities abound for people who love bikes but after living here for a while and getting to know folks who grew up here, I realized that there weren’t many local kids getting into mountain bike racing. Well my friend, times they are a-changin! Meet Chase And River Key. I met these two– along with their parents Tim and Pam Key– a little over a year ago as they were transitioning from motocross (another passion of mine) to mountain bikes. I rode with Chase for the first time just a few months after they started getting into mountain biking and his motocross background was obvious. A natural on the bike for sure, but when he stayed on my wheel the whole way up Green Mountain I realized that he was going to be a force to be reckoned with. Not long after that ride I met Chase’s younger brother River as he rode one handed wheelies through the pit area of the high school race I was helping with. The kid is one of the best bike handlers I’ve ever seen and he’s only 13 years old! These two mountain bike phenoms have strong roots in southern Appalachia. Their parents, Tim and Pam grew up in the area, and own a successful appraisal business (Georgia Mountain Appraisals and Self Storage) in Blue Ridge. They both share the same passion for these mountains so it is no surprise that the entire family is obsessed with the sport of mountain biking. Being the racing family that they are, Tim and Pam asked if I would be interested in helping them out with training and racing strategies and the rest is history. Tim is now the head coach for the Fannin County Composite MTB Racing Team, and team consists of riders from Fannin and Union Counties.They compete in the Georgia High School Mountain Bike League which has seen huge growth in just two seasons. Many of the riders on the Fannin County team are as new to the sport as the Key brothers, but you wouldn’t know it if you saw them in action. As a team they took third in the state, with many individual podium appearances including DECEMBER 2015/JANUARY 2016

There are many reasons for the boy’s rapid success including loving, supportive mountain biking parents, however I think that they have a bit of an advantage living in one of the best areas for mountain biking in the USA. I asked them their opinions and here’s what they had to say: Do you think living in Blue Ridge gives you an advantage over your competition? Chase: Yeah, I think it does because our trails are steeper, rougher, and more challenging River: A little bit because of the technicality of the trails What is your favorite local trail and why? Chase: Green Mountain has the best flow River: Green Mountain because it’s fast and rooty

Moles: Better Than Having Voles? Landscape & Garden Editor Kevin Johnson Explores the Good, the Bad and the Habits of a Mole’s Subterranean Life

A

As the growing season winds down and the winter months stretch before us, I continue to receive calls about mole tunneling. Or could it be vole tunneling? Did you know there is a big difference? I find many people are unaware of the differences between moles and voles. To try and control these pests we need to first identify which one causes what problem. Notice I said try. Controlling moles and voles in the home lawn and landscape can be a tedious battle. The goal of my next two articles is to help us get more familiar with these pesky mammals and to provide suggestions for control. In this article we’ll first take a closer look at moles. There are seven species of moles, however the Eastern mole, Scalopus aquaticus, is the most common mole in our area. Moles grow 4-8 inches long and are dark brown to gray/black in color. They have long noses and padded, webbed feet with no visible ears. They are interesting little creatures that live most of their lives underground in complex tunnel systems and can dig up to a foot a minute. Picture finding 100 feet of new tunnels in the lawn you’ve been working so hard to maintain. I see it all the time. On the positive side, moles tend to be solitary creatures, so unless it’s mating time, typically you won’t find more than 2 or 3 in the average yard. Six moles per acre is a very high population. The good news? Moles are insectivores and not rodents, meaning they eat insects and not plants. In nature, they are very beneficial animals because they do eat white grubs, ants, beetles and other insects that damage lawns and garden plants. Their tunneling activity also improves the soil by mixing and aerating. They are only a problem when out of place - doing damage to lawns and gardens. The bad news? Although they do not eat plants or plant parts, their digging disturbs roots of trees, shrubs and other garden plants causing them to die. Moles can devour up to one half their body weight each day, so that’s a lot of eating, and their healthy appetites cause them to tunnel throughout our yards searching for a good meal. Despite the damage done by moles in yards, there are aspects of this unique mammal which are beneficial. Moles make soils healthier as their tunnels permit air and water to penetrate deeper soil levels. Moles

feed voraciously on all types of insects found in the soil, some of which are serious pests of lawns and gardens. Moles are solitary creatures, therefore the number of mole hills does not equal the number of moles.

Along with damaging tunnels, you may also find mounds of dirt marking deep runs or nesting areas. The number of mounds does not equal the number of moles; just one can do a lot of damage. Yes, they do make a mess. Depending on your lawn-care goals, controlling moles can be a challenge. There are several approaches to consider. • Organic repellents such as blood meal, cayenne pepper and castor oil can be spread on the lawn and may or may not work, and if so for a limited time and require repeated applications • Applying pesticides such as grub killer to your lawn to limit their food supply. There are variations of chemicals, sprays, and repellents that a homeowner can apply directly to the lawn. This can be very costly for the homeowner and damaging to the environment. Plus the use of pesticides results in killing the beneficial insects needed to provide our plants with the nutrients to grow. • Poison bait such as Talprid. This poison comes in several forms and even comes disguised as earthworms. Talprid is harmful to house pets and other wildlife, so if you decide to use poison, following the instructions for use is very important. • Manual deterrents such as underground barriers (mole fences) are not very practical but work. Some dogs and cats are good at catching moles but most are inconsistent. Manually catching them yourself, yeah right. • Trapping seems to be the most effective form of controlling moles. What makes trapping

effective is outlined in two parts. 1. Knowledge of mole’s feeding habits and their travel tunnels to these areas. 2. Knowledge of how the trap works and correctly setting the trap. The effectiveness of controlling moles really relies on how well the mole trapper can identify both feeder tunnels and travel tunnels. Focus on the travel tunnels and you’ll win. Live traps such as a glass jar, or other humane traps buried along an active travel tunnel may be the best way to trap and remove moles from your property. However, eliminating moles in your lawn is no easy task. Proper identification is always the starting point. In the next article I will address voles. You’ll see there’s quite a big difference between the two. If you have voles in your yard, you may end up wishing they were moles. ACLM

Sunny D Children’s Theater will produce The Jungle Book (February 5-14) and a fall winter production, yet to be selected that will run October 28 – November 6. These two shows are in addition to their regular two week long Drama and Musical Theater summer camps, June 13 – 26. BRCT will also continue its Live Music is Better series, bringing back favorites and new musical artists for 2016. This year’s season offers, Copius Jones in January; Roxie Watson in February; Valerie Hines in March; Bergonzi String Quartet (locally known as the Blue Ridge Chamber Music Quartet) in June; La Lucha in July; Diane Durrett in August; Kurt Thomas in September; and Roxie Watson in October. Watch for the announcement of the specific dates. BRCT holds many opportunities to get involved; they are open to any and all in the community that would like to help out. Every Tuesday the theater hosts Volunteer Day. Volunteers gather at the theater around 1pm to start working on sets, painting, cleaning, and many other jobs that need to be done to bring live theater and live music to Fannin County. They then stop at 4 and enjoy their weekly social times. There are opportunities to assist on show nights by ushering and handling concessions. Volunteers are given opportunities to act on stage or assist behind the scenes. The theater offers several positions, such as stage hands, sound board operator, light board operator, stage manager, and various design opportunities. four B.E.S.T. Series performances and two Community Chorus performances. Some of these performances will be held in local school auditoriums in order to accommodate the number of enthusiastic patrons. Additionally, numerous gallery shows, exhibits and receptions are scheduled in the gallery. Free concerts by are also offered at the Gilmer Arts Center on the 3rd Friday of every month. Called Acoustic Blends, these live music events offer a great opportunity for local musicians to showcase their talent. For the community, there is even more excitement ahead. Gilmer Arts has purchased, and is in the process of remodeling a 5,300 square foot building on Dalton Street near the current location in downtown Ellijay. This will be a live performance venue named the George Link Jr. Gilmer Arts Playhouse and undoubtedly will be a vibrant addition to downtown. Tater Patch Players

Tater Patch Players has been part of the Pickens County community since its founding in 1977. Now in a cozy, audience-friendly theater, the troupe produces a solid season of 5 major productions per year. They also have special performances, host visiting artists and show movies during the year. They round out 2015 with “It’s A Wonderful Life: A Radio Play on the Stage”, which combines the family friendly warmth of the original story with a nostalgic peek into a 1946 radio studio. For 2016, they promise “A Year of Laughs” with five comedies, ranging from titillating farces to thoughtful amusements. The participants in the all-volunteer Tater Patch Players represent a wide range of ages and interests. Diverse members of the community come together to put on professional-quality DECEMBER 2015/JANUARY 2016

plays for audience members from across the North Georgia area. Whenever there is a stage performance, a group of people -- the audience and performers -- gather in a theater for a couple of hours and share in an event that may be beautiful, funny, moving, thought-provoking, or, at least, diverting. In an age when most of our communication happens in front of a screen, the participants in Tater Patch think that this “gathering” function of theatre is, in and of itself, something that matters, both for the audience and the cast and crew. The troupe is planning to expand into theater education for youth in the coming year, with a workshop for actors age 10 and up. They also plan to host workshops for directors, stage managers and other “behind the scenes” folks who make up the important parts of any theater production. Tater Patch Players is also working with other troupes in the area in a collaborative way to bring more live theater

In March of this year, Michael and Vickie White opened Revive Us Again Furniture Consignment in Jasper. With his 45-years in retail and hers with Georgia Marble, drapery-making, and retail—and their own passion for shopping consignment, they wanted to do something fun before they retire. Their experience and interests blended into the idea for creating happy customers. Vickie tells it this way, “After much research, prayer and a few sleepless nights we did it. We opened our store in downtown Jasper, in the former Jasper Jeep/Burnt Mountain Trading Company building. Consignment is a savvy way to shop, but it’s also the thrill of the hunt for that perfect piece of furniture that you’ve been waiting for. Prices are more reasonable, especially when your hunt is for quality pieces,” Vickie enjoys the nostalgia that comes with selling consignment, “Especially when younger 16

customers tell us that some of our furniture reminds them of where they grew up in their parents and grandparent’s homes.” Michael is gratified, “One of my greatest rewards is that consignment allows a customer, who may not have a great deal of money, to be able to purchase a piece that they thought was out of reach for them.” The Whites understand, since their home in Jasper is filled with consignment furniture, mostly traditional, with a hint of French Country. The Whites keep a wish list for customers, who ask them to keep an eagle-eye spy for certain pieces. Vickie notes, “One of our customers just bought a rice bed that we’ve been searching for her for months. It was the prefect piece!” Michael points out their Christmas shop, “It’s unique, in that we have not only new items but consigned items that are one-of-a-kind.” Vickie’s style of decorating her tree tops brings requests from customers to share her tips. Their variety of ornaments makes holiday decorating easy. When someone wants to consign with Revive Us Again, the Whites asks them to send pictures of the furniture they want to sell or invite them to their home to see the items. Most of their merchandise is obtained locally, but they also bring in furniture from other areas. The Whites have a 120-day consignment period, after that if the item or items don’t sell the consignors contacted to see if they want to pick up their items, sell at 50 percent markdown, or donate to a charity of their choice. “We have been DECEMBER 2015/JANUARY 2016

Made in America is the emphasis and everything is unique and of good quality. Our biggest seller is pottery and all of it is made in the USA. I have more than 20 different potters featured from all over the USA. A favorite potter from Seagrove NC is one of our most collectible, high-end lines of pottery in a gorgeous glossy red glaze. All of the pottery featured in the shop is beautifully crafted and hand-thrown, and ranges from oversize soup mugs and mini omelet makers, to colorful decorative bowls and plat-

Especially when they’re coming from Atlanta or Chattanooga, so it’s just under a two-hour drive to Blue Ridge. They always tell me they can’t believe Blue Ridge is so close, but feels like a total escape from the stress of the city and work.” Taylor also has many returning guests she considers friends, as she knows them on a first name basis. Other agents insist that Delita is a customer favorite for her way with guests and her veteran customer service skills. Blue Ridge has a lot to boast about when it comes to things to do while on vacation. Pumpkin Spice Cheesecake Ingredients for Crust Nonstick vegetable oil spray 2 cups gingersnap cookie crumbs (about 9 ounces) 1 cup pecans (about 3 1/2 ounces) 1/4 cup (packed) golden brown sugar 2 tablespoons chopped crystallized ginger 1/4 cup (1/2 stick) unsalted butter, melted

Ingredients for Filling 4 8-ounce packages cream cheese, room temperature 2 cups sugar 1 15-ounce can pure pumpkin 5 large eggs 3 tablespoons all purpose flour 1 teaspoon ground cinnamon 1 1/2 teaspoon ground ginger 1 1/4 teaspoon freshly grated nutmeg 1 1/4 teaspoon ground allspice 1 1/4 teaspoon salt 2 tablespoons vanilla extract

Prepare the Crust Preheat oven to 350째F. Spray 9-inch-diameter spring-form pan with 2 3/4-inch-high sides with nonstick spray. Grind cookie crumbs, pecans, brown sugar, and ginger in processor until nuts are finely ground. Add butter; using on/ off turns, process to blend. Transfer mixture to prepared pan; press onto bottom and 2 inches up sides of pan. Bake crust until set and lightly browned, about 10 minutes. Cool completely. Wrap the outside of pan with 2 layers of heavyduty foil. Prepare the Filling Preheat oven to 350째F. Using electric mixer, beat cream cheese and sugar in large bowl until light and fluffy, about 2 minutes. Beat in pumpkin. Add eggs one at a time, beating on low speed to incorporate each addition. Add flour, spices, and salt; beat just to blend. Beat in vanilla. Transfer filling to cooled crust. Place spring-form pan in large roasting pan. Add enough hot water to come halfway up sides of spring-form pan. Bake uncovered until filling is puffed around edges and moves slightly in center when pan is gently shaken, about 1 DECEMBER 2015/JANUARY 2016

Chicken And Wild Rice Soup

Preparing a smoked turkey stock for this recipe makes all the difference, transforming a dependable standard into a spectacular soup. Turkey Stock 1/2 lb smoked turkey wings or neck 2 bay leaves 1 teaspoon salt 3/4 cup wild rice (about 5 ounces), rinsed and drained Bring 6 cups water to boil in medium saucepan. Add smoked turkey wings or necks, bay leaf, salt and wild rice. Reduce heat to low and simmer until rice is tender but still firm to bite, 50 to 60 minutes (time will vary depending on variety of rice).

Meanwhile prepare chicken and vegetables. You will need: 1 tablespoon unsalted butter 4 slices bacon, diced 2 lb bone-in chicken thighs 1/4 cup white wine 1 onion, chopped 12 ounces baby bella mushrooms, sliced 2 carrots, diced 2 celery stalks, chopped 1 tablespoon chopped garlic 1 tablespoon chopped fresh rosemary 1 tablespoon chopped fresh thyme 1/4 cup fresh flat leaf parsley 1 teaspoon crushed red pepper flakes 1 1/2 cups frozen corn kernels 1 cup heavy whipping cream Heat butter in a large heavy pot over medium heat. Add bacon and cook until it begins to brown, stirring often, about 5 minutes. Using slotted spoon, transfer bacon to paper towels to drain. Sprinkle chicken thighs with salt and pepper, and sear in bacon fat 5minutes per side. Transfer chicken to a bowl.

Add onions to pot and cook until golden, about 8 minutes. Lower the heat to medium-low, add wine to the pot and deglaze, scraping browned bits from the pot. Stir in garlic, rosemary, thyme and parsley; cook for about a minute. Return chicken (with juices) and bacon to the pot. Add carrots, celery, mushrooms and corn; cover and cook for 45 to 60 minutes, checking often to make sure there is some liquid in the pot. Remove chicken skin and bones from the pot; shred chicken. Remove bay leaves, turkey necks and bones from the stock. Carefully poor stock and rice over to the pot with chicken and vegetables. Stir to combine. Stir in cream and cook for 10 more minutes. For the roux: 2 tablespoons unsalted butter 2 tablespoons all purpose flour Melt butter in a skillet, add flour and whisk until combined. Continue cooking for 5 minutes, whisking. Festive Potatoes

These potatoes will surely make a great addition to any Holiday Dinner. Cream Sauce 2 1/2 cups whipping cream 1 tablespoon butter Bring to a simmer and cook, for about 15 minutes, until it thickens slightly and reduces.

Pour reduced cream sauce over potatoes. Bake covered for 1 hour and 15 minutes. Remove the cover, and bake for 15 more minutes or until the top is golden and the potatoes are tender.

Potatoes 2 1/2 pounds potatoes, preferably Yukon gold thinly sliced. We recommend using a Japanese Mandolin or a V-slicer for this dish, but you can use a knife or a food processor to cut the potatoes. 1 ¼ cup grated Parmesan cheese

60 Years and Still Riding

R

ussell Williams was nine when he started working at his father’s tire shop. “My dad started me out sweeping floors and washing windows,” remembers Russell. “I was blessed to have both my father and grandfather there to teach me about cars.” While in college Russell worked summertime and vacations at the tire shop. He eventually came back home to stay. “It always seemed like a good fit,” says Russell. “It’s outside, it’s getting to know people, it’s working with cars and I still get to live in the Blue Ridge Mountains.” Russell’s family business, Ellijay Tire Company, just turned 60 years old—quite a feat in view of the statistics. Small businesses employ over half of workers in the United States, but, according to the Small Business Association, only 50% of all new businesses survive more than five years. Only 33% survive more than 10 years. Each time a new generation takes over, it becomes harder to maintain and grow the business. Each successive owner has to keep up with the demands of his time. In his grandfather’s time, it was turning from re-capping tires to selling more new tires. For Russell and his family, the challenge has

been keeping up with technology. “We had to transition from writing receipts to keeping customer information online. Checking alignments used to take 20-30 minutes. Now we have a quick-check system that runs complete diagnostics for customers—it prints out a sheet showing battery life, tire tread, alignment and more. And, it does it in less than 10 minutes. The technology allows us to serve customers even faster.” Ellijay Tire specializes in light car work— tires, wheels, alignments, oil, etc. They have some of the few matching roll force balancers in north Georgia, incredible machines that take imperfect tires and wheels and match them to make them round. They have a runflat machine and work on low-profile and specialty tires daily. The alignment machines are top of the line. They give a color-coded diagnostic sheet to help customers see their car’s condition. In a modern world of corporations and cookie cutter franchise stores, businesses like the Ellijay Tire Company are getting harder to find. They are a reminder of an America where you knew the business owner’s name and where people cared enough to ask your name and give you a smile. A family-owned business is a place where you aren’t just a statistic to a boardroom full of people in business suits. “We were able to keep expanding our business in Ellijay until recently.” says Russell. “We have great customers who are loyal and trust us. They travel from all over north Georgia. We just got to the point a couple of years ago where we felt like the wait times were too long, so we were looking at opening another store to help them.”

Russell and his wife, Jodi, found an opportunity for expansion in nearby Blue Ridge. “The second largest customer base we have is in Blue Ridge,” notes Russell. “Our new store will be managed by Robert Goodwin, who has been with us for 15 years. We’ll miss seeing him at our main store every day, but there’s no one else we could trust with this much responsibility. Robert has the amazing ability to manage employees, fix problems and treat our customers like the family they are—all of those are rare qualities in one person, but essential for a successful store.” The new store will be named Williams Tire Company, but that’s the only thing that will change. Excellent service and customer care will still be our main goal. The roadrunner logo (Russell’s

grandfather’s favorite cartoon) and the company tag line “Since 1955” will stay the same. Eventually, the store in Ellijay will evolve to include the new name. Having 60 years of experience certainly helps ease the startup of a new store. The sales staff at Williams Tire is always searching market trends and deals to pass onto customers. “Anytime we find deals, we stock up so we can pass on the savings to our customers.” Their website (www. williamstireco.com) is a way for customers to research brands and prices online at their convenience. If Russell or Robert don’t have it in stock at either location, they can usually get it the very next day. Thankfully, being independent helps Williams Tire Company sell any brand of tire and wheel, but they are also authorized dealers for many major brands (Michelin, BF Goodrich, Uniroyal, Cooper 40

and Yokohama), which means they can offer the money-back promotions to customers and warranty tires. While larger, chain stores offer a price and then add extra charges, Williams Tire has a different philosophy. They include everything in their quotes that a customer needs to get out the door. No hidden fees for lug nuts or warranties. Just clear prices. “We get some people that just walk in, but most new customers have heard about us by word of mouth,” says Robert. “We have a reputation for caring about what the customer needs. We don’t just sell to make the sale. The tire shop has generations of families come back to do business. Family and loyalty are important to us.” Russell and Robert agree that one of their main goals is to educate customers, answer their questions and make them feel comfortable.

A Written Language

N

Near the old Chote or Chota, the old capital of the Cherokees located in Tennessee on the North Carolina line was born a mixed blood man named Sequoyah or George Gist (1776-1843). He had been a warrior in his younger days. He had traveled between homes in Tennessee, Alabama and Georgia. He often was working as a silversmith. He had seen how the white man was able to communicate through books and letters and began to develop the written language of his Cherokee peoples in 1809. It took him 12 years but he finally created a written language made up of 86 characters to represent the sounds of the Cherokee language. His wife destroyed his notes, calling them witchcraft, and Sequoyah had to reconstruct them from memory. It took some convincing for the Council to acknowledge that his idea might work and he plead his case by showing them how he had taught his daughter Ayoka to write and read the language. Some elders rejected this new idea amid concerns that the written language development was the work of the devil. Sequoyah persisted. He left his southeastern homes for Arkansas where he was able to teach the whole of the Old Settlers to read and write in their own language in a matter of months. It was finally accepted after another seven years by all Cherokees as the official syllabary of the Cherokee language and used to publish the first newspaper at New Echota here in Georgia in 1827. Because we have records written by the Cherokees in both English and Cherokee we have their remarkable history. The Native American Culture had only one choice, or so it would seem, to survive in the modern society being forced upon them. They 46

Before the development of the Cherokee syllabary in the 1820s, Cherokee was a spoken language only. The Cherokee syllabary is a syllabary invented by Sequoyah to write the Cherokee language in the late 1810s and early 1820s. must sacrifice their cultural values. Many mixed bloods had become acculturated. They adopted the ways of their invaders; become educated, spoke English, dressed as the white people, converted to Christianity, intermarried, held slaves, became individual property owners, businessmen and developed a modern acceptable government. What more could white Georgians ask for? While many of the full-bloods fought to remain true to their heritage, it was evident that change and progress were coming. Rapidly it became a two-class society within the Nation; one built upon capitalism the other on tradition. Disappearing were the days of being able to trade for the necessities of life. By design, this was civilization and assimilation at its best. A dozen missionaries moved into the Territory with the National Cherokee Council’s permission to set up schools to teach the children English. They had been asked to exclude teaching religion but seldom listened. Mixed-blood children seemed to learn more quickly than their full-blooded counterparts. Whether this was more of a resistance factor amongst the full bloods is not fully known. The missionaries goal was clear as they set about to change the so-called “pagan” peoples into the respected civilized Christianized society. ACLM
