Most everyone around here says that this past fall has been the most spectacular, can’t say I disagree. Seems we always have good color, but this year the vibrancy seemed unique, leaves of all colors simply shimmered and glowed. Summer is not our favorite dog walking season. Which means I’ve been outside with the dogs enjoying the fall when I probably should have been inside working. The crisp fall air (and all that comes with hunting season) gets the dogs moving, noses in the air. After 6 years. I know what Maxine is gonna do at any moment, however this is my first fall with Zevon. So far he’s a good dog, we’re finding our ground. Big news here at our little magazine- Pam Cavender has stepped up to be our Account Executive of Advertising Sales. Pam has tons of experience, working throughout her career in publication ad sales. On a side note, Pam and her husband Tim, moonlight as Mrs. & Mr. Claus. Hey- what can I say, I like fun people! I know you’ll like Pam too. What could be more fun than shopping with friends on a fab, long weekend trip to the mountains? Located in historic down-town Ellijay, The Original Ellijay North Georgia was long settled by cultures of indigenous peoples and River Street Tavern is a small, intimate tavern was known as part of the homeland of the historic Cherokee people. two years after leaving the Pub the opportunity presented itself for Heather and Brad to purchase it, or as Brad refers to it as “buying Heather a job.” Heather thought he was crazy, but she had always had a secret desire to own the Pub, and they both agreed it would be a good investment for their future. On May 1, 2014, the Simmons became the new owners of Jilly’s Pub. On New Year’s Eve 2014 they celebrated out with the old and in with the new and went forward with the name change to what is now known as River Street Tavern. Heather explains that, “Brad and I love our hometown of Ellijay and want to be a part of its growth. Nothing makes us happier than to see good things happen with our community. We welcome you to visit our Tavern and hope that you are made to feel at home here!”
How Do Those Dollar Bills Get on the Ceiling?
One of the many unique things about the Tavern are the dollar bills stuck to the ceiling. This feat is no easy task. Start with a dollar bill, a quarter and a thumb tack. The thumb tack is stuck into the center of the dollar bill, a quarter is placed on top of the thumb tack and the dollar bill is folded so it mimics a dart. Before you fold up the dollar bill, your server will mark the quarter for a free beer. Toss the dollar bill up, with the quarter giving enough weight to get it to the ceiling and push the thumbDECEMBER 2021/JANUARY 2022
tack in. The dollar bill will eventually relax, especially on high humidity days. Once it relaxes the quarter will fall out and whoever retrieves the quarter will receive a free beer. Sounds easy, no? Give it a try and see for yourself.
Award Winning Food & Local Brews
The River Street Tavern is well known for their award winning burgers and featured local brews. In 2016 The River Street All American Hamburger received the distinguished “100 Plates Local Loves” award by ExploreGeorgia.com. The Tavern won again in 2019 with their Wonton Burger, topped with tangy vinegar slaw, sweet yum-yum sauce, salty teriyaki sauce, and fried wontons for that extra crunch. River Street Tavern has also been recognized as the best beer bar in Georgia in the Annual Great American Beer Bars competition conducted by CraftBeer.com, the Brewers Association’s website for beer lovers. CraftBeer.com readers were polled to determine the best beer bars in all 50 states and Washington D.C. “It’s a great honor to be recognized in the craft beer world. ’Twas the night before an Appalachian Christmas, when all through the house, not a creature was stirring — not even an opossum. The stockings were hung by the chimney with care, in hopes that the Mothman would soon be there. With potato candy. Or something like that. Making candy in the mountains is a traditional holiday activity, and some favorites found in cookbooks include black walnut fudge, molasses taffy and potato candy. That’s right — candy made from potatoes. CandaceRoseNelson.com
Potato Candy
Potato candy is a simple dessert that mostly consists of sugar. Add enough sugar to get it thick enough to be able to roll up. Ingredients • 1 small potato • 6 to 8 cups powdered sugar • 2/3 cup peanut butter • Dash of vanilla Instructions • Peel and slice potato into thick pieces. Boil and cook potato until tender. Mash potato slices until all lumps are dissolved. • Add four cups of powdered sugar to mixture and mix until well-blended. • Gradually add mo cups of powdered sugar until you get desired texture: a thick bread dough or cookie dough mixture.

• Place wax paper on countertop and sprinkle more powdered sugar on top. Roll out potato mixture until it’s about ¼-inch thick, then sprinkle more powdered sugar on top. • Spread peanut butter on top of mixture. Roll mixture over on top of itself like a jelly roll until it forms a log with a swirl of peanut butter inside. • Place roll in wax paper in the refrigerator to chill. Black Walnut Fudge
Hand foraging and enjoyment of Black Walnuts date back to the days of Native Americans, and much earlier by some archeological accounts. Black Walnuts are a nostalgic tradition for many Appalachian families. Ingredients • 1 (16 oz.) box of powdered sugar, sifted • 1 stick butter (substitute 1 Tbsp. Black Walnut Oil for 1 Tbsp. butter to enhance flavor) • 1/4 cup milk • 1/2 cup cocoa • 1 tsp. vanilla • 1 cup Black Walnuts (plus a few for the top) Instructions • Line a 9-inch plate or pie pan with aluminum foil and butter the foil. • In a 2-quart microwave safe bowl, put sugar, cocoa, butter and milk (do not stir). Place in your microwave for 2 minutes until the butter is melted. • Remove and immediately add vanilla and black walnuts stirring quickly until well combined. • Pour onto buttered dish, smoothing with a spatula if necessary (press additional black walnuts on top now, if desired). • Place the dish in the freezer for 10 to 15 minutes to allow fudge to set. • Tip the fudge from the plate and peel off the foil. Grandmother’s Molasses Taffy
A richly flavorful confection, Grandmother’s Molasses Taffy is perfect for the cooler days of the year. Much better than anything factory made. Just be extremely careful with hot sugar. Ingredients • 1 Cup molasses • 1/2 Cup sugar, granulated • 1/2 Cup brown sugar • Water • 2 Tablespoons butter • 1/4 teaspoon baking soda • Salt Instructions • In a medium, heavy saucepan, combine molasses, granulated and brown sugars and water. Heat to boiling and stir to dissolve sugars. Let mixture boil, without stirring, until syrup reaches the hard ball stage (260F/125C) on a candy thermometer. Remove from heat, stir in butter, baking soda, and salt. Immediately pour onto a buttered marble slab or baking sheet. • When cool enough to handle, butter hands and gather taffy into a ball. Pull taffy between hands and continually stretch and fold again until taffy turned lighter in color (this can take from 5 to 15 minutes.) • Stretch and twist taffy into a rope about 1 inch thick and cut into pieces using buttered scissors. Wrap each piece in waxed paper. • Notes: Handling hot sugar is extremely dangerous. Use a candy thermometer, and do not handle any sugar above 90 degrees F. Credit: Epicurus.com

Southern Pecan Pralines
Ingredients • 1 stick of butter • 1 box of powdered sugar (about 2 cups) • 1 cup chopped pecans • 4 tablespoons bourbon • 4 ounces semi-sweet chocolate • 4 ounces bitter chocolate
Ingredients • 1 ½ cups granulated sugar • 1 ½ cups light brown sugar packed • ¼ teaspoon salt • 1 cup evaporated milk or half-and-half • 6 Tablespoons butter • 1 teaspoon vanilla extract • 2 cups pecan halves
What could be better than original Kentucky Bourbon Balls straight from the Kentucky Derby Museum Cookbook.
Instructions • Prepare this filling one day ahead. • Start by softening the butter in the microwave for 15-20 seconds. Be very careful not to liquefy the butter. • Mix the butter & sugar into a large mixing bowl and mix by hand for several minutes. • After the butter & cream are mixed well, add chopped pecans & bourbon & mix all together. • Feel free to add a splash more bourbon. • Use a teaspoon as guide to create little balls on a waxed lined cookie sheet. Don’t forget to taste test before placing in the refrigerator overnight. • On the next day, melt both sets of chocolates in a double boiler. • Dip the chilled bourbon balls into the hot, melted chocolate using a skewer. • Use a spoon to drizzle the chocolate over hard to reach places on the bourbon ball. • Place the finished treats on wax paper, adding a whole pecan on top of each. • Refrigeratorate to harden. • Serve at room temperature & enjoy!
This melt-in-your-mouth treat is a cross between a cookie and a candy loaded with crunchy pecans, butter, and brown sugar flavors.
TIPS: For more bourbon flavor, soak the pecans in bowl of bourbon overnight. Use Candy Chocolate Melts for best results.
Instructions • Line a baking sheet with parchment paper. • In a medium-size heavy pot, combine the granulated sugar, brown sugar, salt, evaporated milk, and butter. Cook and stir with a wooden spoon over medium heat until the sugars dissolve and the mixture comes to a boil. • Continue to cook until the temperature reaches between 235-240 degrees F on a candy thermometer (soft ball stage). Remove from heat and allow mixture to cool for 5 minutes. • Stir in the vanilla and pecans, beating by hand with a wooden spoon just until the candy begins to lose its glossiness and thickens slightly, about 2 minutes. If you beat too long, the candy will seize and start to crumble. If you don’t beat it long enough, then pralines won’t set properly and will stay soft and sticky. • Work quickly to drop heaping tablespoons of pecan praline mixture onto parchment lined baking sheet. If the praline mixture begins to harden in the pan, add a teaspoon of hot water at a time and stir to keep the mixture loose. • Cool completely until set and the pralines have reached room temperature. Store in an airtight container for 2 weeks or freeze for up to 2 months.

The Origin of Santa’s Reindeer

Santa’s Reindeer come to mind as soon as you start
to think about Christmas. We’ve all heard the legend about Santa flying around the world to deliver toys in his sleigh pulled by eight reindeer, but they weren’t always part of the Christmas celebrations.
Different Ways to Travel
As Christmas legends go, the story of the sleigh with Santa’s reindeer is very new. For many centuries there have been stories about a kind old man delivering gifts to children all over the world, whether he’s known as St. Nicholas, Sinterklaas, Father Christmas, Santa or any of his other aliases. Stories of the mysterious and generous old fellow have been around since the fourth century. But it wasn’t until the 19th century that the eight famous reindeer entered the Christmas scene. Prior to that, Santa traveled on a white horse in Europe and a donkey in South America. It is believed that Dasher, Dancer, Prancer, Vixen, Comet, Cupid, Donner and Blitzer first apDECEMBER 2021/JANUARY 2022
peared in 1823, in the poem “A Visit From St. Nicholas,” commonly known as “The Night Before Christmas,” by Clement C. Moore. It didn’t take long for them to become an essential part of holiday lore. It soon became common for artists to depict Santa with reindeer. Santa’s sleigh full of toys being pulled across the sky by the team of reindeer has become an iconic holiday image.

But what of Rudolph, the most famous reindeer of all? Rudolph, the red-nosed reindeer, was created in 1939 by Robert May, an employee of Montgomery Ward. The department store wanted to create a free giveaway book for children as a promotion. May wrote the story in rhyme for the book, which was a big hit with Montgomery Ward’s customers. By the late 1940s, approximately six million copies of the book had been distributed. May’s words were set to music in 1947. “Rudolph the Red-Nosed Reindeer” was recorded by Gene Autry and became a huge hit, cementing Rudolph’s place in Christmas history. New tales and stories of Santa’s reindeer sleigh-pulling team continue to make their way into popular culture in the form of books, movies and television shows, showing us that the legend of Santa’s famous reindeer is here to stay. Native Americans had long utilized the nuts of Chestnut trees in trade and as payment for items they could purchase from trading posts all over the Eastern lands. Gilmer County Records for the Ellington’s Store indicate the use of bushels of Chestnuts as payment. The nuts are housed in a spiny bur that inspired poets to write poems and historians to write stories of Appalachian life singing the praise of this Sequoyah-sized tree. Longfellow’s poem, The Village Blacksmith comes to mind, Under a spreading chestnut-tree The village smithy stands; The smith, a mighty man is he, With large and sinewy hands, And the muscles of his brawny arms Are strong as iron bands. Chestnut trees were used for their hardwood timber and their nuts. Yet their blossoms in springtime, with a variety of colorful flowers resembling those of the bottlebrush buckeye (which are no relation to the beech tree offspring), were stunning. Chestnut trees were once prolific in these mountains until the blight of 1900 which affected many hardwoods. The blight was introduced accidentally by imported Japanese tree stock, causing an immediate and widespread die-off of the once plentiful Chestnut tree. Cankers raised on the bark of the tree caused the bark to split, killing the tree. At one time it was determined that one in every four hardwood trees in the Appalachian Mountains was an American Chestnut. The blight also affected the American Chinquapin tree, another a type of chestnut. The Chinquapin 30

After the blight, it appeared that some of the trees had re-sprouted and were growing back, however they proved to be sterile, and not able to produce nuts/seeds. The American Chestnut Foundation, along with many others, are constantly working to restore the American Chestnut to our ecosystem. Small groves of chestnuts have recently been found in Alabama, Georgia, and Tennessee. Some have been found as far north as Michigan, so perhaps regeneration efforts of the Chestnuts are beginning to be effective.

Scientists have been working to create a resistant hybrid Chestnut tree that would retain the characteristics of the American Chestnut. The Eastern Band of Cherokee Indians has partnered with the American Chestnut Foundation (ACF) to plant American Chestnut trees in a new orchard located on Jenkins Creek on the EBCI Reservation in North Carolina. Thursday, Oct. 21, 2021, marked the first step of getting trees in the ground. This is part of a revitalization effort to save a species that is ‘functionally extinct’.
