There’s nothing better than some great shellfish and fresh halibut.

What’s the best way to cook a steak at home?

I prefer 2” porterhouses and I keep them in the freezer for when we are in the mood. You can bring it out of the freezer straight into the pan. I sear it in a cast iron in garlic mushroom-infused olive oil. I sear the one side until a dark caramel color.

When you flip it over, throw into a 400 degree preheated oven and let it go for 7 minutes. Then I take it out, put it back on the gas top, add a clove of garlic and thyme, 5 tablespoons of butter and let melt and turn brown. Then, butter baste the steak until all the edges are caramelized and crunchy.

If you’re looking to entertain at home with a Christmas party, dinner party or any type of get together, here are some things to keep in mind. It’s still a mystery why some people host parties and play no music.

The music should always be prevalent, but never center staged. The priority is always conversation. The music is background, but will always propagate the mood. Pandora, Amazon Echo, Spotify, etc. usually have a command for certain mixes. This is probably good enough for most people (and technology has certainly substituted detail for convenience), but sometimes it’s nice and appreciated to put in a little effort.

Volume

What DJs understand is their ability to follow the mood of the crowd and adjust the music accordingly. The most basic is the volume. As more people arrive, the music should become a bit louder, as more voices will begin to drown it out. Also, as the night progresses and the libations take effect, a higher volume and more upbeat sound helps to keep things going.

Easy one...my wine tool! It makes cooking much more fun. A little in the pot and a little in the chef.

Trying to bake and ice a cake for guests the same day they are entertaining. It is best to bake a cake the day before so the flavors have time to marry.

This gives time for the cake to set and not fall apart. Cakes always taste better the next day!

Not planning ahead. Rushing and having a dirty kitchen when people arrive! Cooking dinner for guests is a process. You’ve got to plan the meal, shop for your recipes and plan the cooking process to make sure everything is coming out of the oven or stovetop at the right time, while still giving you time to clean up!

Familiar and Not Familiar

Don’t emulate a classic rock radio station.

Meaning - not every song should be familiar. Too much familiarity is boring. Give your guests a song they recognize every few songs. This will grab their attention to the music and give them a sense of familiarity and comfort. But most songs should be more about mood and tone and are best presented as being in the background.

Mix It Up… Kind Of

Some genres work together. Some don’t.

Most jazz seems to mix in with about everything. Most shoe gaze and softertoned new alternatives are easily blended as well. Hip-hop can work in the context of acts like Jungle and Guru. But not so much for acts like Nas. A few familiar urban staples like R. Kelly and Nelly can work if in extreme moderation. Too much rap and too much country (for that matter) are no no’s. We love punk, but (like metal) it doesn’t seem to ever work well in too many mixes.

Suggestions

Live songs can be tough to blend in, but are great pieces of a playlist. As far as jazz, stick to the quintets, quartets, etc.

The acid jazz of the late 60s and early 70s isn’t for everyone. Ella Fitzgerald is great.

Etta James is better. Massive Attack and the alternative French band Air always mix well. Speaking of French acts, you can really step it up with artists like Serge Gainsbourg or Françoise Madeleine Hardy.

I’ve explained people meet people that develop into marriages online, but in their defense, there are people who just want to hook up. How do I avoid the people who just want to hook up?

Online dating is tricky business! Though I understand the concerns of your parents, I’m not sure they understand how dating works in 2018.

It borders on impossible to meet people and date without doing it via an online dating site. Too many people live lifestyles prohibiting them from meeting their future mate the good old-fashioned way! I’m not saying it doesn’t happen, it just seems to be much less likely in our society today than in that of our parents. There are a number of online dating sites and apps people frequent. I don’t know that I have heard about one of them being the best, although some are definitely known more for their hook-up potential more than others. However, there are people on every site looking for just a hook up, as well as people looking for long-term relationships and marriage.

Just as you don’t want to feel duped when meeting in person with someone you met online, neither do they. Honest answers, honest thoughts, and honest and updated pictures are a must!

Avoiding people who just want to hook up is going to require extreme levels of patience from you. People just wanting to hook up aren’t going to spend a significant amount of time getting to know you. If you require more conversation and more interaction before seeing them, they probably won’t stick around, if they are just interested in a hook up. Be aware of people who go MIA for days at a time. There is a good chance they are entertaining their other options while not talking to you. If you schedule a date to meet and they suddenly have to cancel or they “ghost“ you, giving them another opportunity without a doctors excuse or something stating they were incapacitated for the day might not be in your best interest!

Be honest on your profile! Let people know what you are looking for and the type of person you are interested in. If you are specific and honest with your own profile, you are going to be much less likely to attract those people not interested in really getting to know you.

>>> I’m sick of going to holiday parties and things like that being single. I’ve even started to avoid parties by making up an excuse. But I can’t get out of all of them. I always feel like the odd-woman out for not being part of a ‘couple’. How can I get over my insecurities and learn to enjoy myself, and not be miserable the whole time?

My most common recommendation to individuals interested in online dating is to be prepared for rejection. Dating is about getting to know one another. Online dating allows you to do this in a much more efficient manner for those with time constraints or those who just do not get out much.

There are going to be plenty of individuals who do not respond to your approach or aren’t interested after chatting or meeting. Remember…this does not mean there is something wrong with you or you are not good enough! It just means you haven’t met “the one” just yet!

It seems you might ask yourself what it is you enjoy about holiday parties. If you don’t enjoy them or a specific party, don’t go! If you enjoy attending for the social interaction or meeting up with family members or acquaintances you don’t see regularly, it seems a bit sad to avoid them because you are not part of a “couple.“ Try remembering the contributions you bring to the party by being the single woman. Just because other people are married doesn’t mean you can’t make contributions to conversation or the dinner menu.

You are single! There is nothing wrong with that “status.” Chances are, you won’t be single forever!

Embrace the positive aspects of single life while you still can. Embrace the confidence and beauty you exude when you walk into a room with your head held high and carry on without skipping a beat. Ask questions that get people talking. Go into those parties having something in your “hip pocket“ to discuss that will keep the crowd entertained. Also, most parties that include couples have a tendency to experience a natural segregation between the men and the women. Most of the time people wouldn’t know who was married and who wasn’t. Go into the party with an attitude of excitement instead of an attitude of anxiety or nervousness. You get to control your self talk and your internal dialogue! Just choose to make it positive!

Here are a few pointers that will make any dinner party one that will leave your guests wishing for a future invite.

Prepping your house for the party is key.

Think about how you are welcoming your guests. You want to seem like you made the effort without any stress at all. I usually give Oak Street Garden Shop a call the week before and ask them to update my planters by the front door.

Creating a design plan starts with what serving pieces or place settings I want to use for that particular night.

Having all of my pieces handy makes for quick planning. Go through everything you need from flatware, chargers, china, glassware and linens to see if you need to purchase or rent what you don’t have.

Consider adding to your collection throughout the year when things go on sale. Be sure to have a good mix of formal and causal pieces – both modern and traditional -- so that you always have good alternatives.

Don’t let the cooking stop you from entertaining. I would much rather focus on making the night special than worrying with recipes.

There are fabulous caterers or pick up spots that can take care of your entire menu. Some of my favorites are: John Hall, Shindigs, Tre Luna, Dinner and Blacksheep Kitchen. If you really want to enjoy your party ask to have a server attend to help man the bar when guests arrive, serve dinner and clean up after dinner.

When designing your dinner table there are some details to keep in mind.

When choosing a centerpiece, use an oval shaped container and keep it under 12â&#x20AC;? tall in order for the guests to visit. If you donâ&#x20AC;&#x2122;t have a green thumb, give a local florist like Buffy Hargett a call and she can create the perfect arrangement. Candle light works magic. I love traditional votives, but floating candles bring more light because they reflect off the water.

Whether it is unique liquors, fine wines, a signature drink or all of the above; they are guaranteed to help your guests have a good time.

Always go for fresh when setting up the bar. Fresh fruit, flowers or herbs are an easy addition that not only look good, but they can also give your guests a creative experience when mixing their drink.

I started learning about wine when I turned 21. My father-in-law has a cellar and some really nice wines.

I was very intrigued about wine and learning what made it taste the way that it did. So for many years I trained vigorously, drinking lots of wine to learn about it. A few years ago I got a job at another store. I was big into beer then, but I learned one thing that changed my focus over to wine. The winemaker or grower has one chance each year/vintage to make that wine. He/She has to stress the vine so that it puts all its energy into the grapes, but not kill the vine at the same time. Beer, they can get the hops again, the yeast again, the grain again, and brew that beer again. But these winemakers have to live an entire year off of their work. This realization and a couple years training under a Master of Wine helped me learn rapidly about wine. I took over Classic Wine Company a little over a year ago now from the former owner, Tony Meyer.

Tony ran one of the top shops in the state of Alabama and I plan on keeping it going for years to come.

The previous owner’s original goal with the store was to carry wines that most people had to drive to New York, San Francisco, or Atlanta to purchase and carry wines from all over the world and at all price points.

This is most certainly our specialty. We also specialize in customer service and knowledge. The store has been around for over 30 years now. The store is part of the reason for the fine wine and food scene in Birmingham. And it will continue to specialize in selection, knowledge of products and customer service.

GO WITH THESE > WINES FOR HOLIDAYS SPARKLING SHIRAZ This one I discovered a few years ago.

Shiraz, the sometimes jammy, clone of Syrah from Australia is delightful as a sparkler. The beautiful raspberry and chocolate notes marry well with the bubbles. The bubbles help to cleanse your palate so that every bite is as fresh as the last. Sparkling Shiraz shines with turkey, but also goes well with ham for those who go this direction. Stuffing, mashed potatoes, or green bean casserole it can go with the whole meal.

BEAUJOLAIS The humble wine region just to the south of Burgundy providing me of the best values in the wine world. Gamay is the grape here and can vary in its style depending on the village it was grown. Moulin-A-Vent, the King of Beaujolais, is the big and powerful Beaujolais that goes with lamb.

Fleurie, Pretty, pretty Princess, is the elegant and charming wine that is superb to drink by itself or with (surprise, surprise) turkey. These are amazing wines that are great for sipping before the meal and go with anything on the Holiday table.

SOUTHERN ROOTS RIESLING/ GEWURZTRAMINER These

high acid whites are superb with Thanksgiving. Fear not Riesling!

There are many dry versions of Rieslings that can go great throughout the meal. Even try some options from Washington. Riesling typically has apple, pear notes and high acidity that go great with turkey and pork. Gewurztraminer is the spicy and aromatic cousin of Riesling. Another high acid white, who’s spicy characteristic stand up to turkey and gravy.

Frank O’Neil and longtime friend Rob Francis have begun a winery together in Coombsville, CA. Francis is a longtime Alabama resident, but moved to Napa 14 years ago. Francis has a small plot of land in Coombsville. The two families have always loved wine and always wanted to make their own wine. The first vintage they produced just 67 cases of Cabernet, but the product received a Gold medal. Frank and Rob think the production will increase, but not by much. They have also added a Chardonnay. The label features the two states California and Alabama, to show the connection between the two families. The Cabernet is in the restrained and balanced style, not the super extracted and jammy style as so many are making in California today.

The Benefit of Having an In-Store Wine Bar

As I was working at another store, I would spend my days off trying to find a nice place to drink a glass of wine at lunch with a book. A place with a great wine list and knowledgeable staff that could educate me on the wine. What I found was most places I went either didn’t have an interesting wine list and/or the staff didn’t seem to care about the wine. They might know a little bit about it, but were not interested in talking about it or passionate about it. Or the bar was very motivated to sell me some food. So we opened our wine bar in June 2018.

This would be the place that I would come drink a glass of wine. You will always find interesting wines by the glass. You will always have a person who is knowledgeable and passionate about the wines. We play wine movies at the wine bar most days and these can be very educational. You can buy a bottle from the shop also. We do have a $10 corkage fee just to cover using glassware and washing dishes. But keep your eyes open-many times we waive these for various reasons. You can also bring food in from wherever you like.

Not anymore. Redecorated a couple of years ago, it has a relatively and surprisingly elegant atmosphereespecially for a spot on West Valley. While it’s more that $10, try the cumin lamb as well.

o let’s start with the parameters. We wanted to keep it local, and we wanted them to not necessarily be part of a chain. We can’t pretend a Chick-Fil-A chicken sandwich for $4 doesn’t belong on a ‘best’ list.

Haters gonna hate – but what about a Quarter Pounder with Cheese from McEd’s that for matter. Also, some our selections are representative of the place- i.e. Red Pearl. That place has too many dishes. How about Beef with Jalapeños from there? It’s incredible, and it’s just under $10. We decided instead to feature Vegetable Chow Mei Fun. It was a tough call.

Related to Red Pearl, we felt kind of bad for not including Mr. Chen’s on Green Springs.

Again, a tough call. That place is just about as good, and deserves its props as much as anywhere in town. Maybe next year. But we can say that its street (Green Springs) houses the most places for cheap eats. 18-A at Pho Que Huong on Green Springs didn’t make the cut but it was close. Sabor Latina on Green Springs? It didn’t make it either, but it was debatable. We decided not to rank them. It’s just too hard. I can tell you the Taj’s Buffet for only $7 is number one with a bullet for best place to eat when you’re hung-over. Number one for a cheap, quick, lunch if you work downtown is Dos Hermanos. Eight bucks will get you one ceviche, two tacos and a diet coke (no tax).

One other roundabout qualifier is the location.

We wanted to spread it around town. But regardless of location we believe these are some pretty strong selections to launch our first Top 10. There’s no honorable mention, but we did feel bad for excluding a few. There are a couple of places where the hummus is ridiculous that we didn’t list. There was a big debate in the burgers category. It needed its own category.

There are way too many desserts that could have been included, and we scrapped any and all breakfast items even though the everything bagel with plain cream cheese from Crestline Bagel is a serious contender. We felt bad for all of the dishes that were just over $10. Think about how many great menu items around town are around that $11-$12 range. Well, that’s about it. On to the list.

We know several people from India that say their buffet doesn’t compare to their menu items, which may be true. But we can’t get enough of the spinach, chutneys, bone-in dark meat chicken, lentils, etc. etc.

We instead featured the Pho Tai Nam, which has beef brisket slices.

Posole Soup (sometimes spelled differently) is a Mexican semi-spicy pork soup with hominy. The red base is not tomatoes, but mild peppers finely blended with the spices and broth used to cook the pork. And it’s legit!

It’s the condiments and sides that make this soup so good. They include cabbage, onions, cilantro, radishes, peppers and avocado.

BARK IN THE PARK The Shelby Humane Society, along with Best Friends of Shelby Humane, hosted Bark in the Park at Veteranâ&#x20AC;&#x2122;s Park. SHAKE SHACK Birmingham How did Shake Shack get its start?

BW: Shake Shack sprouted from a hot dog cart in Madison Square Park in Manhattan, created by Danny Meyer’s Union Square Hospitality Group to support the Madison Square Park Conservancy’s first art installation “I Heart Taxi.” The cart was quite the success, with Shack fans lined up daily for three summers. In July 2004, USGH won the bid to open a permanent kiosk in the Park, and Shake Shack was officially born!

What is Shake Shack all about?

BW: Shake Shack’s mission is to Stand for Something Good, from our premium ingredients and caring hiring practices to our inspiring designs and deep community investment. We think people really connect with that mission; it resonates throughout every aspect of our Shack.

What can you find on the menu at Shake Shack, and what items are unique to the Birmingham Shack menu?

BW: Shake Shack is a modern day “roadside” burger stand - on the menu you can find all our classics including our ShackBurger, SmokeShack, Chick’n Shack, our crinkle cut fries, shakes and more.

Unique to Birmingham, we have an exclusive fry in collaboration with a local favorite, Big Bob Gibson Bar-B-Q . The Big Bob’s Cheese Fries features Shake Shack’s crinkle-cut fries topped with Big Bob Gibson’s pulled pork and cheese sauce. We also have a unique selection of frozen custard concretes including Pie Oh My, Birming Graham and Shack Attack. Additionally, with each location we feature local craft beer from the community. For Birmingham we have favorite brews from Cahaba Brewing Co., Avondale Brewing Co., Good People Brewing Co. and Back Forty Brewing Co.

If someone hasn’t been to a Shake Shack before, what would you recommend they try?

BW: There are so many delicious things to try at Shake Shack! I would definitely recommend starting with our ShackBurger - it’s an essential. It features a 100 percent all-natural Angus beef burger, roma tomatoes, lettuce, cheese and our house-made ShackSauce, which is a tangy mayo. Then, of course, a side our Big Bob’s Cheese Fries and a shake!

Shake Shack is all about community involvement, too - tell us how Shake Shack is getting involved in its local community.

BW: We’re all about our hood! We’re committed to extending hospitality beyond the four walls of the Shack and into the community, and you’ll see a portion of the proceeds of our Pie Oh My concrete benefit our local charitable partner, the Cahaba River Society. We’re invested in our local community, and we designed our Shack to reflect the Birmingham area.

In every neighborhood we’ve opened in, from the Upper West Side of Manhattan to Miami Beach to Harvard Square in Boston, we plan to develop deep ties to the community, become a part of the dialogue, and work with charity organizations, community centers and local neighborhood partners.

How has the response been to the Birmingham Shack?

BW: The response to Shake Shack coming to Birmingham has been incredible! We knew Birmingham was excited, but we have been truly blown away by how the community has embraced us, our food and our mission. We’re so grateful for that, and we look forward to continuing to build those relationships in our community!

BOILING N BRAGGING Browning Trail Cameras and Ample Energy, Inc. presented Boiling N’ Bragging, a benefit to help raise funds and awareness for the Critical Care Transport program at Children’s of Alabama. For the 10th straight year, the 52 clubs of Rotary International District 6860 partnered with Children’s, Otey’s Tavern and Spectrum Business hosted a football party and low country boil. Guests enjoyed live music, $1 drink specials and kids’ activities. Entertainment was provided by Lance Taylor and Rockstar from WJOX’s Roundtable. Guests were encouraged to wear their favorite college football team colors. The Critical Care Transport team at Children’s of Alabama was established in 1983. The care team works to meet the specific need of transporting nearly 1,000 critically ill and injured children each year by helicopter, jet and ambulance. The team members include highly trained registered nurses and respiratory therapists with the knowledge, understanding and skills necessary to provide age-appropriate care.

D INNER PA RT Y PA I RI N G S Our favorite time of the year is finally here! Amidst the hustle and bustle of the holiday season, the reward of sitting down and enjoying food and wine with good company makes it all worth it. One of my favorite aspects of wine is its ability to enhance a dish, and I love testing out classic pairings or using whatever dish I’m cooking as inspiration to try that new bottle I’ve been eyeing on the shelf.

Below are some of my favorite go-to pairings and ideas to make your holiday dinner party a success.

Course 1

Bubbles! Not only does sparkling wine promote a festive atmosphere at any party, it is versatile in food pairing, especially with small bites and appetizers. Your options range from a fresh, aromatic and spritzy Prosecco, to a bready and complex Champagne. My recommendation is Roederer Estate, a California sparkling wine made in the traditional Champagne style, paired with a rich and creamy brie. It is available for $19.99, regularly $32.99.

Course 2

I love the options available from our seafood counter: we carry an array of seasonal shellfish, sushi-grade tuna, and favorites such as red snapper and grouper. If you would prefer something prepared, we have house-made crab cakes available. Crab cakes are a blank slate for white wine pairings; you can lean towards something with higher acidity to contrast, or go for a rich and creamy white to complement.

To complement, I would suggest J Chardonnay from the Russian River Valley at $24.99, regularly $29.99.

Course 4

I’m always searching for a good excuse to open up a dessert wine, whether it accompanies traditional southern desserts such as pecan pie, or a spread of blue cheese, honey, and candied nuts. An aged Tawny Port will pair perfectly whichever way you decide to go. I’m eyeing Warre’s Otima Ten Year Tawny, which is known for a modern style, combining freshness with dried fruit, smoke and nutty flavors. It is available for $31.99.

Course 3

Whenever I want something really special, I grab one of our in-house dryaged steaks from the meat counter. Dry-aging the beef draws out moisture and breaks down the connective tissues in the meat, rendering it more flavorful, complex, and buttery-soft. Now someone pass the red wine, quick! I’m leaning towards something that is bold yet nuanced enough to not overwhelm the plate, such as a red Bordeaux blend of Cabernet Sauvignon, Merlot and Cabernet Franc. Pauillac de HautBages Liberal, available for $35.99, is my pick.
